Of Moments and Milestones We don’t need an excuse to party, and if there’s reason to celebrate, any month of the year will do just fine. But there’s a reason that May has always been our “Celebrations Issue.” Sure we toast our mothers this month, but it’s the time of year that launches wedding and graduation season, not to mention showers, Bar and Bat Mitzvahs and communions. I know my calendar is full: This month, I’ll attend a wedding, a college graduation, a shower and a first birthday. Each party will, of course, be filled with laughter, great food and lots of reminiscing. And isn’t that the point? When we pause to celebrate something noteworthy, doing so invites us to also revel in the good things in life and our relationships with one another. Milestones merit parties, right? But they also act as reminders of the everyday moments worth fêting and the events we don’t necessarily celebrate but perhaps should: paying off a mortgage or student loan, achieving a fitness goal, finishing an overdue yard project. I find that celebrating big events helps me notice the smaller, daily matters that can be equally exciting. One such example can be seen on page 120 in our regular column “A Bergen Moment.” In this installment, we show an precious image of a young mother, who is clearly lost in the moment as she holds her new baby. Our guest photographer captured the shot, saying she wants moms to look at their photos and remember not just what their babies looked like, but what it felt like to hold them. Perhaps one day in the future, Penny Chan will look back at the photos from her first big shindig and be grateful for how it connects her not only to her family but to her culture. For now, you can see and read about the party in “Birthday Bash, Circus Style” on page 58. Bat Mitzvah girl Kayla Mandel too will be reminded of her family’s customs and values, and perhaps she’ll smile, hoping one day to host such an event for one of her children. We know you’ll appreciate and get a kick out of the décor in “Pop Art Party,” beginning on page 64. No doubt you’ll want to be dressed to commemorate upcoming events. Turn to page 46 for six glamourous dresses that’ll make you feel party ready. Once you have your event attire picked out, flip to Bergen Buzz, where BERGEN staffers share their secrets for looking great— whether they’re headed to a wedding, reunion or just a night out with friends. We’re grateful to our neighbors who invited us to take a peek at their special events and allowed us to share them with our readers. Hopefully, these pages will offer ideas and inspiration for your upcoming milestone events and serve as a reminder to live more wide awake as we look for everyday happenings worth celebrating. Developers have confirmed that the huge 3 million-square-foot retail and entertainment center at the Meadowlands will open in “late summer.” It will feature more than 400 stores and restaurants, a ski and snowboard park, an ice rink and indoor water and amusement parks. • What’s new with Stew? Meanwhile, grocery gold mine Stew Leonard’s just broke ground on its 80,000-square-foot location at Paramus Park on Route 17, and it’s planning to open this fall. The supermarket chain is known for its one large aisle of dairy products, baked goods, fresh seafood and a butcher shop. We’re basically already in line.

The Paramus resident and Bergen Catholic alum won the 133-pound national wrestling championship for Rutgers University at the NCAA Division I Wrestling Championship as he and teammate Anthony Ashnault of South Plainfield (who won the 149-pound class) became the first national champions in school history. After Suriano, a junior, and Ashnault, a senior, won their individual titles, they got the VIP treatment at a recent New Jersey Devils game, where they met with the players, received custom jerseys and rode the Zamboni during intermission to applause from the crowd.

CARIBBEAN COOK-OFF The Bahama Breeze restaurant chain held its own Northeast cooking competition of sorts at its King of Prussia, Pa., location and Jhonny Fernandez, a team member at the Bahama Breeze in Paramus, competed on behalf of Bergen County after winning the local preliminary round. The Lima, Peru, native and his eight competitors—including defending champion Augusto Garcia, also of Bahama Breeze Paramus—each had to prepare a signature Caribbean-inspired dish for a panel of judges, who then picked a “Top Chef.” “I was honored to represent the Paramus Bahama Breeze in the competition,” Fernandez says. “The inspiration for my Jerk Steak and Jerk Lobster dish came from my roots in Peru and experience working with Bahama Breeze. HOME, SWEET HOME Thinking about buying or selling a house here? The median home value in Glen Rock is $627,400, down 2.7 percent over the past year, according to Zillow. The home styles and price points are quite varied, from colonials and splits to ranch homes and bungalows.
WHAT’S IN A NAME?
Glen Rock got its name from a 570-ton boulder (rock) in a small valley (glen) around which it settled. The boulder was believed to have been deposited by a glacier, and was also a meeting place for the Leni Lenape. It now sits at Doremus Avenue and Rock Road, and locals appreciate this not-so-subtle reminder of their hometown’s storied past.
Glen Rock was the site of one of Bergen County’s most notable public transportation accidents. In 1911, William Hutchinson, a trolley operator for the North Jersey Rapid Transit Company who was one day away from retirement, died in a crash with an incoming trolley due to signal problems at the intersection of Grove and Prospect streets. The accident was the beginning of the end of the rail system that connected Elmwood Park and Suffern, N.Y. The site of the collision was just behind where the Glen Rock Gurudwara stands today.

