Find Joy Winter is upon us, and with it usually come the cheer and warmth of the holiday season. Of course, this warmth is accompanied by the bitter cold of plunging temperatures. And it’s true that the 2020 season will be like no other as you whittle the guest list down to a precious few family members and close friends and postpone—yet again—plans to visit places near and far either with or to see loved ones. But before you curse the frigid air and the resurgence of COVID-19, consider how good you’ve become at making the best of this new reality. In that spirit, let’s consider some of winter’s unique joys. For the gourmet among us, winter’s chill often inspires a flurry of baking. The three French-inspired desserts featured in “Crowd Pleasers” are easy to make and will bring warmth to your body and soul. See the recipes on page 72. For those who love to entertain, the holidays are prime time to showcase your creativity. The holiday meal, even if served to fewer, is often the centerpiece of the season’s festivities; how you choose to adorn your table will set the mood for your whole gathering. Whether you’re gathering with family in the dining room or bundling up with buddies by the outdoor firepit, your décor can boost everyone’s spirit. In “Winter Fun, 5 Ways” on page 70, we offer a handful of exciting winter pastimes that don’t require slopes, sleds or a trip across the country. Finally, for those who simply want to cocoon in their home and who love nothing more than curling up in a blanket with a little reading material, we present this issue of BERGEN. THAT’S A WRAP At holiday time, some of us thank our lucky stars for gift bags and complimentary in-store wrapping. Others see personal gift wrapping as part of what they’re giving— even if they’re not experts. Choosing and matching paper and ribbon and trying to ensure straight cuts, uniform folds and sharp, clean corners is an annual ritual that adds to the season’s beauty. And now there’s help: four “C” ideas and the assistance of Tony Damiano of Mango Interiors in Ridgewood: Choose a palette: Keep your colors to a minimum (two or three max) and use the scheme for wrapping paper, ribbons, bows and other additions. Damiano suggests burlap for a rustic look, or satin for something more glitzy. Green and red, of course, are traditional Christmas colors, while blue is Hanukkah’s hue, but you’d be surprised how an unexpected color can liven things up. Coordinate: When you’re giving someone multiple gifts, especially when they’re in varied box sizes, mix and match with coordinating paper. Think about using a simple plaid design with even simpler brown paper; it gives a rustic yet elegant look. Chalk it up: The pandemic brought chalk art to life this summer; why not use that theme now? Black craft paper and white markers will create a chalkboard effect, and you can personalize the paper with your own design or message. Color it on: A present wrapped in brown paper with a painted-on ribbon and bow? There’s a visual double-take inducer that gives your artistic creativity free rein. (Maybe you’ve opted for it because you’re tired of wrestling with ribbon, but who’s to know?)

Dog: Charlie, 4-year-old Yorkshire terrier Owners: The Martinez family of Waldwick As their teenage sons Brandon and Jared grew older and more independent, Amy and Wilfredo Martinez felt something was missing in their home. That’s when they fell in love with Charlie, a puppy found through a New York City friend of Wilfredo’s. “It was love at first sight,” Amy recalls. “He was extremely playful and loving.” The pooch easily made himself a part of the Martinez clan. But before you invite the extended family to your home, we recommend that you read up on the protocols and make an informed decision. These principles from the Centers for Disease Control and Prevention are a good starting point: • More risk: Smaller outdoor and in-person gatherings in which individuals from different households remain spaced at least 6 feet apart, wear masks, do not share objects and come from the same local community, town, city or county. • Higher risk: Medium-sized in-person gatherings that are adapted to allow individuals to remain spaced at least 6 feet apart and with attendees coming from outside the local area. • Highest risk: Large in-person gatherings where it is difficult for individuals to remain spaced at least 6 feet apart and attendees travel from outside the local area.

Focus the camera so the background isn’t as clear as the subject, Galardi says. “Look for a portrait setting if you’re on manual mode, or put it on automatic if you’re unsure.” Prop it up: It’s the holidays, so set the scene with items like blankets, hot chocolate mugs and reindeer antlers. Photos can be digitally enhanced to incorporate things like snow and stars. Personality plus: Everyone loves smiling faces, but emotion can be memorable. Laughing kids, surprised parents, howling dogs—these can make your card stand out from the rest. Wear it well: You’re set if your family decides to wear Santa outfits or all-blue pajamas: These make for great and awkward (in a good way) shots. If you’re going more traditional, be sure people’s outfits are complementary. If everyone else is dressed up, make sure Johnny isn’t wearing sweatpants.

