Just thirteen months ago, in 2023, we celebrated 125 years as a family-owned and operated business. Now, with only two months remaining before the start of 2025, we find ourselves reflecting on how quickly time flies. Since our founding in 1898, the Green family has worked tirelessly across five generations to lead Lux Bond & Green, driven by our passion for diamonds, jewelry, watches, and gifts. Equally important to us are the enduring relationships we’ve built with our customers and vendor partners—many of which have spanned decades and generations.

As we publish Accent Magazine, now in its 21st year, we celebrate these bonds with our customers, who have often become friends and a part of the extended Lux Bond & Green family. We are incredibly grateful for your continued support. Our dedicated team of 90 professionals—including expert buyers, sales staff, service, and support teams—are working diligently to ensure we offer the finest quality and value in all our products. Accent is filled with articles, recipes, and fashion trends, all curated with you in mind.

Today, we pride ourselves on designing and manufacturing one-of-a-kind custom pieces, utilizing state-of-the-art engraving and laser machinery. Our watchmaker laboratory, staffed by four talented individuals, is doubling in size, and we’re adding an additional goldsmith to our Westport location. While we honor our past successes, we remain committed to investing in our relationships and our future.

Our brand offerings are ever-evolving, and we’re thrilled to announce the return of Omega, IWC, and Baume & Mercier as watch brand partners, soon to be available at our Glastonbury store. We’ve also added Paspaley Pearls and Piranesi to our Wellesley collections, along with Kloto, Karen Suen, and Ondyn in our designer line-up throughout the company. Store52, our sister store in West Hartford Center, continues to grow, offering estate jewelry and pre-owned watches. This innovative design allows the pearls to remain untouched by drills, preserving their natural beauty as if they just emerged from an oyster.

The process of creating the Lavalier collection is as intricate as the pieces themselves. Christine Salter, Paspaley’s Creative Director explains, “It takes at least six months to develop the designs for a collection, as we strive for innovation both aesthetically and technically. After the design process it takes a further year to solve the technical challenges, sourcing of the right materials, and have the pieces made.” This rigorous process also includes a period of prototype testing, where the team wears the jewelry for one to three months to identify and overcome any unforeseen flaws before the collection reaches the market.

But the journey of a Paspaley Pearl begins long before the design process. “It takes Paspaley two to three years of hard work and perseverance to grow a pearl, as we nurture each shell by hand in its natural oceanic environment,” Christine Salter notes. Paspaley is the first to see and choose the most exceptional examples of Australian South Sea Pearls. Once harvested, these pearls undergo meticulous grading, and only 5% of the harvest is selected for Paspaley jewelry. This makes each Paspaley piece a precious creation, years in the making.

Actor Chris Hemsworth brings a superhero sensibility to the watches he collects—bold, sometimes larger-than-life and always in perfect taste.

Time hasn’t dimmed the appeal of former “sexiest man alive,” Chris Hemsworth, but it’s inspired some splendid acquisitions.

He’s become identified with Thor, the Norse god of thunder, and for your average actor that might be a pinnacle. But it was just a step on the path for Chris Hemsworth, the Melbourne, Australia-born actor named by People magazine a decade ago “the sexiest man alive.” The now 41-year-old is a durable Hollywood A-lister and one of the film industry’s top action performers. He turns heads wherever he goes with his drop-dead good looks, his superhero-sized star power—and his discerning taste in watches.

Hemsworth became a household name, of course, with his portrayal of Thor in Marvel’s sprawling cinematic universe, first in the 2011 film that shared that character’s four-letter name and then in seven subsequent pictures. He brings a grounded charm, a heavenly physique and a deep passion to the godly superhero. And passion, for this player, is no mere prop. Anything Hemsworth loves becomes integrated into his public image, from his exercise routines to his children’s interest in martial arts. He’s a loud and dedicated sports fan, particularly of his beloved Western Bulldogs of the Australian Football League. He also has a family connection to motorsports—his father raced motorcycles. That connection deepened with 2013’s biopic Rush, in which Hemsworth played Formula 1 driver James Hunt. That role is what connected him to the TAG Heuer Carrera Sport Chronograph. Hunt wore the same watch, and it began something of a love affair. Hemsworth was the brand ambassador for the Swiss watchmaker for five years. He’s frequently photographed wearing the Jack Heuer Autavia 85th anniversary edition, a 2017 remake of the famous Jochen Rindt model from 1966.

Though Chris Hemsworth seems to gravitate toward the pink tones of rose gold, he went bold and shining yellow with this yellowgold Rolex Submariner Date. With a dramatic dark face, this piece weighs a hefty 296 grams, but its visual impact is worth every gram.

