{ EDITOR’S NOTE }
The Importance of Home “…You don’t know what you’ve got till it’s gone…” Joni Mitchell’s lyrics ring in my ears as I sit at home at my work computer. It’s one thing to have an option to work from home; it’s another to have to work from home. And who hasn’t had to cancel dinner plans due to a scheduling conflict? But having to postpone because the restaurant is shut down— well, that’s novel. In the past few days, I’ve seen colleagues cancel weddings and vacations. Watched as others talked of remote learning for their kids and begged loved ones not to check their 401(K)s as I was tempted to peek at my own. (In the end, I was too chicken.) Longtime Bergenites are no strangers to crisis. I recall working with colleagues around a U-shaped table near a specially transported computer server at the Park Ridge Marriott back when Superstorm Sandy hit. We’ve had our share of storms, blackouts and gasoline rationing. But this is different: COVID-19 has changed everything. Well, almost everything. Happily, what isn’t different is our response as a community. I’ve seen friends and acquaintances share information and supplies. We’ve offered to pick up medicine for elderly neighbors and run errands for those in self-quarantine. Of course, there’s a great deal of stress and anxiety. When will the economy recover? When will we return to normal? As we go to press, Bergen County has nearly 460 reported cases of the virus, with several dozen presumptive positives. As a monthly publication, we prepare articles long before you read them; thus this issue was conceived before the major U.S. outbreak. But in a way, perhaps the timing is fitting. This is our HOME issue, and now that most of us are home working and nesting, we see the importance of home—and the way it reflects who we are—as never before. This is an unprecedented time, for sure. My hope is that we’ll come out of it stronger and more grateful for what we’ve “got,” and that it’s not really “gone,” just postponed.

{ BERGEN BUZZ } OUR GUIDE TO NEW IDEAS, TIPS, TRENDS AND THINGS WE LOVE IN OUR COUNTY.
FOR THE RECORD Vinyl records have made a big comeback and, in honor of National Record Store Day on April 18, we’re on the hunt for the best albums of the past to celebrate properly. Luckily, Bergen County is home to several shops that have been spinning the greatest artists of music history for decades now: —Music Country Records has been a staple shop for musical instruments and memorabilia since it opened in 1934. It’s believed to be the oldest operating record store in the tri-state area. Browse collections that include everything from doo-wop to pop, from reggae to rock, and consider selling your old vinyls here in exchange for fi nding a new tune. • Music Country Records, 728 Anderson Ave., Cliffside Park, 201.943.1045 —Vintage Vibe is a blink-and-you’ll-miss-it record store located inside a music studio, and it carries both 45s and 78s. You’ll also fi nd vintage toys and pop-culture collectibles from decades past to pair nicely with whatever genre fits your fancy. • Vintage Vibe, 47 Prospect St., Midland Park, 201.452.5774 —EZ2Collect says it all right in the name; its array of vinyls makes it simple to select a new sound for your collection. Albums available at this cultural hot spot include everything from the Boss to The Beatles. And don’t forget to pick up a novelty poster—the store has those in quantity too. • EZ2Collect, 133 Broadway, Elmwood Park, 201.791.3833 —Music Merchant in the heart of Westwood’s downtown has been buying and selling LPs for three decades now. Its offerings include both new sealed and used vinyls, as well as CDs for ’90s babies. • 157 Westwood Ave., Westwood, 201.666.7777
DID YOU KNOW? “You’re the One That I Want,” a tune from the soundtrack album of the 1978 movie-musical Grease starring Englewood native John Travolta, still ranks as one of the best-selling singles in music history with 15 million copies sold globally. BERGENMAG.COM

WHAT’S COOKING? We’ve known for a while now that he’s one of New Jersey’s best chefs, and now, the James Beard Foundation thinks so too. Often called the Oscars of the food industry, the James Beard Foundation is gearing up to present its annual food awards, and the recently announced list of semifinalists for “Rising Star Chef of the Year” includes one of Bergen County’s most notable new additions, Robbie Felice, partner and chef at Westwood’s Osteria Crescendo. Crescendo is Felice’s second venture; he opened his first restaurant, Viaggio in Wayne, in 2016 when he was just 26 before opening Osteria Crescendo in downtown Westwood three years later. Throughout the span of his career, he’s earned accolades from restaurant reviewers and diners alike for his modern takes on Italian fare with locallysourced ingredients. The James Beard awards will be presented on May 4 in Chicago, and this category in particular is reserved for chefs age 30 and under. Felice just makes the cut at 29!
REDUCE, REUSE, RECYCLE
WILL THEY SURVIVE? Survivor fans may have recognized a pair of local faces on the current season of the popular CBS reality show. Two former victors of the island survival competition who are back for the “Winners at War”-themed 39th season in Fiji hail from the 201: CrossFit trainer Natalie Anderson from Edgewater, who “survived” season 29 in San Juan del Sur, Nicaragua; and Tony Vlachos, a police officer and two-season winner who competed in Cagayan, Philippines, and hails from Allendale. Will either of these Bergen contestants become the ultimate sole survivor? We’ll have to tune in and find out.
Earth Day is just around the corner on April 22, which means it’s the perfect time to rethink and reflect on how your day-to-day activities affect the environment. You’ve probably heard the golden rules of turning off the faucet while brushing your teeth and switching off the lights when you leave a room, but what else do you do in an age when almost every moment in your day relies on energy consumption? Alex Braunstein, public engagement coordinator at Tenafly Nature Center in Tenafly, suggests ways to reduce your carbon footprint: • Switch to LED light bulbs. Incandescent bulbs generate excess heat. Energy-efficient LED lighting generally lasts longer, making it good for the world and your wallet. “Making this switch will generally pay for itself within one calendar year,” Braunstein says. • Carpool. Traveling to the same place with a buddy? Hitching a ride or offering a lift to someone can cut back on car-caused carbon emissions big-time. “This also helps alleviate traffic, reducing slowdowns and idling on the major thoroughfares,” adds Braunstein. • Unplug your chargers. Whether it’s your phone, laptop, tablet or whichever other screen you scroll on, keeping your device’s charger plugged into a wall outlet while it’s not in use can be a major energy suck. Braunstein says the average iPhone only uses 12 cents’ worth of energy per year, but leaving its charger plugged into a port can significantly increase that cost over time. • Follow the “stars.” Thanks to the Environmental Protection Agency’s Energy Star label certification, it’s easier than ever to know how your electronics and appliances affect the environment over time. “Energy Star Appliances perform at a higher level than older appliances and do so with a greater efficiency of power use,” says Braunstein. He explains that buying new things in general comes with a high carbon footprint, and replacing appliances at the end of their lifespan is best for the environment.

SAVOR YOUR FLAVOR
Few things are more satisfying on a warm day than a velvety ice cream sandwich that fits perfectly in the palm of your hand. That’s the theory, anyway, at Stack Creamery in Westwood, set to open soon (there is no official opening date as of press time). This latest take on your traditional small-town ice cream parlor allows you to customize the classic frozen treat to your sweet tooth’s specifications. Choose from an array of ice cream flavors to be squished between two freshly baked cookies or brownies and topped with anything and everything from gummy bears to graham crackers. The possibilities are endless! • Stack Creamery, 287 Westwood Ave., Westwood
ALL ABOUT EMMA
Jane Austen would surely approve. Traditional American eats get a dash of Argentine spice at Emma, the latest bistro to pop up in foodie haven Edgewater. Executive chef James Muir offers lunch and dinner menus (as well as an extended brunch menu for weekends) jam-packed with fusion dishes such as chimichurri-covered skirt steak and paprika-seasoned charred octopus. The eatery is a feast for the eyes as well, its walls adorned with local artists’ work. • Emma, 2 Hilliard Ave., Edgewater, 201.402.7719
HIP HIP, HALAL!
Sure, New York City street vendors have a rep for serving up the best halal, but thanks to the recent addition of Halal Boyz in Hackensack, the same authentic Middle Eastern eats are on this side of the river. Stop by for a gyro, spicy meat platter or even chicken wings—and don’t skimp on their array of sauces! • Halal Boyz, 336 Main St., Hackensack, 201.820.1111
MUSIC TO OUR EARS, TEACH!
HE’S ANOTHER WONDER
Let’s have a round of applause for Amelia Gold, a violin and orchestra teacher at Elisabeth Morrow School in Englewood, who was recently featured in a panel on SiriusXM’s “Ask the Good Doctor” series. Gold, a Juilliard School graduate who chairs her school’s arts department, chatted with radio personality Dr. LaJoyce Brookshire to discuss how music can affect the brain. Gold was joined by some of Broadway’s biggest names, including Jacob Gutierrez, who plays the title role in Aladdin, and Adrienne Walker, who portrays Nala in the current run of The Lion King.
Back in 2017, BERGEN reported on Hackensack’s 15-year-old blind piano prodigy Matthew Whitaker as he released his debut album, Outta The Box, and performed at New Jersey Performing Arts Center in nearby Newark. Since then, the musician, a ripe 18, has graced hundreds of stages around the globe and appeared on Ellen and The Today Show. He also has a new studio album, Now Hear This. Whitaker, who was 10 when he opened for another blind pianist, Stevie Wonder, at the Apollo Theater in 2011, was recently profiled on CBS’s 60 Minutes. “[This album] is an homage to some of the greatest jazz legends and my interpretation of their beautiful music as well as compositions reflecting my experiences including growing up in Hackensack,” Whitaker told BERGEN about his latest release and his Bergen County roots. He’ll perform hits from his album at “Music and Memories: 100 Year Celebration” at New Hope Baptist Church in Hackensack on April 17 at 7 p.m. For more info and tickets, go to bandsintown.com.