POINSETTIA POINTERS Even if you are downsizing your Christmas festivities this year, you can still go all out on decorations. And what’s holiday décor without the poinsettia? BERGEN asked John Kosakowski, owner of Bill O’Shea’s Florist in Hasbrouck Heights, to share poinsettia pointers: • Look for lush leaves and full color. When shopping for poinsettias at a market, you’ll want to take home ones with hearty green leaves that have already bloomed and are full in red color, says Kosakowski. • Give them appropriate sunlight. Poinsettias are indoor plants because they are tropical by nature. “They like bright light but not direct sunlight because they’re already in bloom,” he says. Do not position yours in extremely hot or extremely cold parts of a room—by a radiator or a drafty window, for instance. • Arrange them as your holiday centerpiece. Buy shorter poinsettias if you wish to place them in the middle of the table. They also look nice “clustered together in smaller pots down the center of a rectangle or oval table,” our expert says. Poinsettias pair well with the bold amaryllis flower or a Christmas cactus. • Water them weekly. These plants like to be moist but not wet, so Kosakowski recommends watering every seven days, and placing a saucer underneath to avoid water damage to furniture. With the tips above, expect these red beauties to last you well into the new year!

YOUR PHONE’S A VIRUS FIGHTER Unveiled this fall, the state Department of Health’s COVID app offers useful info such as reopening updates, coronavirus metrics and a symptom-tracking tool. It also has the ability—if you enable the feature—to alert you if other users in your proximity have tested positive for COVID-19, and vice versa. The state says names and exact locations are never disclosed. “It’s scary to think that an app can alert others if you’ve tested positive,” Hackensack resident Kristy Lieberman says. “But that’s information I know I would like to have. If anything, it’ll serve as a reminder to mask up and keep my social distance. I’ll consider downloading it.” COVID Alert NJ is compatible with Android and iOS devices. During Holy Name Medical Center’s peak COVID-19 response, the nurses’ expertise, ingenuity, and patient advocacy saved many lives and safeguarded the rest of the staff. What were some of the innovative ways nurses did this? Our frontline Magnet nurses, nursing leadership, and nurse-educators of the Institute for Clinical Simulation combined their best practices in patient care with their unique creativity to collaborate with our facilities staff in planning, designing, and retrofitting our medical center to handle patient surge and to isolate COVID-positive patients. Nurses’ input and beta-testing were crucial in the construction of five new ICUs containing 75 beds within three weeks. Our nurses were the driving force behind an ingenious decision to place IV pumps, ventilators, monitors, and medical computers outside patient rooms, which saved PPE and enabled nurses to treat and monitor their patients safely

outside rooms. Our nurses also partnered with facilities and other teams to plan and test 250 patent-pending negative-pressure isopods to protect COVID patients and staff.

Holy Name’s Sister Claire Tynan School of Nursing experienced a 90% uptick in applications for the 2020/2021 academic year. To what do you attribute this? The COVID pandemic has surely been a part of this interest, as potential nurses realize they may have a calling to be a part of the solution. Nursing is an incredibly rewarding profession, and offers numerous opportunities in direct patient care, community health, healthcare management, and education, just to name a few across all industries. In 2020, the International Year of the Nurse, Americans named nursing as the “most ethical and honest profession” for the 18th consecutive year, according to the Gallup Poll.

What is the future of nursing?

e can all agree that the year 2020 has presented us with countless challenges. The COVID-19 pandemic came upon us like a sudden storm and has been beating down on us for many months. At times, it seemed as if there would be no letting up, and that this was simply going to be our “new normal.” But, through any storm, there’s always a ray of light. That light has been our St. Joseph’s Health nurses. St. Joseph’s has been one of the hardest hit hospitals in the region, caring for 456 hospitalized COVID-19 inpatients during the peak in April. Our nurses were weary and tired, but they pushed through—always living our mission to provide the best care to our patients and their families. Their dedication, expertise, and compassion gave strength to the most vulnerable in our community.

