LOCAL FLAVOR Jack Amon’s appreciation for quality cuisine runs in the family. His grandfather, who emigrated from Greece, was an excellent cook; Amon grew up with him and grew to love spending time in the kitchen. His fondness for fine food never left. It stayed with Amon when he eventually traveled north to help a friend homestead in British Columbia, and it stuck with him when he ventured on to Wrangell and eventually to Anchorage, where he came to work in a Cook Inlet oil patch during Alaska’s early pipeline boom days. Here, he found a land of opportunity — and he was again drawn back to the kitchen. He talked his way into a job at the Hotel Captain Cook, worked a booth at local fairs to get things going, and in 1979, along with business partner Richard “Van” Hale, he co-founded the renowned Anchorage restaurant known as the Marx Bros. Cafe. More than 40 years later, the downtown establishment still serves an elevated taste of Alaska, with intimate seating, an extensive wine list, and a menu studded with locally sourced ingredients and fresh Alaska flavor. A pioneer of Anchorage’s culinary community, the restaurant has now hosted more than four decades worth of Alaska birthdays and anniversaries, and other special life events. And Amon prizes that role in the community. Over the years, Marx Bros. has been widely celebrated for its achievements in and out of the kitchen. From AAA Four Diamond Restaurant, to involvement with the local Rotary to induction into the Alaska Business

Hall of Fame, community ties remain a cornerstone of the cafe. Decades after Amon settled down and set up shop in Anchorage, the Marx Bros. is still known as a fine-dining experience that feels like home.
Halibut Baked in Macadamia Nuts with Coconut Curry and Mango Chutney 1 lb. fresh halibut, cut into 4 oz. fillets 1 lb. ground, roasted, nosalt macadamia nuts 2 eggs, lightly beaten with 2 tbsp. water
4 tbsp. clarified butter 3 cups coconut milk 4 tbsp. red curry paste 1 cup mango chutney flour for breading
1/3 tsp. cayenne Preheat oven to 375 degrees. Dredge the halibut fillets in flour, shaking off the excess. Add cayenne to the beaten eggs, and dip fillets in egg mixture. Roll in ground macadamia nuts, and place on a greased cookie sheet or on a sheet covered with parchment. Pour 1 tbsp. of clarified butter over each fillet and bake 10-15 minutes, or until fish are just done. While fish is cooking prepare curry sauce. Heat 2 tbsp. of peanut oil in a heavy sauce pan. Add 3 tbsp. of curry paste and cook 1 minute. Add coconut milk and bring to boil. Allow to reduce by half. Keep warm. To serve ,divide the sauce onto heated plates. Place fish on top and garnish each piece with a spoonful of mango chutney.

“Living in Alaska has given me the American dream to its absolute fullest,” says four-time Iditarod Champion Martin Buser. Born in Winterthur, Switzerland in 1958, Buser became fascinated with sled dogs while still a teen. He came to Alaska in 1979 to enhance his knowledge of the care and training of sled dogs. His plan was to stay in Alaska for a year.

“Well, I was hooked on the dogs, and it was the beginning of the end for me,” said Buser. “I wanted to stay in Alaska.”
Martin is a man who embodies all that Alaska represents – its spirit; its competitive nature; its love of the land; and its creatures. Martin is a tireless advocate for his Alaska huskies, often spending his time traveling around the state and talking to different groups about his dogs and how he cares for them at home and on the trail.
In 1980, he ran his first Iditarod, Alaska’s great sled dog race, which begins in Anchorage and ends on the western coast of Alaska in the city of Nome. Buser has completed the Iditarod Trail Sled Dog Race® more than 25 times, giving him the most consecutive finishes of any Iditarod musher. Martin, wife Kathy Chapoton, and sons Nikolai and Rohn (both named after Iditarod checkpoints), reside in Big

“I got here in 1979 with a backpack and a couple of dirty pairs of blue jeans. And now, we’ve carved out a great corner of Alaska. Really, I could have anything my little heart desires,” said Buser.
“I’ve learned the language well enough to share my stories and my life with visitors. I have made a 365-day-a-year commitment to the dogs and want to do my dogs justice.” Martin Buser is living a life as big as Alaska.

A veteran of Chicago’s food and beverage industry, David McCarthy first arrived in Denali via a motorcycle trip up from the contiguous United States. Jason Motyka, hailing from Anchorage, went to Denali to become a raft guide on the Nenana River. While they followed different roads north, they held a shared goal: showcasing Alaska’s warm hospitality and spectacular natural bounty. It led them to join forces in 2005, founding a hospitality group that today has grown to include two brewpubs, three restaurants, a beverage company, a hotel, and a location in Anchorage — the iconic 49th State Brewing Company. Featuring sprawling deck views of the Chugach Mountains, Cook Inlet, and Mount Susitna, the brewpub is surrounded by mesmerizing Alaska scenery. But the devotion to authenticity goes deeper. Ingredients are sourced directly from Alaska’s fields and fisheries; craft beers are created with ingredients ranging from local honey, wheat, and birch syrup to spruce tips, Chaga, and even fresh Alaska oysters. And food and drink are just the beginning. To McCarthy and Motyka, true Alaskan hospitality means being a community center — a principle that remains at the heart of the 49th State Brewing Company’s identity to this day. The brewpub is a neighborhood gathering place, regularly hosting a rainbow of shows and events, and filled with unique Alaska touches. Throughout the building, patrons can find original elements created especially for the establishment by a variety of Alaska artists. It’s part of providing the homegrown hospitality the brewpub has cultivated from the beginning: No matter what roads you take to arrive, the Alaska-sized welcome is always the same.

COMMUNITY CONNECTIONS A born and raised Alaskan, Candice McDonald Kotyk hails from a family of entrepreneurs, so it only seemed natural to follow in their footsteps and build her own Alaska business when the time was right. It happened in 2005. After a stint working the Prudhoe Bay oil patch on Alaska’s North Slope, a trip to Antarctica, and two years working for Holland America’s rail line, Kotyk saw an opportunity to set out on a new adventure while still showing off the beauty of Alaska, and Salmon Berry Travel & Tours was born. The company started off with walking tours and a few Ford vans, outfitted with magnetic signage that would blow off when the winds kicked up along Turnagain Arm. Some of the first photos from those early days show Kotyk leading a small group around Independence Mine State Historical Park, marveling at the natural beauty and man-made history around them. These days, a lot has changed. The company has grown substantially. Now it supports more Alaska jobs, serves more visitors, and offers aurora viewing, mushing excursions, glacier viewing, wildlife watching, and everything in between. The old vans were long ago upgraded to a fleet of freightliner sprinters helmed by commercially licensed drivers with rescue training. Still, some things stay the same. Salmon Berry still leads tours at Independence Mine. The community ties undergirding the company since the beginning still run as deep and strong as ever. If anything, now, they go deeper. “I have a new appreciation for our community as seen through visitors’ eyes,” Kotyk said. “It speaks to this Alaskan, genuine friendliness. This industry is like no other, and I don’t believe I’d feel the same anywhere else.” Co-owners Candice McDonald Kotyk and Mandy Garcia