Another great thing about living in Bergen County? It’s a commuter’s paradise. And nine boroughs in particular are hot commuter commodities, as they made Property Shark’s ranking of New Jersey’s top 40 best commuter towns into New York City. They are Hackensack (#1), Bergenfield (#8), Englewood (#11), Fort Lee (#14), Garfield (#16), Paramus (#26), Fair Lawn (#27), Mahwah (#34) and Ridgewood (#36). Property Shark, a real estate data and research website, factored bus, rail and vehicle travel, as well as housing costs, crime and school quality, into its study, which looked at towns with populations above 25,000 that are within a 30-mile radius of downtown Manhattan.

PUPPY LO♥E Brady, a golden retriever mix, 11 Owner: Brittany Kearns, Ramsey Whether he’s outside on the sundeck catching a wicked tan or hiking a new terrain with his humans in the mountains, Brady is one gnarly pooch. His “mom,” Brittany Kearns, says passersby are shocked to learn that Brady is a “senior” dog when they watch him swim laps around the young pups at Ramapo Valley Reservation or playfully nosedive into the sand when his family takes him down the Shore. Named after former NFL and Notre Dame football quarterback Brady Quinn, the pooch has endless energy and a fun-loving spirit that make him the perfect partner in any adventure. Kearns says Brady loves to take impromptu trips around Bergen County and to nearby Hoboken “usually because food is involved.” On these jaunts this canine foodie will indulge in a bagel or “puppachino” from the local cafes or be treated to his absolute favorite meal: a thick, juicy steak. So, what does this daring dog like to do when he’s not out exploring the great outdoors? “He’s the best cuddler,” brags Kearns.
BEST IN THE BIZ The employees have spoken! This year’s list of NJBiz’s “Best Places to Work in New Jersey” is out, and we’re happy to report 14 Bergen-based businesses made the grade. The company’s annual report categorizes winners by company size and tabulates results based on an anonymous survey of its own employees conducted by an independent third party. Though the official rankings won’t be revealed until April 21, here, in no particular order, are some companies in our county garnering praise: • Small (15–49 employees): Alfred Sanzari Enterprises, Hackensack; CQ Fluency, Hackensack; DMR Architects, Hasbrouck Heights; LB Goodman & Co., Fair Lawn; Nationwide Planning, Paramus; Raare Solutions LLC., Paramus. • Medium-sized (50–249): Intac Actuarial Services Inc., Woodcliff Lake; OwnBackup, Englewood Cliffs; Pashman Stein Walder Hayden PC, Hackensack; Peck Brothers, Elmwood Park. • Large (250 or more): Holy Name Medical Center, Teaneck; Kessler Rehabilitation Center, Lyndhurst; Stryker, Mahwah; TRANZACT, Fort Lee.
FILLET OF FLAY Few chefs can actually Beat Bobby Flay, as in the apt name of the cooking competition show on the Food Network featuring cuisine master Bobby Flay. But chef Michael Merida, owner of Rockin’ Roots in Hillsdale, did just that on a Feb. 23 episode of the series. Merida breezed through the preliminary round, stunning the judges— lifestyle guru and fellow New Jerseyan Martha Stewart and acclaimed chef Richard Blais—with a couscous salad featuring different iterations of the surprise main ingredient: mandarin oranges. He then faced off against Flay in a battle of fish croquettes, in which Merida’s cod rendition of the fish dish emerged victorious. “It feels great to beat the legendary Iron Chef,” says Merida, the first New Jerseyan to beat Flay on the program. “It was even sweeter to beat him with his style of cooking.”
BETTER LATE THAN NEVER Former River Vale police chief and lifelong Bergen County resident Thomas Simpson received honors seven decades in the making, as he was finally awarded the medals he earned while serving in World War II. The 92-year-old veteran, who enlisted for combat as a recent graduate of Bergenfield High School in 1945, earned the Asiatic Pacific Campaign Medal and the Honorable Reserve Discharge button during his service, but was not awarded them immediately and did not follow up back then. After he reached out recently to local officials about the overdue accolades, his request reached Rep. Josh Gottheimer (D–N.J.) and the Congressman soon presented Simpson with the medals at his residence in the Sunrise assisted living facility in Old Tappan. Congrats, chief!

WELCOME TO
Midland Park Though small in size, this borough comes up big for families, shoppers and diners. ESTABLISHED: 1894 POPULATION: 7,265 WEBSITE: MIDLANDPARKNJ.ORG
KNOW YOUR NEIGHBOR(HOOD) Despite its relatively small size, Midland Park is divided into five distinct neighborhoods. Quiet, tree-lined streets make up the mostly residential Park Wood section—though don’t miss its must-try deli/pizzeria of the same name. Families also live in the Northside, home to Midland Park Jr./ Sr. High School, as well as South Central, which encompasses Goffle Brook and the New York, Susquehanna & Western Railway. Shoppers heading to the Southeast section will find Kings Food Markets, Peter’s Fish Market, Wholesale Photo & Digital Imaging and other retailers. Businesses like Sal Lauretta for Men and a host of eateries can be found in Wortendyke’s downtown district.
Locked between two of the larger towns of Northwest Bergen County, Midland Park is often the forgotten municipality of this well-to-do region. Sure, it falls short of the cachet that follows Ridgewood and Wyckoff, but make no mistake—this 1.5-square-mile borough is packed with equal amounts of dining options, civic pride and historical charm as its neighbors. Perhaps that’s why the town appears often on niche.com’s rankings of the state’s best places to live. And speaking of lists, Midland Park High School (which houses grades 7–12) is a frequent entry on U.S. News and World Report’s annual register of the country’s top high schools.
HISTORY HAS ITS PLACE The borough is home to five sites listed on the National Register of Historic Places: Four of the earliest known stone houses in Bergen County and the Lake Avenue Bridge, which spans over the Goffle Brook. Midland Park had a sixth location on the list, but the Van Zile House—built in the 1730s—was razed in 2019.
BORN FROM BOROUGHITIS
Like many towns of Bergen’s “boroughitis” era in the late 19th century, Midland Park was created taking portions from surrounding municipalities. In this case, founding fathers drew from portions of Franklin (now Wyckoff) and Ridgewood townships.
OFF THE RAILS
HOME SWEET HOME
Wortendyke Station on Greenwood Avenue was a former railroad depot along the NYSW main line. Today, the station house and a Pullman car are a pottery studio and gallery, and the adjacent caboose is a hot dog stand.
Thinking about buying or selling a home here? The median home value in Midland Park is $464,977, down 0.1 percent over last year, according to Zillow. Home values are expected to rise 3.3 percent within the next year.
WHAT’S IN A NAME? The borough is believed to have been named after the now-defunct New Jersey Midland Railway Company, which operated in the area in the 1870s. BERGENMAG.COM

THAT’S A NO-NO
Former resident Johnny Vander Meer is the only baseball player in Major League history to pitch no-hitters in consecutive starts. He accomplished the feat in 1938, his rookie season, as a member of the Cincinnati Reds. But by that time, Vander Meer was already a no-hitter veteran: He had recorded five of them while pitching with the semi-pro Midland Park Rangers. His legacy lives on today: Johnny Vander Meer Field is home to several of the borough’s youth baseball teams.

8TO PREVENT TIPS
BIKE ACCIDENTS These simple habits will help kids stay safe on two wheels.
BERGENMAG.COM

APRIL 2020
Riding a bike is one of the many joys of childhood, but it’s not without risk. Taking the training wheels off can mean it’s time to talk to your kids about keeping themselves safe while cruising along the sidewalks. Here are eight tips to prevent peril every time they go for a ride:
1
MODEL SAFE BEHAVIORS.“One of the most important ways to reinforce your kids to wear helmets is to set a good example by wearing one when you go out,” says Kathleen Greaney, M.D., pediatrician at Maple Avenue Pediatrics in Fair Lawn. “Hopefully, your kid will see that and begin to do the same.”
2
BE SURE THE BIKE FITS YOUR CHILD’S HEIGHT. When seated on a bike, your child should be able to touch the ground with his or her toes. Handlebars should be easy to grip.
3
CHILDREN SHOULD ALWAYS WEAR A HELMET—even if they’re riding a scooter or skateboard. “Some parents say that helmets aren’t needed when their kids are riding in the driveway, but your child should wear one at all times while they are sitting on a bike,” says Dr. Greaney. Helmets can reduce the risk of severe brain injury by 88 percent, yet only 45 percent of children ages 14 and under usually wear one, according to Safe Kids. The Garden State’s

mantra: “Wheels Under Your Feet? Helmet on Your Head!”
4
MAKE SURE THE BIKE HELMET FITS PROPERLY. It should sit on top of the head in a level position and should not rock forward, backward or side to side. The helmet should cover your child’s forehead; there should be no more than two finger-widths between the eyebrows and the rim of the helmet. The straps should form a “V” under the ears when buckled. Kids should avoid wearing ponytails under helmets because they interfere with proper fit. The chin strap should be snug—no more than two fingers should be able to fit between the chin and the strap. Dr. Greaney suggests a helmet that is cracked or has been worn in previous accidents should be replaced or checked before being used again to ensure that it’s still in good shape to protect your child’s cranium.
5 6
RIDERS SHOULD WEAR PROTECTIVE GEAR, such as knee and elbow pads.
IF A BIKE LANE IS AVAILABLE, KIDS SHOULD USE IT. The same goes for those riding scooters or skateboards or wearing Rollerblades.
7
CHILDREN UNDER AGE 10 SHOULD RIDE ON A SIDEWALK, not the road. Younger kids don’t have the developmental ability to judge a vehicle’s speed or distance.
8
OLDER KIDS SHOULD FOLLOW THE RULES OF THE ROAD. If there’s a red light, they should stop. Also, they should ride with the traffic, not against it. Bikes are considered vehicles, so riders should follow the same rules that cars do.

