Pushing your limits With all the images that crossed my desk when planning this month’s issue of BERGEN, I had plenty of opportunity to consider what makes design distinctive. While I haven’t boiled it down to a single secret, one key seemed to be the way the best designers and architects treated the physical limits they faced as inspiration rather than constraint. If you think about it, the principle applies in every art: A rhyme scheme liberates a poet’s imagination, and a painter is empowered by the way a twodimensional canvas draws foreground and background into intimate conversation. Creating an open floor plan in a 1960s Bergen County colonial with its “rabbit hole” of rooms wasn’t easy for architect Jeff DeGraw, particularly because he was asked to preserve most of the home’s structure. So instead of tearing things down, DeGraw enhanced some of the home’s existing features—8-foot ceilings and red-oak floors—in the new design, renewing the old charm. Read all about the project on page 44. If the space in your garden is already spoken for in terms of trees, shrubs and flowers, and you think there’s no room for an edible garden, think again. There are dozens of fruits, vegetables, herbs and other plants that are easy to grow and can thrive in small spaces. You can even grow your own blueberries! Turn to page 62 for the dirt on yard to table. But sometimes we put limits on ourselves. Think about the times you’ve selected a neutral hue because, well, it was the safe and easy choice. Don’t be afraid of color! Flip to page 40 and heed the advice of five Bergen interior designers who share their favorite mistake-proof shades that will enliven any homescape. Of course, there’s so much more local coverage in these pages. Learn all the buzz about honeybees and how you can become a backyard beekeeper, join us as we dine at Closter’s Azucar Cuban Cuisine, and try eating your next smoothie out of a bowl instead of drinking it from a cup. Culinary Corner Dinner and dancing There are many establishments that promise fine Spanish cuisine, but few can serve it in an environment reminiscent of a Barcelona tablao. That’s what you’ll find at Plato Español, the new Spanish restaurant that opened this winter in the heart of Englewood. Food is the star at Plato Español—the menu features many traditional Spanish dishes (paella and chicken al ajillo), but several offerings show French and Italian influences. In addition to its extensive dinner menu, the restaurant is also open for lunch and brunch (with traditional plates and Spanish classics). Now for the dancing! Radicchio in Ridgewood A name familiar to the Ridgewood dining scene is back. Italian hot spot Radicchio has returned to the same spot in the village that it vacated in 2011. Also returning is chef Daniel Montoya and many of the menu favorites (as well as new ones) that the original restaurant served. An assortment of traditional pasta dishes and inventive risottos (try the spinach with
smoked mozzarella) highlight the menu. Looking for meat? There’s also a large selection of beef, pork, chicken and fish dishes from which to choose. “My family used to come here all the time before they moved,” says Burt Tomlin, 57, of Glen Rock. “I’m looking forward to going back. Hot in the Kitchen A diner breakfast might warm your heart, but the offerings at Kitchen are actually good for your ticker. That’s the spirit behind the menu at the health food café and smoothie bar in the heart of downtown Westwood. While packs of teenagers are more apt to gather at Starbucks across the street—though young ones would love the breakfast sandwiches and desserts here—families and yogis are frequent visitors. Kitchen’s most popular items are the smoothies and juices, which are blended to perfection and served in different sized cups, glasses and bowls. “There are a lot of great pastries and cakes too,” says Danielle Gallo, BERGEN editorial intern. “I shared a mini carrot cake with a friend, but I wish I had ordered my own.”

Easter and Passover dress codes
Wearing a new spring dress or colorful new shirt and tie at Easter is a tradition that many of us can trace to our childhoods. But why exactly did Mom insist on the shiny new shoes and fancy new clothes? The history of wearing new clothes on Easter Sunday can be traced to ancient times when newly baptized Christians wore white clothing to symbolize that the waters had cleansed them from sin. Other Christians would wear new clothes on Easter in solidarity to symbolize the “new life” bestowed upon all believers of the resurrection. In fact, for many years, not wearing new clothes at Easter was thought to bring bad luck! Starting in the mid-1800s, upper-class New Yorkers would exit the churches along Fifth Avenue and parade down the street showing off their Easter Sunday best, leading to the presentday Fifth Avenue Easter Parade. And in 1948, Judy Garland cemented the popularity of Easter bonnets when she sang Irving Berlin’s “Easter Parade” in the film of the same name. Of course, the Jewish observance of Passover begins in April this year. If you’re hosting or attending a Passover Seder, the sartorial “rules” vary depending on how formal an event it is. If you’re the guest, and your host is on the traditional side, men and women both should opt for a modest, tailored look.

Ramsey’s Matthew Watters, 28, was recently named to the 2017 Forbes’ “30 Under 30 List” in Law and Policy. Watters works at McKinsey & Co., an international consulting company, which has developed a relationship with the government of Sierra Leone. While a student at the University of Delaware, Watters was lauded for his volunteer work in Sierra Leone, where he started a non-profit to rebuild a clinic destroyed by an earthquake. Twenty-eight-year-old Felicia Temple of Teaneck recently made waves during a blind audition on NBC’s “The Voice.” Her rendition of Etta James’ “All I Could Do Was Cry” caught the attention of judge/ mentor Alicia Keys, who joined Temple on stage for an impromtu duet. The two sang Keys’ hit record “Fallin.” Former Hasbrouck Heights teen Mark Isaiah sang “Mercy” by Shawn Mendes during a recent episode of “The Voice.” At the time of the audition, the 19 year old selected judge Adam Levine to be his coach.

