fine art gallery • interior design services for the art collector • design trade welcome

Established in 1996, the James Yarosh Associates Fine Art Gallery in Holmdel was founded upon and remains loyal to its vision: to represent fine art for art’s sake and to curate gallery collections and thoughtfully present art with an artist’s eye and understanding. Yarosh, an artist and well-published interior designer who honed his eye for selecting and representing artists by managing galleries in Manhattan and New Jersey, offers a full-scale gallery and design center where clients can associate with other like-minded individuals to celebrate art and the talents that create it. As a designer, Yarosh travels the world, studying how the greatest museums display their art, and visits artist’s homes to understand how the artists themselves live with their art. This study on both grand and small scale, helps inform Yarosh’s work with his clients. His unique approach has led to his designs being featured in regional and national magazines. In addition, his experience in large-scale residential design projects of over 20,000 square feet earned him a guest appearance on HGTV. As a gallery owner, Yarosh has received national critical acclaim for presenting Russian fine art collections and recognizing significant art movements in their early stages. Drawing upon both international and regional resources, Yarosh represents a variety of artistic voices of our times by showcasing the works of both new and established, museum-recognized, artists of merit in a space designed to replicate the intimacy of an artist’s home. Gallery catalog available by request.

Clothes make the man, of course, but a hairstyle speaks volumes about a guy too. Like your sartorial choices, it tells the world what kind of person you are: rebellious, straight-laced, carefree, intense, artistic, conservative. What does yours say? And what famous figures have sported the same style? The Barber Book (Phaidon, $24.95) delves into the roots of the most popular men’s hairstyles of the 20th century, exploring the origins and historical context of cuts from the early 1940s through the 1960s. Each of the 19 chapters highlights an iconic cut—from Humphrey Bogart’s “Slick Back” to Elvis Presley’s “Rockabilly” to David Bowie’s “Undercut.” Interestingly, many of the retro styles spotlighted in the book have stood the test of time. David Beckham recently rocked the undercut, for instance, while Brad Pitt has famously sported the slicked-back style. And no one has pulled off the “Caesar” haircut better than George Clooney—except for, perhaps, Marlon Brando, who portrayed the Roman ruler. Filled with fun facts (Brylcreem was standard issue in every British soldier’s kit bag during World War II), entertaining anecdotes (men wore hairnets to bed to keep their slickedback locks in place) and both vintage and contemporary photos, this quirky little book is a keeper.

The creators of the Juicy Couture clothing line are back for a second act, this time focusing on relaxed, Southern California– style comfort. Pam & Gela, the new vision of Juicy founders Pamela Skaist-Levy and Gela Nash-Taylor, offers loose tops with lace accents, distressed sweatshirts and tees with bold statements like “What doesn’t kill you makes you blonder.” The pair also co-wrote a book, The Glitter Plan, describing their rags-to-riches rise that, according to Women’s World Daily, will be turned into an hour-long special on the Freeform channel (formerly ABC Family). Visit the company blog, pamandgelablog.com, for fashion tips, including how to cut up a tee for that vintage look.

If you’re a certain type of guy, they were the sneakers you wore as a kid. You never wanted to throw ’em out. Well, Alessandro Gallo and Francesca Rinaldo, the team behind Golden Goose Deluxe Brand, have created “distressed” footwear that will remind you of that classic pair and all the adventures they enjoyed. They’re refined enough to be worn at any age, but fun enough to make you feel 10 again. Evidently GGDB has touched a nerve—its shoes are becoming collectibles. Don’t be a sneaker sneak; ask for them forthrightly at Garmany. And keep an eye out for the women’s collection, arriving in time for the holidays.

If breakfast is the most important meal of the day, isn’t that all the more reason to make sure it’s as decadent as possible? Fortunately, options abound in and around Red Bank. Here are our top five spots: • Over Easy Kitchen, Marlboro. Our favorites here include the Lemon Ricotta Pancakes served with a wild berry compote and mascarpone whipped cream and, for a lighter choice, the “Fancy” Toast: multigrain bread topped with avocado and an egg. 732.526.4422. • The Buttered Biscuit Café, Bradley Beach. Biscuits and gravy, grilled crumb cake and scrumptious omelets stuffed with all the fixin’s. Need we say more? 732.807.4069. • Bacon Beach Grille, Long Branch. Traditional offerings plus an added hint of spice. Try the Huevos Rancheros or the Spinach and Bacon Pipeline, wrapped in a tortilla and served with salsa. Cash only. 732.229.5555. • Meemom’s Kitchen, Middletown and Wall. A whole menu of French toast offers something for everyone. But if you’re stuck, go for our regulars: Cap’n Crunch, Bananas Foster or the French Cakes. 732.359.8544 (Wall) and 732.856.9499 (Middletown). • Molly Pitcher Inn, Red Bank. You really can have it all with the breakfast buffet at this elegant local hotel. We recommend the light, fluffy waffles. 732.747.2500.

Whether you’re scaling a Himalayan mountain or just trying to make it through another Northeast winter, you need a proven parka. So remember Moncler and Canada Goose. Moncler helped equip a team of Italian climbers that attempted K2 in 1954—and another that mastered that summit 60 years later. Canada Goose outfitted the expedition of Laurie Skreslet, the first Canadian to climb Mount Everest. And compared with lifethreatening cold at 29,000 feet, a New Jersey wind is a walk in the parka.

the garmany guide Slow wins the race

Who says the true craft of tailoring is dying? Not the folks at Kiton. Consider: A machine can produce up to 400 pockets per day; at Kiton it takes a tailor an hour to construct just one, which is then sewn and attached by hand. Every Kiton jacket is constructed with 33,000 hand stitches by 25 different hands. It takes the company’s tailors up to 25 hours to create a suit worthy of the Kiton name. And all that hands-on work reflects superior quality. For example, Kiton tailors meticulously create flexible seams, so your jacket is more comfortable and moves with you.

Get your kicks

No fall ensemble is complete without the perfect shoes. And this season’s hottest kicks just may be those of luxury Italian footwear brand Aquazzura. Its founder and creative director, Edgardo Osorio, opened the line’s first U.S. shop on New York’s Madison Avenue this spring. To dress up skinny jeans, slip on a sexy number from Aquazzura’s selection of fringed suede booties. Or, for a comfy choice, check out the “Christy” style of strappy leather flats that lace up around the ankle. Nude, jeweled, snakeskin and glitter are among the options in this subtly chic style.

Dean Holly, brothers Scott and Tom Bonomo and Russell Wilson are the partners behind Good Man Brand. The first three bring nearly 70 years of fashion experience to the enterprise. Russell has been busy doing other things—like being quarterback of the Seattle Seahawks. But this isn’t just another clothing line pushed by a jock. “We want to inspire people everywhere to do good,” the company says. For each item you purchase, it’ll donate $3 to the Why Not You Foundation, which tackles issues like childhood cancer, world hunger and domestic violence, as well as aids inner-city education. Oh, and the clothes are pretty fine too. Think Italian leather, Japanese cotton and skilled artisans shaping shirt collars and high-tops by hand. Check out Good Man Brand at Garmany.

Can a woman’s parka based on a vintage military jacket look stylish and feminine? Fashion designer Alessia Giacobino faced that question boldly when she started Mr & Mrs Italy in 2009, and today the line’s garments answer with a clear affirmative. Featuring soft fur and splashes of color, these distinctive parkas may have you secretly longing for the next chilly day. (Whatever the weather, try one on today at Garmany!)

26 GAR.fw16.guide.indd 26

Ask Mr. Etiquette

Johnell Garmany explains how to sail through life without giving offense. A lot of invitations these days say “cocktail attire.” What the heck does that mean? —Mystified in Middletown Your host is saying, “Get out of the business suit, lighten up and let’s have some fun.” That could mean no tie. It’s your option. A sport coat, however, is a must—paired with an exciting shirt and a great pocket square. Depending on the occasion, the party location and what your spouse is wearing, jeans can be appropriate. Trousers will certainly give you a dressier look. Naturally, accessories are key—shoes should be less serious, the belt should work with the shoes. Last but not least, make a splash with your socks. Colorful socks show a little more sartorial character when you’re kicking back with a cocktail.

That touch of Britaly

Men’s shoes by Doucal are impeccably handcrafted in Italy. That explains much of their appeal, as footwear from Europe’s “boot” has no peer for comfort. But company founder Mario Giannini actually learned his craft in England, another famous shoemaking land. And no one beats the English for elegant-looking shoes. The happy result? Doucal combines two traditions: British looks and Italian comfort step out together like left and right.

Evidence of excellence For 57 years, young men have received an exemplary education at the Christian Brothers Academy in Lincroft, and the school excels in sports too. This year its varsity sailing team won a second consecutive state championship, while the outdoor track-and-field team also topped the state. Other recent claims to fame: See the Light: Six-foot-six hurler Pat Light, a 2009 graduate, was drafted by the Boston Red Sox. Feel the Byrne: School President Frank Byrne was named “Man of the Year” by the alumni association at his alma mater, the University of Notre Dame. Jazzed: The school’s jazz ensemble and men’s choir were honored at the Heritage Music Festival in Washington, D.C. Learn more about the school at cbalincroftnj.org.

