PUSHING YOUR LIMITS WITH ALL THE IMAGES THAT crossed my desk when planning this month’s issue of Monmouth Health & Life, I had plenty of opportunity to consider what makes design distinctive. While I haven’t boiled it down to a single secret, one key seemed to be the way the best designers and architects treated the physical limits they faced as inspiration rather than constraint. If you think about it, the principle applies in every art: A rhyme scheme liberates a poet’s imagination, and a painter is empowered by the way a two-dimensional canvas draws foreground and background into intimate conversation. Creating an open floor plan using the existing footprint of a Lincroft home wasn’t easy at first for designer Sheila Rich. But she renovated the space by removing walls and raising sunken floors, creating rooms like a new kitchen that are both functioning and elegant. Read all about the project on page 32. A single guy might find a house suitable for his own needs, but changes typically ensue when he’s joined at the home with his new wife. That’s what happened when the owner of a 1980s Rumson contemporary got married. The newlyweds took the plunge—tearing down and rebuilding the entire home—but with interior designer Una O’Neill’s help, they ended up with a timeless design. Flip to page 38 for more about the home. So many changes have taken place—a new President, changes in estate taxation and so much more. On March 1st, 2017,the Dow Jones Industrial Average climbed above 21,000 for the first time1 and interest rates are continuing to rise. Bad news sells and continues to grab headlines. Time to tune out the noise and focus on what we can controlplanning and preparing for the long-term. New Jersey Repeals the Estate Tax but keeps the inheritance tax. As of January 1st, the New Jersey Estate tax exemption increased from $675,000 to $2million and will be eliminated as of January 1st, 2018.The federal estate tax exemption remains the same at $5.49 million per person.2

What does this mean to you? For married couples, a credit shelter trust may no longer be necessary to reduce estate taxes. Now is the time to talk to your estate planning attorney to review your overall estate plan and meet with a CERTIFIED FINANCIAL PLANNER™ professional to review existing life insurance policies, asset titling and beneficiary designations. Did you know if you are considered a Class C beneficiary, such as a brother or sister of a decedent, the New Jersey inheritance tax rate could be as high as 16%? Medicare is Mandatory For the 76 million baby boomers living in America, there are a few things to know about Medicare coverage: It is mandatory for those collecting Social Security, it will probably be your biggest expense in retirement, and less than 8% have planned for it.3 If you are still working and enrolled in a health savings account (HSA), once you enroll in Medicare, you can no longer contribute to an HSA—if you do, the penalties are steep.

SHINE BRIGHT For some, says T.S. Eliot, “April is the cruelest month.” Not for lighthouse enthusiasts. That’s because they know these sentinels of the sea will open their doors and invite guests in to admire their craftsmanship and the importance of their charge: guiding seafarers to safety. Monmouth County’s coast lays claim to three of these majestic beacons. The one in Sandy Hook, in fact, is the oldest working lighthouse in the country. The 1764 structure had a brief role in the Revolutionary War, and after a restoration in 2000 it was added to the Gateway National Recreation Area. The Sea Girt Lighthouse, in 1921, was equipped with a radio beacon, becoming the first to have such an installation in the country. Not to be outdone is the Navesink Twin Lights, the first American lighthouse to test a Fresnel lens and the site of a demonstration of the wireless telegraph in 1899. The Sandy Hook Lighthouse opens on April 1, while the Sea Girt Lighthouse opens on April 23. The Navesink site is now open Wednesday through Sunday until Memorial Day, when it will be open daily. National Soft Pretzel Month Few food scents rival chestnuts roasting on an open fire, but the aroma of a hot soft pretzel comes close. Perhaps the two are in a knotted tie! Of course, you’ll likely spot a vendor or two at a ballpark, carnival or fair. Most of those makers will even let you watch as the bakers flip, twist and tie the treats before they’re baked. Kids Should Bee Themselves

Count Basie Theatre Honors Paper Theatergoers will notice something new when they next visit the Count Basie Theatre, Red Bank’s landmark entertainment and arts-education venue. Honoring its longtime relationship with the Asbury Park Press, the theater has dedicated its main stage to the daily newspaper. The action is seen as the beginning of a new chapter for the venue, which a yearand-a-half ago launched a $20 million capital campaign to renovate and expand, with the goal of becoming the arts and education hub in the area. Theater officials say they are at the halfway point in that campaign, and that the newspaper is among its top contributors. At the recent dedication of The Asbury Park Press Stage, Basie president and CEO Adam Philipson said the venue’s campaign is “a large vision” that will mean “more shows, more of an economic impact. It means more children that we can reach, more educational outreach we can have.” The venue opened in 1926 and has hosted headlining acts from Tony Bennett to Norah Jones, as well as film screenings and theater and dance productions.

