RUTHERFORD ROCKS Monique Baird Savastano of Whippany and her 10-year-old son Vinny were enjoying a beautiful day outside when their afternoon unexpectedly got a whole lot brighter. “We were at a park and my husband was playing football with our son,” Savastano recounts. “The ball was overthrown and landed near a bush, so Vinny ran over and noticed a painted rock on the ground. He was so excited, he pocketed it and brought it right back to me!” The rock was fairly large with “Be Positive” spelled out on the front in big green letters, plus a website for Rockin’ Kindness painted on the back. The organization, which began in Rutherford, paints rocks with bright colors and inspirational messages. The project has been gaining traction all over New Jersey. Finders have the option to keep their rock, but Vinny decided to follow the direction that Rockin’ Kindness recommends: placing it somewhere else. “He was most looking forward to hiding the rock for someone else to find,” says Savastano. On the project’s website, rockinkindness. com, you can “tag your rock” and they will add it to their map of where others have been found. They encourage local treasure hunters to spread the love and make rocks of their own to place around town. Rockin’ Kindness’ founder Jennifer Metzger of Rutherford is thrilled with how the project has taken off. “So many different groups are making rocks now: Girl Scouts, community groups, school systems,” she says. “I really can’t believe how it’s caught on!”

Scholars Meet Melania

Two Bergen County students met First Lady Melania Trump at the White House after being named Presidential Scholars this year. Fort Lee’s Gavin Lifrieri, 18, and Tenafly’s Benjamin Wenzelberg, 18, were two of 161 high school seniors chosen from across the country. Both young men took a photo and chatted with the first lady in the East Wing. In between, they enjoyed some bonding time with their fellow honorees. “I loved getting to meet the other recipients,” Lifrieri says. “We all laughed over having to run to our bus from the White House during a downpour and getting our suits soaking wet—it was a fun day.” Both Bergen natives are now freshmen at Harvard University. After receiving a perfect score on his SATs, Lifrieri plans on majoring in computer science and becoming an educator. Wenzelberg, who is classified as a Scholar in the Arts, is set to study world languages and music, which come quite naturally to him. The singer has already performed with the Metropolitan and New York City operas and written his own concertos. He is a classically trained singer, pianist, conductor and composer who had the chance to perform with his fellow Scholars of the Arts at Kennedy Center. “It was a huge honor to perform at the center; it’s such a beautiful place,” Wenzelberg says. “This show was all about the positive change artists make in the world.”

Horror on the Hudson Culinary Corner SEEKING A NEW RESTAURANT? Seak (SouthEast Asian Kitchen) opened its doors in August, providing Thai and Vietnamese-inspired tastes to Bergen natives and visitors alike. The restaurant even offers authentic drinks like Thai Iced Tea, which Desiree DiMuro, 29, of Edgewater thought was “absolutely perfect.” You can sit down for dinner and order small plates like Chili Salted Chicken Wings and Banh Mi Frites, or their varied red, yellow and green curries as your main course. Owner James Wang has been in the restaurant business for more than 15 years, and many of the menu’s recipes have been passed down from his family. With only around 7,000 residents and about 1.5 square miles, the borough of Midland Park is tiny compared to its bigger neighbors like Wyckoff and Ridgewood. But this small borough still has a lot to offer, with its close proximity to New York City (about 20 miles away) and lower taxes compared with many Bergen towns. Dutch settlers arrived in the area in the 1700s, farming the land and building mills along the Goffle Brook (then called Wagaraw Brook). Midland Park was incorporated as a borough in 1894 from portions of Ridgewood Township and Franklin Township (now Wyckoff). The name is thought to have come from the New Jersey Midland Railway Company, which operated in the area in the 1870s. (Although passenger rail service halted in 1966, commuters can hop on a NJ Transit bus to New York City’s Port Authority.) The town boasts three public schools: Godwin School for students in K-2, Highland School for grades 3-6 and Midland Park Junior/ Senior High School for grades 7-12. There is also a private-school

We offer breast seed localization, a more accurate and patient-friendly procedure to precisely pinpoint and remove small benign and cancerous breast tumors or abnormal breast tissue. A radiologist inserts a low-energy radioactive “seed” the size of a grain of rice into the breast tissue to mark the exact location of the tumor or abnormal tissue.