RAISE ACTIVE KIDS Helping children to be fit doesn’t have to cost a lot, but the payoff is huge.
Though Bergen overall is considered one of the state’s healthiest counties, there’s still a concern that today’s kids weigh more and move less than ever before. According to 2017 data from the state Department of Health, 10 percent of New Jersey children ages 10 to 17 years old are obese, while 14 percent of all high school students are considered overweight by body mass index (BMI) standards. What’s changed? For one thing, the simple suggestion to “go outside and play” now works only for those lucky enough to have both neighborhood friends who are home and adults around to keep an eye out. For another, the proliferation of screen-based entertainment, especially

{ HEALTH } smartphones, now means kids don’t actually have to leave the house— or even the couch—to be social. Moreover, many schools, under pressure to raise standardized test scores, have cut back on recess. As a result, many children aren’t getting the 60 minutes of daily physical activity recommended by the U.S. Department of Health and Human Services. “Because of the childhood obesity epidemic, we are starting to see patients developing chronic conditions at an earlier age,” says Leigh Ettinger, M.D., a pediatric nephrologist at Hackensack University Medical Center, naming ailments including sleep apnea and gallstones. “A young, developing skeleton is not able to hold a lot of weight comfortably, and organs are still growing.”
FITNESS BY EXAMPLE
The good news is that many of the negative trends can be countered by parental effort. Moms and dads who model active behavior and a healthy diet can make a big difference. That means doing things like walking together, hiking on weekends and being active when you take kids to the playground. If necessary, put this
priority into your calendar: Schedule at least 30 minutes three times a week to be active with your kids. “Exercise should be enjoyable,” Dr. Ettinger says. “Kids can do lowimpact activities, like swimming and biking. You don’t want to turn them off to exercise.” Parents also can help by setting ground rules and expectations. While you’re getting dinner together, for example, tell the kids not to watch TV while they’re waiting— even playing an active video game like Wii Fit or doing a craft is better than sitting on the couch. See the sidebar “Make Activity Part of Life” for more ideas. The American Heart Association reports that physical activity influences weight, reduces blood pressure, raises HDL (“good”) cholesterol, reduces the risk of diabetes and some kinds of cancer—and leads to greater selfconfidence and higher self-esteem. But Dr. Ettinger reminds parents to emphasize good nutrition in addition to exercise. “There should be a good balance,” he says, “because a child can burn X-number of calories in an hour, but he or she can drink just as much in a minute.”
HOW MUCH EXERCISE?
The U.S. Department of Health and Human Services recommends that school-aged children and adolescents (ages 6 to 17) participate in a variety of physical activities they enjoy that are appropriate for their age. They should be physically active for 60 minutes or more each day and include these elements:
• Aerobic activity: either moderate- or vigorous-intensity aerobic
physical activity (this should make up most of the 60 or more minutes a day). • Muscle-strengthening: activities that involve moving muscles against resistance, such as using free weights, elastic bands or workout machines or walking/running up stairs or hills (at least three days a week). • Bone-strengthening: activities that produce an impact on the bones, such as hopping, skipping, jumping rope, running, weight lifting or playing sports like volleyball, tennis, and basketball (at least three days a week).

The best way to create healthy exercise habits is to incorporate physical activity into daily life. Here are some ideas for getting your kids up and moving.
• Find an exercise or sport your child
enjoys. In addition to team sports that schools and communities offer, dance, tennis, swimming and martial arts are good options for youngsters and teens not interested in team sports. • Check your local YMCA or recreation program for low-cost classes. • Check cable and online listings for free fitness or yoga classes you can do at home with your child. • Allow kids to walk to and from school, if possible. • Put your child in charge of walking the dog. • Crank up the music and sing and dance as you clean together. • Encourage biking or walking with friends as opposed to texting. • Use the time during TV commercials to do quick workouts, such as abdominal or stretching exercises or a series of planks. As a bonus, if you do this, kids won’t be using commercial time to get a snack. • Encourage an exercise journal—kids respond to being held accountable.