It was the Swiss brand TAG Heuer that first captured Hemsworth’s imagination and pulled him into the world of timepieces. The Carrera Automatic Chronograph, with its brown strap and understated luxury, was featured in the movie Spiderhead, which he starred in and produced.

Cool, sleek and blue as his eyes, Hemsworth rocked the hyper-chic Rolex Oyster Perpetual Day-Date at Spiderhead’s premiere.

to be loyal. In the 2022 movie Spiderhead, which he produced as well as starred in, he wore a TAG Heuer Carrera Automatic Chronograph model, with an anthracite, sunray-brushed dial, as sinister prison head Steve Abnesti.

Another of Hemsworth’s loyal tastes: the Audemars Piguet Royal Oak line. One, worn at a 2022 screening of TV show Limitless with Chris Hemsworth, is a pink-gold-on pink-gold piece with a deep blue tapisserie dial. Very classy, very retro and extremely eye-catching. And he topped that at 2023’s Abu Dhabi Grand Prix, where he debuted his all-gold Royal Oak, a 1017 ALYX 9SM limited-edition chronograph created in collaboration with designer Matthew Williams. Hemsworth was one of the first celebrities to be seen with the gold iteration. And it was rose gold again at the 2024 Cannes Film Festival in France, where he appeared flashing the very stylish Rolex Cosmograph Daytona 116505 with a meteorite dial (matching his pale pink jacket). It wasn’t the first Rolex Daytona the actor has touted, either. He’s been photographed wearing the 18K yellow gold Daytona 116528, with a sleek black dial and shining gold inner rings.

While playing the “plus one” to his wife Elsa Pataky at the premiere of her movie Interceptor in 2022, Hemsworth once again drew attention with a skeleton variant Bulgari Octo Finissimo in rose gold (back to the pink tones—again, the man knows what he likes). At the premiere of Spiderhead that same year, the icy blue of his Rolex Oyster Perpetual Day-Date perfectly matched his popped-collar shirt and piercing eyes.

Here’s a star whose taste in timepieces is fully worthy of his visage, his stature and—yes, his passion.

FREDERIQUE CONSTANT BREAKS NEW GROUND AT LUX BOND & GREEN

How a fifth-generation family business partners with one of Switzerland’s fastestgrowing watch brands. By Jack Forster, Global Editorial Director, The 1916 Company

Frederique Constant is a relatively new brand in the larger context of the history of watchmaking in Switzerland, which goes back many centuries. The brand was founded in 1988 by Peter Stas and Aletta Stas who launched its first collection in 1992, which gradually and steadily has been increasing its technical capabilities and broadening its collections ever since.

Lux Bond & Green, on the other hand, is a family-owned business, now in its fifth generation, having been founded by Morris A. Green, in 1898. The relative newness of Frederique Constant, however, belies the sophistication of the company as it has evolved in the last three or so decades; the company is a full-fledged manufacture – a creator of its own movements “in-house” in the parlance of enthusiasts and the industry – and produces a full range of complications as well, including moonphase watches, and up to perpetual calendars and tourbillons.

For John and Charlie Green, who represent the fourth and fifth generation of the family, the partnership with Frederique Constant represents a natural extension of the company’s longstanding connection to its clients through the celebration of personal milestones, and the creation of tangible, enduring connections to those memories – embodied in watches and fine watchmaking. And of course, there’s the fact that Frederique Constant is a familyfounded brand as well.

Of Lux Bond & Green’s connection to Frederique Constant, Charlie says, “The connection really stands with the values they are portraying, and our values providing our customers with beautiful jewelry and timepieces at a great fair value as well. And that’s what Frederique Constant is doing. They’re providing a beautiful timepiece, Swiss made which some would even say is under-priced for the kind of quality they’re providing. The quality of the manufacturing, a lot of their mechanisms are being made inhouse – it’s a brand punching well above its weight.”

John Green adds, “As a fourth- and fifth-generation company, we always have to look to tomorrow – we have to say, ‘What’s new? What makes sense?’ We can’t just rest upon the laurels of yesterday.”

The status of Frederique Constant as a true manufacture, is of enormous importance to Lux Bond & Green’s partnership. The brand has created, thus far, no fewer than 33 of its own movements. The most recently introduced – at this year’s Watches & Wonders, in Geneva – are new versions of the Classic Date Manufacture, and the Classic Moonphase Date Manufacture. The new movements feature an increased power reserve (from 38 to 72 hours) along with a decreased diameter overall for the watches, which are now 40mm instead of the previous 42mm.

“From a world trending toward larger watches, I think we’re starting to trend downwards again,” explains Charlie. “And the power reserve almost doubling, that says that just because something already works, doesn’t mean it can’t be better – you have to keep innovating and moving forward. 40mm is really a size right now, that’s almost universal.”

