Tending your nest You don’t have to be immensely pregnant to have the urge to nest. There’s something about the leaves changing color and the temperature turning chilly that makes many of us retreat to the comfort of home. For me, autumn is when I crave cozy, and so our second home issue of the year is perfectly timed. What does nesting mean to you? It can be anything—big or small—that turns your living space into a place of comfort. For the young couple whose home we spotlight in “Worth the Wait,” getting truly comfortable in their Ridgewood colonial was a lengthy process—they lived with their two daughters in a dark, outdated house for years before finally renovating. With the help of Midland Park-based designer Linda Granert, the couple transformed their space—the living room and kitchen, in particular—into a bright, open area where everyone now happily gathers as a family. Turn to page 74 to see the results of this renovation. The Franklin Lakes homeowners in “Parallel Lines” had the advantage of new construction to set up their space. Their idea: to build a pristine yet homey nest with ample room to entertain family and friends. While the home looks like a high-tech factory, Mahwahbased designer Faith Hochman stepped in to soften the appearance with great pieces from Safavieh that beckon guests to sit and relax. You can see the space on page 78. Of course, comfort at home can come on a small scale too: a crackling fire in the fireplace, soft chandelier lights, extra pillows here, a warm fleece throw there. In this month’s Home Front, we present a series of products in shades of black and white. Alone, they’re shining examples of neutral colors. But together, they create timeless decorating magic. See for yourself on page 36. You’ll surely want one or more of those items on hand when friends gather at your home this fall, whether you’re hosting a casual dinner or cheering for the home team on a Sunday afternoon. If you’re doing the latter, consider the four recipes in “Game-Time Grub” (page 96) for a spin on classic bite-size snacks and comfort food—because sometimes the camaraderie and fellowship with others is better than the game itself! We hope you enjoy these and all the articles in this issue. Perhaps they’ll inspire you to tend to your nest and make it a place of comfort for everyone.

CONTRIBUTE TO CHARITY The Fort Lee Fire Prevention Bureau is holding its Breast Cancer Awareness & Fire Safety Month T-Shirt Fundraiser. Throughout October, department members will be selling T-shirts featuring the phrase: “Early Detection Saves Lives.” T-shirts start at $15. Proceeds from the fundraiser will be split between both causes. To purchase a shirt, call 201.359.5252. Many large companies donate to charities through special product sales. Jane Iredale, for example, donates 100 percent of the proceeds from sales of its PlayOn Lip Crayon to Look Good Feel Better, which provides free beauty sessions to cancer patients. Meanwhile at Estee Lauder, 20 percent of the sales price of the brand’s Advanced Night Repair serum goes directly to the Breast Cancer Research Foundation.

DID YOU KNOW? According to the Centers for Disease Control and Prevention, there were 5,374 new cancer cases in Bergen County in 2014—the latest year with complete data. The highest rate of new cases was breast cancer in women. BERGENMAG.COM

WHAT’S IN STORE AT THE MALLS The biggest shopping season of the year is nearly upon us, and luckily there will soon be a lot more stores at which to do it. Here are a few new retailers coming to Bergen County malls in the coming months, just in time for the holidays. Beauty: Garden State Plaza will soon be home to three new cosmetics stores: Riley Rose, a tween-centric retailer that’s an offshoot of Forever 21; Nature Collection, a K-Beauty favorite; and Rituals, a skincare company based in Amsterdam. The biggest mall in New Jersey also is opening a MOD Mouth teeth salon, where customers can straighten, whiten or brighten their pearly whites. This will be its third location in Bergen County and its official flagship store. Clothing: A CH Carolina Herrera boutique is now open at the Shops at Riverside, while construction is underway on two new additions at The Outlets at Bergen Town Center in Paramus—Land’s End and Burlington. Meanwhile at Garden State Plaza, Lou & Grey, Ann Taylor’s athleisurewear sister company, is gearing up for a fall grand opening. UNTUCKit, which sells shirts for all body types meant to be worn untucked, will open its doors at its second North Jersey location at GSP (the first is in The Mall at Short Hills). Its Bergen store seems apropos, given the company’s founder Chris Riccobono hails from Franklin Lakes.

