C.D. Peacock has been a proud provider of jewelry and watches in and around the Windy City almost from the city’s birth. A jewelry establishment was something new for infant Chicago, population 4,000, when the House of Peacock opened at what was then 155 Lake Street on February 9, 1837. (Abraham Lincoln was a state legislator; Mark Twain was still in diapers.) But jewelry and watch repair wasn’t new to the store’s proprietor, Englishman Elijah Peacock, whose family had been in that business for three generations. The town took hold—for a while Chicago was the world’s fastestgrowing city—and so did the jewelry business. Peacock “sold jewelry to the women, repaired watches for the men and adjusted chronometers of Lake Michigan boat captains,” as the Chicago Tribune wrote. The Great Chicago Fire of October 1871 destroyed the building, but happily the valuable merchandise had been kept in a fireproof vault. In 1889, Elijah turned the business over to his son, Charles Daniel Peacock, whose initials provide its lasting moniker. Though the Peacocks sold the business in 1969, C.D. Peacock has maintained their traditions of quality and service. Customers have included Mary Todd Lincoln, Marshall Field and Mick Jagger (a rarely heard trio of Ms!); surely more bold-faced names will yet visit a Chicagoland institution that is something of a jewel itself.

As Chicago’s oldest existing retailer, C.D. Peacock has witnessed many changes in the city since since Elijah Peacock founded it in 1837 (it was then known as House of Peacock). Peacock survive through the Great Chicago Fire and Great Depression, but it also pushed it to thrive throughout the decades. If celebrity choices really influence people’s purchasing decisions, these four beauties may be trendsetters.

JENNIFER LAWRENCE THE SHAPE: Emerald-cut stones have an elongated rectangular shape and give off an elegant, sophisticated vibe. They’re typically in less demand than other stone styles, making emerald cuts generally more affordable—as well as a lot more distinctive. THE GIRL: Hollywood darling Jennifer Lawrence certainly marches to her own drummer (remember when JLaw fell on stage while accepting her Academy Award and totally owned it?), so a runof-the-mill diamond simply wouldn’t do. Plus, the elegant emerald-cut pairs well with the timeless Dior gowns Lawrence wears on the red carpet—she’s been the face of the luxury brand for years now— and the ring perfectly accessorized the designer’s 1920s-esque wedding dress, which she wore to her October 2019 nuptials. THE RING: The actress’s husband, Cooke Maroney, is an art dealer, so it’s no wonder he proposed with such an eye-catching and one-of-a-kind stunner. Experts guess the ring is a four- to five-carat center stone in a white gold or platinum solitaire setting.

THE SHAPE: Much like a pillow (or, well, a cushion), cushion-cut diamonds are squareshaped with curves around the edges. The style is growing in popularity for 2022 brides who want a cut that is soft and romantic, yet still pretty and traditional. THE GIRL: Hilary Duff of Younger and Lizzie McGuire fame has a classic, covergirl style, so a cushion-cut stone fits right in with her aesthetic. It also complemented the bespoke Jenny Packham she wore down the aisle in December 2019. THE RING: Singer/producer Matthew Koma proposed in May 2019 to his longtime girlfriend (and mother of their two daughters, Banks and Mae) with a cushion-cut ring with a white gold or platinum split shank solitaire setting. The ring is estimated to be between three and four carats in weight.

THE SHAPE: Pear-cut rings are for women who are bold and confident and like to be a little bit different. Their “teardrop” shape—they’re technically supposed to be worn with the pointed part facing up toward the wearer’s nails—makes them symbolize tears of joy, so they’re well suited for the sentimental bride too. Pear-cuts are also costeffective, as they look larger than a round stone and cost less per carat. THE GIRL: All three of Scarlett Johansson’s engagement rings have been interesting to look at (she was previously married to both Ryan Reynolds and her daughter’s father, Romain Dauriac), but she saved the best for last with her stunner from Saturday Night Live star Colin Jost. This on-screen superhero, who plays Black Widow in the Marvel movies, certainly needed a powerful, statement-making ring to match her and her characters’ kick-ass personalities. THE RING: This piece of jewelry is as stunning as it is unique; its focal point is an 11-carat pear champagne solitaire diamond set on a dark brown band made of ceramic. The ring is Art Deco-inspired, and the diamond itself is a beautiful and rare find.