THAT UNDERDOG FEELING
With his new series on Hulu, Muslim comedian Ramy Youssef busts the stereotypes about a misunderstood minority: New Jerseyans. By Haley Longman
Our state hasn’t always had the most accurate portrayals in pop culture. But comedian and Rutherford native Ramy Youssef tries to change that narrative—and the narrative for Muslims— with his new Hulu sitcom, Ramy. The eponymous series streaming now presents a modern Muslim family in which the 20-something title character balances his religious identity with his desire to be a regular ol’ millennial. And North Jersey is the backdrop for the show, a choice Youssef made because it’s where his Egyptian parents immigrated to and where he grew up. Youssef, who’s also gearing up for his first HBO standup special, talks to BERGEN exclusively about his Bergen County upbringing, the “Jerseyness” of Ramy— and why this little ol’ state of ours is so misunderstood. Congrats on Ramy! Can you briefly sum up the premise of the series? It’s a dark comedy that gives a look at an Arab Muslim family in a very human way. We’re following my character, Ramy, who is trying to figure out how to sympathize with his culture and his faith and hold onto his traditions while being in the present moment with his peers. After attending Rutherford High, you did a brief stint at Rutgers. What did you study there? Political science and economics. I was there for, like, two years. It was Rutgers in Newark, which I like to clarify because it’s a great campus and I feel like people don’t know that. Yes, I went to Rutgers–New Brunswick, and they’re totally different experiences. Totally different. (Laughs.) I did not have a fat sandwich every night. I had to travel for those.
So how did you get into comedy? I started doing sketch comedy with my best friends from high school, including Steve Way, who is on this show. We began performing and then I started acting and I moved to L.A. in 2012, at which point I began to dabble in standup. In 2017, you made your big TV debut doing a set on The Late Show with Stephen Colbert. Did you two bond over your Jersey backgrounds? We vibed on the set, and it was nice to expand on that conversation about both being in show business and having Jersey as a part of our lives. I also returned to Colbert last month to promote this show, so it was really cool. Of course Ramy is based upon your own experiences, but why else did you want the show to be set in North Jersey? There’s something about Muslims that is misunderstood, but New Jersey is misunderstood too, so I thought it’d be interesting. I have a harder time defending New Jersey than defending Muslims because people have their preconceived notions. I’m like, “It’s one of the most diverse and cool places to be!” But there’s this underdog feeling of being in the shadow of the city. The point is to show a family in a human way, and it felt like Jersey was the best place to do that. It’s where people go to live the best version of their lives. Will we be seeing a lot of recognizable Jersey landmarks on the show? We actually filmed in New York. We see a little bit of Jersey in a glimpse but the rest of it is just set in a vague North Jersey town. We don’t go into the specifics of the places they’re in, but we have it in the more upscale suburbs of Paterson, loosely. We have the Jersey diner vibes, for sure. BERGENMAG.COM

How does this show depict Muslims and New Jersey differently from what we’ve seen elsewhere in the media? Arab culture is associated with acts of terror, so to not even put that in that frame and just show a human family is something. As for the Jersey aspect, this show has nothing to do with the Shore or the Mob—we don’t point the finger at the “Jerseyness” of it too much. I wanted to make a story that would be just nonviolent and emotional and funny. What are some of your favorite New Jersey pop culture moments? I love The Sopranos. It’s probably one of the best TV shows ever made, but it doesn’t do a great PR job for New Jersey. (Laughs.) Do you still live in Jersey? I divide my time between New York City and Los Angeles, but my family is still in Rutherford, so I spend a lot of time there too. What are some of your favorite spots in Rutherford when you go back home to visit? Ice Cream Charlie’s and Da Mario Pizza are the big winners for me in Rutherford, always. That’s a good night. I also like that little cupcake shop [Sweet Avenue Bakeshop] across from Ice Cream Charlie’s. Sometimes I’ll do a combo of ice cream and cupcakes. Crazy. Besides your upcoming HBO comedy special, what’s next? I hope to get more episodes of Ramy. If so, there are a few very specific Jersey ideas we’ll get to explore. As I continue to do different projects, I always want New Jersey to be the backdrop. It’s one of those places that for good and for bad, anything could happen and there are really many sides to it. It’s really cool.