Knock on neighbor’s door, ask for candy, repeat— sound familiar? If you (and your little ones) want to break the usual Halloween routine, many Bergen towns offer out-of-the-box festivities on Oct. 31. Here are a few ideas that will take the family beyond the confines of your neighborhood (and your yearly routine) on Halloween night: Trick or Treat in Cars: Cresskill and Lodi, for starters, offer “trunk or treats,” where parents park their cars (preferably ones decked out in orange and black) in a designated closed-off parking lot while their kids, dressed in costumes, go “trunk to trunk” for candy. No awkward doorbell-ringing required. Trick or Treat on Trails: Be one with nature at Edgewater and Leonia’s seventh annual Trick or Treat Trail on Veterans Field, which welcomes dressed-up residents to a walking trail for trick or treating. Candy is courtesy of local businesses. Trick or Treat at Libraries: Many libraries offer a free day-of programming for youngsters. For instance, Allendale (500 Crescent Ave.) hosts stories and crafts on Halloween morning, while Waldwick (19 E. Prospect St.) holds events where kids can do holiday crafts and trade in an old Halloween costume for a new one. Trick or Treat while Shopping: The Outlets at Bergen Town Center in Paramus encourages “Safe Trick or Treating”—kids run around asking

for candy from all the retailers who display the “Safe Trick or Treat” sign in their windows. Bonus: Since everything is indoors, weather won’t scare away the participants. Trick or Treat in Towns: A handful of neighborhoods go all out for the ghoulish holiday: Clinton Street in Hackensack features over-the-top décor and characters roaming the crowds to greet kids, while children hunt for the “Candyman” around the closed-off roads near River Vale’s Faletti Circle.

Get a taste of this pickle(ball) Tennis is so 2017. The fastest-growing sport in Bergen County is pickleball, a variation on traditional tennis and ping-pong where players use a paddle to swing a plastic ball over the net. The Ridgefield Park section of Overpeck County Park unveiled six new pickleball courts (and three repurposed from tennis courts) this summer due to high demand from residents, seniors in particular. Cracked asphalt was replaced with synthetic tiles in an effort to make the sport fun and safe. “This innovative new court surface provides for safer play, as it dramatically reduces the impact of lunging and jumping on players’ bodies, lessening the risk of injury,” says Jim Koth, Bergen County parks director. You can only eat (and bake) so many pies after an apple-picking excursion at the orchard. Joe D’Ercole, owner of D’Ercole Donuts in Northvale, shares a more inventive way to make use of the yummy seasonal fruits. “Our cinnamon apple pie donut is a twist on a plain cinnamon donut,” he says. “We cut it in half and fill it with fresh apple filling, and it’s easy to make at home.” Here’s how: It takes apples, of course, which are added to a boiling mixture of water, sugar, cornstarch, cinnamon, salt and nutmeg. After letting the mix cook for about 5 minutes, remove it from the heat and let it cool. To serve, cut a cinnamon sugar donut in half and fill the inside with the apple pie filling. Divine. Urogynecology, which is also known as female pelvic medicine and reconstructive surgery, is the medical subspecialty exclusively dedicated to the treatment of women with pelvic floor disorders.

WHAT are pelvic floor disorders? The pelvic floor is a term we use to describe the muscles, ligaments and connective tissue that provide support for a woman’s internal organs (including the bowel, bladder, uterus, vagina, and rectum). Not only does the pelvic floor prevent these organs from falling down or out, but it also plays a very important role in making the organs function properly. Pelvic floor disorders occur when the pelvic floor is weakened.

are recurrent urinary tract infections (cystitis) and painful bladder syndrome/interstitial cystitis.

DO these disorders impact a woman’s quality of life?

WHAT are the symptoms of pelvic floor disorders?

Yes, they absolutely do. Symptoms of pelvic floor disorder include leakage of urine (incontinence) and pelvic organ prolapse (dropped bladder/womb/rectum). Many women are reluctant to discuss them with anyone, or are embarrassed to acknowledge that they have a problem, even to themselves. Despite it being a common condition, women often don’t feel comfortable talking about it. It’s still a big “taboo.”