FARMHOUSE MEETS FACTORY
Instead of moving to the burbs—and facing a long commute—a Hoboken couple embraces a redo with just the right mix of city and country.
{ KITCHEN RENO }
By Donna Rolando Design by Julia Kleyman Photography by Dove & Co. Studios Like many other Hoboken city dwellers, Sheila and Rich planned to move to the suburbs pretty soon after the stork paid a visit. They feared that their uptown loft-style condo with 1,246 square feet (and its layout) would cramp a growing family. Some vows are meant to be broken, however, and the deal breaker for this couple was the toll it would take on family time if Rich had to do a long daily commute. Their new plan? Give their apartment home of 14 years a second look. “When we firmly decided not to move to the suburbs, we needed our space to be functional and well laid out,” says Sheila,

This kitchen redesign by Julia Kleyman of Ulrich Inc. with its modern farmhouse/industrial motif is just what a growing family needed to give their loft-style condo in uptown Hoboken forever power. The improved flow of this center island suits the entire family, while the bright-and-airy style is a welcome change from original walnut cabinets and brown granite. Knowing that the new room’s lighting would take center stage, homeowner Sheila spent time hunting for stainlesssteel fixtures, such as the Fenton 1-Light Dome pendants from Wayfair.

a space uniquely crafted to her culinary style—all of which was sheer fantasy before the redesign. As Kleyman explains, the original peninsula could only seat two. Of course, creativity also extended to the design, which this time around reflects Sheila’s taste. She loves blue, which appears inside the illuminated glass cabinet that lovingly displays her wedding china and has just a tinge for warmth in the gray island base. “It’s not a hardhitting industrial space,” says Kleyman. “We wanted it to be light and airy.” She accomplished that with Brookhaven by Wood-Mode cabinets in Nordic white and a backsplash of 3-inch-by-6-inch white subway tiles with a pop of gray grout. The countertops are engineered stone in gray with a Barclay apron farm sink and a Rohl faucet in satin nickel, while the custom stainless-steel hood is by Amore. Red knobs on the Wolf gas range and cookware further brighten the space, as does the light blond finish on existing hardwood floors. Thanks to their designer’s touch, the couple has no plans to move— not even on the “back burner”—and they are getting full use of the space, which remarkably can accommodate close to 40 guests on Christmas Eve.
explaining that an L-shaped peninsula “cut the kitchen short, while the renovation opened it up” with its island and creative cabinetry. What’s more, she’d never had the opportunity to express her taste with the original kitchen. As newlyweds, they had moved into the pre1900s button-factory-turned-boutique residential building, never loving its brown granite counters and walnut cabinets but thrilled that it was all new. Not only would the 2019 reno envisioned by Julia Kleyman of Ridgewood’s Ulrich Inc. combine those two crucial elements of function and style, it would also be a way to bring the country to the city. They embraced the modern farmhouse look and its industrial edge, seen in the stainless-steel dome lighting and rustic-wood island stools. What better way to tie in the ductwork and the 14-foot-ceiling factory setting? “We had to be creative,” says Kleyman, who added a small appliance “garage” (complete with outlets!) that tucks the microwave, etc., out of sight and maximizes storage with taller cabinets such as the pantry with roll-out drawers. Today, the homeowners’ two daughters, ages 10 and 13, both enjoy snacks and tackle homework at the island, while Mom cooks nearby in

This page, right: One of Sheila’s favorite features is the appliance garage, to the left of the stainlesssteel Thermador fridge, which she can keep open when making a mug of joe but tuck away when company comes. And, yes, it looks nothing like a garage; more like a sleek white recessed-door cabinet. The challenge Kleyman mastered was designing this high-function, storage-packed room to add beauty and harmonize with the rest of the space. Opposite page: For Sheila, who loves to cook, the new kitchen has all the bells and whistles, including a convenient vertical storage area for cutting boards and a shelf for recipe books in the newly created island storage. The island also has a pegboard drawer next to the wooden dining table with plates so that the children can set the table with ease. “Julia and I went into a high level of detail about how the kitchen was going to be used,” says Sheila.

{ PROS’ TIPS }
WHERE THE PROS GO Interior designers tell BERGEN where they shop for their clients—and why you should visit these home stores too.
Take one quick gander along the busy routes of Paramus and it’s clear Bergen County has a lot of home décor stores. It’s great to have options, but if you’re working on an interior decorating or renovating project, where do you start? To answer that question, BERGEN asked four local interior designers to narrow the choices down. Here, they share the mom-andpop shops and chain stores at which they find the best products for their clients, from furniture to flooring to fixtures.
THE EXPERTS:

If you’re looking for… FURNITURE Mitchell Gold + Bob Williams, the modern home furnishings store located on Route 17 in Paramus, specializes in upholstery, but our designers also love this shop for its furniture selection and unmatched customer service. “I appreciate the MGBW design staff’s professional service and knowledge,” says Debbie Paciello of DMP Designs in River Vale. “They provide clients immediately with various floor plans of furnishings and suggested accessories, and let them bring home fabric samples to see in their home space.” Jaclyn Isaac of Downtown Decorators in Rutherford is a big fan too; she appreciates the store’s “great pillows and custom upholstery options.” Oh, and she knows a guy. “Ask for Burak, and tell him Jaclyn sent you!” Another furniture favorite is nearby Bassett, which “offers a broad range of durable fabrics in an array of color ways, as well as various wood tone choices,” adds Cristina Klemm of Cristina Jane Design in Ridgewood. “There are also multiple options for arm and leg styles on many of the upholstered pieces.”

{ PROS’ TIPS } If you’re looking for… WINDOW TREATMENTS If you’re in the market for blinds or shades, our pros like The Shade Store in Paramus and Closter. “The material selections are excellent quality in a variety of solids and patterns,” Klemm says. The staff is great, she adds, and the turnaround time is quick. Prefer upholstery or drapery for your windows? The place to be is Mike’s Upholstery in Cliffside Park; Paciello says the staff members there are both “meticulous and quick.”
At left, The Shade Store, Paramus; at top, Mike’s Upholstery, Cliffside Park.
If you’re looking for… FIXTURES AND HARDWARE Finding the perfect plumbing fixtures for a bathroom or kitchen can be daunting because there are so many options from which to choose, so it’s best to go to a store that helps you narrow it down. Pauline De CosimoWager of W Interior Design Concepts in Hackensack likes Restoration Hardware for fixtures, as it has top-quality options and a large but not too large selection that she can present to her clients. Paciello, meanwhile, is a fan of General Plumbing Supply on Route 17 in Paramus. “It’s a Kohler signature store, and it tremendously cuts down the decision time on bath and kitchen plumbing,” she says, “since the showroom is set up with examples of baths showing the toilet, tub and showerhead, so that customers can actually see their options and choose from there.”

{ PERSONAL SPACE } If you’re looking for… ACCESSORIES Whether you’re seeking out seasonal décor or the finishing touches to your year-round space, your best bet is at the Paramus chain stores. “Homesense is the best place to purchase accessories because it tends to carry multiples of the same product,” says Paciello. “Many times, one of something is not enough.” Klemm’s vote goes to Pier 1, across from Homesense on Route 17. “It’s fun to shop there because the store is full of color and texture and is tastefully merchandised,” she says. And De Cosimo-Wager often finds “unusual accessories” for her clients at nearby West Elm—despite its being a national retailer.
At left, Homesense, Paramus; at top, West Elm, Paramus; at bottom, Pier 1, Edgewater.
If you’re looking for… FLOORING AND RUGS The jury was split in this category. But if you’re on the hunt for tile for a bathroom or kitchen project, Floor & Décor, with locations in both Paramus and Tenafly, comes highly recommended by Isaac for its reasonable pricing and vast selection. “What we love most is that the tile can be opened and checked right on site, making sure you don’t walk away with any color deficiencies you have to return later,” she says. Mom-and-pop shop Faber Bros. in Woodcliff Lake is Paciello’s top choice for carpeting, while De Cosimo-Wager loves the rug selection at the big-box store West Elm. “It is suitable for more contemporary design projects,” she says.

