Get your glow on! Summer is here! The days are longer, the nights are warmer and we are all spending more time outside enjoying the warm, radiant rays shining down on us. And while these hotter days are a welcome reprieve from the bitter cold days of winter, the summer can wreak havoc on our newly exposed skin. That’s why this issue we are exploring the topic of healthy skin care. I live in the hot and dry climate of Kelowna. It can be very challenging sometimes to keep my skin looking and feeling healthy while living in such a dry climate. That’s why hydrating is always my number one recommendation for anyone trying to improve their health, digestion and skin! I’ve always been that crazy friend who can’t leave the house without a water bottle. In my opinion, this is the single most important thing to consume for healthy skin. Drinking an adequate amount of water daily is important for overall good health because water aids in digestion, circulation, absorption and even excretion. If your skin isn’t getting enough water, the lack of hydration will present itself by turning your skin dry, tight, or flaky. Dry skin has less resilience and is more prone to wrinkling. My second recommendation for healthy skin is healthy fats! Salmon, avocados, nuts, seeds, coconut, hemp hearts, and grass-fed beef are some of my favourites. Omega-3 in particular is necessary to keep skin thick, supple, and moisturized. My third and most fun recommendation is red wine. Red wine contains resveratrol which has a wide range of health benefits, among them reducing the effects of aging. It may also slow the production of harmful free radicals, which damage skin cells and contribute to the signs of aging. There isn’t a ton of evidence on the amount of resveratrol in a glass of red wine, but it is still my favourite healthy skin hack. Cheers!

And my final recommendation is to grab that glass of red, find a shady seat outdoors and flip through the pages of this issue for even more healthy skin hacks. With hydration being so essential, check out page 18 for advice on some of the best water filters for your home. I created my blog, Basics with Bails, to help others get back to the basics and as a way to share my food photography and healthy, delicious and accessible recipes that nourish the body and soul. I believe the secret to health and happiness starts from within, and isn’t as complicated as everyone thinks. When it comes to skin care, the same basic principles hold true!

Keeping a Gratitude Journal When you practice gratitude, you welcome joy into your life— along with a whole host of other benefits. Keep a gratitude journal to build this invaluable habit. The simple act of feeling thankful is one of the more powerful ways we can take responsibility for our health and well-being. The reasons for cultivating a habit of gratitude are almost too numerous to list— and backed by scientific research to boot. Improved sleep, relationships, moods, self-care, and decision-making are all linked to a practice of gratitude. It has even been shown to curb overeating! “Practice” is the key word, of course. How can you make gratitude an intentional, consistent part of your life? Enter gratitude journaling. If once a day, you can record and revel in what you have to be thankful for, it will have an undeniable impact on your quality of life. Here’s how to start a regular practice of gratitude journaling:

Set the intention

Pick a time of day that works for a quick journaling session (ultimately, you might only be writing quick lists). Pick up your dedicated gratitude journal and set a strong intention to practice gratitude. Take in a few deep belly breaths. Let the stresses and preoccupations of the day start to lift away. You are now ready to take a dedicated moment to cultivate genuinely thankful feelings. 2

Identify and express

Depending on what’s going on in your life, it may be difficult or easy to identify what you’re grateful for. Try using your five senses as a guide. Think about what you’ve smelled, touched, heard, tasted, or seen that sparked joy or safety or hope, or whatever it is you want to feel. Try to focus on experiences rather than material possessions. Then simply record a list of these experiences, with as little or as much detail as you wish. As you do so, focus on the thankfulness you feel. 3

Reaffirm and release

When you are finished writing your list, take a moment to reflect on each one, expressing (out loud or with your inner voice) your gratitude. Notice how the thankfulness impacts the way your body feels. Then release these experiences, along with any negative ones you may have had, and imagine yourself as a clean slate. Founders of Nelson Naturals, Kevin Hagel and Dana Di Ponio, have created a toothpaste that is not only better for our health, but the health of the planet too. What’s the story behind Nelson Naturals? What inspired you to create a toothpaste company? You can’t talk about Nelson Naturals without first talking about Nelson. If you aren’t familiar with the quaint city of Nelson B.C., let us fill you in. Imagine a town of only 10,000 people, tucked away in the stunning mountains of the interior of B.C., surrounded by lakes, forests, and hippies. It’s often described as a small town with a big city vibe. It was here in Nelson, at the local farmers market, where the first jar of Nelson Naturals was sold.