Serving on the frontline of a pandemic is not the first time that St. Joseph’s nurses have demonstrated their excellence. St. Joseph’s University Medical Center, which includes St. Joseph’s Children’s Hospital, has achieved Magnet designation as part of the American Nurses Credentialing Center’s Magnet Recognition Program. efore COVID-19 appeared in our country, the World Health Organization had already designated 2020 to be the ‘International Year of the Nurse’ in honor of the 200th anniversary of Florence Nightingale’s birth. None of us could have predicted the significance the designation would take on as this year unfolded and we found ourselves fighting a pandemic.

Our nurses were able to pivot and adapt to rapidly changing situations and supported innovative solutions such as the expansion of the Medical Center through the efforts of the US Army Corps of Engineers to convert the hospital’s gym into additional patient care space and the creation of two additional patient care ‘annex’ medical facilities to expand Bergen New Bridge’s bed capacity. Embracing change, technology, and innovation were paramount to mitigating the virus.

Paramus-based Bergen New Bridge Medical Center, a clinical affiliate of Rutgers, is both the largest hospital and licensed nursing home in New Jersey and the fourth-largest publicly-owned hospital in the nation. The not-for-profit safety net facility provides high-quality, comprehensive services, including acute and ambulatory care, mental health and substance use disorder treatment, and long term care to the greater Bergen County community. Given its size and diverse service lines, and its dedication to addressing health disparities and providing access to care for underserved populations, the Medical Center has always had a unique appreciation and gratitude for its medical professionals, particularly its nursing staff. Stay-at-home orders during the lockdown played a huge role, but other factors are also speeding up the adoption of telehealth. Historically, there’s been an expectation that patients and physicians need to be physically together in order to get the best possible care. But as technology has become embedded in our daily lives, we’ve become more open to using it for medical care. The development of straightforward apps and videoconferencing tools that make it easy to receive virtual care securely also has increased its use. Another boon to telehealth: the growing number of medical monitoring devices available for home use. These can be used by patients to collect data that’s transmitted to a physician’s office, expanding the usefulness of virtual visits. Examples include blood pressure monitors, blood glucose monitors, pulse oximeters and wireless scales. Virtual visits are popular with patients because they offer many benefits, including the convenience of being seen at home or at the office, which results in very little time away from family responsibilities or work. Being seen virtually also eliminates the need to drive to and from the doctor’s office and spend time in the waiting room.

Given all the advantages, it’s easy to see why this new way of receiving care has taken off. BENEFITS OF VIDEO Being able to see each other offers several advantages that lead most doctors and patients to prefer video visits to phone calls. For example, if a patient has a sore throat, she can show the doctor the back of the throat and tonsils. Problems like cuts, rashes and swollen feet also can be shown. Patients who can’t remember the name of a medication they’re taking can get the bottle and show it to the doctor. In addition, being able to see and read each other’s expressions improves communication and, in some cases, helps doctors assess patient health. It’s important to note that a visit can begin as a video or phone call or an e-visit and then become an in-person appointment if necessary. If you aren’t sure what the best course of action is, call your physician’s office, tell them what’s going on and they’ll help determine the best type of visit. During the early stages of the pandemic, Medicare, Medicaid and many private insurers expanded their coverage for telehealth. The situation is evolving, so check with your carrier, but it’s expected that coverage for telehealth will continue and expand.

TELEHEALTH CHECKLIST

Here are a few things to think about before a virtual appointment: • If you need an interpreter, let your physician’s office know ahead of time. • Be sure the device you’re using (phone, tablet, computer) is fully charged or plugged in. • Make the call from a well-lit, quiet room and turn off other electronics to enhance the quality of the video and audio. • Set your camera at eye level to provide the best view for your healthcare practitioner. • Be aware there may be lag time during your video visit. It’s helpful to pause briefly after your provider speaks before responding. • In advance, write down your symptoms, when they began and how frequent they are, and list any medications you’re taking. • Keep a pen and notepad handy to take notes during the visit.