When film and fashion collide

28

We know to take fashion cues from Hollywood’s best, from Clark Gable’s stunning looks in Gone With the Wind to the costumes elegantly designed by Giorgio Armani for The Untouchables. But what about the influence of The Bride of Frankenstein or the sinister purple villain from Batman? Fashion historian Amber Butchart explores more than 100 years of silver screen couture in The Fashion of Film (Mitchell Beazley, $39.99), a collection of photographs and stories showcasing the inspiration that several iconic movies had on the sartorial world. See how Wes Anderson’s films are mirrored in the collections of Miuccia Prada and what Audrey Hepburn donned to influence Hubert de Givenchy. Pick a genre—crime, musical, historical epic, horror and sci-fi—Butchart, a former head buyer and trend analyst for Beyond Retro, shows the reader connections between cinema and the catwalk. Whether you’re a film buff, a fashionista or simply someone who appreciates good taste in clothing, this collection of photos and words is a must-have.

The most discerning men, that’s who. The trouser line PT01’s name stands for Pantaloni Torino (Turin Pants), as the company’s headquarters is in fashion-conscious Turin. Its products are known as cult items, with “style, character and personality.” Clearly more than just threads, PT01 pants have hit a chord with a lot of men: You can find PT01 in Italy’s best shops and in more than 400 stores in 39 countries—including, of course, one in Red Bank.

You’re invited A cozy dinner hosted by an old friend? Via 45 in Red Bank feels like that, but better, because few old friends can cook like this. Co-owner Claudette Herring, who grew up in Italy, rustles up rustic Italian dishes alongside her friend and business partner, former dancer Lauren Phillips. Handwritten menus, lined bookshelves and country décor make this quaint BYOB feel especially intimate. (Try the pork chop and the ricotta cheesecake. And if you crave something you don’t see on the menu, just ask. If the ingredients are available, the cook may take special requests.) 45 Broad St., Red Bank, 732.450.9945; via45.com

Perfection’s in the bag

Aren’t women on a perpetual quest for perfection, both in handbags and in men? Well, the fashion line Milly has good news. Its founder, Michelle Smith, presents designs that are “bold and feminine with an edge.” And when Beyoncé and Solange, Amy Schumer and Jennifer Lopez are fans of your handbags, you’re onto something. We think that something is an inspired blend of Parisian craftsmanship with American sportswear feel. (Now, as for finding that flawless fella…)

the garmany guide Samuelsohn’s secret to great suits

When it comes to suits, a key to quality construction is a canvas layer sewn between the wool and the lining. It’s a step on which luxury suit makers like Samuelsohn refuse to compromise, despite that it’s easier to fuse a suit’s wool directly to the lining with adhesive. This hidden canvas layer is what makes a Samuelsohn suit drape for years. Of course, Samuelsohn menswear is about more than quality construction. The company’s buyers scour the globe to find the best fabrics, from the specialty tweeds of Scotland to the luxurious silks of Spain’s finest mills. It’s no surprise the company will only sell its designs through high-end retailers like Garmany, who know measuring is one of the most important steps of the suit-buying process. After all, a luxury suit only feels like luxury if it fits perfectly.

Let it grow Fellows, put away those razors for a good cause. This year Garmany celebrates its second year of participation in “No-Shave November,” which will help raise funds for New York’s Memorial Sloan Kettering Cancer Center. Facial hair will proliferate through the month, and donations will be collected at the store and via our website, Garmany.com..The annual “shave-off” event will be held in the store on November 26.

Mull Over This

30

One way to celebrate the changing season is with a cup of warmed spiced wine. Sure, you can buy pre-packaged mulling spices anywhere, but it’s just as easy (and, we think, a lot tastier) to make it at home. First, pick up a bottle of fruity wine (Tip: Visit Gallo’s Wine Cellar in Matawan, where the expert staff can recommend the perfect selection.) You’ll also need: apple cider (4 cups per bottle of wine), 4 whole cloves, 3 star anise, 1 cinnamon stick, 1/4 cup honey and an orange or lemon. Other optional

Survive a long flight

Flying from New York to Boston? No sweat. But sitting in a cramped airline seat for hours on end as you hurtle across the globe? That’s a journey you might lose sleep over. Make surviving a long flight the least of your travel concerns with these tips: n Book the right seat. Size matters—as in your height and bladder. A window seat will give you incredible views and a place to rest your head, but you’ll have to climb over others each time nature calls. Score a bit more legroom and an easier path to the restroom with an aisle seat, but that too comes at a cost. Expect sleep interruptions from passengers in your row and those roaming the aisle. n Dress for comfort. Sure, you want to look polished, but park your tailored trousers and choose something with a more relaxed fit. Because feet tend to swell, wear slip-ons or shoes with loose laces and material that easily expands. Stash extra socks or a light jacket in your carry-on in case the temperature takes a tumble. n Bring your own entertainment. If the in-flight flick is a bust, pass the time with a novel or your mobile devices. Make sure smartphones and tablets are fully charged, as decent Wi-Fi and power outlets aren’t standard on all planes. But remember to pull away from the electronics to hydrate. And be sure to stand up and stretch; you want to keep your blood flowing. n Pack essentials. We recommend a neck pillow, headphones, lip balm, toothbrush, snacks and gum. And moisturizer will help you avoid feeling like a reptile.

additions include a bay leaf, 1 tablespoon grated nutmeg, 1 tablespoon cardamom and a bit of Cointreau or spiced rum. In a large saucepan, combine the wine, cider, honey, spices (whatever assortment you choose) and a squeeze of the citrus, first reserving several slices of the fruit for serving. Allow it to simmer, but not boil, for about a half hour. Toward the end of the half hour, add a few splashes of the liquor if you choose to use it. Strain the wine and serve with a slice of orange or lemon.

lonely together Four of today’s best singer-songwriters draw you into their finely limned realms of heartache and exaltation. By Mark Dowden

Courtney Barnett Australian singer-songwriter and (left-handed) guitarist Courtney Barnett meandered through musical styles before making it on her own: She played second guitar in a garage grunge band in Melbourne; she next played slide, mostly, for a psych-country band, and then graduated to lead guitar on her girlfriend Jen Cloher’s studio album in 2013. That was the year Barnett herself achieved critical notice with her own double EP. Her witty lyrics, deadpan delivery and bitchin’ accent combine in a distinctive, highly likeable act. The album: Sometimes I Sit and Think, and Sometimes I Just Sit Go-to song: “Dead Fox”

Deeper dives: “Avant Gardener” and “Pickles From the Jar”

Ben bridwell

After launching Band of Horses in Seattle, front man Ben Bridwell returned to his native Charleston, S.C., where he lives with his wife and four daughters. “I feel like the best stuff that connects people to Band of Horses are these songs that have these discordant, quirky elements and weird-ass tunings that make no sense to anybody else,” he has said. Affable and self-effacing (he claims he’s a lousy musician), Bridwell writes catchy, often upbeat tunes, many of which are sublimely tinged by themes of loneliness and alienation. The album: Why Are You OK Go-to song: “Casual Party” Deeper dives: “The Funeral,” the band’s best-known song, and “The General Specific”

Sturgill Simpson Kentucky native Sturgill Simpson doesn’t fit neatly into the country music mold. He’s often compared to Waylon Jennings (although in truth he’s more like Merle Haggard), but that comparison misses his strangeness and originality. Indiewire got it right when it described Simpson’s sound as “a mesmerizing and sometimes bewildering mix of traditional country sounds, contemporary philosophy, and psychedelic recording-studio wizardry.” His first major-label release, out this year, positively soars. The album: A Sailor’s Guide to Earth Go-to song: “Brace for Impact (Live a Little)” on which he’s helped by The Dap-Kings Deeper dive: His cover of Nirvana’s “In Bloom”

Laura Mvula Birmingham, England has turned out many fine musical acts—Electric Light Orchestra, Traffic, The Moody Blues and UB40, to name a few—but have you heard Laura Mvula? You should, and you will. She got her start in an a cappella group, a Gospel choir and church choirs. As a substitute teacher, she began writing songs on her laptop. She sent out a few demos, and lightning struck. Her 2013 debut album was followed this summer by a new LP that’s soulful and exultant. The album: The Dreaming Room Go-to song: “Phenomenal Woman,” funky and danceable Deeper dives: The ethereal “Who I Am” and “Sing to the Moon”

Elements

of men’s style

...in which Johnell Garmany solves your sartorial dilemmas. I’m sending two kids off to college. I still want to dress well, but can’t spend as much on suits as I have in the past. Help! Are there any affordable suit options for me? Let’s face it, there are times when $3,000 for a new suit can be too steep of a price. The good news: We have a few options that feel great at a fraction of the cost of our full-priced suits. These suits, some of which are fully canvassed, come in incredible styles and great fabrics—and they range from $895 to $1,495. We not only have our own brand of pricesensitive suits, but we also carry brands like Samuelsohn that have garments for the price-conscious. So if you’re looking for a starter suit or aren’t into spending a ton at the moment, these are viable alternatives.

| garmany

Which colors are trending this season? You want to go green for the environment, but you also want to go green in fashion this fall. We saw green a bit last year, but it’s the big color this season—especially olive green.

