What The World Needs Now When I started planning our February issue, the month’s usual Valentine’s Day themes didn’t quite seem to hit the mark. It seemed time, somehow, to go beyond a holiday reserved for lovebirds. After all, whatever our memories or hopes, we’re not all always in a relationship. So instead, our special report highlights the endless variety of love. It’s a celebration, if you will, of the different kinds of affection we feel for others in our lives. Love is, as the song says, what the world needs now—and never have we needed it more. Perhaps reading about love’s various incarnations will please you as it did me. Turn to page 26 to find out. In speaking of love, it’s hard not to think about the relationship we have with our pets. We look after them and provide for them as members of our family, and they show us unwavering affection. A pet’s love is even more appreciated at a time when so many of our social outlets are blocked by COVID-19. In “Pet Adoption Gets Frisky” on page 34, you’ll hear from Bergenites who over the past year and in spite of the pandemic brought home a new furry friend. Many owners pay tribute to our animals’ unconditional love by showcasing them on social media, creating Instagram accounts so that the entire online world can fall for Fido and Mittens. We’re certain that the good girls and boys featured in “Stars With Paws” on page 30 will bring a smile to your face. Of course, pet ownership isn’t all cats and dogs. There’s a whole population whose hearts go out to animals of different kinds: birds, lizards, snakes and more. In “Was That a…Rooster On a Bike?” on page 38, we introduce you to some exotic pets in the neighborhood—including a skunk—and the owners who love them. We couldn’t celebrate skunks and neglect human love—or human history—or human health. So for that romantic evening of the 14th, we offer couples ingenious alternatives to an old-fashioned date night, given that the pandemic still has a grip on certain events and activities. To commemorate Black History Month, we provide a list of Black-owned restaurants that are dishing out great meals. And to observe American Heart Month, we provide a handy guide to make sure your ticker keeps ticking. However you show love, whether it’s with a precious diamond for your sweetheart or a donation to an animal rescue organization, your gift comes from the heart. Sure, that’s the organ that keeps our bodies going. No wonder it’s the universal symbol for what the world needs now—and always.

PROTECT YOUR TICKER A smile from a crush did the trick in middle school, but boosting your heart rate may take a little more work these days—especially in winter. You know exercise promotes heart health; it’s just harder to arrange when it’s cold out. In February—American Heart Month— here are four ways to get your blood pumping: • Skiing at Campgaw Mountain, Mahwah. Officials at Bergen County’s lone outdoor ski area ensure the safety of staff and visitors with mask regulations and temperature checks. The mountain features trails for

all levels, from beginner to seasoned shredder, as well as a tubing hill for thrill seekers. • Ice skating at Van Saun Park, Paramus. The pandemic forced the county to scale down its Winter Wonderland, but the outdoor skating rink remains open through February. Reservations are required to ensure social distancing, but fun is guaranteed once you and your group take the ice. • Cycling at Saddle River County Park, Ridgewood. When it’s clear of snow, the path along the Saddle River is one of the most popular and

If the stroll from River Road to the cliff-top park doesn’t leave you breathless, the panoramic view of the Hudson River and George Washington Bridge will. From the park, continue toward the GWB and complete an out-and-back across the span. The round trip on the bridge is equivalent to a 5K race.

CULINARY CORNER: EAT HEALTHY If one of your resolutions for 2021 is to eat healthier, join the club. Then join The Salad House bandwagon, as the fast-casual eatery that originated in Westfield (with other locations in Millburn, Montclair and Livingston) has opened its first Bergen County location in Englewood. As with other make-your-own salad chains, you can select one of its creations or pick and choose your preferred ingredients. They found Bodhi online and were bummed when someone else had adopted him. But after that adoption fell through, they got a call that he was available and drove to Pennsylvania—just as Hurricane Isaias was quieting down last summer—to bring him to his forever home. “We were destined to be this little fellow’s parents,” says Veloso. The Hasbrouck Heights native— whose parents still live in his childhood home— has been announced as the celebrity host of Cherries Wild, a game show that is a partnership between Fox and Pepsi to promote Pepsi’s wild cherry soda. In two rounds of pop culture trivia, teams of two contestants must answer questions correctly for a chance at winning the $250K prize. Biggs is best known for his role in the American Pie franchise and the early seasons of Netflix’s Orange Is the New Black. Cherries Wild premieres Sunday, Feb. 14 at 7 p.m. on Fox.

THISTLE BE INTERESTING Imagine releasing your debut album during a pandemic—at age 16! That’s Paramus musician Jake Thistle’s claim to fame. The budding singer and songwriter, who has worked with Stevie Nicks and the Heartbreakers, has released Down the Line, recorded at his New Jersey home after studios were shut down due to the pandemic. In December, just before the holidays, the teen debuted his new music via—what else?—a livestream concert. “I’m super grateful for the response to the record; it was much more than I expected,” Thistle tells BERGEN. “I ended up having a lot of people buy tickets to the live, virtual show, which I really appreciate.” Check out this up-and-coming rock star on social media @jakethistlemusic while we all wait for the age of playing gigs on stage to return. “Performing virtually isn’t as fun as live, obviously,” says Thistle, “but I still have a great time playing!”

IT PAYS TO THINK AHEAD Cardiac checkups can be critical to protecting your health. Here’s a guide to some of the most common tests.

Heart disease kills one in four Americans and is the nation’s leading cause of death, according to the Centers for Disease Control and Prevention (CDC). Fortunately, many heart conditions can be prevented or treated—especially if you catch them or their warning signs early with appropriate tests. Getting regular checkups with your primary care physician is the best place to start. He or she can listen to your heart, order screening tests and assess your risks. If screening tests uncover any reasons for concern, you may be referred to a cardiologist for additional testing to investigate underlying conditions and determine next steps.

BLOOD PRESSURE

What it is: A measurement of the force that blood exerts on arteries as your heart pumps. How it’s done: A healthcare professional places a cuff around your upper arm, inflates it to compress an artery, then slowly releases it while monitoring your pulse. Why it’s important: High blood pressure triggers no symptoms but greatly increases your risk of heart disease. When you may need more tests: Healthy adults should have blood pressure checked at least once a year, but your doctor may check more often if your reading is higher than 120/80 or you have risk factors.

What it is: A gauge of blood sugar levels, which reflect the presence or risk of diabetes. How it’s done: A variety of blood tests assess glucose levels; some require fasting. Why it’s important: Untreated diabetes substantially increases your risk of heart disease, but elevated blood glucose that’s caught early can be reversed. When you may need more tests: Your blood glucose may be tested more frequently if you’re overweight or have additional cardiac risk factors like high blood pressure or high cholesterol.