John says that the conversation with customers about Frederique Constant can be very different, depending on their previous familiarity with the brand. “If someone asks for the brand by name,” he says, “we know we can go right to the top of the value chain… clients that don’t know the brand, we need to talk about the company, the history, and start at the beginning.”

Charlie and John, each have their favorites.

For Charlie, “It’s just the classic automatic in rose gold, with the silver dial I think it’s a perfect classic dress watch, especially if you’re just starting out. I also really like the Carrée collecton. And John remarks, “For me, it’d be a Highlife, because I like perpetual calendar watches.”

“Watches are a way to wear your memories and emotions,” says Charlie. “We need culture, we need memories, and we need beauty in our lives.”

A WORLD OF WINTER FESTIVALS

We travel for pleasure, for enrichment, to open the world up to ourselves—and to understand others more deeply. As Mark Twain once wrote, “Travel is fatal to prejudice, bigotry and narrow-mindedness.” And the turning of the year, while decidedly not the balmiest travel time for those of us in the Northern Hemisphere, affords an excellent opportunity to see how cultures celebrate themselves, their deities and their destiny. Examples of joyous winter festivities abound, of course, but seven suffice to make the planetary point.

For all their exotic variety, year-end holidays around the globe have this in common: a sense of joy and uplift that rewards the ambitious traveler. By

INDIA: DIWALI

The Hindi festival of lights is celebrated in late fall across India, though it has varying significance depending on region—different places dedicate the holiday to different Hindu gods, figures and religious epics. At its core, though, the sentiment of the celebration remains the same: to celebrate the victory of light over darkness and good over evil. Taking place over five days in the Hindu month of Kartik (that’s mid-October to mid-November on the Western calendar), it beckons families to begin their celebrations by cleaning their homes and then decorating them with clay oil lamps and intricate rangoli, mesmerizing designs created from colored powders or sand. The main day of the festival is the third, which includes feasts and fireworks. Every year, thousands of people gather at Ayodhya’s Sarayu River in the state of Uttar Pradesh for a breathtaking combination of lamp lighting and fireworks, which illuminate the night and make the crowd a living display of art and religious devotion. Families and friends exchange gifts and meals throughout the five-day festival.

SCOTLAND: HOGMANAY

If you’ve ever lifted your voice to sing a version of “Auld Lang Syne” on New Year’s, you’ve brushed shoulders with the Scottish tradition of Hogmanay. Named with the Scots word for the last day of the old year, Hogmanay is celebrated on New Year’s Eve and New Year’s Day. Local customs to celebrate this tradition run the gamut. Individuals take part in the practice of “first-footing,” in which the first person to step over the threshold of a friend’s or neighbor’s home on Jan. 1 presents a symbolic gift (often whiskey or shortbread) for luck in the new year and is given a gift in return. On a larger scale, destinations such as Stonehaven in Aberdeenshire honor Hogmanay by hosting an annual fire ball swinging, which is exactly as can’t-miss as it sounds. Locals create 2-foot balls of chicken wire and newspaper, attach them to 3-foot poles and set them alight. As the Town House bell chimes midnight, a pipe band leads a parade of people and swinging fire balls to the harbor to send the old year speeding away and herald the new.

UNITED STATES OF AMERICA: KWANZAA

Though originally created by U.S. activist Maulana Karenga as a celebration of specifically African American culture, this holiday has become a tradition for the Pan-African diaspora throughout the world. (Jamaica, France and Brazil join in celebrating it.) Taking inspiration from harvest festival traditions in various parts of the West, East and Southeast, Kwanzaa brings together families and communities from Dec. 26 until Jan. 1 to celebrate African heritage, unity and culture. The word come from the Swahili phrase “matunda ya kwanza,” meaning “first fruits.” Kwanzaa celebrations often include decorating with traditional African art and cloth, wearing traditional African clothes like kaftans and such activities as drumming, storytelling and candle lighting. On Dec. 31, Kwanzaa celebrations include a cumulative celebration called Karamu Ya Imani, or “Feast of Faith,” which often features a large meal and an artistic performance. One of the most famous of these artistic performances happens annually at the John F. Kennedy Center for the Performing Arts in Washington, D.C., where the Spirit of Kwanzaa celebration brings the best of Black American dance, music and poetry to a national stage.

