SEARCHING FOR DESIGN INSPIRATION?
SISTER PARISH, THE legendary American interior designer (who happened to live in New Jersey), often talked about the genesis of her design inspiration. She said, “Lifestyle, personality, taste, hidden desires—you have to analyze all these things before you can start designing in the correct way. We begin at the beginning.” Indeed. Through the years, designers have told me that the most successful projects are those in which clients are able to articulate what means the most to them. It might be a color scheme, a beloved heirloom, a favorite rug or chair—something that sparks the inspiration for a design that reflects the people living there. In the case of designer Jill Moskowitz, that inspiration came from a feeling of isolation and the idea that a Matawan mother’s boxy townhouse created too much separation between her and her school-aged daughter. Moskowitz thought outside the box and opened up the layout, creating a contemporary floor plan that connected the kitchen and living room. Check out the space that marries modern openness and cozy comfort in “A Kitchen Opens Up” on page 44. Some of us travel far and wide to find inspiration. If this is your preference, the trio of U.S. cities featured in “3 Hot Design Spots” on page 48 will not disappoint—they’re full of artistic ideas for architecture, home décor and much more. Or perhaps a journey around the globe is worth taking, as Marilyn Baldi discovered. The Tinton Falls photographer captured a series of breathtaking images during two trips to Japan, many of which are worthy of placement on a gallery wall. See Baldi’s work in “Asian Influence” on page 38. Of course, we at Monmouth Health & Life know that an idea is just the first step in the creative process. And that idea might come from a movie, a painting, a far-flung city, a field of flowers or even the local lifestyle magazine you’re reading now. Sister Parish knew a thing or two about the twists and turns a project can take, but she loved the process. So enjoy the issue, and let the process begin.

Dramatic changes in our lives are bound to occur, particularly when it involves our finances. No one expects their spouse to pass away at the prime of their life, or a marriage to end after 30+ years. Are you part of the Sandwich Generation, balancing the needs of elderly parents while at the same time driving your kids to school or paying college tuition? AS A CERTIFIED CFP ® FINANCIAL PLANNER PROFESSIONAL®, it’s my job to anticipate change for my clients, having a plan for the “what if” scenario. New Jersey is faring fairly well for the fair sex, according to newly collated info from Wallet -Hub—but there’s room to improve. The state was ranked as the 11th best state overall for women. Factors such as female unemployment rate, median earnings, poverty levels and graduation rates were factored in. We also ranked 17th for women’s economic and social well-being and an impressive seventh for women’s health and safety, as the Garden State has hospitals with good gynecology rankings, one of the lowest rates of women who are uninsured, a high percentage of physically active women and great preventive healthcare, which considers women who are up-to-date on cervical and breast cancer screenings.

THE NEW SCHOOL One River School of Art + Design is expanding its franchise in New Jersey with a new branch in Middletown. The school offers personalized art classes and digital design courses for kids, teens and adults, such as drawing, sculpture, cartooning, intro to photography and intro to Photoshop. “We strongly believe that Middletown and surrounding Monmouth County towns are looking for art-based inspiration to have fun and to learn and/or to build a portfolio of their work,” director Joe Kaplan says. Classes are slated to begin April 29, with grand opening weekends (free workshops sampling classes they’re offering) planned for April 27–28 and May 4–5.

Long Branch was a beach resort town dating as far back as the 1800s, and presidents Harrison, Grant, Hayes, Garfield, Arthur, McKinley and Wilson often vacationed here with their families. There have since been two landmarks in Long Branch named for these “seven presidents,” including Seven Presidents Oceanfront Park and The Church of the Presidents, where they each attended services during their stays.
Unsurprisingly, there are lots of delicious beachfront eateries from which to choose in Long Branch, including the upscale Avenue Le Club for French cuisine, Charley’s for American, Rooney’s for seafood, and McLoone’s for a little bit of everything. Want to go a bit more casual? The Turning Point in Pier Village always draws a crowd for breakfast and lunch, Nunzio’s boasts the best pizza in town, or enjoy all-day breakfast at Amy’s Omelette House, with its overwhelming selection of pancakes and 200+ types of omelettes.
THEATER TOWN
In the early 19th century, Long Branch was a gathering place for some of the greatest performers, and was even deemed the “Hollywood” of the east coast. As immigrants settled and the town became more residential in the early 20th century, it lost its reputation as a theater hub. However, since 1997 Long Branch has been home to the New Jersey Repertory Company, a not-for-profit theater that produces plays.

