FOREWORD 几年前的某一天,我在东湖路的Wagas撞见一位客人。同一个早晨,几个小时 后,我们在安福路195号再次相遇。还是同一天,我再次在上海商城的Baker & Spice遇见了这位先生。他略脸红地说: “天呐,好尴尬。现在你知道我有多经常 来你们餐厅了…”

Baker & Spice的葡萄酒架添新成员!除了引进最新超值葡萄酒外,我们还将出 售丹麦Norrebro Bryghus的啤酒和世界上最纯净的冰泉水ISKILDE,还有在国际 上获顶级奖项的西班牙橄榄油。Wagas的“超级食物”也走在食潮尖端,不妨阅 读一二了解“超级食物”的营养妙处。我也在这期中分享了一些土耳其小食食谱, 在圣诞节和新年期间搭配美酒,实在妙不可言。

冬天来临,Willis的招牌炖羊肉也再次回归。Henkes的慢炖牛脸肉配烤花菜也是 温暖你的冬天的上佳选择之一。BANG刚刚庆祝了第一个澳洲牛肉节,顶级牛肉 跃然盘中。

One day a couple of years ago I ran into a "regular customer" at Donghu Lu Wagas. Later that morning I bumped into him again at 195 Anfu Lu. Later again that same day I saw him at Shanghai Center Baker & Spice. (Slightly red-faced) He said to me "Gosh, how embarrassing. As you can see I go to your stores……alot" We joked about it and though he may have felt slightly embarrassed, I only saw it as amazing. The winter issue of The Journal follows another guest, like Paul, who enjoys their time with us. I feel very proud of the 100,000+ membership milestone we achieved. Our architects head down south to begin construction on the new Wagas bakery café, a stone’s throw from Hong Kong. Meanwhile, Beijingers and diplomats in the Yansha area are enjoying freshly baked bread and cakes in the newly opened Baker & Spice Grand Summit. Featured on the cover page, the hot new Baker & Spice brunch menu means that getting a table has become even harder. Best to arrive early on weekends! Winter means the return of Willis’ unctuous braised lamb shanks and at Henkes we are slowly braising beef cheeks and baking cauliflower. Craig Willis Craig Willis从小亲手种植新鲜蔬果,青年时期开始在澳大利亚新南威尔士的餐厅烹饪美食,曾在澳 洲各地知名餐厅工作十余年,在罗德豪维岛(号称“太平洋最美的岛”- 编者注)的一个法国知名厨 师培训项目 当过学徒。2000年来到上海,成为Wagas建成的核心人物之一。目前上海最受欢迎餐 厅mr willis, La Strada, Henkes和BANG等都是Craig主营的餐厅,包括西康路即将新开的BUTCH 也是旗下品牌之一。Craig热爱用心烹饪简单的食物,用带有地中海气息的澳大利亚美食虏获着食 客们的心。

Craig Willis - Cook From a childhood growing fresh produce and cooking in northern New South Wales, ten years cooking in iconic Sydney restaurants, stints on Lord Howe Island and a Stage in France, Craig arrived in Shanghai in the year 2000. Instrumental in Wagas foundations, Craig is the chef behind Shanghai’s favourites – mr willis, La Strada, Henkes and BANG, and the soon-to-open BUTCH on Xikang Lu. Craig’s passion is for simple well-cooked food, dishing up an Australian mix of influences from the Mediterranean.

Mezze是前奥斯曼帝国璀璨饮食传统的重要部分,是指一系列在餐前搭 配酒水食用的小碟食物或在主食之前上的开胃菜。在土耳其语中, Mezze (前餐)意为“口感,风味,小食和美味”,让这个名字更加贴切。 用明火烘烤茄子,蘸上芝麻酱,伴以番茄和橄榄油,或者烘烤南瓜酱和 肉桂,鹰嘴豆,蘸上拌过柠檬汁的芝麻酱,只是想一下制作这些健康又 美味的美食就会让我激动不已。 Mezze可以抹在三明治上,搭配烧肉或烤鱼,或者用在开胃点心饼干上, 是个老少皆宜的美食。美哉!

