Dynamic duo honored Patrick and Esther Fletcher of River Edge received the Distinguished Service Award at West Bergen Mental Healthcare’s 24th annual Fall Night of Fine Dining, held recently at Indian Trail Club in Franklin Lakes. The organization holds a special place in their hearts. Patrick served as a trustee for nine years and was executive vice president from 2011 to 2014. He is currently a member of the Foundation Board, and with his wife, has hosted several Distinguished Service Award Brunches and Nights of Fine Dining fundraising events. Patrick is well-known among county educators, currently serving as superintendent of the River Dell School District. In addition to developing a comprehensive special education program in that district, he was integral to the founding of the Bergen County Flight Team to help students and staff members cope with tragedies involving classmates and colleagues. Esther’s work also is rooted in education, and she is equally well-known for her initiatives, having been named Teacher of the Year in Carlstadt and sitting on the Governor’s Task Force on Bullying in Schools. “They are special individuals who give freely of themselves to benefit others,” said Thomas H. Bruinooge, president of West Bergen’s Board of Trustees. —Trudy Walz

THE GYM raises $10K for cancer foundation

Holding special classes, T-shirt sales, raffles and other fundraising events helped THE GYM, a fitness center with locations in Englewood and Montvale, raise $10,000 for the Triple Negative Breast Cancer Foundation (TNBCF), a local charity that funds research to support the discovery of new treatments for patients with triple negative breast cancer. A desire to “pay it forward” led a Cresskill resident to start a nonprofit that helps those faced with a life-altering crisis. When the electricity was cut off for 10 days at the home of a woman who worked for minimum wage with a disabled husband and five children, Giants of Generosity posted the back payments and made sure PSE&G turned it back on. When a man who was almost electrocuted on the job became confined to a wheelchair and was struggling to maneuver upon his return home, Giants of Generosity played a key role in renovating his living space, not only contributing financially but arranging for more than 40 independent contractors to donate more than $130,000 worth of their time, labor, supplies and materials to the project. And when a man was hit head-on on Route 287, crushing him from the pelvis down, and was unable pay for Cobra, Giants of Generosity covered his insurance costs for 15 months. The Cresskill-based nonprofit, whose mission is to provide emergency relief funding and other vitally needed services to those experiencing critical, life-altering situations, is celebrating an anniversary—10 years—and its founder, president and CEO, D. Jane Chagaris Albanese, couldn’t be more proud. “We have helped more than 2,500 people in the past nine and a half years, right here in our own communities,” bergenmag.com

says Albanese, a Cresskill resident born and raised in Tenafly. Albanese was going through a difficult time in her own life back in 2007. She’d recently lost her husband and had undergone a double mastectomy, only to be told afterward that she was misdiagnosed and did not actually have breast cancer. In the midst of this, she was watching an Oprah show during which the host gave audience members $1,000 and told them to “pay it forward.” It was, she says, her “ah-ha” moment to start a charity. “I knew right then and there that I needed to do something meaningful to help others in order for me to heal,” she says. Now the organization will celebrate its anniversary at the 4th annual Food & Wine Show at the Clinton Inn on March 19. Attendees will be treated to food from local restaurants, sweet treats from Keremo Cakes in Cresskill (recent winner of Cake Wars on TV) and wines from around the world as they listen to live music and mingle. Dancers from Arthur Murray in Tenafly will perform, and a 50/50 raffle and silent auction will be held. Money raised will enable Albanese to continue her work in the community. Let’s Tie One On

Here’s how to master the four main knots for neckties—with subtleties courtesy of fashion pros at Sal Lauretta in Midland Park. 1

The Four-in-Hand. This is the simplest knot to tie and the most popular. It’s also the most versatile knot, in that it works with any collar style, from tab to button-down to cutaway. Because the four-in-hand is slightly asymmetrical, it has a jaunty quality—the desirable appearance that it was tied nonchalantly, perhaps without benefit of a mirror. Key tips: Before you pull the knot tight, pay attention to the fabric directly above and below the knot. The fabric on top should be pulled taut horizontally, while the fabric below the knot should be pinched to form a dimple, says Jorge Hernandez of Sal Lauretta. Tighten the knot so it has a subtle arch, and then be sure to pull it tight to the collar.

