Top Ten Baking Rules and Tips We are delighted that Candice Brown will be appearing on the cookery theatre stage on Saturday 3 June at 1pm. Here Candice shares her ‘Top 10 Baking Rules and Tips’ new to baking try starting out favourite ingredients - savoury – 6 Mysmoked 1 Ifwithyou’re a really simple traybake. Brownies paprika / sweet – vanilla bean would be perfect as they don’t need to rise and they’re supposed to be gooey. If it’s not perfect, just tell everyone that’s how it’s meant to be

Pastry - when making pastry make sure that you keep everything really cold. And I do mean everything – cold butter, cold water, cold hands (wash them in cold water before you start) and even a cold surface if it’s a hot day. I sometimes put ice packs on the surface to chill it before I start

Since the inception of their first establishment the Tanner brothers have continued their success as stars on the small screen when they broadened their talents to film their own 15 part TV series The Tanner Brothers. They’re creators of inspiring cook books; For Chocolate Lovers, Ice Cream (Small Book of Good Taste), Take Five Ingredients and have bolstered their portfolio of establishments. Chris with his brother James operates the Barbican Kitchen on Southside Street, Catch, their award winning Fish & Chip shop is based quay side in Looe and also a gourmet pub, The Kentish Hare, Royal Tunbridge Wells.

The young and talented chef Jeremy comes from three generations of Chinese chefs. Being surrounded by food connoisseurs Jeremy developed his passion for food and cooking at an early age.

Richard is a Plymouth born chef, he studied through a work based apprenticeship at St. Mellion Golf and country club.

After several career changes, Jeremy decided to follow his heart and bring the world of Chinese cuisine to fellow food enthusiasts. In autumn 2009 he established School of Wok in London, a mobile cookery school specialising in teaching Eastern cuisine to students in the comfort of their own homes.

After a brief spell working in local restaurants he joined the Royal Fleet auxiliary in 2003. After 11 years he left the service as a leading chef and took up the role of head chef in his home village of Buckland Monachorum’s Drake Manor Inn. He joined the Treasury in 2015 as head chef to a kitchen team of five, and created a new modern British/ European menu which has proven very popular for its originality, consistent quality and an eye for local produce and sustainability.

Former Barbican Kitchen Head Chef Ben Palmer & his wife Francesca took over the Tanner brothers’ former restaurant in October 2014 and re-launched it as The Greedy Goose. Within weeks the duos team were awarded 2 AA rosettes.

Candice Brown is the winner of The Great British Bake Off 2016. Born in North London, Candice grew up in the pubs that her parents ran – and that she famously immortalized in gingerbread for her most talked about showstopper – always chipping in when needed, be it pulling pints or mopping floors. Taught to bake by her beloved Nan, Candice strives to emulate her bakes, often referring back to her treasured recipe book and hand written notes. Candice loves everything vintage and her sense of style captured people’s attention on set. This, coupled with her passion for sumptuous, decadent food that you want to dive into is what really sets her apart.

Though an acclaimed restaurateur, chef and author, Mitch Tonks, has a love of seafood and a desire to share that passion with others. His prestigious restaurants are International and National multi-award winning. His book ‘Fresh’ scooped ‘Best Fish Book’ at the Gourmand World Cookbook Awards. Mitch’s desire for sharing wonderful food is in evidence across all the restaurants in his group, from his flagship Seahorse to Rockfishes in Dartmouth, Torquay, Plymouth and Brixham, and the Spiny Lobster in Bristol. Mitch is committed to constantly giving back to the community, having embarked on an academy scheme to train new chefs in partnership with South Devon College. On matters of UK fishing, sustainability and supply, his is arguably one of the most erudite, passionate and credible voices out there.

Masterchef Finalist Elly studied catering at City College and also took an apprenticeship at St Mellion Golf Club. Elly then worked at restaurants in Wales and the Lake District before returning to the South West to work with the Tanner Brothers. In 2015, Elly took a position as Chef de Partie at Lucknam Park and graduated to Junior Sous Chef three months later. In December 2016, Elly was one of 3 chefs that reached the finals of BBC Masterchef the Professionals.

Adrian began fishing in 1987, starting as a deck hand and worked his way up to skipper on crabbing boats. After working in the industry for 25 years and exuding passion about the UK Seafish Industry, an opportunity arose where he could share his knowledge and inspire the UK public and chefs. He wanted to prove how good UK Shellfish is to eat and how easy it is to pick a crab without fear and so Crabstock Shellfish Festival was born!

Head Chef at The Boathouse Café, Sean Mott began his career in Bath, where he was classically trained in French cuisine, both at University and his uncle’s bistro. Sean has been at The Boathouse Café for over two years, where he’s nurtured his love of working with fresh ingredients, sourced locally. His passion for cooking fresh fish has also developed, as he says working in a restaurant that delivers its own fresh fish, daily is a real buzz. Sean says, in many restaurants the freshest fish you can expect to get is a few days old, our fish comes, literally straight off the boat and nothing tastes better.

Stand 15 The Royal Air Force is an Ofsted Outstanding Training Provider. Currently there are 21 different roles for apprentices from drivers and caterers to intelligence and engineering with Civilian qualifications and a guaranteed RAF job at the end of it. If you are joining with little or no catering experience, you will complete specialist training at the Food Services Wing DLS CTS (RAF) Worthy Down. This 17 week course will give you an overview of catering in the RAF and the basic craft skills required of a chef. Whilst at CTS during the course you will begin a level 2 NVQ Qualifications and Credit Framework (QCF) Diploma in Professional Cookery (preparation and cookery) which you will complete during the first year on unit, and you will be on your way to gaining an Apprenticeship in Hospitality.