An Oakland couple gave John Butler one sweeping directive when they hired him to redesign their uninspiring backyard: Be creative. For the president of, and partner at, Mahwah-based Arapahoe Landscape Contractors, the order meant transforming a plain grassy yard flanked by rocks and woods into something visually stunning yet practical. The homeowners, after all, needed a fun and entertaining space for their three teenaged children, their friends and two rambunctious dogs. “It was important to the couple to create a feeling of wanting to be at the house, especially among the teens,” Butler says. “They’re an active family, so the design started with the pool.” Butler and his team passed on a pool outline filled with angles and instead designed one to resemble a more natural swimming hole. Shaped with numerous curves, an infinity edge, a swim-in grotto and a waterfall measuring 20 feet wide by 4 feet tall, the pool is easily the optical centerpiece of the yard. Not as noticeable are the features inside the water: a beach entry for young ones and waders and a sun shelf for those who want to sit and relax in the deep end. To deploy the natural theme around the pool’s edge, the designers laid a bluestone patio using material from Braen Supply in Haskell, which also provided stone for the waterfall. “We gave it a tropical feel to soften the look of the rocks and

hardscaping,” Butler adds. Arapahoe paired ornamental plants with annuals as well as a banana tree, strategically placing the new foliage in the backyard layout. “We think of this as a lagoon paradise. It’s oriented on the property so that when you look out from the house during winter, you don’t have to look at a boring pool cover.” Butler had to employ a different type of creativity to overcome a 4-foot grade change from the first floor of the house to the pool area. But rather than open another excavation job, his team “embraced” the difference in elevation and built a raised patio adjacent to the home with large radial steps leading to the bottom landing. “We also added a gazebo and a built-in barbecue,” he says, “so that with the steps acting as additional seating, the raised patio is a great place for the family and friends to hang out.” At the homeowners’ request, Arapahoe completed the backyard project at a gradual pace. The work was divided into three phases, and the final stone was set into place nearly three years after groundbreaking. But with the kids now ages 15, 18 and 20, the smart, creative design of the yard is doing its job: bringing the family together at the house. “A well-used home is always a work in progress,” says Butler.

“I love Benjamin Moore Old Navy 2063-10. This rich navy blue is pure, deep and clear—a great new neutral ‘go-to’ color that I am currently using in a powder room project. Paired with white it’s crisp and classic. Navy also goes with warm colors like yellow and gold and cool colors like green and aqua. You can’t go wrong with this one!” —Rona Spiegel, Lifestyle Interior Designs, Englewood Cliffs
“We love using Farrow & Ball paint. It has a depth of color that no other paint has and it changes very differently in the light. We just used Citron No. 74 in a powder room that had no windows. It’s a very warm and sunny color that goes a long way toward brightening up the room, and it’s a more daring neutral than gray, white or beige. If you’re nervous about color, use a hue like Citron on a smaller scale such as in a powder room, but it’s also beautiful on a larger scale like in a bedroom.”
“Sherwin Williams Domino SW-6989 is a deep black hue and my current favorite for trim work, built-in cabinetry, wainscoting and stair rails. It adds depth and dimension to any space. Domino plays well with most any color palette, metal finish and wood tone. This color will add instant drama (the good kind!) to any room in your home.” —Kristen Sawyer, Sawyer Interiors, Westwood
—Linda Maley, M Design Studio, Mahwah

“I recommend Benjamin Moore Bone Black CW-715. It is a great accent color and one that I’ve used on builtins, a kitchen island, a board and batten accent wall behind a bed, above white subway tile in a bathroom and in a dining room above white wainscoting. It’s a grayish color that looks great with white, natural wood, black and navy. It’s a perfect option for someone looking for a color that is bold but still neutral.” —Christie Adams, Christie Adams Designs, Wyckoff
“Right now I am loving pale tones that wash the wall with a hint of color. I recently used the palest of blues, Benjamin Moore Gray Sky 213170, for a tween girl’s bedroom. Don’t let the name fool you; in a room with lots of light it is like a breath of fresh air, a blue sky on a sunny day. It has enough gray so it doesn’t look like baby blue on the wall, which is always a risk when working with light blue. It would be equally at home in a living room or master bedroom. Add a seagrass or sisal rug and some spring green accents in Benjamin Moore Barefoot in the Grass CSP-840, and you have yourself one seriously happy space.” —Allyson Paris, Allyson Paris Design, Fair Lawn

explains Pacca, who says the elements add both fun and function. There’s no shortage of pattern play in this space either, as the furniture sits atop a G. Fried Carpet & Design cerulean rug featuring a geometric-inspired motif that works with the chairs, not against them—no simple feat for a designer, pro or amateur level. So, how did Pacca pull it off with such tact? “The rug has a smaller overall scale and a tighter pattern,” she says. “It’s one of those things you just look at and know.” A wooden four-door buffet table with a quatrefoil design on each mirrored cabinet provides stylish storage for the family’s extra-fine china and tableware. Flanking trios of ombre textured vases and contrasting burnt orange accessories finish the look. Above this setting, all eyes go to the engraved, gold-plated mirror, which commands the room with as much opulence and ornateness as a piece of priceless jewelry on the neck of a royal guest. Pacca paired this piece with a set of lighter gold frames that outline the Paragon designs on either side of the mirror: “The mixed metals create an evolved look as opposed to being too matchy,” she says. If elegance rules in the dining room, industrial is everything in the home office—the husband’s “sanctuary,” as Pacca puts it. She carried over the dining room’s chic navy color scheme and upped the
When a Montvale couple wanted to spruce up their dining room and the husband’s office, they decided to call in an old friend to get the dual job done: Jennifer Pacca of Jennifer Pacca Interiors in Hillsdale. Pacca was no stranger to the home or the family, as she had already designed their remodeled basement and family room. “As an interior designer, there is no greater validation than a client was happy with the job we did for them and has us do another room in the house,” says Pacca. With no hesitation, Pacca jumped right back to work on the home. For the dining room, she wanted to fulfill the lady of the house’s request for rustic with a dressier design. The homeowners’ existing crystal chandelier served as Pacca’s jumping-off point, setting the tone for a space that would be a casual spot for the couple and their two young boys to enjoy their morning breakfast, but classy enough for entertaining guests with a swanky dinner-party atmosphere. The designer went with a reclaimed wood dining table from Restoration Hardware to anchor the space, while accompanying straight-leg chairs (also from the Paramus store) mimic the table’s mahogany finish. That’s where this room’s traditional rustic style ends, though, as host and hostess head chairs add some playfulness to the design, picking up the blue and gold hues that grace almost every inch of this space in an ornate pattern. “The motif on these chairs easily hides little stains,” BERGENMAG.COM

excitement with more obvious touches of complementary orange in the Valcamy pillows and window treatments, which add unexpected pops of color to the Bernhardt Furniture settee, with an Uttermost side table adding a natural texture into the mix. A sleek slab desk, sans bulky drawers, adds instant masculinity front and center in the room while sitting atop a rug from Rug Importers in Paramus, with its dramatic dark wash of denim blue. Overhead, a Currey & Company galvanized three-lantern chandelier sheds some light on the husband while he relaxes in a Bernhardt Furniture white office chair at his workspace. Behind, shelving from Restoration Hardware features urban-cool pipe-esque supports and three shelves for Dad’s favorite knickknacks and framed photos of the kids. An Uttermost silver sideboard, matching the galvanized finish of the chandelier, provides additional storage for office supplies and files. Adjacent to the seating area is a curated gallery wall featuring vignettes of rocky terrains, curvaceous roads and evergreenlined routes that appear as if you’re staring down a path in one of the national parks. “He’s an avid bicyclist,” says Pacca of her client, “and the photos on this accent wall depict that.” The stunning shots were hand-selected by the man of the house and framed and arranged by his designer to give visitors something to marvel at. Pacca says it was “the ultimate compliment” to be asked to revisit this home. “As we work our way through the house, we are constantly learning more about the clients’ lifestyle and tastes,” she explains. And with a now-functional office space for Dad and a dining room that provides the best of both worlds, this family truly has everything right at home. For the office, Pacca chose to paint on an accent wall in the midnight navy blue hue that is found throughout the rest of the home rather than paint the entire room with the deep shade. Why? To keep the space light and make the wall elements pop.

A TALE OF TWO MARKETS
Homes in Bergen County have been selling briskly in most price ranges, but it’s tougher at the top. By Leslie Garisto Pfaff
The grand house has 42 rooms spread across 30,000 square feet on a six-acre lot in the primest of prime neighborhoods in Alpine. Its fixtures and fittings are equally grand: Baccarat chandeliers, gold finishes, a ballroom, a basketball court that can be converted into a swimming pool, a swimming pool suitable for Olympic competition, a garage big enough for eleven cars. It was built on spec and came onto the market in 2010 with an asking price of $68 million. And for a decade, it has languished there, its asking price now slashed to $33 million.