The Prince Albert. This knot is an elegant variation on the four-in-hand: Rather than passing the wide end of the tie once in front of the skinny end, you pass the wide end around a second time. Poke the wide end in between the two loops of the knot, and pull tight. You’ll end up with an elongated knot, which is great for collars with long points or if you want to shorten the tie. A neat variation (call it the Sal Lauretta) is to poke the wide end under the inner loop of the knot. When you tighten the knot, you’ll be able to see a bit of the inner loop peeking under the outer loop. As seen in the photo, this visible sliver of fabric is a cool something extra.

The Half-Windsor. Also known as a single Windsor, this knot is a bit chunkier and more triangular than the four-in-hand or Prince Albert, making it a somewhat more formal choice. Critics, however, say that the boxiness of the half-Windsor makes it less elegant and less pleasing to the eye—and therefore “less sartorial”—than its elongated cousins. (The theory is that the shape of the knot should echo the gorge of the suit jacket and the taper of the lapel.) The half-Windsor is best suited to wider ties made of light- or mediumweight fabrics. Key tips: Pull the knot tight to keep it from looking too square. Then pinch the sides to give them a little concavity.

The Full Windsor. Also known simply as the Windsor or the double Windsor, it was not named for the Duke of Windsor, portrayed as the nasty but natty older brother in The King’s Speech, but rather for his grandfather, Edward VII, who liked his ties chunky. A few caveats: Large and triangular, a Windsor knot fits only a spread or cutaway collar. This knot also eats up a lot of fabric, so it calls for an extra-long tie. (Having the short end of your tie peek out at mid-torso is decidedly un-cool.) Because of its bulk, the Windsor can distract from the wearer’s face, making it best suited to men with a broad, square or round face, or with facial hair.

If you’re married to a “sound” sleeper— as in loud sounds—it may be time to make some noise yourself. Heavy snoring can be a tipoff to a dangerous condition called obstructive sleep apnea, and persuading your partner to be evaluated at a sleep lab could be a smart move. The name apnea comes from the Greek meaning “without breath.” A sufferer’s breathing stops many times during the night due to temporary closings of the airway. That reduces the blood’s oxygen level; the condition can disrupt sleep and cause daytime drowsiness. Even if you devote eight hours to slumber, you can wake up sluggish and unrefreshed. An estimated 22 million Americans have sleep apnea, and roughly 80 percent of them don’t know it yet. The condition made the news last September, when it may have been a factor in an NJ Transit accident. A train operator apparently dozed off as his train approached the Hoboken terminal; the ensuing crash claimed one life and injured more than 100. Tests found he had untreated sleep apnea. But one needn’t doze off at the wheel to be harmed by the condition. Over time, it can cause high blood pressure, heartrate irregularities and an increased risk of heart attack and stroke. Fortunately, there is treatment that can lower those risks and improve sleep quality so that one awakens feeling rested. To mark National Sleep Awareness Week (March 5–12), Bergen checks in with two county residents whose experience proves the point: HIS WIFE WAS RIGHT Online reviewers rave about the

Teaneck auto-repair shop run by Ridgefield Park resident Dimitris Moutafis, where at almost 67, he still puts in sometimes 14-hour days. One of them calls his business “a sleeper” because he’s “too busy working on cars to be bothered with Internet and advertising.” But it was as a literal sleeper that, a decade ago, he ran into trouble. “I was tired all day long,” recalls Moutafis, who came to this country in 1975 and still has a touch of the sunny Aegean in his speech. “And my wife said, ‘You snore so much, like a big animal— what the hell is going on?’” Today he pokes fun at his slow response: “She said, ‘Go to the doctor! Go to the doctor! Go to the doctor!’ And one day I said, ‘You know what? I’ve got no choice. Let me go to the doctor.’” John Villa, D.O., medical director of the Institute for Sleep/Wake Disorders at Hackensack University Medical Center, ordered a polysomnography—a sleep test—in the hospital’s comfortable, hotellike sleep lab. “They hooked me up to the computer with wires connected to my head and body, and people watched the computer overnight,” says Moutafis. The test showed he had severe sleep apnea. He was outfitted with a continuous positive airway pressure (CPAP) device. Through a hose connected to a face mask or nasal pillows, it gently pushes air into the nostrils to give breathing a boost. He was given different masks to try until he found one he was comfortable with. “Now I sleep like a baby,” Moutafis reports. He rates his slumber as 90 percent better than it was. Indeed, Dr. Villa says his latest follow-up sleep study shows that while he’s using the machine, his breathing pauses just three times an hour (within a normal range not considered apnea)—versus 69 times without the CPAP. Says Moutafis: “To everybody now I say, ‘Go for the sleep apnea!’ I’m like a salesman.” “The trick to CPAP is breaking down the barriers that make it difficult to wear,” explains Dr. Villa. Indeed, some

