In this special edition of the Bite, we’ve time-traveled back to the past 12 months to capture the highlights from another great year for ORANGE BRANDS MANAGEMENT. We hope you enjoy exploring this action-packed look back at 2017.


MILESTONES

SUSHISAMBA Amsterdam Opens SUSHISAMBA Amsterdam made its debut on the seventeenth-century Singelgracht canal under the guidance of Corporate Chef Cláudio Cardoso, Regional Corporate Sushi Chef John Um and Executive Chef Mark Vaessen. SUSHISAMBA’s menu offers Amsterdam-specific items in addition to our Samba signatures. The striking Japanese inspired exterior of the restaurant was designed by famed Dutch architect Hans Ruijssenaars, while the interior was the work of Dutch design agency Woodfever. The restaurant received an enthusiastic welcome from both press and public: “The energy, liveliness and international appeal of Amsterdam provide a natural match for SUSHISAMBA, as we continue to expand our brand internationally,” says Shimon Bokovza, Orange Brands Management’s CEO.





Duck & Waffle Local Opens Duck & Waffle Local, the fast casual offspring of Duck & Waffle, opened with a bang in May 2017 in the heart of London’s West End. To celebrate the opening, we launched #Waddlethisway a playful on-and-offline social campaign involving 1,000 red rubber ducks hidden throughout five London locales that, once found, could be exchanged for a duck dish at Duck & Waffle Local. Teased out by several of London’s most prolific social media influencers, the campaign was a huge success with a 40% redemption rate, over 2.1 million people reached on Instagram, 955,000 people via Twitter, 4,598 comments, and 36,526 likes. West Village Closing After 17 amazing years in business, SUSHISAMBA West Village, the brand’s New York location, will be closing its doors at the end of its lease on December 23rd. Orange Brands Management CEO Shimon Bokovza said, “While the time has come to close the West Village location, it’s truly a time of celebration of the brand’s evolution and its exciting plans for the future. When we first opened in New York in 1999, we didn’t quite know we were opening doors to SUSHISAMBA’s future… both in the US and globally.” He teased, “This is not goodbye New York…this is ‘see you again soon’!” The New York Times, Eater and Patch.com all covered the closing.


Richard Woods releases ‘The Cocktail Guy’ - November Richard Woods, Head of Spirit & Cocktail Development for both SUSHISAMBA and Duck & Waffle, released his first book, The Cocktail Guy, named for his popular @theCocktail_Guy Instagram handle with over 48.3K+ followers at this writing. Richard regularly distills his own flavours and aromas, experimenting with intricate methodologies and incorporating diverse and unusual ingredients to create cocktails that are equal parts tasty and transformative. Drinks from his book are featured on the menu at Duck & Waffle through November and December.



CELEBRATIONS Amsterdam Opening Party SUSHISAMBA Amsterdam opened canal-side with a huge carnaval-inspired bash featuring world famous DJ duo Sunnery James & Ryan Marciano, samba dancers and batucada drummers. Local celebrities included actress Stijn Fransen, actress Caroline Spoor, TV presenter Saar Koningsberger, and models Anine van Velzen and Nadeche de Zwart. With its A-list attendees, the party garnered viral social media and local press coverage highlighting SUSHISAMBA Amsterdam as the new “it� spot in town.





SUSHISAMBA London Sambazonia Every year since opening, SUSHISAMBA London has thrown an epic anniversary event: A-list performers we’ve hosted include Grace Jones, Lily Allen, Mark Ronson and this year, Kelis. The party chock full of notable attendees, keeps SUSHISAMBA relevant and newsworthy as more and more high-end restaurants continue to open in London.


This year, we built on our 2015 Sambazonia theme, launching the party to coincide with Brazil’s Carnaval celebration and highlighting the work of our charitable partner, CoolEarth, to shine a spotlight on their work to halt rainforest destruction.Pop artist Kelis stole the show with a live performance including classic hits Milkshake and Trick Me. Attendees included CoolEarth Ambassador Pamela Anderson, model and actress Clara Paget, actor Jamie Campbell Bower, model Oliver Cheshire, model Jack Guinness, actress Matilda Lowther, designer Joshua Kane, model Richard Biedul and others. SUSHISAMBA Miami COSPLAY Halloween Miami Beach celebrated with COSPLAY– a long-standing Halloween tradition at SUSHISAMBA Miami Beach. Inspired by Japanese manga and anime, SUSHISAMBA’s COSPLAY event is a true happening, transforming Pennsylvania Avenue into the ultimate street party with our lively outdoor space serving hundreds of guests cocktails and signature samba bites surrounded by the best views of Lincoln Road’s famous parade.