The elegance and style of this 16th birthday party is matched only by its guest of honor. By Darius Amos

It’s every little girl’s dream: a coming-of-age celebration filled with glitz and glam and shared with hundreds of her closest family and friends. That’s exactly what Englewood Cliffs teen Camila Scherrer got for her 16th birthday, a party worth featuring on a reality TV show but without any of the drama and spectacle that makes those programs notorious. “Camila is very mature for her age,” notes party planner Nada Khairullah, who owns Ridgefield-based Wedded Events with her husband Ayham Hrib. “She wanted a Sweet 16 that was very elegant and sophisticated with just a few girly touches—no themes. She recognized that the party symbolizes the transition to becoming a woman.” Camila was humble throughout the planning process, with many of the decisions made by her parents. Mother Vanessa and father Robert Scherrer actually came up Camila Scherrer shares a special dance with her father, Robert, during her Sweet 16 party last year at the Rockleigh Country Club. Camila wore a simple white lace dress adorned with Swarovski crystals from Memories Bridal by Reem in Ridgefield.

with the idea of an extravagant event, first securing the right venue—the Rockleigh Country Club—then scouring Instagram and other social media outlets to find a top-notch firm to organize and throw the party. But it was good old word of mouth that ultimately connected the family with Wedded Events. “The owner of Memories Bridal by Reem in Ridgefield, the boutique that sold Camila her Sweet 16 dress, recommended us, and the rest is history,” Khairullah says. Camila’s mother was so excited to start planning, Khairullah says, adding that Camila wasn’t even present at the first appointment. “I asked her why she wanted to throw her daughter such a big party, and she said because ‘Camila is a straight-A student, never argues or gets in trouble,’” Khairullah recalls. “She wanted to do something special for her daughter.” Khairullah took “special” to another level. A believer in good first impressions, Khairullah and her team built a 5.5-foot-tall tabletop tree that greeted all who entered the Rockleigh. The tree, decorated with roses in various shades of pink, held the name cards of each of the 250 guests. Further inside was a hot pink carpet leading to a step-and-repeat area, where a professional photographer snapped

paparazzi-style photos of the revelers in front of a backdrop adorned with roses. This wasn’t a pay-for-your-photos operation either—the highquality images were printed on site and given to the guests. The reception area and party room were decorated lavishly and elegantly. Khairullah lined dining tables with custom linens and rested each dinner plate on a diamond crystal charger. Tables also featured custom-made menus by Boxed Wedding Invitations and 37-inch-tall crystal candelabra centerpieces that held hydrangeas and roses. The guest of honor and her court, meanwhile, sat at a majestic 16-foot-long table that featured a gold and tufted base with 300 crystals and was topped with (naturally) pink and white roses from end to end. While Camila sat in a large throne, each member of her court had her own gold heart-shaped chair imported from Dubai. From the decorations and custom furniture to the food (lamb, salmon and Haagen Dazs ice cream for dessert) and entertainment, Camila’s parents spared no expense. “They wanted to go all out,” Khairullah says, “and they did—all for their daughter.”

BIRTHDAY BASH, CIRCUS STYLE To give her 1-year-old a Korean celebration no one would forget, Hannah Choi went all out. And why not? Parties are her business. By Haley Longman Photography by Story by Mia Most 1-year-olds cry, but not Penelope Chan. In the traditional Korean Doljabi ceremony, a baby sits in the middle of a circle with an array of objects placed in front of him or her, and the first item the baby touches supposedly foretells his or her future. It’s too much for most babies—all those grown-ups crowding around, screaming, clapping and snapping photos. But Hannah Choi’s daughter Penelope took it all in stride. “She didn’t cry at all, which is very rare,” Choi boasts. “I was waiting for her to cry, but she just looked up and looked around. She was loving it!” Maybe it’s because Penny knew that her mom, owner of Waldwick-based Little Confetti Events, who specializes in Korean birthday parties, was both party host and planner that day in January. Perhaps Penny realized that Choi felt “a personal pressure” to throw an amazing fête for their 110 guests and needed her to behave so that the kid-friendly, elegant circus-themed party could go off without a hitch. Penny’s party, held at Waterside Catering in North Bergen, incorporated many Brian Chan, Little Confetti Events party planner Hannah Choi’s husband, proposed the circus theme for their daughter Penny’s party, since he wanted it to cater to their youngest guests. Choi added her “elegant” twist by sticking to a red and gold color scheme, rather than bold primary colors.