people find the machine hookup clumsy at first. But once they’ve grown accustomed to it, many of those same people wouldn’t dream of spending a night without it. SHE CAN DREAM AGAIN “I knew I snored, but I never thought of the possibility of sleep apnea,” says Elizabeth, 65, of northern Bergen. (She’d rather omit her last name.) A selfdescribed Energizer Bunny type, she didn’t feel terribly fatigued even when her sleep apnea was untreated. But today, she says, “I know my sleeping is better.” Recently widowed, she had girlfriends sleep over, and in the morning one told her, “Elizabeth, you kept me up all night. I kept looking over to make sure you were breathing!” She was evaluated and outfitted with a CPAP through the Center for Sleep Medicine at Holy Name Medical Center by pulmonologist Adam Glassman, M.D., whom she’d first seen for bronchitis. Her test showed her sleep was interrupted by breathing pauses 32 times an hour. “I was in shock,” she recalls. But the finding made sense to her in a way, because she didn’t recall doing much dreaming. She asked the doctor if her apnea had been depriving her of REM (rapid eye movement) sleep, the dreaming stage, and he said it probably had. “Sleep apnea tends to be worse during REM, so the body reduces such sleep as a self-protective measure,” Dr. Glassman explains. He adds that someone denied REM sleep for a period also may have a “REM rebound” afterward, pigging out on dreams “to make up for lost time.” Says the doctor: “When you have fewer interruptions in sleep, you can experience all of the stages you need to be properly refreshed, including REM, in which you dream and consolidate learning from the day.” Elizabeth reports with pleasure that “since I’ve had my sleep apnea machine I’ve been dreaming about my husband again.” And when her 3-year-old grandson visits overnight, he enjoys their bedtime ritual. “Put your elephant mask on,” he reminds her.

Secrets Of A Style Pro Celebrities have stylists telling them what looks good. Now thanks to a Hillsdale resident, Bergenites can too. By Marisa Sandora You wouldn’t think that being a personal wardrobe stylist would be a dangerous job, but you’d be wrong: When Pamela Etzin opened one client’s closet, a giant pile of things fell out, including a suitcase that hit her in the head! “There was blood,” remembers Etzin. “The client was mortified.” Talk about suffering for fashion. It was just another day in the trenches for Etzin, of Hillsdale, who owns a personal styling business called An Eye for Detail. During a “Closet Edit and Style Assessment,” Etzin goes to clients’ homes and in three to four hours, evaluates their current wardrobe. “We take everything out, and you start trying things on,” she says. “We take an honest look at what works, what no longer fits, what can be recreated or what needs to go.” Then she helps the client organize what is left. She’ll also help put together outfits and photograph them so clients can remember what goes with what. Finally, she’ll suggest clothing and accessories for future purchases. Cost? $495 within Bergen County (she charges more if she has to travel). Etzin starts the process by getting to know her client’s likes, dislikes, style choices, wants and needs. “I want to know what their goals are, and I want to know what they are dressing for,” she explains. “Are they in an office, do they work from home? I really want to know what’s going on with them. Are they feeling frumpy? Do they want to change or elevate their look?” She helps people figure out what colors and styles look good on them so they can build a wardrobe around those basics. Etzin also offers personal shopping services ($175/hour or pay $995 for a two-hour closet edit and four hours of