But how did we get to that point? Six years ago, the natural toothpaste market was not what it is today. There were really only a few brands to choose from, and in our opinion, none of them had very effective products. So this is where the entrepreneur’s brain kicks in and we decided to start making our own. We knew what ingredients we wanted to avoid (fluoride, SLS, glycerin, triclosan), and we knew that our goal was to create a toothpaste that was actually effective, and only used high quality, clean ingredients. This meant a lot of formulating, a lot of

research, and a lot of inviting friends over to brush their teeth. Once we had a formula that we were happy with, we spent a summer selling at the farmers market. This was our first experience with customers trying our products, and the verdict was they liked them. We were often told it was a very “Nelson” thing to see natural toothpaste being sold at the farmers market, so we ran with it. After the market season had ended, we started getting emails from tourists who had visited Nelson in the summer and bought our toothpaste at the market. They had run out of product and wanted to know where they could find more. The simple answer was, they really couldn’t, and that just seemed wrong. So we decided to try and start selling our jars of toothpaste to retailers. We had three flavours at that time: Spearmint, Cinnamon, and Fennel. Our approach was very grassroots; we would get in our minivan with our dog and a few cases of toothpaste and we drove around to health food stores all over B.C. and convinced (and sometimes pleaded with) the buyers to list Nelson Naturals. It was not always an easy “yes”. In fact, we heard the word no quite a bit more than we had hoped, but we remained determined and stayed positive. Eventually the yes’s began to add up, and before we knew it, Nelson Naturals was available at stores across B.C. and Alberta. Now, all these years (and a few minivans) later, we are humbled to find our products in both small towns, and bustling city centres across Canada. Why does your product matter? What problems can conventional toothpaste brands cause that you want to address? In a world where we are constantly bombarded by marketing, new products, and the idea of convenience, we feel it’s important to create products that customers can feel good about consuming. Plastic-free is one of Nelson Naturals main company ethos and has been since day one, way back in 2012. With our newest product, Crush & Brush, we are proud to offer fully biodegradable packaging in place of the traditional plastic toothpaste tubes we all grew up with. We are actively helping to divert millions of plastic tubes from our oceans and landfills, while simultaneously raising awareness of the negative impacts of single use plastics. We have end to end waste reduction measures implemented throughout our manufacturing process and all of our shipping and packing materials are paper-based, 100 per cent plastic-free, and repurposed whenever possible. principles throughout the entire distribution chain as well. But it’s not just the packaging that matters, it’s what’s inside that really counts. The average person will spend close to 1500 hours of their life brushing their teeth. Two minutes, twice a day really does add up. Most people who use conventional toothpastes don’t even realize what they are putting into their bodies. There is a plethora of ingredients in store brand toothpastes that have nothing to do with your oral health, and everything to do with cutting costs. When we started out, it was extremely important to us that we left out these questionable and toxic ingredients and used only clean, food grade ingredients. We have stood by that belief, and as we continue to grow and evolve, that remains a pillar in our company philosophy. What is your background? What were you into before you started Nelson Naturals? We get asked all the time what we did before Nelson Naturals, and no, we weren’t dentists. Kevin is originally from Nova Scotia but has been living in B.C. for over 20 years now. He spent many years living and working in Vancouver as a photographer and video producer. He is extremely creative and has a natural eye when it comes to design. Kevin embodies the entrepreneurial spirit and is what you might call a trivia buff. He is also an avid mountain biker, which makes Nelson the perfect place to call home. Dana is originally from Ontario, where she taught kindergarten at Montessori schools for many years. Her patience and outgoing attitude made her a natural fit for the customer service world, which is what she focused on when she moved to Nelson almost 10 years

