{ EDITOR’S NOTE }
Step into Spring in Style “Fashion fades, style is eternal,” Yves Saint Laurent once said. And isn’t it true? Whereas you might not always embrace the fleeting trends of a particular season, your personal style lasts a lifetime. Even the fashion obsessed among us know that style is so much more than the newest looks on the runway. It’s about an attitude and the look you choose to share with the world. That’s one of the reasons we decided to rename our annual fashion issue the Spring Style File. Think about the people you know: Do they have a signature style that makes them them? A woman might wear scarves with nearly every outfit or a great piece of statement jewelry. A guy might don a vest or bold socks every day. Of course, personal style is part taste and part function. Whereas fashion can often be notoriously difficult to keep up with, style is influenced by more intrinsic, longer-lasting characteristics: It’s about how you see yourself and want to be seen. Want to make a long-lasting impression this spring? We teamed up with some of Bergen’s top women’s boutiques to curate five fun and flirty looks, each of which has pops of color, bold patterns and festive florals. Turn to “Spring Fling” on page 46 to see these statementmaking outfits—we’re certain you’ll fall in love with them. If the skirts and dresses in that spread are too playful for your style, perhaps the pieces featured in “One-And-Done” (page 54) will be your cup of tea. The best part about these outfits is their functionality: They do double duty, taking you from the office to out-on-the-town in one stylish swoop. And don’t worry, gentlemen, we didn’t forget you. Guys looking to update their closet for the season should consider one (or all) of the men’s essentials in “Wear it Well” on page 24. From belts and bracelets to sportcoats and shoes, each of the stylish pieces on the page is available right here in Bergen County. While this issue of BERGEN is dedicated to your personal style, we’d be remiss not to include articles on another topic that makes March so special: St. Patrick’s Day. Before you march in the county’s St. Paddy’s Day Parade in Bergenfield (March 10 at 2 p.m.), turn to Bergen Buzz on page 17 to find out where you can pick up the best Irish soda bread, then flip to page 89 for five pubs and restaurants that’ll make you feel like you’re in Dublin. We hope you enjoy these and all the other features and handy tips in this edition. With spring right around the corner, we want to help you get ready for it in style!

IT’S TIME FOR SODA BREAD
Call it the luck of the Irish. Bergen County boasts plenty of places to get delicious Irish soda bread, the traditional carb that’s leavened with baking soda instead of yeast. You could make it at home for St. Patrick’s Day, but isn’t it easier and tastier to have a professional do it for you? Stop by one of these local spots for soda bread that’ll pair perfectly with that corned beef and cabbage: Central Bakery, Hackensack This 50-year-old establishment specializes in fresh European bread and pastries, so you know its people know what they’re doing when it comes to soda bread. Theirs comes in boule and roll forms. • Central Bakery, 105 S. State St., Hackensack, 201.488.6261
Celtic Kitchen, New Milford Here you’ll find typical deli fare such as sandwiches and wraps, but also an extensive line of Irish foods, such as candy, meats and, of course, soda bread. • Celtic Kitchen, 366 River Rd., New Milford, 201.261.6018
L’Arte Della Pasticceria, Ramsey This Sicilian-American bakery doesn’t discriminate when it comes to traditions. Here they like to bake goodies for most holidays; they offer customers a classic Irish soda bread during the days leading up to St. Patrick’s Day. “We make it with caraway seeds and lemon zest and top it with oats,” says general manager Anna Bischoff. “People can special-order it.” • L’Arte Della Pasticceria, 109 E. Main St., Ramsey, 201.934.3211
Miller’s Bakery, Cliffside Park and Tenafly This is a go-to for customers needing a custom cake for a special occasion, but—you guessed it—the soda bread is to die for too. • Miller’s Bakery, 716 Anderson Ave., Cliffside Park, 201.943.0400; 5 Washington St., Tenafly, 201.871.4449
Rockland Bakery, Nanuet, N.Y. It’s worth a trek over the New York border for the soda bread here (and any of their other freshly baked treats). Plus, customers can watch the breads baked in the back and then hand-pick whatever loaves they want, so that Rockland Bakery doubles as a fun activity for the whole family. • Rockland Bakery, 94 Demarest Mill Rd., Nanuet, 845.623.5800
If none of these bakeries is in your ’hood, you can also find delicious Irish soda bread in the bakery section at your local ShopRite.
DID YOU KNOW? About 10 percent of New Jersey’s total population is of Irish descent, according to Census Bureau’s American Community Survey. In Bergen County, Ridgewood has the largest Irish community and Waldwick is the most Irish town, by BERGENMAG.COM