shopping) where she will take clients to stores to find exactly what they need, whether it’s the perfect pair of black pants, a special occasion outfit or a whole new wardrobe. “I took a gentleman shopping last night who is 32, he’s in IT, and shopping is just not his thing,” she says. “We were at Banana Republic, and we must have tried on 18 of the same style shirt, but they were all made in different places and they all fit differently. Finally we found one that was perfect on him. The look worked for business and casual and happened to be 40 percent off, so he bought nine.” Having always loved clothing, Etzin began working in the garment district in New York City at the age of 20, first in showroom sales and later for wellknown designers such as Oleg Cassini, Abe Schrader and Kasper. “My favorite part was doing trunk shows and going to stores because I loved seeing customers,” she remembers. “That’s when I really developed my love of putting clothes on women.” After moving to the suburbs and having kids, Etzin worked in retail sales for stores like Ann Taylor, Talbots and White House, Black Market before deciding to start her own personal styling business six years ago. Now she enjoys helping clients get organized and love how they look, even if she does have to contend with the occasional kooky closet. “I had one client who was just a clothes hoarder—she saved everything,” Etzin remembers. “She still had her high school clothes, like monogramed sweaters, kilts. I can understand it. People have stories about every item. In the end, I did persuade her to get rid of things.” bergenmag.com

Stylist Pamela Etzin of An Eye for Detail offers expert advice for every closet: How should a closet be organized? “Everything should be facing one direction on the same type of felt or velvet hanger, categorized by item type and light to dark.” What’s worth investing in? “Black pants, a few good jackets, highquality shoes, a nice dress or two, a few good handbags and some accessories like earrings, statement necklaces and scarves.” Should I give up on my “skinny” clothes? “Yes—or at least move them to another closet or place in the house if you really are serious about losing those 10 or 20 pounds. Only have things in your closet that fit you and that you can wear and feel great in.” If I haven’t worn it in a year, should I get rid of it? “No, not if you can recreate it. If you like it, update it with a great necklace or a great scarf. It’s knowing what to do with what you have.” Where should I donate things that no longer work? “I like Dress for Success or the Women’s Rights Information Center in Englewood where low-income job seekers can shop for clothing and accessories that are donated to their Career Closet.” How should I organize accessories? “The key is to be able to see everything. If you can see it, you will wear it. Hang necklaces, put bracelets on a black roll and put earrings in stackable trays.”

Walk a mile in shoes from Teaneck-based Lust for Life, and you’ll discover CEO Sarah Malaquias’ lifelong love of fashion. By Danielle Gallo It’s hard to believe that the designer behind edgy shoe line Lust for Life almost became a doctor. But fashionistas everywhere can be glad Sarah Malaquias switched gears at the age of 24 and enrolled at Parsons School of Design to pursue her “lifelong passion” for fashion design. Now at 36, Malaquias is running her own footware company, Lust for Life, showing her lines at New York Fashion Week and taking frequent trips to Europe, where her shoes are made. When she’s not jet-setting, The Palisades, NY, resident can be found sketching new and inspired designs at Lust for Life’s headquarters in Teaneck, drawing on the the experience she gained working in product development for Steve Madden and as cocreative director of the London Trash and London Rebel lines of shoes for Zigi NY. Of course, being a busy career woman doesn’t stop her from stepping out the door each morning in some seriously stylish footwear. Malaquias spoke with BERGEN about spring trends, her brand and more. How did Lust for Life get its name? We drew inspiration from the artists and artisans that we had met along the way. Our name signifies their free way of living, which incorporates art, diversity and worldliness. This is our definition of Lust for Life. Who is the woman you design for? We design for an attitude and a lifestyle, for someone bold enough to set a new trend in her office, or to be the one at the dinner table in multicolor snakeskin 5-inch pumps. Where do you get your inspiration? I’m very much inspired by color and texture, which can come from fine art, nature, a flea market or someone’s vintage fur accessory.

