MY FAVORITE TIME OF THE YEAR!! I'm sure many may say different, however, I am sure they too would agree that there is nothing better than the changing of the leaves, a good football game, the holidays, and the great food that comes with it. With this being the last publication of 2021 let us be the first to say HAPPY HOLIDAYS. Because of Covid19, this may be the first time gathering as a family in over one-year. Some of us will be hosting for the first time (good luck) and others will be inviting family over to continue that special holiday tradition. Thanksgiving is the perfect time to start dusting off our holiday recipes and safely gathering with family and friends to host your first Friendsgiving or Holiday dinner party. However, if you don't have any recipes, we added a few special ones to add to the menu. In the meantime, we would like to again extend our holiday blessings to all of you! And remember, our publication is totally free. There are no paywalls to get in your way. We’re ad-supported and welcome new sponsors and advertisers. And while we as content providers take pride in creating this publication, we also hope that this magazine will become a favorite of yours. For The Culture . . . When Merriam-Webster describes a “foodie” it goes something like this: "a person having an avid interest in the latest food fads," as opposed to Wikipedia, which describes a foodie as, "a person who has an ardent or refined interest in food and alcoholic beverages. [This person] seeks new food experiences as a hobby rather than simply eating out of convenience or hunger." The Black Foodie Crew, however, considers ourselves simply interested in finding and trying new foods, eating them, and then sharing our experience with our community.

Our prime objective has been to enjoy the friendship amongst each other while eating. How simple is that? We share our likes and dislikes, trade a few recipes, and of course, argue - our ongoing debate is still “sugar or salt in grits” (but we all know it’s salt…with butter and cheese). However, regardless of the outcome of our continued debates, it always ends with love and plenty of laughter while enjoying the atmosphere of our chosen black-owned restaurant, food truck park, or juice bar. The luxury of it all is finding the hidden jewels within our community – the hidden BBQ spot, the best shrimp & grits, the perfect Old Fashion. We continue to meet the most interesting people – many that have worked through the crisis that has hit our community the hardest and how they are still here…strong and serving.

Our hope is that you will learn more about these amazing establishments through our eyes and decide to make some of your favorites. Join us as we explore some of the newest spots, the legacy spots, and some of your favorite spots in Atlanta. Call it your preacclimation – as you find your way back post-COVID….in our own “foodie” way.

Red Velvet Layer Cake Prep Time: 20 mins | Cook Time: 20 mins | Total Time: 40 mins

INGREDIENTS Cake 2 ½ cups flour 1 ½ cup sugar 1 teaspoon cocoa powder 1 teaspoon baking soda 1 cup milk 2 eggs 1 ½ cup oil or melted butter 1 teaspoon white vinegar 1 teaspoon vanilla 1 ounce red food coloring Cream Cheese Frosting 8 ounces cream cheese softened to room temperature ½ cup butter softened and cut into chunks 4 cups powdered sugar sifted White Chocolate-Covered Strawberries 5 strawberries washed and patted dry 1 cup white chocolate chips melted according to package instructions INSTRUCTIONS Preheat oven to 350. Grease and flour two round, nine-inch baking pans. Mix together dry cake ingredients in one bowl and wet in another. Combine bowls and mix well with a whisk. Pour batter into pans and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. While the cake bakes, dip strawberries in chocolate and set aside on a sheet of wax or parchment paper to harden. Cool cakes in pans for ten minutes, then transfer to wire racks. Cool completely before frosting. If tops of cakes are too rounded, horizontally slice a bit off the tops in order to make them flat, so that they won't crack when stacked. Save the bits you cut off and crumble them into a bowl. This can be used to decorate the cake when finished. While the cakes cool, in a large bowl, use a mixer to cream together the butter, cream cheese, and one cup of the powdered sugar. Add remaining powdered sugar one cup at a time and beat until smooth. Frost between layers of cake then a light crumb coat around the sides and top. Cover entire cake with the final, thicker layer of frosting then decorate as you desire. I like to coat the sides of the cake with excess crumbs then sprinkle more over top of the berries

INGRIDENTS: 4 Cornish hens (about 1 pound each) Cornbread Herbed Stuffing, recipe follows Marinade: 1/4 cup vegetable oil 1/2 cup dry white wine 1 medium onion, finely chopped 2 cloves garlic, minced 2 teaspoons chopped fresh rosemary or 3/4 teaspoon dried rosemary 1/2 teaspoon salt 1/2 teaspoon ground black pepper 4 tablespoons unsalted butter, softened Freshly ground black pepper Cornbread Herbed Stuffing: 3 tablespoons butter 1 cup chopped onions 1 cup chopped celery 2 cups dry cornbread cubes 2 cups dry white bread cubes 2 teaspoons poultry seasoning 2 teaspoons chopped fresh sage leaves or 3/4 teaspoon dried sage leaves 2 teaspoons finely chopped fresh rosemary or 3/4 teaspoon dried rosemary 2 teaspoons finely chopped fresh parsley 2 large eggs, lightly beaten 1/2 to 1 cup chicken stock

Rosemary Roast Cornish Hens Prep Time: 20 mins | Cook Time: 15 mins | Chill Time: 4 Hours | Total Time: 4 Hours 40 min