Women with weakness of the pelvic muscles or tears in the connective tissue may begin to have problems controlling their bladder and bowels. They often describe a bulge sensation, pressure or a protrusion through the vaginal opening (“dropped bladder or womb”), urine leakage (urinary incontinence), frequency or urgency of urination, difficulty emptying the bladder, bowel gas or stool leakage (anal incontinence), etc. Other symptoms

Yes, there are a variety of non-surgical and surgical treatment options available to patients. In my practice, I take a very individualized approach to caring for my patients. I believe it’s crucial to take a patient’s personal preferences into account when making any treatment decisions.

When it comes to fighting breast cancer, access to innovations in diagnosis and treatment are critically important – and at the core of Chilton’s vision as a community hospital. Our Breast Center is special because it blends advanced capabilities and expertise with personalized, compassionate care. Nationally recognized for quality, the program is led by dedicated breast radiologists and dually trained technologists who can perform mammography and ultrasound in a single visit. Patients also benefit from the latest imaging technology, including 3D mammography that can uncover tumors with pinpoint accuracy, and a newly renovated facility.

HOW do the renovations improve patient care? We’ve completely transformed our Breast Center to offer a better patient experience. The facility was redesigned to increase capacity and refurbished to improve privacy, comfort and convenience. It features a remodeled waiting area, additional exam rooms, a suite for breast surgery consultations, and upgraded equipment – including state-ofthe-art stereotactic breast biopsy technology that cuts procedure time in half. From an aesthetic standpoint, patients have commented that our new Breast Center feels more like a spa than a hospital, with tranquil surroundings and relaxing amenities.

IS Chilton pioneering programs for breast health? Always. Most recently, Chilton conducted a study that revealed a large percentage of women in our community are at high risk for breast cancer. That prompted us to develop a High Risk Breast Screening Program aimed at empowering women to be proactive in their breast health. Breast Center patients participate by answering questions about their medical history, lifestyle and other factors. That information is then uploaded from an iPad to software that calculates breast cancer risk. High-scoring individuals have access to genetic testing, nutrition counseling, screenings, and other interventions focused on prevention and early detection, providing the opportunity to stay one step ahead of a highly treatable disease.

Bonita Stanton, M.D., Founding Dean WHY did Hackensack Meridian Health and Seton Hall University team up to create a new medical school in North Jersey? We launched this new school for three related and important reasons. First, we want to achieve a vision for health care which is achievable and one we all deserve: everyone will enjoy the promise of excellence in health and well-being, regardless of race, ethnicity and socioeconomic status. Second, we want to train more physicians within New Jersey to address a physician shortage. Physicians typically practice where they train so we believe this will keep dedicated doctors here. Third, dynamic changes underway in health care require a new approach to medical education. Many factors contribute to health and wellness beyond access to treatment. Health and wellness occur in the community, not only in the hospital. We are focusing on prevention as much as we are focusing on healing.

HOW will you accomplish this? Our rigorous academic curriculum combines traditional science

and a focus on the new frontiers in medicine including genetics, population health and team-based care. We will partner students with families for their entire training so they get a full picture of factors that impact health, an essential and novel part of our curriculum. Our mission is to create a physician workforce that is capable of delivering excellent clinical care and optimal health to all individuals.

WHAT else makes your school unique? Our students can graduate in three years, which makes medical education more affordable. Second, all of our students will participate in a three-year long immersive experience following two to three families in the community, thereby understanding the significance of community and environment on health outcomes and learning how to effectively partner with the community. Finally, all of the students graduating in three years will conduct their residencies in one of Hackensack Meridian Health system’s 26 residency programs, benefitting both the student and the state.