PUPPY LOVE
CUTS FOR KIDS Any parent knows that sure, you could get your little one’s haircut at the same salon you go to. But if you want to ensure your squirmy toddler or pubescent tween is catered to, you’re better off at a place that specializes in kids’ cuts. These five in Bergen are among our faves: Pumpkin & Bean, Englewood This salon doubles as a children’s boutique, so you can shop while your child is getting a stylish new ’do in an adorable vintage miniature car barber chair.
POOCH : Snoopy, 11-year-old shih tzu poodle mix OWNER : Melissa Jones, Saddle Brook Saddle Brook shihpoo Snoopy rang in his 11th birthday on March 7 and likely celebrated with a few of his favorite things: chewing on toys, playing in the snow and sleeping in bed with his humans, who adopted him as a puppy in 2008. As for the birthday boy’s dislikes? Rain, the doorbell ringing and anyone coughing, sneezing or clearing his or her throat, which trigger Snoop to jump into the arms of the nearest person for comfort. Despite his sensitivity to certain human sounds (and his sensitivity to certain foods, hence why he’s on a grain-free diet), this dog is a people pet through and through. “He is sweet, social and falls in love with everyone that he meets,” Jones boasts. “Snoopy is just a dream to have as a pet, though I may be biased!”
• Pumpkin & Bean, 55 N. Dean St., Englewood, 201.503.9001
Once Upon a Curl, Lyndhurst The staff here is especially patient with cranky little ones (individual TV screens help, we’re sure), and the prices are competitive (cuts start at just $15). Once Upon a Curl stylists also excel at girls’ updos and braids for holidays and special occasions. • Once Upon a Curl, 226 Stuyvesant Ave., Lyndhurst, 201.939.2409
Rita’s Snips for Pips, Ridgewood Rita’s has been in the hairstyling biz for 30 years, so your kiddo is in good hands here. Parents can even be sent home with a certificate and a snip of their youngster’s locks if it’s his or her fi rst haircut. But if you’re trying to limit screen time this may not be the place, as it has Netfl ix, Xbox One and TVs throughout the salon to keep everyone from toddlers to teens entertained.
MALL EATS Good news: It just got easier to satisfy your fast-food craving. Five Guys Burgers & Fries is now open in Garden State Plaza’s food court on the lower level. The Zagat-rated national chain, credited by some with making the country’s best burgers, also features hot dogs, grilled cheese, fries, soft drinks and hand-spun milkshakes. Just be sure you grab lots of napkins!
• Rita’s Snips for Pips, 20 S. Broad St., Ridgewood, 201.612.7477
Planet Kidz, Rutherford This place has fun styling chairs, a TV, toys and tons of festive decorations to make your son or daughter’s haircut experience enjoyable. Meanwhile, things aren’t looking too shabby for parents, who can get a mani/pedi, a waxing or a styling treatment themselves at its grown-up partner salon, Union Haircutters.
Want something a bit lighter? Pokéworks has opened at the shopping center’s food court as well—its first New Jersey location—and offers build-yourown poké bowls (raw-fish servings), poké burritos and poké salads with a variety of proteins, sauces and toppings from which to choose. If you’re still hungry, top off your meal with some sweet delights at the new Woops! kiosk on the second level outside of Macy’s. Its menu features 20 varieties of macarons, cremebellos and dozens of other desserts and baked goods.
• Planet Kidz, 325 Union Ave., Rutherford, 201.939.4442
Cookie Cutters, Mahwah You’ll feel like you’re walking into an indoor playground once you arrive at Cookie Cutters, but that’s what sets the place apart. In addition to the usual TV screens and racecar and spaceship styling chairs, this salon has fun décor all over the shop and a play area with a slide, because we all know waiting their turn is not most kids’ strong suits. • Cookie Cutters, 380 Rte. 17 South, Mahwah, 201.642.4142

COMING TO CLOSTER Chef/owner Thomas Ciszak of Paramus’ notable Chakra restaurant is opening up a location in Closter. The eatery, Brasserie Memere, will feature traditional French cuisine without the hefty price tag you’d find at a fine-dining establishment. “I want everybody to come in and eat,” Ciszak says. And customers can do just that when it opens later this year at Closter Plaza, located at 107 Vervalen St. Meanwhile, the same plaza is also now home to the county’s second Lululemon store. (The first is at Garden State Plaza.) Lululemon opened here in February and sells trendy, upscale athletic clothes and yoga apparel for men, women and girls.
RICH PICKINS
TOAST OF THE TOWN
You never know what could bring you 15 minutes of fame. For Oradell resident Sam Tripsas, it was his decades-old collection of off-thewall items such as old lamps, street signs and Coca-Cola bottles that earned him a spot on The History Channel’s American Pickers. On a January episode of the series, in which pickers and hosts Mike Wolfe and Frank Fritz buy unique items from collectors around the country, Tripsas gave the pair a tour of his treasure trove and sold them two Coca-Cola machines from the 1950s, among other items. Ka-ching!
Gather your crew to grab a cold brew at the brand-new Hackensack Brewing Company. Hoping to attract the influx of new residents drawn by the city’s redevelopment initiatives, the brewery is tapping into the Cheers-like feel of an old-time hangout full of local character. “A brewery taproom can be very influential from a cultural standpoint,” says Mike Jones, one of the company’s partners. “We want to make sure that all of the new residents coming into Hackensack get a taste of what makes Hackensack unique.” Go and sample one—or two or (what the heck) all 12 of the beers on tap—and toast HBC’s success. “The area is becoming a hot bed for craft brewers,” notes Renato Villegas of River Edge. “I went to HBC’s grand opening in February, and I totally dug the vibe. I can’t wait to go back.” • Hackensack Brewing Company, 78 Johnson Ave., Hackensack,

After a lengthy nationwide search, the private day school in Englewood for students in pre-school through eighth grade has hired Maureen Fonseca, Ph.D., to be head of school. “I am looking forward to guiding The Elisabeth Morrow School in achieving its strategic vision,” says Fonseca. “From the moment I set foot on campus I knew that this school was a perfect fit for me because of the way its programs match my beliefs about the benefits of holistic education for all children.” Fonseca is currently chief executive officer of Sports & Arts in Schools Foundation/New York Edge, an organization that provides funding for under-resourced New York City public schools. From 2000 to 2015 she led The Masters School in Dobbs Ferry, N.Y., and prior to that founded St. Philip’s Academy in Newark.. • The Elisabeth Morrow School, 435 Lydecker St., Englewood, 201.568.5566