Green jeans are selling fast, and a greenblue combination for a suit or sportcoat is absolutely stunning. I want to look sharp on the weekends. Any suggestions? Try a pair of five-pocket pants—they’re a great alternative to dress pants, and they’re good if you’re out shopping or just relaxing. These pants have trim cuts and stretch material so they feel as comfortable as sweatpants. For a Sunday afternoon look, pair those pants with a sportcoat and hoodie—Rag & Bone has some amazing options. I want my next pair of shoes to be a good investment. What would you recommend? I can’t stress enough the value of monk straps. You can wear them with a suit, sportcoat or jeans. They’re like the utility player on a baseball team—they’re an excellent option in just about any situation and setting. It’s also time to start thinking about boots. Common Projects and Ferragamo make terrific

suede chukkas that are stylish and a great investment, especially in the fall. Speaking about weather, how can men look cool in colder temperatures? A big, bulky jacket isn’t the only garment that will keep you warm. We carry versatile hybrid jackets by Gimo’s and Corneliani that have a sophisticated blazer look and protect you from the elements. Of course, nothing is cooler than a moto-inspired jacket. One of my favorite pieces is the Belstaff moto jacket. Now that I have the perfectly fitting suit and shoes, what do I need to finish off the look? Two things: a vest and pocket square. Many guys are adding a piece to their suit, either throwing on an in-between layer or wearing a vest over their jacket. Try a Brunello Cucinelli vest under the suit for a classic look, while a quilted vest by Moncler over the suit will add pop and warmth. And don’t forget the pocket square! Whether you opt for wool, cotton, silk or linen, the pocket square adds flair and personality and shows that a man cares, even about the smallest details.

boom times

Boomer Esiason, the affable broadcast host and former star quarterback, is also a Garmany customer. Here he discusses his passion for funding cystic fibrosis research, the importance of image and, of course, the NFL. After your son Gunnar was diagnosed with cystic fibrosis, you established the Boomer Esiason Foundation. Tell us about it. Gunnar was diagnosed in 1993, and less than a year later, we had the foundation up and running. As a dad with an NFL career, I’ve been fortunate to be able to leverage my platform to attract capital. In 22 years, we’ve raised almost $130 million in the fight against CF. What’s the mission of the foundation? The main mission is to fund research to find a cure. We’ve put about $50 million into venture philanthropy, incentivizing small biotech firms to focus on therapeutic breakthroughs. Because the patient population isn’t huge—CF affects about 30,000 people nationwide—the venture approach was really the way to go. Over the years the fund that we’re a part of grew to about $200 million, and it’s spawned at least six new compounds that have gone from test tube to

patient. Gunnar and people like him are benefiting. In the past three years, Vertex, a pharma company in Boston, has come forward with two drugs that are game-changing. They address the big problem with CF, which is filtration of the lungs; the lungs cannot clear airborne bacteria properly. The national Cystic Fibrosis Foundation has been able to sell the royalties from those drugs for several billion dollars, and those dollars have been plowed back into research. That’s something we’re very proud of. So drug development is really the focus of your foundation? It’s not our only focus. The foundation is now also investing in hospital care. When we moved to New York in 1994 and Gunnar was newly diagnosed with CF, there was no adult CF treatment center in the New York area, which seemed crazy. Gunnar was only 3 or 4 at the time, but as a former quarterback, I like to think of myself as always prepared and Fall/Winter 2016

looking into the future. So we decided to invest in creating the Gunnar Esiason Adult Cystic Fibrosis and Lung Program at Columbia University Medical Center. It was the first of its kind, and it’s the model for all new adult centers, reflecting the fact that people are living longer with the disease now. Tell me about your relationship with Garmany of Red Bank. Garmany is one of the finest stores of its kind, a privately owned, stand-alone store that offers the very best in menswear. We got together because I have a Showtime program, Inside the NFL. When you’re on TV, it’s important to look the part and dress well. After receiving my first suit from Garmany, I can tell you, I’m going to be the best-dressed guy on Showtime! You make it sound like a competition. You know how it is with football players. Our on-the-field competition is nothing compared to all the subtle points of competition off the field: who dresses the best, who has the nicest car, who lives in the nicest house. As an older guy, over 50, I’m on TV standing next to Brandon Marshall, who’s still playing, and James Brown, who’s distinguished, and so is Phil Simms. It does me well to look better than they do.

Can we expect Garmany to introduce some flash to your wardrobe—maybe a little Broadway Joe swagger? I don’t know about Broadway Joe. You’ve got to dress in a way that’s true to your own style. The beautiful thing when I walked into Garmany was, they understood who I am and what I feel comfortable in. For me, the process was very simple. The guys make it easy to dress professionally and project a look of confidence. Do you have any have predictions to offer for the upcoming NFL season? On our radio show [Boomer & Carton on WFAN],

I asked the guys I work with to come up with a fantasy Super Bowl matchup that nobody would think could be the matchup—like maybe the Jacksonville Jaguars and the Minnesota Vikings. My matchup was the New York Giants and the Oakland Raiders, which would be a heck of a game. Both teams have good young players, great quarterbacks, coaches who have been through the wringer before. That’s my off-thewall, out-of-the-box pick. Not a prediction, but a nice matchup I’d love to see happen. You hold various records for left-handed quarterbacks. I’ve never heard you brag about being left-handed, even though the creative superiority of lefties has been demonstrated many times. Are you just a modest guy? No, I’m not really a modest guy. I’m a very intense guy, especially when it comes to competing. And I’m a true left-hander. I can’t do anything with my right hand or right foot. Steve Young, for instance, threw the ball lefthanded, but he writes with his right hand. I do everything lefty. So to be a true creative genius… …and a leader people look up to? Yes, you must be totally left-handed. There can be no righthandedness within your body or spirit. You began and ended your NFL career with the Cincinnati Bengals. Do you have a special affection for Cincinnati? I kind of do, especially because they were the team that drafted me in ’84. I had a great head coach in Sam Wyche. I was with him for half a dozen years running his “no huddle” offense. It was a very combustible time and a lot of fun. The reason I returned to Cincinnati [after playing for the New York Jets and the Arizona Cardinals] is that my former offensive coordinator with the Bengals, Bruce Coslet, who was also my head coach for one year with the Jets, became head coach of the Bengals, and he wanted me.

You played one season in your second stint with the Bengals and then retired. Why? I went back to Cincinnati as the backup quarterback. Then our starting quarterback got hurt and wasn’t playing that well, so I ended up taking over the last five games. And I knew in the back of my mind that I was done. It would have been hard to go back another season and recreate what I did in those five games, of which we won four. The money I was offered to play for another two years was very significant. But then all of a sudden Monday Night Football came along, and that clarified the decision. You were offered a job as a color commentator. And I thought, this could be a job I have for another 25 or 30 years. It was too hard to pass up the broadcast opportunity, so at the advanced age of 37, I decided to retire. Even though we didn’t make the playoffs, I feel that as a quarterback in my 14th year, I really had a profound effect on a lot of young guys on that Bengals roster. Watching those kids grow up and become tremendous football players, and being the quarterback that helped them do that, really made me happy that I retired when I did. And you certainly ended on a high note. Tell us about the final play of your NFL career. We were playing the Baltimore Ravens. Late in the fourth quarter I threw a 77-yard pass to wide receiver Darnay Scott. He caught it for a touchdown. We won the game 16–14, and I walked off the field a happy man. And by now you’ve been in TV and radio longer than you played in the NFL. True! It’s a very active “retirement,” but I can’t imagine not being busy. Just playing golf everyday? No. Being involved in the mix is what’s most important to me. I play a lot of golf in the summer, but when September comes around, I’m ready to put the clubs away and concentrate on football.

Wardrobe! It takes a lot of work to look this good. Johnell Garmany makes a house call to Boomer’s New York studio for a personal suit and sportcoat fitting—bringing his tailoring expertise straight to the star. Take a peek inside the session.

As an on-air personality, Boomer Esiason likes to make a statement. And his statement-making isn’t just with his words—it’s with his sense of style. Clockwise from top left: Garmany owner Johnell Garmany works to get the perfect fit during a tailoring session with Boomer in the wardrobe room at the CBS Studios in New York City. Johnell peruses a selection of fabric swatches in plaid, chalk stripe and solid colors. Proper tailoring is important— Johnell measures to ensure the sleeve of this brown-and-blue plaid sportcoat hits at the perfect spot on the wrist. Boomer checks out the fit on a suit jacket with Johnell’s assistance. Talking it over: Johnell consults with CBS stylist Annette Marom and Garmany director of sales and marketing Andrew Weisbrot about fabric options for Made-to-Measure suits for his famed client.

the look

for fall and winter Find inspiration in these edgy yet feminine styles.