FUN FACT: Long Branch draws an especially large crowd in July for its Fourth of July Oceanfest, one of the biggest fireworks festivals in the state, and again in August for its annual Jazz & Blues festival, held along the boardwalk with food, fun and music for the whole family.

DINING OUT
President James Garfield, who died in Long Branch after complications from an assassination attempt, has a landmark in his honor here, the Garfield Tea House. Located on the grounds of the church in the Elberon section of town, this small playhouse was made of wooden railroad ties used to lay the track that transported America’s 20th president from the train station to the oceanfront house in which he died. The Long Branch Historical Museum Association is currently working to restore both the church and the tea house and hoping to reopen them to the public.

MEDICAL CARE IS CRITICAL IN treating and, one hopes, curing disease, but true healing takes more than doctors and medicine. There is a spiritual component to recovery as well, and perhaps no one knows this better than artist Karen Starrett. She is the curator as well as one of the eight artists whose work is featured in “Art & Healing: Expressions of Trauma and Gratitude,” an exhibition at the Monmouth Museum in Lincroft. The exhibit runs through May 19. Art & Healing highlights the role of how the creation of art can be part of the healing and recovery process after a cancer diagnosis. For Starrett, of Ocean Township, that diagnosis came in 2003. When she learned she had Stage 3 ovarian cancer, “everything changed,” she says. “I thought I was going to die. I was 50 years old. I know 28 women who died from ovarian cancer. It was very frightening.”
After surgery and a year of chemotherapy at Monmouth Medical Center, her cancer was gone. Physically she was healthy; emotionally, however, she fell into deKaren Starrett pression, and was unable to practice her favored art form, collage. She attended a week-long art workshop, but she “floundered” until the facilitator gave her a large sheet of paper and paints. “She said, ‘Just move your hand,’ so I did,” Starrett says. She finished one painting, then another. “It was very powerful. I believe painting was part of my healing,” she says. “I’ve been painting ever since.” Over the ensuing years, she studied the

She then studied “creative aging,” became a certified dementia practitioner, achieved Advanced Certification in Gerontology from Rutgers University and developed an arts curriculum for older adults, including those with limited cognitive and physical abilities. Last year, she approached Donna Kessinger, executive director of the Monmouth Museum, about curating an exhibit of artists who had been treated for cancer. The artists—including Theresa DeSalvio, Shari Epstein, Arlene Mollow, Nisha Sondhe, Carol Radsprecher, Bob Rivera, June Wilson—“all express their cancer experience, whether overtly or obliquely,” Starrett says. “The art ranges from darkly surreal to humorous,” adds Kessinger, who has had her own cancer experience as well. She lost her sister-in-law to brain cancer in 2018. “I hope to honor her memory with this show,” she says. Starrett says she is grateful to the museum for mounting the exhibit. “I want people to know that self-expression has a value. Whether it’s writing, painting or performing, the body needs to express itself.”