THE SHAPE: Flattering on the finger and known for showing off its carat weight because the elongated shape makes it look larger than it is, an oval-shaped diamond is one of the most popular engagement ring styles right now (if not the most popular). Trends aside, these stones are appreciated by brides because they’re gorgeous and easy to wear. THE GIRL: Sarah Hyland, aka Haley Dunphy on Modern Family, knew exactly what she wanted in an engagement ring—in fact, she chose it and told fiancé Wells Adams of The Bachelorette fame what ring style she liked before he popped the question in July 2019. Smoked Salmon Galette with Caviar Yields: 10–12 servings n 1 lb. cream cheese n ¼ cup Hellmann’s mayonnaise or ¼ cup sour cream n 2 large shallots, finely chopped n 3 Tbs. plus 1½ tsp. lemon juice, freshly squeezed n ¼ cup fresh dill, chopped n ½ tsp. salt n ½ tsp. ground black pepper n 2½ lbs. smoked salmon, thinly sliced n black pepper, freshly cracked n as much excellent-quality caviar as you like n zest of 2 lemons, grated then finely chopped, for garnish

Line an 8½-inch springform pan with plastic wrap. In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese, mayonnaise (or sour cream if using), shallots, 3 Tbs. of lemon juice, dill, salt and ground black pepper and beat them together for a couple of minutes until they are thoroughly combined, smooth and spreadable. Assemble a layer of salmon slices at the bottom of the prepared springform pan, making sure the entire bottom is covered, and placing the pieces so they are facing in the same direction for a finished product that looks uniform and gorgeous. Dot the salmon layer with ¼ tsp. of the remaining lemon juice and some freshly cracked black pepper, and then spread 5 Tbs. of the cream cheese mixture evenly over the layer. Repeat this step until you have six layers, and then press down on the last layer to fully compress the galette. Reserve any excess filling to finish the galette. The excess can be kept in the refrigerator and brought to room temperature before finishing. Let the galette chill, covered in the refrigerator for at least 2 hours or up to 3 days, before serving. To serve, invert the galette onto a serving platter, cover it with the remaining cream cheese mixture, then garnish it with the caviar, lemon zest and more cracked black pepper. Slice the galette into 10–12 wedges and serve it cold.

Louise’s Seafood Pot Pie Yields: 10–12 servings n 12 Tbs. (1½ sticks) butter, plus more for greasing the pan n 3 lbs. mixed shellfish, such as finely diced shrimp, lobster, scallops, crabmeat or oysters n 2¼ tsp. salt, divided n 1¼ plus 1/8 tsp. ground black pepper, divided n 1½ cups dry vermouth n 1 lb. medium button mushrooms, cleaned and sliced n 2 large shallots, finely diced n 1½ cups milk n 1½ cups plus 2 Tbs. heavy cream n ½ cup white wine n 1 tsp. dry mustard n 4 Tbs. tomato paste n 2 tsp. dried tarragon n 4 Tbs. all-purpose flour n 1 lb. Gruyère cheese, grated n 1 (11-x-16-inch) sheet all-butter puff pastry n 1 egg

