Flavors the Savor

FROM FRESH SEAFOOD AND LOCALLY GROWN PRODUCE TO GLOBAL CUISINE, A PALETTE OF FLAVORS ELEVATES THE DINING SCENE TO AN ART FORM.

By Dawna L. Robertson

With its melting pot populace migrating to the tip of the Baja peninsula from destinations like Japan, Asia, Europe, and Mediterranean regions, Los Cabos’ gastronomy scene flourishes with dishes as diverse as its global influences.

Taste buds traverse the sphere with Japanese fare at Nicksan, Swiss specialties at Alexander Restaurant, Italian fare at Romeo & Julieta Ristorante, Mediterranean at El Huerto Farm to Table Restaurant, and Asian influences with a trove of exotic spices from India and the Far East at Las Ventanas al Paraíso’s Arbol.

Indigenous Mexican cuisine, however, is the embodiment of Mexico’s vibrant culture. Creative

“born and raised” chefs broaden the spectrum by merging global flavors into their family recipes passed down for generations.

Seductive menus feature such Baja delicacies as chocolate clams, dorado, smoked marlin, shrimp, and lobster. Go gourmet with Tres Sirenas’ seasonal entrees and wine pairings. Or relish such rich traditions as banana leaf–wrapped tamales with a smoky Mezcal at Pancho’s Restaurant & Tequila Bar. In Los Cabos, global and local concepts paint an incredible edible canvas beyond compare.

MEMORABLE MEALS

The Cape, A Thompson Hotel, is home to a handful of Enrique Olvera eateries lauded among Baja’s finest. Helming the resort’s culinary centerpiece, Manta’s Chef de Cuisine Abisai

Sanchez presents a remarkable menu merging distinctive flavors from Mexico, Japan, Peru, and beyond. True to its name, with unobstructed Sea of Cortés views, the al fresco bar Sunken welcomes guests with living room–style seating and rich leather banquettes surrounding a central bar. The stylish lounge indulges with artful cocktails, seasonal bites, and live entertainment. The Rooftop rivals as a dramatic gathering space with two open-air bars, sunken communal seating, fire pits, and serene water features. Sunset acoustic music and

after-dark DJs are on regular rotation at this fashionable lounge.

Tucked into rugged coastal cliffs overlooking the Pacific, Waldorf Astoria Pedregal’s AAA Four Diamond El Farallón resembles a coastal seafood market where

patrons select fresh catches displayed atop mounds of shaved ice. Once weighed, chefs work their magic in an open-air kitchen. As waves crash below, tune into the mood as Chef Miriam Jimenez expertly preps the fisherman’s catch of the day. The sea-totable menu and beautiful hideaway setting create one of Los Cabos’ most privileged dining journeys.

Champagne Terraces embellishes gorgeous sunsets with a curated collection of 20 unique, always-changing champagnes. Note the subtle differences with three-flight tastings or by-the-glass pours overlooking stunning scenery below.

The Mastery of Nicksan

When chefs Angel Carbajal and Masayuki Niikura met in 1985, the duo never envisioned their passions coming together to create a culinary sensation.

A frequent Cabo San Lucas visitor, Niikura became a regular patron of Señor Sushi, where Carbajal doubled as chef and manager. For nearly a decade, the pair developed a strong friendship that progressed to mentorship and eventually a partnership when they debuted Nicksan steps from the Cabo San Lucas Marina in 1994. A second eatery followed in 2005 at The Shoppes at Palmilla along The Corridor.

Their pioneering concept produced “Nicksan Style,” which masterfully balances the textures and compositions of Japanese culinary traditions with the character and spices of Mexico. This gastronomic art form surges beyond sushi by embracing the “Honest Food” spectrum from locally sourced fresh fish and seafood to sustainably raised varieties and imported products sourced through socially responsible vendors.

Honoring his mentor, Chef Carbajal continues to create masterpiece recipes deliciously enhanced with his signature sauces like the one served with the cilantro sashimi. House specialties shine with creativity. Savor Sashimi Serranito, a delectable recipe of Half Moon Bay scallops from San Carlos in Baja, served with serrano chile oil, soy sauce, and a few drops of lemon. Spicy, sweet, and presented with paper-thin slices of chiles, the specialty is perfectly accompanied by ice-cold Jyunmai Ginjo Sake.

Nicksan’s Tuna Tostada satiates with 1.2 ounces of Pacific Ocean yellowfin tuna belly served on a rice cracker tostada with sliced avocado, habanero, infused red onion, and sesame seeds. Or dive into the bluefin tuna and red snapper featured in the Nigari selection, along with sea bass. It’s all a part of the Nicksan magic.