There were two clowns from clowns.com to entertain the 40+ kids with balloon animals, face painting and a magic show; giveaways with trinkets and stuffed circus animals; a “concession stand” and candy buffet; and popcorn kernels interspersed throughout the spreads as if it were confetti. The theme melded with the traditions too. Next to the three-tiered cake by Sugarsuckle, Choi set up two tables, one for the traditional Korean bean towers, and one for the Doljabi items and raffle station. “Guests got to guess which object Penny was going to pick during her ceremony by grabbing a popcorn kernel raffle ticket and dropping their guesses into the popcorn boxes,” Choi says. (The birthday girl chose money, suggesting a “rich life.”) Though she’d only planned a circusthemed party once or twice in the past, Choi wanted to ensure that Penny’s celebration felt different from her other events. That meant ordering a custommade ringmaster dress from Etsy for the baby to wear during the cake smash portion of the afternoon, where the

toddler made a mess of the frosting for a cute photo op, and hand-painting animal figurines as centerpieces instead of the floral arrangements Choi usually uses for her clients. Choi enlisted friends on party day to help her balance being both ringmaster and mom. “I asked two good friends to come with me on the day-of and designated each person to work on one aspect of the space, such as the centerpieces or the candy buffet, while I did the main tables,” Choi says. “If I needed to finish my hair or makeup I asked a friend to finish what I was doing. Then, afterward, family members stayed to help clean up. And during the party, I still had fun!” So much fun, in fact, that she doesn’t shrink from the thought of hosting (and executing) more large parties to celebrate her well-behaved daughter’s future birthdays—just maybe not this large. “I don’t plan to do anything this big again, but I’m a party planner, so you never know,” Choi says with a laugh. “Maybe I’ll do a big second birthday party but not at a wedding hall, and not for 110 people. Maybe for, like, 50.” After all, you’re only 1 once.

POP ART PARTY
One family took their daughter’s costume Bat Mitzvah to the max for an Andy Warhol-inspired soirée that was a work of art.

When Azi and Rachel Mandel were planning their youngest daughter Kayla’s Bat Mitzvah, they wanted a theme that would make the party pop. The event was held on March 14, 2019, just days before the Jewish holiday of Purim, when it’s customary to dress up. But instead of merely requesting that all of their 215 guests come in costume—which they did—the Bergenfield parents took things up a notch, going all-out with an Andy Warhol theme and dressing the family as pop art comic book characters. “We found the fabric while in Slovakia [in central Europe] and wanted to create fun clothing,” Rachel says of the custom-made dresses and suits she had designed by Nairi Barsegian for herself, her husband, the Bat Mitzvah girl and her three older siblings. “We wanted to look like comics out of our own comic book.” And extensive hair and makeup—which took one hour each, per person—truly helped them achieve that. With the costumes taken care of, the Mandels needed the perfect space and décor to fully set the pop art mood. In addition to serving as the perfect blank canvas for their vibrant décor, they wanted a spacious venue with a large dance floor to provide ample room for the DJ as well as MC, dancer and party starter extraordinaire Shimi Adar, who would get all the guests grooving. The Mandels Bat Mitzvah girl Kayla Mandel, her parents and three older siblings each sat for one hour in hair with Brian Boublis and Ashley Leon and one hour in makeup with Denille Deserio to make themselves look like comic book characters for her pop art-themed celebration.