SUSHISAMBA LONDON partners with Consensio Chalets Award-winning luxury ski chalet operator Consensio Chalet has partnered with SUSHISAMBA and Richard Woods for an Alpine cocktail experience for the 2017-2018 ski season. Richard

crafted a bespoke winter cocktail menu highlighting Brazil, Japan and Peru, allowing guests to taste spirits from SUSHISAMBA’s cultural influencers surrounded by the French Alps. Serves

included the Kaffirinha, Samba Sour and Seasonal Sake Spritz. The Alpine cocktail experience followed Consensio’s 2016 Duck & Waffle breakfast collaboration, during the French Alps ski season.


SUSHISAMBA LAS VEGAS Japanese Whisky Campaign With a total of 29 whiskies, SUSHISAMBA Las Vegas introduced one of the largest Japanese whisky lists in the country and the largest in Las Vegas. Curated and influenced by the Founding Fathers of Japanese Whisky Shinjiro Torii, of Suntory Whiskies, Masataka Taketsuru of Nikka Whiskies and Kiichiro Iwai of Mars Whiskies, the activation incorporated culinary cocktails and pairings.


A specially curated menu featuring Japanese whisky included Crispy Tempura Minter Sweet Oysters with Butter Lettuce, and Whisky-Soy Marinated Robata Pork Ribs, each highlighting the flavor profiles and nuances of the paired Whisky. The limited edition menu was a collaboration between SUSHISAMBA Las Vegas Executive Chef Joel Versola, Assistant Corporate Sushi Chef John Um and Executive Pastry Chef Michael Outlaw, with expert pairings by Hayes Swope. SAMBA RAMEN by KOJI Corporate Sushi Chef Koji Kagawa introduced a ramen menu inspired by Japan’s classic noodle and broth staple–with a Peruvian and Brazilian twist. Artful and exploratory, the new menu showcased the brand’s innovative approach to cuisine, and our commitment to delivering unique experiences. Menu items included Yasai Yasai vegetable kale ramen and beetroot; Shōtoribu bone marrow broth of short rib, and for dessert, Tori No Su, a cinnamon-sugar crispy ramen, with toasted ramen ice cream. International Sushi Day International Sushi Day coincided with Father’s Day in 2017, making it a great gift for dad. Guests channeled their inner sushi-chef with a hands-on dining experience, mastering the art of nigirimaking at the comfort of their table with guidance from our team of expert servers.


SUSHISAMBA London - New Menus

Chef Cláudio Cardoso and Chef Andreas Bollanos introduced a new Omakase menu to SUSHISAMBA

London. The goal of the new menu was to remove ordering pressure for the guests by offering an

easier ‘chef’s choice’ selection of Samba signature dishes. With a menu price of £82, the new omakase menu not only delighted guest, it also helped increase lunchtime revenue considerably.

World Sake Day

Once again, we hosted our annual celebration of sake, Japan’s most revered spirit. The festivities featured premium flights of sake, special sake cocktails and sake-infused cuisine. Sake flights were poured by our traditionally-dressed Geishas.

SAMBABRUNCH Launch, Amsterdam We launched SAMBABRUNCH on Sundays; guests now enjoy the sounds of Rio via live Bossa Nova music, brunch dishes spiked with Japanese, Brazilian, and Peruvian culinary influences– including Feijoada, the national dish of Brazil–and sip the hours away with our bottomless bubbles option.

Duck & Waffle Private Dining Room Series Designed to leverage the stunning Duck & Waffle private dining room and create exclusive dining experiences with communal flair--all 18 guests share one central table–we launched a 3part series: Midnight Feast in August, Sunrise Breakfast in October, and an early Christmas Feast in late November. Chef Dan designed special menus for each event and courses throughout the series featured cocktail pairings from Richard Woods. Origins Cocktail menu at Duck & Waffle Richard Woods continued to break flavour barriers with his summer Origins cocktail menu, which spotlighted one single ingredient used in its 360° entirety. Standouts included the “Olive,” with Olive Campari, Olive Leaf Martini and Olive Branch Dry Bitters for a long, rich cocktail, packed with flavor. His “Lime” uses not only the juice of the fruit but the leaf and the husk as complements to the innate sour flavours of the citrus. And “Red Pepper,” uses skin, ends and even a red pepper vinegar to create a refreshing wine-style spritz cocktail. Press coverage: Stylist Magazine, Good Housekeep-

Samba across the globe participated in some great events in 2017!