SWITZERLAND: THREE KINGS DAY

Also known as Epiphany, Three Kings Day on Jan. 6 celebrates the arrival of the three wise men, or kings, to give the infant Jesus their gifts (gold, frankincense and myrrh). In Switzerland it is a beloved public holiday. You may receive a visit from a group of “Sternsinger,” literally translated as star singers, a costumed choir of three or four children who will sing traditional carols and offer a blessing for your door. One child will be holding a star on a pole, usually a homemade craft on a broomstick. Families also partake in the famous Three King’s Cake, called dreikönigskuchen in German-speaking regions and galette des rois in French ones, which is a sweet, golden bread that hides a surprise inside. Baked into it is a small figure of a king (or sometimes a coin or other trinket). The person who receives the slice with the prize becomes king or queen for the day, is adorned with a cardboard crown and is said to have a year’s worth of good luck ahead.

MEXICO: FEAST OF OUR LADY OF GUADALUPE

The celebration of the Virgin of Guadalupe is essential to modern Mexican life and culture, bringing together people of all races and creeds in one national identity. Its backstory holds that in 1531, Mary appeared before a Mexican peasant boy named Juan Diego and bade him build a church on the Hill of Tepeyac (later to became part of Villa de Guadalupe, a suburb of Mexico City). Since then, she has become one of the nation’s most powerful cultural symbols. Her feast day falls on Dec. 12, and it’s a celebration all over the country, as people spill from parishes for parades and dancing in the streets. But it’s at the Basilica of Our Lady of Guadalupe in Mexico City, said to be visited by nearly 20 million pilgrims every year, where the largest celebrations take place. The streets are closed to vehicles for a week leading up to the feast day as pilgrims and visitors stream to the site. Many of them camp in streets and parks. The festival atmosphere persists as dancers perform in the streets and Mass prayers and blessings are held daily.

JAPAN: BODHI DAY

Celebrated by Buddhists, Bodhi Day commemorates Siddhartha Gautama, the Buddha, gaining enlightenment while sitting under a sacred fig tree. Tradition teaches that, after forsaking years of ascetic practices, Siddhartha sat beneath the tree and resolved to meditate until he discovered the root of suffering and how to liberate himself from it—which, of course, he did. Japan celebrates this holiday Dec. 8, and observers often spend the day in prayer, or reading scriptures (called “sutras” in Buddhism). Families may hang lights and beads on a sacred fig tree, often with reflective ornaments that represent the “three jewels” of the religion: Buddha (the teacher), dharma (the teachings) and sangha (the community). Families also may enjoy tree- and leaf-shaped cookies. In addition, many people make trips to Buddhist shrines in honor of the holiday. If you join in this observance, prepare for a real treat—Japanese pagoda shrines and Buddhist temples are architectural wonders, and they’re steeped in the region’s history.

ISRAEL: HANUKKAH

Famously known as the Festival of Lights, Hanukkah celebrates the recovery of Jerusalem during the Maccabean Revolt in 167 BCE and the miracle of the cruse of oil, wherein one night’s supply of oil somehow lasted for eight nights, enough time to rededicate the reclaimed temple. To honor that miracle, the celebration of Hanukkah also lasts eight days and nights. It takes place on the 25th day of Kislev, according to the Hebrew calendar—usually in November or December. Though the holiday is widely celebrated in America, it also shines brightly in Israel. Some traditions remain familiar (spinning the dreidel is still a favorite activity), while others diverge. Fried food still holds the spotlight for cuisine (in honor of the oil in the temple), but Israeli celebrations prefer sufganiyah, a type of donut, over latkes. Dusted in sugar and filled with ingredients that can range from jam to cream to marshmallows, these treats will catch the eye of anyone with a sweet tooth. Menorahs often are placed outside of homes, protected from the wind with special boxes. The streets are illuminated with candlelight radiating from outside nearly every house (befitting the Festival of Lights). Over the eight-day celebration, you also can stop by to catch an elaborately staged play or musical performed in Hebrew, another Israeli Hanukkah tradition.

Where does the story begin? Natural diamond engagement rings have long been an integral part of wedding traditions. Yet little is known about the origin story of the jewel. Some believe the ritual surrounding a diamond engagement ring took hold in modern times. Specifically, there is a misconception that it was a niche practice until 1947 when the De Beers “A Diamond Is Forever” advertising campaign was launched to promote it. In fact, diamond engagement rings were widespread by the turn of the 20th century. Beginning in 1890, Tiffany & Co. was a pioneer among all the jewelers selling diamond engagement rings. The New York establishment made it easy to shop for diamond engagement rings through mail-order catalogs including paper ring sizers that were sent to homes across America. By the 1920s, in Hollywood’s silent movie era, it’s clear diamond engagement rings were an easily understood narrative device used to advance the plot; they appeared in countless films. But diamond engagement rings go back much further in time. Once called betrothal rings, they have been steadily worn since the 15th century.