ago. She is also a nature lover and a yogi, so it’s no surprise that she fled to Nelson. A fun fact about Dana: when she was a school-aged child herself, Dana wanted to be a dentist when she grew up. What’s the biggest challenge your company has faced and how did you work through it? Funny enough, for the first three or four years, the biggest hurdle we faced was the jar. There simply wasn’t the awareness around the plastic epidemic and the jar was, well, very strange. People were so used to getting toothpaste in a tube that the jar really stopped them in their tracks, and not always in a good way. Most people couldn’t wrap their heads around the idea that we would make toothpaste without a tube. We would often hear customers say things like “I love the product. As soon as you put it in a tube, I’ll buy it!” For us, those were very difficult times. We were trying to grow a very small business and listen to customer feedback, while also staying true to what we believed in. Of course there were times where we discussed introducing a tubed product, but it really just never felt right for us. We stayed the course and focused on the positive interactions and feedback we received. Then slowly things started to change. We saw a shift in the way customers were shopping. Little by little, they were becoming aware of the staggering amount of single use plastics that they were purchasing. That slow change was just the beginning of what would now be described as the ever growing zero waste movement. Now, our jar is one of our biggest selling features! We are sought out by both customers and retailers around the world because we offer plastic-free

packaging. We are proud to be considered leaders in our market space. Had we given into the pressure during those early years, our company wouldn’t be what it is today. We stood strong, we were patient and tenacious and in the end, it paid off and we couldn’t be more proud of what we do. What inspires you to get up and work hard at building Nelson Naturals? Anyone who knows us, knows that Nelson Naturals is truly our passion. It’s our baby, and we love that we get to share it with so many amazing people. There isn’t a day that goes by where we aren’t brainstorming new ideas, connecting with customers, or pushing ourselves out of our comfort zone. We are continually inspired by the growing community of people around the world who are determined to help reduce plastic waste. We are in the midst of a movement, a shift in the way we view consuming, and we feel very privileged to be a part of it. We feel it’s our obligation as a company to contribute and to help educate consumers so that they can make smarter choices for their families and for the world. For example, being able to work with and provide products for the new generation of bulk stores is something that we are very proud of. As we look towards the future, we feel very optimistic and enthusiastic! The zero waste movement has become a living, breathing thing and it’s very exciting to be a part of something that feels so monumental. The idea that one person can make small changes in their day to day life, and that those changes can have a massive impact on our world is nothing less than extraordinary. We feel very lucky to collaborate with other organizations across the world who share our point of view. For instance, we have just recently partnered with Australia’s largest natural health products distributor, Unique Health Products. Unique supplies natural wellness products to retailers across Australia, and they are heavily focused on growing the zero waste component of their lineup. As the usage and benefits of CBD become more apparent, why is access still being restricted? Over the past six months, we have seen a significant increase in the interest of CBD as a health product. From movie stars and sports celebrities to seniors and wellness practitioners, it seems everyone wants access to health products containing CBD. Given the favourable health and safety profile of CBD, many Canadians reasonably assumed that when the government announced legal access to recreational cannabis, we would also have access to natural health products (NHPs) that contain CBD. Unfortunately, this is not the case. Instead, the Canadian government classified CBD as a prescription drug, making it easier for you to get high than to get well.

What We Know About CBD

Although both THC (tetrahydrocannabinol) and CBD (cannabidiol) are chemical compounds found in cannabis, their effects on the human body are dramatically different from one to another. Most people tend to associate cannabis with being “high.” That intoxicating effect (or the “high”) is the work of THC. Since its legalization, recreational cannabis containing THC has become easily accessible via regulated stores across the country. On the other hand, the effects of CBD differ significantly from that of THC. CBD does not have any intoxicating effects (thus no “high”), is non-addictive, has a number of promising health benefits, minimal side effects, and has no apparent potential for abuse. CBD is present in all cannabis plants, including marijuana and industrial hemp.