were able to achieve their vision with the help of Marisol Rossi at Glow Party Venue in Waldwick. “The vibe of Glow was perfect,” Rachel says. “We loved the large space and décor elements, like the light-up tables, couches and the reveal balcony,” where Kayla was introduced to her guests amidst a round of cheers. From there, they put together an all-star team to bring the pop art theme to life; Michal Weinstein of Events360 and MLWDesign conceptualized the logo and branding, and Deena Greenstein of LBK Events in Englewood helped set up. When guests entered the space, they signed an acrylic sign-in board, which featured a photo of Kayla given the Andy Warhol treatment that set the tone for the fun ahead. They then found their table numbers on soda (or “pop”) cans with custom labels, and grabbed a drink at the bar wrapped with Warhol-inspired signage that read “Kayla’s Kola.” After the cocktail hour, guests made their way to their seats before the Bat Mitzvah girl and her family were introduced onto the dance floor, which was adorned with Kayla’s party logo. with black and white polka-dot tablecloths and centerpieces of Campbell’s Kayla’s Condensed Tomato Soup cans with oversized flowers. The kids’ area had a fun purple, pink and blue balloon runner with 3D signs that read “Wow,” “Pop,” “Kayla” and “12,” and the white leather sofas were accessorized with customized pillows with the same designs. Every single detail was deliberate and thought out. “We also had personalized Megillahs, which are read on the holiday of Purim, with Kayla’s name on them,” Rachel says. The celebration appealed to the taste buds too. Those who favor fancy fare dined on a pulled beef appetizer and a chicken entrée, while kids munched on chicken fingers and fries. The soirée ended on a sweet note with a Viennese-style dessert bar, where guests stocked up on candy, fried ice cream, cake, cotton candy and waffles. “My favorite part was that it was a costume party and the energy in the room was incredible,” Rachel says. “We were so appreciative and blown away that our guests put so much effort into their costumes to make it a fun evening.” We’re sure family and friends were equally blown away by the Mandels’ efforts. FLAVIO’S WARM CHICKEN AND PESTO SALAD Yields: 4 servings
INGREDIENTS
n8 boneless chicken thighs, skin on n 4¼ oz. mozzarella n 16 cherry tomatoes, halved n salt and freshly ground black pepper TO MAKE THE PESTO: n 4½ oz. pine nuts n 2 oz. basil leaves and stalks n 2 Tbs. Parmesan, finely grated n 1 small garlic clove, peeled n 8 Tbs. extra virgin olive oil FOR THE SALAD: n 7 oz. spinach leaves n 1 Tbs. extra virgin olive oil
DIRECTIONS
Preheat the oven to 350°F. Put the pine nuts on a baking tray and roast for a few minutes until golden brown. Remove from the oven and tip onto a plate to cool. Peel the skin from the chicken thighs and set aside. Season the thighs lightly with salt and pepper and stretch each one out onto a baking tray. Stretch out the pieces of skin onto an oven rack, scatter with a little salt and cook just above the chicken thighs in the oven for about 25 minutes—the fat from the skin will drip onto the thigh meat below. The skin will shrink and become golden and crispy, and the chicken thighs should be cooked through in about the same time, but remove one or the other if one is ready before. Meanwhile, to make the pesto, whizz all the ingredients together in a small food processor or use a pestle and mortar. Season to taste and set aside.

When the chicken is cooked, remove the rack with the skin and set aside. Remove the tray with the chicken thighs and spoon over the pesto, using about 1 Tbs. per thigh. Tear the mozzarella into thumb-sized pieces and lay on top of the pesto. Scatter the tomato halves around the chicken and bake for an additional 5 minutes or until the cheese begins to brown. To make the salad, toss the spinach with the oil and a pinch of salt and pepper, and divide between four bowls or plates. Lay the chicken onto the spinach with the tomatoes, crumble the chicken crackling over the top and serve.

BUTTER CHICKEN Yields: 4 servings
INGREDIENTS
n8 chicken thighs, skin on and bone in n 1 tsp. salt plus more to taste n 2 tsp. chili powder n 2 Tbs. lemon juice n 4 fat garlic cloves, grated n 1 Tbs. fresh ginger, peeled and grated n 2 Tbs. ghee, butter or coconut oil (optional) n 2 onions, finely chopped n 1-2 small green or red chilies, split in half, to taste n 2 tsp. ground cumin n 1 tsp. ground turmeric n 1 tsp. ground coriander n 4 Tbs. butter n 14 oz. can of plum tomatoes, chopped n a few coriander leaves

Put the chicken thighs into a bowl and scatter over 1 tsp. of salt, the chili powder, lemon juice and half the garlic and ginger. Mix thoroughly and set aside to infuse for 15 minutes. Put the chicken thighs skin-side down into a large frying pan over a medium heat. When golden brown turn to the other side and repeat—it will take about 20 minutes to do this. Remove the chicken from the pan and set aside while you make the sauce. Add the ghee to the pan (unless there is enough chicken fat) and fry the onion with a little salt until softened, about 10 minutes. Add the remaining garlic, ginger and chilies and fry for a couple of minutes. Stir in the remaining spices and cook for another couple of minutes.
A healthier alternative to butter or ghee is avocado or olive oil, which are both antiinflammatory fats. Avocado oil also has a very high smoke point, so it’s good for cooking.”