Growing up is hard to do. But Maura Bradley thinks she’s found a way to make it a little easier. Bradley recently opened a yoga studio for children right on Main Street in Manasquan. Bee You Yoga invites young people from age 6 months through the teen years to practice their downward dogs, sun salutes and other poses. With extensive yoga-teaching credentials for children and adults, Bradley says she was moved to focus on kids after participating in a camp for children who were affected by cancer. “That camp and those kids completely changed my perspective,” she says. With a little help from a bumblebee named Charlie, the studio’s mascot, Bradley is sharing her vision for a less-stressed childhood both at Bee You Yoga and at schools across Monmouth County. She’s also paying it forward by holding monthly classes to raise money for designated charities. Last month, proceeds benefited You Cannot Be Replaced; in April, the beneficiary is the Ashley Lauren Foundation. Rich Malysa ...started his career working in his uncle’s salon before traveling abroad and attending the Sassoon Academy in London. After returning home, Rich missed the big city atmosphere and decided to move to New York where he joined the team at Louis Licari in midtown Manhattan. Today, Rich uses the same experiences and services learned from London and New York on the clients at Yanni Erbeli in Red Bank. Q

What was different about Louis Licari’s Salon in New York?

A: I learned to approach each client’s hair in different ways. You can’t just execute the same for each person. This gave me the foundation for the kind of stylist I am today. It truly was an art and it also helped me gain exposure not only to a large salon atmosphere, but different type of atmospheres like makeover shows, celebrity PR campaigns, print work and even traveling with major news anchors during elections. Q

When did you decide it was time for change?

A: I spent 10 years working with Louis Licari and had an established career, but felt I needed to broaden my skill set more. I left my time there to work for Orlando Pita in his salon downtown. I was able to be more creative by learning and using different techniques with different tools. This was more about details that you couldn’t go without noticing with the naked eye.

What made you choose Yanni Erbeli?

A: Leaving New York City and looking for the right place was not easy. I wanted to work in a salon that had the similar philosophy and focus to the salons I had worked in the past, but also allowed their stylists to focus on either the art of cutting or the art of color. That is what drew me to Yanni Erbeli. It’s important when a client sits in my chair, the conversation is about them. I’m not the type of stylist that will try to push a product or a service just to get the profit. You can expect me to take my time and ensure that it is done right. Q

What are the current trends these days?

A: Well, one thing that is on trend are hair extensions. As a stylist I am always thinking of creative ways to transform someone’s hair and one of those ways is through extensions. Hair extensions are in high demand because people are finally well informed of the benefits they have. It brings volume and fullness without any product and doesn't effect the health of your hair. I've been working to inform my clients to look past the common misconceptions hair extensions have, such as they are unhealthy to the persons natural hair, very expensive, and that extensions never look natural. But by doing minimal extensions, we could easily enhance the fullness of their own natural hair, which also makes the extension process more affordable. We cut the extension to approximately the same length as the clients natural hair. Some believed extensions were only used to create long hair, and although that is true, it's also beneficial for everyday volume that makes the hair look youthful and fresh. Finally, educating my clients on how to properly maintain there extensions will ensure keeping the natural hairs intact.