Well-suited

Designers walked playful power suits down their fall runways…and you’ll be happy to hear they didn’t take their inspiration from the dressed-for-success ’80s! Thanks instead to some whimsical details, these iterations ooze corporate cool. Take Marissa Webb’s funky glen plaid number, featuring frayed edges and lace-up gauchos. Or be a mistress of mixed prints in Rebecca Taylor’s floral velvet blazer atop bunchy pinstriped pants and a plaid shirt—perfectly professional without being a perfect match! Comfort is also key, as evidenced by Veronica Beard, Fabiana Filippi and Eleventy: While Beard suits up over a relaxed, chunky knit, Filippi and Eleventy confirm that sneakers and slacks can be sleek.

Denim redux

Move over, black! There’s a new (dark) neutral in town—olive green. With its ability to flatter all skin tones, it’s no wonder nearly every collection either sported hints of the earthy shade or featured the hue from head to toe. Marissa Webb’s safari-chic interpretation looks sultry, thanks to a daring thigh reveal, while Rag & Bone’s knitted floorsweeper and Pam & Gela’s fuzzer and sweatsuit combo may well be the edgiest way to stay cozy once the cool weather sets in. Or take your olive tailored: Veronica Beard’s ’70s-inspired rendition gives the conventional getup a little spice.

This fall, there’s a leather topper to match your every mood. Feeling fierce? Turn to the quintessential moto, and have some fun with it. The cult favorite has been reimagined in rusts and burgundies (see Rag & Bone, Ecru or J Brand’s irresistible takes) for a unique combo of soft and cutting edge. Want to go casual-chic? Opt for Tanya Taylor’s navy blue kimono-inspired piece, a hip-length stunner that visually elongates the torso. Leaning more toward conservative cool? Toss on Veda’s shawl collar buttery blazer in black—equal parts sleek and slimming, it will give any office ensemble something extra.

| garmany

Patchwork, raw edges, cropped flares: Fall’s jean revival may be a blast from the past, but this repurposed denim will give your wardrobe new life. Take, for instance, Rebecca Taylor and Rag & Bone, who show us how to rock patched cropped flares (Hint: Pair with badass booties and balance the look with something super-feminine—a lacy blouse or floral jacket, say.). 3X1, meanwhile, makes a convincing case for frayed edges on chambray shirt dresses, miniskirts and jeans alike. Distressed fringe swishing around the hips and thighs puts the spotlight on strong legs, while frayed hems on capri-length jeans showcase the most delicate part of your leg (and that stellar pair of shoes you just slipped on!)!

hot tips How to capitalize on the season’s hot trends!

Fall for florals + grunge

Punchy florals, the usual springtime staple, have slowly transitioned their way into fall, which is why you’ll be spotting everything from floating maxis to bomber-esque jackets emblazoned with petals. To make your flowers feel right for the cool season, wear them with edgy counterparts: At Marissa Webb, a militaryinspired trench combines with frilly florals for grungegirl grace, while Tanya Taylor splashes bright graphic blossoms onto an oversized leather moto. Or, if you dare, pair your flora with fauna as Rebecca Taylor does: Who knew petals and python could look so striking together?

oh, my!

The most fashion-forward way to cinch just about any garment this season? With an “O” belt featuring long, streaming ends that flutter as you walk. This fall’s soft, feminine take on the traditionally utilitarian belt works equally well over McQ by Alexander McQueen’s sleek black jumpsuit or a silky slip sheath like Cinq à Sept’s! It’s also a genius way to tie seemingly disparate elements into one cohesive look. See the modish marriage of Marissa Webb’s fringed jacket and frilly floral skirt for proof.

| garmany

Lace up, Ladies! Dainty and delicate yet effortlessly edgy, the lace-up shoe remains the fashionista’s footwear of choice for yet another season. What’s behind its staying power? Its sexy-meets-sophisticated style, of course! But the real clincher? The crisscross effect creates a narrow focal point, slimming the ankle and creating the illusion of lift and length. Make a statement in Stuart Weitzman’s surprisingly versatile twist on the classic pump: The corset-inspired lace-up detail and block heel will pair perfectly with a flouncy frock or ripped jeans. Or swap your heels for fun flats, à la Aquazzura and Vince, whose lace-up styles will take you from work to play in a pinch! Clockwise from top left, Marissa Webb, McQ by Alexander McQueen, Aquazzura, Cinq à Sept, Vince, Rebecca Taylor

Siren Song Years off her Nashville debut, Taylor Swift’s lyrics continue to resonate with fans. The same can easily be said for her much-copied fashion sense. By Christina Poletto

“B

orn in 1989.” That’s the description that accompanies the Instagram handle for Taylor Swift, the wildly successful 27-year-old entertainer who has wowed the world with her signature spins on country and pop music. Genius songwriter aside, this millennial also earns major likes for her playfully mature sense of style. When she first came on the scene, Swift opted for flowy sundresses and scuffed-up cowboy boots to reflect her alt-country melodies. Now, her look is much more polished, daring and of-the-moment. A perfect red pucker is one of her signatures, as is her collection of cat-eye sunnies. But it’s her unwavering devotion to beautifully tailored garments and glammed-up classic details that’s earned her accolades within fashion circles and among her rabid fan base. While style is very personal to Swift, she’s not bashful about sharing it with the world. A self-described “kid of the Internet,” her adept

social media skills directly connect her to more than 90.4 million Instagram followers, who are rewarded with daily snaps of famous friends and fashionable selfies on and off the red carpet. There is plenty of substance to back up the style too. To date, Swift has achieved innumerable honors—from Grammy to Billboard and American Music Awards—making her one of the most successful entertainers in history. Her inaugural pop album, 1989, was dubbed the best-selling album of 2014 and cemented her legacy as a multi-genre performer. Like her ever-changing music, her evolving look underscores her growing influence on today’s fashion trends. In 2014, Swift topped People magazine’s annual best-dressed list, and in 2015, she was honored as Woman of the Year at the Elle Style Awards. So where will her look and sound go from here? Only Taylor Swift knows the answer to that. Fall/Winter 2016

Clockwise from top left: Taylor Swift wows with her signature red pout. The singer sports an all-black ensemble, including a J Brand leather jacket, on the rainy streets of New York in 2014. A year prior, she shimmers in a silver minidress at the Victoria’s Secret Fashion Show, where she performed a number of songs as famous models like Lily Aldridge, Alessandra Ambrosio and Karlie Kloss strutted the catwalk. The stylish star steps out in a mod plaid coat, dotted tights and stiletto heels as she shops in New York in 2014, the same year she purchased a sevenbedroom, 5.5-bath Tribeca penthouse for $20 million. “I was intimidated by it for so long,” she told an interviewer about the Big Apple. Now, she declares, “I love that I moved to New York.”

here’s an air of easy yet elegant nonchalance surrounding every new offering from Italy-based Cucinelli. Yet the renowned brand’s 2016 fall/winter collection delivers more than that—it’s replete with breezy but comfortably tailored fabrics and pieces meant to be effortlessly paired. For men, the neutral-toned collection is built around the ever-practical jacket, offered in lush, supple fabrics but constructed to keep its shape—and edge— whether in the boardroom or out on the town. Designer Brunello Cucinelli believes a well-fitting men’s jacket has the power to instill confidence and instantly define a look. To complement this, the brand added a wide range of pant styles, from more formal, fitted trousers to alternatives of denim or jogger-inspired cozy cashmere leggings. The secret to making this lineup work together? Using only the finest, most gorgeous fabrics, according to Cucinelli. At a glance, one will find threads of alpaca, mohair and his signature cashmere, among others, resulting in pieces as comfortable as they are warm and luxurious.

Cool Cockney In his screen demeanor and the way he wears a suit, British actor Michael Caine is the epitome of smooth. By Timothy Kelley

W

File in 1965 and womanizing Cockney chauffeur Alfie in ’66. In 1969’s The Italian Job, a garage door memorably slides open to reveal superthief Caine in a dove grey, three-button sharkskin suit. And in Get Carter (1971) the title-role gangster sports a single-breasted, two-button, three-piece suit of blue Dormeuil tonik mohair. Fittingly, for years Caine’s personal tailor was the late Doug Hayward (reputedly the model for Alfie’s character), a fellow workingclasser whose unacceptable accent had kept him off Savile Row. Hayward won renown in the Carnaby Street era, shocking the Establishment with the notion that machine-sewn buttonholes might be cricket after all, and he married classic English suit design with an Italian touch. Of course, no mere clotheshorse wins Oscar nominations in each of the five decades starting in the ’60s (a distinction Caine shares only with Jack Nicholson), or holds one’s own (as he did in 1972’s Sleuth) with Olivier. But for half a century we’ve watched what this cool customer wore. And he’s worn very well indeed.