We are privileged to announce that Hakan Usal, MD, one of the top surgeons worldwide in complex breast reconstruction, has joined our team full time. What’s more, radiation oncology is now on-site using a state-of-the-art Linear Accelerator which works to destroy cancer cells while sparing surrounding healthy tissue. We are making strides to spread the word to our broader communities about our Cancer Services Program, offering free training and breast exams for those who are underinsured and would otherwise not have access to these critical supports. And with recent studies pointing to a major shift in treatment options due in large part to new available drugs, our team can administer chemotherapy before surgery demonstrating better survival outcomes.

In all your many accomplishments, what is most near and dear to your heart? That’s easy. My semi-monthly support group for women with all stages of breast cancer is very personal and gives meaning to my life’s work. The connections forged during an experience that can be lonely and

isolating offers a safe place to express and handle the most intimate issues. There’s been an evolution of treatment and breast cancer survivorship has taken center stage. Given major advances, it’s not enough to just cure our patients, but to give validity to their feelings and to ensure quality of life. It’s a real testament to how far we’ve come.

We hear a lot today about high-risk patients. What is the hospital doing to help women identify risk factors? So many, including physicians, are unfamiliar with the changing parameters for high risk candidates. Most breast cancers are not hereditary, but it is important to identify the 10 % that are to be proactive. We have introduced a new system to help identify, at routine screenings, women who meet the criterion for high risk – nobody else is currently doing that. When a woman comes in for her routine mammogram, we can identify if she is a possible carrier for a gene that could increase her risk of developing breast cancer. And now, we have a specially trained genetic cancer specialist who provides education, hereditary cancer-risk assessment and genetic counseling. By casting this broader net at the ground level, we hope to reach more women to be in a better place of choice and empowerment.

October is the month when the U.S. increases awareness of the importance of preventive screenings for breast cancer. Although one in eight women in the country will be diagnosed with breast cancer, treatment options are better than ever.

but any change should be examined, especially if she is in a higherrisk category for developing breast cancer.

[DR. BRINKMANN] HOW Do We Avoid Being One of These Statistics?

Some of the factors associated with an increased risk of breast cancer include: age, about two out of three invasive breast cancers are found in women 55 or older; and genetics. If you’ve had a close relative, a mother or sister who has been diagnosed with breast cancer, your risk has now doubled.

The good news is that breast cancer deaths are on the decline. This is namely due to breast cancer treatment, including chemotherapy, and early detection through mammography, the gold standard of breast cancer screening. Women should begin having an annual screening mammogram at age 40. Self-examination is also important. Women should be aware of how their breasts normally look and feel.

WHAT should a woman do if she notices changes in her breasts? She should report any changes in appearance to her doctor. Finding a breast change does not necessarily mean there is cancer,

Revital® is an innovative cancer rehabilitation program designed exclusively for people affected by cancer. Our specially trained therapists work closely with survivors and oncologists to create a personalized treatment plan… one that is unique to each person’s goals. Utilizing physical, occupational, speech and/or cognitive therapies, our ReVital specialists address pain, fatigue, neuropathy and many other cancerrelated side effects with encouragement and compassion. From diagnosis through survivorship, ReVital can help individuals regain strength, physical function, comfort and independence. Our therapists also receive extensive education and hands-on training in cancer rehabilitation to provide the best possible care.

HOW does cancer rehabilitation differ from cancer treatment? Treatment for cancer itself is delivered by oncologists. Chemotherapy, surgery and radiation therapy are common treatments for the cancer itself. While necessary, they can contribute to side effects or impairments, which can include: pain, fatigue, scarring, swelling, weakness, range of motion limitations, memory changes, balance problems, and/or difficulty speaking or swallowing. Impairments such as these can lead to difficulty performing day-today activities. Cancer rehabilitation is not treatment for cancer itself, but rehabilitation tailored to maximize function, independence and

quality of life. Our ReVital clinicians work closely with the treating oncologist and his/her practice and are part of the patient’s overall cancer care team.

WHAT different ReVital services and programs do Bergen County residents have access to? While Kessler has 17 locations throughout Bergen County, ReVital cancer rehabilitation services are offered at 6 convenient centers throughout the county (Dumont, two in Fair Lawn, Lyndhurst, Ramsey and Saddle Brook), and several others in nearby Passaic and Hudson counties. Services vary by location, but include: physical, occupational and speech therapies; lymphedema; cognitive therapy; and physiatry.