NATION OF FLAVORS

Mexico is a vast country with a rich history and wildly varied geography. Naturally, these elements have inspired countless recipes steeped in tradition.

Just five minutes from Esperanza, An Auberge Resort, open-air El Huerto joins Los Tamarindos with a refined farm-to-table concept. Surrounded by breathtaking Cabo landscapes, gardens, orchards, and fruit trees, this haven resembles a rustic Baja hacienda with a functioning farm meticulously planted every season. Sustainable dishes blend Mediterranean and Asian influences with Baja’s signature seafood. Breakfast and dinner menus adapt to current on-site harvests. Explore the grounds, relax in a hammock, or chat around a fire pit while ogling the star-studded Cabo sky above. Reservations are highly recommended.

Named for the legendary Mexican general Pancho Villa, Pancho’s Restaurant & Tequila Bar runs the gamut while representing each of the country’s 31 states. Savor tamales wrapped in banana leaves from Oaxaca, short ribs from Sonora, chicken mole from Puebla, and succulent seafood from Baja California Sur. Sip smoky mezcal as chefs display their mastery on a large mesquite grill. Decidedly Mexican, the eatery’s festive décor is ignited with papel picado banners, a veritable rainbow of colorful linens, and engaging murals.

Considered Pancho’s most celebrated feature, however, is its stellar bar stocked with hundreds of tequilas, mezcals, and fine liquor labels. Those thirsting for a little “Tequila 101” should dive into sampling sessions that educate on differences between the spirits and their customs and traditions.

A Los Cabos favorite, Edith’s Restaurante is a vibrant medley of Baja Californian and Guerreran cuisines, serving steaks and seafood prepared with fresh, locally sourced ingredients. Candlelight, palapas, and an intimate view of Médano Beach and the famed El Arco

combine to create a magical setting for a once-in-a-lifetime meal.

With origins in the 1970s, The Office, a small palapa on the beach, was host to a local character and his clients — giving the small, unpretentious spot its name. These days, the restaurant serves deliciously colorful plates and hosts live music and events against a gorgeous ocean backdrop.

Mestizo del Mar’s commitment to regional cuisine is reflected in its emphasis on house-made ingredients, diverse techniques, and bold flavors. Chef Adán Vega, whose résumé includes some of the best restaurants in Los Cabos, is responsible for the restaurant’s organic, less-is-more philosophy.

An Unforgettable Experience

With an incomparable waterfront location at the Marina in Cabo San Lucas, Alexander Restaurant has served Swiss cuisine along with fresh, locally caught fish; an eclectic selection of wines; and delicious desserts for over 30 years.

Alexander is where you go to sample Chef and Owner Alex Brulhart’s menu of mouthwatering Swiss, French, and tropical-inspired dishes. Among the standouts at this Los Cabos institution are the fresh fish, lobster, and shrimp; duck; chicken; lamb; choiceaged beef; and pasta. An extensive wine selection and full bar complement the delicious fare, and the decadent dessert options — like the Chocolate Volcano — offer a perfect ending to an unforgettable experience. Alexander is a must for discerning foodies who crave European dishes with tropical influences. For reservations, email reserv@alexandercabo.com.

Just steps away from Alexander you’ll find Vibrant Cuisine, which offers up a fusion of Mexican and French dishes with an Asian twist. Rustic, yet refined, Humo pays homage to Latin American grilling techniques with Lobster Causa and oysters from the Crudo Bar prepared over open flames. Sumptuous entrees play out with 12-ounce filet mignon, grilled sea bass, and Peruvian-style roasted chicken.

Cap off an exquisite feat at Candil, where mixologist Hector Ramirez amazes with agave libations including mezcal, tequila, and the less common sotol, bacanora, and raicilla. These spirits merge into Ritz-Carlton bespoke cocktails, highlighted by the Pastorcito, Ramirez’s favorite, named for the famous Taco al Pastor. Meanwhile, Dining Beyond elevates the resort’s traditional offerings with three-, four-, and five-course affairs.

Los Tres Gallos (The Three Roosters) delivers Mexican aromas and flavors via old family recipes perfected by generations of cooks and chefs honoring their mothers’ and grandmothers’ traditions. Authentic dishes are presented in a quaint, colorful courtyard brimming with fruit trees. The open-air kitchen heightens the gastro senses as chefs prepare such classic regional favorites as skirt steak, chicken mole enchiladas, tortilla soup, and Chilean sea bass. For ultimate edible nirvana, the Molcajete overwhelms with chorizo, steak, shrimp, melted cheese, and sliced avocados.