Our area hospitals make it easy for patients to consult with a doctor without going to a practice in person. Here’s how to book your at-home visit at each one in Bergen County: Bergen New Bridge Medical Center: This Paramusbased hospital’s telehealth service, Bergen New Bridge Cares, was introduced in October 2019, but recently expanded to include COVID-19 urgent-care screening and assessment for patients exhibiting symptoms. Call the hotline at 201.204.0712 to be screened by a nurse, who will then refer you to an infectious disease doctor if need be. Englewood Health: Most physicians in the Englewood Health Physician Network offer telemedicine visits—just call your physician’s office to confirm. Both existing and new patients are welcome. Hackensack Meridian Health: As part of the hospital’s Convenient Care Now program, patients can have a 15-minute call with a doctor on demand for more urgent medical matters, or schedule a future appointment with a primary care physician or specialist. Sign up at convenientcarenow.com to download the app and get started. Holy Name Medical Center: Select a provider within the Holy Name family that is innetwork for your insurance plan. Then, go to northjerseytelemedicine.com to check his or her availability and to book your virtual exam. The Valley Hospital: The Valley Health System has two options for telehealth appointments: On-Demand Urgent Care for non-life-threatening illnesses, and Online VMG Visits with your usual Valley Medical Group provider. Bergenites spent much of 2020 cooped up indoors, riding out the height of the pandemic from the safety of our homes. Now, following a brief warm-weather respite, Quarantine 2.0 looms large as winter makes its return. But if you’re not quite ready to hunker down and hibernate, a little cold and a few snowflakes shouldn’t stop you from enjoying the outdoors. Of course, COVIDrelated orders may cancel many outdoor activities and travel plans, but a plethora of fun and adventure opportunities still awaits—all within driving distance. Here are five easy, inexpensive activities to try:

CAMPING

Fair weather camping is ideal, but pitching a tent when conditions aren’t favorable can make for a more memorable trip. KOA (Kampgrounds of America) operates more than 500 North American campsites year-round, and two nearby locations—East Stroudsburg, Penn., and Plattekill, N.Y.—are popular spots for winter camping. Each is equipped with tent sites for those willing to test their mettle against the elements, but they also include heated cabins for folks who want the “glamping” experience. KOA grounds also feature clean restroom facilities and showers, general stores and firewood delivery.


ICE FISHING

Sure, folks in Minnesota and Wisconsin have been at it for years, but you don’t have to visit Great Lakes country to enjoy this increasingly popular sport. In fact, when conditions are right, anglers of all skill levels can set up their shelters and catch plenty of small- and large-mouth bass at nearby Lake Hopatcong. Members of the lake’s Knee Deep Club (kneedeepclub.org) can provide interested fishermen the scoop on fishing reports, techniques and equipment. According to the Ramsey Outdoor store, a drive north to Lake Champlain or Oneida Lake in the Syracuse, N.Y., region will give ice anglers a shot at hooking walleye, perch and pike, among other species.

ICE SKATING

Social distancing at Rockefeller Center and Bryant Park will likely be a concern this season, but you can avoid the worry and continue your outdoor ice-skating tradition on this side of the river. Though public skating is in question this year at Englewood’s Mackay Park, a session with the family is still possible nearby. Jersey City has a pair of open-air venues, Charlie Heger Ice Rink and Newport Skates, that offer public skating and lessons while ensuring safety for all participants. It’s hard to beat a fall hike— there’s something special about crisp autumn air and dramatic fall colors—but a trek through snowy woods in winter comes close. To experience it properly, though, you’ll want to strap on a pair of snowshoes to your boots. With a quality set of snowshoes, available at stores like Ramsey Outdoor and REI, you can traverse trails and reach destinations you never thought possible without high-stepping through mounds of powder. (You’ll likely still work up a sweat, though.) You can try snowshoeing in your backyard or any public park such as Van Saun in Paramus or Overpeck in Leonia, or head to Bruce Lake in Pennsylvania’s Delaware State Forest on a weekend excursion. The snowshoe trails here are not groomed— motorized vehicles, bikes and other modes of transportation are prohibited—and highlight the forest’s beauty.