APRIL 2020
{ SPECIAL REPORT } The Stone House, as it’s known, is in a class of its own, but its fate is emblematic of the recent sluggishness of Bergen’s highend real estate market—even before the coronavirus took a giant bite out of the Dow. An $18 million home in Mahwah, for another example, just sold after spending four years on the market. A sevenbedroom house on two acres in Alpine, asking price $15 million, has been on the market for two and a half years. Put simply, there are more high-end houses in Bergen than high-end buyers, and you can attribute some of that to attrition: “People are leaving New Jersey,” says David Rowan, who teaches real estate courses at Bergen County Community College. In fact, every month, some 500 high-income families exit the state, many in search of locales with lower real estate taxes. That’s been particularly true, Rowan notes, since the federal government capped the state and local tax deduction (known as SALT) at $10,000 for most homeowners, beginning in 2019. Lacey and Martin Blank, for instance, recently sold their 14room house in Englewood to move to South Carolina, where income and real estate taxes are significantly lower. “Our kids are grown, so nothing was really keeping us here,” says Lacey. “We love Bergen County, but we started feeling like it didn’t love us back.” Of course, there are plenty of Bergen stalwarts who’ve lived here for years and can’t imagine living anywhere else. But for buyers at the highest end, what’s on the market may not be to their taste. David Pfeffer, a construction lawyer who represents what he calls “super high-net-worth individuals” in Bergen County, reports he’s seen a marked change in what these buyers are seeking in a home. Hint: It’s not gilt and crystal. “We’re seeing younger, wealthier people liking more modern, sleek designs— more minimal, fewer moldings, less wood, more glass,” he says. The mid-century modern aesthetic doesn’t prevail in Bergen, especially at the top of the market, where more traditional homes predominate (as in many wealthy areas of the country), so some of these buyers are building rather than buying from someone else. And they’re very picky about their must-haves, which go way beyond open-concept great rooms and quartz countertops. “Technology is super-important,” Pfeffer says. “Now everyone, especially on the high-end level, wants a fully integrated and connected home—everything from audiovisual to security to climate control and lighting.” They’re also looking for super-luxurious outdoor spaces that look nearly identical to their upmarket interiors, with covered spaces so that families can lounge outside even in the rain, with fireplaces and built-in heating so that lounging can take place all year long, and with full kitchens, an abundance of media and, instead of pool houses, guest “cottages” the size of small homes. BERGENMAG.COM
As Pfeffer notes, young people are driving this trend, and that’s true at both ends of the market and in between. Millennials, says Gene Amsel, president of Greater Bergen Realtors, are very specific about what they want in a home. He refers to the west side of Tenafly, where millennial buyers are looking for “a half acre or less, taxes under $35,000 and three or four bedrooms that they can grow into.” And younger buyers today understand the market in a way their parents likely didn’t, thanks to the internet and such sites as Zillow and Realtor.com (not to mention HGTV). Pricing a house too high can easily send them looking elsewhere. “They know the values on everything,” says Amsel, “and if a house is priced correctly, they’ll make an offer very quickly.” Steve Anastasio, who’s selling his house in Hasbrouck Heights, changed brokers and his asking price when his six-bedroom house didn’t sell after five months on the market. “It didn’t help that the house down the block sold for $620,000,” he says. He’s reluctant to name the original price, but he’s now asking $599,000, which represents a significant drop. Nikki Grisham and her husband were living in Brooklyn, but as soon as their twin daughters started walking, they knew it was time for a move. To arm themselves with maximum knowledge, they consulted Suburban Jungle, a service that determines buyers’ needs and then helps them find the towns and neighborhoods to suit those needs. The Grishams were looking for a reasonable commute into Manhattan, excellent public schools, a large yard—“We decided that if we were getting out of Dodge, we were really going to go for it,” Grisham says—and a price tag between $1 and $1.3 million. Suburban Jungle pointed them toward Wyckoff, where they found exactly what they were looking for in about three months’ time. Houses like the Grishams’, with asking prices under $2 million, are selling well, according to Amsel. Ron Lieberman is selling his five-bedroom, 5,000-square-foot home in the Donnybrook section of Demarest, and while he’s entertaining no guesses about how long it may take to sell (as of this writing, the house had been on the market for 49 days), he’s confident that it will find a buyer. For one thing, he notes, the house is turnkey—a must for a growing number of buyers, especially on the younger end. And it’s large enough for a growing family, in a neighborhood known for its family atmosphere and excellent public schools—yet another must-have for most millennials and gen-Xers. It also has many of the amenities that buyers at the high mid-level section of the market are demanding: an open-concept ground floor, a spacious kitchen with an island to match, cabinet-faced appliances, a large mudroom, a fitness room, and—essential in the price range—an expansive indoor play area. But it’s at the lower end that houses are doing particularly well. In central Bergen, says Rowan, “the $300,000 to $400,000 market
62
APRIL 2020
“We’re seeing younger, wealthier people liking more modern, sleek designs—more minimal, fewer moldings, less wood, more glass.”
is the strongest.” That appears to be true throughout the county, with inventory at that price point extremely low. Rowan says he was recently looking for a reasonably priced twofamily home in Elmwood Park for a friend and was disappointed. “There were twelve under contract,” he says, “and none for sale.” Rowan —David Pfeffer, believes that a major factor driving the strength construction lawyer of this market sector “is the fact that people are no longer overextending themselves” as they did during the real estate bubble days of the early 2000s. When it comes to lower-priced homes in Bergen, buyers are slightly—but only slightly—less particular. Valerie Merlin and her husband, along with their daughters, ages six and nine, moved recently from Manhattan to Glen Rock. They paid under $600,000, she says, and got all of their must-haves: a roomy backyard, a sizable kitchen (essential after suffering for years with New York’s notoriously tiny kitchens), and a playroom— and, of course, an excellent school system, because some things never change. One thing that has changed—and will undoubtedly keep changing in the weeks and months to come—is the effect of the coronavirus pandemic on the real estate market. Brokers and sellers are anxious, but as this article goes to press, it’s too early to say exactly how real estate in Bergen—and beyond—will be affected. There’s likely to be a slowing down and then a gradual upswing, perhaps a return to a condition much like today’s, in which the high end will remain a tougher sell, the rest of the market will find its buyers more easily and Bergen will continue to entice with its good schools, easy commute and fine homes in every sector. Amsel notes that businesses are beginning to open up again in Wuhan, China, the epicenter of the outbreak, which he takes as a positive sign. And, says Rowan: “Bergen County has always had strong housing, and that’s going to continue.”

‘CHARM CITY’ CHARMER
Baltimore’s coziest luxe hotel, The Ivy, part of the Relais & Châteaux “family,” feels homey in a way that home itself can’t quite match. By Rita Guarna
Tell friends you’re spending a weekend in Baltimore and they may wonder why you’re visiting the poor cousin of “richer” New York, Philly or D.C. But this historic city is full of delights for the visitor. And if you hang your hat at The Ivy Hotel, you’ll feel like you’re visiting wealthy kin of your own. The only Relais & Châteaux hotel in Maryland, this restored 1890s red-brick brownstone stands proud in the historic Mount Vernon neighborhood and strikes the perfect balance when it comes to service: impeccable, yet discreet. Think of this as a relative’s country “house” in the city. There is no check-in desk. Instead, a driver (yes, we were met at the train station and whisked to the hotel) drops you off at the entrance, where we were escorted through a small lower lobby into the elevator and up to the conservatory. There Simon, one of two concierges on call during our stay, greeted us and offered glasses of Champagne and a tour of the property. (“Yes, please!”—on both counts.) In the conservatory we were regaled with tales of the place. A beautifully restored piano, for example, belonged to the heirs of the original owners and is often used. From there, we ambled past the mansion bar, where guests are encouraged to pour their own classic cocktails (there are recipe books there too, should you need inspiration), then into the tea room, library and game room. The home—er, hotel—is full of antique furnishings, including an 1880s billiards table, Tiffany glass windows and vintage books in several nooks with oversize armchairs. A beautiful 1930s globe caught my attention, and it was only the promise of high tea that lured me away. Comfy velour couches, roaring fires
and floor-to-ceiling murals invited us to relax. And relax we did. Here it’s easy to revive the endangered art of conversation while munching on finger sandwiches and scones. When I remarked to my companion that no one in the room appeared to be glued to his or her phone, one of the servers nearby smiled and said, “There’s no IT at high tea.” Indeed. Sated, we climbed to the third floor to check out our suite—No. 9. The hotel offers 18 guest quarters: nine suites and nine rooms, ranging from 285 square feet to 985, each with a fireplace, an oversized bathroom and a one-of-a-kind armoire-cummini bar, designed by local art students. Our room featured a four-poster bed, a heated limestone floor in the bathroom, double vanities and a giant soaking tub. Everything in the mini bar, including local beers, wine and snacks (Old Bay chips, anyone?) is included in the hotel’s rate. So are afternoon tea, internet, on-demand movies, car service (within city limits) and breakfast. It would have been easy to settle in and simply relax with a good book or two or three, but “Charm City” awaited. And did you know that in the mid-19th century this—not Philadelphia, Boston or Chicago— was America’s second-largest city? Given the reputation of Baltimore (“Bawlmer,” if you speak the local dialect) as an important old-time port town, we decided to set sail on a boat tour courtesy of Art’s Cruises. Viewing the Inner Harbor from the waterside was fun, and we caught glimpses of Fort McHenry (where Francis Scott Key penned “The Star-Spangled Banner”), the U.S.S. Constellation and the somewhat cheesy characters aboard a ship flying pirate flags. We opted to skip the National Aquarium, one
of the largest in the U.S., and instead, once back on land, visited the Baltimore Museum of Art. It houses the world’s largest collection of Matisse works in a public museum and a contemporary sculpture garden amid three landscaped acres. Back “home,” we joined a group at a Champagne soirée, the bubbly paired with its classic 19th century companion: oysters. Executive Chef Mark Levy, a Briton formerly at the helm of the five-star The Point in the Adirondacks, yearned to keep his oysters ice-cold and wanted them passed around like other hors d’oeuvres. One member of his creative team fashioned a leather and steel contraption, and the roaming oyster bar was born, with a young man, Devon, shucking while chatting up guests. Speaking of food, Levy serves up a varied menu for guests and locals alike at Magdalena, the hotel’s 75-seat bistro. Here you’ll find something for everyone: macand-cheese fritters for the ironic highbrow, a saddle of Colorado lamb and a caviar service for the hungry masses. There’s a nod to local fare with oysters, crabs (of course), cod and rockfish. We sat outside in a beautiful backyard courtyard, but other options included the wine cellar (the restaurant has an extensive wine and whiskey list), the treasury in the home’s former vault and an upper area with small booths. Unlike dinner, breakfast is a guests-only affair, and it’s grand. Choose a madeto-order omelet or more elaborate eggs Benedict, waffles or the signature lemon soufflé pancakes. (They’re to die for.) With full bellies and promises to return, we bade concierge James a fond farewell as he summoned our driver.
Opposite page, clockwise from top: Suite Seven at The Ivy Hotel includes mirrored closet doors, a living room, two fireplaces and a bathroom with dual vanities, soaking tub and separate shower; choosing the best seat in the house for afternoon tea isn’t difficult—each one in the living room, library or conservatory is as good as the next; local seafood is abundant at Magdalena, the hotel’s 75-seat restaurant; visitors can enjoy morning coffee and evening cocktails in the inviting courtyard.