What spring trends should we have our eyes on? I love color for spring as long as it’s done in a sexy, bare way, and having a very open shoe with a leg wrap accomplishes that. Fur has also popped up as a yearround item: It no longer signifies winter and can give your summer shoes a fun pop of color and texture. What fashion faux pas drive you crazy? I have two: The first is over-accessorizing. Choose one statement piece that you want people to notice and make that the focal point of your outfit. Everything else you’re wearing should complement this item. The second is letting your toes hang off the side of your sandal. If your toes hang or poke through because of the design, it’s not the shoe for you, and you shouldn’t buy it.

What’s something about you that would surprise people? It’s nearly impossible for me to tell a lie. And I desperately want to learn to breakdance.

What’s your go-to shoe for comfort or running errands? It used to be a ballerina flat, but sneakers have completely taken over—I am so happy that they are fashionable now. There are so many cute ways to wear sneakers with jeans, shorts and even dresses. I still love a rich leather flat sandal with a thick leather insole. Even with studs all over it, it gives any outfit a classic look that is appropriate for any setting. How many pairs of shoes do you have? Probably close to 100. I try to donate the ones I don’t wear, but I just accumulate so many from working in the business. I justify it with the idea that a good shoe is the one accessory that will always change your outfit, and whether or not you’re having a “fat day” won’t matter––the shoes will always fit. What do you like to do in your downtime? I’m almost always working. I take what little time I have to spend with my family. My husband and I like to do dinner and drinks.

Tell us about your family. I have two stepkids, a boy and a girl. My stepdaughter is 10, and although she’s a bit of a tomboy, she likes to talk fashion with me and get my opinions on things. I think she looks up to me in that sense. I also have a “fur baby,” a rescue beagle mix.

Roller derby has evolved from fishnets and fake fighting. And thanks to a dedicated group of local women, you can play—or watch— right here in Bergen County. By Sean Hale Fishnets, booty shorts and helmets covered with stickers—this was the version of roller derby I discovered back in 2010 as a photographer for the Garden State Rollergirls, an all-women, flat track roller derby league that practices in North Arlington. It was a world of big hits, bigger personalities, and women looking to win on the track as much as at the afterparty. Players skated with banged-up gear and damaged bodies, believing duct tape was often good enough to hold both together for their 60-minute game. As each year went by, though, this counterculture carnival I had stepped into became more sportsfocused, more mainstream. Late nights at the bar were exchanged for long sessions at Crossfit. “Boutfits,” the uniform skaters would wear, changed from mismatched punk ensembles to athletic capris and jerseys made of the latest breathable, sweat-wicking fabrics. Roller derby has seen a resurgence in the past few years, boasting around 1,200 leagues worldwide, and Garden State now has about 40 players across five teams.