ECHOCARDIOGRAM CHEST X-RAY What it is: An ultrasound scan that generates measurements as well as still and moving images of the heart’s interior, including its chambers, blood vessels, valves and blood flow. How it’s done: An instrument called a transducer creates images as it’s moved over the skin of your chest and torso. Why it’s important: Obtaining information about your heart’s size, shape, movement, strength and function can reveal problems including faulty valves, structural abnormalities, heart attack damage, inflammation and heart failure. When you may need more tests: If a standard echocardiogram doesn’t provide enough detail, you may need an invasive transesophageal echocardiogram (TEE), in which you’re sedated and a transducer is inserted down your throat to a position closer to the heart.

What it is: A black-and-white, 2D image that shows your bones, lungs and heart. How it’s done: You stand between a machine that generates X-rays and a plate that captures the image. Why it’s important: Chest X-rays can reveal heart-related lung conditions such as fluid resulting from congestive heart failure, problems with blood vessels near the heart and abnormalities in the heart’s size and shape. When you may need more tests: Your doctor may order further imaging tests that reveal details not visible on an X-ray, such as internal heart structures.

What it is: A blood test that checks circulating levels of fatty substances such as cholesterol (total, LDL and HDL) and triglycerides. How it’s done: A healthcare professional uses a small needle to draw blood into a vial that’s sent to a lab for analysis. Fasting may be required before the test. Why it’s important: High levels of LDL cholesterol and triglycerides boost your risk of heart disease, while HDL is protective. When you may need more tests: Healthy adults should get a lipid profile every four to six years, but your doctor may order screenings more often if your numbers are worrisome or you have risk factors like a family history of heart disease.

What it is: A measurement of electrical activity in the heart as it beats. How it’s done: Electrodes affixed to your chest, arms and legs convey your heart’s electrical signals through wires to a computer. Why it’s important: Abnormal electrical activity can indicate conditions such as irregular heartbeat, clogged arteries, heart damage, heart failure or a heart attack. When you may need more tests: Cardiac electrical activity can vary throughout the day, but an EKG only offers a minutes-long snapshot. A portable Holter monitor can record electrical readings over 24 to 48 hours for a more complete picture.

What it is: A way for your doctor to know how your heart responds to exertion. How it’s done: You walk on a treadmill or pedal a stationary bike while your heart rate, blood pressure and electrical rhythms are tracked. Why it’s important: The stress test allows a doctor to see if enough blood flows to your heart as you get more active, whether your heart rhythms are normal and more. When you may need more tests: More tests may be ordered if the results are unclear; if you have other risk factors for heart disease that raise concern; or if your doctor wants to confirm results that indicate coronary artery disease.

What it is: Similar to the exercise stress test, but with images. How it’s done: A small amount of radioactive dye is injected, and then two sets of images are taken with a special camera, one while the patient is at rest and another after exertion. Why it’s important: May be recommended if an exercise stress test doesn’t pinpoint the cause of symptoms. When you may need more tests: If results indicate blockages or damage, a coronary angiogram, also known as cardiac catheterization, may be done. Note: Patients who can’t do exercise for the test may get a pharmacological nuclear stress test, in which a medication is injected to mimic the effects of exercise.

What it is: An imaging method called computed tomography (CT) in which X-rays taken from multiple angles produce detailed, 3D images of the heart and its arteries. How it’s done: You lie on a table that slides into a large, tunnel-like machine in which X-ray beams rotate around you. Why it’s important: CT scans can reveal coronary artery plaque buildups that threaten the heart, along with valve problems, inflammation and pumping deficiencies. When you may need more tests: If your doctor is concerned about your exposure to X-ray radiation or needs greater accuracy for specific conditions, you may receive a magnetic resonance imaging (MRI) test to take detailed images using magnets and radio waves.

What it is: A diagnostic procedure in which a cardiologist inserts a thin tube called a catheter into a blood vessel (typically in the groin) and threads it to your heart to obtain images or samples. How it’s done: The procedure typically takes place in a hospital catheterization (cath) lab under light sedation. You may be injected with a dye that makes blood vessels more visible. Why it’s important: Cath images can show if blood vessels supplying the heart are narrowed or blocked, and a procedure to open them may be done during the same catheterization. When you may need more tests: If you need a procedure such as open-heart surgery, more tests may be required to prepare for your operation.

Hear the word “love” in this month marked by lace-trimmed greeting cards and heartshaped candy boxes, and your mind drifts toward romance. But that’s just one of several kinds of love. Love is also the face of a mother proudly magnet-posting her toddler’s grubby scribbles on the refrigerator door, a friend offering a hug when words fail to provide solace, a gruff old man putting out kibble for feral cats on a winter evening. It is, as the song says, what the world needs now—and never have we needed it more. With that in mind, BERGEN offers the five tales here as a celebration of love’s variety—and as a kind of valentine. A minister and the community she serves an experience of one moment of grace after another,” she says. She raised $15,000 in all, enough to add $250 to each backpack. Along with the gift cards and personal care goods, she included a necklace bearing a heart-shaped stone inscribed with the words “You are loved.” To her surprise, those necklaces were the most appreciated of all her gifts. As she handed them out, she told each recipient, “If there’s a moment when you doubt you are loved, you can use this to remind you.” She continues to give out those necklaces today, in what she calls her “go bags,” which she fills with reading glasses (inspired by her own imperfect middle-aged vision), a list of resources and a Dunkin’ Donuts gift card—useful not just for food but also for a place to shelter from the cold for a bit and a clean restroom in which to wash up. She takes the bags with her whenever she’s likely to come across someone in need, and they allow her, she says, “to give back what came so easily in my own life: food, warmth and love.”