Buying CBD Products in Canada

Given its favourable safety profile and promising health benefits, a growing number of Canadians are interested in purchasing and using CBD to benefit their health without getting “high.” However, there are currently many restrictions on purchasing CBD, specifically as a natural health product (NHP). In October 2018, when cannabis was removed from the Controlled Drugs and Substances Act, all phytocannabinoids found in cannabis plants – including THC and CBD – were swiftly placed on the Prescription Drug List (PDL). As a result, if you are interested in using CBD products for health and wellness, the only way to purchase these products is from a government-licensed cannabis store or with a doctor’s note. Unfortunately, this is further complicated by the fact that obtaining a prescription for CBD is difficult, with only a small percentage of doctors willing to prescribe it.

CBD is a Natural Health Product, Not a Recreational Drug

NHPs are a class of health products used to restore or maintain good health, such as vitamin and mineral supplements, herbal remedies, probiotics and enzymes. In Canada, all NHPs must be approved by Health Canada before they are allowed to be legally sold. In order to be authorized for sale, information supporting the safety and efficacy of a product must first be assessed by Health Canada. Health claims must be supported by valid, high-quality scientific and/or traditional evidence. Safety and efficacy must also be supported with sufficient evidence. This evidence can include: clinical trial data, journal articles, pharmacopoeias and traditional resources. Knowing this, it seems logical that products containing CBD should be considered as an NHP and required to meet the same world-class regulatory standards as other products in this category. Currently, recreational CBD products are not labelled with useful information, such as dosage, warnings, intended use, contra-indications, or known adverse reactions, that would be available if CBD was regulated as an NHP. Those looking to make an informed decision on what CBD products to choose and how to use them to improve their own health must do so without any support or information on a product’s label. This regulatory change in turn would increase availability of CBD. As you would be able to purchase these products at your local health food store and for lower dosages used for the prevention and maintenance of good health, you would not be required to have a doctor’s prescription.

As an NHP, CBD would require labels with appropriate risk information, and data would need to be supplied, indicating that the product is safe and effective for its intended use before it is available for you to purchase. The World Health Organization’s recent review of CBD supports the notion that CBD should be permitted in NHPs, as it found the compound to be safe, well-tolerated, non-intoxicating and not associated with potential for abuse. The benefits of these changes are clear: regulated products with appropriate therapeutic and wellness claims would give you access to safe, regulated products instead of unregulated CBD-containing health products on the illegal market.

How You can Help

At the Canadian Health Food Association, we believe that if you can legally purchase THC and choose to get high, you should also legally have the choice to purchase CBD as an NHP that supports your health. And like other natural products, you should be able to buy CBD at your local natural health product retailer. You shouldn’t have to hunt for it in a store that sells products made to get you high. The Overlooked Key to Having Flawless Skin Regular exercise may be the missing link to glowing skin BY SABRINA VIRDEE CPT, RHN

When I step out of the gym, there is something about the radiance of my skin that I have been unable to find in even the most luxurious bottle of skin care. Have you ever wondered where that post workout glow that everyone talks about comes from? The glow is real. When it comes to our skin, we often talk about eating lots of fruits and vegetables, ensuring we are getting adequate amounts of healthy fats and many of us have jumped on the water bandwagon determined to drink three to four litres of water a day. What we don’t talk about are the rewards of exercise when it comes to our skin. Working out isn’t just about staying fit or losing weight. Of course, we reap the benefits of happy endorphins, increased energy, and fitting into our favourite pair of jeans, but it doesn’t stop there. Regular exercise may be the missing link to the flawless face you have been striving for. Think about how fitness plays a role in cardiovascular health. It’s hardly news that exercise is great for our heart and lungs, so anything that promotes healthy circulation also benefits our skin, keeping it healthy and vibrant. Our blood carries nutrients and oxygen to cells throughout the body, including the skin. Simply stated, by increasing our blood flow, our fitness routines help nourish skin cells. In addition, blood flow helps flush out cellular debris out of our bodies, literally cleansing our skin from