IN SEPTEMBER 2016, Michael A. Goldfarb, M.D., and his wife, Barbara, went to Japan for their 50th wedding anniversary. Dr. Goldfarb, former chair and program director of the Department of Surgery at Monmouth Medical Center (MMC) for 14 years, always had been intrigued by Japan’s cultural esthetic, and as a photographer and lover of Haiku, he wanted to experience it firsthand. The Haiku format is usually three lines of 7-5-7 syllables. While there, he tried to capture that feeling by taking photographs and writing poems. Many scenes “appeared different than anything I’d seen in western culture,” he says. When Dr. Goldfarb returned home, he realized he had a series of photographs and poems that worked well together and thought of putting them together in a book. That’s when fate took his hand and guided him along. “I was eating dinner at a Chinese restaurant and read a fortune from a fortune cookie that said, ‘You see pictures in poems and poems in pictures,’” he says. Later, when searching for a title for his book, he signed up for a Word a Day app, and the first word was “inscape.” “What does that mean? I had no idea. It means ‘the unique inner nature of a person or object as shown in a work of art, especially a poem,’” he says, still astonished. “There were so many moments [while creating this book] that were coincidental, or kismet, whatever you choose to call it,” he says. He chose to call his book Japan Inscape, and it is available on Amazon and through his website, japaninscape.com. “I wasn’t doing it as a business venture,” Dr. Goldfarb says. “I was doing it because I thought I would share a daydream-like experience. What if I told you your view of the world around you could become happier and more complete by daydreaming along with

photos and poems? My worldview changed as a result of this trip and I can honestly say I possess more peace and happiness now that I have experienced the power of understanding through gentle observation.” Dr. Goldfarb, who still practices surgery, has been associated with MMC for more than 45 years. He was at one time the medical director of Monmouth’s Cranmer Ambulatory Surgery Center and surgical coordinator of the Jacqueline M. Wilentz Comprehensive Breast Center at MMC. He is one of the founders of the JMWCBC and was on the Board of Trustees for 10 years. Dr. Goldfarb is a professor of surgery at Drexel University and continues to train surgical residents at MMC today. After a life in science, Dr. Goldfarb seems amused by tapping into his artistic side. “I’ve been interested in using this side of my brain,” he says. “I’ve always been a scientist and surgeon, and now this is sort of coming out of me and I’m enjoying it. It’s been a pleasant surprise.”

WHEN BRIDGET ROOT GOT THE NEWS THAT SHE HAD BREAST cancer, her first response was, “I don’t have time for this. I have a family vacation to Disney World in 10 days.” Root loves everything about Disney. And when her treatments at Monmouth Medical Center were all done and she was cancer-free, she paid the hospital her highest compliment: “I am a big fan of Disney’s customer service. Monmouth’s customer service is just as excellent.”
CONTROLLING YOUR RISK SOME RISKS FOR BREAST CANCER, such as family history and ethnicity, cannot be controlled. There are certain factors, however, that are within your control, including: • Use of oral contraceptives: Taking birth control pills slightly increases your breast cancer risk compared with women who have never used them. • Drinking alcohol: Breast cancer risk goes up if you drink just one glass of wine, beer or mixed drink a day. The more you drink, the higher your risk. • Your diet: Choose to eat healthy foods, rather than foods high in fat. • Long-term use of estrogen and progestin medicines after menopause—known as hormone replacement therapy (HRT). Using HRT for two or more years may create a higher chance of breast cancer. Talk to your doctor about the right course of treatment for you. • Excess weight, especially after menopause: Overall, your risk of breast cancer is lower if you stay at a healthy weight with a body mass index (BMI) below 25.

HITTING BACK SPORT PSYCHIATRIST HELPS PRIZE FIGHTERS TRANSITION TO LIFE AFTER THE RING.
THE BIGGEST BLOW IN A BOXER’S HARD-HITTING career is often not found in the celebrated arena at all, but on the home front, especially with retirement. No matter how great the athlete who steps into the ring, the boxer commonly meets his most formidable opponent in everyday life and may struggle to come to grips not only with retirement, but with the sport’s effect on the brain. Ronald L. Kamm, M.D., a psychiatrist at Monmouth Medical Center, addresses a battle few boxing fans realize in research on boxing and retirement that was recently published in The ISSP Manual of Sports Psychiatry. His article, “A Sport Psychiatrist’s View of Boxing and Retirement from It,” delves into the impact of this physically demanding sport on the brain, the issue of performance enhancing drugs, the life of boxers beyond the ring and more. Dr. Kamm draws upon his experience as vice president of FIST (Fighters Initiative Support and Training), as he seeks to raise awareness of a problem society often overlooks—boxers’ psychological needs. Although the nonprofit founded by professional boxer Gerry Cooney to help boxers transition is now defunct, Dr. Kamm maintains these issues are as relevant as ever. Active in sports psychiatry since the 1970s, Dr. Kamm has presented lectures and published articles on the topic all over the world, consulted with many school sports teams and served as sport psychiatrist for USBL New Jersey ShoreCats. Outside of his work at Monmouth Medical Center, a RWJBarnabas Health facility in Long Branch, he has a private practice in Oakhurst. He also serves as an associate clinical professor of psychiatry at the Philadelphia-based Drexel University College of Medicine. He received his medical degree in 1968 from Hahnemann Medical College, (now Drexel University College of Medicine) and completed his psychiatric residency in 1972 at Columbia-Presbyterian Medical Center’s New York State Psychiatric Institute in NYC.