It was 2016, and Sonia Ketchian was about to turn 60. In preparation for the landmark birthday, friends and family pressed her on how she’d like to celebrate it: With a big bash? The trip of a lifetime? But Ketchian, co-minister of the Unitarian Universalist Congregation of the Palisades in Englewood, felt she had everything she needed and more. “I’ve had a lifetime of parties; I have a wealth of people who love me and whom I love,” she says. Then it occurred to her. At this juncture in her career, the Fort Lee resident had been ministering to the homeless, just across the George Washington Bridge in New York City, and there was plenty that they needed—not least a simple acknowledgment that they existed. So for her birthday, she asked for donations that she planned to stash in 60 backpacks to be given out to homeless men and women: everything from socks and toiletries to nutrition bars and gift cards. She created an Amazon wish list and sent out heads-up emails. The response was staggering. Every day brought new donations, from as far away as New Zealand. “It was

THE LONG-DISTANCE RUN Sisters

It started on the George Washington Bridge. Jamie Woyce, a resident of East Rutherford who coaches cross-country and track and field at Cliffside Park High School, was taking her students on a run across the span when she noticed a woman wearing a T-shirt that said “MS Run.” Intrigued, she asked the woman whether she, too, was a coach and learned that, in fact, she was raising money for multiple sclerosis research and outreach by participating in a cross-country relay. Woyce was intimately acquainted with MS, a degenerative disease of the nervous system: In 2003, at 27, her sister, Michelle, had been diagnosed with the illness, which she’d faced with courage and perseverance. Requiring a bit of both, the run seemed like both a symbolic and a practical way to honor Michelle. Nevertheless, Woyce’s first response to the idea of running 188 miles in seven days, from Sunbury, Penn., to New York City, was “I can’t do that—it’s crazy.” She did it anyway. “It was such a great way to spread awareness of MS,” she says. Still, after her first day of running, she felt overwhelmed and exhausted. “How am I going to wake up and do this again?” she asked herself. She found the answer in Michelle: My sister never gives up, she thought. “I won’t either.” In the end, she finished the run and exceeded her fundraising goal of $15,000. Last year, she signed up to be an MS Run ambassador, part of a group that has pledged to raise $25,000 in 2021. She no longer doubts herself. “If you can find a purpose larger than yourself,” she says, “you can do anything.” BERGENMAG.COM

Teaching, Barry Albert says, is in his blood. Both of his parents were teachers, inspiring him with their deep commitment to education, and especially to their students. His mother, who taught reading and English as a second language, was living proof that teaching was about more than just passing along knowledge. “She went above and beyond that,” he says, “and became involved in her students’ lives. She really cared about them.” His own career began in 1996, teaching English at Westwood Regional Middle School. “I grew up in Westwood and went to school here,” he says, “so I was particularly excited to be teaching here.” He loved the work, especially the opportunity it offered, in his words, “to form a real bond” with his students. Which is why, in 1998, at the end of his second year of teaching, he told those students that he’d be holding a class reunion on the first day of the new year—in 2020. It wasn’t anything he’d thought out, just one of those fun things he liked to do with his kids to enhance the experience of learning, and at first he didn’t really expect the reunion to happen. Still, it became a tradition: Every year, when it came time for him to sign yearbooks, he always penned a reminder in each to gather at the Westwood bandstand at noon on Jan. 1, 2020. In December 2019, the emails started to arrive: messages from former students telling him they’d see him at the bandstand. “I think this is really happening,” Albert— now assistant principal of the middle school—told his wife, not entirely believing it. She told him he was crazy, but he said, “No, I think we have to go.” And so they did: Last Jan. 1, at 12:15, he arrived at Veterans’ Park with his wife and two children, still not knowing whether he’d be met by a handful of former students or an empty bandstand. In fact, he was greeted by a throng of his other “kids”—some 140 of them—who were drawn by a shared affection for someone who’d cared about more than their grades and test scores. Albert was, he says, “blown away.” He’d always known that he’d touched lives, but here, on this frigid January day, was the evidence. “We’d made a kind of mutual commitment,” he says of himself and his students. “And love was the thing underlying that.”

THE FOOTBALL GAME It was more than a half century ago—in 1967, to be exact—that Scott Reddin and Ron White got together on Thanksgiving morning to play a game of football. They were 8 years old, and it seemed like a great way to hang out before the big dinner. It still does. For 54 years, Reddin, White and about 35 of their friends from back in the day have been meeting at 10 a.m. at Witte Field in Englewood Cliffs, where both kids grew up. Over the years, the group has grown to include secondgeneration players, but aside from growth, girth and hair loss, the game is largely the same. “We don’t have to mark it on our calendars or send out emails or make phone calls,” says Reddin, who now lives in neighboring Englewood. Everyone knows that, rain or shine (or, on occasion, snow), the game’s on—and, Reddin adds, “we still look forward to it for months in advance.” Football is almost beside the point; the real purpose of the game is to get together and catch up with old friends who otherwise might have drifted off, consumed by careers and families. “Even in this day of social media,” Reddin says, “when you ask people how many school friends they’re in touch with, the typical answer is ‘one’ or ‘none.’ We have dozens.” Last Thanksgiving, concerns about COVID shrank their number to 12. All the players were masked, and the rules were tweaked to account for social distancing. But as usual, there was no fighting and no negativity. “We just wanted to keep the tradition going,” says Reddin. With luck, all the familiar faces will return in 2021. “This is something special,” says Reddin. “We know how lucky we are.”

Sarah Jordan had been waiting to meet Mike Silberstein long before she knew his name. In 2018, through a program called Be the Match, the Yale undergrad and Mahwah resident had donated a sample of her DNA, taken via mouth swab, in the hope that someday she might be able to donate her bone marrow to save a life. The call came sooner than she’d expected, in the fall of 2019: Her DNA was a match for someone, somewhere, suffering from leukemia, whose greatest hope turned out to be Jordan’s bone marrow. “The opportunity to save a life was really exciting,” she says. “I knew right away that I was going to do it.” A member of the Yale women’s soccer team, Jordan had to wait three days until the end of the season. Then, at Boston’s Massachusetts General Hospital, she spent six hours with a needle in each arm, as doctors extracted the lifesaving marrow. A year later, she contacted Be the Match and asked if she could meet her recipient—a “meeting” that came about on Dec. 1, 2020, via Zoom because of the pandemic. She’d been told beforehand that he was a man about her father’s age, with a wife and a daughter, and she got to meet all three of them on the Zoom call. “Because he was my father’s age, I was expecting to see a grown child, and instead I was looking at a 6-year-old,” she remembers. “I realized that now, her father would be able to watch her grow up. For former Arkansas stray Socks, fame came when he followed Bill Clinton all the way to Washington, D.C., where he became the “host” of the children’s version of the White House website. Such hard work clearly pays off, but for a new generation of cats and dogs, the path to popularity is a bit easier: Look cute while doing everyday things, and let the owners do the work. That formula has worked for Boo the Pomeranian, Grumpy Cat, Lil Bub and hundreds of other canines and felines who have soared to celebrity status thanks to the social media savvy of their human best friends. In many cases, fame is just one viral post away (for instance, Oskar the Blind Cat’s battle with a hair dryer or the feline Smudge’s meme-worthy scorn for salad); for others, it’s a gradual work in progress. It’s no secret that Bergenites fancy their pets, and they aren’t shy about putting those cats and dogs in the spotlight. Lorenzo, @Lucy_and_Lorenzo, 302 followers Owner: Lucille Scharback, Park Ridge Enzo went from living behind a shed with his kitten siblings to starring in his own up-and-coming Instagram account, thanks to owner Scharback and her fiancé. With the help of Cat Crew Rescue, the couple acquired the kitten in July 2019, and family and friends adopted Enzo’s brothers and sisters. Since then, Scharback has been snapping daily photos and videos. “I was taking so many pictures of Enzo every day doing all the cute things he does and sending them to family and friends,” she says. “I knew I wanted to start a page to share more of my own photos, and I thought Enzo would make a perfect model to star on my account. I hope in the future to continue thinking up new ideas for Enzo and maybe even incorporate some fashion and home décor content as well. It was really exciting this holiday season to take photos of Enzo enjoying our holiday décor.” Still in its infancy, Enzo’s account continues to grow. He’s been contacted by brands wanting to collaborate, and Scharback hopes to team up with those they both love.