TO YOUR HEALTH! Valley Health LifeStyles is a different kind of gym. The Mahwah fitness center, which celebrated its one-year anniversary last month, is affiliated with Valley Health System and focuses on the prevention and treatment of disease, illness and injury through physical activity and health education. What else sets it apart, aside from its five-star amenities like expansive pools, running track and basketball court? LifeStyles is impeccably clean, has state-of-the-art fitness equipment and hires only educated, vetted and credentialed staff, who do everything from teach classes to run the front desk. “The staff are trained professionals, and that makes a difference,” says Wayne resident Austin Murphy, a LifeStyles member who received cardiac therapy at Valley Hospital after a 2011 heart attack. “The machines are new and clean. I use the various weights and arm and leg machines, I do the cardio equipment, I walk the track and I shoot baskets in the gym. My wife likes the pool. It’s worth the trip from Wayne.” Mahwah’s Eric Stepper, who joined LifeStyles the day it opened because his previous gym was “not up to par,” also appreciates the facility’s cleanliness, and mostly enjoys the yoga and Pilates classes, the cardio equipment and the hot tub. Says Stepper: “I retired two years ago and want a gym that will help me stay healthy as I age.”
CULINARY CORNER PAZZA PAZZA It’s been in business for barely three months but patrons are already raving about Pazza, a new “Italian comfort food” BYO restaurant in Franklin Lakes. Owned by the uncle/nephew team behind Sonny and Tony’s and Esposito’s, both in Mahwah, Pazza boasts a thin-crust NeoNeopolitan pizza that will surely become its claim to fame. However, you’ll be just as satisfied with a burger, a steak or a fish entrée, should that be what you’re craving. We’re sure we’ll be seeing this hotspot on Real Housewives of New Jersey in no time. • Pazza, 794 Franklin Ave., Franklin Lakes, 201.848.5050
ON A ROLL Does the name D’Avant Sushi sound familiar? The owners of this new Japanese-American fusion restaurant are the folks behind D’Avant Bakery in Palisades Park. You’ll find traditional Japanese dishes at this familyfriendly spot in Fort Lee, including sushi and sashimi. But it’s also setting itself apart by putting Japanese twists on American cuisine with interesting menu items, such as uni spaghetti (spaghetti with soy sauce) and pork loin steak. • D’Avant Sushi, 1638 Schlosser St. D-2, Fort Lee, 201.482.0599
FARM TO TABLE Bergen County has been waiting months for the opening of acclaimed chef Anthony Bucco’s farm-to-table Italian restaurant in Ridgewood—and now Felina is finally open. The food is dubbed “modern Italian” but with an emphasis on fresh ingredients plucked in the Garden State, as Bucco has a commitment to sourcing locally and sustainably. There’s also a catering and event hall attached to Felina and—wait for it—a rooftop bar that’s a total game-changer. • Felina, 54 E. Ridgewood Ave., Ridgewood, 551.276.5454

GETTING IT RITE
ShopRite, the New Jersey-based chain that has more than one dozen stores in Bergen County, has been named to Newsweek’s 2019 “America’s Best Customer Service” list, which recognizes companies for excellence. The grocery chain is one of only three supermarkets to make the list, which was compiled from the results of a survey the magazine conducted with more than 20,000 customers all over the U.S. BERGENMAG.COM

Orthopedic surgeons at The Valley Hospital in Ridgewood, New Jersey, are now offering patients an innovative option for partial knee, total knee and hip replacement surgery: A ROBOTIC APPROACH. The Mako Robotic-Arm-Assisted Surgical System is giving Valley’s orthopedic surgeons greater precision in placing and aligning an implant. This often means less pain and faster recovery for patients. And Valley is the first hospital in Bergen County to offer this approach.

{ TALK OF THE TOWN }
WELCOME TO
Allendale
■ ESTABLISHED:
1894 ■ POPULATION:
This former farming town has blossomed into a tight-knit, family-friendly community.

Perhaps there is no municipality in Bergen County that offers that small-town, traditional feel as much as Allendale does. That’s certainly in large part due to its small physical size, at just about 3 square miles. But what Allendale lacks in area it makes up for in other ways, as this borough (its downtown area pictured at right) boasts an excellent school system, unrivaled rural beauty and a family feel, where everyone here knows everyone else—in a good way.
CELERY FARM This 107-acre nature preserve once served as a celery, onion and lettuce farm. Now it’s home to many mammals, fish, reptiles and
THE FELL HOUSE
Dating back to the 1760s, The Fell House was the home of John Fell, a Revolutionary War patriot. Civil War hero Joseph Warner Allen, Allendale’s namesake, and Adam Badeau, President Ulysses S. Grant’s biographer, also lived in this house, which is now open for public tours.
HOME, SWEET HOME
Thinking about buying or selling a house here? The median home value in Allendale is $626,200, down 0.1 percent over the past year. Home values are expected to increase 3.5 percent within the next year, according to Zillow.
DINING OUT
Allendale’s top-rated restaurants possess that community feel for which the town is known. Allendale Bar & Grill is fourth-generation family-owned and adored for its generous portions (think burgers and sandwiches) and friendly staff. Savini Restaurant is the go-to for Italian food, while Masa Sushi is the spot for fresh sushi and sashimi.
insects, as well as more than 240 species of birds. The farm is part of Allendale’s Fyke Nature
Allendale Corner Cafe was once occupied by Allendale Eats!, which Jerry Seinfeld and Alpine’s Chris Rock visited during a 2013 episode of Comedians in Cars Getting Coffee. During filming, the guys were pulled over by the cops on Route 17 in Ramsey in the Seinfeld-driven 1969 Lamborghini Miura P400S. Allendale Eats! closed in 2018, but the episode lives on!
Association and is open to the public 365 days a year.
CRESTWOOD LAKE
It’s not summer in Allendale without a visit to its man-made lake, which boasts three diving boards and three beaches. There are also other spots for recreation here, including a pavilion, baseball field and basketball and tennis courts.
FAMOUS FACES Several notable people and celebrities once called this town home. From left, former FBI director James Comey; actor Phillip Chorba, whose roles include parts in Silver Linings Playbook and The Upside; actor and comedian Chris Wylde; former MLB player and manager Lou Piniella; and science fiction author/screenwriter Richard Matheson.
Yankees legend Babe Ruth frequently stayed at the Allendale Hotel and was a regular patron at Allendale Bar & Grill. He sought refuge here from the hustle and bustle of NYC.