MANGO AND COCONUT CREAM TARTLETS
BASE RECIPE
Yields 40 cups
INGREDIENTS
n ½ prepared sweet shortcrust pastry (see recipe at right) FOR THE FILLING: n 3½ oz. cream cheese, at room temperature n 3½ Tbs. coconut milk n 2¼ Tbs. powdered sugar, sifted n ½ tsp. vanilla bean paste FOR THE FRUIT LAYER: n 1 ripe mango, peeled, stoned and diced n pulp of 1 passion fruit n juice of 1 lime n black seedless grapes, thinly sliced n coriander flower and micro leaves, for garnish (optional)
DIRECTIONS
Make the pastry following the recipe at right. After resting, line petit four tins. As the tins are so small, the pastry will need to be rolled as thinly as possible—the easiest way to do this is with a pasta machine, rolling the dough through a thin setting. Cut circles from the pastry using a round cutter slightly larger than the molds, then cut the excess by turning each over and pushing down on the work surface, which will trim the excess pastry, leaving a neat and tidy edge. For blind baking, cut squares of kitchen foil a little bigger than each tin. Cover the pastry with it and manipulate the foil into the base and sides of each. Fill the foil-topped pastry cases with dried rice or lentils, place on a baking tray and chill in the fridge for 15 minutes. Preheat oven to 350°F then bake the tartlets for 5 minutes, after which time lift and remove the rice and foil, then prick the base of each case with a fork. Return to the oven, uncovered, for 5 more minutes. As the pastry is thin and the surface area so small, they will bake very quickly and can burn easily, so be vigilant. When done, remove from the tins and transfer to a wire rack to cool. Store safely in an airtight container until needed. To make the filling, whip together the cream cheese, coconut milk, powdered sugar and vanilla to a yogurt-like consistency. Transfer to a piping bag and leave in the fridge until needed. Place the mango in a bowl with the passion fruit pulp and squeeze in the lime juice, mixing well. Half-fill each of the prepared pastry cases with the coconut cream, then top each with some fruit. Add some grapes, a coriander flower, a micro leaf or both to each. This not only adds décor, but the flavor works beautifully with the fruits. Finish by highlighting each tartlet with tiny dots of any remaining coconut cream.

SWEET SHORTCRUST PASTRY Yields 1 serving
INGREDIENTS
n 1¾ cups all-purpose flour n ½ cup plus 1 Tbs. cold, unsalted butter cut into cubes n heaping 1/3 cup powdered sugar n 1 egg yolk n 2 Tbs. milk
DIRECTIONS
Place the flour and butter into the bowl of a stand mixer and attach the paddle beater. Mix on a medium speed until the butter has been incorporated into the flour and resembles fine breadcrumbs. Add the powdered sugar and mix for a few seconds before adding the egg yolk and milk. Continue to mix until a cohesive dough forms—this should only take 30-60 seconds, depending on your mixer. Turn out the pastry onto a work surface (there’s no need for more flour) and bring it swiftly together with your hands without overworking it. Lay out a long sheet of cling film and place the dough on one half. Flatten the pastry with the palms of your hands, then fold over the remaining cling film over the top, fully encasing the dough. Roll out swiftly between the cling film to an approximate depth of ¼ inch, trying your best to keep it in a circular shape. Place in the fridge for at least an hour before using. After resting, roll out between two sheets of non-stick baking paper and use according to the recipe’s instructions at left.

CHOCOLATE, PECAN AND BRAZIL NUT BARS Yields 12
INGREDIENTS
n ½ prepared sweet shortcrust pastry (see recipe on page 67) n 1½ Tbs. salted butter n 1¾ oz. golden syrup n 1½ oz. maple syrup n 1¾ oz. dark chocolate, broken into chunks n ¼ cup soft light brown sugar n 1 tsp. vanilla bean paste n 1 Tbs. all-purpose flour n 2 eggs n 3½ oz. whole pecan nuts, toasted (24 left whole, the remaining chopped) n 2 oz. brazil nuts, toasted and chopped
DIRECTIONS
Make the pastry following the recipe on page 67. After resting, line, blind bake and trim a pastry case. Keep the pastry case within the tin until needed. Preheat the oven to 300°F. Meanwhile, make the filling. Set a heatproof bowl on top of a pan of simmering water, making sure that the base of the bowl isn’t touching the water, and add the butter, syrups, chocolate and sugar to it. Let the rising heat slowly melt everything together, stirring every so often. Remove from the heat, then stir through the vanilla and flour, then add the eggs—one at a time, giving a good stir in between each addition. Tip in the chopped nuts, give one final mix and pour into the pre-baked pastry case. Top decoratively with whole pecans. Bake for 25 minutes. When done the filling should have a slight wobble toward the center, which sets fully when cooling. If needed, bake for longer, checking again after 5 minutes. Allow to cool completely before removing from the tin. Slice the very ends from two adjacent slides and slice equally into bars. Those could then be halved or quartered for smaller portions.

APPLE ROSE TART Yields 9 servings
INGREDIENTS
n 1 prepared sweet shortcrust pastry (see recipe on page 67) FOR THE FRANGIPANE n 1/3 cup unsalted butter, at room temperature n 6 Tbs. caster sugar n 1¼ oz. ground hazelnuts n 1½ oz. ground almonds n 2¾ oz. eggs, lightly beaten FOR THE APPLES n juice of 2 large lemons n1 2 dessert apples, mixed in variety and color n 1/3 cup plus 1 Tbs. water n ¼ cup caster sugar n ½ tsp. ground cinnamon n 1 egg yolk n boiling water nb lueberries and cherries, to garnish (optional) n caster sugar n powdered sugar
DIRECTIONS
Make the pastry following the recipe on page 67. After resting, line, blind bake and trim a pastry case and leave within the tin for later. Any spare pastry can be cut into shapes and used to make decorative flourishes. To make the frangipane, place the soft butter into the bowl of a stand mixer along with the caster sugar. Attach the paddle and beat for 1 minute until creamed. Add the nuts and eggs alternatively in three consecutive bursts, beating continuously between additions. When all of the ingredients are well combined, spread the frangipane evenly across the prepared pastry case. Set aside. Next, start on the apples. Half-fill a medium saucepan with water and squeeze in the juice of 1 lemon. Bring to a gentle simmer. Add the juice of the other lemon to a bowl of cold water. Core four of the apples and cut them in half vertically. Slice each apple half across its width as thinly as possible—using a mandoline will give consistently even slices. Submerge the slices in the simmering water for a few minutes to soften, testing after 1 minute and every 30 seconds thereafter. To test, bend and roll a slice between your fingers; if it cracks, wait another 30 seconds, then re-test. When ready, the slices will be soft and pliable. Transfer to the cold water using a slotted spoon. To make a rose, use up to eight slices of apple at one time. Lay on a tea towel, skin facing upward, laying left to right and overlapping each slice by half. Roll up starting at the left-hand side, gently working the apple slices into a complete roll. Place into the frangipane, then ease open to create the look of a blooming rose. When all of the apple slices have been used, repeat the slicing and softening process with another batch of apples and repeat until enough roses have been made to cover the surface. Any gaps can be filled with single apple slices tightly rolled in between and, if using, additional fruits can be added too, as can pastry shapes. When finished decorating, make the syrup by first boiling the water, sugar and ground cinnamon together until reduced and thickened. Allow to cool for 5 minutes, then carefully brush over the apple flesh. Place in the fridge for at least an hour. Place a baking sheet in the oven and preheat to 325°F. If pastry décor has been used, brush the pastry carefully with egg wash (to make: combine 1 egg yolk with boiling water). Sprinkle the tart with a fine dusting of caster sugar, cover with kitchen foil and place in the oven. Baking the tart under foil can take up to 2 hours, but it is worth it, the color of the fruit will hold better and the flavor will intensify significantly. Check the tart after 1 hour, then every 20 minutes thereafter, removing the foil for the final 20 minutes of baking. Allow to cool for 15 minutes before removing from the tin and slicing. Dust with a little powdered sugar and serve with or without cream.