Buddy, @Buddy22018, 10.2K followers Owner: Frauke Merli, Rutherford Merli went on a three-month spamming spree after she adopted Buddy in May 2018, sending family and friends countless photos and videos of her new pup. Eventually she created an Instagram account for him. “I thought it is better to have a platform where people can follow Buddy’s life if they want to and not have to,” she says. Since then, Merli switched Buddy’s account to public to generate a larger following, and the numbers have exploded thanks to Merli’s frequent posts. “I post a couple of times a day,” she says. “I am always armed with two phones and ready for story pics, videos or shots for Buddy’s Insta feed.” Coming up with photos of a cute dog is a breeze, but the words aren’t Merli’s forte. “Sometimes I struggle to come up with a good caption, especially given that English isn’t my first language,” she says. But that hasn’t prevented the spotlight from shining on Buddy. “In Germany we were invited to the German Petfluencer Awards, and Buddy also modeled for Hunter International, a high premium dog brand in Germany,” Merli says. “There are a lot of different ways to gain new followers. The most important is to post great content and be consistent. In addition, while first starting out and trying to attract followers, it helps to interact with other Insta pet accounts.”

Winslow, Paddington and Bond, @winslow_paddington_bond, 11.3K followers Owners: Steven Thede and Trevor Shimpfky, Allendale Despite the exponential growth of their dogs’ account over the past few years, owners Thede and Shimpfky maintain that their page is still the same “memory book” they created in 2016. The only difference: The couple started with one puppy—Winslow, now 5 years old—but have since added two more, Paddington, 4; and Bond, 7 months. How do you know if a canine is star material? “Any puppy is the right puppy, in our opinion,” says Thede. “They are angels sent to us.” That’s evident in their posts, which always feature one or more of the springer spaniels modeling fancy sweaters, visiting lush gardens or napping on a cozy couch. “We post when we feel we’ve captured a special moment—no more, no less,” Thede says. “It has to make sense for them and tell a special story that captures who they are and their personalities.” As for writing clever captions, “It’s not difficult at all. Put yourself in their paws and think ‘what would they be saying right now?’” The owners’ creativity (along with the dogs’ cuteness) has drawn a large following and numerous sponsorship opportunities, of which they’ve chosen the ones that “really spoke to who we are as a family,” Thede says. “If you try to be what you think people want you to be, they will see right through it. Do what feels right in your heart, and it will speak to other people’s hearts.”

TRUST THE CUTENESS

Loki, @_Lokithecat_, 1,522 followers Owner: Genevieve Vallejo, Edgewater Having been interested in a tuxedo cat for some time, owner Vallejo and her husband adopted 6-week-old Loki from a foster family three years ago. In the early days, Vallejo created Loki’s Instagram account so friends and family “could follow along on his feline journey.” She had been posting daily photos, but then went through a dry spell. It’s “very difficult” to come up with content, she says, admitting that she catches herself “Googling ‘cat captions for Instagram’ when I get stumped. You really have to make time for it. These days I pretty much post when I have the time.” Loki lovers have enjoyed a recent surge in content, particularly during the holidays, as Vallejo has edited and prepped a stockpile of photos to post. In return, the cat and his owner received dozens of greetings and Christmas cards over the holidays. “Create your content ahead of time and do not filter your cat’s photos,” she advises. “Pets are cute just the way they are—no need for filtering.”

Crosby, @crosby_csillag, 2,757 followers Owners: Matias, Ezra and Simcha Csillag, Englewood Stuck indoors because of the pandemic, the Csillag siblings added a ball of energy to their home last June when they adopted Crosby, a 1-year-old phantom merle cavapoo. According to Matias, he and his sibs immediately knew the pup would be the perfect addition to the family—and the perfect face for social media. “After meeting Crosby for the first time, we knew his coloring and personality were unique,” he says. “We wanted to share the joy he brings to our family with everyone.” An eager yet attentive puppy, Crosby is an easy subject when it comes to creating cute content for the ’Gram. “He is energetic and playful, always looking for someone to play fetch with, but he is also great at reading the room,” Matias says. “When it’s time to relax, Crosby is the best at cuddling with his family.” Each member of the Csillag trio contributes to every Instagram post, putting “lots of time into captions and taking the perfect photo. But the reactions we receive make the hard work worth it.” In less than a year, they’ve successfully boosted Crosby’s following by engaging with other pet accounts and “creating content that others can relate to and interact with.”

HEAD OF THE PACK

The Muskrats, @muskratnation, 71.4K followers Owners: Ilias Siafakas and Chris Markson, Hawthorne They’re known across the country’s cat community as the Muskrats, but at home, owners Siafakas and Markson call their kitties by name: Bentley (9 years old), Raisin (5), Cheddar (3), Eloise (3), Tatertot (2), Bernie (1) and Oreole (1). If seven cats sounds like a lot, it is. The couple says their house is maxed out with felines, and fans see it firsthand in the family’s daily posts. But the proverbial door isn’t completely shut: When Siafakas and Markson see “something special” about a cat in need of rescue, they just may bring it home. They’ve remained close with actress, model and animal activist Beth Stern since adopting Raisin from her through North Shore Animal League. That’s how the Muskrat fame started, as Raisin had already won popularity on Stern’s Instagram page. “We wanted to share his story with others as he grew up, so we made our account as a result,” Siafakas says. “Most of the content ideas just come naturally,” he says, adding that for some posts, professional video software is needed for the edits. “But other posts can be a quick video using our iPhones.” To maintain control of their content, they’ve declined partnership opportunities and instead used their account for fundraising. “Every year we raise a few thousand dollars for North Shore Animal League by selling our holiday card,” the owners say. “Also, we participate in an event called Cycle for the Cause, a 275-mile bike ride from Boston to New York City, to help raise money for AIDS/HIV patients.” BERGENMAG.COM