Clockwise from top left: Film icon Michael Caine portrays the title character in 2009’s action-thriller Harry Brown. The Oscar winner strolls with a hand in the pocket of his suit. Looking dapper as a magician in Now You See Me. A Rolex on his wrist, Caine wraps an arm around co-star Giovanna Ralli on the Spanish set of 1968’s Deadfall.

fall/winter 2016

oody Allen’s no fool. When in 1986’s Hannah and Her Sisters he cast British actor Michael Caine as a lovestruck middle-aged neurotic stumbling into an affair, he was having a bit of fun. Fact is, moviegoers know Sir Michael isn’t the stumbling type (though the role won him an Oscar). He’s a striding definition of suave. Caine “has been personifying British cool since the Swinging Sixties,” says CNN. Indeed, queen and country boast no classier screen hero. But Caine’s class isn’t upper—despite his knighthood, conferred in 2000. He was born Maurice Micklewhite in 1933 a few blocks from the Thames, and his accent remains less Oxbridge than London Bridge. “When I became a success I sort of shoved it down their throat and continued to talk the way I did,” he’s explained. “I wanted to say to young people, ‘You can do it; it doesn’t matter how you speak.’ ” But it does matter how you look. Caine has put his six-foot frame and handsome, heavylidded puss to splendid sartorial use ever since he portrayed a crook-turned-spy in The Ipcress

road warrior

The new Mercedes-AMG GT S has serious rock star presence that transcends its elegant design. It was literally handcrafted by racers to own the road. If you’ve a need for speed, this svelte sports coupe effortlessly scoots its way to a top speed of 192 mph. Comfortably. But more than that, it’s fully equipped with racinginspired controls, and designed to perform exactly as a supercar should.

The AMG GT S boasts a 503-horsepower, 4.0-liter biturbo V8 engine and a seven-speed dual-clutch automatic transmission. Its massive torque reaches its 479 lb-ft peak at just 1,750 rpm and holds it all the way to 4,750 rpm, letting you go from zero to 60 in a scorching 3.7 seconds. “Dial in” the car’s performance character with the twist of a knob on the console. Choose from four preset modes—comfort, sport, sport+ and race—plus an individual mode that you can configure yourself. LED headlamps with stylized “eyebrows” as daytime running lamps, side lights and indicators—as well as three separate high-beam reflectors—give the GT S its distinctive look. Some 260 grill pins, capped in chrome and individually sized and spaced by the car’s designer, add an air of elegance to the exterior.

| Garmany

The weight distribution of 47 to 53 percent between the front and rear axle, coupled with the car’s low center of gravity, translates to extremely agile handling and high cornering speeds.

108 GAR.fw16.auto2.indd 108

Come to this East African island for its pristine beaches—and stay to delight all five senses. By Everett Potter

ou’d have to go to the other end of the alphabet—to Atlantis—to find a place name as evocative as Zanzibar. The magical word hints of exotic sights and sounds, evoking the intrepid traders, explorers and adventurers of bygone days. And unlike Atlantis, Zanzibar is perfectly real. Geographically, it’s a coral archipelago of 50-plus islands about 23 miles off the mainland of the East African country of Tanzania. (And just to keep travelers on their toes, the Z-word is also sometimes used for the largest of the islands, 50-mile-long Unguja.) On my visit, I was like most Western tourists: fresh off a two-week safari in the Serengeti and ready for a few beach days before going home. Zanzibar’s fabled beaches were described by 19th-century British explorer Sir Richard Burton a “cocoa-fringed shore of purest white, and the sea blue as a slab of lapis lazuli.” He’d see the same thing today. Unguja is easily reached—it’s just a 20-minute flight from Tanzania’s largest city, Dar es Salaam. The island’s northern and eastern shores, lapping the longest stretch of soft sands, are lined with resorts. The eastern shore is where the

luxury set settles in. There’s the Park Hyatt Zanzibar, the luxurious Hideaway of Nungwi Resort & Spa and the Hakuna Majiwe Lodge, which actually takes the thatched roof vernacular architecture to another level with its 20 cabanas. I stayed at the Royal Zanzibar Beach Resort, which could patent its five-star Zanzibar experience: infinity pool, private beach, lush gardens, four-poster beds, teak furniture and multiple restaurants, including cliff-perched Samaki. But don’t be like travelers who, weary from safari and sleeping in tents, simply stay put in one of these resorts, venturing only from room to beach to water to restaurant. On the main island alone, there’s simply too much else to see. That’s where you’ll find the remarkable Stone Town, a UNESCO World Heritage Site and a labyrinth city of alleyways and historic architecture. Everywhere in the alleys of this beautiful, hypnotic and slightly shambolic town I saw evidence of Zanzibar’s checkered past; the place was prominent in the ivory trade and the slave trade. Over time, the islands became a source for some of the finest spices in the world. Your hotel can arrange a guide to steer you through the maze of the city, which is reminiscent of the medina of Marrakech, a jumble of antique and souvenir shops, cafés and remarkable architecture. Keep your eyes open for the famous carved wooden doors, many covered in pointed brass studs—the studs were to keep elephants from casually barging in. Now they look like museum objects. The doors on Baghani Street are particularly stunning. Zanzibar is known as a spice island and indeed, the air in Stone Town is fulsome with the perfume of cloves and nutmeg. The fragrances grew even more intense when we reached the Darajani bazaar, where vendors had piled high the island’s bounty: dodo mangoes and passionfruit, along with grapefruit, jackfruit and baobab seeds. The sea was the star in the market hall, which dates from 1904. Here were the fruits of the Indian Ocean, from parrotfish to octopus and triggerfish. As you wander through Stone Town, you’ll see 19th-century mansions that have been restored and turned into smart cafés, shops and boutique hotels. Of particular note is the House of Wonders, or Beit-alAjaib, which was built as a ceremonial palace in 1883 and is now a museum of local life. (At the entrance, look for two 16th-century Portuguese bronze cannons; in the inner courtyard there’s a mtepe, a traditional Swahili boat.) From the wharves at Stone Town, you can watch the fishing dhows with triangular sails set off, a centuries-old design for traders plying the Arabian Gulf. As for those beaches, most resorts will feature a beach outside your door. But if you want to be more This page, from top: a red colobus monkey, indigenous to Zanzibar but endangered after years of habitat destruction; a child frolicking with a flock of seagulls on a pristine white-sand Zanzibar beach; snorkeling in the crystal-blue waters. venturesome, head to Nungwi, Matemwe, Jambiani or Pongwe, which are all amazing. When the heat gets to you, seek out a vendor for a local concoction of sugar cane juice, ginger and lime. On the drive to the beach, keep your eyes peeled for the red colobus monkey, indigenous to Unguja and unfortunately endangered. Its black face with a crown of white hair is unmistakable. Do head to Michanwi Pingwe beach, if for no other reason than to have lunch at The Rock, which, true to its name, sits squarely on a rock just offshore. It looks like Hollywood’s version of a beach shack. If the tide is low, you can walk to it—providing you brought beach shoes to protect your feet from the coral. When the waters return, there is boat service. With seafood freshly caught from the surrounding waters—lobster, octopus, prawns and squid—and the thatched roof offering escape from the midday sun, it’s a brilliant and romantic place to unwind. Diving and snorkeling are fantastic around much of the island, and a bevy of tour operators offers day trips. I happen to like the professionalism of a company called Safari Blue. It gets you to the coral reefs on a classic sailing dhow, with lunch at its restaurant on Kwale Island. The snorkeling was on par with any I’ve done, including in the Red Sea, with anemone gardens and fan corals, wave after wave of angelfish as well as Hawksbill turtles. We snorkeled on two different reefs, spotted dolphins during our sail and arrived back onshore blissful. I also enjoyed a tour of Zanzibar’s spice plantations—such a tour can easily be booked through your hotel. It was a delightful morning on a lush plantation with a little learning on how to grow nutmeg and cardamom and cloves. While dinner at your resort is the default setting on Zanzibar, take one night to go into Stone Town, have a sundowner at The Tea House restaurant at the Emerson Spice hotel and then stroll through the evening market, where stall after stall offers grilled and often spice-laden seafood. There’s not a lot of nightlife in this Muslim city, but there is the rather tired Mercury’s on the waterfront, where you can hear cover versions of songs by Queen’s Freddie Mercury, who was born here. If “We are the Champions” and “Killer Queen” aren’t your thing, catch some traditional Zanzibarian music at the Mtoni Palace Ruins, former home to 19th-century sultans. The classical music of the island is taarab, a mix of music and poetry, and if you’ve got good ears you’ll hear musical strains from India, the Arab world and Africa. It’s a melting pot, and that just may be the essence of the remarkable island called Zanzibar.

the sporting life

the slopes of spain

It’s not the country you think of first for skiing, but Baqueira-Beret in the Pyrenees will make you think again. By Everett Potter