Mezze is found in all the cuisines of the former Ottoman Empire. It is a selection of small dishes served as appetizers before the main course. Mezze has got me all excited... eggplants grilled on the open fire, mixed with tahini, or dressed with tomatoes & Greek olive oil, roasted pumpkin mashed with tahini and cinnamon, Hummus and tahini whipped up with lemon and garlic to make a rich cream…all fantastic, flavorsome, cheap, healthy and package free!

甜菜希腊式酸奶 BEETROOT TZATZIKI

希腊式酸奶(Labneh)是一种滤去乳清后的酸奶,加入橄榄油和薄荷或者蜂蜜之后,是一道绝妙的 类似芝士的蘸酱。希腊酸奶黄瓜酱(Tzatziki)则是一种由小黄瓜和酸奶混合制成的酸奶,和希腊式 酸奶搅拌,加入甜菜之后,一道颜色鲜红香气四溢的色拉就成形了!

Combined with olive oil and mint or honey, drained yogurt (Labneh) makes a great cheese-like dip. Tzatziki - a Greek cucumber and yoghurt salad can also be served as a Turkish soup. In this recipe, we add roasted beetroot to make a brilliant red fragrant salad. 甜菜, 烘烤切成片

beetroot, roasted & grated 400g (克)

将甜菜煮到温软,然后晾干。去皮之后将菜肉切成片。用稀纱布滤去希腊酸奶的乳清,使得酸奶质感 更加丰富,看起来更像芝士,过滤的时间越长,质感越粘稠。搅拌所有的食材,加入盐和胡椒尝味。 这道蘸酱和烤三文鱼搭配格外美味。甜菜的泥土味和三文鱼的油腻会被莳萝、柠檬和橙皮的新鲜香 气所中和。

Boil or roast the beetroots until soft then cool. Peel the beets and grate the flesh. Drain the whey from some sour Greek style yoghurt in a muslin cloth, making it richer and cheese like – the longer it drains the thicker it gets. Stir together all the ingredients. Add salt and pepper to taste. We love to serve this recipe with grilled salmon. The dill, lemon and orange zests bring in bright flavors in contrast to the earthy beetroot and oily salmon.

蚕豆泥 BROAD BEAN MASH

富尔 · 梅达梅斯(Ful Medames)是一种由埃及云豆、莳萝、蒜、橄榄油和柠檬汁做成的中东风味 前菜。mr willis用蚕豆做出了独特的风味。

Ful medames is a Middle Eastern mash of Egyptian beans, cumin, garlic, olive oil and lemon juice. We make a version at mr willis with fresh broad beans.

烘焙莳萝粉

cumin, roasted & 1 tablespoon ground (汤匙)

洋葱,切成薄片 onion, sliced thinly 1 (个)

去皮新鲜蚕豆

Beetroot tzatziki

fresh broad beans, 500g (克) peeled

olive oil

150ml (毫升)

将去皮的蚕豆倒入烧开的盐水中煮,直到蚕豆变软。切一些红洋葱,用橄榄油香煎,直到色泽变棕, 散发香味。滤干之后将蚕豆碾碎,撒入炒好的洋葱、烘焙过的莳萝粉、盐和胡椒,再倒入橄榄油搅 拌。将蚕豆泥盛在碟中,形成碗状,在中间凹陷处倒入橄榄油,再撒一小撮莳萝粉。

Cook double peeled fresh broad beans in boiling salted water till tender enough to mash. Slice some red onion then fry in olive oil to get a rich golden brown full of flavor. Drain then mash the broad beans in your mortar, stir in the cooked onion, some fresh roasted and ground cumin, salt, pepper and loosen the whole mess with olive oil. Spread the ful medames on a plate making a small well in the center. Fill the well with olive oil and finish with ground cumin.

胡萝卜莳萝浓汤 CARROT & CUMIN PUREE

这是我最喜欢的一道浓酱。不仅可以作为蘸酱,还可以加入高汤做成一道鲜美的浓汤。在mr willis 我们在脆皮烤乳猪这道菜中会使用这道蘸酱!