ASIAN INFLUENCE THIS MONMOUTH COUNTY WOMAN’S PHOTOGRAPHY HOBBY SPAWNED AN AWARD-WINNING CAREER, ONE THAT TOOK HER ABROAD TO EXPERIENCE JAPANESE CULTURE THROUGH HER EYES—AND THROUGH HER LENS.
Local photographer Marilyn Baldi traveled to Japan and captured the country’s “great attention to detail” in her photographs. “Even the manholes in Japan are impressive!” she jokes. Such detail is apparent in the kanzashi, hair ornaments used in traditional Japanese hairstyles.
When Marilyn Baldi enrolled in photography courses at Brookdale Community College and art schools around the Shore, she saw it as a hobby and a way to “share the beauty and harmony that is all around us.” But the Tinton Falls resident has since achieved success within the photography world; over the last decade, her photos have been exhibited at New Jersey art shows and galleries, won numerous awards on both a regional and national level and been featured in The New York Times. And, as the globetrotter has learned, sometimes the best inspiration is found way beyond the confines of her New Jersey backyard. A selfproclaimed “traveler at heart and soul,” Baldi flew to Japan in 2013 and 2015, where she captured its unique culture and traditions through her trusty travel companions—an Olympus E-M5 Mark II camera and a Nikon D7000 camera. On her journeys, Baldi noticed the great attention to detail in the country’s fabrics, gardens and architecture, and captured such intricacies on film. “The emphasis seems to be on simplicity, serenity and harmony,” Baldi says of Japan. “There is great care given to the preservation of the historic sites and revered settings.” And such beauty shows in her photographs. Isolated—that’s how a Matawan mom felt in her townhome’s boxy kitchen. Time spent cooking up a storm meant time away from her school-age daughter. The walls did more than divide kitchen, dining room and living room; they interrupted family time. Lisa, the homeowner, recalls having to strain to catch a glimpse of the living-room TV when her daughter wanted to share a viewing moment. In that precious time of the day when family life revolves around the kitchen’s tantalizing aromas, the closed floor plan proved more than outdated—it was a personal barrier, and a stumbling block to entertaining and visiting with extended family members when they came by. “The kitchen was like a box,” laments Lisa, who purchased the place in 2012 anticipating a future makeover. “As a working mom, my time in the kitchen is key, not just to make meals but to interact with people, and the old layout hindered that,” she says. To move “outside the box” (almost literally) and into a more contemporary floor plan and style, Lisa turned to Jill Moskowitz, a designer for Kitchen Magic in central New Jersey, and yes, a wall did have to crumble. In fact, Moskowitz blew the layout wide open to connect the kitchen with the adjacent living room and eliminated the dining room to add space where it was needed most—in that Grand Central kitchen. Part 2 of Moskowitz’s mission was a clean design to rescue an eatery short on space (both storage and counter) and visually burdened with stock oak cabinets that had been painted so many times that another paint job just wouldn’t work. Lisa embraced the switch to suede gray (seen in the floating shelves and island) and satin white (looking fresh in the Prestige Statesman cabinets made of maintenance-free laminate) and the new lighting that left gloom behind. Not only did the open layout mean more sunlight, but Moskowitz also installed dazzling pendants over the island and other artificial lighting. White is undeniably trendy and classic, with the staying power Lisa wanted in her forever kitchen. Yet modern makeovers with their
monochromatic tendencies can have inherent design challenges, sometimes crying out for texture to take them from antiseptic to wow. “If you do all white, it’s a very sterile kitchen,” says Moskowitz. “Contrast is important, I think, but it’s personal taste.” So Moskowitz introduced gray grout to dramatize snowy subway tiles and added a hexagon pattern over the stove that, like a painting, infuses character. In addition, the tiered island, with a sink and dishwasher on one side and chow-down area on the other, gets high marks for more than function. The quartz countertops with white, gray and a touch of beige not only deliver pizzazz, but also let Lisa cross another element off her list: easy maintenance. The quartz product is nonporous, which means easy, breezy cleanups. Ditto for the distressed gray wood-effect planking, which is porcelain, known for its durability. Loving the subtle sparkle of the quartz, Lisa says, “Jill helped me pick out a beautiful piece that has a glitter effect but very slight—so it’s not obnoxious. It makes it elegant and looks really great with the lighting.” Another textural boost came from brushed nickel cabinet hardware, stainless-steel appliances and floating shelves, which are just right for family photos and to avoid what Moskowitz calls “the bowling alley effect” of long cabinets. Says Lisa: “Jill gave me great ideas. I explained that while everyone needs lots of storage, I also needed to display art and family mementos. She came up with the floating shelves on either side, which I thought was fabulous.” Besides solving the storage problem with the new design, Moskowitz added touches such as built-in recycling and trash bins, which Lisa applauds for the convenience factor. Lisa likes the kitchen redo so much she plans to take the rest of the townhome on a similar design journey. “Our use of the kitchen has almost tripled with open concept,” she says. “The old layout made it hard for two people to function in the kitchen; now we are able to cook together. It’s the space to be able to cook with people instead of just for them.” MONMOUTH HE ALTH & LIFE