BERGEN COUNTY’S
TOP REAL ESTATE AGENTS
2020 BERGEN COUNTY IS HOME TO SOME OF THE MOST SEASONED AND TALENTED REAL ESTATE PROFESSIONALS IN THE COUNTRY. To help readers find the best agents to work with, BERGEN magazine contracted DataJoe Research of Boulder, Colorado to facilitate a multi-faceted research campaign. It consisted of an online survey delivered directly to agents across Bergen County via email as well as internet research. In the survey, real estate agents were asked to provide sales volume ranges and also nominate their peers. In the Internet campaign, DataJoe consulted a variety of websites to build richer knowledge of individual licensed real estate agents across the country. DataJoe checked and confirmed that each published winner had, at the time of review, a current, active license status with the appropriate state regulatory board. If they were not able to find evidence of a real estate agent’s current, active registration with the state regulatory board, that real estate agent was excluded from the list. Finally, DataJoe presented the tallied results to BERGEN magazine for final review. We recognize that there are many good real estate agents who are not shown on the representative list. This is only a sampling of the huge array of talented professionals within the county

It’s safe to say that’s when Jeana’s thriving career in sales actually began. Today Jeana prides herself on selling over 850 homes, with 350+ alone in Paramus. { POWER FOOD }
Go Bananas!
Yes, you don’t know this ubiquitous yellow fruit as well as you think.
They’re a synonym for crazy. A Woody Allen movie. A Freudian symbol. Their peel is the perfect pratfall prop. In a 1920s novelty song, they’re what merchants happily declare that yes, they have none of. And bananas are also one thing more: a superfood. This familiar yellow fruit is handy, tasty and packed with nutrients. No wonder the average American eats 11.4 pounds of bananas each year. Thought to have been first cultivated in Papua, New Guinea, more than 7,000 years ago, the banana is the planet’s most-consumed fruit if you class the tomato as a vegetable. Strange as it may sound, botanists consider the banana a berry. It doesn’t grow on trees, but on large plants, which have no woody trunk. A cousin to ginger and cardamom, bananas are in the Musaceae family of flowering plants native to Old World tropics. What you’re likely to toss in the lunch bag or use to refuel after a run is the Cavendish variety, descended from Derbyshire, England. Its days may be numbered, but for now, the Cavendish is resistant to the root-attacking Panama disease, which destroyed the Gros Michel banana, and its survival is good news for all who crave ready-to-go nutrition. POWER UP Bananas are rich in potassium, magnesium, pectin (a form of fiber) and vitamins C and B6. One medium-ripe banana has 1 gram of protein, 28 grams of carbs, 15 grams of sugar, 3 grams of fiber and 450 milligrams of potassium. The yellow variety may be sweet enough to be part of your dessert, but with an average of 110 calories per fruit, it can actually help you shed pounds. Not only do bananas provide close to 10 percent of your daily fiber requirements, you see, but they can also fill you up while satisfying your sweet tooth. (If you team yours up with ice cream for an indulgent banana split, however, don’t blame the fruit for your sinful ways!) Because bananas are high in potassium, an important mineral and electrolyte, they promote cardiovascular health, reduce the risk of high blood pressure and stroke, and may revive you after a workout better than a sports drink. They can fight depression and promote restful sleep with high levels of tryptophan. They are also part of the BRAT (bananas, rice, applesauce, toast) diet doctors sometimes prescribe for upset stomach. Bananas also help reduce swelling, help prevent Type 2 diabetes, provide antioxidants, boost the nervous system and enhance the power of white blood cells. They’re a good source of vitamin C, which may help prevent certain cancers; vitamin A for better vision; manganese for skin; and calcium for strong bones. There can always be too much of a good thing, however; bananas should not be eaten to excess to avoid potassium overload and other health dangers. BUY/STORE/SERVE The best bananas at the market are those with a green tinge on the tip and stem. Look for fruit that are firm and not bruised. Bananas ripen after harvesting and will continue to ripen on your counter at room temps, preferably away from direct sunlight. Can’t wait? Bananas will get there faster in a brown paper bag or near other ripe fruit, which emit
DID YOU KNOW? India and China are the leading exporters of bananas.
BERGENMAG.COM
ethylene gas that promotes ripening. Now for the fun part. Bananas can be simply peeled and eaten in the no-frills approach, but they also can be added to a fruit smoothie, sliced over cereal or yogurt and sprinkled into fruit salad with a little bit of lemon squeezed on top to preserve color. Get creative with frozen bananas on a popsicle stick or heart-conscious by mashing bananas into a tasty, no-fat butter substitute. Think brown-peel bananas should go straight in the trash? Think again! They won’t win a culinary beauty contest, but the pulp inside these bananas can make scrumptious banana bread, muffins, cream pie or pudding. —Donna Rolando

For the cocktail ■ 1½ oz. gin ■ ½ oz. chamomile syrup ■ ½ oz. lemon juice ■ ¼ oz. elderflower liqueur ■ 1 tsp. lemon curd ■ 1 tsp. greek yogurt ■ 1 egg white ■ fresh chamomile flowers, to garnish For the chamomile syrup ■ ½ cup sugar ■ ½ cup water ■ 2 Tbs. dried chamomile flowers For the lemon curd ■ ½ cup lemon juice ■ 2 tsp. lemon zest ■ ½ cup sugar ■ 3 eggs ■ 6 Tbs. butter, cut into small cubes
INSTRUCTIONS
■ For the lemon curd, whisk together lemon juice, lemon zest, sugar and eggs in a heavy saucepan. Whisk in the butter and cook on medium-low heat. Whisk constantly until the curd is thick and the first bubbles appear on the surface, about 6-8 minutes. Transfer the curd to a bowl and chill until cold, at least one hour. ■ For the chamomile syrup, add sugar and water to a medium saucepan and cook over medium heat until the sugar has completely dissolved. Add the chamomile, remove from heat and let steep while the syrup cools
to room temperature, about 15 minutes. Strain through a fine mesh strainer and store in the refrigerator for up to two weeks.
For those skittish about a raw egg white in their drink, you can substitute it for aquafaba, or chickpea water, which serves the same function. I would pair this cocktail with a light salmon tartare on the first warm days of spring.”
■ Add the egg white, gin, chamomile syrup, lemon juice, elderflower liqueur, yogurt and lemon curd, and dry shake (without ice) to combine. Fill shaker with ice and shake vigorously. Double strain into a chilled coupe glass and garnish with fresh chamomile flowers.

If you’re feeling shooting pain from your buttocks down into your thigh and leg, you may have sciatica. Sciatica pain can restrict your lifestyle because it’s an irritation and inflammation of the largest nerve of your body. The sciatic nerve controls several leg muscles and it supplies sensation to most of your leg. However, it’s a misconception that sciatica is the problem. Sciatic pain is just a symptom of an underlying condition. It’s critical to find and address the cause of your sciatic pain. Many people seek chiropractic care for diagnosis and sciatic pain relief. Chiropractic care is designed to alleviate spinal misalignment that often causes sciatica. As highly-trained, highlyspecialized chiropractic physicians, we offer safe, effective drug-free and surgery-free treatment for back pain and spine issues. For sciatic pain, we’ll most often use a hands on technique, combined with spinal decompression, massage and stretching. Home care recommendations also speed up the recovery of sciatic pain. Call for an appointment and take control of your health.

I’m losing my hair. What can I do about it? You are not alone. Over 50 million people in the United States are affected by hair loss, men and women alike. The good news is that due to recent advances in medicine and technology, hair loss is becoming a thing of the past! At Contemporary Hair Transplant (CHT), we offer all of the latest and most effective treatment options for hair restoration. Through the years, we have developed an innovative, multi-modal approach to treating hair loss. Through our unique approach, our patients can achieve unbelievably natural-looking results. We take care to address our patients’ concerns while still respecting their budget and lifestyle. “My first goal as a medical provider is to save the hair you have! We typically achieve this through the use of various non-surgical treatments that work in a synergetic way”, says Dr. Bastidas, a Board Certified Plastic Surgeon and Member of the International Society of Hair Restoration (ISHRS). Depending upon the severity of hair loss, this could include oral and topical medications, nutritional supplements, Laser Light Therapy and Platelet Rich Plasma (PRP) treatments. “We call this regimen our Power Pack. This approach can lead to great results when done properly and under medical guidance.” For those who have advanced hair loss, CHT offers solutions for getting that hair back! This typically includes hair transplantation procedures. We specialize in achieving that perfect hairline and restoring the hair density you never thought could be possible! Our patients look years younger and enjoy renewed confidence in both their personal and professional lives. One thing we understand at Contemporary Hair is that every patient who walks through the door has different concerns, so the treatment plans we design are highly tailored to their needs. Although our team has a combined experience of over 40 years in hair restoration, we never take for granted the special role we play in transforming people’s lives. Dr. Bastidas smiles when he says, “We absolutely relish the follow-up appointments when patients are overjoyed about their hair. It is truly a win-win!”