This carrot & cumin puree is one of my favourites. It’s great as a dip, add stock to make a soup. At mr willis we have been serving it beside our suckling pig! 125ml (毫升)

辣椒粉 paprika

洋葱,切碎 onions, sliced

100g (克)

柠檬汁 lemon, squeezed 1/2 (个)

蒜瓣

garlic cloves

莳萝粉

cumin, roasted & ground 1 tablespoon (汤匙)

用橄榄油煎炒洋葱和蒜瓣,直到颜色变金黄,香味散发开来。倒入切好的胡萝卜,撒入莳萝粉、胡椒 粉和柠檬汁。盖锅慢煮,直到胡萝卜变软。时不时开锅查看,加入盐和胡椒翻炒并尝味。出锅后可以 直接食用,或倒入搅拌机中做成稠度刚好的浓酱。

Fry onion and garlic in olive oil till golden and full of flavor. Add the grated carrot, cumin, paprika and lemon juice. Cook slowly with a lid on until soft. Keep checking and stirring, add salt and pepper to taste. Make a fine puree in an electric blender or leave it as a rough mash. 7


Heartland: 哈特兰酒庄:用心品好酒 You Can Taste It From Where You Are 兰好乐溪是澳大利亚南部的葡萄酒产区,是世界上最早(1860年)开始种植赤霞珠的地方。 产区位于亚历珊卓拉湖畔,坐拥大片桉树林,南太平洋吹来的强劲海风是兰好乐溪出产上等质量葡萄的最重要的气候因素。 Langhorne Creek in South Australia is a growing region since 1860 with the oldest Cabernet Sauvignon vines in the world. Nestled among gum trees by the banks of Lake Alexandrina, it enjoys the cool southerly wind sweeping over the vineyards that results in high quality grapes.

"Heartland" 这个名字的来历为何? Ben: 在澳大利亚,Heartland代表着组成澳大利亚乡村的勤劳诚实的人们,秀美的草原、牧场和 葡萄园,还有温暖的夏日阳光。我们想用酿造的葡萄酒来呈现这些鲜明的特色。

兰好乐溪产区出产的葡萄酒有何特色? Nick: 这里的风非常特别,每天下午5点,南太平洋都会刮来一阵强劲的风,大大降低葡萄种植园的 气温,使得出产的葡萄复杂性高,需要更长的时间成熟也极富平衡口感,是名符其实的澳大利亚出产 的葡萄果实。 Ben: 凉爽的气候是主要因素,这种气候适宜种植赤霞珠和更加芬芳和复杂的西拉葡萄。

哈特兰只出产红葡萄酒,这是为什么? Ben Glaetzer 合伙人,澳大利亚最著名的获奖最多的酿酒师之一

Nick: 兰好乐溪产区有125年的赤霞珠种植历史,长久的赤霞珠和西拉种植历史是我们自信比其他产 区更加优秀的原因,也让我们习得如何在这片土地上种植出更多上等的葡萄。再加上因精湛酿酒技巧 在国际上取得声誉的Ben也正是主要擅长赤霞珠和西拉的酿造,所以哈特兰以制造红葡萄酒为主也顺 理成章。

Co-owner and Winemaker. One of Australia’s most famous and awarded winemakers. 2004年,年仅24岁的他即获得当年Qantas年轻酿酒师的荣誉。 2年后,他被英国杂志《Behind the Label》评为年度新世界酿酒师。

At the age of 24 he was named Qantas Young Winemaker of the Year in 2004 and 2 years later New World Winemaker of the Year in Behind the Label 2006 (UK).

新世界和旧世界葡萄酒在包装理念上截然不同,旧世界更加注重经典和历史, 而新世界则强调创新和时尚。你觉得葡萄酒的包装设计重要吗? Nick: 如果人们不喜欢酒的包装,就不会买,不买就尝不到。包装就是一切。包装的意义就在于告诉人 们瓶子里装的是什么。哈特兰西拉的标签上就标注了从品酒家处收集的所有关于“香料”的评述。烟 草,紫罗兰,豆蔻,香草,朝天椒,咖啡,可可和八角,这些香味都能在标签上找到。哈特兰斯百丝也常 被品尝出八角的香味,于是我们就在标签和酒帽和上都做了标注。

酿酒过程中你最享受的是哪一步? Nick: 喝酒。 Ben: 当所有发酵过程都完成后,Nick和我会和团队围站在桌边,由我来展示怎样酿造和混合来做出 最终的哈特兰葡萄酒成品。这个过程总能让我紧张,有时大家会因不同的意见进行争论。但我也能在 这个环节里骄傲地向大家展示我们取得的成就。

很多人觉得葡萄酒酿造是一门艺术。您觉得您是艺术家还是科学家?

