Baja Brewing Co. has been raising the bar on Baja California Sur’s craft brewing culture since its inception in 2007. The beer-centric company was launched with a mission to bring a craft brewing climate to Mexico similar to what exists in Colorado — where founder and brewmaster Jordan Gardenhire

and partner Rob Kelly first began brewing beer while attending the University of Colorado at Boulder.

A massive glass wall invites customers to peer into the 1,000-gallon tanks that produce the pints they consume.

Aside from its Baja Blonde, Black, Red, and Stout, these hot cantinas let it flow with seasonal drafts on tap. Graze on creative nosh from a menu ranging from traditional pub fare and beer dough pizzas to more sophisticated specialties like panko-crusted sea bass.

As a new point of pride, Baja Brewing Co. reigns as the most decorated of 130 participating breweries at Mexico’s prestigious Copa Cerveza beer competition in 2021. Sipping and sizing up more than 600 beers in 42 categories, some 30 international judges tapped Baja Brewing Co. as the Best Large Brewery in Mexico.

For the first time in more than 20 years, guests at the fivestar Las Ventanas al Paraíso, a Rosewood Resort, can enjoy live music and expertly crafted cocktails until 2 a.m. in an intimate and sophisticated setting.

Inspired by the prohibition era — when it was illegal to serve alcohol, so people had to enjoy a drink discreetly — the aptly named La Botica is an elevated speakeasy featuring art deco design elements evocative of the period. In-the-know guests enter the exclusive bar through a nondescript door off the lobby, under the guise of a vintage Coca-Cola refrigerator. Partiers are drawn in by an external entrance into a glamorous private space reminiscent of a 1920s-era apothecary.