While it is generally believed that the first diamond engagement ring was the one given by Archduke Maximilian to Mary of Burgundy in 1477, based on a painting of the bride wearing the ring, it was not the first. There’s evidence that suggests the concept was already underway. One of the earliest diamond engagement rings linked to a specific twosome was the jewel Costanzo Sforza, Lord of Pesaro, presented to Camilla D’Aragona of Naples in May 1475. Their four-day-long wedding near the Adriatic Sea included a poem read during the nuptials that said, “Two wills, two hearts, two passions are bonded in one marriage by a diamond.”

The History of Diamond Engagement Rings: A True Romance, a book by Marion Fasel that will be published in December 2024, traces the evolution of the style and the details that have remained a constant. From the beginning, the vast majority of diamond engagement rings focus on a central gem. The timeline of rings chronicles diamond-cutting techniques and trends through the ages. Designs framing the central diamond is work done in millimeters that’s often overlooked because of its miniature scale. Some ring styles come and go relatively quickly, while others have been around so long they seem eternal. There are also custom creations that are absolutely singular.

The diamond engagement rings of high-profile lovers have played a major role in the story from the beginning. Designs worn by women ranging from Eleanor Roosevelt to Grace Kelly, Elizabeth Barrett Browning to Elizabeth Taylor, Beyoncé, Jennifer Lopez, Victoria Beckham and so many more contributed to the narrative. Many of their diamond engagement rings inspired others at the time they were received and some have been looked back at by generations for ideas.

Perhaps surprisingly, a diamond engagement ring doesn’t really have an official role in a couple’s union; that’s the job of the wedding band presented during the ceremony along with the proclamation, “With this ring, I thee wed.” The engagement ring is a thing of beauty, often paired with the proposal, “Will you marry me?” Sometimes it is chosen later. Whenever it comes, it represents a promise and a plan, literal hopes and dreams for a better future together as a couple.

A tendency to subtly or flamboyantly show off a diamond engagement ring, particularly among the newly affianced, is one detail surrounding the jewel that has never changed. A 1543 portrait of the Duchess of Florence who wore her table-cut diamond ring on her right forefinger, a 1931 photograph of Joan Crawford, and a series of pictures of Lady Gaga at the 2024 Venice International Film Festival document a few ways a diamond engagement ring has been publicly displayed through the ages. While each of the love stories behind these images and every romance is clearly unique, the constant of a diamond engagement ring symbolizing a union is proven to be one of the, if not the, most enduring traditions in jewelry.

A top sommelier picks varietals to match a trio of courses, assuring a dinner that will dazzle.

No law says you can’t get away with serving just one great wine at your next get-together. But maybe it’s your first for a while and you’d like to step it up. To make the evening truly memorable, you can pair each course of your meal with its own bottle, one chosen to complement its individual flavors. What might such a dinner be like? We asked Chris Cree, managing partner of New Jersey’s Cree Wine Company in Hampton, to be our sipping guide. Cree—one of only 56 Americans to have passed the MW Exam offered by the London-based Institute of Masters of Wine— picked some underappreciated and unexpected varietals to enjoy with each phase of the meal, from appetizer to entrée to dessert:

Charcuterie Appetizer

When assembling a plate of meat, cheese, fruit and veggies for a crowd, our expert prefers “crisp, clean unoaked whites or lighter reds with moderate tannin or acidity.” He says Italian whites seem to be the most popular companion for charcuterie plates at his store, but Cree prefers Spanish reds for this app pairing, specifically those from the Bierzo region. The one he recommends below “is an incredible wine from rock-star winemaker Raúl Pérez.” He describes the taste as “lovely, crunchy red and dark fruit notes, bright acidity, juicy mid-palate and softish tannins.” —Bottle to try: Bodegas y Viñedos Raúl Pérez, Bierzo Tinto Ultreia St. Jacques, 2019, $19.

Steak Entrée

Red is the way to go when enjoying a big, juicy steak, says Cree, because the tannins in red wine interact beautifully with the fatty flavors in the meat. For an herbed steak, “you can’t go wrong with a big Napa Cabernet or Bordeaux. If you’re firing up the barbecue,” says Cree, “try Zinfandel. Its brambly, plush dark and red fruits, nice acidity, soft tannins and moderate oak work well with the smoky-sweet flavor of BBQ.”

Chocolate Dessert

When eating something sweet such as milk chocolate, Cree prefers “sweet and lively” bottles with lots of berry fruit notes and bright acidity that contrast with the creamy chocolate taste. He loves dark chocolate with a Port, which has a sweet, complex flavor profile, and leans toward a dry Chenin Blanc, made with the ripest of white grapes, for white chocolate treats. His selection below for the latter is “sweetly concentrated” with “tropical fruit notes, lemon zest and grilled pineapple—underpinned by bright acidity.”