Nick: Ben丰富的想象力,远见以及自信都非常有启发性,而启发人正是艺术家的本质之一,所以我觉 得Ben是位艺术家。而我只是在品酒和结交朋友上品位还不错而已。 Ben: 每个艺术家都必须锤炼好技能才能充分表达自己。要酿造出最能呈现兰好乐溪精华的葡萄酒是 一门严谨且重要的学问。我们所做的每一个决定,无论是在哪里种植葡萄树,什么时候采摘,在什么温 度下发酵,还是发酵的时间长短,这些都是这个行业科学的一面。

Heartland's flagship wine is dark cherry and blackberry fruit dominating the nose with undercurrents of black licorice and pepper.

The classic Cabernet core of focused blackcurrant fruit is offset by notesof cedar with hints of cardamom, tobacco and licorice spice. A long, savoury finish rounds off this beautifully balanced red.

Aromas of anise and cracked pepper are enveloped in classic blackberry. The fruit weight is a perfect counterpoint to the structure imparted by oak and skin contact.

Juicy and delicious red with a burst of blueberries, blackberries and currants. These are followed by waves of spice, fresh spearmint and dried herbs.

What is the meaning behind the name Heartland?

Many people see winemaking as an art. Do you see yourself as an artist or a scientist?

Ben: In Australia, Heartland represents the people and places that makeup the landscape of rural Australia; the honest, hardworking families, the beautiful pastures and vineyards and the warm summer’s sun. We try to capture this in a bottle.

Ben: Every artist must learn his craft before he can express himself. The science of winemaking is vital to understand why and how to craft the wines that best express the wonder of Langhorne Creek. Every decision we make, from where to plant, when to pick, how to crush, what temperature to ferment at and for how long, every decision has an element of science. Nick: Ben’s imagination, vision and his confidence inspire me. It is the role of an artist to inspire. Therefore I say Ben is an artist. I am just a man with good taste; good taste in wines and in friends.

What aspect of Langhorne Creek wine region truly determines the character of Heartland wines? Nick: The wind. Each day at 5pm the cold wind sweeps up from the Southern Ocean and flows over our vines. This cools the vineyards down greatly and allows our wines the complexity and character of longer ripening times and balancing structure to complement the intense Australian fruit. Ben: The cooler climate defines Heartland and allows us to grow great Cabernet Sauvignon and spicier, more complex Shiraz. Only red wines are produced at Heartland at the moment. Why? Nick: Langhorne Creek holds the oldest accredited Cabernet Sauvignon vines in the world at 125 years. The tradition of growing Cabernet Sauvignon and Shiraz means that we know these vines better than any other and we know how to make them produce great fruit in Langhorne Creek. Also, the international acclaim and fame that Ben Glaetzer has achieved over the course of his career have mainly been in connection with these two grapes. A notable difference between New and Old World wines is the wine packaging. While Old World wines carry more classic labels, New World's are colorful, modern and innovative. How important is package design in your opinion? Nick: If people don’t like the packaging, they don’t pick up the bottle. If they don’t pick it up, they don’t try it. Packaging is vital. Our packaging is designed to tell the story of what is inside. The Heartland Shiraz label is a design composed of all the ‘spice’ notes that we and other reviewers have found in our wines. Tobacco, violets, cardamom, vanilla, pepper pods, coffee, cocoa, and star anise can all be found on the label. The star anise is placed on our capsules and on the Spice Trader label to highlight our most frequent tasting note. What is your favorite part of the wine making process? Ben: When all the fermentations are complete Nick and I stand around the blending table with our team. This is when I get to show what I have managed to create from the vintage and how I want to blend to make the final Heartland wines. It is always nerve racking and sometimes heated as everyone has strong opinions, but it is also a time of great pride for me as I unveil to my friends what we have achieved. Nick: Drinking it.

1. Mix ricotta, lemon zest and chopped parsley, season with salt and pepper 2. Place a teaspoonful of the mixture on a slice of salmon, roll it up to about the size of your little finger and skewer with a wooden toothpick. Repeat. 3. Arrange the rolls on a plate nicely. Squeeze a few drops of lemon juice on top and garnish with parsley.

