Christmas with the Tudors
Christmas was the greatest festival event in Tudor times. Celebrated for the entire 12 days of Christmas (25 December – 6 January), the Tudors stopped working and visited friends and family in this community festivity. On the Saints’ Days the most sumptuous feasts were held, and left-over food was used to feed the poor.
Christmas with the Elizabethans
Christmas was a time to ‘eat, drink and be merry’, a time to celebrate and enjoy a little luxury. In 1588, Queen Elizabeth I ordered the whole of England to eat goose for their Christmas Dinner to celebrate England’s victory over the Armada because it was the first meal she had eaten after the Navy had defeated Spain’s ships.
Christmas Victorian Style
It was during the Victorian period that the meal we now associate with Christmas began to take shape. Evergreens, flowers, and the best china and lines would have graced the dining room table. When Queen Victoria came to throne, the centre piece of the Christmas feast in the northern counties of England was most likely roast beef, whilst in the south it was turkey or goose. Later the popularity of turkey overtook the other meats as its size meant it could easily feed a large Victorian family gathering.

INGREDIENTS
Port & Balsamic Reduction
• 140ml Port
• 90ml balsamic Vinegar
• 1 tbsp honey
Antipasto Wreath
• 30 small wooden skewers
• 350g cured meats
• 150g mozzarella balls
• 30 cherry tomatoes
• 30 basil leaves
• 200g artichoke hearts
• 10 fresh rosemary sprigs
• Christmas ribbon (optional)
METHOD
1. To make the reduction, put the port, balsamic vinegar and honey into a saucepan and bring to boiling point.
2. Once boiling, leave the mix to simmer for 10-15 minutes until it has reduced by half, before letting it cool.
3. Next, make the skewers by arranging the cured meats, mozzarella balls, cherry tomatoes, basil leaves, olives and artichoke hearts onto the wooden skewers.
4. Arrange the skewers on a board in a circular shape to create a wreath and pour the port and balsamic reduction into a small bowl for dipping.
5. Before serving, decorate the wreath with sprigs of rosemary and a bow made from ribbon (if using).
Chef’s Tip
To make a delicious vegetarian option swap the cured meats for plant-based alternatives and make sure the mozzarella is vegetarian friendly.

Croutons
•
1 French baguette, torn into chunks
• 1 tablespoon garlic oil (or olive oil, if you prefer)
• 1 tablespoon caraway seeds
• 150g Epoisses cheese, chilled
• 100g Comté cheese, coarsely grated
INGREDIENTS METHOD
Soup
• 1 tablespoon olive oil
• 100g unsalted butter
• 500g pink onions, finely sliced
• 2 tablespoons plain flour
• 175ml dry white wine
• 1 litre beef stock
• 1 tablespoon onion chutney (optional, but damn good)
• Fine sea salt and coarsely ground black pepper
1. Preheat the oven to 200°C/180°C fan/gas mark 6.
2. For the croutons, place the torn baguette onto a baking sheet and toss together with the oil and caraway seeds. Bake for 5–10 minutes, or until dry and crispy.
3. For the soup, heat the oil and butter in a large saucepan or casserole over a high heat. When the butter melts, add the onions and cook for 10 minutes or so, until they are starting to colour around the edges. Once they are gently browned, reduce the heat to low and cook slowly for anything up to 40 minutes. The onions should caramelise deeply, and smell strong and sweet.
4. When the onions are caramelised, add the flour and stir to coat the onions.
5. Increase the heat to high, wait a minute for the pan to get hot, then pour in the wine and let it bubble and evaporate almost entirely. Add the stock and bring to the boil, then reduce to a simmer and cook for 45 minutes, partially covered. Stir in the chutney, if using, and salt and pepper to taste.
6. Preheat the grill.
7. Divide the soup between serving bowls – make sure they’re heatproof – then scatter over the croutons. Slice the Epoisses into fairly thin slices (do so quickly before it starts to melt) and lay them on top of the croutons. Scatter over the Comté, and grill until the cheese has melted and burned a little at the edges.

• 1 kg under shoulder, neck and shin of lamb (Cut into 3-4cm thick pieces) preferably regional lamb, eg Bowland Lamb
• 700g thinly sliced onions
• 1kg peeled King Edward potatoes
• 25g plain flour
• 40g salted butter, melted
• 150ml chicken stock
• 3tsp sea salt
• White pepper
INGREDIENTS METHOD
• Hotpot dish - stoneware, diameter 8”/21cm, height 3.5”/9cm
1. Season the lamb with 1 tsp of salt and a good pinch of pepper, dust with the flour. Put the lamb into the base of the hotpot dish.
2. Sweat off the onions in 15g of butter with one tsp of salt for 4-5mins (to sweat is to cook without colour in a covered pan, on a moderate to hot temperature). Spread the onions evenly on top of the lamb in the hotpot dish.
3. Slice the potatoes horizontally (2mm thick). Place in a medium size bowl, add the remaining 25g melted butter, season with 1 teaspoon of salt and a pinch of white pepper-mix well.
4. Put the sliced potatoes evenly on top of the onions, reserving the bestshaped rounds for the final layer and add the chicken stock.
5. Place the Hotpot, covered in a pre-heated oven for 30 minutes on 180200C (Aga equivalent bottom of the baking oven) then for approximately 2½ hours on 130C (Aga equivalent in the simmering oven).

MEGAN’S MINCE PIE CHEESECAKE
Serves: 6 Prep Time: 30 mins

Cheesecake Mix
• 300g full fat cream cheese
• 75g icing sugar
• 150ml double cream
• 10ml brandy
• 100g mincemeat
INGREDIENTS METHOD
Biscuit Base
• 150g Digestives
• 75g unsalted butter
• 15ml brandy
Garnish
• Cinnamon sticks
• Star anise
• Dried orange slices
1. For the biscuit base, crush the digestives to a fine crumb.
2. Melt the butter and add the brandy, stir thoroughly before mixing in the biscuit crumbs.
3. Spread the biscuit base evenly into the bottom of a 20 cm spring form cake tin, pressing down firmly. Place in the fridge to firm up.
4. To make the cheesecake filling, begin by whisking the cream cheese and icing sugar in a bowl until the mixture is smooth.
5. Add in the cream and brandy and whisk until the mixture has thickened, then stir in the mincemeat until fully combined.
6. Pour the cheesecake filling over the biscuit base and smooth over with a knife, then chill in the fridge overnight.
7. Once ready to serve, remove from the tin and garnish with the cinnamon sticks, star anise and dried orange slices.

GINGER PARKIN CAKE

INGREDIENTS
• 225g self-raising flour
• 170g oats
• 400g golden syrup
• 115g black treacle
• 225g butter
• 225g light brown sugar
• 1/4 tsp salt
• 4 1/2 tsp ground ginger
• 4 ½ tsp ground nutmeg
• 1 tsp ground mixed spice
• 2 eggs
• 4 1/2 tbsp milk
METHOD
1. In a large bowl mix flour, salt, ginger, nutmeg, ground spice and oats.
2. In a pan heat up syrup, treacle, butter and sugar until it comes to boil and butter has melted, then mix into dry mixture.
3. Add eggs and milk, mix really well.
4. Place in a lined baking tray and cook at 180c for 1-1 ½ hours until firm on top.
5. Serve warm or cold with ice-cream.
Chef’s Tip
This ginger parkin recipe is a traditional bonfire night treat. Make it up a couple of days in advance so that it becomes sticky and moist.