RICOTTA-FILLED

RAVIOLI

From the kitchen of Bricco, savor Chef Billy Grant's signature homemade Ricotta-Filled Ravioli with an elevated Marinara sauce.

INGREDIENTS

BASIC PASTA DOUGH

3 ½ to 4 cups all-purpose flour

4 extra large eggs

½ tsp. extra-virgin olive oil

1 tsp. salt

CHEESE FILLING

1 lb. of ricotta cheese (hang in cheese cloth overnight to drain excess liquid)

1 cup freshly grated Parmigiano Reggiano

1 cup freshly grated pecorino Romano

1 egg salt & pepper to taste

1 Tbs. fresh parsley

MARINARA SAUCE

2 qts. of your favorite smooth tomato sauce (I prefer Rao's.)

1 cup extra-virgin olive oil

2 cups sliced and diced pancetta

DIRECTIONS

BASIC PASTA DOUGH

1. Mound 3½ cups of the flour in the center of a large wooden cutting board. Make a well in the middle of the flour and add the eggs and olive oil. Using a fork, beat together the eggs and oil and begin to incorporate the flour, starting with the inner rim of the well. As you expand the well, keep pushing the flour up from the base of the mound to retain the well shape.

2. The dough will come together when half of the flour is incorporated. At this point, start kneading the dough with both hands, using the palms of your hands.

3. Once there is a cohesive mass, remove the dough from the board and scrape up and discard any leftover bits. Lightly re-flour the board and continue kneading for six more minutes. The dough should be elastic and a little sticky.

4. Wrap the dough in plastic and allow it to rest for 30 minutes at room temperature.

CHEESE FILLING

1. Put all ingredients into a large mixing bowl.

2. Using a rubber spatula, mix together until they become a smooth, creamy texture. Taste and adjust seasoning to your liking.

MARINARA SAUCE

1. In a large saucepan, add extra-virgin olive oil and pancetta. Render until crispy.

2. Add tomato sauce and simmer for 20 minutes.

RAVIOLI

1. Cut the dough into four equal pieces and cover with plastic wrap. Work with one piece at a time.

2. Flatten dough into a 5-by-4-inch oval, about a half an inch thick. Dust lightly with flour. Roll the dough through a hand crank pasta machine at the widest setting.

3. Fold the dough into thirds (like a letter) then run it through the machine at the same setting. Repeat the rolling and folding once.

4. Roll the dough through the machine, narrowing the settings, two times per setting until the dough is thin enough to see the outline of your hand through it.

5. Lay dough out on your work surface and lightly cover the dough in flour. Using the ravioli mold, cut your sheets with an inch to spare on the outside of the mold.

6. Lightly flour the mold, lay one pasta sheet over the mold. Gently press pasta dough to fit the mold. Using a small scoop or spoon, fill the well with filling. Lightly brush the rims of the naked pasta dough with water. Lay another sheet over the top of the mold. Use a rolling pin to roll out the ravioli from the mold (you have to use a little bit of pressure while rolling).

7. Remove excess pasta dough from the mold, and then flip the mold over onto a floured surface to release the ravioli.

8. In a large pot of salted boiling water, cook the ravioli over high heat for 3 to 5 minutes until they are al dente. Using a slotted spoon (spider), move the ravioli over to the serving platter, making sure to leave all water from the pot behind.

9. Coat the ravioli with sauce, cover them with a generous amount of Parmesan cheese and serve immediately.

In The Spotlight With Temple St. Clair

Temple St. Clair’s design process is a harmonious blend of storytelling and meticulous craftsmanship, beginning with inspiration drawn from her travels, history, and the natural world.

Temple St. Clair launched her jewelry brand in 1986 in Florence, Italy, where she began working with the revered Florentine goldsmiths' guild. Known for her unique storytelling through design, Temple’s work is a beautiful marriage of ancient craftsmanship and contemporary vision. Her iconic pieces—Rock Crystal Amulets, signature triple granulation, and extraordinary gemstone combinations—are celebrated for their intricate beauty and innovative style.

In 2017, St. Clair became the third American—and the only American woman—jewelry designer to have her work included in the permanent collection of the Louvre’s Museum of Decorative Arts in Paris. BAKING WITH NONNA

Thanks to family traditions in the kitchen, well-remembered treats embody more than one kind of sweetness.

How food can be freighted with memory and emotion! It’s necessary nourishment for our bodies, yes, but it can also foster a bond between family members—and a link from generation to generation. And it has the power to create moments when the delight on our taste buds combines with deeper, richer and more lasting delights.