CROSS-COUNTRY SKIING

Like snowshoeing, cross-country skiing is allowed in public parks—no chairlifts, no permits needed. On any given snowy day, cross-country skiers will descend on the trails that cut through the woods of Palisades Interstate Park. Families who wish to load up the car for a getaway can escape to South Mountain Reservation in West Orange, which has 19 miles of skiable carriage roads and trails, or the High Point Cross Country Ski Center in Sussex. The latter is dedicated to cross-country skiing, with daily fees to explore the trails, lessons, equipment rentals and more.

MOLTEN CHOCOLATE MUG CAKES Yields: 2 to 3 servings

INGREDIENTS:

n 6 Tbs. unsalted butter, plus more for brushing n ¼ cup all-purpose flour, plus more for dusting n 3½ oz. 70 percent dark chocolate n 3 eggs n ½ cup plus 1 Tbs. granulated sugar n 1 tsp. unsweetened cocoa powder, sifted n 1 Tbs. milk

EQUIPMENT:

n 3 heatproof mugs or cups

DIRECTIONS:

Brush the mugs with butter and dust with flour. Chill for at least one hour before starting the recipe. Using a knife, chop the chocolate. In a medium bowl set over a saucepan of simmering water, melt the chocolate with the butter, stirring occasionally, until smooth and lukewarm. Using a medium bowl and an electric beater, whisk the eggs with the sugar but don’t let the mixture lighten in color. Whisk in the melted chocolate and butter. Whisk in the flour, cocoa powder and milk. Divide the batter among the mugs and chill for at least one hour. The cold batter will cook less in the center, creating a molten texture. Preheat the oven to 400°F. Bake for seven to eight minutes, until the surface starts to crack but the batter remains wobbly below.

Zest one orange and combine it with the other ingredients—the orange will elevate the flavor of the chocolate. You can also smoke the chocolate by putting some in a sifter and burning smoking wood sticks into a sauce pan. Place the sifter on top of the pan and wrap tightly for one hour. JACKY’S COCONUT MACAROONS Yields: approximately 15 macaroons

INGREDIENTS:

n 1 cup unsweetened coconut, shredded n 2 cups granulated sugar n 7 egg whites, lightly beaten n ½ cup all-purpose flour

EQUIPMENT:

n pastry bag, optional

DIRECTIONS:

Preheat the oven to 400°F. Line a baking sheet with parchment paper. In a medium bowl, use a wooden spoon to stir the shredded coconut with the sugar, then beat in the egg whites. Place the bowl over a saucepan of simmering water and heat to 140°F, stirring constantly, until the ingredients form a batter. Remove from heat and stir in the flour. Pipe or spoon large balls onto the baking sheet. Bake for 12 to 15 minutes or until golden, rotating the pan halfway through so the macaroons color evenly. Transfer carefully to a rack to cool.

SPICED BAKED APPLES Yields: 7 servings

INGREDIENTS:

n 7 Golden Delicious apples n juice of 1 lemon n julienned zest and juice of 2 oranges n 2 tsp. vanilla sugar * n 2 pinches nutmeg, freshly grated n 2 pinches pepper, freshly ground n 2 pinches cinnamon n 2 tsp. unsalted butter n 2 Tbs. honey n cinnamon sticks, for garnish * — If you don’t have readymade vanilla sugar, prepare your own by storing used, dried vanilla beans in a closed jar of sugar for at least one week. Simply replace any sugar you use to have a permanent supply on hand.

DIRECTIONS:

Preheat the oven to 300°F. Peel the apples and core them. Brush with lemon juice to discourage browning. In a small saucepan, warm the orange juice with the zest, vanilla sugar, spices, butter and honey, swirling the pan until melted. Fit the apples snugly into an ovenproof dish. Drizzle with the spiced orange juice and cover with foil. Reduce the oven temperature to 250°F and bake for two hours, turning the apples occasionally. If desired, garnish with cinnamon sticks before serving.