FUN FACT
DID YOU KNOW? Allendale was named for Joseph Warner Allen, an engineer from southern New Jersey and Civil War hero, who in the 1840s helped construct the town’s first railroad tracks. The project had no official name, but locals soon started calling both the freight station and the town “Allendale” after him, and it stuck. BERGENMAG.COM

NECESSARY NUTRIENTS
FOR BABY BOOMERS
Boosting vitamin and mineral intake can help you stay healthy and active. As we age and our bodies change, so, too, do our nutritional needs. The one-sizefits-all multivitamin you might have been taking for much of your life may no longer be supplying an adequate dose of some vitamins and minerals, while giving you more than you now need of others. “While supplements are no substitute for eating nutritious food, sometimes the nutrients you receive from diet alone may not be enough,” says Julene Stassou, a Fort Leebased registered dietitian. “This is especially true as we age. Always consult your doctor and pharmacist before taking any vitamin or mineral supplements, as they may interact with medications you’re taking.” According to the National Institute on Aging, a division of the National Institutes of Health, an adequate intake of the following vitamins and minerals is essential to maintaining good health in people age 50 and older. VITAMIN B6 Why you need it: B6 is essential for the brain and is needed to maintain healthy nervous and immune systems. It helps the body produce another important B vitamin, niacin, and the neurotransmitter serotonin. It also helps to regulate blood sugar levels. Those with kidney disease may have a higher risk for B6 deficiency. Recommended dose: Men need 1.7 mg every day. Women need 1.5 mg every day. Get it naturally: You can get vitamin B6 from fortified cereals, whole grains, organ meats like liver, poultry, chickpeas, bananas and fortified soy-based meat substitutes.
VITAMIN B12 Why you need it: B12 is vital for manufacturing red blood cells and DNA, and for maintaining healthy nerve cells. Recommended dose: Men and women need 2.4 mcg every day. Some people over age 50 have trouble absorbing the B12 found naturally in foods, so even if your diet contains enough, ask your doctor whether you should take it in supplement form. Get it naturally: You can get B12 from fortified cereals, meat, fish, poultry and milk. VITAMIN D Why you need it: Vitamin D helps maintain bone strength and density and helps to protect you from chronic diseases, including multiple sclerosis, rheumatoid arthritis and autoimmune diseases. Vitamin D deficiency has been linked to increased risk of falling and seasonal affective disorder (SAD). The body produces its own vitamin D from exposure to sunlight. As older people tend to be less active outdoors, their risk for deficiency increases significantly. Recommended dose: People age 50 to 70 need at least 600 IU, but not more than 4,000 IU daily. People age 70 and above need at least 800 IU, but not more than 4,000 IU. Get it naturally: You can get vitamin D from fatty fish, fish-liver oils, fortified cereals and fortified milk products. CALCIUM Why you need it: Although this mineral is most closely associated with strong bones BERGENMAG.COM
BERG.0319.health.indd 38
38
and teeth, calcium plays many other roles in the body. People tend to consume less of it through their diet as they get older. If your body doesn’t get the calcium it needs from outside sources, it will “steal” it from your bones, causing brittleness and fragility. Recommended dose: Women 51 and older should consume 1,200 mg daily; men 51 to 70 1,000 mg daily, and men 71 and older 1,200 mg daily. Get it naturally: You can get calcium from milk and dairy products, tofu, dark green vegetables (especially kale and broccoli), soybeans, canned fish (especially sardines and salmon) and calcium-fortified foods. The body uses calcium and protein together for bone health, so consuming calcium naturally through your diet works best. FOLATE Why you need it: Folate helps prevent high levels of homocysteine, an amino acid carried in the blood that’s linked to heart disease. It’s also used in the production of proteins used to build, maintain and repair healthy tissue, and may help the body protect itself from certain forms of cancer. Recommended dose: Men and women need 400 mcg daily. Get it naturally: You can get folate from dark green leafy vegetables (especially spinach), beans, peas, oranges and orange juice. While folate is found naturally, folic acid is the form used to fortify grain products like flour and cereals and the form added to dietary supplements.

Other Notable Nutrients
■ Potassium is crucial for healthy cell functioning, bone strength and healthy blood pressure, among other things. But many seniors don’t consume the recommended 4,700 mg daily. Fruits and vegetables are the best dietary sources of potassium, especially bananas, plums, prunes and the skins of potatoes. Too much potassium could be dangerous, so consult with your doctor before taking any potassium supplements. ■ Magnesium is a key “helper” in a variety of areas, from your immune system and heart to your bones. Bodies absorb less magnesium as they age. Unfortunately, magnesium gets removed from foods during processing, making it an even greater challenge to get enough. The recommended daily allowance for men over age 50 is 420 mg, and for women over 50 it’s 320 mg. Rich sources include fresh fruits, vegetables, nuts, whole grains, beans and seeds.

RUNWAY REPAST
Dining in doesn’t have to be dull. BERGEN tapped Michelin-starred Ben Pollinger, chef/owner of The Hill in Closter, to create this delicious three-course menu exclusively for our readers. A meal like this is as cutting edge as anything you’ll find at fashion week.
OYSTER PAN ROAST WITH MUSHROOMS AND TARRAGON Yields: 2 servings
INGREDIENTS
Brent Herrig (Pollinger)
n 2 Tbs. butter n 3 oz. beech/Hon Shimeji mushrooms, base trimmed and mushrooms separated n 3 oz. hen of the woods/ maitake mushrooms, base trimmed and mushrooms separated n 1 shallot, finely minced n 4 sprigs parsley n 1 sprig tarragon n 1 cup chicken stock n ½ cup mascarpone, crème fraîche or sour cream n 1 tsp. Dijon mustard n 12 oysters, shucked and removed from shell, liquor reserved
DIRECTIONS
Melt 1 tablespoon of butter in a sauté pan. Add mushrooms and season lightly with salt. Sauté mushrooms until cooked and lightly golden, about 3 minutes. Add half the shallot, turn off heat and toss. Reserve mushrooms in pan. While cooking mushrooms, pick and chop leaves from 3 sprigs of parsley and reserve leaves from 1 sprig. Pick tarragon leaves, chop and add to chopped parsley. Melt 1 tablespoon butter in a separate pan. Add shallots and sweat 1 minute. Add chicken stock, bring to boil and reduce by half. Whisk in mascarpone and mustard and simmer gently for a minute to thicken slightly. Add oysters and reserved oyster liquor. Cook gently for about 30 seconds until oysters warm and edges begin to curl. Taste and adjust salt as desired. Add chopped parsley and tarragon. Divide mushrooms, oysters and then the sauce among the two bowls. Tear reserved parsley leaves and use to garnish.

