Summer is here! Hopefully, we are on the backend of Covid-19! Raise your glass!.... Someone somewhere has either renewed their vows or gotten married. Raise your glass! Congratulations! It's a girl! Raise your glass! Yay, you finally graduated, bought your new home, et cetera, et cetera...RAISE YOUR GLASS! Get where I'm going with this? We have so many things to celebrate despite what is going on around us...so Raise Your Glass. How does that fit in with this issue? Although many of us celebrate with family in the comfort of our homes, others may go to their favorite black-owned restaurant or bar and request their favorite wine or cognac. However, if you are like me, you're scrolling the drink specials and waiting to try out the bartender's specialty drink, something like a Southern Playalistic Cadillac Martini, which is a Bacon Infused Vodka, Brown Sugar, Apple & Sage, Nux Alpina Liqueur or a Lavender 0.5 which is an Empress 1908 Gin, Lavender syrup, Rosemary, Champagne, Citrus - a mouth full of surprise and happiness. We get so excited about our wonderful chefs, which is well-deserved, it is time to get just as excited about the magical brews brought to us by our black bartenders. So while we promote drinking responsibly we also ask that you check out our featured queen of the spirits, Ms. Tiffany Barrier, your personal "drinking coach". As you venture into this issue, we like to encourage you to experience the full spectrum on your desktop. The Drinking Coach Tiffanie Barriere is an influencer and educator who has been awarded some of the beverage industry’s highest honors. The Bar Smart graduate is a Tastemakers of the South award-winner who spent seven years as the beverage director of One Flew South the “Best Airport Bar in the World.” As an independent bartender, she is known for creative and innovative cocktail menus for pop-dinners and bars consultancy clients; hosting mixology classes around the nation, and connecting culinary and farm culture with spirits.
As an author-contributor, Tiffanie’s cocktail recipes can be found in the Southern Foodway Alliance Guide to Cocktails by Jerry Slayter, Jubilee by Toni Tipton Martin, and Road Soda by Kara Newman.
Her reputation as a
public historian has opened doors for her to speak on panels at such venues as Fire, Flour & Fork, Southern Foodways Symposium, and the Soul Summit, and she has interpreted the cocktails of African American and women firsts in spirits at the James Beard House in New York City.
Barriere and her cocktails have been featured in such publications as Imbibe Magazine (print and online), Difford’s Guide, Creative Loafing, Forbes, Essence, Southern Living, The Bitter Southerner, Cherry Bombe, Washington Post, Thrillist, Eater, Vine Pair, Food Republic, and Garden & Gun.
The Louisiana-Texas native is the trustworthy mentor of some of the best bartenders and mixologists in the world. Tiffanie’s main goal is education, service, and fun with every pour.

DO YOU PREFER TO BE CALLED A BARTENDER OR MIXOLOGIST AND WHY? I love being called a bartender! I enjoy tending my bar and allowing the guest to experience great services, proper cocktails and a little entertainment.
WHAT IS ONE TREND IN THE INDUSTRY YOU ARE EXCITED ABOUT? Watching tea cocktails grow always makes me happy. There is as much history and flavor in tea and seeing bartenders combine the flavors never get old.
WHAT DISTINGUISHES YOU FROM OTHERS IN YOUR FIELD? Ha! I believe we all bring greatness to the cocktail scene, but my main focus is history and fun with everything I create. Photo credit: The cocktail shaker
AS A BLACK WOMAN IN THIS FIELD DO YOU OR HAVE YOU FOUND IT DIFFICULT TO ESTABLISH YOURSELF? WHAT WAS THE MOST DIFFICULT SITUATION YOU HAD TO OVERCOME? In the cocktail space we are covered in fun facts, history and science and we use that when sharing a cocktail with our guests. Wanting to share the black narrative along with our history has not been the most approachable conversation across the bar due to the enslaved history we have had in America and people not wanting to speak on it truthfully. That said, the most difficult part of my job is not being able to always share the truth and voices across the bar as much as I haven't wanted to as a black woman while doing the same job my ancestors did. The respect isn't always given to the bartenders and service industry as we create cocktails and it definitely wasn't for the black community. It can be difficult at times however I have overcome the hardest part and now make sure that I always share and speak the names and history of all black and brown people in service.
PLEASE SHARE WITH OUR READERS A LITTLE INSIGHT INTO YOUR POSITION AS A MIXOLOGIST/BARTENDER AND YOUR BACKGROUND. My space in the bar community is truly organic. I have loved people and given them an act of service my entire life my mother has shared. I started in the restaurant industry at 21 and have been there ever since. My bio shares the wins after I found out that there are levels to everything and that it was just fine to share the history of black culture and the work they have done for America.
WHAT MADE YOU DECIDE TO BE A MIXOLOGIST/BARTENDER? I love to drink! The cliché of doing what you love and making money doing it stuck with me at an early age and I enjoy knowing and sharing the history of every spirit. Each spirit or ingredient we use in a cocktail has a beautiful background and most likely indigenous or sacred to multiple cultures. Sharing gets very exciting every time!

INGREDIENTS Serving: 1 1
½ ounces Glen Moray Speyside Classic Single Malt
Scotch Whisky (Chardonnay Cask Finish)
½ ounce Chai Spice Syrup (see Editor’s Note) ½ ounce freshly squeezed blood orange juice ½ ounce freshly squeezed lemon juice Garnish: dehydrated lemon wheel
DIRECTIONS 1. Combine all ingredients in a cocktail shaker with ice, and shake until chilled. 2. Strain into a teacup over ice. 3. Garnish with a dehydrated lemon wheel.
EDITOR'S NOTE Chai Spice Syrup 6 green cardamom pods
½ teaspoon black peppercorns ½ teaspoon coriander seeds ½ teaspoon whole cloves 1 cinnamon stick 3 tablespoons fresh ginger, chopped 1 teaspoon vanilla extract 1 cup sugar 1 cup water
Lightly crush the cardamom and black peppercorns. Place all the spices except the ginger and vanilla in a saucepan and toast until very aromatic. Add ginger, vanilla, sugar, and water to a small pot over medium heat. Bring to a boil, then simmer gently for 5 to 10 minutes, stirring often. The longer you simmer the mixture, the stronger the spice flavors will become. Strain the syrup through a fine-meshed sieve and pour it into a clean jar with a tight-fitting lid. Store, refrigerated, for up to 6 months.