Add the butter and tomatoes and fill the can halfway with water and swirl it around. Add this to the pan and cook for 15 minutes or until the tomatoes are soft, stirring frequently. INGREDIENTS
n4 boneless chicken breasts, skinned n 1 Tbs. extra virgin olive oil n 7 oz. rocket leaves or watercress n 2 Tbs. Parmesan or Grana Padano, in shavings n salt and freshly ground black pepper FOR THE DRESSING: n 8-inch sprig of rosemary, leaves picked n ½ fresh red chili, to taste n 1 small garlic clove n 3 Tbs. extra virgin olive oil n 1 Tbs. balsamic vinegar
DIRECTIONS
Preheat the grill to high. Prepare the dressing by finely chopping the rosemary, chili and garlic together on a board with some salt and a good twist of pepper. Mix in a bowl with the oil and vinegar. Set aside. Open out the chicken breasts by cutting them threequarters of the way through with a sharp knife along one long side. Butterfly them by opening them out like wings and flatten under a piece of cling film with a meat tenderizer or base of a small pan. The chicken should be an even thickness to ensure the same cooking time all over. Season the chicken breasts and rub a little oil over each one. Grill the breasts until they are cooked through—this will take about 4 minutes each side if the breasts are ¾ of an inch thick. If you have a meat thermometer, check that the chicken is 176°F inside, or cut into the deepest part with a sharp knife to check that the juices run clear and are not pink.
Cut back on the olive oil in the dressing by using just a drizzle of it mixed with any vinegar of your choice. You could also make dressing without olive oil entirely by combining the vinegar with lemon juice, Dijon mustard and a crushed garlic clove.”

Papaya’s Paradise
This sizable berry packs a tropical punch that’s equal parts delicious and nutritious.
It may be just beginning to warm up here in New Jersey, but thanks to the year-round import of this tropical delight, a culinary escape to paradise is as accessible as your local grocery store. Papayas, found in the produce department of most markets, are recognizable as green or yellow oblong melonlike mounds. Native to Mexico and Central America, this fruit—it’s classified as a berry—is also grown in parts of the U.S., including Hawaii (this variety, though, is smaller than the Mexican papaya). Don’t be intimidated by its size or puddle of seeds that await when you cut into it—its sweet tropical taste is just the start of its benefits (and you can even enjoy those seeds on the side).

Once the fruit is ripe, it should be refrigerated and eaten within a day. To eat, cut the papaya in half, take out the seeds and rinse and reserve them if you plan to use them separately. Serve the fruit whirred into a tropical smoothie alongside other warm-weather fruits, such as avocados, bananas and mangoes;
chopped into a salsa to add a hint of sweetness; sliced in a salad or with yogurt; or simply on its own. Martha Stewart suggests roasting it with brown sugar, and on its webpage, the Hawaiian Papaya Industry Association offers a recipe for an impressive papaya bowl stuffed with chicken salad. —Liz Donovan
Power Up Papayas are the fourth most nutritious fruit—after guava, watermelon and kiwi, respectively— according to the Center for Science in the Public Interest (CSPI), a nonprofit consumer advocacy organization. The group ranked fruits based on calorie count (one cup of papaya has 60) and levels of various nutrients. The papaya earned high marks for its rich content of vitamin C (88 mg, 98 percent DV), which boosts the immune system, potassium (360 mg, 7.5 percent DV), folate, (53 micrograms, 13 percent DV) and fiber (2.5 grams, 9 percent DV). It’s also rich in beta-carotenoid, an antioxidant that converts into eyeprotecting vitamin A and gives the fruit the reddish color you’ll see when you slice it open. A 2014 study published in the Journal of Nutrition found papayas to be a better source of this antioxidant than tomatoes and carrots, vegetables often associated as leaders in promoting eye health. There are topical benefits, as well. Papayas contain an enzyme called papain, which helps with digestion. It also makes papaya effective as a meat tenderizer or even a skin exfoliant. (Note: Because of this, papaya is a popular ingredient in beauty products, but speak to a doctor or dermatologist before crafting your own face mask.) A word to the wise: Raw and semi-ripe papaya contains latex, so people with an allergy may experience a reaction if they consume or use the fruit this way. Buy/Store/Serve When buying, pay attention to color and feel. A papaya should be firm and streaked yellow, CSPI