Place in a glass baking dish, add 2 tablespoons water, cover tightly with foil and bake in oven at 350°F until tender (beets can be pierced easily with a paring knife), about one hour to one and a half hours, depending on size. Let cool to room temperature. Once cooled, remove foil and slip skins off beets. Rinse glass dish and wipe dry. Cut beets into half inch pieces, return to glass dish and toss with 2 tablespoons EVOO and vinegar. Season to taste with sea salt. Reserve. Trim any cartilage or sinew from duck breast. Remove tenderloin and reserve for another use. Make light incisions in skin about ¹⁄8-inch-deep, at a 45-degree angle to the breast, about ¼ inch apart. Turn breast and make same cuts to produce a crosshatch pattern. Season meat side of breast with kosher salt and black pepper. Preheat a heavy cast iron pan or heavy skillet over very low heat. Place breast in pan fat side down and cook until most of the fat has been rendered out and breast has tightened slightly, about 15-20 minutes. Turn off heat, carefully tilt pan back and baste meat side of breast with the rendered duck fat in the pan. Use a large spoon and do this for about 30 seconds. At this point duck should be about medium-rare. Remove to a grate and let sit 5 minutes. While duck is resting, warm beets in oven until heated through. Heat a large skillet over high heat, add 1 tablespoon EVOO and spinach, and season with salt and cook until spinach is wilted. Place spinach on plate. Arrange beets on spinach. Cut duck breast in half lengthwise and then cut each half in half again lengthwise on an angle. Arrange duck over beets and spinach. Garnish with celery leaves. NOTE: Magret is a duck breast that has been raised for the production of foie gras. It is meatier and more steak-like than regular duck breast. Regular duck breast may be substituted with a reduction in cooking time of about 5 minutes due to less exterior fat. In either case, this cooking method renders almost all the fat from the skin, leaving a lean, meaty duck “steak.” Once cooled to room temperature, save the rendered duck fat in a plastic container in the refrigerator almost indefinitely. It is an amazing cooking fat for many things, particularly potatoes. The beets can be roasted and seasoned up to a few days ahead and reserved in the refrigerator. Reheat prior to serving.

CHOCOLATE GANACHE-FILLED MERINGUES WITH RASPBERRY SAUCE Yields: 4 servings
INGREDIENTS
FOR THE GANACHE: n 7 oz. chocolate, either chips or chopped into small pieces n 1½ Tbs. butter n ¾ cup heavy cream n 1 Tbs. raspberry liqueur (optional) FOR THE RASPBERRY SAUCE: n 2 6-oz. containers raspberries n 2 Tbs. sugar FOR THE MERINGUE: n 3 large egg whites n 1 cup superfine sugar, also known as bar sugar n ½ tsp. vanilla extract n a pinch of salt n chocolate for grating
DIRECTIONS
Place chocolate and butter in a medium mixing bowl. Place bowl over a pan of simmering water, allow to melt. Put heavy cream in a small pot, bring to a simmer. Pour over chocolate. Let sit one minute. Remove bowl from pot, whisk well to combine into a smooth mixture. If using raspberry liqueur, add to mixture and whisk well. Reserve. Once it is cooled to room temperature, store in refrigerator. This can be made days in advance. Place raspberries and sugar in small pot. Bring to simmer over medium low heat, allow to cook until raspberries fall apart. Place in blender and blend smooth, or do so with hand mixer. Chill and reserve. This can be made days in advance. Allow egg whites to sit at room temperature for 30 minutes. Place in bowl of countertop stand mixer. Whisk on high speed until soft peaks are reached, about 3 minutes. Add salt and vanilla. Slowly pour in sugar and continue to whisk until meringue is smooth and glossy and stiff peaks are reached, about 4 more minutes. Place meringue into pastry bag with round tip or place into gallon-sized zipper bag. TO ASSEMBLE: Preheat oven to 275°F. Line baking sheet with parchment paper. Scoop 4 mediumsized balls from chilled ganache with medium size ice cream scoop. Reserve cold. If using zipper bag, cut one corner at a 45-degree angle about ½ inch from corner. You will use the bag as the pastry bag. Pipe the meringue into 4 circles about 4 inches in diameter. Gently lay a ball of ganache in center of each. Continue to pipe meringue around and on top of ganache, completely covering, until meringue is about 4 inches high and roughly “kiss” shaped. Feel free to smooth outsides as desired with back of a spoon. Meringues can be made ahead at this point and stored in refrigerator uncovered for a few hours, or baked immediately. Bake at 275°F for 22 minutes, turning tray halfway through. Remove from oven and let cool 10 minutes. Using a fine grater, grate chocolate over meringues. Place a generous spoonful or two of raspberry sauce just off center of plate. Place meringue just next to sauce. Garnish with a few raspberries or a halved strawberry.