Celebrity seats Talk about product placement. Mitchell Gold + Bob Williams are burnishing their image as a first-rate furniture company by providing furnishings for the sets of a major network drama. Appearing on “The Good Fight,” a spin-off of CBS’ award-winning hit drama “The Good Wife,” are Mitchell Gold + Bob Williams chairs—specifically its Duke chairs in silver leather in the series’ new law offices and its Major loveseat in the office of Diane Lockhart, portrayed by Christine Baranski. The company and CBS had previously created a licensed furniture collection—the first between a furniture maker and a major television network. This enabled the company to provide furniture and accessories during all nine seasons of “The Good Wife.” The company is continuing that partnership, working with CBS’ set decorator Beth Kushnick. Straus honored by Holy Name Daniel E. Straus of Englewood received the Spirit of Healing Award at Holy Name Medical Center’s Annual Founders Ball, held recently at the Pierre Hotel in New York. The event raised more than $1 million for the Teaneck-based hospital’s programs and services—the largest sum that the yearly program has ever raised. Straus is the president and chief executive of CareOne, the state’s largest family-owned senior care provider. It was created in 1998 with four nursing homes and rehab centers in Bergen County and has expanded to about 30 care facilities in 11 counties. The medical center and CareOne have been long-time partners in providing patient care. “Working together enables both institutions to enhance our services and improve patient outcomes,” says Straus. “Holy Name and CareOne have a common mission—to provide the community with the highest quality healthcare,” says Michael Maron, president and CEO of Holy Name. “We thank Daniel Straus for helping make this year’s gala a record-setting event.”
Fundraisers benefit Operation Rice Bowl Through online garage sales, charity dinners and other events, students at the Academy of the Holy Angels, Demarest, are raising money to benefit Operation Rice Bowl. A recent bake sale netted about $200 for the school’s drive, which continues through Easter. Operation Rice Bowl was launched in 1975 in response to famine in Africa. Today 75 percent of all donations benefit the international program and help increase agricultural harvests, improve access to clean water and sanitation, and support nutrition and healthcare education. A drive to give back A Fair Lawn woman’s “do good” attitude is rewarded with a brand new Mini Cooper. The vanity plates on Ayanna Thompson’s new car pretty much sum up all you need to know about her: “WONDER WOMAN.” Smiles seem to follow wherever she goes. At her job, for instance, at Marketsmith Inc. in Cedar Knolls, she’s called “one of the company’s brightest lights, bringing up morale, rallying the troops, and always thinking of innovative ways staff can interact and bond.” In addition to her role as direct marketing manager, Thompson, 45, is a single mother of two and has turned one of her favorite hobbies into a thriving enterprise—a cake-decorating business called Danjae’s Delights. But the Fair Lawn woman still finds time to give back in any way she can, whether it’s by participating in a walk/ run to raise money for cancer research or simply teaching arts and crafts and, yes, cake decorating to children in an after-school program. So when her boss, Marketsmith founder and CEO Monica C. Smith, announced a company-wide initiative called “The Amazing Journey” as a way to “build community and find commonality” by promoting acts of kindness, Thompson was on her game. Smith’s brainchild called on employees to “earn miles” in the categories of “Be a Better You,” “Do BERGENMAG.COM

Good,” “Drive Revenue” and/or “Be Social.” Activities in each category were assigned a certain number of “miles”—for example, three miles for referring talent, 10 additional miles if that referral is hired; five miles for raising money for a cause; four miles for taking a course in any subject. After five months, the results were tallied and Thompson had accumulated more points—6,000—than any of her some 75 colleagues. For Thompson, the achievement and how she earned first place in the contest were rewards enough. After all, she’s always been a giver, she said. And her success “will kind of propel me to keep doing what I do anyway.” But getting behind the wheel of the grand prize, a new Mini Cooper? That was some bonus! —Trudy Walz

Westwood Live the good life in this bucolic yet bustling borough. Long before a town profile on Westwood graced the pages of The New York Times real estate section last spring, “The Hub of the Pascack Valley” had been one of the preeminent Manhattan suburbs to raise a family as well as a favorite daytime destination for shoppers. And it still is. This quaint 2.3-square-mile borough is less than an hour by train from New York’s Penn Station and offers the kind of living that in many places has vanished. A bustling downtown boasting a mix of national retailers, mom-and-pop stores and restaurants abuts tree-lined residential streets. In bucolic neighborhoods where children still walk and bike to school is a balanced housing mix, from classic colonials and tudors to modern condos and townhouses. As one might expect, Westwood was once known as Pleasantville. The area had fewer than 25 houses in 1870, when the Erie Railroad spawned local growth by extending its track north

from Hackensack to Hillsdale. Westwood was incorporated as a borough in 1894, and by 1900 the population was less than 1,000. Today it’s home to just over 11,000 people. Shopping in downtown Westwood is a low-stress alternative to congested NYC or overcrowded malls. Parking is plentiful (with low-cost meters on the streets and lots), and there are wonderful “non-chain” destinations to find a deal—Ginger N’ Cream, Hartly, Threads and Society Femme for the latest women’s fashions; Monte Carlo and Society Men for the guys; and LaViano and Gem Mine for jewelry and unique gifts. The borough is also home to Hackensack University Medical Center at Pascack Valley, a full-service community hospital. Many parks, playgrounds and sports fields are sprinkled throughout the borough, giving children who grow up here—and their parents—plenty of opportunities to enjoy the benefits of life outside NYC.
FUN FACTS n The North Jersey Figure Skating Club (a member of the U.S. Figure Skating Association) was formed and continues to make its home at the Fritz Dietl Ice Rink. n Bogert’s Mill (Mill Street and First Avenue) was one of the area’s earliest grist mills, which grind grain into flour. Gen. George Washington and his troops camped at the mill during the American Revolution. n A Studebaker wagon pulled by Anheuser-Busch’s iconic Budweiser clydesdales rolled up to The Iron Horse last October for a beer delivery at the borough’s landmark restaurant.