Can you talk about some of the latest innovative techniques in dermatology? Lasers, of course, will always be effective for the safe removal of brown spots as well as ideal at fading red spots caused by a number of skin conditions. What’s really new is radiofrequency technology applying electrical currents to the skin to stimulate collagen and restore vitality, rejuvenate and improve skin laxity. We are getting very good results with microneedle fractional radiofrequency that uses extra sharp microneedles to heat the depths of the dermis to help reduce fine lines and penetrate and tighten loose skin especially on the neck and belly. Another area that’s very exciting is the research being done on certain topical products to help with collagen synthesis for youthful, supple skin. Patients today more than ever are looking for less invasive techniques that do not require anesthesia and present instant rejuvenation with no downtime. These treatment advances open new doors in aesthetic dermatology for myself and my patients. My philosophy remains dedicated to innovation in cosmetics – there is not one process or device that does everything for every person. We must remain innovative in our work to get optimal results.
What’s the most important lesson you can share with patients? Now, that’s an easy one – stay out of the sun! Unfortunately, we are still seeing a lot of cases of skin cancers. Yes, it’s great to have that youthful sun glow look, but even the smallest sun exposure is dangerous to our skin. The sun makes us more prone to brown spots and even without sunburn, causes the skin to age faster. Excess sun exposure does contribute to the risk of developing melanoma. My best advice: Be sun smart! Staying out of the sun is the right thing to do cosmetically and for your overall health. But be sensible about outdoor life. Wear sunblock, always pack a hat and enjoy life to the fullest.

Pho Today
I learned a lot about food from my mother, who, for as far back as I can remember, passed on to me her various loves and cravings. She tries everything, chooses savory over sweet, eats oodles of noodles and devours anything that’s fried. And, boy, am I thankful that I inherited her palate. She’s the one who turned me on to Vietnamese cuisine, when back in the day she offered it to break up the Filipino and Chinese dishes that were ordinarily served at our home. That early introduction came in handy when my friend and I dined at Pho Today, which recently opened in a Fort Lee storefront at the doorstep of the George Washington Bridge. Prominent on Pho Today’s logo and painted on a front window is “Authentic Vietnamese Cuisine,” a claim that we quickly confirmed. For starters, we split goi cuon tom, a refreshing shrimp summer roll filled with vermicelli noodles, veggies and, of course, large pieces of the tasty crustacean. I’ll admit though that the roll, on its own, was lacking in flavor but got a boost when dipped in the accompanying peanut sauce. Our second app was banh xeo, an overwhelming large Vietnamese pancake filled with bean sprouts and onion. Like the summer rolls, this dish also leaned toward the bland side but was saved by a vinegar-based sauce that came with it. Although we finished off the banh xeo, my friend and I were still salivating for our entrees, which we opted to share. A sure-fire order is the restaurant’s namesake dish, pho today. (For those counting, Pho Today offers nearly two dozen pho varieties, including brisket, flank, tripe, seafood and shrimp.) Unlike our starters, the bowl was filled with flavor. Mouthwatering slices of filet mignon, oxtail, scallions and vegetables enriched the natural taste of the super clean broth—nothing premade or from powder here. Our heartier second main was the com tam today, which was recommended to us by our server. This rice plate had something for everyone: a perfectly grilled and juicy pork chop, a generous portion of shredded pork, a halved fried spring roll (stuffed with shrimp and pork), fried shrimp tofu, a sunny-side up egg atop a mound of white rice and a medley of fresh vegetables. While the two pork selections on the plate hit the mark, the shrimp tofu fell flat in the flavor department. We chalked up the blandness of the tofu as well as the other plates to a philosophy found in many Asian kitchens: Meats and vegetables provide the initial taste, while extra seasoning from spices and sauces is controlled by the diner. We didn’t encounter that issue during dessert. I had che ba mau, a traditional multi-colored
treat with layers of crushed ice, coconut and red and mung beans. While not a common item at ice cream parlours, this is just as satisfying as any cool summertime sweet. Skeptical about my choice, my friend sipped a delicious taro tea smoothie—but she was easily won over after sampling my dessert, as I knew she would.