M

| GARMany

ention Baqueira-Beret to most American skiers and you’ll get a blank stare. Tell them this resort is located in the Spanish Pyrenees and that won’t help much, since few Yanks realize that this mountain range along the France–Spain border harbors more than three dozen ski resorts. Yet Baqueira-Beret is Spain’s largest ski resort, well known to well-heeled residents of Madrid and Barcelona, and none other than King Juan Carlos himself has a ski home here. Talk about your bestkept secrets. Why ski the Pyrenees? Abundant snow and the opportunity to experience a radically different ski culture are the prime reasons. Where else can you enjoy a ski day with a luxuriously lazy 11 a.m. start, take a 6 p.m. siesta and have dinner at 11, with a nightclub visit around 1 a.m.? (If you dine at 8, you dine only with other Americans.) I checked into the Hotel Val de Neu, the only five-star luxury hotel in the heart of the BaqueiraBeret resort, next to an upscale shopping center and a short walk to the lifts. The hotel is a bastion of comfortable luxury and high design, minimal in style, with lighting that highlights the local stone and wood used throughout. Black-and-white photographic artwork that pays homage to the resort is judiciously displayed. There are nice touches, like a welcome of hot chocolate and churros, and a pillow menu to ensure a good night’s sleep. Cookies or small cakes awaited me after a day on the slopes. The hotel is a few minutes’ walk to the slopes and has ski lockers in the gondola building, so there’s no need to lug your gear. At day’s end, my mission was to clock some time at the spa, with its

series of thermal pools of varying degrees of heat. The skiing here is truly alpine, which is to say above tree line, vast and open with views that go on for miles. The 4,700-acre resort, larger than Breckenridge or Snowmass in Colorado, has three distinct areas. Beret is aimed at families, with beginner and intermediate slopes that are wellgroomed runs. Baqueira has some intermediate runs and a few expert runs. It’s a good place to test your legs in the morning on runs such as Muguet, which stretches far out into a bowl, and Solei, where long straight cruisers took the edge off my jet lag. On the third day, I explored Bonaigua, which is an area that beckons experts. It lacks snowmaking, and runs are not always groomed. It is also steeper than the other parts of the resort, and there are challenges that would be familiar to anyone who has skied Jackson Hole with its chutes and couloirs. But the real appeal for experts in this area is the off-piste skiing, with countless opportunities to dive off the groomed stuff. The most famous of these is called Escornacrabes, which means “where goats tumble.” I looked, but had no ambition to mimic a mountain goat on a fatal fall. By day four, I was ready for something a little more challenging. So I signed up for a day with Pyrenees Heliski, based in the valley town of Vielha. A day with five runs costs $896, which in the rarefied world of heli-skiing is something of a steal. We ran through our transceiver and safety training—they use the ABS or Avalanche Balloon System here—and were outfitted with backpacks, shovel, probe and avalanche transceiver before we lifted off on a bluebird morning. It was as excit-

ing as previous heli-ski experiences I’ve had at Revelstoke in the Canadian Rockies, with the pilot able to choose from a staggering amount of terrain, in this case some 155 square miles of the Pyrenees, as a snow playground. At each “drop,” as they call them in Europe, we jumped out in a crouched position, clicked into our fat powder skis and followed the guide as he made heroic figure-eights down the meringue-like slopes. Now, five runs might not sound like much until you add up the vertical, since we chalked up roughly 11,400 feet of vertical that day, comparable to any operator in the American West. By day’s end, my thighs were craving those thermal pools back at the Val de Neu. In the evening, tapas is always on the minds of tired skiers. In the town of Vielha, eateries like Basteret Bar-Restaurant let you savor prawns, cheeses, sausages and much more. In Arties, with its charming old streets, there are countless tapas bars, such as Tauèrnes Urtau, which I loved. Move on to a late dinner at Eth Restilhè, where you might find local trout on the menu and typical Catalan desserts such as crema catalana, the local version of crème brûlée. One night, post-tapas, I ended up in the more formal Ticolet in Baqueira, which has been gastronomic ground zero for 40 years, and even had a sighting of a minor royal, according to a local dinner companion. A week of this and I was an easy convert to the Spanish way of ski life: a late start, enough runs to work up the first of many appetites of the day, and a sleep as deep as I could wish for. Skiing Pyrenees style is one of the most enjoyable ways I can think of to spend a winter week in Europe.

Clockwise from top: At 4,700 acres, Baqueira-Beret is the largest ski area in Spain. Six peaks are served by 33 lifts, with a 3,450-foot vertical drop, which is similar to Vail, Colorado. After a long afternoon of skiing it’s time to hit the thermal pools at the Hotel Val de Neu. The wide valley that Baqueira-Beret inhabits extends for nearly 25 miles, with France at the other end. Beer lovers won’t want to miss Birreria Eth Refugi at the base of the gondola; it features microbrews from more than 70 countries. In the mood for some adventure? Try heli-skiing. Some 155 square miles of the Pyrenees can be your own snow playground. The Hotel Val de Neu enjoys a privileged location—just 50 yards from the ski lift and close to new shopping opportunities in Baqueira.

Rebel Without A Pause Confederate Motors’ relentless new ’cycle, the G2 P51 Combat Fighter, sounds like something airborne. Kinda feels that way too. By Timothy Kelley

M

otorcycles aren’t for blending in, playing along or even getting ahead. They’re about freedom—with a dash of attitude. Why not ride one that’s built in that spirit? The folks at Confederate Motors in Alabama obviously aren’t into politically correct nomenclature. But while other motorbike makers come and go, this scrappy little company has reached the quarter-century mark—that’s six times as long as the real Confederacy endured. It has reportedly sold vehicles to the likes of Brad Pitt, Nicolas Cage and Bruce Springsteen. And its new G2 P51 Combat Fighter hints thunderously at why. Here are 200 horses of pure Johnny-Reb menace, and when they go roaring by they can make a bobblehead turn. But we’re not talking just noise and shine. This is an admirably designed and constructed machine. A notable advance from the P120 Fighter released by Confederate in 2009 (it’s lighter, with more power), the P51 features a monocoque structure that elegantly binds engine, fuel tank and transmission in a single unit built of 6061-T6 aerospacegrade billet aluminum. Speaking of aerospace, if the phrase “Combat Fighter” reminds you of the wild blue yonder, that’s OK. Officially the P-51 moniker reflects the 51-millimeter intake ports installed by

head designer Jon Kaase. But as company founder/CEO Matt Chambers notes, it also tips its hat to an airborne namesake: North American Aviation’s famous World War II workhorse, the P-51 Mustang. This groundbound Combat Fighter features new cylinder heads and an ingenious new air-induction system. Engine geeks will appreciate its 132-cubic-inch S&S X-Wedge air/oil-cooled overhead camshaft V-twin motor with two valves per cylinder. (Last time we checked, S&S was in that northern state known as Wisconsin, but why quibble?) The bike boasts a five-speed stacked gearbox with Andrews gears and can reach speeds above 176 mph—though you might not wish to aim for that mark this side of the Bonneville Salt Flats. Its 180 ft.-lbs. of torque constitute, as the manufacturer modestly confesses, “the greatest amount of torque as a percentage of weight ever achieved in all of motordom.” Only 61 will be produced, and each will be engraved with a number signifying the order in which it was purchased. Don’t miss your moment.

Form hitches a ride with function in the ruggedly eye-pleasing Confederate G2 P51 Combat Fighter, starting at $125,000. Company founder/CEO Matt Chambers has described this machine’s design philosophy in terms that can’t be fully quoted here, but that include the phrases “it’s fighting against convention” and “flicks the finger at the established order.”

The rowdy rebel cuts a slender figure in your rearview mirror— but watch out anyway.

The seat, 28.5 inches high, is said to be comfier than those of earlier Confederate muscle bikes.

The Pirelli Diablo Rosso II rear tire accounts for nearly all of the vehicle’s width.

t long last, being a carnivore is “in” again. For years, many of us have yielded the high ground to our vegetarian friends, remarking to one another only sotto voce that they’re missing a lot of good eats. But now the ancient European tradition of charcuterie—finely honed techniques for preparing cooked or processed meats such as sausages and patés—is making a big comeback among discerning chefs right here in the U.S.A. With a respect for nature and an abhorrence of waste, they’re making culinary history. So hold your heads high, meat eaters! And meet three top practitioners of this tasty art.

Chris Consentino Boccalone and Cockscomb, San Francisco

fall/winter 2016

|

This celebrity chef says meat is his muse. Popularly known for his TV appearances—for example, on Food Network’s Iron Chef America and as winner of Bravo’s Top Chef Masters—he has made a name as a leader in charcuterie’s resurgence. As executive chef at Incanto in San Francisco, which closed in 2014, Chris Consentino hosted an annual “head-to-tail” dinner in which he’d make a point of using an entire animal, even serving pork’s blood with chocolate for dessert. This philosophy, he says, was inspired by his friend, French chef Jean-Louis Palladin, who taught him “to be realistic and respectful about the path an animal takes from farm or forest to plate.” At Incanto, Consentino created a house-cured charcuterie plate that included mortadella and fennel salame. When guests asked where they could purchase Incanto’s meats, Consentino and Incanto owner Mark Pastore opened a salumeria (Italian delicatessen) called Boccalone, also in the City by the Bay, in 2007. (The slogan on its T-shirts: “Tasty Salted Pig Parts.”) There and at farmers’ markets, customers can purchase Consentino’s meats, including the bestselling mortadella hot dogs and cured salumis, such as capocollo, a neck meat aged with spices; guanciale, a salt-cured pork cheek used in Carbonara dishes; and even orange and wild fennel salame. (Customers enjoy getting a selection in the store’s popular “meat cone” dish.) Besides Boccalone, Consentino focuses his attention on his newest restaurant venture, Cockscomb, and his blog, OffalGood.com, which highlights his passion for cooking offal, the parts of an animal that are not skeletal muscle. (It literally means “off fall”—the pieces that fall off the animal during butchering.) But don’t expect him to rest on his laurels—this creative chef is constantly reinventing. “The possibility of catching lightning in a bottle, or within a salami casing, is enticing,” he has said. “That’s what will forever thrill us about the art of cured meats.”