When a young couple purchased an older, four-bedroom home in northwest Bergen County, they promised the previous (and original) owner that they wouldn’t tear it down. Instead, they planned to add to the 1962 Garrison colonial and preserve as much of the original structure as possible. Though that was the goal, and the house still had plenty of charm, many things about it screamed “redo.” It didn’t take long for Jeff DeGraw, of DeGraw & DeHaan Architects in Middletown, N.Y., to figure out that his hands were full when he was hired for the large-scale renovation. “It was in bad shape when we first saw it,” he says, recalling the outdated design—low sloping roof, overhang in front, aluminum siding. “Plain and simple: It was a disaster.” But a successful architect-client collaboration quickly

ensued. Thanks to the homeowners’ New England roots and their frequent trips to a well-aging farmhouse in Vermont, they had a vision of exactly what they hoped to achieve. “That building is what they wanted, and it served as our inspiration,” DeGraw says of the farmhouse that the couple had seen during previous house hunting trips. “The homeowners visited it several times and took notes, and we had pictures of it tacked up wherever we worked.” As promised to the seller, the colonial was spared the wrecking ball, but the majority of the interior was overhauled. Changing the boxy feel of the old home presented the biggest challenge, DeGraw notes, as the homeowners sought an open, livable family space. “It was a rabbit hole of rooms, and we had to create something that flowed,” he says.

the addition. A new kitchen was part of that addition and is highlighted by a large island. According to DeGraw, it was designed to resemble a piece of furniture found in a family room instead of the food-prep area. Stools are set up at the island for those seeking a quick bite, while an inviting nook adjacent to the kitchen is available for a cozy meal. The homeowners selected furniture, countertops and the ivory cabinetry design, which was replicated on the facing of the refrigerator and range hood. “Kudos to the homeowners for their selection of furniture and design—they knew exactly what they wanted,” DeGraw says. “We did all of the trim and millwork and the built-ins, like the banquette in the eating nook.” The kitchen steps down to the new family–television
Much of the house was stripped and brought down to the studs. More than half of the walls were demolished to create light and space, particularly in the living room. The facelift in that room also included the installation of ceiling beams as well as a fireplace and mantel. One aspect that didn’t change in the living room (and the entire first floor) was the existing 8-foot ceilings, maintaining the coziness of the now-roomy space. “That was part of the charm of this house,” DeGraw recalls. “In today’s world of high ceilings, a lower one creates a homey feeling—something big, new houses tend to lack. It also helps the home fit in with the character of the neighborhood.” Also unchanged were the red-oak floors, which were laid throughout the existing structure then added to the rooms of

room, the distinct spaces unified by trim and paneling but offset by the step and a support post. From there one can access two porches, including a screened-in, brick-floored outdoor room. “The brick gives it a good New England feel,” DeGraw says. “It’s a lovely three-season room that overlooks the pool. It’s great for Sunday brunches or if you want to be outside but out of the sun.” Four bedrooms, three bathrooms and the laundry room are situated on the second floor, which also boasts the same 8-foot ceilings. The tallest area is the new master bathroom—it was built as part of the addition and is the only room with a 9-foot ceiling. The home expanded to 5,000 square feet when the project was finished. Despite the size of the project, it was completed in only about 10 months. “It went really well,” DeGraw says, complimenting the homeowners, the architecture team and the builders for the swiftness of the undertaking. “That shows what you can do when everyone is on the same page and decisions are made together—and when you have a clear inspiration.”

Couch potatoes may have met their match in interior designer Kim Baker, who recently transformed new construction in the Somerville section of Ridgewood—a kind of blank canvas, if you will—into a home that takes the concept of enjoying some downtime to a whole new level. Baker, a Ridgewood-raised and -based interior designer with 18 years of experience, certainly had the chops to meet the desires of this client, a family of four and their two dogs who like to play together and entertain. Consider, for example, the two equally extra-deep, pillow-strewn sofas from CR Laine she chose to demarcate the living room and the large coffee table that both invites a game of Monopoly and provides the perfect perch for a tired pair of feet. And on the floor? The softest silk and wool rug from Dansfield & Ross. At 16 feet by 29 feet, the space provided Baker with a lot of room for improvement. She had to add furniture in the right proportion to make it cozier and more welcoming. Working from a coffered ceiling and millwork by Kurnat Woodworking, she warmed the walls with Silver Lake paint from Benjamin Moore and hung soft linen curtains from ceiling to floor. As a result, she said, “It doesn’t feel like a huge room.” In addressing the family’s desire to entertain, she chose furnishings that could multitask. Two square ottomans can function both as side tables and extra seating, as can the large leather ottoman flush beneath the television console. She even worked in a comfortable arrangement for the readers in the family: a tufted chair with another ottoman BERGENMAG.COM