the inside out. This is most advantageous when we ensure we are drinking adequate amounts of water. Of course, this process takes place regardless if we carry around a water bottle or not, however staying hydrated provides that extra push to our systems and allows for a much smoother exit of waste and toxins. In addition to flushing out cellular debris, in my opinion, working up a good sweat is the equivalent of getting a mini-facial. When the pores dilate, sweat expels trapped dirt and oil. It’s magic, right? Just remember to wash your face after a good workout so the dirt doesn’t get sucked back into your pores. Exercise also keeps our lymph system happy. Lymph nodes are little nodules of tissue that are responsible for taking out metabolic trash. These lymph nodes need muscle to help with the process, making fitness an integral part of hauling out waste. During exercise, the muscles contract, squeezing the lymph nodes and allowing for waste to be yet again pumped out of our systems. This is an important process for our skin, leaving us with a brighter skin tone and far less puffiness. It doesn’t end there. Our fitness routines also reduce inflammation within the body. When you exercise, your tiny arteries open up, allowing more blood to reach the skin’s surface and deliver nutrients that rev up your skin’s ability to produce collagen, ultimately making us look younger! Last but not at all least, the more muscle tone you have, the healthier your skin will look and feel. Your skin has greater support from strong, firm muscles. And the increased muscle tone will lead to firmer appearing skin, also minimizing the appearance of cellulite. When all is said and done, the takeaway message is that there is no supplement or skin care line that can improve our skin the way fitness can. The rewards of fitness extend far beyond leaving you feeling healthy on the inside. It is also keeping our skin healthy and vibrant on the outside. Your branding is “Basics with Bails”. What in your mind are the “basics”? The “basics” to me mean nourishing your body with real, whole foods so that you are consistently satisfied and energized to live your life to the fullest. Nutrition is not low fat. It is not low calorie. It’s not feeling deprived or being hungry all the time. I don’t believe there is a “perfect” diet for everyone. I believe in balance and finding what works best for you. Your recipes tend to be fairly fun and definitely visual. How do your photographer’s instincts influence your recipe development and vice versa? I much prefer shooting a vegan double chocolate brownie over shooting a salad. I really enjoy baking and shooting sweet treats, so that definitely influences my recipe development to more of a healthy baking blog, rather than home cooked meals. I love capturing visual stories and adore bright, clean, and uplifting imagery that emphasizes the beauty of real ingredients and homemade treats. It’s great that you have been able to blend your two passions healthy eating and photography - together. What led you down the path to healthy eating and a healthy lifestyle? I was raised on white flour, white sugar, and butter. You name it, I ate it. When I was about 15 or 16 years old, I started to notice I was gaining weight (as you can imagine, it’s a teenage girl’s worst nightmare). I had terrible acne and my immune system was garbage. I started doing my own research on how to eat “healthier”

and how to exercise. I grew up playing sports so I knew how to do different types of cardio but I never truly enjoyed running, so I wanted to teach myself how to weight train and get stronger. I began fuelling my body with more vegetables and protein, and quickly realized how good I felt when I was taking better care of myself. I started dropping weight gradually, my skin was clearing up, and I wasn’t getting sick as often. I wholeheartedly believe in the quote, “Let food be thy medicine and medicine be thy food”. Your recipes touch on diets like paleo and veganism, but in general, they’re quite varied and cater to a lot of different types of “eaters”. Do you have a philosophy of eating, or a few principles that guide you when you create recipes? Like I said in my first response, I don’t believe there is a “perfect” diet for everyone. I think everyone thrives differently. A few years ago, I tried to go full vegan and my digestion was awful during that time period. However, I have some friends that have never felt better going vegan. I don’t like to label my diet because I eat a very wide variety of foods and think that my recipes definitely reflect that. How do you do “recipe development” for clients? What does that look like? A lot of my recipe development inspiration comes from my grandma’s old recipes. When I was younger, I used to bake and cook with her often. Everything we made contained white flour, white sugar, and butter. As I grew older, I became more and more interested in living a healthier lifestyle and cleaning up my diet,