Soon, we will be offering women with early-stage breast cancer a breakthrough treatment that delivers an entire course of radiation therapy in the operating room following a lumpectomy, thereby eliminating the need for what is typically weeks of post-surgery radiation. The treatment is called breast intraoperative radiation therapy (IORT).

We talked with cardiologist Dr. Joseph De Gregorio, section chief of invasive cardiology at Englewood Hospital and Medical Center, about how new technologies are changing the game for some patients.

WHAT do you find most exciting about new treatments for heart disease? We are able to save lives and improve the quality of life for patients for whom there were no options even just a few years ago. Especially critically ill and elderly patients that were too high risk for certain procedures in the past, can now be helped tremendously.

the damaged valve, which could be very high risk, especially for patients with co-existing conditions. Now we can put a new valve into the heart through catheters, which is much less invasive, recovery is much faster and the patient generally goes home the next day. Englewood Hospital was one of the first hospitals in the country to perform Transcatheter Aortic Valve Replacement (TAVR) after it was FDA approved. MitraClip® is a new catheter-based technology used to treat mitral valve regurgitation, for patients who are not healthy enough to undergo surgical mitral valve repair or replacement. In this procedure, our interventional cardiologists use a small metal clip inserted via catheter to pin together a portion of the floppy leaflets of the valve preventing (some) backward flow (regurgitation) of blood through the valve.

WHAT new approaches are having a significant impact on cancer treatments? The NanoKnife™, a system that uses electrical currents to kill cancer cells, is seeing more widespread use. We use this at Holy Name and our patients experience fewer side effects, a shorter hospital stay, minimal postoperative pain and quicker recovery than other types of treatments. We are also using regional chemotherapy to the abdomen, called hyperthermic intraperitoneal chemotherapy, to give a more highly concentrated dose that is better absorbed by tumors. It has improved survival time and patients’ quality of life while reducing the side effects of chemotherapy drugs.

HOW is The Children’s Center addressing both emergency needs and inpatient care? Located within the hospital, the new Children’s Center combines both pediatric emergency services and inpatient care in one, family-friendly facility. Karen Karsif, M.D., FACS, Medical Director The Center for Breast Health There are many new innovations and developments at The Center for Breast Health. Can you talk about some of the highlights? We are privileged to announce that Hakan Usal, MD, one of the top surgeons worldwide in complex breast reconstruction, has joined our team full time. What’s more, radiation oncology is now on-site using a state-of-the-art Linear Accelerator which works to destroy cancer cells while sparing surrounding healthy tissue. We are making strides to spread the word to our broader communities about our Cancer Services Program, offering free training and breast exams for those who are underinsured and would otherwise not have access to these critical supports. And with recent studies pointing to a major shift in treatment options due in large part to new available drugs, our team can administer chemotherapy before surgery demonstrating better survival outcomes.

In all your many accomplishments, what is most near and dear to your heart? That’s easy. My semi-monthly support group for women with all stages of breast cancer is very personal and gives meaning to my life’s work. The connections forged during an experience that can be lonely and

isolating offers a safe place to express and handle the most intimate issues. There’s been an evolution of treatment and breast cancer survivorship has taken center stage. Given major advances, it’s not enough to just cure our patients, but to give validity to their feelings and to ensure quality of life. It’s a real testament to how far we’ve come.

We hear a lot today about high-risk patients. What is the hospital doing to help women identify risk factors? So many, including physicians, are unfamiliar with the changing parameters for high risk candidates. Most breast cancers are not hereditary, but it is important to identify the 10 % that are to be proactive. We have introduced a new system to help identify, at routine screenings, women who meet the criterion for high risk – nobody else is currently doing that. When a woman comes in for her routine mammogram, we can identify if she is a possible carrier for a gene that could increase her risk of developing breast cancer. By casting this broader net at the ground level, we hope to reach more women to be in a better place of choice and empowerment.