Games are divided into two 30-minute periods. Each period consists of a several “jams,” plays that can last up to two minutes. During a jam, each team puts five players on the track: four blockers and a jammer, the point-scorer, who attempts to earn points by lapping the pack and successfully passing the other team’s blockers. While the sport has become more serious and less “camp” over the years, what hasn’t changed is the tight-knit community it offers, a community that supported me as I transitioned from photographer to coach in 2014. As a coach, I have seen roller derby call out to women of all backgrounds, sizes and lifestyles. In a single line-up, you might find a librarian, pharmacist, stay-at-home mother, office manager, and young-adult author, ranging in age from 18 to 40-something. All different body types have advantages in this sport: Petite skaters may slip through the tiniest holes between blockers, while women of size use their power to halt any skater who may try to pass them. Even with all of their differences, players share a hunger to carve out this time just for themselves, where they are no one’s boss or subordinate, partner or parent. Garden State player and Mahwah resident Suzy Ross, who skates under the name Double Tuf Oreo, reflects, “I started derby shortly after I had my son. I needed some time away to relieve stress, make some new friends and definitely get back into shape. Derby gave all of that to me. I have made some amazing friends I can talk to about everything.” Ross and her husband felt such a sense of community that they held their wedding during halftime of one of Garden State’s games. Vows were said, the bouquet was tossed, and the game resumed. Fitting roller derby into busy lives can be a challenge. The Rollergirls practice three times per week from January through November, with only a small break in July, so the commitment is great. The league’s two travel teams play between eight and 13 games per year, half at home, and the other half at opponents’ venues, generally one to four hours away by car. The charter team for Garden State, the Ironbound Maidens, also travels to tournaments, sometimes as far away as Colorado. While costly for the skaters, these events have allowed the Ironbound Maidens the chance to play against teams from all over North America as well as teams from Australia, New Zealand, Ireland, Sweden and Finland. When asked if it’s worth all the demands the sport places on a player, Garden State’s Jennifer “Baked Beanz” Setteducato says, “That rush I get when I am skating makes it all worth it. I feel alive and free, and the weight of the world is off my shoulders for two hours.” Garden State Rollergirls host a First Skate every three months, giving potential new skaters a chance to join the league’s “Fresh Meat” program. Making a big splash An Old Tappan pool house is a hit all year long, proving that the fun doesn’t end when you leave the water. By Darius Amos Design by Creative Design Contruction & Remodeling What happens when the kids outgrow their backyard playhouse and an old shed is underused? For one Old Tappan homeowner, the answer was: Call in the wrecking ball. Well, it wasn’t that dramatic, says Glen Lumia, president and CEO of Northvale-based Creative Design Construction & Remodeling, but replacing those old structures with a one-of-a-kind pool house was a viable solution. A simple pool house with four walls, windows, roof and a door just wouldn’t cut it for this property, he says. The yard already featured an in-ground pool with tanning shelf, spa, grotto and waterfall, while an outdoor kitchen, firepit area and trampoline dotted other spots on site. “The owner wanted the pool house to fit in with the character of the outdoor space and be an extension of the main house,” says Lumia, whose company oversaw each stage of the project. Their shared vision evolved from the concept of a Japanese pavilion, from its general shape and form to an interior chock full of upscale amenities and comforts. On the wish list: a full bath with indoor and outdoor showers, a changing room with washer and dryer, a bar with refrigeration, an entertaining area with TV and fire features, and plenty of storage for pool equipment and furniture. Location played a large role in the intricate design of the building. Because direct sunlight literally hits the A Tennessee flagstone path leads to the covered lounge area of this Old Tappan pool house. Motorized screens are hidden from view but can be lowered to keep unwanted pests from spoiling the party inside.

spot during summer days, “we designed the roof to allow for the natural process of convection,” Lumia says. Staycool Tennessee flagstone is used for patio floors, and the open ceiling—constructed of natural cedar—allows rising heat to escape. A roof transom is installed for function and aesthetics; it aids in the release of hot air while allowing views of summer sunsets. Motorized screens around the cabana’s covered outdoor entertainment lounge provide protection from nature’s elements (including pesky bugs!). “This space is important because it allows for more family time, Friday night pizza and movie events or just a cozy romantic night by the fire,” Lumia says. Portable decorative space heaters were added to extend the entertaining season. “Now, all the comforts of the inside can be enjoyed outdoors any time of the year,” he says.

Chickpeas, please! Packed with protein and fiber, this legume adds nutty flavor to countless dishes.

The next time you spread a spoonful of hummus onto a cracker, know you’re also enjoying a taste of agricultural history. Dating back to about 7,500 years ago in the Middle East, chickpeas are considered one of the world’s “founder crops,” some of the earliest to be cultivated. Don’t let their name (or names) fool you. Also known as garbanzo beans, chickpeas are neither peas nor beans; rather, they’re legumes and are as versatile and nutritious as they are ancient. POWER UP A cup of canned chickpeas is only 210 calories and contains about 11 grams of protein and 9.6 grams of fiber, according to the U.S. Department of Agriculture. They’re rich in vitamins and minerals, including manganese, providing 84 percent of the recommended daily value (RDV) for a 2,000-calorie diet, folate (71 percent), copper (29 percent), and iron (26 percent). Also, chickpeas are a source of “resistant starch,” a type of fiber that a recent British and Irish study published in Nutrition Bulletin claims can be useful in managing diabetes and promoting gut health. Buy/Store/Serve Chickpeas are available canned and dry at most supermarkets, and which variety you should choose is based on personal preference and patience. Those looking to avoid BPA exposure from canned products or reduce sodium may prefer to cook dry chickpeas (tip: they taste better than their canned cousins too). The downside to this variety is that cooking them is time consuming. The legumes must be soaked overnight (12 hours) and then boiled for over an hour.