PET ADOPTION GETS FRISKY

AS THE CORONAVIRUS KEEPS FOLKS AT HOME AND LIMITS CONTACT WITH FRIENDS, MORE BERGENITES SEEK OUT COMPANIONS OF THE MASKLESS, FOUR-LEGGED KIND. By Haley Longman

Choosing a pet has always been a ticklish proposition—guessing in advance how a needy creature will fit into your family’s routine and just what treasured items it may decide to chew on while it captures your heart. But since the pandemic began, there’s been a newly important facet of this animal adventure: competition. Pets up for adoption are in high demand. “One of our dogs produced over 50 applications within three hours,” says Laura Witzal, founder and president of Pawsitively Furever in Hackensack. “There is a huge outcry for dogs and puppies.” National media report that pet adoptions have soared as the pandemic has raged on, and our county seems to be no exception. Happy Tails Animal Rescue in Paramus is averaging 15–20 adoptions a month compared with its usual 10, and Closter Animal Welfare Society (C.L.A.W.S.) has doubled its adoptions since before the coronavirus, to about 15 per month. The Oakland shelter Ramapo-Bergen Animal Refuge Inc. (RBARI) has seen a more modest

increase, but still an increase—it annually does about 600 adoptions, but saw close to 700 in this plague year. Chalk it up to a craving for companionship in this lonely, stay-at-home era—and maybe a simple desire to smile and feel good. “People find companionship, joy and hope in adopting,” says Megan Brinster, executive director of RBARI. “We have all felt a little helpless this year, and getting the chance to give back and make a difference in the life of an animal brings purpose to people.” More time at home, of course, means more time to get an animal trained and acclimated to its new living situation, so that some families who may long have considered pet ownership now find it more practical. Young couples and families are often on the hunt for new feline and canine companions in any era; in this one, professionals temporarily freed from the hassle of a daily commute and college kids home from school are seeking out adoptions too. “Most people are looking for small-to-medium younger, hypoallergenic dogs that are good with families and also good for apartment living,” says Noreen Delaney, president of Happy Tails. But she’s quick to explain that no one type of animal accounts for all of the recent increase in demand; she has also seen a handful of hamster and guinea pig adoptions by New York City families who are looking to enhance their kids’ virtual schooling. These days, the effort to acquire a pet can feel like the struggle to get one’s child into an exclusive preschool. “We BERGENMAG.COM

had been looking into adopting for a while since my daughter needed an emotional support pet, and the quarantine provided the perfect opportunity,” says Alexa Soto of Paramus. But “the most difficult thing was the competition,” she adds—the family’s application kept getting denied because their yard wasn’t fenced in. Eventually they connected with Delaney from Happy Tails, who was fostering Mia, a 5-year-old Westie mix who’d been found wandering the streets of Passaic, apparently abandoned by her previous owners. “She fits into our family perfectly,” Soto says. “She is a mush who loves to cuddle and hangs out with my daughter all day during virtual learning.” Older dogs and cats are generally the most difficult for animal shelters to place, but many local facilities have seen a higher-than-average number of senior dog adoptions during COVID. “Some older people who live alone have reached out for companionship,” says Sophia Sembos, founder and director of Cat Crew Rescue in Oradell. “We are always happy to match a senior person with a pet to help their quality of life and mental health.” RBARI, meanwhile, runs a “senior-to-senior” program, which has been flourishing over the last year. “I think people saw that senior humans were having a hard time this year, and that translated to people giving senior animals some extra love and care,” Brinster says. One example is Joan Westervelt, a 72-year-old Closter resident who adopted 11-year-old Rocky, a Jack Russell terrier mix, from C.L.A.W.S.; her friend’s neighbor was fostering him after his owner moved into assisted living. Westervelt had lost her

{ ANIMAL TALES } Pawsitively Furever appointments must be made in advance, no walk-ins permitted. “The whole process was weird,” says Jersey City’s Rich Iurilli, who adopted a 1.5-year-old domestic shorthair cat he named Gio Purrshela after Gio Urshela of the Yankees. He first met the playful and affectionate kitty on Zoom through nearby Liberty Humane Society, and brought him home via no-contact pickup. “When I picked him up, I called and someone put his carrier on a bench outside the door.” Luckily, Iurilli says, “Gio adjusted to his new home almost immediately,” and both are enjoying each other’s company as Iurilli continues to work from home rather than commute into Manhattan. For some pet owners, after all, life changes have worked

black lab, Shadow, in August to cancer and, though she typically favored larger breeds, knew the “energetic and spunky” Rocky was the perfect dog who came at the perfect time, after she’d fully mourned Shadow. “It has been very wonderful to have some good, loving company when I’m in the house alone,” Westervelt says of her new companion, whom she officially adopted in November. “Rocky and I are bonding more each day, and it’s wonderful. I am so blessed.” Other Bergen County residents have been “replacing” lost pets; Sembos says she has had many such clients who felt that the pandemic was the perfect time to have a new four-legged friend join the family. Mary Beth Kuderna of Clarkstown in Rockland County, N.Y., adopted a new dog after hers passed

“We had been looking into adopting for a while since my daughter needed an emotional support pet, and the quarantine provided the perfect opportunity,” —Alexa Soto of Paramus counter to the trend. “We have seen many pets surrendered because people are losing their jobs, houses and sense of security,” says Delaney. “As people need to downsize, unfortunately their pets are given up because there is such a low percentage of rental housing that allows pets and they have no choice.” RBARI is seeing a trend of animals ending up in overcrowded facilities, being surrendered at higher rates and requiring urgent medical care, says Brinster. However, the folks running these rescues and shelters are optimistic that even when we all return to normal—and return to the office—the good will outweigh the bad and pet lovers will still want to adopt. “Perhaps once the vaccine becomes readily available, more places will reopen and we will be able to do adoption events again,” says Staiger of Chance at Life. “It has been hard for all rescues and shelters, but we are optimistic that things will get better over the next several months.” And honestly, aren’t we all?