[DR. BRAHMBHATT] WHAT common surgeries are candidates for robotic surgery? We do hernia, gall bladder and colon surgeries using advanced robotic techniques. I’ve been doing robotic surgery for four years. Along with my colleagues, we have performed over 1,000 procedures. Robotic surgeries like hernia surgery offer patients benefits that include minimal bleeding, incisions as small as 1.5 to 2 centimeters and very minimal recurrence rates.

[DR. FERNANDEZ] WHAT benefits does robotic surgery offer for hysterectomy and other women’s surgery procedures? Large incisions are made during many traditional open surgeries like hysterectomy. However, when we use the robot as a tool to

perform surgery we are able to make several small incisions about 8 millimeters in length. Surgery is performed through these small incisions with the robotic instruments acting as an extension of our hands. From the physician side, the advantage of doing any gynecological surgery robotically is increased clarity and precision. For the woman, it is less bleeding, less pain and dramatically faster recuperation and recovery times.

[DR. ASULIN] CAN this advanced robotic surgical technique be applied to other complex GYN surgeries? We routinely perform complex robotic-assisted procedures including myomectomies or removal of uterine fibroids while preserving fertility—allowing a woman to get pregnant and carry that pregnancy to full term. We are able to precisely perform uterine reconstruction, tubal ligation reversal and endometriosis surgery. We also perform robotic surgery to address many other gynecological problems such as pelvic organ prolapse surgery and urinary incontinence surgery. All of these surgeries can be completed as same day surgery or with a short one-day hospital admission.

Now, in a BERGEN exclusive, he talks about his role on Netflix’s Daredevil, how he landed a part in the Coen Brothers’ Hail Caesar! and what it’s like to be thisclose to Scarlett Johannson. Have you always been a Bergenite? I’m a New Jersey boy since first grade and lived in Bergen County since third. My parents are still in Woodcliff Lake. I had sort of a Wonder Years meets Red Oaks kind of life. I was in London for a bit, and then lived in Jersey City, Englewood and Chestnut Ridge, N.Y.—and now here I am in Ramsey. You’ve done shows ranging from Law & Order to House of Cards. Which has been the most interesting/challenging to work on? I’ve been very fortunate to play very different characters in these shows. In the 12 Law & Order episodes I’ve done, I’ve played drug and sex addicts, lawyers, a shady journalist and a husband whose wife is strapping bombs to her body. I played a nerdy bank manager, therapists, FBI agents, and of course the newspaper editor in Daredevil and Punisher. In films, some roles have been even more removed from my “type.” Each one offers its own challenges, which is precisely what interests me. Some of the challenges have as much to do with shooting schedules, 16-hour days, even weird weather conditions. But there’s a great sense of accomplishment when you can do good work no matter what. One of your best-known roles is Ellison in Daredevil. Do fans recognize you in public? I would say that Daredevil is the first job I’ve ever had where the recognition is immediate. What I used to get was, people would look at me, and they knew they’d seen me in something because they’d watched Law & Order—but they wouldn’t know quite who it was that they were recognizing. With Daredevil, the beard is iconic, so there’s much more character recognition. So I do get stopped on the street a little bit.

Do you have any special memories about your audition? I’d had knee surgery and, two weeks later, slipped and dislocated my shoulder. I punched it back in and broke it in two places—we got the MRI on a Friday. My surgery wasn’t until Tuesday, so that Monday, with a broken shoulder and some painkillers left over from my knee surgery, I went in and auditioned for Daredevil. And I got it. I also auditioned for Blacklist that day and got that too. So it turned out to be a lucky day. I think I should break bones more often—I’d get a lot more work. (laughs) What was it like auditioning for Hail Caesar! in front of the Coen Brothers? The Coen Brothers are two nice Jewish boys from Minnesota, so there was something very recognizable there. I don’t get starstruck— that wasn’t a problem­—but I was auditioning against all my friends. I knew every actor who was trying out, and we were all having the same feelings: We all wanted to be in a Coen Brothers movie. Because everybody wants to be in a Coen Brothers movie. During my first audition, the Coens weren’t there; my second audition, the call-back, they were. I was doing