Preheat the oven to 375°F. Butter a 9-x-13-inch baking dish. Melt 8 Tbs. of the butter in a large, heavy stockpot over medium-high heat. When the foaming has subsided, add the seafood, ¾ tsp. of the salt and ½ tsp. of the black pepper and sauté the seafood approximately 4 to 5 minutes, stirring constantly with a rubber spatula until it is only partially cooked through. Add the vermouth and continue to sauté for another 3 minutes or so until the seafood is just cooked through but still very rare. Drain the seafood in a colander over a bowl, set aside the seafood and return the liquid back to the stockpot. Add the mushrooms and shallots, ¼ tsp. of the salt and 1/8 tsp. of the black pepper and let the mushrooms and shallots steep in the liquid approximately 5–7 minutes, until they are just cooked through. Then drain them into a colander over a bowl, set aside the vegetables and return the liquid to the stockpot. Add the milk, 1½ cups of the heavy cream, the white wine, dry mustard, tomato paste, tarragon and the remaining 1¼ tsp. salt and ¾ tsp. black pepper, and whisk the mixture vigorously to break up the tomato paste. Bring the mixture to a boil, then reduce the heat to low and allow the sauce to simmer. In a separate heavy skillet over medium-high heat, melt the remaining 4 Tbs. butter and the flour together to make a roux, and then add it to the milk-cream mixture, again whisking vigorously to break up any lumps, then bring it to a boil and remove from the heat. Whisk in the cheese a little at a time to make a smooth sauce. Add the cooked seafood and mushrooms to the prepared baking dish, pour the sauce over the seafood and mushrooms, and place the puff pastry on top, trimming the edges to make it neat. (The pot pie may be assembled up to this point, covered and refrigerated for up to 3 days before bringing it to room temperature again before finishing the cooking.) In a small bowl, beat the egg with the remaining 2 Tbs. heavy cream. Brush the puff pastry with the egg wash, place the baking dish on a sheet pan as there will be overflow from the cheese and then place the pot pie in the oven. Bake it for 25–30 minutes, until the pastry is golden brown and cooked through. Let the pot pie rest for at least 10 minutes before serving.

LOUIS XIII

Beloved by iconic singer Rihanna, Louis XIII is one of the most exceptional cognacs available. One hundred percent of the wines distilled for this blend are from grapes grown in the Grande Champagne cru, the premier subsection of six in the region whose harvests can be tapped for the beverage. Each bottle of Louis XIII contains 1,200 blend components, meticulously sifted through and chosen. This is after only a “small” portion of eaux-de-vie are selected for the elusive path. The kicker? The cognac’s age makes a long-inthe-tooth 10-year XO minimum look like the blink of an eye. The minimum age for a LXIII blend component is 40 years, and some threads surpass the century-old mark. The impressive age inspires a wide array of tasting notes, from the tropical to the earthy. The extended process has also lent the team a long-term vision that allows for careful consideration of processes, and an examination of our engagement with the passage of time. A collaborative effort with rapper and cognac connoisseur Pharrell Williams titled “100 Years” is both an homage to the lengthy creation process of the esteemed cognac and a plea to those who’d wish to pass on the tradition: a song, locked away, that will automatically release in 2117—if climate change and sea-level rise permit. Recommended pairing: Barring dramatic medical advances, most of us won’t be able to hear what could be Mr. Williams’ magnum opus. Instead, spin a copy of Random Access Memories from another of France’s finest exports, the electronic music duo Daft Punk. Their retro-futuristic sounds will lay the perfect backdrop for the waves of flavor that a glass of Louis XIII offers.

COURVOISIER XO

A focus on techniques from the house of Courvoisier leads to an incredibly smooth product. Working closely with many growers across four crus, producers take pride every step of the way. That is reflected not just in the distillate, but also in the oak that houses it. For both grape and wood, the process begins from the ground up. Two-hundredyear-old oak is selected by in-house coopers, and staves are dried for three years before the barrels are complete. A year’s worth of grapes undergo primary fermentation before they are ready for cognac’s signature double distillation. Sipping straight will be an immersive experience filled with big floral notes alongside caramel and dried citrus—think snacking on candied orange in a lush meadow. If you choose to mix it up a bit, Courvoisier recommends a classic sidecar: 5 parts cognac, 2 parts triple sec, 2 parts lemon juice, shaken well and strained. Recommended pairing: Take a listen to milea-minute wordsmith Busta Rhymes’ early-aughts party hit, “Pass the Courvoisier Part II.” Pharrell Williams’ hook and his production as part of The Neptunes are just as smooth as the indelible beverage.

HENNESSY MARC NEWSON

Bold yet smooth, rich yet filled with subtleties, Hennessy has made a name as a luxury beverage of choice among creatives across different media. Arguably the first to use the XO distinction, Henny, as it’s lovingly referred to, is an excellent sipper and all-around cognac. Notably using only the Ugni Blanc varietal, each bottle of Hennessy XO comprises 100 blending components. This depth of composition has led to a specific set of seven flavor notes that describe the journey through a pour of the elixir: Sweet Notes, Rising Heat, Spicy Edge, Flowing Flame, Chocolate Lull, Wood Crunches and Infinite Echo. These notes were deemed so evocative that acclaimed director Ridley Scott was commissioned to compose a sci-fi tribute exploring each of the “Seven Worlds.” The special Marc Newson edition of the XO is another shining example of Hennessy’s collaborative spirit, showing a commitment to an aesthetic that prizes presentation alongside flavor. The designer’s reworking of the distinctive decanter utilizes horizontal striations to visually highlight both glass and liquid, and creates a uniquely textured object that reflects cognac’s many facets. Recommended pairing: Savor a glass or two while watching Scott’s sci-fi watershed Blade Runner. Get your hands on 2007’s The Final Cut to appreciate the director’s true vision for the film as you do the same with the work of Hennessy’s blenders.