WHAT types of cancer patients will benefit the most from ReVital services? People affected by cancer can benefit from ReVital services at any time as needed: at diagnosis, during treatment or in survivorship. The Centers for Disease Control and Prevention (CDC) estimates that tens of thousands of people die from the flu and flu-related complications each year. Why take the chance that the flu—with its fever, dry cough, sore throat, body aches and chills—will strike you this year? The influenza virus, a contagious infection of the respiratory system, affects 10 to 20 percent of the population annually. Each year the flu is different, and more or less severe. Since 2010 in the U.S., deaths from the flu or its complications have ranged from 12,000 to 56,000. Fortunately, there are preventive steps you can take to avoid the flu. GET A FLU SHOT The Centers for Disease Control and Prevention recommends that everyone six months and older get a flu vaccine every season. It will reduce your risk of coming down with the flu and of spreading it to others. This is especially important if you spend time with someone at higher risk of flu complications (see side column) or if you have a child who is too young to be vaccinated. Ideally, have your shot at the start of the season, which means in October or November. The vaccine is very safe, there typically are no serious side effects, and it’s often covered by insurance. Talk to your doctor before getting a flu

shot if you have an allergy to any of the ingredients in the vaccine, a history of Guillain-Barré syndrome or an acute illness. To receive a flu vaccine, visit your primarycare physician or pharmacy. AVOID GERMS This might seem to be common sense, but it bears repeating: Try not to have close contact with anyone who’s infected. And if you’re sick yourself, stay home and get well. When someone who has the flu coughs or sneezes, the virus is expelled into the air and may be inhaled by others. That’s why health experts recommend sneezing or coughing into the crook of your arm. Other ways to protect against both spreading germs if you’re sick and catching germs if you’re not: Wash your hands frequently, and keep them away from your eyes, nose and mouth (touching these areas can spread the bacteria).

WORTH THE WAIT

Not finding their dream home, a couple bought a Ridgewood colonial with possibilities—and later made their dream come true.

The Ridgewood couple with two young daughters had looked for their dream home seven years ago, but in the highly competitive Bergen market they’d settled for a ’60s colonial with which they might someday fulfill their dream. Fortunately, their strategy worked. “Living in the house for a while before renovating gave us a chance to create the best design plan for our family,” says the homeowner, Kate (whose last name was withheld upon request). For years they lived with dark-wood kitchen cabinets, old wallpaper in every room and a layout that wasn’t conducive to their modern lifestyle. Then, when the oven broke, it was the catalyst that “kicked the timeline into high gear,” says Kate. Avid art collectors, she and her husband Trey sought to make the antiquated space their canvas. And they found a kindred spirit in Linda Granert of the eponymous Midland Park firm. Their new design features a combination kitchen and family room that “made a significant transformation,” says Granert, “opening up the wall and creating an open floor plan.” Kate reports that family members love to be together in this large room—even when they’re busy doing different things. continued...

In the kitchen’s big rehab, Granert pumped up the drama with orange bar stools of largely reclaimed material. They share the spotlight with a black soapstonetopped center island, while an Oriental patterned rug—heavy on the orange—stretches over wide-plank hardwood floors in a welcome switch from linoleum. The orange was just the right pop, says Granert, to contrast with the new kitchen’s white shaker-style cabinets, tulip marble-top table with plastic chairs and gray-and-white marble tile backsplash. After all, there’s no law that requires white on white. “I like introducing color,” says the designer. Natural elements such as woven, no-cord blinds and plants sprinkled about the home infuse warmth into the contemporary décor, she says. With so many windows channeling maximum brightness into the airy new setting, Kate says, “We love that we can now see the

backyard from anywhere in this space.” (But the old wallpaper—full of images of fruit-tree branches—was one evocation of “nature” that had to go.) Now, beyond the restyled cucina, orange isn’t dropped like a hot potato. It provides a cohesive thread in the family room, where multi-patterned accent pillows give the gray-on-gray stripe sectional a burst of color, Granert says. The couple’s mostly modern art pieces found the ideal showcase in this redesign, and there was no need to shop around to come up with inspiration for the new custom wall unit—their eclectic collection of books, family antiques and vacation treasures was a perfect fit. “The artwork brings extra color and life to the rooms,” says Kate. “It complements the traditional elements while allowing the space to be fresh and fun.” The word “fun” brings a smile to Granert’s face. In a sense, that’s just what she was going for.

