LEMON & SPEARMINT SHORTBREAD COOKIES
2 ¼ cups All-Purpose Flour
1 teaspoon Granulated Sugar

1 cup Butter soften at room temperature
¾ Powdered Sugar
¼ teaspoon Salt
2 tablespoons Lemon Juice
4 drops Lemon
3 drops Spearmint
In a bowl mix flour and salt, mix well together and set aside.
In another bowl add the sugar, butter, powdered sugar, Lemon and Spearmint and mix with a hand mixer.
Add the lemon juice and mix again.
Gradually add the flour and salt mixture and combine everything.
Remove the dough and shape into a log, then store in the fridge for at least 2 hours or overnight.
Preheat the oven to 175 degrees celsius and line a baking tray with baking paper.
Place the chilled dough on a well floured surface and roll it into a ¼ inch thickness. Cut out your desired shapes and place on the baking tray.
Bake until the sides become slightly golden brown, around 14-16 minutes.
Place cookies on a cooling rack and let them cool completely before enjoying them.