#LONDONISOPEN In his role as Chef Director for Duck & Waffle Brands, Chef Dan Doherty was invited to join the Mayor of London Sadiq Khan as he relaunched his #LondonisOPEN campaign in efforts to encourage tourists to visit London. Joined by high profile West End leaders including Charlotte Olympia and Andrew Lloyd Webber, ‘The West End: Everyone’s Welcome’ campaign re-introduces the West End– home to Duck & Waffle Local–as a world class destination, inviting visitors from across the globe to come and experience a ‘West End Welcome.’

Duck & Waffle Local - UberEATS partnership In September, Duck & Waffle Local began a partnership with UberEATS to bring our takeaway offering to a wider audience. The kick off included e-newsletters to both UberEATS and Uberriders, in-app billboard branding, plus a paid social media campaign. A second marketing campaign push took place in December with a ‘lunch indulgence’ package of ‘Duck Burger & Fries for £9.99’ to drive office orders in the area.


Duck & Waffle Local at Taste of London

Duck & Waffle Local made its debut at Taste of London, the city’s most acclaimed food festival attended by 55,000 visitors over five days. Of the forty restaurants taking part, Duck & Waffle Local was the second highest selling restaurant in the entire festival. In addition, Chef Dan took part in a cooking demonstration as well as opening the festival alongside acclaimed chef Alex Atala. Duck & Waffle Local - Haymarket Theatre

In efforts to promote Duck & Waffle Local as a go to pre- and post-theatre destination, DWL partnered with Theatre Royal Haymarket offering theatre-goers a special promotion. Inside all Theatre Royal Haymarket ticket purchases, guests received an offer to try a main dish & dessert for £16 (£20 for the dish with cocktail). Post-theatre guests received a complimentary cocktail with a purchase of a main dish. The promotion runs through March 2018.

Duck & Waffle Local - COS Event

Following a partnership between Chef Dan and hip clothier COS, one of global retailer H&M’s offshoot brands, Duck & Waffle Local catered an in-store event at their exclusive location on Regent Street. Three hundred guests enjoyed Duck & Waffle Local fare for over three hours, boosting awareness of the fast casual brand among fashion influencers and tastemakers.

Duck & Waffle Local - London Restaurant Festival

Duck & Waffle Local took part in the London Restaurant Festival Restaurant-Hopping Tour,. The festival included 350+ restaurants across the city with major sponsors like American Express, Bookatable, Ticketmaster and others, presenting an impressive opportunity for DWL to reach 12 million people as one of the festival’s participating restaurants. 200 guests visited the restaurant over 2 days to try our bites and snacks.

Duck & Waffle - Hoxton Holidays

Duck & Waffle partnered with one of Europe’s best boutique hotels, The Hoxton, on ‘Hoxton Holidays.’ Their city-to-sea adventure to party island Obonjan in Croatia kicked off with a 24-hour stay in London and featured a special dinner at Duck & Waffle. Duck & Waffle also hosted several press dinners in tandem with the partnership for Evening Standard, Independent and Metro where they dined on a special Hoxton menu created by Duck & Waffle.


SPOTLIGHT ON...

Channel 3 News in Las Vegas hosted Hayes Swope and Joel Versola in the studio kitchen to discuss the Japanese Whisky Experience. Las Vegas Now host Lindsey Simons chatted about Japanese Whiskey in the studio kitchen with Hayes Swope and Joel Versola. Miami’s Deco Drive, the daily live gossip and entertainment news program included our “Rainy Day Campaign,” highlighting our rainy day drink promotion in a segment that aired on WSVNTV. Chef Jamie Oliver invited Chef Cláudio Cardoso to join him on ‘Jamie and Jimmy’s Friday Night Feast’ on Channel 4 which has yet to air. The episode focused on fish belly, an extremely popular in Japanese culture, but one often considered waste product by UK fishmongers. With hopes of getting fish belly on more British menus as well as educating the public on its benefits, Chef Cláudio joined Jamie in making two dishes featuring salmon belly as the main ingredient. To coincide with the opening of Duck & Waffle Local, Chef Dan Doherty appeared on Channel 4’s Sunday Brunch serving up the Duck Merguez Flatbread. Richard Woods followed, hosting the drinks segment highlighting the Duck & Waffle ‘Origins’ cocktail menu. SUSHISAMBA Las Vegas was named one of the “10 best sushi restaurants in the world to add to your travel bucket list” by Bravo TV – Jet Set blog. Kudos to Chef John Um who helms the sushi bar there!