Daredevil at the time and had the full beard, and I knew it wasn’t appropriate for the role—it wasn’t the right time period—but I couldn’t shave. So I brought a picture of me without the beard. I wasn’t nervous—I was excited—and they were just nice guys. They laughed and were really friendly. I did it a couple of times and they asked if I’d shave, and I said of course. Next thing I know, I was flying out to L.A. You were certainly surrounded by the cream of the crop in that film—George Clooney, Scarlett Johansson, Josh Brolin, Ralph Fiennes and Channing Tatum come to mind. Any standout memories? I have to admit that my favorite part of it was when Josh offered me a ride from downtown L.A. where we were shooting to Santa Monica, where it just so happened we were both staying. We chatted about everything nonacting related—family, travel—and I got doorto-door service. The fact that I am now working with Jonah Hill again [on the upcoming TV series Maniac] is a treat. I just saw him again, and he recognized me and gave me a hug. So you weren’t starstruck at all on the Hail Caesar! set? Look, I’m working with everybody now, which is great and exciting. But they’re all normal people—all of them are normal people! They are not movie stars. Not even a goddess like Scarlett Johansson? I will admit that, when I was filming that scene in the office with her, I was sitting this far away from her (motions a couple of feet with his arm), and this room is lit beautifully. And there she is in that hat and that ivory outfit—this far away from me—and yes, she was a movie star. So she has the entire package. Have you worked with anyone who doesn’t? I mean, I’ve had experiences where I’ve thought, “Why them?” But there’s a certain level you’re not going to get to because you’re beautiful. I’m not working with the Kardashians—I’m not working with people who are famous for being famous—I’m working with people who have a body of work behind them. I mean, Josh Brolin is an exceptional actor, and Scarlett has a huge range. And Jonah Hill, he works his ass off. These are not people who are just sitting around. What’s your dream role? I really want to be a series regular on a show based out of New York. Besides the security, it BERGENMAG.COM

offers you a knowable schedule and time to do other things, like take a holiday, or do theater that may not pay as well. And I’d really really like to play Shylock in Merchant of Venice. Is there one TV show you’d have loved to be in? Something like The Office. If you were to offer me a regular role on a show right now, I’d be hard-pressed to be too picky, but I’ve been really fortunate. I’ve done everything, and I love it all. The best part about not being a regular on a show is that I get to do all of this huge range. What advice would you give to a youth who wants to become an actor? Get a good education, get well-trained, work your ass off, prepare like a fiend, know yourself well, do it because you love it, and realize that it is joyously hard work. What’s the best part of raising your family in Bergen County? For me, it’s about family. My sister is down the street and my folks are two towns away. It’s where I grew up, and I knew how to be a parent here. It’s safe. And it’s close enough to New York where my work is, but far enough away that when I want to slow down, I can. What’s your favorite local restaurant? I love Panache right here in town. It is our family go-to for celebrations. When we walk in, we always feel welcome. And the food? Their elegant menu always has an excellent range of choices, and they source their produce locally. I’m a huge fan of the duck. Any favorite local haunts? I love the Ramsey Farmer’s Market. It’s been here for a few years, and we now get a good deal of our produce there from Blooming Hill Farms, our pickles from Dr. Pickle, hummus from Taiim Hummus, olive oils and other gourmet goodies from Jeff at JD Gourmet and gluten-free baked goods from Mostly Myrtles (where my daughter worked this past summer, and where I have even manned the stall). It’s not even shopping, really—it’s more like a fun Sunday activity. We know the vendors, and they know us. It’s a place of real community.