away in December 2019. She donated some of her dog’s belongings to RBARI in January of 2020, at which point she met Mickey, an 8-year-old Miniature Pinscher. The timing wasn’t quite right to bring him home, Kuderna says, but once COVID happened and she found herself working from home, she kept thinking about him. “I’ve never not had a dog, but that emptiness was more apparent after working at home for a month,” she says. “I felt like Mickey and I were meant to be together at that point. He’s such a great little guy!” Tiffany and Earle Connelly of Hasbrouck Heights lost the older of their two dogs two years ago; they also decided the pandemic was the ideal time to adopt a new one—except that when they met a Jack Russell mix and a chihuahua mix at C.L.A.W.S., they ended up adopting two. “We looked at their pictures and fell in love when we met them,” Tiffany says. “We were only supposed to adopt one, but did not have the heart to come home without the other one!” Geezer (the Jack Russell) and Dio (the chihuahua), named after members of the rock band Black Sabbath, are settling in quite well to their new home (and became fast friends with the family’s Schnauzer mix, Munchkin). The boom in pet adoptions doesn’t mean COVID hasn’t brought its challenges, in pet adoption as in everything else. For instance, many adoption events have either been cancelled entirely or made less frequent because of social distancing requirements or because pet stores—despite the demand surge—have closed their doors. Chance at Life Cat Rescue in River Edge, for instance, used to hold cat and kitten adoption events almost every weekend at PetValu in Dumont, but that location shuttered all adoption events back in March 2020 and the chain itself recently closed throughout the U.S. Now, says Vanessa Staiger, the rescue organization’s president, it sends potential adopters photos and videos of the cats they’re interested in, and arranges FaceTime calls as well as socially distanced in-person meetings at the foster family’s home once a potential adopter’s application is approved. RBARI has had to shift its business model as well, says Brinster, using social media, its website and e-newsletters to showcase the animals that are looking for forever homes. All applications are now completed online, families are vetted virtually and dog and cat meetups are by appointment only. Cat Crew Rescue, meanwhile, now holds all home visits virtually, and at

YOUR CAT OR DOG MAY WIN ADORING SMILES, BUT THERE’S NOTHING LIKE AN EXOTIC PET FOR TRIGGERING DOUBLE TAKES. By Darius Amos We keep pets for varied reasons: unconditional love, companionship, amusement, stress relief. And dogs and cats by the millions fit the bill; according to the American Veterinary Medical Association, nearly 40 percent of the nation’s households own at least one registered canine and 27 percent have one or more feline friends. But there’s a special breed of pet owner for whom having just a dog or cat can’t quite cut it. Owning an exotic pet—defined by the Oradell Animal Hospital as any pet beyond the canine and feline categories—has a definite coolness factor; chances are you’ve got the only one on your block. And no one can prove that a bearded dragon lizard or an acrobatic flying squirrel or a 200-pound ostrich deserves your love any less than a heart-melting puppy. But on the debit side, have you lost your mind? “People aren’t used to seeing a rooster riding on the handlebars of a bicycle,” says John Deere Gidney of Washington Township, who took almost daily bike rides last summer around Westwood and neighboring towns giving a free ride to his adult male chicken, a 16-month-old Silver Duckwing Old English Game bantam named Eric. No, we guess they aren’t. True, your unusual beastly buddy may paradoxically bring less bureaucratic hassle than Mittens or Fido. Consider that municipalities require a license to keep a golden retriever or a lightweight domestic shorthaired cat in your home; no such legal papers are needed to possess the flying squirrel or the ostrich. (Still, many exotics such as ferrets, skunks and wallabies do require a permit.) But there’s a more serious side too to the exotic animal trade. There is, for example, the potential danger of introducing an invasive animal species that’s harmful to native wildlife. The ball python snake, for example, is one of New Jersey’s most popular exotics, with some 300 of them licensed to owners; the breed is native to Africa and eats small rodents and birds in the wild. Three years ago, state troopers rescued one along the Garden State Parkway in Bloomfield. Ownership of any pet—from a goldfish won at a BERGENMAG.COM

carnival to a Doberman rescued from a shelter to a tarantula purchased from a pet shop—brings significant responsibility for the health and safety of both the animal and the humans in the household. And proper education and knowledge of the animal and breed are imperative, says Joseph D’Angeli, director and lead wildlife educator at the Wildlife Conservation and Education Center in Garfield, who cares for more than 40 bats and has given talks at local schools as well as the American Museum of Natural History in Manhattan. Open to the public, his Garfield facility teaches visitors about all exotics—bats, reptiles, amphibians and birds, for starters—and promotes responsible ownership. “We don’t have a problem with private individuals having animal companions,” says D’Angeli. “What I do have a problem with is the exotic pet stores that sell them irresponsibly,” he says, in circumstances where the bottom line takes precedence over “the care, welfare and future of the pets they are selling.” Gidney had plenty of experience and familiarity before touring the neighborhoods with Eric and posting their adventures online. He grew up in a family that raised and cared for chickens. “I spent a lot of time learning about them, caring for them, collecting eggs and being fascinated with them,” he says. North Jersey resident Patrick Wallace did lots of homework before bringing a de-scented striped skunk, purchased from a local pet store, into his household. “It is imperative that you research what it actually means to raise a pet skunk, and that you are in the right place mentally and financially,” says Wallace, who also owns a dog and a cat. He created accounts on TikTok and Instagram that not only follow the playful antics of Atari the skunk, but also provide a daily educational crash course on the breed and ownership. “Skunks do not ‘re-home’ easily,” Wallace warns. “They are not like raising a cat or a dog.” Turn the page to get better acquainted with Atari, Eric, a pair of parrots and D’Angeli’s bats, all of them living in the ’hood with responsible owners. How do you keep a pet skunk from spraying? Follow Patrick Wallace’s beloved Atari and you’ll find out. Ever since he watched Bambi as a youngster, Wallace has had a fascination with skunks. After learning in college that New Jersey allows them as household pets (with a proper permit), he knew he’d eventually own one. Following months of research, as well as securing a veterinarian who specializes in exotic animal care, Wallace brought home Atari, a domestic striped skunk, in July 2019. “It just means they live in our homes; it doesn’t mean they are domesticated,” he says, explaining the terminology. “Skunks are very docile animals and do not require domestication to be pets. Like ferrets, Atari is descented, meaning that the anal glands are removed. Skunks live three times longer as beloved pets than they do in the wild, where they have an extremely high mortality rate.” Wallace shares such facts on Atari’s social media accounts, which are also filled with the skunk’s at-home adventures and interactions with his owner’s cat, Phoenix, and dog, Zorro. “Atari has a sassy side to her, especially when she plays,” he says. “She gets along great with my dog and cat. The cat plays back with her all the time; they chase each other around the apartment. The dog ignores her most of the time, even though she always tries to cuddle with him. Atari is very loving and sweet.”