“It was clear that in the short time between our initial encounter and the time of surgery the cancer had already progressed significantly; with what I was seeing in the operating room, I knew immediately there would be a higher chance of needing chemotherapy and radiation,” says Dr. Kohli. “We knew with the breast reconstruction initially planned that issues could arise, potentially interfering with the important post-operative treatments Jean required. Therefore, a collaborative decision was made intraoperatively with the plastic surgeon to hold off on breast reconstruction. We discussed Jean’s priorities—it was an obvious agreement that cancer treatments took precedence over all else.” Dr. Kohli notes that as a comprehensive breast center, the Jaqueline M. Wilentz Comprehensive Breast Center at Monmouth Medical Center offers advanced breast surgery—from breast conservation to mastectomy with reconstruction—by a panel of board-certified plastic and reconstructive surgeons tailored to each patient’s specific needs and ranges. Jean says that although he didn’t perform the reconstructive surgery after all, the surgeon still called her at home to make sure she was doing well after surgery and to talk about the potential for reconstruction down the road.

Her Dream Team Throughout this process, Jean has come to know the team of doctors like family. She describes Dr. Kohli as her BFF—breast friend forever. “Dr. Kohli and Erin Dooley, the oncology breast nurse navigator, were wonderful, caring and helpful to my family and me. I’m unbelievably impressed with the whole Wilentz Center, the level of care, and, in particular, Dr. Kohli and Erin—my guardian angels,” says Jean, who also points to the unwavering support of her sister, two sons and many friends, along with her church, St. John’s of Little Silver, which she describes as her “cheering section” for the “Jean Dream Team.” Knowing that her team’s intentions are to have her beat cancer without residual frailty or disability, Jean continued her fight with a tailor-made treatment plan with medical oncology and radiation oncology. Jean also gives high praises to Monmouth Medical Center radiation oncologist Sang Sim, M.D., and her medical oncologist Susan Greenberg, M.D., who worked with her on the plan for her postoperative care. “Our goal was to allow Jean to continue to enjoy life and travel the world as she had previously planned,” says Dr. Kohli.

Jean is currently cancer-free but will be monitored closely by her doctors. Now, Jean’s travel plans are coming to fruition. In celebration of her good health, Jean and her sister have booked a trip to Paris and London to mark the one-year anniversary of her surgery.

ACCORDING TO THE CENTERS FOR Disease Control, approximately 71,500 women in the U.S. are diagnosed with gynecologic cancer each year and nearly 26,500 women die from it. Monmouth Medical Center, a leader in advanced gynecological robotic surgery, is committed to educating women that awareness and vigilance are keys to identifying cancer early. Gynecologic malignancies comprise cancers of the female reproductive organs, such as the uterus, ovaries, cervix, vagina or vulva. At times, patients are unaware of the symptoms related to these conditions and delay seeing a doctor. “In cases of ovarian cancer, for example, patients may have vague symptoms that they may attribute to the gastrointestinal tract, such as bloating, change in bowel habits, intermittent nausea and early satiety, so they may not seek care early on,” says Nonna Kolomeyevskaya, M.D., gynecologic oncologist with Monmouth

Medical Center and Barnabas Health Medical Group. “By the time they come to us, the disease is at a more advanced stage. When women are more aware of changes in their bodies and the symptoms associated with different types of cancers, they seek medical guidance sooner. Diagnosis at an earlier stage correlates with better prognosis.”

Signs and Symptoms Vary Not all gynecologic cancers have the same symptoms, and each individual may experience different ones. Common gynecologic cancer symptoms include: abnormal vaginal bleeding or discharge; pelvic pain or pressure; feeling full too quickly or difficulty eating; bloating and nausea; increase in abdominal girth; changes in bowel movements; abdominal or lower back pain; itching, burning or pain in the vulva; appearance of new lesions or pigmentation on the vulva.

While ovarian cancer—known as a silent killer because of the difficulty detecting it—is frequently diagnosed after it has spread, women with certain types of uterine cancer are often diagnosed earlier. “The most common and typically the only symptom of uterine cancer or pre-cancer is postmenopausal bleeding or spotting,” says Dr. Kolomeyevskaya. “This frequently brings women to their gynecologist for an initial evaluation.”