The scenario might have intimidated some designers: Here was a client whose background was in manufacturing packaged health foods. He had built factories compliant with innumerable FDA regulations, and now he and his wife were ready to build a home in Franklin Lakes. Would they be perfectionists, difficult to satisfy? “Perfectionists, yes, but the good kind!” says interior designer Faith Hochman, of Mahwahbased FH Home Designs. “They’re detail-oriented and decisive, which made my job easy.” The homeowners’ brief was to create an airy, light-filled home for entertaining, and Hochman delivered. While the space appears as pristine as a high-tech factory, the look is by no means austere. Plush upholstered pieces from Safavieh beckon guests to sit and relax, while modern light fixtures with dimmed Edison bulbs lend warmth.

Remember mood rings? This home has a mood fireplace: A low river of gas flame dances on a bed of glass stones, which at the touch of a remote control can be made to glow fuschia, blue, yellow or other colors to match the mood of the evening. Another dramatic touch is the swimming pool. The site of the house was steeply sloped, and that presented a unique opportunity to bring the outdoors in. The terraced pool has an infinity edge that faces the house, providing an eye-level “waterfall view” from the living room—a long line of water that serves as a counterpoint to the fireplace’s long line of flame. Free of clutter and with an open plan that flows easily from room to room (and from patio to interior), the home could easily accommodate 100 guests for a fall harvest party.

It’s known to stain everything from dishes and countertops to linens and fingertips, and scrubbing the golden tint from your kitchenware can be a headache. Well, pour yourself a cup of turmeric tea and you’ll quickly feel better. The many benefits of the powdery spice make using it all worthwhile. Ground from the flowering turmeric plant, it has been a go-to in Asia for centuries and is celebrated not only for its peppery and warm flavor, but also for its health advantages. For years, the spice has been embraced by the Indiaoriginated Ayurvedic system of medicine that treats conditions such as pain, fatigue and breathing problems. Today, turmeric is used all over the world as a dietary supplement for inflammation, stomach pain, liver ailments and more.

FRIED CALAMARI WITH SPICY MARINARA Yields: 4-6 servings

INGREDIENTS

FOR THE SPICY MARINARA n 2 Tbs. olive oil n 3 cloves garlic, minced n 1½ cups canned crushed plum tomatoes n1 tsp. dried oregano n¼ tsp. red pepper flakes FOR THE CALAMARI n canola oil for deep-frying n ½ cup all-purpose flour n½ cup yellow cornmeal, preferably stone-ground n2 tsp. dried oregano n1 tsp. fine sea salt n ¼ tsp. cayenne pepper n1 lb. calamari, cleaned n c hopped fresh flat-leaf parsley for garnish n l emon wedges for serving

DIRECTIONS

TO MAKE THE SPICY MARINARA In a saucepan over medium-low heat, heat the olive oil and garlic until the garlic softens and is fragrant but not browned, about 3 minutes. Stir in the tomatoes, oregano and pepper flakes. Bring to a simmer over medium heat, then reduce the heat to medium-low and continue to simmer, uncovered, until slightly thickened, about 10 minutes. Remove from the heat and keep warm. TO MAKE THE CALAMARI Pour the canola oil into a large, heavy saucepan to a depth of 3 inches and warm over high heat until it reaches 350°F on a deep-fry thermometer. Preheat the oven to 200°F. Set a large wire rack on a rimmed baking sheet and place near the stove. In a bowl, whisk together the flour, cornmeal, the remaining 2 tsps. oregano, salt and cayenne. Cut the calamari bodies crosswise into ¼-inch rings; leave the tentacles whole. Add one-third of the calamari to the flour mixture and toss to coat. Gently shake off the excess flour, then carefully add the calamari to the hot oil and deepfry until golden brown, about 2 minutes. Using a wire skimmer or slotted spoon, transfer the fried calamari to the rack and keep warm while you coat and fry the remaining calamari in two batches. Spoon the spicy marinara into individual dipping bowls. Transfer the fried calamari to a warmed platter and sprinkle with the parsley. Serve right away, passing the warm marinara sauce and the lemon wedges on the side.