Author Paola Bacchia was born and raised in Melbourne, Australia, but grew up making memories in an Italian kitchen. It was there that her mother, who’d emigrated from northeast Italy, made wonderful, heartwarming dinners and desserts for family and friends. In her latest book, At Nonna’s Table: One Italian Family’s Recipes, Shared With Love, Bacchia presents the dishes that Mom made, the family recipes and those inspired by her. On the pages that follow are three bites that will satisfy every sweet tooth, as they have for generations.

cinnamon amaretti

INGREDIENTS:

n 2 large egg whites

n pinch of fine sea salt

n 7 oz. almond flour

n 3/4 cup caster (superfine) sugar

n 1 tsp. ground

cinnamon

n 1/2 tsp. pure vanilla extract

n flaked, whole or blanched almonds, for decorating

DIRECTIONS:

Preheat the oven to 320°F fan-forced. Line a large baking tray with baking paper.

Using a hand whisk, beat the egg whites in a bowl with the salt until they just turn white and are foaming.

Place the almond flour, sugar and cinnamon in a large bowl and whisk to combine. Carefully fold through the vanilla extract and beaten egg whites.

Shape the dough into balls about the size of a large walnut. (If the dough is a bit too soft to roll, add a little more almond flour, or even some plain/all-purpose flour.)

Place the dough balls on the baking tray, spaced about 11/2 inches apart. Flatten the top slightly with your thumb and decorate with almonds.

Bake for 20–22 minutes, until lightly golden. Leave to cool on wire racks. The amaretti will keep in a sealed container in the pantry for up to 1 week, or can be frozen for at least 1 month.

MAKES 18 PIECES

buttery almond crescents

MAKES 25 PIECES

INGREDIENTS:

n 2 cups plain (all-purpose) flour, plus extra for dusting

n 51/2 oz. almond flour

n 31/2 oz. caster (superfine) sugar

n a good pinch of fine sea salt n 9 oz. butter, softened n 1 tsp. pure vanilla extract n icing (confectioners’) sugar, for dusting

DIRECTIONS:

Line two baking trays with baking paper.

Place the flour, almond flour, caster sugar and salt in a large wide bowl and give a good whisk to combine. Add the butter and vanilla and stir with a large spoon, then bring the dough together with your hands.

Break off 1 oz. chunks, about the size of a small apricot, and roll each one, on a lightly floured surface, into a 4-inch-long rope. If the dough is too soft to work with, place in the fridge for 15 minutes to firm up. Form each rope into a horseshoe shape that’s slightly fatter in the middle and place on the baking trays.

Place the baking trays in the fridge for 15–30 minutes for the crescents to firm up.

Meanwhile, preheat the oven to 320°F fan-forced. Transfer the baking trays to the oven and bake the crescents for 18–20 minutes, until lightly golden.

Remove from the oven and leave to cool on the trays for 5 minutes, then carefully lift off the crescents and place on a wire rack. While they are still warm, dust the crescents with icing sugar. Leave to cool to room temperature; they will firm up as they cool.The crescents will keep in a sealed container in the pantry for up to a week.

thin almond & lemon biscotti

MAKES 40-60 PIECES

INGREDIENTS:

n 9 oz. whole almonds, blanched

n 2 1/3 cups plain (all-purpose) flour, plus extra for dusting

n 11/2 tsp. baking powder

n 61/2 oz. sugar

n 1/4 tsp. fine sea salt

n 3 eggs

n zest of 1 lemon

n 2 tsp. pure vanilla extract

n 1 tsp. pure almond extract

DIRECTIONS:

Preheat the oven to 285°F fan-forced. Line a baking tray with baking paper.

Place the almonds, flour, baking powder, sugar and salt in a bowl and stir to combine.

Break the eggs into a jug. Add the lemon zest and extracts and whisk to combine. Make a well in the center of the flour mixture and pour in the egg. Stir with a spoon, and then with your hands, until well combined and homogeneous. The dough will be quite thick. Divide the dough into two even logs, about 7 inches long, using extra flour as needed to shape them. Place them on the baking tray, spacing them well apart. Bake for 35–40 minutes, until pale golden and cooked through.

Turn the oven off and leave the logs to cool completely on a wire rack. This may take an hour or more; you could even leave the second baking until the next day. When ready for the second baking, preheat the oven to 285°F fan-forced. Line several baking trays with baking paper. Using a large sharp knife, carefully cut the cooled logs into slices about 1/4 inch thick. Place the biscotti on the baking trays and bake for about 20 minutes, or until firm and golden; the baking time will depend on how thick you have sliced them. Leave to cool on wire racks; the biscotti will become firm as they cool. The biscotti will keep in a sealed container in the pantry for up to 1 week, or can be frozen for at least 1 month.