Hemispheres Magazine – United Airlines’ in-flight mag featured chefs using Pisco in desserts, highlighting Executive Pastry Chef Michael Outlaw. OBM Honored for Social Media Leadership: DIGITAL MARKETING EXCHANGE Following the success of the red duck social media campaign, Marketing & PR Director Ciara Jones was invited to speak at the Digital Marketing Exchange in London. Her presentation, ‘Making The Most Out Of Influencer Marketing For Your Organisation,’ explored the use of social and influencer marketing to engage audiences and examined how digital, social and physical spaces can work together. Other influencers at the Exchange including GM of Heineken Experience, CMO of Time Inc, Digital Marketing Director of Mattel, Marketing Director of American Express, and Ticketmaster’s CMO.



STREET ART SUSHISAMBA Fresh Menu Art

In the fall, SUSHISAMBA began featuring artwork and murals seen on our walls as the art for our menus. The first of these colorful new menu designs featured the Las Vegas murals by Brazilian street artist FLIP. Stay tuned for more art-filled menu covers - coming soon!

SUSHISAMBA Amsterdam Tattoo Meets Mural

Over the four days prior to the opening of SUSHISAMBA Amsterdam, Dutch artist SIT (Sidney Waerts) created a massive wall mural with an interesting source of inspiration: a colorful tattoo emblazoned on SUSHISAMBA’s Regional Corporate Sushi Chef John Um‘s back. The stunning 4 x 5 meter piece (approx. 13 x 16 feet) is on view as you enter the main dining room space.

SUSHISAMBA Amsterdam Favela-Inspired Lounge

Renowned Dutch artist SIT (Sidney Waerts) created a detailed wall mural representing the intricate frenzy of Rio’s favelas. Given the wall’s curve, the piece was challenging, but the result was a stunning artwork that captures the crowded community of urban favela life.

SUSHISAMBA London Food Meets Art Collaboration Brazilian street artist Flip (the talent behind SUSHISAMBA Las Vegas’ wall art) and Corporate Chef Cláudio Cardoso collaborated on a new mural for SUSHISAMBA London’s 39th floor lounge. The colorful/bold new artwork features characters of the Japanese pufferfish, also known as ‘Fugu,’ adding a vibrant aesthetic to the Japanese inspired decor.



OBM CARES SUSHISAMBA Into the Amazon with CoolEarth

Working with SUSHISAMBA charity partner CoolEarth, Chef Cláudio Cardoso visited the Peruvian rainforest to see the work of the charity first hand. Upon his return, Chef Cláudio created ‘Into the Amazon: A Dining Adventure’ featuring dishes inspired by his trip as well as ingredients sourced directly from the Ashaninka, a rainforest community. We also hosted a fundraising dinner with all ticket funds donated directly to the charity, raising £3625, and got an extra boost when one of CoolEarth’s top patrons donated an additional £20,000 on the night of the dinner. Into the Amazon continues via our current ‘Legacy Menu’ which includes three dishes featuring ingredients sourced and grown from the Ashaninka communities. Cool Earth Vivienne Westwood Collaboration SUSHISAMBA London, our charitable partner CoolEarth, and fashion designer Dame Vivienne Westwood, hosted a series of fundraising events to raise money and awareness for CoolEarth’s mission of halting rainforest destruction. At a dinner held November 7th, thirty CoolEarth trustees, supporters and patrons enjoyed a specially curated dinner designed by SUSHISAMBA Corporate Chef Cláudio Cardoso. Chef Cláudio created the ‘Rainforest Revolution’, a dish that replicated one of Dame Vivienne’s Climate Revolution Playing Cards in 3-dimensional, fully-edible form. The Rainforest Revolution is available at SUSHISAMBA London indefinitely with a portion of profits going to CoolEarth. In addition to the dinner, SUSHISAMBA also hosted a silent auction with three experiences for the public to bid on. The first of these was four places at the November 7th dinner. The other two auction items included two tickets to Vivienne Westwood’s London Fashion Week Show in January 2018 which includes a meet and greet with the fashion designer, as well as a special tasting menu event at SUSHISAMBA created by Chef Cláudio. VEGAS STRONG

SUSHISAMBA and SUGARCANE raw bar grill supported the victims and families of the Las Vegas shooting with a weekend-long Vegas Strong Cocktail promotion. The full $10.00 of every Vegas Strong cocktail purchase went directly to the Las Vegas Victims’ Fund, a GoFundMe campaign, which provided relief and financial support. SUSHISAMBA and SUGARCANE raw bar grill also helped promoted direct contributions to the fund in its guest emails.