Wyckoff interior designer Andrea Volter used custommade pillows and drapes to give a Cape Cod feel to this Franklin Lakes sunroom. Instead of a large sofa, which the designer says would “close up” the space, four dark mahogany leather chairs by Hancock and Moore are used for seating. The area rug, from Rug Importers in Paramus, brings the dark and light colors of the room together.

There are pros and cons of knowing a client on a personal level, as interior designer Andrea Volter of Wyckoff’s Designed Concepts Associates discovered. She had been working with a Franklin Lakes couple since they purchased their home about 15 years ago, guiding them through multiple design projects: a finished basement, a new master bedroom, dining room and laundry room, among other renovations. “They’ve been like family,” Volter says, “so there’s added pressure to please. But it’s also easier to get into their minds and see a project through their eyes. I bring my expertise, but the end result has to be what they like.” When the couple came to the final stage of the years-long redo—a Cape Cod-inspired kitchen and sunroom—Volter was happy to step up to the plate again. She teamed with Scott Lurie of Scott F. Lurie Architects and Hawthorne’s Kitchen Kaboodle to design and install custom cabinetry BERGENMAG.COM

in the kitchen. East Rutherford-based Stone Surfaces supplied the granite for the counters, including an elegantly curved island top. The kitchen table and chairs with leather seats, all by Woodbridge Furniture, match the sophisticated style of the island’s seating area. Volter created the New England feel in the sunroom using Benjamin Moore white on the vaulted ceiling and the company’s Navajo white for the trim. “We selected wallpaper with just a bit of interest so it wouldn’t overwhelm the design,” she says. Instead of a sofa, which “would’ve closed the space,” Volter chose four leather chairs from Hancock and Moore for seating. “They’re recliners because while the husband is in his mancave, the wife likes to relax and knit or read, and their daughter does her homework.” “They absolutely loved the space,” she adds. “This was their vision at first, but I was able to see it too.”

The most imposing part of designing this 10,000-square-foot Saddle River home? The sheer size of its great room, says Ron Nathan of Ron Nathan Interiors in Wyckoff. “It was huge and totally empty, so the challenge was to make it feel warm and comfortable,” he recalls. Nathan met that challenge by creating multiple seating areas, adding decorative molding and wainscot, and using lots of color and pattern. “Most people are afraid to make a commitment to color, and I think that’s why they are content to do a neutral palette,” he says. “It takes a certain amount of talent and experience to use color so that it doesn’t smack you in the face but feels interesting and organic.” Nathan varied the palette throughout the large home, giving each room its own personality. “These homes have a lot of rooms, so it’s nice to be able to change the feel of the spaces,” he says. “Although the rooms are different, the fabrics and the colors relate to each other.” The homeowners, two professionals with three young children, like a traditional look, which worked well with the architecture of the home, which is in the style of a French manor house. The dining room features 18th-century mahogany furniture, dramatic silk window treatments and an elegant Baccarat crystal chandelier. The walls and ceiling were faux painted to add interest. Nathan carried the home’s traditional, French-chateau feel into the kitchen with a custom-designed mosaic of a pastoral scene above the cook top. “It’s almost like you’re looking out of a window onto the fields,” he says. Custom cherry cabinets with a glazed finish hang above granite countertops and a limestone backsplash. To incorporate even more of a traditional feel, Nathan used corbels to hold up the breakfast bar and the hood above the Wolf stove. Despite the home’s ample size, Nathan decorated it from top to bottom in a swift four months. The homeowners loved the end result, and it was a labor of love for the designer as well. Says Nathan: “I’ve always enjoyed the challenge of taking these large spaces and making them cozy and comfortable—and seeing a happy client.” This page, top: An Oriental rug provided the color palette for the dining room, which is bathed in natural light. An on-campus boutique is helping Bergen Community College students make a polished first impression—for free.