EMERALD GREENS
Golf has a Gaelic accent at Lahinch on Ireland’s windy west coast. Just don’t let that medieval castle ruin your game! By Michael Hiller The world has plenty of good golf courses—usually big, sweeping swaths of land that hug coastlines, hike up rocky slopes, pierce clouds and creep through timber. But there aren’t a lot of great ones, the kind that grab you from the first hole, squeeze you in the middle and draw you in so deep you can’t imagine playing anywhere better. Lahinch is one of them. Lahinch Golf Club, a 127-year-old golf course on the southwest coast of Ireland, is among the world’s finest. (The sport’s best will be here in July for the Dubai Irish Open.) And you don’t go to Lahinch to gamble in a casino, dine in the Michelin-star restaurant or lie on a sandy beach (even though it’s one of Ireland’s foremost surfing locations). You go hoping to find that quintessential Irish golf experience that swirls in the back of your mind: emerald green grasses, salty ocean spray and heavy clouds cracking open with drenching rains that soak deep into your bones and can only be warmed by a peat fire and old whiskey. Standing on the third tee box of the Old Course at Lahinch
Golf Club recently, the churning Atlantic over my left shoulder and the number 2 green to my right, I found it easy to pretend that golf originated here, in Ireland, rather than in Scotland, a few hundred miles east across the Irish Sea. A 30-mile-an-hour rainstorm whipped in off the ocean, first slapping my ball off its wooden tee, then batting the tee shot into knee-deep rough. I popped the ball back to the fairway on my second shot, where it bounced between uneven patches of turf and soil as if the course were a pachinko machine. I saved par with a punch shot to the left edge of the green, allowing the wind to nudge the ball close to the hole for a tap-in. The rain stopped when my foursome reached the par-5 fourth hole, a narrow fairway that threads to a green tucked directly behind a 35-foot-tall sand dune known as Klondyke Hill. A burly man stood atop the dune, directing traffic. When he waved his red flag, I hit. My approach shot had to fly over the dune then land softly on the other side. “Sorry, lad,” the flag man called to me as I hiked to the green.
“The wind got the best of it.” The par-3 fifth hole is no less of a challenge: a 154-yard blind shot to a sunken green surrounded by yet more tall dunes. “There’s an old Irish saying about golf,” says the innkeeper of the Vaughan Lodge, a popular hotel near the golf course. “It says, ‘There’s no links without the sea, and no golf without the wind.’ And no one knew this better than Old Tom Morris.” Morris, of course, was the original designer of the Old Course at Lahinch (he didn’t take all the credit—he said Lahinch was the finest natural links course he’d ever seen) and also of another classic: the Jubilee Course at St. Andrews in Scotland. By the time my group walked off the 18th hole, we were humbled, sodden, exhausted— yet eager to play it again. But that would have to wait because Lahinch is more than a one-horse town. Across the street from the Old Course lies the Castle Course, a shorter, flatter 18-hole sibling punctuated by the ruins of a 14thcentury castle. And we played that next.
Opposite page, clockwise from top: The single remaining wall of Dough Castle (1306) provides a dramatic backdrop to the seventh hole on Lahinch’s Castle Course; famous for golf since the 1890s, Lahinch also has become a popular international surfing destination; goats have roamed across the links since the early 1900s and continue to be a source of amusement to visitors; stunningly beautiful scenery is an added bonus; a traditional heavy-on-the-protein Irish breakfast is required before hitting the links; consider yourself lucky if you get this close; the shorter Castle Course can serve as a warmup for its bigger sibling, the Old Course, across the road.

GOAT CHEESE & GRAPEFRUIT SALAD Yields: 2 servings
INGREDIENTS
n3 ½ oz. ciabatta or sourdough bread (slightly stale is best) n 2 Tbs. olive oil n 2 oranges n 2 pink grapefruits n juice of ½ lemon n 3½ oz. arugula leaves n 2 oz. mâche n ¼ cup walnuts, smashed n 4 oz. soft goat cheese n 1 Tbs. argan oil n sea salt and freshly ground black pepper to taste
DIRECTIONS
Preheat oven to 350°F. Rip the bread into bite-sized pieces and put into a roasting pan. Drizzle with the olive oil and bake for 5-6 minutes, until golden brown. Set aside to cool. Segment the oranges and grapefruits over a mixing bowl to catch the juices as you go. Add the lemon juice and a pinch of salt. Put the arugula and mâche leaves into the bowl and toss together. Arrange on a serving plate and spoon over the juices. Scatter the bread and walnuts over the top, and dollop over the soft cheese. Drizzle over the argan oil and add a pinch of pepper to the goat cheese. Serve immediately.
Walnuts are a great addition to this salad because they are high in fiber, polyphenols and polyunsaturated fats. Walnuts also have been shown to help prevent breast, prostate and colon cancers, reduce the risk of cardiovascular disease and improve cognitive function.” —Nancy Cooper, registered dietitian, private practice in Teaneck and Ramsey

FRIED ATLANTIC SHRIMP WITH PRESERVED LEMON & OREGANO Yields: 4 servings
INGREDIENTS
n 4 Tbs. olive oil n 4 garlic cloves, roughly chopped n 1 preserved lemon, pith discarded and the skin finely chopped n 1¼ lbs. peeled jumbo shrimp n 1 tsp. ground cumin n ½ tsp. ground black pepper n ½ tsp. paprika n ¼ tsp. ground turmeric n ¼ tsp. chile flakes n handful of finely chopped cilantro leaves n handful of finely chopped flat-leaf parsley leaves n 1 lemon cut into wedges, to serve n sea salt
DIRECTIONS
Heat the oil in a large frying pan over medium-high heat. Add the garlic and preserved lemon and stir-fry for 10 seconds until fragrant. Add the shrimp and continue to stir-fry for 2-3 minutes or until just turning pink. Add the spices and dried oregano to the pan, season well, and continue to stir-fry for 1-2 minutes until the shrimp are cooked through. Stir through the chopped herbs and serve immediately with the lemon wedges.
Shrimp is a great source of lean protein, but don’t be afraid to try other proteins that would work well in this recipe, like calamari, scallops or filets of white fish like sole, cod or dorado. To cut down on excess calories and bad fats, opt for grilling or roasting the protein instead of frying, as fried foods are higher in artery-clogging trans fats.” —Robin DeCicco, holistic nutritionist, The Power of Food Education, Ramsey