One Woman’s Fight

Such was the case with Loretta Schuck. When the 77-year-old Manchester resident noticed a small spot of blood after urinating, she immediately contacted her gynecologist. “I knew something was up, and that I needed to have it taken care of,” she says. Loretta acted promptly, quickly scheduling an appointment with her gynecologist. After a sonogram and biopsy revealed the cause of the bleeding was cancer, likely uterine cancer, she enlisted the help of Dr. Kolomeyevskaya. Based on Loretta’s test results, Dr. Kolomeyevskaya recommended Loretta undergo a total hysterectomy with removal of ovaries and fallopian tubes along with removal of the lymph nodes. Dr. Kolomeyevskaya performed Loretta’s surgery at Monmouth Medical Center a short time later. Using minimally invasive robotic technology, Dr. Kolomeyevskaya performed surgery through small cosmetic incisions across Loretta’s abdomen—resulting in faster recovery, minimal abdominal discomfort, essentially no blood loss, short overnight hospitalization and an overall quick return to normal daily activities. “In the past, these procedures were all done via open surgery with a big vertical midline incision across the abdomen resulting in a longer hospital stay, longer recovery, more pain and more time required before returning to normal functioning,” says Dr. Kolomeyevskaya. “This approach expedited Loretta’s recovery, which in turn allowed her to move ahead with other treatments without delays.” Loretta was discharged from Monmouth Medical Center the following day

and spent the next few weeks at her daughter’s home recovering. “The healing was phenomenal,” she says. “All along I felt very good. I was never in agony and stopped the pain medication within days—all of which I attribute to Dr. Kolomeyevskaya’s skill and the robotics.” Because the results of Loretta’s hysterectomy confirmed the diagnosis of Stage IA serous uterine cancer, the chosen course of treatment was chemotherapy followed by radiation and completion of chemotherapy. Loretta underwent three cycles of chemotherapy over the course of three months. Following a short break, she was then treated by high-dose rate brachytherapy to destroy the cancer cells, while sparing her normal, healthy tissue. Now, at the beginning of her second round of chemotherapy, Loretta credits her success to her quick decision to seek treatment, the tremendous support of her family and friends, the power of prayer and the high quality of care and compassion from those treating her. “Hearing you have cancer is not light news, but when you know you’ve gotten it early, that all the care you’re getting is state-of-the-art and delivered by gifted doctors and nurses, it’s not the nightmare it used to be,” she says.

How to Protect Yourself “Women should seek prompt medical care if they develop any new symptoms, and know their family medical history,” says Dr. Kolomeyevskaya. “Those with close family members who have been diagnosed with colon, breast, uterine or ovarian cancers, especially affecting several generations or diagnosed at a younger age, may benefit from genetic counseling. Regular pelvic exams, even when a Pap test is not indicated, can help with diagnosis. Many conditions, including certain types of gynecologic cancers, can be picked up on the exam. Most importantly, always be aware of your body. Any changes should be a sign to see your doctor,” she emphasizes.