Go ahead and stop the show with a Versace LBD or Armani tux, but if you really want to be unforgettable, the secret lies in unlocking the olfactory magic of personalized fragrance.

Experts in aromatic self-expression know that scents make sense for the ability to immortalize the times of our lives as effectively as any snapshot—but in a special way that’s close to the emotional heart of things. Want that kiss to really linger? Want to keep that wedding-day vibe fresh? A carefully crafted fragrance—designed in notes just like a melody—has the power to revive memories with each encounter.

Drawing from more than 30 years’ experience, Sarah Horowitz-Thran of Sarah Horowitz Parfums in Westlake Village, Calif., explains, “When you create a fragrance and wear that fragrance into the world, the people who smell it will remember you by it. It becomes your signature. You’re creating memories for others as well as yourself.”

Nothing made for the masses reflects the inner you like a formula you have sculpted. Of course, you’ll work with perfumers, who can guide you through fragrance families such as floral, oriental, fresh and woody, then let you sample and savor corresponding notes from their fragrance organ. The result: a skin symphony with you among the composers.

• Know yourself. A custom scent is an expression of individuality. Horowitz-Thran suggests that clients reflect—and take notes on—their fragrance likes and dislikes before meeting the perfumer, and keep in mind that there can’t be too much info. Be mindful of favorite flowers and citrus or other fruits—whatever scent makes you happy, she says. “That helps the perfumer know where they’re starting and gives them a feel of the genre they may be working in.”

• Know your audience. Self-discovery includes contemplating where you’ll wear this custom creation, according to Claire Lewis, owner of Fragrance Shop New York, in Manhattan’s East Village for more than 30 years. As a rule of thumb, an office fragrance is lighter than the most popular request: a sexy date-night creation, which calls for heavier notes such as amber. One would expect a bridal fragrance to stand out from an everyday scent, Horowitz-Thran says, and a winter scent from a summer version.

• Let your personality shine. One’s personality and lifestyle also can influence the perfect formula, says Horowitz-Thran, and deep-dive questions help to reveal what makes each customer tick. “I ask them what makes them happy, and then I start choosing fragrances or materials based on their responses,” Horowitz-Thran explains. For a beach baby, for example, she’s likely to evoke the scent of the ocean with a salt note.

Lewis, in turn, envisions citrus or aquatic notes for an active or

sporting life. “People will pick things based on their memories of things, also their age,” she says. “The younger generation likes fruity, sweet, vanilla, pineapple and strawberry,” while older ones steer clear.

• Start clean. Just as an artist appreciates a blank canvas, the perfumer works best with skin that’s fresh and clean—free of lingering smells, says HorowitzThran. She recommends showering with unscented soap and skipping the body lotion and other aromas. “You want your skin as the canvas, and you don’t want any competing fragrances,” she says.

• Take your time. Your perfumer is often ready to invest an hour or more in creating your essence, so don’t be hurried. You will be asked to choose three notes that when balanced will form your unique scent. Each note—the top, middle and base—works best when they’re all layered together, as their endurance on the skin varies, Lewis explains. She describes the top note (perhaps citrus) as volatile, with a life of no more than 30 minutes; the mid note (often floral) as the “heart of the perfume,” enduring around three hours; and the base (possibly a musk) as the all-day foundation, which adds depth and warmth. Explaining why the process takes time, Horowitz-Thran says, “We sit in front of what’s called my fragrance organ and the notes—the materials—are set up on it like a piano.” There are literally hundreds of choices, from essential oils to highly concentrated absolutes; the goal is to narrow the field to about 20 materials and then do a blind smell test, explains Horowitz-Thran. When favorites are combined in just the right measure, a custom scent is born.

• Respect your chemistry. Each body has its own chemical makeup, so that what smells great on a friend may not do you justice. “The biggest mistake in creating a custom fragrance for yourself is to get the opinions of everyone else before yourself,” says Horowitz-Thran. She adds that skin is viewed as the final ingredient, because body chemistry determines how a fragrance smells on you.

• Don’t be a slave to fashion. Lewis has seen many women trying to duplicate a hot-selling perfume such as Baccarat Rouge, even thinking they have the “recipe” for it from social media. While she can draw similar notes, like amber and saffron, too many unknowns mean that no exact carbon copy is possible—and, in any case, that would “defeat the whole purpose” of a personalized scent. Part of making an unforgettable impression, these experts say, is one’s olfactory impact. It may take some searching to find your signature scent, but discovering it can be a delightful “eureka” experience. As Horowitz-Thran says: “When we land on the formula and I see the look in the client’s eyes when they smell it and say, Oh my God, that’s it! That’s the best moment.”