ASHEVILLE, NORTH CAROLINA
Home to an active arts community, Asheville boasts a vibe that can be described as boho meets classic Southern charm. While the backdrop of Blue Ridge Mountains can take your breath away, the breadth of architectural jewels is a worthy rival for visitors’ attention. Asheville is home to the Biltmore Estate, a 250-room castle built by millionaire art collector George Washington Vanderbilt II. Constructed between 1889 and 1895, the Châteauesque-style structure is still the largest privately owned home in America and one of the most prominent examples of Gilded Age mansions intact. Asheville may not be the first city that comes to mind when you think of art deco design, but there’s a wealth of wonderful examples here. Built in 1928, its pink-roofed city hall reflects the area’s spectacular sunsets. Another art deco treasure is the S&W Building, a former cafeteria and speakeasy. Asheville is also home to many stellar examples of Victorian and arts-and-crafts architecture. It seems that around every corner of this city lies another design inspiration. Think your town is historic? This northern Florida city ups the ante. It was founded by Spanish explorers in 1565, making it the oldest continuously inhabited European-established settlement in the continental U.S. Today St. Augustine retains its Old World European atmosphere thanks to plentiful Spanish Colonial and Spanish Revival architecture. In the Old City section, buildings from the 18th and 19th centuries make visitors feel they’ve been transported back in time. While St. Augustine is famous for Castillo de San Marcos, the oldest masonry fort in the continental U.S., there’s a lot more to see here. Start your city tour at the Lightner Museum, housed in a Spanish Renaissance Revival-style building that serves as a one-of-a-kind showroom for arts from the Gilded Age. Vintage furniture and musical instruments are displayed in former Turkish baths and ballrooms. A stroll through Flagler College will lead you up a decadent marble and onyx stairway to the breathtaking dining hall, ringed by 79 Tiffany windows. Treat yourself to a libation or two at the St. Augustine Distillery, which is set in a former ice manufacturing plant. And no visit to St. Augustine is complete without a visit to the famous Ponce de León’s Fountain of Youth Archaeological Park for a tiny blue bottle of water that just may help you turn back the clock.