from Vanguard accompanied by a faux fur throw, which the client, a realtor with the Laura Gill group at Keller Williams in Ridgewood, said is her daughters’ “favorite accessory.” On the couches, chairs and ottomans, Baker used durable fabrics to meet the demands of the family’s girls, ages 8 and 10, plus Aussiedoodle Daisy and Goldendoodle Maddie. The living room’s finishing touches included an abstract seascape above the limestone fireplace that reinforces the color scheme, an Arteriors lamp on a side table and a mix of white objets d’art on the charcoal shagreen coffee table. The family, meanwhile, is putting it all to good use, relaxing after school and work, and in the colder months turning on the fireplace and playing board games. “When we have family movie night, there is plenty of room for everyone to spread out on the couches,” says the owner. “This is definitely our favorite room in the house!” Baker chose to carry the color scheme of soft blues, taupes and grays into the kitchen and dining room, which had been previously updated. She used Benjamin Moore Gray Owl on the walls and complemented the dark Jacobean oak flooring with a dark pine farm table in the kitchen’s eating area. She also added two white wooden stools under the counter and chose matching white wooden chairs for the table. In the dining room, she played up its elegance by selecting a mix of glass, fabric and silver pieces for the tablescape and bar. Overall, Baker said, she enjoyed the project, particularly because she and her clients seemed to be of one mind. “As soon as I [shared] what I wanted to do, we did it—fast!”

For Bergen County residents Richard and Linda Giacopelli, home is more than a place—it’s also a state of mind. So when the couple hired Diane Durocher of Ramsey-based Diane Durocher Interiors to design their sprawling Woodcliff Lake residence, their priority was making it into a welcoming setting where they can entertain their five grown children and six grandchildren. For the downstairs space, the couple requested a traditional aesthetic. Durocher crafted a design around an autumnal palette of green, russet and berry that’s carried throughout the home. The warm colors are coupled with the warmth of familiarity—the house is accented with art, furniture and accessories that the couple has accumulated over many years. “It’s all about details when you are designing, especially with a traditional home,” Durocher says. In the dining room, a custom table that seats 10 allows the BERGENMAG.COM

large family to gather for a meal during holidays and gettogethers. Faux painting on the dining room walls and the domed ceiling, from which crystal chandeliers hang, offers subtle texture and interest. “We decided to highlight the dome because there was little available wall space, and I love a decorative ceiling element,” explains Durocher. The grandness of this room is mirrored in the formal powder room, which features a Crema Marfil and silver damask porcelain tile accent wall. But the boldness of the common space ends at the master bedroom, where serenity reigns. “The Giacopellis wanted a bright, plush bedroom,” Durocher says. “Soft hues of aqua and cream as well as the damask design of the wall covering accentuate the architectural details of the millwork and serve as a perfect backdrop for the furniture.” The result is a perfect place to lay one’s head after an exhilarating evening of making memories with family and friends.

For best results, choose a sunny spot with acidic soil that has been amended with organic material, like peat moss. Add two to four inches of mulch to protect the shallow roots, and water regularly. Fertilize about one month after planting. Finally, blueberries are catnip for birds, so be sure to cover your bushes with netting. THIS FRUIT IS THE IDEAL VEGGIE It may surprise you to learn that tomatoes fall into the category of fruit, because they contain seeds. Nutritionally, however, most people lump tomatoes in with vegetables—and for good
reason. They are packed with vitamin C and other antioxidants, which can fight free radicals that lead to cancer. Lycopene (which gives tomatoes their vibrant red color) is a particularly powerful antioxidant that can reduce the risk of cancer, keep your eyes and heart healthy, and even boost brain power. Late spring and early summer are the best times to plant tomatoes since they thrive in warmth and sunlight. Make sure to plant them in a spot where they can get plenty of sun (six to eight hours is ideal) and water them regularly. Keep in mind that tomatoes need plenty of room to grow, and that they also need to be supported as they grow away from the ground by a trellis or cage of some sort. HERBS THAT PACK NUTRITIONAL PUNCH Parsley, best known as a garnish, is delicious when blended into pesto and chimichurri sauce, or chopped into an array of soups and salads. Loaded with iron and vitamins C, A, K and B-12, parsley may help relieve joint pain, and some studies show it can inhibit tumor formation. Parsley seeds are slow to sprout. To give them a boost before planting, cover in warm water and let stand overnight. It likes moist, nutrient-rich soil and does best in partial shade or full sun. Parsley is easy to grow in indoor pots or out in the garden and can be harvested about four times during the year until late November, says Binaghi. Mint is a nutritional superstar that will amp up your smoothies. Other uses? Stir fresh mint into hot or iced tea, or snip into Mediterranean salads, dips and entrees. Mint is loaded with antioxidants and is a natural antimicrobial agent and breath freshener. High in chlorophyll, fresh peppermint helps reduce inflammation in the gut