so I started recreating many of her recipes. I typically try to keep everything gluten-free, as everyone and their mother are intolerant to gluten these days. Apart from that, I do a mix of paleo, keto, and vegan recipes as I have to cater to all types of diets for my clients. Our theme this issue is caring for your skin. How do you eat to support healthy, beautiful skin? I struggled with acne a lot as a teenager, and I know diet plays a huge role in my skin health. I eat a ton of healthy fats such as salmon, avocado, chia seeds, hemp hearts, nuts, coconut, and grass-fed beef. And I also limit my carbohydrate and sugar intake to keep my skin happy. Whenever I indulge in processed sugar, pizza, or pasta, my skin always acts up. Water is also huge for my skin health. I carry my Swell water bottle everywhere I go so I always stay hydrated! What advice would you give someone who wants to get healthier? What is one simple thing they can do to start today? I think the most important thing when starting your journey to healthy living is mindset. If you think positive and focus on gratitude, you will be way more likely to succeed. Your body believes what you think, so focus on the positive! Another piece of advice is getting some sort of movement in daily. It doesn’t have to be a two hour workout session at the gym. Even a 10 to 15 minute walk outside with your dog will help you. The last bit of advice I have is to eat your vegetables and drink lots of water! I’m sure you’ve heard this a million times, but it really is all about getting back to the basics.

Chewy Peanut Butter Blondies

Ingredients • ½ cup peanut butter melted • ¼ cup coconut oil melted • cup sweetener (I used Lakanto golden) • 1 tsp vanilla • 3 tbsp almond milk • 2 cups almond flour • ½ tsp baking soda • ½ tsp baking powder • ½ tsp cinnamon • ½ tsp sea salt • Dark chocolate chips (I use Lily’s Sweets, sugar free)

Directions 1 Preheat the oven to 350F and line a bread loaf pan with parchment paper. 2 Add the peanut butter, coconut oil, sweetener and vanilla to a bowl and mix. 3 Then add all the dry ingredients to the bowl and combine all together. Mixture will be very dry and will be hard to combine. Add almond milk so dough forms and mix in chocolate chips. 4 Transfer the batter to the lined pan, and use a spatula to spread it evenly into the bottom of the pan. Because the batter is so thick, you might want to use your hands to press it in. (Get them wet to help prevent sticking.) 5 Bake until the top is lightly golden, about 10-15 minutes, then cool completely before cutting and serving. The blondies become more sturdy as they cool. Slice into 8 squares and serve at room temperature.

Summer in Canada may be short, but it is also very hot and humid. It’s during this temperature rise that we risk dehydration the most! The depletion of the skin’s water content can result in itchy patches, dullness, flakiness, and an overall less supple appearance. Of course it is important to be drinking plenty of fresh water, but it is also a great time to incorporate more water-dense, high fat, skinhydrating foods. This time of year, farmers markets are booming with local organic vegetables and fruit. Cucumbers, baby bok choy, bell peppers, tomatoes, carrots - and the ultimate summer staple, watermelon - all naturally contain plenty of water and are very commonly found at all farmers markets (and grocery stores, if you can’t make it out to the market). One vegetable you might come across this summer is kohlrabi. It’s an unusual vegetable from the cabbage family that comes with a round pale green or purple bulb with smooth skin. It’s crunchy, has tall stems with dark green leaves, a mildly sweet taste, and contains a high amount of water. It’s also the star of my Kohlrabi Noodle Salad with Bok Choy which contains plenty of ingredients to help hydrate the skin from the inside out! This salad pairs great with grilled chicken, shrimp, and of course my Baked Sesame-Ginger Cod Fish.


PALEO RECIPES

Although cod is lower in omega-3 fatty acids compared to some other fish, it still packs a nutritional punch. It is high in selenium and vitamin E which work wonders on skin, and also helps to prevent premature aging. Don’t forget the Zesty Cashew Dressing which adds great flavour and tons of skin-loving fats to keep our skin nourished all summer long.

Sesame-Ginger Baked Cod Serves 2

Ingredients • 2–6 oz. wild caught cod fillets • 1–inch piece of fresh ginger, minced • 2 cloves garlic, minced • 2 tbsp coconut aminos • 1 tbsp maple syrup • 2 tsp sesame oil • 1 tsp toasted sesame seeds • Chopped green onion and cilantro, to garnish.