If you appreciate the nautical charm of the Cape Cod style, there is no better getaway than the Cape itself. Provincetown is on the Cape’s edge—geographically and metaphorically—and has been called “the place to paint and party.” A walk down brick sidewalks will take you past restored century-old gray shingled cottages, art galleries, décor stores, craft studios, restaurants and live music venues—all steps away from beautiful beaches. The town established its reputation as one of the nation’s largest art colonies more than 100 years ago. In the summer of 1916, Europe was engulfed in World War I and creatives who might otherwise have made the pilgrimage to Paris—including Eugene O’Neill and Marsden Hartley—headed to Provincetown instead. Today that same bohemian spirit prevails. The Provincetown Historic District was listed on the National Register of Historic Places in 1989 and the Center Methodist Church cannot be missed. Built in 1860, it exemplifies the beauty of traditional New England-style architecture. Don’t leave town before you’ve been to MacMillan Pier for some early morning humpback whale watching, and be sure to make an appearance at Tea Dance at the Boatslip Resort and Beach Club. The popular daily LGBTQ (but friendly for everyone) social event is a great chance to sip cocktails and show off your dance moves.

2019 MONMOUTH COUNTY IS HOME TO SOME OF THE MOST SEASONED AND TALENTED REAL ESTATE PROFESSIONALS IN THE COUNTRY. To help readers find the best agents to work with, Monmouth Health & Life contracted DataJoe Research of Boulder, Colorado to facilitate a multi-faceted research campaign. It consisted of an online survey delivered directly to agents across Monmouth County via email as well as internet research. In the survey, real estate agents were asked to provide sales volume ranges and also nominate their peers. In the Internet campaign, DataJoe consulted a variety of websites to build richer knowledge of individual licensed real estate agents across the county. DataJoe checked and confirmed that each published winner had, at the time of review, a current, active license status with the appropriate state regulatory board. If they were not able to find evidence of a real estate agent’s current, active registration with the state regulatory board, that real estate agent was excluded from the list. Finally, DataJoe presented the tallied results to Monmouth Health & Life for final review. We recognize that there are many good real estate agents who are not shown on the representative list. GOAT CHEESE & GRAPEFRUIT SALAD Yields: 2 servings INGREDIENTS n 3 ½ oz. ciabatta or sourdough bread (slightly stale is best) n 2 Tbs. olive oil n 2 oranges n 2 pink grapefruits n juice of ½ a lemon n 3½ oz. arugula leaves n 2 oz. mâche n ¼ cup walnuts, smashed n 4 oz. soft goat cheese n 1 Tbs. argan oil n sea salt and freshly ground black pepper to taste
DIRECTIONS Preheat oven to 350°F. Rip the bread into bitesized pieces and put into a roasting pan. Drizzle with the olive oil and bake for 5-6 minutes, until golden brown. Set aside to cool. Segment the oranges and grapefruits over a mixing bowl to catch the juices as you go. Add the lemon juice and a pinch of salt. Put the arugula and mâche leaves into the bowl and toss together. Arrange on a serving plate and spoon over the juices. Scatter the bread and walnuts over the top, and dollop over the soft cheese. Drizzle over the argan oil and add a pinch of pepper to the goat cheese. Serve immediately.