HARDY XO RARE

In a landscape of limited edition blends, many of which focus on the design of the bottle itself, Hardy has to be hailed not just for excellent cognac but also for refined aesthetics. Founded in the region by an English ex-pat, the house takes influence not just from the spirit’s production, but from other sources of specifically French creativity. Claiming a haute couture philosophy and decidedly feminine influences, Hardy produces cognac filtered through the lens of an atelier: Scents are cited as heavy stylistic influences, with tasting notes leaning toward the floral, and carafe designs explicitly influenced by bottles of fine perfume. Early collaborations with the Cristallerie Daum studio have resulted in beautiful collectibles whose contents are as intoxicating as their containers. Recent works with the Lalique brand highlight the seasons, paying homage to the passage of time so crucial to cognac and the springlike bouquet it can offer. Recommended pairing: Damozels & Deities is the most recent volume on 19thcentury stained glass from researcher William Waters and photographer Alastair CarewCox. Take in the beauty that glass working can achieve while savoring the bouquet of Hardy XO.

RÉMY MARTIN XO

This is a classic take on the spirit and one that has showed immense staying power. The blend, with up to 400 components, is referred to as a Cognac Fine Champagne—its grapes sourced exclusively from vineyards in two of the region’s crus, Grande Champagne (50 percent+) and Petite Champagne. The particular soil’s terroir encourages the level of ripeness in the grapes that makes the wine well suited for the 24-hour double distillation process. The eaux-de-vie that are produced from the distillation processes each year can number in the thousands, but many will not meet the standards required for them to be set down for a transformation in oak. Years later, we are finally able to taste the product of this patience, hard work and informed selection. A drop of water can open up the cognac and enhance some of the more subtle fruity and spicy aromatics, just as it does with a fine whisky. Fatty cheeses and bold dark chocolates are among the great foods that pair well with cognac, but for its own XO, Rémy Martin recommends figs—a sweet treat that will bring out dried fruit flavors in the liquid that only time can develop. For Hine’s Antique XO, it means a blend of 40 distinct eauxde-vies, crafted exclusively from Grande Champagne grapes, and an average component age of 20 years. The producers cite Cyrano de Bergerac and acclaimed Bach pianist Glenn Gould as inspirations/accompaniments for the blend. As with other producers, there is a crossover of disciplines and lifestyles that inform the making of the cognac—a balance between savoir faire and joie de vivre, a commitment to technique, and of course, a bit of finesse. This blend has a wonderful spice character, lending a particular boldness that evokes Cyrano’s noted panache. Some five years before Elon Musk became a household name in the mainstream automotive world, the manufacturer quietly released its debut consumer vehicle—the all-electric 2008 Tesla Roadster. After its low-production run of 25,000 units was sold, the company ditched the two-seater and redirected its efforts to perfect the now-iconic Model S. But the Roadster is back, and the 2023 iteration is rumored (by Musk himself) to have as much pep and spark as the fastest exotics in the world.

TESLA 2023 ROADSTER Released as a concept car in 2017, the second generation Tesla Roadster officially hits the market as a ’23 model—and the wait was worth it. Engineers have refined it into one of the best performance cars in the world—according to Tesla boss Elon Musk. The exceptionally curvy and aerodynamic Roadster is said to finish the 0-to-60 sprint in 1.9 seconds, equaling the maker’s Model S, and top out at 250+ mph, faster than any production Pagani, McLaren or Lamborghini. But there’s more to the Roadster than just speed. Like every Tesla model, the Roadster is fully electric and features a 200-kWh battery that is believed to have a range of 620 miles under normal driving conditions. (Though tempting,