A chicken on a bicycle—it may sound like a circus act, but it’s been an everyday sight for Pascack Valley area residents during the pandemic. Owner John Gidney, 19, took Eric for rides “just to make people smile during a difficult time for everyone, but it grew into much more, with people actually requesting to see him.” Owning a chicken means more than showing it off. He learns about, cares for and collects eggs from his parents’ 10 backyard chickens, some of whom are older than John himself. “I have always been amazed by both the game bantams and the standard game fowl for their temperament with people as well as how the breed looks, their color variety, hardiness, great survival instincts and low health issues compared with other breeds,” he says. But Eric was unlike the other birds—he always followed Gidney and stayed with him in the family’s house. “Some friends were saying that with Eric’s popularity among our friends and family I should make him an account for fun, so I did,” he recalls. “I figured if it didn’t get much attention, I’d just delete it.” But as the duo started their daily bike rides, people tuned into the account to keep tabs on them. This exotic pet gets rave reviews from his owner. “He’s a very outgoing and very patient bird who seems to just go with the flow,” says Gidney. “He’s definitely the best chicken I’ve ever had, and he’s really a part of our family.”

We’ve grown accustomed to cats on a leash and dogs in a stroller, but we’re still getting used to a bird in a harness. Gloria Montoya of Hackensack gets her share of stares and comments when she’s out on a walk with Cookie, her 12-year-old umbrella cockatoo. “Everyone who meets Cookie, either at my home when they visit or on the street when we’re going for a walk, is wowed by her and has tons of questions to ask,” she says. Of course, Montoya has the answers—she’s been a bird fanatic since childhood, when her mother shared with her a love for birds. Ten years ago, Montoya welcomed Cookie into the home, adopting her from a family that could no longer keep her. A year later, she fostered—and eventually adopted— Junior, a Congo African grey. “Cookie is the sweetest, loudest, messiest child, but she’s very sweet,” Montoya says. “Junior, on the other hand, is very independent—he doesn’t like to be handled and is like a grouchy old man.” With so much personality, the parrots were destined for online fans. “I started a social media account for my birds to share pictures of them with people who would enjoy them, as I was bombarding my personal page with their pictures all the time,” Montoya says. “But I also remind everyone that exotic animals have special needs and require special care, patience and time. Still, I wouldn’t change them for the world.”

THE BATS AT NJ’S BATCAVE

It might take a new owner a while to acclimate to a cat’s rigid morning routine or a dog’s afternoon walk schedule, but for Joseph D’Angeli, there is no getting used to his 24/7 watch. That’s what happens when you care for bats, one of the world’s most eminent nocturnal animals. He cares for them day and night at the Wildlife Conservation and Education Center in Garfield, where he offers COVIDcompliant tours and presentations to the public on the various types of bats, such as the Egyptian fruit bat at left, in his “cave.” D’Angeli grew up as a child in an apartment, so owning a cat or dog was out of the question. That didn’t quite matter, he says. “I was always fascinated with bats and learned so much about them,” he says. “They’re very peaceful and intelligent animals, and I wanted everyone to know that they aren’t the evil creatures you see on TV. They have wonderful personalities.” As D’Angeli grew older, he knew he wanted to care for them so he followed state recommendations, obtained a license and established the wildlife center in Ridgefield Park because “you couldn’t own them privately.” After nearly a decade in Ridgefield Park, the center moved to its current location three years ago and continues to educate visitors there and on social media about bats (D’Angeli has more than 40) and other exotic animals. But D’Angeli, who has more than 30 years of experience with bats, will be the first to warn others about owning them. “Just because we have them, that doesn’t mean they’re a good pet,” he says.

BEEF WELLINGTON Yields 6 servings

INGREDIENTS:

n 1 (2 lbs.) center-cut beef tenderloin, trimmed n kosher salt n freshly ground black pepper n olive oil, for greasing n 2 Tbs. Dijon mustard n 1½ lbs. mixed mushrooms, roughly chopped n 1 shallot, roughly chopped n leaves from 1 thyme sprig n 2 Tbs. unsalted butter n prosciutto, thinly sliced n flour, for dusting n 14 oz. frozen puff pastry, thawed n 1 large egg, beaten n flaky salt, for sprinkling

DIRECTIONS:

Using kitchen twine, tie tenderloin in four places. Season generously with salt and pepper. Over high heat, coat bottom of a heavy skillet with olive oil. Once pan is nearly smoking, sear tenderloin until well-browned on all sides, including the ends, about two minutes per side (12 minutes total). Transfer to a plate. When cool enough to handle, snip off twine and coat all sides with mustard. Let cool in fridge. Meanwhile, make duxelles: In a food processor, pulse mushrooms, shallots and thyme until finely chopped. Add butter to skillet and melt over medium heat. Add mushroom mixture and cook until liquid has evaporated, about 25 minutes. Season with salt and pepper, then let cool in fridge. Place plastic wrap down on a work surface, overlapping so that it’s twice the length and width of the tenderloin. Shingle the prosciutto on the plastic wrap into a rectangle that’s big enough to cover the whole tenderloin. Spread the duxelles evenly and thinly over the prosciutto. Season the tenderloin, then place it at the bottom of the prosciutto. Roll meat into prosciuttomushroom mixture, using plastic wrap to roll tightly. Tuck ends of prosciutto as you roll, then twist ends of plastic wrap tightly into a log and transfer to fridge to chill (this helps it maintain its shape). Heat oven to 425°F. Lightly flour your work surface, then spread out puff pastry and roll it into a rectangle that will cover the tenderloin (just a little bigger than the prosciutto rectangle you just made). Remove tenderloin from plastic wrap and place on bottom of puff pastry. Brush the other three edges of the pastry with egg wash, then tightly roll beef into pastry. Once the log is fully covered in puff pastry, trim any extra pastry, then crimp edges with a fork to seal well. Wrap roll in plastic wrap to get a really tight cylinder, then chill for 20 minutes. Remove plastic wrap, then transfer roll to a foil-lined baking sheet. Brush with egg wash and sprinkle with flaky salt. Bake until pastry is golden and the center registers 120°F for mediumrare, about 40 to 45 minutes. Let rest 10 minutes before carving and serving.

INGREDIENTS: n n n n n n n n n n n n n n n

1½ lbs. ground meat ½ package onion soup mix ½ cup onions, diced 1 tsp. italian seasoning 2 tsp. minced garlic 3 Tbs. Worcestershire sauce 1 egg, slightly beaten salt and pepper bread crumbs fresh mushrooms, sliced 3 Tbs. butter or margarine 1 Tbs. oil 1 can beef broth 1/8 cup flour 1 cup water

DIRECTIONS:

In a large bowl, mix together first nine ingredients. Form into patties and place on plate to refrigerate. In large deep skillet, add two tablespoons of butter and fresh sliced mushrooms and sauté until done. Place on plate and set aside. Add one tablespoon of butter and oil into the skillet and place patties. Cook until done, then place on plate and set aside. While patties are cooking, whisk together water and flour in the skillet with meat drippings. Add beef broth and flour water mixture. Stir until desired thickness, add mushrooms and patties and let simmer for about 10 minutes. Serve with vegetables and scalloped potatoes.