1. Cut baguette into 1cm slices and brush both sides with garlic and olive oil mixture. 2. Cook bacon rashers in a frying pan until crispy. Drain on absorbent paper. 3. Mix red wine vinaigrette ingredients in a screw top jar and shake well. 4. Layer baguette slices and crispy bacon in a large bowl with salad leaves and tomatoes. Top with egg halves and drizzle with vinaigrette.

1. Cook penne pasta in a large saucepan till al dente. Drain. 2. While waiting, heat oil in a medium saucepan, cook garlic with zucchini, stir for 2 minutes before adding drained pasta, fresh mint, lemon juice, slivered almonds and grated Parmesan. Season with salt and pepper.

年仅26岁的海韵取得的成绩已经让同辈难以望及项背。她曾 就读于北京大学,伦敦时尚学院(LCF)和加州大学洛杉矶分校 (UCLA),在CCTV, 《VOGUE时尚与美容》和《芭莎男士》任 职,甚至与中国最具影响力的媒体人士之一洪晃1女士共事,一同 举办过“时尚大跃进”街拍影像展览。

At the age of 26, Haiyun has achieved much more than her peers. She was educated in Peking University, LCF (London College of Fashion) and UCLA(University of California, Los Angeles), worked in CCTV, Vogue China, BAZAAR MEN China, and has even directed a photo exhibition The Great Style Leap, working with one of the most influential media figures in China, Hung Huang1.

你在短短的几年里住过北京、伦敦和洛杉矶,现在又 搬来上海,用现在流行的一个概念来说就是个“迁徙 型”的人(high mover)。每次移居的原因是什么? 2011年,在做了一年VOGUE时装总监助理之后,我决定去LCF研 读硕士。2014年在北京做完“时尚大跃进”展览,又到UCLA研修 电影编剧硕士课程,师从好莱坞最负盛名的一位编剧。回想这些 经历,每段之间似乎并没有太明显的联系,可能这与我的顺其自然 的心态有关。我对这个世界和生活在其中的人都充满好奇心,想在 还有心力的时候尽可能去经历和体验更多。

我在北京有很多秘密花园,但有一个地方是我必须推荐的。我一直 会重复去的一个地方是故宫护城河边的一条小径。建议晚上9点之 后到东华门(故宫东门)然后沿着护城河散步,半小时后你就能看 到夜幕中的故宫像一个正在沉睡的巨人。这是我最放松的时刻,像 是个免费的心理治疗,因为它让我意识到历史的重要性,同时也惭 愧自己的问题是多么渺小。

你做了一些同龄人可能想都没敢想过的事,比如在20 岁出头就策划执导了一场摄影展览。这个大胆的想法 是从哪儿来的?

In the last few years you’ve lived in Beijing, London, Los Angeles and now Shanghai. What inspired your each move?

能够举办这个展览纯属幸运。我一直都有用视觉记录中国时尚产业 的迅速发展历程的想法,在英国念书的时候和一个同学争论,让我 意识到让世界来了解中国是多么的重要。中国人不再是“土豪”形

In 2011, I moved to London for my master’s degree in London College of Fashion after a year of work as Fashion Director Assistant in Vogue China magazine. In 2014, I finished my first major Fashion Exhibition “The Great Style Leap” in Beijing and moved to Los Angeles for the master’s class of screenwriting in UCLA, which was conducted by one of the most experienced screenwriters in Hollywood. Looking back to what I have done in the past, there wasn’t a strong thread between each of my move. I’ve been keeping a casual mindset. I guess I’m a girl full of curiosities towards the people and the world. I want to experience as much as I can while I’m still able to.

和传奇人物洪晃女士共事一定很有趣,愿意和我们分 享一下这段经历吗? 她为人直爽,对人非常友好。她会毫不犹豫地说出自己的想法,敢 于挑战权威。她对中国设计师的大力支持让我由衷敬佩,也非常崇 拜她多年来对中国年轻设计师和创意人士格外关照的热情。

在所有居住过的城市之中,哪个是你的最爱?为什么? 美好的食物是你青睐一个城市的原因之一吗? 每个住过的城市我都爱!如果非要选一个的话我会选择洛杉矶。 我热爱阳光,驾车,冲浪和爬山,而加州的广阔土地和我的家乡北 京也非常相像。食物当然是很重要的标准之一,虽然洛杉矶有很多 一流的餐厅,但它们都相隔太远了。在我住过的城市里面,上海在 美食方面是最完美,料理种类琳琅满目,每家餐厅都各有千秋,食 物口感质量也非常好。

