Many spa boutiques carry generic lines, but we’ve brought the quality of brands and uniqueness that our clients are expecting.” Shoppers will discover more than 30 brands, like the youthful collection of boho-spirited Hemant and Nandita to island-inspired staples straight from Ibiza by Charo Ruiz and tailored men’s shorts from Frescobol Carioca and luxury French swimwear brand Vilebrequin. EMBARK ON A GRECIAN CULINARY ADVENTURE By Erika Corsano

Another iconic culinary institute makes its way south to Sunny Isles Beach at the ultra-luxe waterfront residential complex, The Estates at Acqualina. Avra Estiatorio, of New York and Beverly Hills fame, will open a stunning 10,000 square-foot Greek restaurant designed by the award-winning STA Architectural Group in early 2022. The oceanside estiatorio will transport guests to the Mediterranean seaside with a seafood-focused array of delicacies including fresh fish, grilled or baked in salt. The sleek and airy space will also debut an impressive raw seafood ice bar with daily fare sourced from the nets of fisherman in Greece, Portugal, and Spain flown to Miami daily. “With all of our venues, we have a seafood display on ice. Our concept is when you first sit down at the table, the waiter brings you to the seafood display, gives you a little education about each

fish, and you can pick your fish, and he gives it to the kitchen to clean and cook,” explained Avra co-owner Nick Tsoulos. The global culinary adventure continues with fruity, full-bodied olive oil, bottled exclusively for the restaurant and created with handpicked olives from Ancient Greek groves, pressed within three hours of harvest. This majestic nectar will garnish each dish served and is literally delicious enough to drink. “The olive oil is made especially for us; it is an excellent quality olive oil. The extra virgin olive oil is cold-pressed, and we get it from the Greek island of Crete, so there is a different acidity level. When we chose it, we did our research, and we think it’s perfect. It’s not too acidic and pairs well with anything. We put it in salads, we make dressing with it, we emulsify it with lemon and put it on our whole fish dish,” Tsoulos said. If you’ve been lucky enough to venture to Greece, then you’re well aware that

this dynamic (and delicious) culture is centered around communal dining and Avra will offer a plethora of dishes that are perfect for family-style dining, including authentic salads and cheese boards. “Most of our menu is based on sharing and family-style eating from the salad and the appetizers to even the whole fish—which we recommend for a party of two or four to share. We also have smaller fish and dishes to cater to those who want four individual courses,” Tsoulos told us. Tsoulos is no stranger to the concept of shared eats. In fact, many of the recipes incorporated into Avra’s menu are very personal to him. “There are a couple of recipes that have been in my family for generations that I brought into the restaurants, like our spinach pie and a couple of orzo dishes and the lobster spaghetti—the sauce comes from my grandmother and

Where are you from? Peru

Where have you worked previously? I was a sushi chef at Nobu Miami for 14 years, and after I opened restaurants in Madrid and Aruba. In 2017, I returned to Miami and joined Ke-uH’s first location in Weston, Florida.

How did you come to be at Acqualina? By 2020, we wanted to expand to bring our menu to more guests. During that period, Acqualina’s CEO Deborah Yager Fleming contacted us, and we thought Acqualina Resort was perfect for our concept.

What dishes have been most popular? The most popular are the Chirashi roll, spicy honey shrimp, tuna pizza, and Kurobuta pork buns.

Are there others you recommend?

How does the restaurant complement Acqualina’s Costa Grill and Il Mulino New York? It brings more variety to the hotel, offers customers unique Japanese fusion dishes, and delights them with another delectable gastronomy experience.

You’ve said you work to achieve “balance in every single bite.” How will Ke-uH diners discover that? Our menu has a balance of taste, and we assemble every dish with a unique flavor profile to deliver a great experience in every bite. All sauces and a few ingredients are made in-house, such as ponzu, yuzu, eel sauce, aiolis, vinaigrette, orange candy, and Kani tempura. We cook the octopus sous vide for three hours, the pork belly and ribs are cooked for hours, and all the plates are finished when the customer orders.

How does the restaurant differ from the other Ke-uH? Ke-uH at Acqualina offers a full bar, and diners there can enjoy spectacular ocean views. It’s one of the best outdoor dining spots in all of Miami.

What are some signature cocktails of The Bar at Ke-uH? We serve some excellent cocktails, including Shoga Collins with Japanese Roku gin, Passion Mule with Fever Tree ginger beer, and Ke-uH the Rock with Teremana Reposado and watermelon.

What is the best part of working at the property?

Describe your role at The Mansions.

The good vibes! From my first day, the team made me feel like I had been working here all my life. Also, the residents are so kind. They thank us daily and often treat us like we are part of their family.

My role is to keep The Mansions at Acqualina in optimal condition and ensure that all the equipment and areas in the building are properly maintained. Most importantly, it is to provide a five-star environment and five-star service to our residents.

When did you join the Acqualina team?

Name something about The Mansions that residents may not know. The Mansions has domestic water tanks on the roof of the building, which is uncommon in Florida. If there is a hurricane or a city water supply issue, the building will have water for a week.

What on-site activities would you recommend for residents at the property? I suggest Acqualina Spa and dinner al fresco at Il Mulino New York.

How did you come to work on the Acqualina team? While working at another property in Sunny Isles, I was referred by a hotel guest and a former colleague who joined Acqualina.

What is your favorite part of working at the property? Welcoming our guests who I have come to know well and cherish and connecting with our team. As I look back at how much we have achieved together, it gives me an incredible sense of accomplishment.

What is the ideal day at Acqualina look like for a guest who wants to experience the ultimate getaway? As one of the most pampering settings is at Acqualina Spa, the perfect day would first begin with enjoying side-by-side massages with a loved one in the ultimate Royal Spa Suite. As a hopeless romantic,

I recommend a beachfront dinner at sunset – it’s exquisite, unique, and exceptional. We offer innovative marine biology sessions at AcquaMarine Kids Club for guests traveling with children – it’s award-winning and so much fun. Fitness fanatics can do private workouts with a personal trainer, and those seeking relaxation can lounge at any of our three oceanfront pools and gorgeous beach.
