Instructor Staci Joers has an Associate’s Degree from MATC in Restaurant and Hotel Cooking. She has had the privilege of working with many great chefs. Staci will demonstrate how to prepare these recipes and you will observe and sample. Please note, this is not a hands-on cooking series. Staci Joers cooking classes are held at the Recreation Center.
Looking to host a dinner party? This spectacular menu that features a Cooper’s Hawk-style favorite will leave your guests wanting more. Sticky Asian Chicken Thighs, Cooper’s Hawk-style Brussels Sprouts with Thai Chile and Mint Sauces and Homemade Banana Parfaits with Graham Crackers will be the tasting menu for the night. Grandma’s Christmas Eve Every year Staci’s grandma would make French Meat Pie for Christmas Eve. Staci is going to recreate her favorite with a twist and create a menu inspired by her grandma. The menu includes French Meat Pie with Chipotle Ketchup, Easy Pickled Beets and Grandma’s Date Bars. Code Day 306000.04 T

Gonzo for Gumbo October 12th is National Gumbo Day and New Orleans is one of Staci’s favorite places in the whole wide world! So we are going to celebrate the vibrant food and culture of this historic city and of course sample some Gumbo! Staci will also make another NOLA classic, BBQ’d shrimp, a beloved local dish! Despite the name, it is not actually barbecued and does not have barbecue sauce. The tasting menu for tonight includes: NOLA BBQ’d Shrimp, Chicken & Sausage Gumbo, Pralines and Bananas Foster. Fall Feast of Flavors Why cook every day? Save yourself time by cooking recipes that have the same base but can be spread out amongst a few different meals. Staci will share a base of roasted vegetables and another one for a basic garlic cream sauce that can be used for a multitude of different meals. The menu for the night will showcase the same ingredients but in a different way in each tasting, which is; Sausage and Fennel Flatbread with Garlic Cream, Red Onions and Balsamic Glaze, Vegetable Lasagna with Garlic Cream and Marinara and Pasta Alfredo with Roasted Vegetables.