THE ASBURY PARK MUSIC & FILM FESTIVAL IS A FUND-RAISER THAT SUPPORTS MUSIC programs for underserved children in Asbury Park. Funding provides music education and instruments to one of the most challenged youth communities in the country. The festival, now in its third year, is sponsored by founding partner RWJ Barnabas Health and Monmouth Medical Center (the actual birthplace of Bruce Springsteen!), and seeks to celebrate Asbury Park’s fabled history as a music destination, as well as explore the role of music in film. On Friday, April 21, pedal steel guitarist Robert Randolph will play The Stone Pony with his Family Band. “I can’t wait to get back to The Stone Pony, where I played some memorable shows for incredible crowds throughout my career,” says Randolph. “As a lifelong Jerseyan, I am honored to be a part of this year’s festival. We plan on blowing the roof off the joint in April with a mix of soul and funk music to make you feel good.” On Saturday, April 22, Me First and the Gimme Gimmes, a punk rock group from San Francisco, will grace the same stage. And then on Sunday, April 23, Preservation Hall Jazz Band will close out the weekend with a New Orleans-style jazz performance at The Paramount Theatre. WHEN SHEILA RICH TOOK ON THE COMPLETE REDESIGN OF THE HOME OF A FAMILY OF FIVE IN Lincroft, she was faced with working within the confines of an existing footprint while meeting the needs of a growing family—three children under the age of 10. And with a gourmet cook also in the fold, those considerations were particularly important when it came to the kitchen, which Rich said was “outdated and inefficient.” “They wanted it to be a highly functioning workhorse, elegant and welcoming to guests,” says Rich, of Sheila Rich Interiors in Monmouth Beach. Standing in her way, first and foremost, was the wall of an adjoining family room and that room’s sunken floor. So Rich removed it and raised the floor to create one room measuring 40 feet by 14 feet. Then, she added three feet to the kitchen by “pushing the family room down” and adding an alcove to tuck in the sofa. The rooms are united by stained, dark-walnut flooring, crown molding, window trim, baseboard molding and Benjamin Moore’s Linen White on the walls. “It almost looks like it was always that way,” Rich said of the now-open space. “The areas are defined by furniture, not walls.” Although the owners favored traditional elements in design, Rich said she didn’t feel traditional was the way to go for such a young family. Instead, she combined traditional and contemporary elements to achieve what she calls a “transitional motif.” Nods to traditional design include the crown molding and millwork, the carved corbels on the island and cooktop hood, and the cooktop cabinet, sink and island footings, which make the pieces appear more furniture-like. Contemporary touches, meanwhile, include the island’s built-in Sharp microwave drawer, a Wolf Sub-Zero six-burner cooktop with two deep drawers beneath it; a Viking double-door oven and standard oven, and a 42-inch, double-door Sub-Zero refrigerator with freezer drawer concealed behind ivory wood panels. Rich carried the hushed palette of these rooms into an adjoining mudroom and formal powder room, where even the vanity looks like a piece of furniture. With a little adjusting, Rich was able to add a door to a laundry room to close it off from the mudroom and then add a built-in to serve as a catch-all for coats, purses and footwear. In the powder room, the walls were covered in a delicate-looking fabric that’s really “as strong as kryptonite,” which combined with 24-inch-by-24-inch patterned tiles and a brushed nickel chandelier with crystals. “It gives it a very elegant look that matches the rest of the house.”

In addition to reconfiguring the kitchen and family room, Rich enhanced an adjoining mudroom and powder room. The mudroom cabinetry is painted the same gray as the vanity in the powder room, which is the only restroom on the first level of the five-bedroom, center-hall Colonial. â&#x20AC;&#x153;We wanted the petite room to have a big impact,â&#x20AC;? she says. She swathed the walls in gray and beige tweed and laid 24-inch-by-24-inch patterned porcelain on the floor. In the family room, right, a swivel rocker and a matching brown-leather and dark-walnut ottoman (with casters for easy maneuvering) invite guests to sit and stay a while.

WALKING INTO THIS STATELY HOME FEELS AS THOUGH YOU are entering an English manor house, not a newer home on the Navesink River in Rumson. But, in fact, you are in Monmouth County, and this home was built in 2000, on the foundation of the previous 1980s contemporary that once stood in its place. The owner bought the original house as a bachelor, and once he got married, the old house didn’t suit the newlyweds. However, because the site was so spectacular, facing both the river and the ocean beyond, they decided to demolish all but the foundation, dining room and spiral staircase and build a new house that was larger and more comfortable. To decorate the seven-bedroom home, the homeowners chose Una O’Neill, who runs her eponymous Glen Rock-based interior

design company. “They wanted something very traditional,” she says. “They love classic things. They wanted the house to be good looking 20 to 30 years from when they put everything in. It’s a timeless design, not the very pared down look that so many houses being done now have.” The home is decorated with hand-woven rugs, antiques, luxe fabrics and art—lots of art. “The homeowners had such a vast collection that we bought next to nothing,” says O’Neill. The homeowner’s father was a collector, so they inherited many pieces, and the homeowners collect as well. Walls are filled with paintings and tapestries, and statues and busts can be found throughout the home, enhancing the traditional look of the house. Red, gold and green color the furnishings, often picking up