What causes teeth to crack? It’s important to handle a crack in a tooth even if you don’t feel any symptoms. Bacteria can get into a crack in a tooth which could eventually result in a compromised nerve that leads to root canal. A dentist may see a crack or you may be aware of one because of pain when chewing, biting down or feeling increased sensitivities to temperature. Shallow cracks are called craze lines (vertical lines on your tooth), and they’re cosmetic imperfections that affect the outer enamel of your tooth. A true crack goes through the enamel and is much more serious. It’s critical to protect the crack and to figure out what caused it to happen. Cracks can happen to teeth for a number of reasons. Your bite might not be in proper alignment or you could have old fillings that are deteriorating and causing trauma to a tooth. Another major reason your teeth may have cracks is because it’s being traumatized from teeth-grinding that’s also creating additional wear on your tooth. The pressure of the grinding could cause a crack. The reason you may be grinding your teeth could be because your bite may not be balanced, which needs to be addressed. This unbalanced bite can lead to a disorder of the TMJ. TMJ (Temporomandibular Joint) refers to the joint that connects the lower jaw to the skull. My comprehensive practice integrates general, restorative and cosmetic dentistry with a special focus on treating TMJ disorders as one of the many causes of orofacial pain, which may include pain due to a crack in a tooth. From a simple filling to a full mouth esthetic smile design, it’s important to bring harmony to the bite. Balancing a bite is key to your dental health, as well as to your overall, general health.

Feeling safe is crucial to independence. Awareness of your surroundings and environment provides much needed comfort and a sense of security as you continue to go about your daily life. Often times older adults are living alone; it is vital to ensure you are able to hear what is going on around you in case of an emergency. Missing an alert such as a fire alarm or a doorbell could potentially have disastrous life altering effects. Two of the main safety issues our patients wish us to address FIRST are falls and safe driving as both are key in maintaining independence and overall psychosocial well-being. Falls are not a normal part of the aging process. Many factors can contribute to falls; hearing loss has been linked to an increase in fall rates in older adults and is one of the main reasons we are committed to our continuing community education series on hearing loss in and around
the county. Having an annual hearing assessment is key to identifying the potential issue and intervening before a problem arises. Safe driving is an integral part of maintaining independence. It is imperative that you are aware of your surroundings while driving being confident in not only your vision, but your hearing as well. In order to properly operate a vehicle and prevent a potential issue you must be able to see and hear other drivers and pedestrians surrounding you. Outings we feel often are a nuisance are missed once removed and we no longer have the ability to drive. People tend to feel more isolated and often become disheartened by having to depend on loved ones. Maintaining independence through hearing help is a primary focus of our practice. Let us help you on your journey to a lifetime of better hearing!

What is a Periodontist? A periodontist is a specialist in the diagnosis, treatment and prevention of diseases that affect gums and supporting bones of the teeth. Your general dentist may refer you to a periodontist if it’s determined further specialized treatment is needed when disease is present. In addition, periodontists specialize in the surgical placement of dental implants when teeth are lost due to gum disease or other tooth traumas. A highly-trained periodontist can correct a gummy smile, gum recession or other non-disease complications with surgical and non-surgical techniques. Working closely with general dentists and other dental specialists, my team and I are dedicated to improving the overall health and aesthetics of every patient’s beautiful smile.
Can my teeth be saved if my gums are damaged? Depending on the severity and progression of a person’s periodontal condition, multiple treatment options are available to restore your natural teeth, supporting soft tissue and bone back to health. Bleeding gums, periodontal pockets, bone loss and loose teeth caused by gum disease may be fully treatable with non-surgical or surgical treatments. Our office offers a more effective method of treating gum disease using LANAP laser surgical technique. A high-energy thin laser fiber is inserted into the periodontal pockets killing bad bacteria and eliminating diseased tissue in a less invasive manner. Two weeks after surgery, our patients are very pleased when their gums have returned to a healthy pink and perio pocketing has substantially decreased. If full-mouth restoration is necessary, we offer the option of staged implant restorations (one at a time). Whether we’re able to keep your natural teeth using our state-of-the-art surgical techniques or replace hopeless teeth with dental implants or a full-mouth restoration, we’ll work with you to provide the best options possible.
Can I get an implant if I don’t have much bone left? The short answer is yes! Ninety-nine percent of the time a skillful surgeon is able to regenerate lost bone that’s strong enough for the placement and support of a dental implant. In the upper back teeth area, the sinus floor may prohibit the placement of a dental implant unless bone is first regenerated or grafted into the sinus floor. This procedure, sinus grafting or sinus lift, allows for an implant to be surgically placed into the grafted area after several months of healing time has accrued.
Richard H. Shin, D.D.S. Dr. Richard Shin opened Alpine Periodontics & Dental Implant in 2003. Dr. Shin is a specialist in treating periodontal and gum disease and in the placement of dental implants. He’s been in practice for 20 years and has performed more than 30,000 surgical procedures. After graduating from New York School of Dentistry and completing his residency requirements at Kings County Hospital in Brooklyn, Dr. Shin completed a specialty program at NYU and achieved board certification in Periodontology in 2003. For more than 15 years he’s taught new dentists, most currently at NYU Dental School. RESTAURANT REVIEW:
Hot Fish
Interior: photo courtesy of Hot Fish; food by Darius Amos
Hackensack’s new Chinese eatery goes beyond the usual comfort classics. Two things all but define the Chinese food industry in the states: First there’s the convenience of delivery and takeout (as well as those classic to-go cartons), and then there’s the cuisine itself. Staples like lo mein and fried rice accompany nearly every fun-named entrée that makes its way to the table—Dragon and Phoenix, Happy Family, General Tso. We know, of course, that these favorites make up a small sampling—and are Americanized versions—of authentic Chinese dishes. I’d be lying if I said I am above a takeout kitchen; who doesn’t love a good chicken-and-broccoli combo, right? But sometimes, my Asian taste buds want something real and beg me to seek out one of the hidden dining halls concealed behind a Chinatown storefront. Fortunately, traveling across the river for a Chinese culinary adventure is optional now that Hot Fish has opened in Hackensack. The first thing to know about Hot Fish is you won’t find many garden variety choices like pu-pu platter, egg foo young or sesame chicken on the menu. The restaurant specializes in Szechuan cooking, a style that uses mouth-numbing spices and peppers mixed with the natural flavors of meat and seafood. (In case you’re wondering, most takeout joints offer Cantonese dishes.) Eating here is an experience, and it starts with the appetizers, which range from pork wontons to beef tendons and tripe. From a list of more than a dozen variations of dumplings, my friend selected the steamed pork variety. (They’re not as basic as they sound—trust me!) Larger than dimsum but a tad smaller than Filipino siopao, each palm-sized, doughy bun is filled with a piping hot pork meatball that’s a meal in itself. Our second appetizer was Chongqing noodles, a fiercely spicy and aromatic dish made with thick cold jelly noodles. Assorted soups, stir-fries, veggies and meat dishes are offered as entrées (there’s even a familiar kung pao chicken), and a madeto-order grilled fish option is available for those wanting a whole tilapia, striped bass or other seasonal choice. My friend and I did find one of our favorites—eggplant with garlic sauce—and shared it. Cooked with chili oil, Hot Fish’s version of this classic has more kick to it than ones prepared at the typical corner takeout spot. It paired nicely with our second entrée, sizzling tofu with seafood. As the name suggests, this plate comes out sizzling (like the fajitas at a Mexican restaurant). But even better than the presentation is the taste—the tofu picks up the powerful, but not overwhelming, flavors of the broth, chili oil and seafood medley. For a little twist, we ordered a third shared dish: spicy frog dry pot. Unlike frog legs, the meat in this plate doesn’t resemble the amphibious creature. Bitesized morsels of tender frog (bone-in) are stir-fried with a variety of vegetables, peppers and other spices to create one of the most memorable dishes I’ve ever tried. From the first-class service to the satisfying cuisine, our entire trip to Hot Fish was something to be remembered. And the restaurant won’t forget us either: The staff politely takes a Polaroid of each table and displays the photos near the front door as a thank you to every customer. —Darius Amos Hot Fish, 450 Hackensack Ave., Suite 6, Hackensack, 201.881.0180, hotfishhackensack.com

“Attending the ‘Chicks and Bunnies’ event at Abma’s Farm in Wyckoff was a great experience for children like my daughter Kira, pictured here, and my son to interact with and get an up-close look at some adorable baby animals. We went for the first time last April and we’ve already planned our trip back for this year*—and it’s becoming an annual Easter tradition for us! My kids love animals and the outdoors, so they’re looking forward to paying another visit to their furry friends.” —Jennifer Hill, Mahwah