Directions 1 Preheat oven to 450°. 2 Line a small oven-safe dish with parchment paper, and place the fillets into the dish. Season with salt and pepper and set aside. 3 In a small bowl, combine the ginger, garlic, coconut aminos, maple syrup, and sesame oil. Mix well, then spoon the mixture evenly onto each of the fillets and sprinkle with toasted sesame seeds. 4 Bake for 10 minutes; then broil on high for one to two minutes until tops are slightly browned and fillets are tender, flaky and cooked through. 5 Sprinkle with chopped green onion and cilantro before serving.

Kohlrabi Noodle Salad with Bok Choy and Zesty Cashew Dressing Serves 2

Ingredients FOR THE SALAD: • 2 packed cups spiralized kohlrabi (about 1 medium sized kohlrabi) • 2 packed cups shredded baby bok choy • 2-3 persian cucumbers, thinly sliced • 1 medium carrot, shredded • 1 small red bell pepper, finely diced • 2 green onions, chopped • ½ avocado, sliced • 2-3 tbsp fresh chopped cilantro • 2 tbsp toasted sesame seeds

FOR THE DRESSING: • ¼ cup cashew butter • 2 tbsp rice vinegar or lime juice • 1 tbsp coconut aminos • 1 tsp sesame oil • 1 tsp maple syrup • 1 tbsp fresh ginger • 1 garlic clove • ¼ tsp red pepper flakes • 2 tbsp of water, to thin • salt to taste

Directions FOR THE SALAD: In a medium sized serving bowl, combine the kohlrabi noodles, bok choy, cucumbers, carrot, bell pepper and green onions. Mix well before adding the avocado, chopped cilantro, and sesame seeds to garnish.

FOR THE DRESSING: Combine all of the ingredients in a blender or food processor. Pulse until completely smooth, then season with salt to taste. Drizzle over salad and baked cod before serving.

Hydrating Zucchini Sushi Rolls

Keep cool and hydrated this summer with these delicious Zucchini Sushi Rolls! The crunchy vegetables wrapped in zucchini, coated with a refreshing tangy dressing make the perfect summer combination and the recipe can be made in about 30 minutes! BRITTNEY DESROSIERS, B.SC. (HNS)

During the summer months, it’s especially important to take care of our skin in order to avoid sunburns which as we know can harm our skin. Drinking lots of water, applying sunscreen and wearing a hat are all great ways to help maintain good skin care. In addition, incorporating hydrating foods, such as fruits and vegetables to meals will also help your body stay hydrated. Many fruits and vegetables have high water content, as well as electrolytes, which help regulate fluid levels in the body. If you’re like me, having to use a stove on a 30 plus degree day does not sound too appealing. That’s why I love to make these hydrating zucchini sushi rolls! They require no oven or special equipment. Nori sheets are traditionally used to roll sushi, however in this recipe, we are using zucchini. Use a hand peeler to peel zucchini into thin slices. Zucchini is high

in water content and a good source of B vitamins, vitamin C and more. Homemade tzatziki dressing is spread over the sliced zucchini for a creamy and tangy taste. This dressing contains healthy fats, some protein and additional vitamins. If you have some dressing left over, use it as a vegetable dip or store it in the fridge for later. Thinly sliced cucumber, carrots, bell peppers, avocado and alfalfa sprouts are rolled into the zucchini rolls. These ingredients add even more hydration and nourishment to the dish. I love garnishing these rolls with fresh cilantro and sesame seeds. Once this recipe is assembled, it’s best enjoyed right away. I recommend eating these rolls with a side of edamame for extra protein and fibre. This recipe is vegetarian and gluten-free, however, it can easily be made vegan and dairy-free by swapping regular yogurt for coconut yogurt.