你是土生土长的北京人,和大家分享你最喜欢去的一 个地方吧。

You’ve tried a lot of things that your peers would never dare to think of, such as directing your own exhibition in your early 20s. Where did the idea come from? The exhibition was something of a fluke actually. I have been having this idea of recording the fast development of China Fashion Industry visually for a long time. It all

came from one of the argument I had with a classmate back in the UK. From that conversation I realized how important it is to have the people in the world to know about China. We are no longer the “rich and tasteless”, we are actually a fast growing force of the fashion world. I think the massive street-style photo archive (nearly 6 million photos) owned P1.COM2 is the best resource to create this chronicle for Chinese Fashion. And on a fine spring morning of 2014, my friend who’s the marketing director of P1 came to me and said, “I think we are ready to go. ” And that’s how it all started. There must be some interesting stories working with the legendary Ms. Hung Huang. Would you like to share with us? She’s a very direct person yet very kind to people in general. She speaks her mind without hesitation and she’s not afraid of challenging any authorities. I respect what she has done with the Chinese designers so far and admire her enthusiasm of supporting Chinese young designers and creative talents. You were born and raised in Beijing, can you share one of your favourite place with us? I got so many secret spots of the city but there’s one place that I highly recommend. The one place I have been going back repeatedly is the path along the moat of the Forbidden City. I recommend arriving after 9pm at Dong Hua Men (The east gate of the Forbidden City) and walk along the river. It will take you around 30 minutes to finish half of the loop and you will see the massive Forbidden City in the darkness, like a sleeping giant. It’s one of the most relaxing experiences for me because you truly realize how significant the history is and how tiny your own problems are. 广告行业竞争压力大,你是如何平衡工作和生活的呢? 很简单,热爱你的工作就已经赢得了一半的战争。我很幸运我很热 爱我的工作,也是我们客户的忠实用户。另外很重要的一点就是享 受周末,找能让你快乐的事情去做,跑步也好烘焙也行。热爱你的 职业,并且为你自己留出时间,那你就能找到平衡点。

你是如何看待创意思维在广告行业中的地位的? 你每天都在被广告轰炸,如果想要在众多广告中脱颖而出或者至 少吸引到目标观众群,你必须要有策略。这个过程需要很多创意成 分,尤其是当你需要在非常短的时间内在电视或公告牌上传达一条 信息的时候。在数字媒体时代到来的今天,广告行业生态也随之发 生巨大变化,品牌都在试图通过手机应用和社交媒体活动等等和 目标消费者进行创意互动。

给那些努力想进广告行业的职场新人们提一些意见吧。

为什么会搬来上海?你对这座城市的印象如何?觉得 和伦敦相比有哪些共同和相异之处? 我在伦敦住了很多年,当工作上有机会让我来上海的时候,我毫无 异议地就答应下来。对我来说中国就像是一本展开的书,而上海已 然给我带来太多超期望值的体验。上海非常都市化,当你游走在前 法租界的时候会有身在欧洲的错觉,转弯又突然切换到老上海的 模式,与世代在这里生活的老上海人擦肩。当然还有外滩令人叹为 观止的天际线。这些在伦敦都很难看到,是上海独有的魅力。所以 我会想要用镜头捕捉每时每刻的精彩。

你的工作具体是做什么的?它是你开始摄影实验的原 因之一吗? 我的工作要求之一就是了解文化,然后灵活应用到广告创意中去, 准确有效地表达一种观点。从这个意义上来讲,摄影也是我用来表 达我对事物的观点和创意的途径之一 。很多人也容易和摄影广告 作品产生共鸣。 我从小就对摄影很有兴趣,Instagram把我的摄影爱好带到了一 个全新的阶段。我去了上海的Instameet聚会,认识了很多拥有绝 妙摄影理念的朋友,一起探索把更多创意融入摄影的可能性。

