Designer Alyssa Kapito’s acquaintance with a genius from the distant past informs her approach to interiors today.
No collaborator’s credit is required, as the influencer died in 1519, and the inspired interiors are wholly the work of New York City-based designer Alyssa Kapito, 30. But this art-history scholar, holder of a master’s degree in Renaissance art from Columbia University, doesn’t hesitate to trace the sophisticated visual balance of her very contemporary creations to the art and philosophy of Leonardo da Vinci. And indeed, if you’re going to channel a master, why not go for the greatest?
“The essence of my feelings about design was really no different from what Leonardo had felt about paintings,” she says in her newest book, Alyssa Kapito: Interiors. “Every detail in a space matters and ultimately plays a part in how one feels upon entering a room. The light, the scale, the colors, the textures—even the scent of the surroundings—all have an effect.”
In designing an apartment in New York’s posh West Side, seen on the following pages, Kapito marshaled every detail to convey the marriage of timeless classics with modern elegance. We can’t be sure Leonardo would approve, of course. But his most famous painting does seem to be smiling.
This page and opposite: For this apartment’s kitchen, interior designer Alyssa Kapito combined vintage elements with customized details. For instance, custom oak floors and cabinets by Henrybuilt, as well as the marble countertops, complement the antique furnishings. One notable piece in the space is a vintage Pierre Jeanneret sewing stool, from India circa the 1950s, which gives the kitchen an element of history. Easily, if you’re Stephanie Nass, entrepreneur, caterer and entertaining expert. In her debut book, Swing By! Entertaining Recipes and the New Art of Gathering, Nass uses the warm memory of a friend bringing gold leaf to a New Year’s Eve party and decorating the other guests with it to inspire an elevated spread in the color of that precious metal. Warm, glowing and blissful, a gold theme instantly makes an event truly special, totally distinguished from everyday humdrum. “It allows guests to escape their worries and bask in the pleasures of life, which is really the ultimate goal of any party,” Nass says. 24-Karat Carrot Cake
In addition to the sweet homophone of the cakename itself, this dessert just really works withinthe menu. For me, the joy of carrot cake is reallythe frosting, so lay it on thick!
I N G R E D I E N T S (Serves 8)
CAKE:
• 1 Tbs. vegetable oil, or an even coating of baking spray, for greasing
• 4 large egg yolks
• 1 cup sugar
• 1 cup olive oil
• 1 cup all-purpose flour
• 1 tsp. ground cinnamon
• 1 tsp. ground ginger
• ½ tsp. baking powder
• ½ tsp. baking soda
• ½ tsp. kosher salt
• 4 to 5 carrots, trimmed, peeled, and grated, or 2½ cups store-bought grated carrots
FROSTING:
• 16 oz. confectioners’ sugar
• 16 oz. cream cheese, at room temperature
• 3 to 4 Tbs. heavy cream, at room temperature
• edible gold sprinkles or gold leaf flakes for decorating
D I R E C T I O N S
MAKE THE CAKE:
1. Preheat the oven to 375°F. Grease or spray two 8- or 9-inch round cake pans.
2. In a large bowl, whisk the eggs and sugar until pale yellow, then gradually incorporate the olive oil.
3. In a medium bowl, whisk the flour, cinnamon, ginger, baking powder, baking soda and salt.
4. Pour the flour mixture into the egg mixture. Use a wooden spoon to mix until the flour is fully incorporated. Add the carrots and combine until evenly distributed.
5. Transfer half the batter to each of the prepared pans with a silicone spatula and smooth the tops.
6. Bake until a knife inserted in the center comes out clean, about 40 minutes.
7. Let rest in the cake pans for 15 minutes before carefully removing and transferring to a cooling rack.
8. Allow the cakes to cool completely before frosting, about 2 hours.
MAKE THE FROSTING:
In a large bowl, use a wooden spoon to combine the confectioners’ sugar, cream cheese and 3 tablespoons of the heavy cream. If the frosting is too thick to spread, add the remaining tablespoon of heavy cream to achieve a desired frosting consistency.