TURNING UP THE HEAT

A contemporary sanctuary nestled along one of Los Cabos’ only swimmable beaches, Hotel Chileno has opened YAYA, a term of endearment for grandmothers across Mediterranean and Latin

American cultures. Elevating comfort food to a new level, Chef Eliana Godinez blends Baja’s land and sea windfall with European touches and the vibrant colors and

flavors of Latin American cooking. A convivial dining room, bar, and lush open patios are ideal settings for savoring prawns Aglio-OlioPepperoncino and Catch of the Day with root vegetables and preserved citrus. Chileno Bay’s renowned mixologists guide the agave journey exploring multiple origins, methods, and chemistry profiles of tequila, mezcal, and Sotol Distinct. As unique as each spirit, the tasting itself is tailored to each guest based on knowledge, palate preferences, and interests.

On the southernmost tip of the Baja peninsula, Nobu Hotel Los Cabos mesmerizes with breathtaking views of sparkling sapphire waters, stellar amenities, and immersive culinary experiences worthy of Chef Nobu Matsuhisa’s notable name. The chef continues to

flaunt Japanese-fusion trends in his extensive menu of inventive dishes and bold cocktails. Namesake Nobu Los Cabos creates

On the heels of an illustrious 25-year stint as executive chef at the award-winning Pitahayas Restaurant, Chef Volker Romeike paves a new Asian fusion path at Mirai Restaurant & Sushi Bar in San José del Cabo.

Since opening in 2020, Mirai has shared chef presentations of Baja’s freshest ingredients sourced from local farmers and fishermen. Straight from the Farm

A visit to Los Cabos wouldn’t be complete without a Los Tamarindos farm-to-table dining experience. Both the organic farm and restaurant are set on 17 acres five minutes from downtown San José del Cabos. The slight distance from the city center adds to the rustic charm, and it’s easy to forget you’re still in Los Cabos as you approach the restaurant via a dusty dirt road.

The Los Tamarindos farmhouse dates to the 1880s and was originally used for growing sugarcane, one of the region’s major exports at the time. Everything you’ll eat at Tamarindos is either grown on the farm or sourced from local vendors and other farmers. The fresh fish is caught daily by independent local fishermen and hand selected by the chef.

A few dinner menu items include the jicama tortilla with shrimp, pico de gallo, and pineapple; grilled octopus marinated with fine herbs and served on a bed of arugula; lemongrass-baked Tamarindos farm-raised chicken; and wood oven–roasted locally raised lamb.

“The recipes we use have been handed down through generations to bring you a unique and memorable dining experience,” says Chef and Owner Enrique Silva.

Most visitors come for the delectable dinners, but Tamarindos also serves daily breakfast and lunch. For those seeking a true hands-on culinary experience, sign up for a cooking class. Visitors and students can harvest vegetables on the farm and prepare a four-course meal of Mexican fare that they all enjoy together.

For an extended visit, spend the night in one of the restaurant’s quaint farm-side bungalows among the fields. Each bungalow is a cozy one-bedroom retreat with a palapa roof that keeps the interior cool even during the summer. Other features include air conditioning, a coffee and tea station, and a relaxing patio lounge area. —Rick Stedman

Facilities at the refreshed 18-hole golf course thrive after sunset, thanks to a lighted driving range where golfers can extend their play. A garden fountain sets the tone for a charming après-golf gathering complemented by an uber-impressive menu at the course’s in-house restaurant. It’s an excellent option for refueling for tomorrow’s round or a day of Cabo exploration.

Festivals in Flavor

In a destination revering cuisine as a cultural icon, the Los Cabos culinary scene is hotter than a habanero. Local, regional, and international gastronomy are showcased in traditional soirees, ongoing resort programs, and pop-up events that find foodies drooling in anticipation.

Emerging from a mandatory hiatus in 2020, Los Cabos is ramping up its food focus by spotlighting its dazzling array of distinctive bites and spirits. While high-profile gatherings are expected to return in 2023 and 2024, resorts and restaurants have bolstered cooking classes, tequila tastings, and themed dining events to appeal to a smaller scale. Although many are exclusively offered to on-site guests, others open their doors to a broader sphere of destination visitors.

The following events are scheduled or planned for potential 2023 and 2024 appearances. We suggest you visit event websites for the most up-to-date information.