The Humblest Veggie When the glamour foods are gone and we crave pure nutrition, it’s the lowly turnip’s turn. Not every edible can be a delicacy for the king, and the turnip surely isn’t. But down through the ages, this stalwart vegetable has often helped to fill peasant bellies when crêpes Suzette wasn’t on the menu. A globular, white-fleshed taproot known to science as Brassica rapa, the turnip has a slightly bitter, peppery taste that mellows when it’s boiled. A hardy plant able to thrive in damp, cold climates, the turnip is easy to store and useful as an animal feed. In ancient Rome, turnips were handy for hurling at a passing public figure—say, the tax collector—whom one despised. Declares a National Geographic website with a fine sense of sequence: “Turnips, throughout their long and lumpish history, have been the food of cows, pigs, sheep, the desperate and the poor.” POWER UP Still, one group has a kind word for this unsung veggie, and they’re called nutritionists. Turnips are a low-calorie food that’s dense with vitamins and minerals; no wonder they were consumed by folks looking to stay alive. A one-cup (130gram) serving of raw turnips, just 36 calories, contains two grams of fiber, eight grams of carbs, 5 percent of the recommended daily value (RDV) of folate and 30 percent of the RDV of vitamin C. Turnip leaves are also a great source of vitamin K, which can help prevent bleeding; and vitamin A, crucial for healthy eyes, skin and lungs. Like other cruciferous vegetables, turnips may also help you feel fuller longer than other foods thanks to their fiber, which in many cases helps reduce blood cholesterol levels and may even lower heart-disease risk. Because of the folate (and the iron in turnip greens), this food is considered good for expectant moms—thus the Molly Ringwald

character’s line to her parents at an ill-fated Thanksgiving dinner in the 1988 comedy For Keeps?: “I’m pregnant. Can you pass the turnips?” BUY/STORE/SERVE Although turnips are sold yearround, their peak season is November through March. When buying them, it is best to select heavy, small ones with firm roots. The color at the top of the root should be a bright purple, with a creamy white color as it nears the base. The best turnips also do not have any bumps or bruises, and you should observe that, if still attached, the greens appear bright and fresh. (The greens may also be sold separately.) Given their long shelf life, you should not encounter any problems when shopping for turnips at a local farmers’ market or produce store. Once you get your hands on them, make sure you store them in a cool, well-ventilated area (55°F). If they are tightly wrapped, turnips can be refrigerated for two weeks. When it comes time to serve, the first step is to wash, trim and peel the vegetable. Then you have a variety of options. Turnips can be boiled, steamed or stir-fried. While including them in a tasty vegetable soup may be your first instinct—and it’s a good one—you should also consider a more offbeat snack: Slice the turnip into thin pieces and bake it for a healthy chip alternative. —Ariana Puzzo

It’s been a tough year, but this sweet sip will help you celebrate the season.

MAPLE CRANBERRY BOURBON COCKTAIL Serves: 2

INGREDIENTS

DIRECTIONS

■ 4 oz. bourbon ■ 3 oz. cranberry juice ■ 2 oz. maple cranberry syrup (adjusted to your desired level of sweetness) ■ 2 oz. seltzer or club soda ■ maple cranberries and rosemary sprigs, for garnish

■ Begin by preparing the maple cranberries and maple cranberry syrup. In a small saucepan, mix the maple syrup and fresh cranberries. Simmer until the cranberries begin to burst (about five minutes). Remove from heat and cool completely. (You will have enough maple cranberries and syrup to make 5–6 cocktails.) ■ Next, add ice to two rocks glasses. Top each with a tablespoon of the maple cranberries. Set aside. ■ In a cocktail shaker filled with ice, add the bourbon, cranberry juice and maple cranberry syrup. Shake vigorously. ■ Strain into the prepared rocks glasses. Top each with a splash (1 oz.) of seltzer water. Garnish with a sprig of rosemary.

1 GIANTS HUMC Members of the New York Giants wouldn’t let the ongoing pandemic stop them from bringing a little joy to patients at the Joseph M. Sanzari Children’s Hospital at Hackensack University Medical Center. Players virtually visited with young patients set up through the Caribu app, which the hospital uses to connect the kids with family members from miles away. 1 Staff at Hackensack University Medical Center used the Caribu app to set up virtual meetings between New York Giants players and patients at the Joseph M. Sanzari Children’s Hospital.

As part of Mitzvah Day, Ben Porat Yosef school in Paramus teamed up with Hackensack Riverkeeper to clean the Van Saun Mill Brook. Volunteers removed more than 650 pounds of debris from the water and the banks. 2–3 Students and families from Ben Porat Yosef joined Hackensack Riverkeeper to fill more than two dozen bags with trash pulled from the Van Saun Mill Brook.