Zach Allen B&B Hospitality, Las Vegas Meat making is part passion and part tradition for Zach Allen. While he was growing up, his Germanheritage family gathered each fall to create a big batch of smoked sausages. His interest in working with cured and smoked meats professionally was piqued on a trip to Italy, where he met prosciutto makers and was inspired to learn charcuterie. At that time, Allen was preparing for the opening of Mario Batali’s Otto in New York City; he was determined to cure all meats—from those served as antipasti to the pepperoni on the pizzas—in-house. To learn the craft, Allen worked with Armandino Batali, Mario’s father, who runs the famed Salumi in Seattle, and took formal training at Iowa State University’s Meat Lab, where he discovered the chemistry and technology behind meat curing and smoking. “You need to know the science,” he explains. “Why you need the salt, the sugar, the nitrate and so on— and you need to be careful using them to make sure you’re safe.” Through Allen, Otto became the first New York City restaurant to have a cured meats plan approved by the city’s Health Department for HACCP (hazard analysis and critical control points), a food-safety system pioneered by NASA. Pig parts some chefs would discard engage Allen’s imagination. The loin, which is lean with a little fat but “not marbled like a shoulder,” he says, can be turned into lonza. “We season with salt and a little sugar and let the sweetness of the meat sing,” he says. Meanwhile, he handles the fattier shoulder by rubbing it first with salt and sugar, then rolling it in ground black pepper, fennel and cayenne to make coppa. Ankles, which contain tough meat, need a little extra work to become a succulent full-flavored cotechino. “We’ll season it with a lot of fall spices— black pepper, cinnamon, cayenne and clove—poach it really slowly in Prosecco for two to three hours,” he says. “Add all the skin and fat and it becomes tender.” As for overall guidance, “it’s important to respect and look at the animal,” Allen says. “Take what the pig gives you and make it from there.” He oversees 10 restaurants with B&B Hospitality, and has helped Mario Batali and Joe Bastianich open 17 properties in the United States and abroad. He brings in thousands of pounds of pork from Heritage Farms USA, which provides the restaurants with pigs bred and raised exclusively for them. “If you’re going to eat meat, this is the best way,” Allen says. “You’re using the animal to its fullest. You’re not wasting anything.”

Jamie Bissonnette Coppa, Boston; Toro, New York, Boston and Bangkok; Little Donkey, Cambridge, Mass.

fall/winter 2016

This meat genius actually spent many years as a vegetarian and vegan. Eventually, his culinary ambitions prompted a diet change. Jamie Bissonnette recalls that a one-time boss “said I was a good cook, but I’d never be a great cook unless I started eating the food.” In 2011, Bissonnette won $10,000 on the Food Network show Chopped; in 2014, he was awarded the James Beard Foundation Award for the Best Chef Northeast and also published The New Charcuterie Cookbook: Exceptional Cured Meats to Make and Serve at Home. Today he owns five restaurants, having added Cambridge’s Little Donkey just this summer. Writes celebrity chef Andrew Zimmern of Bissonnette: “He can take ordinary food, even odd bits, fifth-quarter stuff (the pluck, the viscera, ‘the nasty’ to some) and make angels weep.” The rabbit mortadella in the book earned Zimmern’s praise; ambitious home chefs can also find recipes for Bissonnette’s duck prosciutto and Vietnamese bologna, or Cha Lua. For those hoping to get a taste of the chef’s own creations, an array of salumis, patés and sausages is available at Coppa. Toro, a Barcelona-style eatery that focuses on seafood, finds room on its menu for Bissonnette’s carnivorous creations in tapas dishes, such as smoked beef heart and seared foie gras. Those vegan days are long ago, but this chef’s respect for animals endures. He began experimenting with offal after seeing parts of the animal go to waste once the popular cuts were butchered off. “When I made the change from vegetarian to omnivore, I wanted as little waste as possible,” he says. He also insists on knowing where his meat comes from and only sourcing ingredients from sustainable providers, advising people not to cook with meat they don’t know anything about. “I only use people I can get to know and speak with about the pigs and how they were raised,” he says. For would-be charcuterie enthusiasts, Bissonnette has simple advice: “It’s not something you can learn on a stage. It’s something one has to be really dedicated to. But it’s delicious.”

Peruvian Delight

It was popular during the Gold Rush, and now pisco is enlivening cocktails across the country. By Virginie Boone

ne of the hottest spirits in the U.S. right now is pisco, a South American brandy distilled from wine. Lots of spirits tied to Europe date back hundreds of years, but pisco traces its roots to the 1500s, when Spanish missionaries in Peru and Chile began planting grapes to make wine. The grapes were varieties like Muscat, Torontel and Pedro Jimenez, and the vines grown at fairly high elevation. As the French did with Cognac, South Americans figured out how to make pisco from these crops, fortifying the wine by distilling it in copper pot stills. For pisco, grapes are harvested February through April, the Southern Hemisphere’s autumn harvest time, and the seeds and stems removed. The remaining fruit is crushed into juice and fermented using native yeast. Pisco then rests for a minimum of 90 days in “neutral” vessels, with oak never in

the picture. It’s made to be enjoyed right away, with nothing added— no water, no sugar, no caramel. Named for a port in Peru, pisco also has a long legacy in California, where going back to the Gold Rush days it was a staple on San Francisco’s wild Barbary Coast. There the Pisco Punch, a loose and powerful commingling of pisco, pineapple, lime juice, sugar and water, was born in the late 1800s. Mark Twain, Rudyard Kipling and other literary figures enjoyed Pisco Punch when it was all the rage in San Francisco in the late 19th and early 20th centuries. And, as New Yorker founding editor Harold Ross recalled, it “[tasted] like lemonade but had a kick like vodka, or worse.” Today, a pisco producer called Campo de Encanto (which translates to Field of Enchantment) uses grapes from Peru’s Ica Valley. Developed by San Francisco bartender

Duggan McDonnell and sommelier Walter Moore in collaboration with Peruvian distiller Carlos Romero, its small-batch product is blended from five types of old-vine grapes, creating a smooth combination of peaches, almonds and mint. The true test of pisco? Swirl it before you sip, says McDonnell. And make sure the bubbles dissipate quickly. If they don’t, it means the spirit has been diluted, and thus isn’t real pisco. Enjoy pisco neat, with a twist of lime, or in cocktails such as the Pisco Sour, a combination of the liquor with lime juice, sugar syrup and a shaken egg white. This is a drink that’s refreshing and proteinrich, smooth and sweet. Or consider Encanto’s Pisco Punch mixer, the Bank Exchange Pineapple Cordial, named for the saloon on San Francisco’s Montgomery Street that famously served pisco cocktails in the 19th century.

Clockwise from top left: The Paracas National Reserve, a popular tourist attraction in Peru, is located in Ica, one of the country’s five official D.O. (Denomination of Origin) departments where pisco can be produced. The premium brand BarSol uses centuries-old copper pot stills to distill its piscos. Combine the lively spirit with lime juice, sugar syrup and an egg white to create the classic Pisco Sour. Enjoy dinner and drinks at Illariy, one of the most popular restaurants in Cusco. In Peru, only eight grape varietals can be used to make the fermented spirit. BarSol specializes in piscos produced with Quebranta, Italia and Torontel grapes. Campo de Encanto was the brainchild of a San Francisco bartender and sommelier.

n the map, the island of Sicily looks as if it’s about to be drop-kicked by the Italian boot. Indeed, its abundant wines have long been kicked around—known more for quantity than for quality, with flabby reds, listless whites and assorted sweet wines like Marsala and Moscato di Pantelleria that were good for cooking but not much else. Till recently, says Brian Larky, owner of wine importer Dalla Terra Winery Direct in Napa, Calif., “when people thought of Sicily, they thought of mafia and Marsala. But it’s so much more.” In fact, the island is home to more than 70 native grape varietals, with winemaking roots that run millennia deep. And vintners today are drawing on that tradition, leaning on ancient grapes such as Grillo and Catarratto with a distinctive sense of place. “Sicily is a place of great diversity, in its climate, its soils and, of course, its grapes,” says Alberto Tasca d’Almerita. “It’s also full of history and culture you can see and touch and taste.”