BEEF POT PIE Yields 6 servings

INGREDIENTS:

For the dough: n 1¾ cups all-purpose flour, plus more for dusting n ¾ tsp. fine salt n 1 stick cold unsalted butter, cut into ½-inch pieces n ¾ cup grated Irish cheddar cheese (about 3 oz.) n 6 to 7 Tbs. stout beer n 1 large egg, lightly beaten For the filling: n 2¼ lbs. beef chuck roast, trimmed of excess fat, cut into 1-inch pieces n ¼ cup all-purpose flour n kosher salt and freshly ground pepper n 3 Tbs. unsalted butter n 1/3 cup stout beer n 3 medium leeks, white and light green parts only, halved lengthwise and cut into 1-inch pieces n 1 lb. carrots, cut into 1-inch pieces n 2 stalks celery, cut into 1-inch pieces

DIRECTIONS:

First, make the dough: Pulse the flour and fine salt in a food processor to combine. Add the butter and cheese and pulse until the mixture looks like coarse meal with some pea-sized bits of butter. Drizzle in six tablespoons beer and pulse to combine. Squeeze the dough between your fingers; if it does not hold its shape, pulse in up to one more tablespoon of beer. Pat the dough into a disk, wrap in plastic wrap and refrigerate until firm, at least one hour or overnight. Meanwhile, make the filling: Preheat the oven to 325°F. Toss the beef, flour, 1¼ teaspoons kosher salt and pepper to taste in a large bowl. Melt the butter in a Dutch oven or large ovenproof pot over medium-high heat. Add the beef and cook, stirring occasionally until browned all over, about seven minutes. Add the beer and two cups water, scraping up any browned bits from the bottom of the pot. Bring to a simmer, then cover, transfer to the oven and braise, about 30 minutes. Add the leeks, carrots and celery to the pot and continue braising for one more hour. Meanwhile, put six 10-oz. ramekins on a parchment-lined baking sheet. Roll out the dough between two lightly floured sheets of parchment into a 10-by-15-inch rectangle; cut into six 5-inch squares. Make a few slits in the middle of each square to let steam escape. Remove the filling from the oven and increase the temperature to 375°F. Season the filling with salt and pepper and divide among the ramekins (there may be some filling left over). Top each with a square of dough, pressing the edges into the ramekin. Brush with the beaten egg. Bake until the crust is crisp and golden brown, 35 to 40 minutes. Let rest about 10 minutes before serving.

Gem roast is a Denver-cut brisket that is so tender it can be used for boneless short ribs. Is Bitter Better?

To wake up your salads and shake up your veggie crisper, consider Belgian endive, a mildly acerbic member of the chicory family. In the grocery store, a couple argues over how to pronounce “endive.” “Onn-DEEV!” insists the wife, scorning Americanisms, while her hubby, rejecting pretension, retorts: “EN-dive!” “Stop!” you call out, playing peacemaker. “You’re both right!” It’s maddening but true: In the food world, the same item can have different names, while one name (sometimes even differently pronounced) can refer to different foods. Endives tick both of these boxes of confusion. The word “endive” (pronounced EN-dive) refers to the leafy portion of varied bitter-flavored plants in the chicory family, the genus Cichorium. Two main types, bushy-shaped plants that grow in nature and are often used in salads, were originally cultivated in Asia Minor (Turkey) centuries ago. They are curly endive (alias frisée) and the somewhat less bitter broadleafed endive (also known as escarole). Now, take a breath. From here on, our subject is a third type, Belgian endive (that’s onn-DEEV), for which nature needs a bit of help. It’s carefully “forced” in a multi-step process. Seeds are planted to develop roots, which are then placed in a cold, dark room for one to several months, then moved to trays of water in a warmer room—also dark. For these gullible plants, the water’s warmth becomes an ersatz springtime, and before too long you get the pale, crisp, torpedo-shaped and slightly bitter leafy head we know as Belgian endive. (Not enough names for you? Belgian endive is also sometimes called witloof chicory—and radicchio is a red relative in the chicory tribe.) Don’t let Belgian endive’s mildly bitter taste discourage you; in conversation with other flavors it makes a salad more vivacious, and its cool crispness enlivens texture. After all, banning all foods that can be bitter would mean a life without chocolate or coffee, and let’s be serious!

Want to ease up on the guilt of game-day munching and still enjoy those decadent dips? Belgian endive leaves eaten raw are a healthy, crunchy alternative to chips or crackers. Isn’t that a tasty touchdown? POWER UP While you’re busy and on the move, Belgian endive helps keep your digestive system up and running. Its high fiber content aids in cleansing the body of free radicals and balances the metabolism. B.E. packs in vitamin A, as well as several B vitamins with aliases, including B1 (thiamine), B3 (niacin) and B9 (folic acid). (Remember: Along with regulating digestion, vitamin A promotes eye and skin health, and B vitamins can be good for brain health and may lower the risk of developing dementia or Alzheimer’s disease.) As for minerals, Belgian endive offers magnesium, calcium and iron. The low-calorie plant has also been linked to a reduction in gallstones, incidents of stroke and urinary tract infections. BUY/STORE/SERVE Belgian endive is available year-round in grocery stores, and depending on storage can last up to two weeks. Look for a plant with crisp, tight, tender white leaves with yellow or red leaf edges and a solid head. While wrapping them in a damp paper towel inside a plastic bag in the refrigerator can keep them fresh for three to five days, these feisty superstars can last much longer when kept out of light in the safety of your refrigerator crisper drawer. Peel away any outer leaves that have become brown or soft when pressed to reveal the inner leaves ready for use. For serving Belgian endive there are numerous possibilities. You can julienne the plant into thin strips for your salad. You can roast it, sautée it, braise it, stir-fry it or pop it on the grill with an olive-oil paint job. Make a soup from it, or simply drop a leaf or two into your favorite soup. Bon appétit! (Now that you can pronounce it for sure.) —Ariana Puzzo

HABITAT FOR HUMANITY OF BERGEN COUNTY Staff from Health and Wellness Partners in Upper Saddle River gave a helping hand to Habitat for Humanity of Bergen County as the nonprofit continues work on its latest 1 in Westwood.