The different ways to prepare cooked or canned chickpeas are countless—you can roll ’em, roast ’em, sprinkle ’em and spread ’em. They can be pureed with tahini into hummus, ground and rolled with spices and flour into falafel balls, sprinkled plain over salads, added to pasta dishes or soups, and even roasted into a crunchy snack (drizzle with olive oil; sprinkle with salt and spices like cumin, cayenne, and turmeric, then roast at 400°F for about 30 minutes). Chickpeas can also be ground into chickpea flour, which is sold at most healthfood stores and specialty markets and is a protein-packed substitute for those eating a gluten-free or wheat-free diet. Recreating comfort Meat lovers, myself included, mourned when news hit last spring that the venerable Montvale eatery The Porter House would depart the upscale steakhouse world and cater to the trendy gastropub audience. I was, admittedly, one of the skeptics. After all, the old eatery was the site of many St. Patrick’s Day celebrations, office happy hours and dinners with loved ones—and now it was no more. But what the folks at the reinvented joint—Hearth & Tap Co.—did was create an imaginative menu that retained most of the former establishment’s regulars while winning new fans from all walks of life. The premise, according to owner Fintan Seeley and general manager Mike Greenberg, is

to use plenty of fresh products from local sources and offer craft brews. A comfortable, rustic vibe greets you as you pass a great outdoor front patio (an obvious hangout during warm weather) and make your way inside. Soft lighting and fireplaces illuminate the dark wooden walls, floors and ceilings. To the left of the main entrance is one of Bergen County’s few remaining indoor smoking bars, while a flight upstairs leads to private party rooms. Bear right and you’ll wind up in another bar beside a wood-burning oven, which is used to cook artisan flatbreads. On a recent Friday night, my dining companion and I were seated among other diners—a family of five, a middle-aged couple and a young pair who might’ve been on their first date. While my friend ordered a chardonnay, I gleefully went with a stout from Brix City Brewing in Little Ferry. Thankfully, I didn’t fill up on drinks and left plenty of room for food. Our first bite of the night was the best I’ve had in a while—the roasted Brussels sprouts were perfectly crisped and shared space on the plate with pork belly nuggets and a divine honey-chili glaze. My companion and I also shared an order of pan-seared meatballs, which crumbled evenly with each bite. A delightfully thick pomodoro sauce with basil pesto complemented the meaty morsels and tasted just as good on the accompanying ciabatta toast. We were still raving about the appetizers when our entrees arrived. To test Hearth & Tap’s philosophy of serving reimagined comfort food classics, my companion ordered fish and chips. A thick lemonshandy batter was extra crisp and kept the fish inside well protected. The texture of the cod was the complete opposite of the bergenmag.com

batter—“light, flaky and tasty,” my friend reports. Hand-cut fries and minted mashed peas were equally delicious, she says, and were a treat to the taste buds. A meat lover, I excitedly decided on the short rib ravioli from the evening specials. It scored an “A” for presentation (a colorful array of carrots and basil rested on top of the pasta), and even a higher grade for taste. Inside each plump ravioli was a pleasant surprise. The mouth-watering and tender short rib exploded from the pasta pocket with each bite. Combined with an exquisite mushroom sauce, my dish truly hit the spot. Tummies near capacity, my companion and I each capped the meal with dessert. She went with a jasmine rice pudding, which arrived at the table inside a Masonjar mug. Lightly sweetened, the smooth pudding was offset by the nutty flavor and occasional snap of almond slivers. My end-of-meal treat was a warm apple crisp topped with a generous scoop of vanilla ice cream. The slow melt of the ice cream created a dazzling flavor when it combined with the rich, toasty fruit. Now that’s comfort! So while the memories of the old Porter House are as vivid as ever, I was convinced at the end of this night that there are plenty of good times and good meals to come at Hearth & Tap. —Darius Amos Hearth & Tap, 125 N.