VEGGIE-FRIENDLY RECIPES

Makes approximately 10-12 rolls

Ingredients • 3 zucchinis, peeled lengthwise • ½ cup carrots, sliced julienned • ½ cup cucumber (seeds removed), sliced thinly • ½ cup red bell peppers, sliced thinly • ½–1 avocado, pitted and sliced thinly • ½ cup alfalfa sprouts • Garnish with chopped cilantro and sesame seeds

TZATZIKI DRESSING • ½ organic cucumber • 1 ½ cups plain organic yogurt (regular or coconut yogurt) • 2 tbsp garlic, minced • 1 tbsp fresh dill, chopped • 1 tbsp extra-virgin olive oil • Juice from half a lemon

Directions 1 Peel zucchini lengthwise with a hand peeler. Lay slices on a towel and cover to remove any excess water. Note that the zucchini slices you peel towards the centre of the zucchini will be bigger (height wise) and the best slices to use. 2 Tzatziki dressing: Cut the ends off the cucumber, slice it in half and remove the seeds with a spoon or melon baller. Finely grate cucumber with skin on. Place grated cucumber in cheesecloth and squeeze out excess moisture. Add strained cucumber, yogurt, garlic, dill, olive oil and lemon juice to a small bowl and mix together. 3 Assembly: Lay zucchini slices on a cutting board and add approximately 1 tbsp of the tzatziki dressing. Spread it all of over one side of the sliced zucchini (make sure to get the ends as that’s what will hold it together). Then add 2 to 3 slices of each veggie, avocado and a pinch of alfalfa sprouts to one end of the zucchini slice. To roll the zucchini sushi, gently grab all the veggies and start to roll the zucchini slice. Repeat until all zucchini sushi rolls are made. Garnish with chopped cilantro and sesame seeds. What is “integrative health” or “integrative wellness”? To me, integrative health/wellness is looking at the whole person, not just individual concerns. It means working together with other types of healthcare providers to help the patient achieve their health goals. I personally like to have many different eyes looking at the same problem so that we can have the best outcomes for our patients.

Your goals with patients is to help them create “realistic strategies to optimize their health”. You also focus on “preventative health and nutrition with a focus on digestive health and stress management.” What might be an example of a realistic strategy a stressed-out person with digestive issues could adopt to optimize their health? I’m a realist, and I want my patients to have realistic goals and treatments. I encourage them to communicate if any of the ideas, strategies or prescriptions are not realistic for them. The simplest thing that anyone can do when they have a busy lifestyle and poor digestion is to physically slow down when they eat. Tell us about your internship at an HIV/AIDS clinic. What did you experience and learn there? Does it impact how you treat patients nowadays?

The Sherbourne Clinic is a free clinic run by our college with donations from various sources. It was a fantastic experience! Working with a demographic that didn’t have much of a disposable income taught me to be resourceful with ways of getting problems resolved. My short time there was a definite eye opener in the most positive way. It taught me that you need to treat the person, not the disease. That experience really drove home the need to meet people where they are at in life.

What drew you to naturopathy? Why do you believe in it? It’s a bit of a long story….I started at the University of Waterloo with the intention to get into medicine as I was always fascinated with how the human body worked. After my first year of university, I injured my back while working construction for my step dad. I went to the local ER where I was given some pain meds and told to follow up if things got worse. I wasn’t satisfied with that approach and decided to go to my chiropractor, who looked at the root cause of the issue (which I was a big fan of ) and gave me some instant relief. Fast forward a couple years, I was at a birthday party and was chatting with a friend’s housemate who was studying at the naturopathic school in Toronto. I was intrigued and applied to the school that week. I want to figure out why things are happening, not just mask the problems or treat the symptoms. This is why I believe in natural medicine. What are 2 to 3 strategies people can adopt today to practice preventative health? 1. Drink water! Water is key for energy and good health! 2. Slow down when you eat! Put your utensils down between bites and chew! Take your time and relax. Eating should be seen as a time to decompress and enjoy your food and/or company. 3. Ask yourself, “at what point in my day I do I feel at my lowest energy?” What ever time of day you feel at your lowest, place a reminder in your phone and/or calendar at that time. The reminder should say “What do I need right now?” Ask yourself what you need; is it a drink, a snack, to stand up and move, to go to the bathroom, or take a deep breath from your belly? I use this to help my patients with stress relief. I have had my reminder in my calendar for three years now at 2 pm. It’s a great way to help you to look after yourself and listen to your body.