努力尝试。如果第一次不成功,站起来掸去身上的灰,再试一次。 我念书的时候非常有斗志,暑假的时候会去Saatchi & Saatchi和 Mindshare实习。我想要在毕业时有真正有用的经验,让自己在求 职时更有竞争力。很重要的一点是不要因为一时的挫折而沮丧,挫 折是不可避免的。所以继续努力尝试,敲每一扇门,总有一扇会为 你而开。找到工作也不要心急,脚踏实地才能在这个竞争力强大的 市场学到东西。

休息日你通常都会去哪儿? 到处都去。我不喜欢浪费周末的时间,会到处发现新去处,看展 览,看戏,运动健身,或者和朋友一起吃早午餐。有一件事是肯定 的,我一定会带着我的iPhone随时拍照。

对你来说什么是健康饮食? 我会吃那些让我瘦下来的蔬菜,通常是烤或者煮的蔬菜。我会少吃 多餐,每隔一个半小时吃一点,而不是一天三顿丰盛的餐点。吃得 健康很重要的一点是自己做食物,这样有助于你了解自己的饮食结 构。我喜欢Wagas的一点是它有很健康的餐点选择。我个人非常 热衷于早餐卷和果昔。

What brought you to Shanghai? What do you think are the similarities and differences between Shanghai and London? I’ve lived in London all my life. Work brought me to Shanghai. I always wanted to work in Asia, especially China. So when the opportunity came up, I made the decision straight away. China is an open book for me, and Shanghai has definitely gone way above and beyond my expectations. Shanghai is so cosmopolitan. It can feel European when you stroll along the Former French Concession, then turn a corner and you’re suddenly feeling you’re in Old Shanghai, surrounded by old lane houses with people that have lived there all their life. Of course, there’s the epic futuristic skyline seen at The Bund. You don’t really get that stark contrast in London, and that’s what makes Shanghai so unique and surprising. It makes me want to capture every single moment. What does your job involve? Is it one of the reasons you start experimenting in mobile photography? My job partly entails understanding culture, and how it can be used effectively in advertising. It’s about having a point of view on things. Photography is a bit like that in the sense that it’s a medium where I can express my creativity or how I see the world around me. And of course, like advertising, there’s an audience that connects with photography work.

Photography has been a passion point throughout my life, but Instagram took it to a different level last year. I went to Instameets in Shanghai and met like-mind people who shared the same passion as me, and helping me to bring a lot of my ideas to life, and visa versa. Advertising is a very competitive and stressful industry, how do you manage the balance between life and work? Easy. You have to be passionate about your work and genuinely love it. It’s already half of a battle. I’m lucky that I love what I do and I’m a big of our client. The other thing is to enjoy your weekends. Find things you feel happy doing in your spare time and actually do them. May it be baking, arts & crafts or sports. For me, it’s obviously photography. So, love what you do, make time for yourself, your hobby, and you’ll gradually feel like you have work-life balance. How do you see the creative mind’s role in advertising industry? When you’re bombarded by advertising on a daily basis, you have to find a way to stand out, or at least attract the right target audience. It takes a lot of creativity to do that, especially when you have to convey a message in a short amount of time on a TV ad or billboard. It’s even more complicated nowadays as the advertising landscape has changed significantly with the advent of digital platforms, and brands are finding creative ways to engage their audience with apps, social networking activities, and so forth. What advice would you give to aspiring mad men? Keep trying. As they say, if at first you don’t succeed, dust yourself off and try again. As a student, I was extremely ambitious. I spent most of my summer breaks interning at agencies like Saatchi & Saatchi and MindShare. I made sure I had tangible experiences that would be desirable to perspective employers when I left university. The other tip is to not be disheartened by knockbacks. It’s inevitable, as it’s very competitive out there. Just keep trying, keep knocking on many doors and eventually one of them will open. Once you land a job, don’t rush, and learn the ropes properly. Where would we find you on your day off? Everywhere. I don’t like wasting my weekends, so I like to do many things like explore different places, visit exhibitions, go to the theatre, workout, or simply hang out with friends over brunch. One thing is for sure, I’ll definitely have my iPhone with me to capture it all. What’s a healthy diet for you? I eat anything that helps lean me, mostly grilled and steamed vegetables. I try to eat small portions throughout the day versus three big meals. Also, part of eating healthily is cooking your own food. Knowing exactly what you put in your body helps with understanding how your body reacts to certain types of food.