POMEGRANATE & CHOCOLATE CAKE Yields: 8-10 servings INGREDIENTS FOR THE CAKE: n 1 cup self-rising flour n 1 tsp. baking powder n ½ cup plus 2 Tbs. cocoa powder n ¾ cup light brown sugar n 3 free range eggs n 2 sticks (½ pound) butter, melted, plus extra for greasing n 2 Tbs. pomegranate molasses n 2 Tbs. honey n 1¼ cups Greek yogurt n sea salt
DIRECTIONS Preheat the oven to 350°F and grease and line a 9-inch springform cake pan with butter and parchment paper. Sift the flour into a mixing bowl. Add the baking powder, cocoa powder, sugar and a pinch of salt. Mix together gently to combine ingredients.
FOR THE TOPPING: n ²⁄³ cup heavy cream n 3½ oz. dark chocolate n 1 Tbs. honey n h andful of pomegranate seeds
Remove from the oven and set aside to cool in the pan.
In a separate bowl, beat the eggs until really fluffy and light in color using a hand-held mixer. Pour the melted butter and pomegranate molasses into the flour and mix together. Fold in the honey and yogurt, and then add the beaten eggs, a little at a time, and fold together until completely combined. Scrape the mix into the cake pan and roughly smooth over. Bake for around 25-30 minutes or until risen and the sides are just pulling away from the pan. The cake will still be a bit wobbly, but it will firm up as it cools.
Meanwhile, heat the cream in a pan over low heat. Break the chocolate into a small mixing bowl and add the honey. Pour the hot cream over the chocolate and gently stir together until velvety smooth. Leave for 10 minutes to cool and thicken. Spoon the topping over the cake and spread out using the back of a spoon so that it drizzles down the sides. Scatter the pomegranate seeds over the top and leave to set before serving.

Onions Go Green
SCALLIONS—A VERSATILE, VERDANT VEGGIE—FIND A TANGY PLACE IN CUISINES ALL OVER THE WORLD.
WANT ONIONS THAT WON’T MAKE YOU CRY? Stronger than chives but milder than most other onions, scallions—alias green onions—just may fit the bill. They’re young plants of the Allium genus that haven’t formed a full bulb. (Some varieties can’t.) They have long, tubular green stems, are sold nestled in bunches and can be served cooked or raw. Chefs have the option of using the bulbous bottom of the vegetable, the hollow green top or—for boosted nutrition and flavor—the entire stem. Adding a sprinkle of chopped scallions to a dish right before serving can provide a mild onion flavor, a hint of texture, a burst of bright green color and several notable health benefits. This slender veggie gets around. Scallions are grilled and sprinkled with salt in Mexico, ground for a condiment in the Philippines, munched as an appetizer in India and added—chopped—to mashed potatoes in Britain. And in the homes of Sephardic Jews in or from Iran or Afghanistan, they take on a special ritual function. In memory of the ancient days of slavery in Egypt, family members gathered for the Passover seder meal use long green onions to ceremonially whack each other. POWER UP Scallions pack a wallop nutritionally too. A little bit of them goes a long way not just in flavor, but in beneficial content. When a full cup of scallions (tops and bottoms) is used in a dish, it adds only about 30 calories and 0.2 grams of fat. With that comes an array of health-boosting vitamins and minerals, including vitamin C (31 percent of the recommended daily value) as well as vitamin A (20 percent of DV) and its related antioxidants, such as lutein, zeaxanthin, beta-carotene and retinol (the last two linked to skin and eye health). Scallions also have a respectable amount of fiber (10 percent of DV) and of the B vitamin folate (16 percent of DV), which promotes cell growth, along with less than 10 percent of DV of iron, calcium, potassium and manganese. Besides helping the body function at its best, studies have found that eating Allium vegetables may reduce the risk of various types of cancer, including colon, prostate and stomach. But the pièce de résistance is the vegetable’s potency of vitamin K (more than 250 percent of DV in one cup), which helps the blood to clot. In fact, sprinkling just a tablespoon of scallions over a dish as a garnish can offer 16 percent of DV of the vitamin.