colors from the Oriental rugs that can be found throughout the home. Decorative moldings and faux finishes were also used liberally, especially on ceilings, like the one in the dining room, which is part of the original home and lower than the ceilings in the rest of the house. “It has darker antiquing along the outside and goes to a lighter tone as it comes toward the center to give the illusion of height,” says O’Neill. “It also glimmers with a shimmery finish.” The home took two years to decorate, in large part because the homeowner enjoyed shopping with the decorator for furnishings, often visiting antique stores in New York City and Bergen County, where O’Neill is based, and closer to home in Red Bank, Long Branch and Rumson. Both designer and homeowners wanted something interesting to behold in every corner of the house. Take, for example, the coffee table in the foyer. It’s a solid brass sculpture of musical instruments that the homeowner turned into a table by adding a glass top. “The basic design is quieter, but we added a lot of whimsy,” says O’Neill. It may have taken a while, but the project was a labor of love for everyone involved, and the homeowners couldn’t be more pleased with the way it turned out. “It’s classic and beautiful, which is exactly what they wanted,” says O’Neill. “She was able to put her touches on it, and we were able to use their extensive art collection, so it all came together perfectly.” The homeowners were so happy with O’Neill that they asked her to design their 15,000-square-foot, ocean-front Palm Beach estate. That home features the same traditional design of their New Jersey abode—just the way they like it.

CHERRY BARBECUE TURKEY SANDWICHES INGREDIENTS

n 1 2 mini sandwich rolls

TURKEY n 1 Tbs. olive oil n 2 cloves of garlic, chopped n 1 small shallot, diced n ½ cup ketchup n ¼ cup cherry preserves n ¼ cup brown sugar n 2 Tbs. apple cider vinegar n ¼ tsp. salt n ½ tsp. ancho chili powder n ½ tsp. cumin n 1 (20 oz.) package turkey tenderloins ONION RINGS 2 cups flour 4 tsp. salt 2 tsp. pepper 2 large onions, sliced into rings n 1½ cups vegetable oil n n n n

RANCH SAUCE n 2 Tbs. plain Greek yogurt n 4 Tbs. buttermilk n 1 Tbs. ranch seasoning mix

Yield: 12 sandwiches

DIRECTIONS To prepare the cherry barbecue sauce, combine olive oil, garlic and shallots in a small saucepan. Cook over medium-low heat until shallots begin to soften, about 2–3 minutes. Stir in ketchup, cherry preserves and remaining ingredients (through cumin). Reduce heat to low, and continue to stir. Cook until sauce begins to thicken (about 20 minutes). Place turkey in a slow cooker. Pour sauce over turkey. Cover and cook on high for 2 hours. Remove turkey and shred with two forks. Place shredded turkey back into slow cooker, turning to coat each piece with the cherry sauce. Keep warm. To prepare the onion rings, combine flour, salt and pepper in a large ziplock bag. Add onions and toss to coat each piece. Heat oil in a large, deep pan until oil reaches 365°F. Add onions and fry just until they are golden (3–4 minutes). Be sure to only add a few onion rings at a time, taking care not to crowd your pan. Remove onions and place on a baking sheet lined with a paper towel. Repeat with remaining onions. For the ranch sauce, combine yogurt, buttermilk and ranch seasoning in a bowl. Divide turkey and onions among each sandwich roll. Drizzle ranch sauce over onions. Serve.

INGREDIENTS CHICKEN SLIDERS n 2 lb. ground chicken n 2 tsp. dried basil n 1 tsp. dried oregano n ½ tsp. dried thyme n ½ tsp. garlic powder n 2 Tbs. fresh parsley n ¼ cup grated Parmesan cheese n ½ cup Italian-style bread crumbs n 12 slices fresh mozzarella cheese n 1 2 whole-wheat slider rolls

SAUCE 1 tsp. olive oil 2 cloves of garlic, minced ½ tsp. red pepper flakes ½ tsp. dried basil 14 oz. tomatoes 2 Tbs. tomato paste ¼ tsp. salt 2 Tbs. fresh basil, finely chopped

DIRECTIONS Preheat oven to 400°F. In a bowl, combine chicken, herbs, parsley, Parmesan cheese and breadcrumbs. Mix by hand until blended. Shape chicken mixture into 12 patties. Place on lightly greased baking sheet. Bake for 15 minutes, turning once. Top each slider with a mozzarella slice. Bake for an additional 3 minutes or until cheese is bubbly and melted. Meanwhile, heat a saucepan over medium heat. Heat oil, add garlic and cook for 1 minute. Stir in red pepper flakes and dried basil. Heat for an additional minute. Reduce heat and stir in crushed tomatoes and tomato paste. Add salt. Continue to heat on low until warm. When sliders are ready and cheese has melted, place one slider on each roll. Divide sauce among each slider. Sprinkle fresh basil over sliders just before serving.