and soothes an upset stomach. So much so that it’s sometimes used to bring relief to patients with irritable bowel syndrome. Mint spreads rapidly in the garden. To control the creep, plant in a confined outdoor space or a container. “It is a strong perennial,” says Binaghi. “I have spearmint growing by my house that my grandmother planted in the 1940s.” SUPER SEEDS AND SPROUTS More than ever, nutritionists are touting the benefits of seeds and sprouts. Chia can be eaten in both forms. Chia seeds, which have a mild, nutty flavor, can be eaten whole—sprinkled on cereal or yogurt, mixed into vegetable or rice dishes, added to sauces, or baked into muffins. Sprouted chia has even more vitamins and minerals and is a tasty addition to salads, soups and sandwiches. Chia sprouts are tiny workhorses, high in omega-3 fatty acids, protein, fiber, antioxidants, calcium and magnesium. Chia sprouts grow happily in a sunny indoor spot. (Remember the Chia Pet?) Use the sprinkle-sprouting method: Add equal amounts of chia seeds and bottled spring or filtered water to a shallow glass baking dish. After an hour, tilt the dish to pour out the water, leaving behind the moistened chia seeds. Cover the tray with foil or a plastic lid to trap in the moisture, but leave one corner open. Keep the seeds in a warm place. After about four days, they’ll sprout into seedlings, and when they’re about one-half inch long, it’s time to taste! Leftovers? No problem—you can store them in a sealed container in the refrigerator for two weeks. One caveat: If you’re taking bloodpressure medications or blood thinners, ask your doctor before eating chia, which can interact negatively with some of those medicines.

THE BUZZ OVER BEES
Want to enjoy your own natural sweetener while helping the dwindling honeybee population? Be a backyard beekeeper! Here’s the buzz.
Backyard beekeeping is abuzz these days, thanks to the increased awareness of the plight of honeybees—the number of bee colonies has dropped dramatically in recent decades—and I’ve hopped on the beekeeping bandwagon. Back in the spring of 2006, I helped establish an edible garden at the Havemeyer House, the official residence of the president of Ramapo College in Mahwah, where I live with my husband, Ramapo President Peter Mercer. Since then, staff members, teachers, and college and high school students have worked in this live food lab, planting and harvesting while learning how their food gets from seed to fork. The garden has also promoted awareness of the many facets of the food cycle, including the critical role played by increasingly scarce honeybees, which account for 80 percent of all pollination of plants. Simply put: no bees, no food. So in an effort to increase the dwindling honeybee population six years ago, we welcomed the first two bee hives to the garden. To further secure a sustainable relationship with honeybees, Ramapo College also welcomed the monthly meetings of the Northeast New Jersey Beekeepers Association to campus. It has been a delightful journey from observer to keeper of honeybees, but it hasn’t
been without the occasional hiccup. Yes, I’ve been stung a few times, as has my husband—once on the inside of his nose! And when we first set up the hives, we put them too close to the edible garden, which ended up teeming with so many honeybees that we couldn’t go in. But we moved the hive farther from the garden (about 50 yards from the house and 200 yards from the neighbors’s home), and it’s been smooth sailing ever since—at least until my hives began creating new queen cells. Each hive can only have one queen, so I went from two hives to four. My husband put his foot down and said I would have to give the fifth queen away. Giving a queen away is not like giving up a puppy—it’s a little more difficult. Luckily, my mentor came to the rescue and took the fifth queen. Despite these minor snafus, I would encourage you to give beekeeping a try. It will not only increase the honeybee population, but it will also enable you to enjoy the many byproducts of beekeeping such as freshly harvested honey, beeswax and propolis (a resinous substance with medicinal uses). Join the closest beekeepers association. In Bergen County, it is the Northeast New Jersey Beekeepers Association (nnjbees.org). For a mere $25 per year, a regular membership gives access to monthly meetings, bi-monthly newsletters, and on-going notification of lectures, classes and state meetings. At the meetings, you will not only learn timely tidbits about beekeeping, but also make friends with seasoned beekeepers.

Spend a year observing and helping a seasoned beekeeper. This is a valuable step that will help you decide if you prefer to be a passive supporter of bees or an active one.

Look up your town’s ordinance for beekeeping to help you determine the location and number of hives you will be installing.

Figure out where to put your bees. As with any real estate, location is key. Finding the best spot for your bee hives is a balance between the most suitable place for you and the best location for your bees. It should be far enough from your house and your neighbors (check those local ordinances), as well as providing some sun for cold winters and some shade for hot summers.

Bee hive components: Hive stand, bottom board, deep super, deep super frames with foundation, honey super, honey super frames with foundation, inner cover and outer cover. Beginners should buy the pre-assembled, prepainted bee hive kit. Smoker: This device helps you calm the bees. The smoke masks alarm pheromones that bees release when they think their hive is under attack. Veil: This mesh head covering protects you from bee stings. If you have a thick jacket and pants, you probably will not need a full protective suit. Hive tool: The Italian Hive Tool is a well-crafted tool and my favorite for beekeeping tasks such as prying hive boxes apart and pulling frames out of the hive. Bee brush: This helps you gently sweep bees off of frames without harming them (or you can use a feather).
Find a mentor to give guidance and support as you set up and learn to manage your own bee hive.

Make a list of the supplies and equipment you will need to get started. Go over your list with your mentor to learn what to buy (some essentials are listed on the right) and where to buy the items. A couple of suppliers I have used include Brushy Mountain and Mann Lake. Suppliers are also very keen to help you succeed, so they will willingly answer your questions.

Buy your bees. I was surprised to find that bees can be mail ordered and delivered. However, I chose to buy a nuc, or starter bee hive, from a company our club ordered from yearly. The nucs are delivered to a central location where members then pick them up.