POMEGRANATE & CHOCOLATE CAKE Yields: 8-10 servings
INGREDIENTS
FOR THE CAKE: n 1 cup self-rising flour n 1 tsp. baking powder n ½ cup plus 2 Tbs. cocoa powder n ¾ cup light brown sugar n 3 free range eggs n 2 sticks (½ pound) butter, melted, plus extra for greasing n 2 Tbs. pomegranate molasses n 2 Tbs. honey n 1¼ cups Greek yogurt n sea salt FOR THE TOPPING: n ²⁄ ³ cup heavy cream n 3½ oz. dark chocolate n 1 Tbs. honey n handful of pomegranate seeds
DIRECTIONS
Preheat the oven to 350°F and grease and line a 9-inch springform cake pan with butter and parchment paper. Sift the flour into a mixing bowl. Add the baking powder, cocoa powder, sugar and a pinch of salt. Mix together gently to combine ingredients. In a separate bowl, beat the eggs until really fluffy and light in color using a hand-held mixer. Pour the melted butter and pomegranate molasses into the flour and mix together. Fold in the honey and yogurt, and then add the beaten eggs, a little at a time, and fold together until completely combined. Scrape the mix into the cake pan and roughly smooth over. Bake for around 25-30 minutes or until risen and the sides are just pulling away from the pan. The cake will still be a bit wobbly, but it will firm up as it cools. Remove from the oven and set aside to cool in the pan. Meanwhile, heat the cream in a pan over low heat. Break the chocolate into a small mixing bowl and add the honey. Pour the hot cream over the chocolate and gently stir together until velvety smooth. Leave for 10 minutes to cool and thicken.
Swap out the butter for ½ cup of applesauce and ½ cup mashed avocado to reduce calories and fat content. Applesauce is low in calories, fat free and will help make the cake moist, while the avocado will infuse the cake with hearthealthy fats.”
—Anna Khesin, registered dietitian, Riverfront Nutrition Associates, Oradell
Spoon the topping over the cake and spread out using the back of a spoon so that it drizzles down the sides. Scatter the pomegranate seeds over the top and leave to set before serving.

Onions Go Green
Scallions—a versatile, verdant veggie—find a tangy place in cuisines all over the world.
Want onions that won’t make you cry? Stronger than chives but milder than most other onions, scallions— alias green onions—just may fit the bill. They’re young plants of the Allium genus that haven’t formed a full bulb. (Some varieties can’t.) They have long, tubular green stems, are sold nestled in bunches and can be served cooked or raw. Chefs have the option of using the bulbous bottom of the vegetable, the hollow green top or—for boosted nutrition and flavor—the entire stem. Adding a sprinkle of chopped scallions to a dish right before serving can provide a mild onion flavor, a hint of texture, a burst of bright green color and several notable health benefits. This slender veggie gets around. Scallions are grilled and sprinkled with salt in Mexico, ground for a condiment in the Philippines, munched as an appetizer in India and added— chopped—to mashed potatoes in Britain. And in the homes of Sephardic Jews in or from Iran or Afghanistan, they take on a special ritual function; in memory of the ancient days of slavery in Egypt, family members gathered for the Passover seder meal use long green onions to ceremonially whack each other.
in one cup), which helps the blood to clot. In fact, sprinkling just a tablespoon of scallions over a dish as a garnish can offer 16 percent of DV of the vitamin. BUY/STORE/SERVE Scallions should appear bright, feel crisp and be free of any brown spots, wilting or yellow leaves. They can be stored for several days in the
refrigerator when wrapped in plastic. Cooks Illustrated recommends refrigerating them upright in a container with a little water and topped with a plastic bag for ideal freshness. Once you’re ready to use it, wash the vegetable well and peel the thin layer of skin off the unformed bulb before slicing off the bottom. Chopped scallions offer a blast of flavor when served in eggs (add them to your favorite omelet) or rice, or when baked into biscuits. Sprinkle the raw tops thinly sliced over soups, salads and even on top of cooked fish marinated in an Asian sauce to add zing. A popular Chinese dish, cong you bing, is made by combining the scallion with flour and sesame oil to cook it into a flaky, crispy pancake— Marco Polo is said to have become fond of this treat during his travels. But don’t be afraid to celebrate the scallion for its simplicity. Coat scallions with olive oil and grill or roast them for a sweet and savory side dish, or whizz them in a food processor for a zesty vinaigrette. Top Chef Masters judge and food writer Francis Lam earned internet popularity for an addictive Cantonese ginger-scallion sauce recipe he published in Salon paying homage to a dish he loved in his childhood. —Liz Donovan
POWER UP Scallions pack a wallop nutritionally too. A little bit of them goes a long way not just in flavor, but in beneficial content. When a full cup of scallions (tops and bottoms) is used in a dish, it adds only about 30 calories and 0.2 grams of fat. With that comes an array of health-boosting vitamins and minerals, including vitamin C (31 percent of the recommended daily value) as well as vitamin A (20 percent of DV) and its related antioxidants, such as lutein, zeaxanthin, beta-carotene and retinol (the last two linked to skin and eye health). Scallions also have a respectable amount of fiber (10 percent of DV) and of the B vitamin folate (16 percent of DV), which promotes cell growth, along with less than 10 percent of DV of iron, calcium, potassium and manganese. Besides helping the body function at its best, studies have found that eating Allium vegetables may reduce the risk of various types of cancer, including colon, prostate and stomach. But the pièce de résistance is the vegetable’s potency of vitamin K (more than 250 percent of DV
DID YOU KNOW? In Chinese households, scallions are used in tea to treat a variety of ailments, including fever and headaches, and as a sedative for children, according to Eileen Yin-Fei Lo’s book The Chinese Kitchen. BERGENMAG.COM