At least 30 minutes before grilling, remove the wings from the refrigerator. Melt the butter in a large frying pan over medium heat. Add the garlic and cook, stirring until fragrant and tender, about 2 minutes. Pour in the hot sauce and vinegar, stir well, remove from the heat and set the pan aside. Prepare a charcoal or gas grill for direct grilling over high heat. Brush and oil the grill grate. Place the chicken wings on the grill directly over the fire and cook, turning frequently, until they are nicely browned on all sides, have some char and are tender, 15–20 minutes. Transfer the wings to the sauce in the frying pan, place the pan over low heat and toss the wings in the sauce to coat evenly. Let the wings and the sauce marry for about 5 minutes. Transfer the wings to a platter and pour any remaining pan sauce over the top. Serve with the blue cheese dip and celery sticks.

For a delicious and less fattening remake, salt and pepper organic wings to taste and grill on lowmedium, turning often until done. The wings also can be broiled in an oven on low but need to be watched often so they do not burn. After they are cooked, put the wings in a large bowl and cover with hot sauce. Garnish with sliced carrots and celery.”

INGREDIENTS

n2 4 large shrimp in the shell, about 1 lb. total weight, peeled with tail segment intact n basic shrimp brine n 12 thick-cut slices applewood-smoked bacon, halved n 6–8 metal or wooden skewers, for prep

n1 2 slices applewood-smoked bacon n 24 medjool dates, pitted n 3 oz. cambozola cheese or other blue cheese n 12 wooden toothpicks, for prep

DIRECTIONS

Devein each shrimp using the tip of a small knife. Add the shrimp to the brine, cover and refrigerate for 30 minutes.

Bring a saucepan three-fourths full of water to a boil over high heat. Drop in the bacon slices, reduce the heat to medium and simmer for 5 minutes. Drain and dry on paper towels.

Prepare a charcoal or gas grill for direct grilling over high heat. Brush and oil the grill grate. If using wooden skewers, soak them in water for at least 30 minutes.

Position a broiler pan 4 inches below the heat source and preheat the broiler. Soak the toothpicks in water for at least 30 minutes.

Bring a saucepan three-fourths full of water to a boil over high heat. Drop in the bacon slices, reduce the heat to medium, and simmer for 5 minutes. Drain and dry on paper towels.

Cut each bacon slice in half crosswise. Stuff each date with about ½ tsp. of the cheese, wrap a strip of bacon around each one and secure with a toothpick. Arrange on a rimmed baking sheet.

Remove the shrimp from the brine and pat the shrimp dry with paper towels. Wrap a half slice of bacon around the shrimp. Slide the wrapped shrimp onto a skewer, piercing it through the middle and securing the bacon. Repeat with the remaining shrimp and bacon.

Slip under the broiler and broil, turning once, until the bacon is crispy and the cheese is bubbling, about 5 minutes. Transfer the dates to a serving platter and serve hot.

Fall is my favorite time of the year because of the different flavors. You can add apple liqueur to the rum to make this punch, or combine apple and pumpkin for a sangria, and garnish it with an apple slice.”