Queen bee: As the name implies, she is the most important bee in the hive because her sole purpose is to lay eggs. She doesn’t even feed herself. Her main focus is mating and laying eggs so the hive stays active. Worker bee: These sterile female bees do all the work (housekeeping, nursing young bees, attending to the queen, making the wax comb, collecting nectar for the hive, etc.). Drones: These male bees focus on two things: eating and mating with the queen. Drones that mate with the queen die because in the process, the queen bee rips out their sexual organ causing their untimely end.. Honey: A golden sweet substance produced by honeybees from the extracted nectar in flowers.

Take a course. The Northeast New Jersey Beekeepers Association keeps you informed about upcoming courses for novices as well as more advanced beekeepers.

Read a book or two and/or watch a film to enhance your knowledge about beekeeping. Some of the books I recommend include: The Backyard Beekeeper, The Beekeeper’s Handbook, Honey Bee Biology and Honey Bee Democracy.

STONES, BEGONE Reduce your risk of kidney stones by following these tips.
Each year in the U.S., kidney stones cause more than half a million people to visit the emergency room. You’ve probably heard that kidney stones can be very painful, which is true, but there’s good news too: You can take steps to reduce your risk. Kidney stones are formed when minerals crystallize and harden in the kidney. Some stay there, and others travel through the urinary tract. Tiny stones are sometimes eliminated in the urine with only mild discomfort. But larger stones can force urine to back up behind them, causing aches between the ribs and pelvis, or pain on either side of the lower back, in the stomach or groin. TREATMENT OPTIONS Most stones are eventually excreted in urine, and they can be treated by drinking more fluids and taking over-the-counter pain relievers. Some, however, need to be either broken down or removed during an outpatient procedure. In rare cases, surgery that requires hospitalization is the best option. The impact of a kidney stone can vary greatly from individual to individual. “You can have wide variation in terms of what happens with a stone, depending on the size and where it is,” says Timothy J. Mackey, M.D., director of urology at The Valley Hospital in Ridgewood and in private practice at Urology Group in Midland Park. SEE YOUR DOCTOR PROMPTLY To determine the best treatment, doctors need to know the size and location of the stone or stones. Typically, ultrasound imaging is used to
determine this. Doctors also need to understand the role your personal history may be playing. Kidney stones have many causes, including inherited conditions, dietary factors and infection. Risk factors include obesity; diets high in salt, sugar or animal protein; weight-loss surgery (gastric bypass); and certain medications and medical conditions. A personal history of kidney stones is itself a risk factor: One episode brings a 50 percent chance of recurrence within 10 years. HOW STONES ARE REMOVED For stones that must be removed, the two options most commonly used are noninvasive shockwave treatment (lithotripsy) or ureteroscopy. Shockwave therapy works well for most stones, and is often used for those in the kidney. Administered in an outpatient setting, shockwaves are aimed directly at the stone, blasting it into bits that then pass through the urinary system. It creates a level of discomfort that’s similar to a colonoscopy. Ureteroscopy, a more complex procedure, is often the treatment of choice for large stones located in the ureter (the duct through which urine passes between kidney and bladder). A short, flexible lighted tube called an endoscope is inserted through the bladder into the ureter. This scope allows the surgeon to see the stone and either remove it using a tiny wire basket or break the stone into small pieces using a laser. “These procedures are generally effective, well-tolerated and safe,” says Dr. Mackey, who notes that neither procedure is likely to have side effects and most patients return to normal activities quickly.

BEST PRACTICES FOR PREVENTION Fortunately, there are steps you can take to reduce your risk of getting kidney stones.
1 Drink plenty of fluids. Timothy J. Mackey, M.D.,
director of urology at The Valley Hospital in Ridgewood, recommends drinking at least eight 8-ounce glasses (a total of 64 ounces or 2 quarts) of liquid daily. Water is best. If you perform strenuous outdoor work, you’ll need to drink close to a gallon daily.
2 Stick to a diet that’s low in salt, sugar and animal protein. 3 Reach or maintain a healthy weight. 4 Drink lemonade. Both lemonade and limeade are rich in potassium citrate, a substance that helps to prevent kidney stone formation. Just avoid versions with sugar, which can increase kidney stone risk. Make your own sugar-free lemonade by adding a tablespoon of lemon concentrate per quart of water. To help mask the tart taste, try using stevia, a natural sweetener extracted from the leaves of the stevia plant. 5 Don’t avoid calcium-rich foods. Though most kidney stones are made up primarily of calcium, calcium in food is not linked to an increased risk of kidney stones. However, calcium supplements may be. Ask your doctor what preventive steps are important for you.
SYMPTOMS TO WATCH FOR Some patients with a kidney stone experience dull aches between the ribs and pelvis. Others develop severe pain (often in waves) in the side, abdomen, lower back or groin. Urine may look cloudy or smell bad. Emergency symptoms include: n Pain that makes it difficult to find a comfortable position n Pain with nausea and vomiting n Pain with fever and chills n Blood in the urine n Difficulty passing urine