DIRECTIONS: Remove the giblets from the hens. Rinse the hens with cold water and pat them dry with paper towels Combine the marinade ingredients in a small bowl. Place the hens in a large self-sealing food-storage bag and pour the marinade over them. Close the bag securely and refrigerate for at least 3 hours. Shake the bag once or twice to coat the hens evenly with the marinade. Preheat the oven to 400 degrees. Remove the hens from the plastic bag and pat dry with paper towels. Season the hens inside and out with salt and pepper. Stuff the cavity loosely with the Cornbread Herbed Stuffing. Rub or brush butter over the skin of the hens and place the hens breast side up in a shallow roasting pan, large enough to allow space between the hens. Roast for 15 minutes to brown. Reduce the oven temperature to 350 degrees and baste frequently with pan drippings and melted butter. Continue roasting for 35 to 45 minutes, or until the juices run clear when the flesh is pierced with a sharp knife. CORNBREAD HERBED STUFFING: In saute pan, melt the butter. Saute the onions and celery in the butter until tender. In a large bowl, toss the bread cubes with onions, celery, poultry seasoning, and herbs. Add the eggs and enough chicken stock to slightly moisten and barely bind the ingredients. Season with salt and pepper to taste. Yield: 9 to 10 cups;

Bourbon Mint Iced Tea Prep Time: 20 mins | Cook Time: 15 mins | Chill Time: 4 Hours | Total Time: 4 Hours 40 min

INGREDIENTS

7 cups water 2 cups sugar 8 tea bags orange pekoe tea 16 sprigs fresh mint 8 cups cold water 1 cup orange juice ¾ cup lemon juice ½ cup bourbon Ice cubes Fresh mint sprigs (optional)

Step 1 - In a large saucepan combine the 7 cups water and 2 cups sugar. Bring to boiling, stirring to dissolve sugar; reduce heat. Simmer, uncovered, for 5 minutes. Remove from heat. Add tea bags and 16 mint sprigs; cover and let stand for 5 minutes. Using a slotted spoon, remove tea bags and mint sprigs; discard. Step 2 - Transfer tea to a heatproof 11 /2- to 2-gallon bowl or container. Add the 8 cups cold water, orange juice, lemon juice, and bourbon. Cover and refrigerate at least 4 hours or up to 2 days. Serve tea over ice and garnish with additional mint sprigs. Makes 16 to 18 8-ounce servings.

Bourbon Pecan Sweet Potato Casserole

Prep Time: 2 Hours | Cook Time: 30 mins | Total Time: 3 Hours

INGREDIENTS The Filling 4 small sweet potatoes (dark-skinned orange potatoes) 1/2 cup sugar 2 eggs, beaten 1/2 teaspoon salt 1/2 teaspoon cinnamon 1/4 cup butter, melted 1/2 cup cream 1 1/2 teaspoons vanilla 1 1/2 tablespoons bourbon The Topping 1/2 cup brown sugar (generous 1/2 cup) 1/2 cup crushed cornflakes 1 cup chopped pecans 1/3 stick butter

Directions For the filling: Preheat the oven to 425 degrees. Line a baking sheet with foil. Place the sweet potatoes on the foil and pierce the tops 2-3 times with a knife. Loosely cover with foil. Roast until very soft, about 50-60 minutes. Uncover and let rest until cool enough to handle. Peel the sweet potatoes, discarding the skin. In a large bowl, combine the roasted sweet potato, butter, cream, sugar, eggs, salt, cinnamon and bourbon. Mash until smooth (or leave it a little chunky if you like!) Reduce the oven temperature to 375 degrees. Butter a 9x13-inch casserole dish. Place the sweet potato filling in casserole dish and smooth the top. For the topping: In a sauce pan Heat topping ingredients (brown sugar, corn flakes, pecans and butter) until melted. Stir well. Then top sweet potato mixture with all of the streusel. Bake at for 25 - 30 minutes. Let cool for a few minutes before serving.

INGREDIENTS 1 (2 1/2- to 3-lb/1- to 1.5-kg) chicken, cut into 8 pieces 1 tsp Lawry’s Seasoned Salt 1 tsp onion powder 1 tsp garlic powder 1/2 tsp ground white pepper 2 tbsp duck fat or unsalted butter 3/4 cup chopped celery 1/2 cup chopped onion 1/2 cup chopped red bell pepper 1/2 cup chopped yellow bell pepper 2 cloves garlic, minced 2 cups chopped tomatoes (3 to 4 medium) 1/2 tsp ground cinnamon 1/2 tsp ground cardamom 1/2 tsp red pepper flakes 2 tbsp curry powder 4 sprigs fresh thyme 1 cup (250 mL) chicken broth 1 (13.5-oz/400-mL) can coconut milk 1/2 cup raisins Salt and freshly ground black pepper Peanut rice noodles: 1 tbsp vegetable oil 1/2 cup sliced scallions 1 (8.8-oz/250-g) package rice noodles, cooked according to package directions, tossed in a little vegetable oil to prevent clumping, and chilled for 30 minutes 1 tsp kosher salt 1/4 cup chopped cilantro, plus more for garnish 1/2 cup toasted peanuts, plus more for garnish

Country Captain Chicken Stew INSTRUCTIONS

Step 1 - Preheat the oven to 350 degrees F (180 degrees C). Step 2 - In a large bowl, sprinkle the chicken pieces with the seasoned salt, onion powder, garlic powder and white pepper. Cover the bowl with plastic wrap and refrigerate for 1 to 3 hours to marinate. Step 3 - In a Dutch oven or heavy-bottomed pot over medium-high heat, melt the duck fat. When hot, add the chicken pieces and cook for 10 to 15 minutes, turning to brown on all sides. Transfer to a platter and set aside. Step 4 - Add the celery, onion, peppers and garlic to the fat remaining in the Dutch oven and cook for 3 to 5 minutes, until the onions are translucent. Add the tomatoes, cinnamon, cardamom, red pepper flakes and curry powder, stir well to combine and bring the mixture to a simmer. Return the chicken pieces to the pot, stir in the thyme, broth, coconut milk and raisins, and season with salt and pepper. Cover, reduce the heat to medium-low and simmer for 30 to 45 minutes, until the thighs are tender (the thighs usually take the longest to cook) and the sauce has thickened.