After a ho-hum era, vintners on this historic wine-producing island are winning new respect. By Josh Sens

At 44, Tasca d’Almerita is a vintner of noble breeding—a count, no less, who is married to a princess (literally) and belongs to “the first family of Sicilian wine.” His bloodlines in the industry trace to the 1830s, when forebears planted grapes in the center of the island. With father Lucio and brother Giuseppe, he oversees five of Sicily’s most respected wineries: Tenuta Regaleali, Capofaro, Tascante, Whitaker and Sallier de la Tour. For the family business, the mid- to late-1900s brought robust growth, during which Lucio emerged as a pioneer, implementing a range of modern farming practices. He was the first Sicilian vintner to use a tractor and to dig a reservoir to catch rainwater. But he also held firm to traditions, championing indigenous varietals that were becoming vanishingly rare. Other wineries followed suit, among them Benanti, Ceuso, COS and Cusumano. To sample the finest Sicilian wines today is to appreciate their wildly diverse profiles, by turns lean and feisty, lush

and complex. They’re reflective of a Sicily that contains multitudes, its topography ranging from stark volcanic peaks to sun-kissed inland valleys to low-lying flatlands cooled by coastal fog. With five estates scattered across Sicily, the Tasca d’Almerita family makes wines in all of those settings, and their portfolio captures that wide-ranging terroir. It’s evident in stunning releases like Tenuta Regaleali’s 2014 Lamuri, a fruit-forward wine made from Nero d’Avola grapes grown in a rolling inland region, and Capofaro’s 2013 Didyme Malvasia, a bright white derived from fruit in vineyards stitched along Mt. Etna’s volcanic slopes. As the managing director of the family business, Alberto is the widely recognized public face of all these labels. He and his wife, Francesca Borghese, show up on glossy Italian society pages. But his family’s wines, he says, are the true stars. “People are getting more curious about indigenous grape varietals everywhere,” he says. “In that regard, Sicily is the biggest treasure in the world.”

Clockwise from top left: Vintner Arianna Occhipinti’s SP68, her blend of Nero d’Avola and Frappato; the vineyard at the Tasca d’Almerita family’s Capofaro Malvasia & Resort on the isle of Salina, north of Sicily; majestic Mt. Etna rises above a Silican town; the dapper Alberto Tasca d’Almerita; the Grillo grape, a variety favored for Marsala winemaking; harvesting the Nero d’Avola grape varietal at the Feudo Montoni estate; a bottle of Tenuta Rapitala Grillo 2013; a lush bunch of Nerello Mascalese grapes, named for the Mascali area of Catania, where it’s believed they have originated.

Tasting notes Tenuta Regaleali Lamuri Nero d’Avola, 2014 Retail price: $20 Lush aromas of black cherry, vanilla and tobacco give way to velvety tannins on the palate in this nuanced, foodfriendly wine. Tenuta Regaleali Rosso del Conte 2010 Retail price: $70 A rich ruby color is complemented by deep flavors of cherry and stone fruit that resolve in a long, smooth finish. Tascante Buonora 2014 Retail price: $20 Aged in stainless steel, this wine has hints of grapefruit and understated minerality as well as a lean, clean finish; these qualities help make it a wonderfully refreshing warmweather white.

Soak your weary self in the thermal hot springs at Costa Rica’s Tabacón Grand Spa and Thermal Resort. By Liz Donovan

T

| garmany

he “law of the land” in Costa Rica is “Pura vida!”—you’re likely to be greeted with the expression shortly after arriving in this cheerful Central American country. It directly translates to “pure life,” and after your stay here, you’ll know why. Flanked by the Pacific Ocean and Caribbean Sea, Costa Rica makes up for its size (19,653 square miles; smaller than Lake Michigan) with a wealth of biodiversity and ecotourism—it hosts nearly 6 percent of the world’s species and protects 25 percent of its land within national parks and wildlife reserves ranging from tropical dry forests and cloud forests to wetlands and rainforests. Conveniently situated at the edge of one of these magnificent rainforests, nestled under the grand Arenal volcano, is the Tabacón Grand Spa and Thermal Resort in La Fortuna. This five-star luxury getaway features three natural hot springs, which are 97 percent rain-based and 3 percent magma-based. After a rainfall, the water seeps through fissures down to the Earth’s core, where it’s heated by volcanic magma. Once heated, the now mineral-rich water resurfaces and is funneled at a temperature of 120°F into the resort’s 20 magnificent pools, complete with waterfalls and flora. Simply soaking in these luscious

ambient pools is pampering enough, but if you desire, you can turn it up a notch by retreating to a private open-air bungalow surrounded by lush gardens and equipped with a thermal spring tub. There, expert masseuses will rub you from head to toe, wrapping your feet in a warm volcanic mud that will both soften and detoxify. Couples may opt for a romantic side by side full-body massage that ends with a love poem read in Maléku, the native language of Costa Rica, and topped off with a milk bath and a bottle of champagne. Spending the day idling in a state of blissed-out nirvana can work up one’s appetite; fortunately, a cultural culinary experience beckons at the resort’s multiple restaurants. Start your morning with a colorful spread of local tropical fruits, like fresh papaya, mango and guava, or perhaps sample the traditional Costa Rican dish of sweet plantains at Los Tucanes. Of course, the Costa Rican coffee—strong and dark without a hint of bitterness—is not to be missed. Light bites are available for lunch, and both casual and formal dinner options are offered at Ave de Paraiso and Los Tucanes, respectively. While enjoying the natural splendors of the Earth here, it may heighten your

experience to know that this resort is proud to be both environmentally and socially responsible. It holds a Sustainable Tourism Certificate, is certified by the government as a carbon-neutral facility and is active in supporting the local community through education and outreach. When not indulging in the thermal springs, set out to explore the area and its stunning natural attractions. The majestic Arenal volcano rises more than 5,400 feet and at one time was Costa Rica’s most active volcano. But fear not—it’s now in a resting phase, with no major eruptions since 2010. Craving adventure? Explore the lush rainforest surrounding the volcano with a guided hike and you may be rewarded with a glimpse of one of the thousands of species that call it home—our group spotted a toucan perched on a nearby tree during a recent visit. Other activities include zip-lining, whitewater rafting, bird-watching tours across some of the Arenal area’s “hanging bridges” and a Costa Rican–style safari river float, where you’ll discover wildlife such as monkeys, iguanas, sloths and crocodiles. Truly, whether you’re tired and weary or seeking an adrenaline rush, you’ll surely discover something here that by the end of your stay will have you exclaiming, “Pura vida!”

Clockwise from top: one of Tabacón’s 20 pools, warmed by natural hot springs; the luxe honeymoon suite, which features a private Jacuzzi; some of the resort’s scenic waterfalls; a massage is one of the offerings at the top-rated spa; a bridge leads past a bungalow and through the lush gardens; the Arenal volcano rises beyond one of the resort’s thermal pools.

GROOMING

The Razor’s Edge Rotating blades? Forget it! A wet shave—the way your grandfather did it—is always a cut above the rest.

| Garmany

Your suit and shoes say you have style, so don’t let a five o’clock shadow detract from your look. How do you fix this hairy situation? Don’t reach for the electric shaver that was gifted to you on Father’s Day. Unless you’ve run out of time in the morning, Norelco isn’t the answer; it won’t give you the close shave your skin deserves. The best way to whack those whiskers is with an old-fashioned wet shave, which is making a comeback among gentlemen keen on making the right sartorial choices. You’ve seen it done in Hollywood (remember Robert De Niro in The Untouchables?), but you can experience a wet shave in the comfort of your own home. All it takes is the right tools and ’tude. Think of shaving as a ritual and a tradition rather than a chore; your face will thank you in the end. prep work To start, apply a hot towel to your face to open pores and zap any bacteria on your skin. Keep it on for about five minutes, then massage a preshaving oil (a pea-sized drop or two is all you need) evenly on the skin. The oil will allow the razor to slide easily across the face, reducing irritation. Dump the canned shave gels and foams. Instead, use a high-quality cream or shaving soap that moisturizes and doesn’t contain too

many chemicals. (If you can’t pronounce the ingredients, skip it.) Lather up and apply it over the oil using a quality brush—think bristles made of badger or horsehair. the shave Now comes the fun part—using a sharp doubleedged safety razor, like the kind that your grandfather might have used. A straight blade will give you the closest shave, but since it’s also known as the “cutthroat,” we recommend leaving that one to the professionals. Shave with the grain first, then pass across the grain if your skin isn’t too sensitive. Going against the grain might seem like a good idea—especially along the neck—but that will increase the likelihood of razor bumps and ingrown hairs. finish line Once you’re stubble-free, rinse with hot water to remove any excess cream and oil. Then splash your face with cold water. This will close the pores and prep your skin for a cool aftershave balm. If you didn’t rush the process and followed the steps carefully, you won’t experience too much of an “aftershave sting.” You only need a small amount to hydrate the skin and prevent irritation. Voilà! Run your hands up and down your face and feel the softness because you’re done and ready to face the world.