Once you’re ready to use it, wash the vegetable well and peel the thin layer of skin off the unformed bulb before slicing off the bottom. Chopped scallions offer a blast of flavor when served in eggs (add them to your favorite omelet) or rice, or when baked into biscuits. Sprinkle the raw tops thinly sliced over soups, salads and even on top of cooked fish marinated in an Asian sauce to add zing. A popular Chinese dish, cong you bing, is made by combining the scallion with flour and sesame oil to cook it into a flaky, crispy pancake—Marco Polo is said to have become fond of this treat during his travels. But don’t be afraid to celebrate the scallion for its simplicity. Coat scallions with olive oil and grill or roast them for a sweet and savory side dish, or whizz them in a food processor for a zesty vinaigrette. FOR THE CHAMOMILE HONEY SYRUP: n ¾ cup water n 1 ⁄3 cup honey n 1-2 chamomile tea bags
INSTRUCTIONS
CHAMOMILE HONEY SYRUP: n Combine water and honey in a small saucepan and bring to a low boil, simmer 1 minute and remove from the heat. Add the tea bag, cover and steep for 5-10 minutes. Remove the tea bag and allow the syrup to cool completely. FOR THE DRINKS: Store in the fridge. n 3 oz. fresh grapefruit juice (about half of 1 grapefruit) n 2-4 Tbs. chamomile honey syrup, depending on your taste n 2 oz. tequila n 4 fresh strawberries, sliced n sparkling water for topping off n crushed ice
DRINKS: n Add the grapefruit juice, chamomile syrup, tequila and strawberries to a glass. Using a muddler (or even the end of a rolling pin), gently push the strawberries down until they release their juices and are lightly smashed. Add a handful of ice and then add sparkling water to top off. Give the drink a gentle stir. Taste and add more chamomile syrup if desired. Garnish with fresh chamomile flowers (yes, they’re edible!) and strawberries if desired.

HARPOON WILLY’S IF YOU PAY ATTENTION TO OLD WIVES’ TALES, you’re likely under the impression that time is running out for good seafood, shellfish in particular. Aquatic delicacies such as oysters, mussels and clams, they say, should be consumed only in months containing an “R”—so come May, it’s bon voyage to mussels marinara, clam po’ boys and the like. But those ladies must not have dined out in Monmouth County, where seafood is abundant and delectable all year round. Case in point: Harpoon Willy’s, a longtime Manasquan destination that’s become a local favorite for its stunning river views and its catches of the day. My friend and I were recently treated to a spectacular waterfront sunset and an even more memorable dinner. We started with lump crab cocktail from the raw bar, a large martini glass lined with spinach and topped with mounds of fresh crabmeat. The keywords here are “mounds” and “fresh”—the plate comes with a generous portion of the sweet crustacean, so flavorful on its own, with a dash of lemon or a drop of tangy cocktail sauce. On request, our server brought a complimentary side of crispy tortilla chips to accompany the crab. (An old social media post indicates that the dish once included the chips.) We also made a slight adjustment to our second appetizer, Asian fried Brussels sprouts. Each mini-bundle popped with flavor, thanks to a sweet Thai chili glaze and sesame seeds. The sprouts are usually coated with a wasabi dressing, but we spared my friend’s sensitive palate on this night. And, as with the crab, there were more than enough Brussels sprouts for a shared portion. Indecision when ordering an entrée is usually a good sign—the menu just has too many good options. From steaks and bakes to burgers and sandwiches, Harpoon Willy’s selection runs the gamut. Having passed on the appetizer of blackened grouper bites, I ordered the fish for my dinner. Though the grouper itself was perfectly moist, the artichoke coating resembled a breaded mash more than the crust described. The accompanying rice and lemon wine sauce, while visually appealing, leaned toward lackluster in the flavor department. Perhaps I’ll try the sea bake or the New York strip next time. My friend’s pan-roasted scallops, meanwhile, were a hit. Each of the four scallops was cooked and flavored just right (I luckily had a bite!), as was the mushroom risotto that blanketed the plate. I’d say this is a surefire pleaser, even in the R-less summer months. Rather than fill up on dessert, we ordered a pair of cocktails and moved to the bar area. MONMOUTH COUNTY, ALEXSLEMONADE.ORG Applebee’s Neighborhood Grill & Bar recently donated $44,590 to Alex’s Lemonade Stand Foundation for Childhood Cancer. More than $11,000 of the total sum was fundraised by the restaurant chain’s New Jersey locations, which include Howell, Manalapan, Middletown and Tinton Falls. The foundation, which raises money for childhood cancer research, has received approximately $10 million from Applebee’s since 2005.

Afterward, students paid 50 cents to play each game, which included air hockey, foosball, ring toss and others.