Floral Notes
Flowers and springtime go hand-in-hand, so try Mexico’s most beloved cocktail—sorry, margarita. After one sip of this fruity, tequila-based concoction, it’ll be a favorite of yours too.
STRAWBERRY CHAMOMILE PALOMA INGREDIENTS
FOR THE CHAMOMILE HONEY SYRUP: n ¾ cup water n 1 ⁄3 cup honey n 1-2 chamomile tea bags FOR THE DRINKS: n 3 oz. fresh grapefruit juice (about half of 1 grapefruit) n 2-4 Tbs. chamomile honey syrup, depending on your taste n 2 oz. tequila n 4 fresh strawberries, sliced n sparkling water for topping off n crushed ice
INSTRUCTIONS
CHAMOMILE HONEY SYRUP: n Combine water and honey in a small saucepan and bring to a low boil, simmer 1 minute and remove from the heat. Add the tea bag, cover and steep for 5-10 minutes. Remove the tea bag and allow the syrup to cool completely. Store in the fridge.
DRINKS: n Add the grapefruit juice, chamomile syrup, tequila and strawberries to a glass. Using a muddler (or even the end of a rolling pin), gently push the strawberries down until they release their juices and are lightly smashed. Add a handful of ice and then add sparkling water to top off. Give the drink a gentle stir. Taste and add more chamomile syrup if desired. Garnish with fresh chamomile flowers (yes, they’re edible!) and strawberries if desired.
Substitute the grapefruit juice in this recipe with fresh pomegranate juice. Grapefruit juice is a bit too acidic and pomegranate juice would taste more pleasant, plus it’s full of antioxidants.” —Rosalio Rojas, chef, Riviera Maya, Bogota Recipe courtesy of halfbakedharvest.com

RESTAURANT REVIEWS:
A Taste of Ireland
Any bartender can pour a pint, but your Irish eyes (and appetites) will smile at these five Bergen destinations.
Though not a drop of Irish is in my blood, I’ve been thoroughly blessed with good fortune when visiting Bergen’s many Irish restaurants and taverns. From uniting with old friends and kindling new romances to playing music gigs and winning trivia night, I’ve enjoyed many memorable moments in these establishments. And I haven’t even mentioned the best part yet—the food and drink. Here are a few of my favorite places to sip a pint of Guinness while noshing on bangers and mash. —Darius Amos
Biddy O’Malley’s Each of Biddy O’Malley’s two locations has a distinct vibe. At the cozy Northvale restaurant, you’re instantly greeted with a warm, neighborhood-bar feeling. It’s a tad different in the downtown Englewood spot, where a trendy and hip atmosphere prevails. The food served at both, however, is equally delicious. For a hearty Irish dinner, a traditional shepherd’s pie is a great and tasty way to fill an empty stomach (it’s also one of several gluten-free options on the menu), as are the Guinness pot pie and fish and chips. But one of my go-to dishes here is the hanger steak, which is served with a delightful caramelized-Brusselssprouts-and-chorizo-potato hash.
The Shannon Rose Pro tip: Skip Thursday trivia because my team will beat yours every time. But on any other night, there is plenty to appreciate at this Ramsey pub, from the knowledgeable bartenders and staff to the inventive menu and diverse drink selection. The crispy mozzarella tempura and nachos are no-brainer appetizers, but picking from a variety of Ireland-inspired entrées is a challenge. With an assortment of traditional St. Patrick’s Day fare (corned beef and cabbage, Irish breakfast), as well as in-house creations like Guinness pulled pork and The Dublin Burger (Irish cheddar and bacon on an English muffin), it’s a good thing there’s always a next time to try something new.
Biddy O’Malley’s, 191 Paris Ave., Northvale, 201.564.7893; 36 N. Van Brunt St., Englewood, 201.608.5545, biddyomalleys.com

Tommy Fox’s This neighborhood bar in downtown Bergenfield becomes a main attraction around St. Patrick’s Day (it’s a beacon for parade revelers), but you can count on it all year long for outstanding St. Paddy’s Day cuisine. Standards like chicken pot pie, corned beef sandwiches and bangers and mash always earn a thumbs-up, as do the Gaelic steak (black angus New York shell with a Jameson whiskey cream sauce) and, my personal favorite, Tommy Fox’s chicken curry. OK, so the restaurant does more than just Irish cuisine; they also do Italian dishes, Sunday brunch, live music and special events—and they do it all well. Tommy Fox’s Public House, 32 S. Washington Ave., Bergenfield, 201.384.0900, tommyfoxs.com

Davey’s Root for any squad without getting booed—whether it’s the Mets, Yankees or Tottenham Hotspur—at this longtime Montvale eatery and sports bar. While the games are good, the food is even better. Delicious Irish fare ranges from Dublin grilled cheese to sausage and chips, and there is a seemingly endless selection of sandwiches. But on every visit to Davey’s, I find it difficult to turn down the chefs’ baked filet of salmon, which comes with the most exquisite balsamic glaze. When washed down with a Smithwick’s, it’s the perfect meal for just about any time of year. Davey’s Irish Pub & Restaurant, 5 Park St., Montvale, 201.391.9356, daveyspub.com
Hearth & Tap Located on the border of Pearl River, N.Y. (ranked in the top 10 among U.S. neighborhoods with the highest Irish-American population), Hearth & Tap caters to a clientele that appreciates an oldfashioned shepherd’s pie as well as innovative plates like espresso-rubbed New York strip. I fancy their crispy Brussels sprouts app with a to-die-for honeychili glaze and a farm egg and pork belly flatbread to share. And though you can’t go wrong with the aforementioned steak as an entrée, consider any special featuring short rib—you won’t be disappointed. I’d also be remiss not to mention Hearth & Tap’s cigar bar and lengthy list of Irish, Scotch and American whiskeys. Hearth & Tap Co., 125 N. Kinderkamack Rd., Montvale, 201.307.6300, hearthandtap.com

{ A BERGEN MOMENT }
Photo courtesy of Tammy Tarabola Photography
“During a family portrait session at Cooper’s Pond in Bergenfield, I captured a brother and sister looking on just as geese and egrets gracefully floated past along the water. This serene area is loaded with picturesque backdrops, especially during spring, but the photographs have an extra special meaning because the pond is one of the family’s favorite locations.” —Tammy Tarabola, Tammy Tarabola Photography, Leonia