When Cindy Myer, president and owner of Ridgewood Moving Services, needed a social media intern for her company, she weeded through a slew of students sent to her by Bergen Community College (BCC) before finding the perfect candidate: He was articulate, he’d done his homework about the moving company, and he was dressed for success in a suit and tie. And that gave Myer an idea. The Ridgewood native, who was working with BCC through the Women Presidents’ Organization (comprised of female business owners), realized that not all students had the tools needed to make a solid first impression—especially when it came to wardrobe. “I thought, ‘Let’s not make that a stumbling block for them,’” she recalls. “I realized that, with my moving company working with families who are looking to get rid of things and downsizing every day, we could start collecting clothes.” Fast-forward to Sept. 13, when all of the items Myer had amassed made their way to BCC, and the institution’s Move for Success program—featuring an on-campus boutique— opened. The concept: Students preparing for a job interview can visit the shop and walk out with a ready-to-impress outfit (accessories included) at no charge. Myer had more than enough donations to fill the boutique— “We were receiving clothing by the droves,” she remembers— but Ursula Parrish Daniels, executive assistant to the BCC president, says contributions have been pouring in from just about everywhere. “We have had an overwhelming response from local donors who are giving directly to the college,” she reports. “The Paramus and outlying communities, and our community college staff, are a very giving group of people. We have received donations that are just unbelievable.” Among the high-end fashion pieces on offer at the boutique’s opening: a pair of Vince Camuto leather ankle boots, Ralph Lauren black high heels, an Ann Taylor blackand-white wrap dress, a Chanel leather cross-body bag, Polo and Chaps suits for men, plus much more. The classroom-

housed shop—operated by the Student Exchange—is even arranged like an actual boutique, with dressing rooms and a seating area for trying on shoes. So what did the BCC students think of all the designer apparel and the program itself? “I love how the boutique is for guys and girls of any size, so everyone can come get what they need,” says freshman Andres Sierra. “The major part of success is how you see yourself, and that can be influenced by the way you look and dress. It’s easy to feel discouraged if you don’t look your best.” Adds freshman Eric Leyton: “I can see myself definitely coming to the boutique in the future. Sure, you could rent a suit, but nothing beats getting one for free.”

PINEAPPLE CHICKEN Serves: 2

INGREDIENTS

n 9 oz. boneless chicken thighs, sliced into ½-in. cubes n pinch of sea salt n pinch of ground black pepper n 1 Tbs. cornstarch n 1 Tbs. canola oil n 2 dried chiles, whole n 1 Tbs. Shaoxing rice wine or dry sherry n ½ small pineapple, sliced into ½-in. cubes n ½ red pepper, seeded and sliced into ½-in. cubes n small handful of roasted cashews (optional) n 1 scallion, finely sliced n fresh cilantro leaves, to garnish FOR THE SAUCE n ½ cup pineapple juice n 1 Tbs. low-sodium light soy sauce n 1 Tbs. cornstarch n juice of 1 lime n 1 tsp. honey n ¼ tsp. Sriracha chili sauce

DIRECTIONS

Put the chicken in a bowl and season with the salt and pepper. Add the cornstarch and mix well. Whisk together all the ingredients for the sauce in a small bowl, then set aside. Heat a wok over high heat and when the wok starts to smoke, add the canola oil. Add the chiles and fry for a few seconds to release their aroma, then add the chicken pieces and stir-fry for 2 to 3 minutes. As the chicken starts to turn opaque, add the Shaoxing rice wine or dry sherry and cook for another 2 to 3 minutes until the chicken is cooked through. Add the pineapple and red pepper pieces and cook for less than 30 seconds. Then pour in the sauce, bring to a boil and boil until the sauce has reduced, is slightly sticky and has a thicker consistency. Add the cashew nuts (if using), followed by the scallion and cook for 20 seconds. Stir together well, then transfer to a serving plate, garnish with fresh cilantro and serve immediately.

