Right at that moment, I saw myself needing to slower the pace and find a value that is worth living more. I started observing and memorizing what’s happening around me. Finding myself more time for the current relationships, making friends with new people and getting to know more about their stories. I started seeing this life more meaningful and the emptiness inside of me was slowly filled with zeal and passion of youth. In every story, there will always be hardship, for every passion there will be obstacles, because “if it is so easy, anyone can do it”. Successful people have one thing in common, is that they don’t complain whenever they go through hardship. All they could see is the happiness, the satisfaction to be able to do what they love. Trust me, once you hear these people’s stories, you will feel that not only you but the surrounding is also drowned in their energy.

Now he proudly owns four chains of Vietnamese restaurants and still continue to introduce Vietnamese food to more and more people. I could see the rhythm of colors squirming around, blending together in the paintings of Lâm Nam, a young artist who speaks his minds by drawing lives surrounding him.

The one thing that these people have in common is they live their passion and success came to them. I hope if you have a dream, etegami will be a part that could help motivate and inspire you to pursue your dream.

This is what happened in Sapa. His first time experiencing snow was also Khoa’s first time experiencing Sapa that was so different. These photos can only tell a small part of the journey to Sapa in the winter of that year. The excitement of the experience was what was important, but that couldn’t be conveyed through photos. Khoa missed out 4 years to get to Sapa when the snow fell, so the excitement occupied his whole body and soul throughout his trip to the place. The road with the snow was dangerous because it was all frozen. The sound of snow falling on your jacket sounded nothing like the sound of rain. He didn’t know how to explain to me. Then the freezing cold got to his body, frozen the tip of his fingers. If you want your terrariums to bring a cooler feeling, then pick the succulents with different shades of green and blue. Or if you want a warmer feeling, then orange, pink, dusty rose with a bit of green is the way to go. For the layout, and how to organize the succulents, Chương doesn’t have a recipe for it. He said that whenever he arranged his terrarium, it’s his feelings that would do the judging. If it didn’t feel right then he would do it again until he’s satisfied. What matter is that you feel relaxed, see this as a game of dirt in your childhood and not to take people’s critique to heart.

This is just like putting flowers in a pot. First you put in the bigger flowers, then the medium ones and lastly are the accompanied layers. Enjoy yourself, feel free to explore every possibility, you can always do it again if you’re not happy with it. And remember, succulents grow fast. BREEDING Every leaf is going to produce a new succulent. Since they are of the same family as the Vietnam’s native life plant, with only one leaf we’ll have a new bud. Break a full-growth leaf from the succulents, then bathe it in the sun for 2 to 3 days. This process will signal the leaf that this is an emergency for the leaf to switch from normal mode to only focusing on developing a new bud. After that, put the leaf on moist soil and water it every day. The signaled leaf finds a fitting place to dig its root in. From 1 to 2 weeks, roots and new leaves will grow out from the cut. Continue for 1 to 2 months, once the succulents are stable you can separate it to its own pot.

“Each country cuisine can’t be compared with each other because they are different, but growing up with my mom’s cooking, Vietnamese cuisine will always be my bias.”

Huy told me about his past jobs, all helped him gaining more social relationships. At the time, he had many friends, with whom hung out and went out to eat in different places. From the experience, he came up with this idea of opening his own restaurant, a Vietnamese restaurant enriched with the northern culture in the atmosphere, and the taste of food. At first, Secret Garden was only a place for Huy to meet up with his friends. He invited friends over, then his friends invited others. After one another, the number of customers increased, and that success wasn’t in Huy expectation.

When I asked about the food, he smiled and said that he has never cooked before, but he likes to eat. He was the one who came up with the menu, the chefs would then cook the food, and Huy would decide on what tastes good or not. Huy loves every Vietnamese dish, but if he has to choose then it would have to be cá kho tộ, thịt kho hột vịt, and all the stir-fried and boiled vegetables. He also shared that Vietnamese dishes aren’t high-class or popular. However when foreigners get to taste them, they all say that Vietnamese cuisine is healthy, easy to eat and can be eaten for every day.

I can see the rawness of the countryside in Huy’s story, a love for his mother’s dishes from his childhood, and out of all is the action of turning a love that can only be felt into something tangible. I admire his enthusiasm for his work and passion. Once a person live for their passion, they will succeed. Huy told me that, now that he has found his own path. That is to introduce the culture of Vietnam to the world through these amazing dishes of his country.

Vietnamese meal always consists of atleast three main course meals, the rice, light soup, and the main dish. Depending on the regions and seasons that the meal will alternates so the people’s health is guaranteed. Overall, Vietnamese cuisine are balanced based on Eastern medical system. It is known that in Eastern medical system is classified to one the four methods, which is the four natures. The four natures are hot, warm, cool, cold and neutral in terms of temperature. Hot and warm foods can counteract cold diseases and vice versa. Like tofu is considerate to have a cold nature, therefore it should be used with sweet ginger soup with a hot nature. Baluts also have a cold nature that is why people usually eat them with Vietnamese corianders. A person with a cold should eat a bowl of green onion porridge to balance the temperature and cure the cold. The quintessence of Vietnamese cuisine hides itself in every dish and that is the culture that has been saving for over thousands of years.

CRAB AND JUTE LIGHT SOUP INGREDIENTS 300g smashed crabs Jute, ceylor spinach, luffa Shallots Salt, fish sauce, stock powder

PREPARATION Put the smashed crabs in a large bowl, pour in 400ml of water and stir everything up. Pour only the crab water into a pot. Pour in 200ml of water into the bowl again for a second filter. For the jute and ceylor spinach break of the stems, leave only the leaves and wash under water. Peel of the skin of the loofah and cut to preferable pieces. Finally, slice the shallots crosswise.

COOKING Heat the pot with crab water, along with the smashed crab on medium heat. Put in 1 teaspoon of salt in, so the crab floats on the surface, do not stir to avoid smashing. Once the water is heated, put in the vegetables. Add in salt and stock powder to suit your liking.

FRIED CATFISH DIPPED IN FISH SAUCE

INGREDIENTS

PREPARATION

2 catfishes

Remove the innards of the catfishes;

DIPPING SAUCE Put grinded ginger, chilly and garlics in a small bowl. Mix in sugar, lime juice, water and fish sauce in with the ratio of 2:2:1:1.

ENJOY Take this fish out on a dish; spread the grated mango on top. The sauce can be poured on the fishes or used alone.

INGREDIENTS

1 lime

Finding the one who can relate to your drawings is not easy because everyone differs in the role and status in society. Regardless, Nam still draws to store his feelings, as well as the stories around him. In moments when he feels empty, he will draw for him to not feel so useless.

When asked what is special about drawing, he answered with an example. When you see a beautiful flower lying next to a pile of trash, if we photograph it we can see the whole scene, but if we decide to draw we can choose to only draw the flower instead. The artists only need to pay attention to the things that catch their eyes, and sketch it down without being interrupted by any other elements. Drawing also helps Nam polish his observation skill, by searching through images, memorizing to dig deeper into the meaning.

Nam chooses to draw things that related to him most from his outings. When he observes, he looks deep into everything and feels them.