Turn off that phone and enjoy the rustic sights and tempting tastes of Pennsylvania Dutch Country, surprisingly close to home. By Rita Guarna Amish Country is famous for its smorgasbords, or all-you-can-eat buffets, where little ones who are always hungry will get their fill. At the Plain and Fancy Restaurant (part of the eponymous farm), food is served “family style.” That means you’ll be seated at a random table with strangers. You’ll pass platters around the table and make small talk with people with whom you have little, if anything, in common. And yet, it’s surprisingly pleasant to have an amicable chat with those whose views are not our own. Could this be the lost art of conversation? With that conversation you’ll get great fried chicken, carved roast beef, ham, corn bread, bread pudding, sausages, veggies and baked goods. Here too you can catch “Jacob’s Choice,” a short flick that explains what it means to be Amish. Or check out the Sight and Sound Theater where Bible stories—think Samson, Moses, Jonah—are brought to life on stage. And speaking of food, don’t miss a visit to the city’s Central Market. The Romanesque-style building was constructed in 1889 and is home to ethnic foods, sweets (shoofly pie, anyone?), cured meats, plus plenty of fruits and veggies. It’s the oldest continuously operating farmers’ market in the U.S. If you prefer an attraction with your shoofly pie, check out Dutch Haven. Yes, it looks like a tourist trap with its big windmill on the roof, but it sells more pies than any other bakery in the county. (Some folks swear that it’s the perfect
souvenir.) Check out the Hans Herr House and Eastern Woodland Longhouse. Built in 1719, the house is the oldest building in Lancaster County. Guides point out a still-intact wood and iron steamer trunk, belonging to one of the original immigrant occupants. Leave enough time to visit the Native American Longhouse on the property. The 62-foot-long, 20-foot-wide structure was recreated to depict life during the early years of European settlement. Train buffs will love the Strasburg Rail Road in nearby Strasburg. Hop aboard for a steam-powered 45-minute meander through the charming countryside. Once the kids are good and tired (isn’t that why you brought Grandma?), Mom and Dad might want to drop by one of the area’s two outlet shopping malls. Better yet, check out downtown Lancaster, its streets teeming with chic art galleries, boutiques— antiques, jewelry, even midcentury furniture—and restaurants. There’s a BYO French bistro, Citronnelle or Luca, where you’ll find Italian favorites and wood-fire-oven-cooked pizzas. The Federal Tap House features more than 100 beers on tap and great pub grub, presented by super-attentive servers. And the Horse Inn, a horse-stable-turned gastropub, is a hotspot with good food and sips. When it’s time to return home, you’ll leave the buggies behind— but keep that new perspective.

If you’re short on time (and frequent flyer miles) and want to a show your family a different world without traveling too far, consider Lancaster, Pennsylvania. About 170 miles from Bergen, this city at the heart of Pennsylvania Dutch Country may be your quickest ticket out of the 21st century. At first glance, the kids might not think cows nibbling on grass, bearded men in straw hats and apron-and-bonnet-clad girls are all that cool. But the Amish, who’ve been “Witnessed” by Harrison Ford (in the 1985 movie of that name) and spoofed on David Letterman’s TV show aren’t the only “attraction.” (And truth be told, they are cool.) “Pennsylvania Dutch” is a misnomer, as the Amish came here in the early 18th century from Switzerland, not Holland. Along with the the Quakers, Mennonites and others, they came to William Penn’s land seeking religious freedom. They’re a simple people who preach pacifism, eschew electricity (the better to avoid the influences of computers and TV) and encourage members to marry within the flock. One of the best ways to learn about them and see the countryside is to take a buggy ride. We took one with Aaron and Jessica’s Buggy Rides, conveniently located at the Plain and Fancy Farm. Guides— ours was a lovely young woman named Esther—are very open about their lifestyle and happy to answer questions.

COCONUT, MANGO AND SPINACH SMOOTHIE BOWL (Gluten-free, vegan, raw) Serves: 1 to 2
INGREDIENTS FOR THE SMOOTHIE BOWL n 1 cup frozen mango chunks n ½ ripe avocado, peeled n 2 heaping Tbs. coconut yogurt n 1 heaping tsp. coconut oil n 2 pitted Medjool dates n 1 ½ cups spinach leaves n Juice of ½ lime n 1 tsp. spirulina/chlorella or hemp powder n ½ cup plant milk n B lueberries, fresh mango slices, sliced almonds and shredded coconut, to serve FOR THE PLANT MILK n 1 cup oats or nuts (almonds, cashews, hazelnuts or pistachios), soaked n 2 cups of water
DIRECTIONS
To make the plant milk (about 2 cups), blend the oats or soaked nuts and water until it turns milky. If making oat milk, do not over-blend as it will impair the texture. Pour the mixture through a strainer or pour into a nut milk bag set over a bowl and squeeze out the liquid until only pulp remains in the bag. The milk is best fresh but will keep in the fridge for three to four days. Place the frozen mango pieces in a food processor or blender along with the avocado, coconut yogurt, coconut oil, dates, spinach leaves, lime juice, spirulina and plant milk of your choice. Blend until completely smooth and serve in a shallow bowl with the fresh mango, a handful of blueberries and a sprinkle of sliced almonds and shredded coconut.