Action Against Hunger Love Food Give Food campaign & Taste of London Action Against Hunger’s flagship fundraiser, Love Food Give Food, unites restaurants, chefs and diners across the UK to challenge child hunger worldwide. 2017 was extra special since every single £ donated was doubled by the UK Government. In support of Love Food Give Food, Duck & Waffle created the an exclusive dish, the Pulled Goat Doughnut, donating £1 for every dish sold. In November during Taste of London, Chef Dan partnered with Action Against Hunger on their 5 Star Restaurant event in which 5 chefs created a special 5 Star Doughnut . All proceeds from the doughnut sales went to Action Against Hunger’s lifesaving programmes worldwide.


DIGITAL MARKETING MILESTONES: WEB WEB AND MORE WEB... LAUNCHES

• Relaunched the SUSHISAMBA.com website featuring a dynamic visual design with a focus on video content for the first time ever. • Launch of the official brand website for Duck & Waffle Local website.

SEO

• Worked with SEO agency SOSEMO to ensure our website was optimized for search and to increase organic traffic to the brand (which had been on the decline) as well as online reservations. • SOSEMO also provided recommendations for metadata, site architecture, content and keyword placement and schema markup. TRAFFIC SPIKES ON SAMBA • As a result of the combined efforts of launching a new website, digital marketing and search optimization, SUSHISAMBA.com has seen a 26% increase in organic traffic, 13% increase in overall traffic and a 11% increase in online reservations.

KEEPING US ON THE MAP

• Working with key software providers in the areas of ADA compliancy, local search, and reputation management, we are staying current on all the necessary web enhancements for a searchable and viewable website.


EMAIL MARKETING OVERHAUL… • On the back end. We worked with digital marketing experts to create healthier databases by cleaning the existing lists and ensuring every guest on those lists has opted in and wants to keep hearing from us (especially important with the EU’s pending data protection legislation!). • On the design side. We created a new HTML optimized email template ensuring visibility and readability of our email blasts across desktop and mobile.

SOCIAL MEDIA…

• New tools. Leveraging new tools for social media analytics and research, such as People Map and Iconosquare; we have seen huge gains in engagement, following and traffic from social channels, with over 75,000 new followers over all brand channels. • By the numbers: SAMBA explodes on Instagram. SUSHISAMBA has seen a 40.14% increase in followers on Instagram 4.77% increase in followers on Facebook, and 1.32% increase in followers on Twitter, up to 47,527 43,478, and 15,305 respectively. Duck & Waffle explodes on Instagram and Facebook! Duck & Waffle has whopping 61.04% increase in followers on Instagram a 25.37% increase in followers on Facebook, and 7.86% increase in followers on Twitter, up to 93,539, 37,779, and 35,101 respectively. Duck & Waffle Local growing and growing. Grew to 9,035 Instagram followers 1,016 Facebook likes, and 922 Twitter followers which is great for a new brand!

ON THE HORIZON: WHAT TO LOOK FOR IN 2018

SUSHISAMBA COVENT GARDEN OPENING

Covent Garden’s 9,000 square foot Opera Terrace within the historic Market Building will host another London locale for SUSHISAMBA to include a balcony and views across the Piazza. The new restaurant is slated to debut in Spring 2018.

AMSTERDAM NEW COCKTAIL LAUNCH

Richard Woods will debut a new selection of SUSHISAMBA’s critically-acclaimed cocktails including Tom Yum and Samba Sour, introducing Amsterdam to his intricate methodologies that incorporate diverse and unusual ingredients.

CoolEarth GLOBAL ACTIVATION, EARTH MONTH

All SUSHISAMBA locations will celebrate by creating 3-5 special dishes using ingredients influenced by the Amazon rainforest, with a percentage going to our charitable partner CoolEarth.


CHEFS TRIP TO AMAZON

On the heels of Chef Cláudio’s trip to the Amazon and as part of our partnership with CoolEarth, we’re planning more Amazonian travel. These trips will help our culinary team connect with local tribes, discover new ingredients and make a difference via personal collaborations. A trip for Chefs John and Cláudio is in development for Spring.

A national holiday in the Netherlands honoring King Willem-Alexander, King’s Day is marked by open-air festivities and attended by thousands. The city bursts with orange-The Netherlands’ national color-as Amsterdammers enjoy the biggest street party of the year. In 2018, SUSHISAMBA Amsterdam will be a part of the fun!

DIGITAL HORIZONS

We’ll continue to strengthen our digital reputation, with new tools to better manage and improve localized search, greater website optimization, and new strategies for conversion optimization to increase online reservations. Monsido, a new GRC (Governance, Risk Management, and Compliance) platform, will help ensure greater compliance with accessibility laws and regulations for the web. We’ll also focus on email acquisition, influencer marketing, video content for social and native advertising, and other digital elements that will enhance all of our brands’ global awareness.