MEATBALLS 1 tsp. olive oil ¼ cup chopped onions 1 clove of garlic, minced 2 slices of white bread, crusts removed n ¼ cup milk n 1 lb. lean ground beef n 1 tsp. dried oregano n ½ tsp. dried thyme n ½ tsp. salt n 1 egg, lightly beaten n n n n

TZATZIKI SAUCE n 4 Tbs. plain Greek yogurt n 1 Tbs. lemon juice n 2 Tbs. seedless cucumber,

DIRECTIONS Preheat oven to 425°F. Heat olive oil in a small skillet over medium heat. Add onions and garlic, and cook until onions have softened and become translucent (about 5 minutes). Remove from heat and let cool. Place bread in a small bowl and cover with milk. In a large bowl, combine ground beef, oregano, thyme and salt. Add egg. Squeeze milk from bread slices with your hand and add to ground beef mixture. Add cooled onions and garlic as well. Mix beef by hand until egg and bread have been incorporated. Using a small cookie scoop or your hands, shape meat mixture into 12 equal pieces. Try to get all 12 meatballs as uniform as possible. Place meatballs on a baking sheet coated with cooking spray. Bake for 18–22 minutes. Remove meatballs from oven and let cool. To prepare the sauce, combine all the ingredients in a bowl; stir. To assemble sliders, divide spinach equally among the bottoms of 12 slider buns, along with red onions and ½ tablespoon of feta. Place one meatball over feta cheese. Drizzle tzatziki sauce over each slider. Top each slider with one slice of tomato and a teaspoon of olives. Serve.

Chard your course MEET YOUR MATCH, KALE. THIS LEAFY UNDERDOG IS READY TO GO THE DISTANCE. IN THE ARENA OF SUPERFOODS, LEAFY greens are the crowd favorites, offering a low-calorie, low-fat source of vitamins, minerals and antioxidants. But with spinach and kale stealing the spotlight, one nutritional all-star is often overlooked. Part of the goosefoot family of vegetables, along with spinach and beets, chard goes by many names, including Swiss chard, spinach beet and silverbeet, to name a few. But no matter what you call it, there’s no doubt it touts plenty of health benefits.

POWER UP Worried about weight? Simply washing your dishes after dinner will be enough to burn off the calories you take in from a serving of raw chard—one cup has only 7 calories (about the same as raw spinach), and a cup of cooked chard has approximately 35 calories (that’s about 5 minutes of light jogging, if you’re counting). It’s also lacking in fat (less than 1 gram in 1 cup cooked) and

sugar (2 grams), leaving room for more of the good stuff, including about 700 percent of the recommended intake of vitamin K, which supports bone and blood health. It delivers a substantial amount of vitamin A, which promotes eye health and boosts immune function, and it’s a significant source of vitamin C, fiber, iron, magnesium and potassium. Chard is also believed to be beneficial to those with diabetes because it contains an antioxidant called syringic acid that studies have shown may help to regulate glucose levels.

BUY/STORE/SERVE Available in green, red and rainbow varieties, chard can be purchased at most supermarkets, usually alongside kale and other leafy greens. Look for crisp stems and healthy leaves that aren’t wilted or brown. Store chard by wrapping it in a dry paper towel, placing it in a plastic bag that is left unsealed, and keeping the bag in the

refrigerator. Depending on freshness, it will last from several days to as long as a week. Chard has the same culinary flexibility as its cousin spinach: as a salad base, in a frittata, sautéed with garlic, or simply braised or steamed. To prepare chard, wash it well in cold water, taking care to remove any grit, and cut the leaves away from the stems (the stems can be cooked separately in soups or a stir-fry).

DID YOU KNOW? What exactly is in a name? In the case of this vegetable, a lot of confusion. Often called Swiss chard, it’s actually believed to have originated in Italy and is a staple in Mediterranean diets. In fact, no one is quite sure where the “Swiss” part comes from. Some believe “chard” originated from the French word carde or the Latin word carduus, both referring to an artichoke thistle plant. In South Africa, it is simply called “spinach.”—LIZ DONOVAN