RADISH IN BLACK VINEGAR WITH CRABMEAT AND BLACK SESAME SEEDS Serves: 2

INGREDIENTS

n 1 tsp. canola oil n 10 oz. radish leaves n 1 ¾ cup radishes, cut into ¼-in. slices n 1 Tbs. Chinkiang black rice vinegar or balsamic vinegar n pinch of superfine sugar n 7 oz. fresh white crabmeat n 1 Tbs. black sesame seeds, to garnish n pinch of dried chili flakes, to garnish

Heat a wok over high heat until smoking and add the canola oil, then add the radish leaves and sliced radishes. Toss for 10 seconds, then drizzle 2 tablespoons cold water around the edge of the wok to create some steam to help cook the radishes. Season immediately with the vinegar and sugar and toss through. Spoon the radish onto serving plates, then top with the fresh crabmeat and garnish with the sesame seeds and chili flakes.

n 1½ cups sliced curly kale n 7 oz. dried Chinese egg noodles n 1 tsp. toasted sesame oil n 2 Tbs. canola oil n pinch of salt n knob of fresh ginger, peeled and grated n 1 red chile, seeded and finely chopped n 1 pinch of dried chili flakes n 2 scallions, finely chopped n ¼ cup cold vegetable stock n 1 Tbs. low-sodium light soy sauce

DIRECTIONS

Pour 4¼ cups cold water into a pan and bring to a boil. Add the kale and blanch for 30 seconds, then drain and remove. Cook the noodles according to the package instructions, then run them under the cold tap, drain and drizzle with the toasted sesame oil. Heat a wok over high heat until smoking and add the canola oil. Add the salt and let it dissolve in the hot oil, then add the ginger, fresh chile, dried chili and scallions in quick succession to explode their flavors in the wok. Add the vegetable stock and stir-fry over medium heat for 30 seconds. Add the kale and cooked egg noodles and toss all the ingredients well to warm through. Season with the light soy sauce and give it one final toss, then transfer to serving plates and eat immediately.

You can use less oil by steaming your vegetables in lowsodium vegetable stock first, which pre-softens them. You won’t need to cook your vegetables as long as you normally would in oil.”

One Cool Cabbage

Move over, sauerkraut! Kimchi is being hailed as a versatile superfood that packs a delicious—and tasty—punch. Kimchi isn’t just a trendy side dish: Studies show Korea’s national dish—a combination of fermented cabbage and other veggies and spices that has been served in the motherland for more than two millennia—comes with a host of health benefits. So what can kimchi do for you? Here’s the lowdown on what’s being hailed as one of the world’s most powerful foods— including how it’s made, how to store it and why you just might need a serving.

Opinions differ about how long kimchi will keep after being opened, but one popular brand, Mrs. Kim’s Kimchi, advises eating it within two weeks for the best flavor. Kimchi can be served on its own, as a side dish, as a topper on sandwiches or burgers, or mixed into rice dishes or soups. Some chefs even put it on pizza!

Power Up According to the Korea Tourism Organization, there are more than 180 different types of kimchi, but the most common is made from napa cabbage (baechu) and flavored with chili flakes, ginger, garlic, fish paste, and other herbs and spices. With so many variations, Kimchi’s nutritional facts differ based on preparation, but the standard napa cabbage variety is about 10-15 calories for two tablespoons, according to two leading brands. It’s fat-free and contains vitamins A (percentage of daily values vary, but figure about 4 to 6 percent in two tablespoons) and C (6 to 10 percent). Napa cabbage is also known for its high levels of vitamin K, which promotes blood health. But perhaps most important, kimchi is a fermented food, meaning it’s chock-full of lactic acid bacteria—aka the probiotic that’s found in yogurt. This type of “good bacteria” comes with a string of health boosts: Two studies, one published in the Journal of Cancer Prevention and the other in Journal of Medicinal Food, found that the healthy bacteria in kimchi gave it the ability to ward off cancer, prevent constipation and boost immune function. It’s also been shown to promote weight loss and skin health. One catch: Kimchi tends to be a high-sodium food because of the salt used in the fermentation process and the added soy- or fish sauce sometimes used in preparation.