INGREDIENTS

FOR THE PUNCH n spiced simple syrup (see below) n 750 ml. bottle of spiced rum n 1 cup orange juice n 1 cup lemon juice n 1 cup pumpkin puree n 2½ cups sparkling water n large pumpkin or punchbowl, for serving n dry ice, for serving (optional)

FOR THE SYRUP n 6 whole allspice berries n 1 cinnamon stick n 6 whole cloves n 1 pod star anise n ½ whole nutmeg n ½ cup water n ½ cup sugar

DIRECTIONS

FOR THE SYRUP Toast allspice berries, cinnamon stick, star anise, cloves and nutmeg in a pan over medium heat for a minute until fragrant. Add ½ cup water and sugar and simmer for 10 minutes. Remove from heat and set aside. FOR THE PUNCH In a large bowl, mix together spiced rum, orange juice, lemon juice and pumpkin puree. Strain spiced simple syrup into the bowl and whisk to combine. To serve, place a few cubes of dry ice in the bottom of a large freezer-proof bowl using a pair of tongs. Never touch the dry ice with your hands. Put a smaller freezer-proof bowl on top of the dry ice and strain the punch into the bowl. Mix in 2 ½ cups sparkling water. Pour warm water between the two bowls so it covers the dry ice and creates vapor. Serve punch with additional cinnamon sticks as garnish, if desired.

T & Thai

Towns like Edgewater, Englewood and Ridgewood have long been the goto destinations for Bergen foodies, and rightfully so—the downtowns there are filled with a diverse mix of dining options. But the restaurant renaissance underway in Cliffside Park has quickly pushed the county’s most densely populated municipality near the top of the ranks. After a short stroll along bustling Anderson Avenue, the borough’s main retail drag, my friend and I squeezed inside T & Thai, a cozy space whose dining area is no larger than a snug Manhattan loft. In a way, however, the size recreates the warm atmosphere of many Asian homes, and that’s exactly what we sought, eating in on the first full day of fall. T & Thai’s menu isn’t unlike other Thai restaurants, and I’ve tried many of the selections, from pad Thai and fried rice to panang curry and whole snapper, in dining rooms across the county. But there is something different here, an intangible that goes into every dish. We’re told Chef T (as he’s simply and fondly known) prepares food the way his grandmother did in—as I can only imagine—the family’s kitchen decades ago. We immediately tasted the difference when sampling our first appetizer, chicken satay. Satay is a popular Southeast Asia dish, its flavor and preparation varied from country to country. T & Thai’s iteration comes with four marinated chicken skewers, each with perfect grill marks and seasoned ever so lightly. Much of the flavor punch of this app comes from the sweet peanut sauce, meant for dipping (or slathering, if you choose). Our second starter was a pair of summer rolls, fresh (neither fried nor steamed) rice-based wraps stuffed with shrimp, thin rice noodles, veggies and a heaping pile of cilantro. The ingredients alone stimulate the taste buds in a pleasant way, but the accompanying tamarind dipping sauce neutralized the distinct taste of the cilantro. Though convinced that we could have ordered a table full of appetizers—the curry puffs, chicken dumplings and Tom Yum soup were calling our names—my friend and I ordered a trio of mains to share. The pineapple cashew fried rice with shrimp isn’t presented in a halved pineapple the way many restaurants do serve it, but the portion is still enough to feed a family. Even better, it’s filled with fresh vegetables and, of course, plenty of pineapple. The jumbo shrimp, which we added to the order, come with tails on, requiring us to pause between bites to discard the shells. Our second plate was drunken noodles, a

dish that’s quite the opposite of the lighter Thai noodle dish, pad Thai. This broad noodle is thick and chewy, almost as “meaty” as the delicious cuts of beef we added to the entrée. I was pleasantly surprised by the high quality of the meat, which was unlike the thin, flimsy cuts used at many Chinese restaurants. This dish has an extra kick thanks to the Thai hot chili but is not overwhelmingly spicy. We also shared a bowl of Hawaiian pineapple curry with chicken, a concoction of coconut milk, pineapple, red bell peppers, chili peppers and basil. The broth was on point in terms of taste—sweet, not spicy—though it was a tad runnier than I expected. I also didn’t anticipate having to order a separate bowl of jasmine rice (curries at T & Thai do not come with a side of rice). Loaded with carbs and protein, we reluctantly passed on dessert. But I’ll be certain to try the mango with sweet sticky rice and the restaurant’s seasonal dish for fall— pumpkin and taro custards—during my next visit. What T & Thai lacks in fancy decor and floor space, it certainly makes up with its service and cuisine.