ASSEMBLE THE CAKE:
1. Once the cakes have cooled, place the first layer on your serving platter or cake stand. Use a spatula to layer one third of the frosting in the center. Spread evenly around the top. Place the second layer on top of this.
2. Use another one third of the frosting to cover the outside of the cake to catch all crumbs (this is the crumb coat).
3. Refrigerate for at least 1 hour so the frosting can harden.
4. With the remaining one third of the frosting, frost over the “crumb coat” and top of the cake.
5. Finally, apply gold decoration. If using edible gold leaf, use tweezers. If using gold-colored sprinkles, sprinkle them over the top. Refrigerate until ready to serve.

Hot Gets COMPLICATED
Your mouth is on fire, and it’s a familiar sensation. But what’s this about a new flare-up of nuance?
At Hattie B’s in Nashville, brave diners challenge each other to handle the “Shut the Cluck Up” sauce, the variety that made the eatery’s chicken a global smash. It’s proof once again that there’s a population of diners who crave spicy food, sometimes the spicier the better, and preferably with a fire-department hose—or at least a glass of water—at the ready. But now the world of raging flavor has been peppered with something new: the so-called “complex heat” trend.
Eating fiery foods has long required— and tested—a try-if-you-dare bravado. It’s also been good for viral laughs, as we see in the popular YouTube show Hot Ones, in which celebrities down chicken wings smothered in a lineup of sauces that get progressively hotter. However, hottest doesn’t always mean best, and a new generation of foodies has taken a seat at the table wanting to try a new approach.
Chili peppers (which are classified as fruit) aren’t going away. But today’s chefs—both professional and at-home—are finding new ways to incorporate them into their dishes, ways that promote a deeper and sometimes a more forgiving heat-flavor profile. Imagine that instead of the “shock and awe” experi-
ence of biting into a whole Carolina Reaper, the world’s spiciest pepper, you could enjoy the fire and flavors without numbing your taste buds. This is what the food industry loosely refers to as the complex heat movement, a trend in which nuanced spices are delivered in less painful and tastier ways.
Consumers are mixing in heat for a variety of reasons and in a handful of ways. Many with a discerning palate see the trend as a way to sample the flavors from global destinations. For instance, Asian goathorn peppers and scorpion peppers (which come from a plant indigenous to Trinidad and Tobago) sit near the top of the Scoville pungency scale and, by themselves, would ordinarily scare off those with sensitive tongues. However, when they’re ground or blended into sauces and sprinkled onto salads and pasta, they’re more palatable. While many of these sauces and marinades (we’re not talking about everyday Cholula or Frank’s Red Hot) are already on supermarket shelves, the U.K.-based food research company RSSL (Reading Scientific Services Ltd.) predicts that more chili pastes, seasonings and other products will be hitting the international markets.
Complex heat also gives a kick to familiar
foods. Sichuan chili crisp, which is packed with Chinese chilies and peppercorn, can provide flavor and texture to any dish, including desserts like chocolate cake. Hot honey on pizza had its moment, but perhaps sweet and smoky guajillo pepper sauce or Italian Calabrian peppers are the next big toppings. And many peppers other than Mexican jalapeños and chipotles can spice up run-of-the-mill salsa, tacos and enchiladas.
Pickling, which was one of 2023’s biggest culinary trends, is a way to add layers to the flavor of any pepper. Combing peppers with vinegar, water, sugar and garlic will add extra tanginess and sweetness, a perfect complement and condiment for salads and sandwiches. There are no rules, so pick your pepper to pickle. The popular pepperoncini are often used in this process, but many home picklers may want to choose hotter varieties such as ghost pepper and chocolate habanero.
Adding spice to food isn’t a new culinary concept, but complex heat gives us many more options beyond original, mild, spicy and hot. And some of these new choices just may be what our singed tongues have been craving all along.