It not only adds flavor and thickness to dishes, but it also lacks potentially harmful hormones, which can trigger lactaid allergies. Snack on vitamin-C packed pineapple, and you’ll feel like you’re on vacation— and reap health benefits too. Besides coconut, pineapple is perhaps the fruit that most quintessentially represents the taste of the tropics. Featuring a spiny exterior and nectarous, juicy flesh, a pineapple is actually a fusion of multiple berries that grow around the core and combine to form that delicious fruit we love to slice, grill, blend and bake. POWER UP Like most fruits, pineapples have a knack for satisfying a sweet tooth without packing on the pounds. One cup of diced fruit has only 82 calories, no fat, and a whopping 130 percent of the daily-recommended amount of immune-boosting vitamin C for someone on a 2,000-calorie diet. It’s also high in manganese (76 percent of the daily recommended value), which promotes bone health and helps with metabolism, and contains bromelain, a mixture of enzymes that have been shown to be effective in reducing inflammation, treating osteoarthritis and aiding in digestion. One caveat: Pineapple is particularly high in sugar, with 16 grams in each cup, so as difficult as it may be, enjoy in moderation. BUY/STORE/SERVE When selecting a pineapple, look for bright, green leaves and the absence of any bruises or squishy spots. Pineapples are already ripe and ready to eat once they hit supermarkets (they do not ripen further as bananas and avocados do), so don’t be deterred if the fruit appears

green on the outside—that’s perfectly normal. Once purchased, it should be eaten within a few days for optimal freshness (or within four days if it’s kept in the refrigerator). You can serve a pineapple plain and raw (a quick Google search will reveal many creative ways to cut and serve the fruit), turn it into a refreshing salsa (mix it with cilantro, red onion, a serrano pepper, lime juice, and salt*), grill it on kebabs with chicken or shrimp, or try it on a pizza (trust us on this!). Also, the bromelain it contains works as a natural meat tenderizer, making it ideal for a marinade for steak, pork and other meats. Other ways to use the sweet treat? Try pineapple in ice cream, salad dressing, smoothies and even cocktails. DID YOU KNOW? Christopher Columbus may be best known for his discovery of the New World, but the Italian explorer is also responsible for introducing the pineapple to Europeans, according to the California Rare Fruit Growers organization. Columbus first found the fruit, which was originally domesticated by Indians, in Guadalupe in 1493 and brought it back with him to Spain. From there, it was passed on to the Philippines and other tropical areas. —Liz Donovan

Closter’s new sweet spot It’s a sure-fire bet to say that the folks at Azucar Cuban Cuisine know what they’re doing both inside and out of the kitchen. Though they’ve only been open in Closter since late January, it’s a family venture that started in 1995 as a sandwich joint in Edgewater. After a decade there, they moved to larger digs in Jersey City and expanded into a full-service dining establishment. When rent began to increase three years ago, executuve chef and owner Nicholas Vazquez decided it was time to move again. Fans are happy to hear that Azucar has made its triumphant return to Bergen County. Azucar has taken over a nook near the busy intersection of Old Hook and Schraalenburgh roads that has been a sweet spot for restaurants in the past. It has a sizeable parking lot as well as spaces along the street to accommodate plenty of guests—and on certain nights, this is the hot spot of the Northern Valley. It’s easy to see why when you walk into the building and catch a glimpse of the expansive bar area, its televisions, multi-colored lights and top shelf liquor-lined wall, all screaming “Night out!” But on this March night, my companion and I were whisked past a set of decorative palm trees and into the main dining room. Our server, Frank, immediately greeted us with a smile and menus, suggesting a short list of specials and the catch of the day. Soon after we ordered and our drinks arrived (the superb Havana mojito for me and a glass of chardonnay for her), the appetizers were delivered. Our simple order of Guacamole Cubano and Yuca Frita was anything but that. The smooth blend of the avocado, garlic, onion and tomato seemed to awaken every taste bud and complemented the accompanying crispy plantain chips. (No corn chips here!) The same could be said about the Yuca Frita (cassava fries), which is a delicious and more healthful alternative to French fries. When partnered with the cilantro dip, each meaty fry brought a smile to our faces. After watching a group of businessmen excitedly enjoy their feast in an adjacent private dining room, my guest and I shared the feeling when our entrees arrived. On my plate was a hearty filet mignon wrapped with bacon—Azucar has dubbed the dish El Nacional as it was originally served in the Nacional Hotel in Havana. The presentation of the meat together with a delightful side of sautéed garlic and vegetables received a thumbs up, but the overall grade dropped because of a misfire on temperature. A steak fanatic I’m not, but I know when a cut is served medium-rare, and my order was not. To his credit, Frank immediately noticed the kitchen mistake and quickly apologized, offering to bring me another steak. But I opted to eat the filet at medium, and fortunately it was still tender BERGENMAG.COM

and boasted the savory flavors of the beef and bacon. My companion ordered a traditional Cuban dish, Camarones Blanco al Ajillo. While not as aesthetically pleasing as my plate, her five jumbo Panamanian shrimp appetizingly swam in a white wine and garlic sauce alongside a generous serving of white rice. As for taste, four of the five large crustaceans were cooked to perfection and satisfied her savory craving. But the outlier, she reported, was a bit undercooked. A side order of fried sweet plantains paired perfectly with both of our entrees, providing the perfect mix of salty and sweet. “They go well with every meal, the way milk and cookies go together,” Frank explained. And my dining partner agreed: “I can eat these all night.” After a minor mishap (my friend accidently spilled her glass of water on the table and floor which restaurant staff quickly cleared), Frank brought out our desserts. The flan that she ordered was unlike any that either of us had tried. A hardened caramel shell topped a spongy pastry, and my companion happily sighed as she tasted each creamy spoonful. Indeed I was jealous because the kitchen sent me the wrong dessert. This time, I asked Frank to swap it for the correct dish, a Cuban bread pudding with brandy-soaked fruit. More like a cake than pudding, the dessert hit the spot after that brief moment of frustration. Azucar has built a reputation for dishing out authentic Cuban cuisine.