Did you know? In autumn, Koreans hold kimjang (also called gimjang), an annual tradition during which people prepare and share kimchi among households. Says the website of the United Nations Education, Scientific and Cultural Organization: “The custom emphasizes the importance of sharing and is a reminder of the need to live in harmony with nature.” —Liz Donovan

Buy/Store/Serve Kimchi is relatively easy to find at most specialty food markets. While shopping, vegetarians should read the jar carefully: Many brands of kimchi include fish paste, and some also have beef broth, but vegan varieties are available as well. It’s possible to make kimchi at home, and instructions are available through a Google search, but special care must be taken during the process to keep harmful bacteria from growing in the jar. Keep in mind that kimchi is what’s called a “living food,” meaning that it continues to ferment while stored and will do so faster when stored at room temperature. In Korea, it’s common for a household to have a kimchi refrigerator, designed specifically for storing the food. Of course, a standard refrigerator works just as well to slow the fermentation process and prolong the life of the dish. DIRECTIONS

Slap the mint leaves and place them in a collins glass. In a Boston shaker filled 3/4 with bar ice, add whiskey, Raki, simple syrups and tea. In collins glass, add a few large ice cubes; strain the cocktail over the ice. Dot cocktail with Peychaud Bitters; add mineral water for a lift. RESTAURANT REVIEW:

Monsun

Survey any strip mall throughout the country, and there’s a good chance you’ll count at least one longstanding Chinese or Indian eatery. But many New Jersey foodies these days are looking for more, specifically the fusion of the two cuisines. Says The New York Times: “Though not [yet] widely celebrated in America, Indo-Chinese food is familiar to in-the-know locals and venturesome food travelers.” I threw “yet” into that statement. That spring write-up about the IndoChinese boom in the Garden State excited me for Monsun (pronounced like the storm), which I visited soon after its grand opening in River Edge around Labor Day. Big windows keep the cozy space well lit during the day, while Southeast Asian-inspired paper lanterns and ceiling fans add to the décor and lighting at night. My dining companion and I struggled (in a good way) with the menu. The selection is more extensive and varied than other Indian restaurants I’ve visited, largely due to the mix of traditional Indian offerings and fusion items, so we needed extra time to ponder our choices. Finally, we decided to start with one Indian staple, Onion Pakora, and a fusion dish, Vegetable Manchurian. The pakora was truly delightful, and its fried chickpea batter was gluten-free for those with dietary restrictions. Monsun’s take on the Manchurian dish combined bitesize veggies with Indian spices and Szechuan sauce— palate pleasing at its finest. Good food should be shared, so we opted to enjoy our entrees family-style. Our first dish was Monsun’s signature Chicken Madras, its blend of spicy chili powder and cumin wonderfully offset by the soothing coconut sauce. Next to try was the Tandoori Chicken, a Northern India standard. Here, the chicken is marinated in a mix of yogurt sauce and spices then grilled in a clay oven—of course, it’s served with the amazing redorange color (all that turmeric!) and tastes even better than it looks. An order of Chana Saag, my personal favorite, was the last plate on our table but certainly not the least. The ginger, garlic and other spices didn’t overpower the taste of the creamy spinach and chickpeas, and it was even more delectable when mixed with the accompanying side of rice. We barely saved room for dessert, so my friend capped her meal with a Mango Lassi, a refreshing, thick, yogurt-based drink. Knowing that she wouldn’t

share hers, I ordered one for myself. I also asked for a bowl of Gulab Jamun, golden brown doughnut holes dipped in a sugary syrup. Light and airy, it’s the ideal afterdinner treat and one of the best Indian desserts I’ve had. While we dined, owner Rekha Karnik visited our table, to make sure that our visit was to our liking. She also asked if we had questions about the ingredients and dishes, all of which are made with fresh produce and Halal meat and poultry. If spice was a concern, the kitchen could always alter the levels, she reminded us. In addition to the plates we tried, the menu also boasts a range of familiar Indian curries, vindaloos, seafood, vegetarian, gluten-free and Chinese dishes. Many of them are also featured at the Sunday buffet, which is a good way to introduce newbies to—and feed the fans of— Indo-Chinese food.
