ANOTHER HOLIDAY SEASON IS UPON US, AND AT MONMOUTH Medical Center we have much to celebrate. Monmouth Medical Center offers award-winning medical care, and 2016 was a very successful year that was highlighted by being among only eight hospitals in New Jersey to receive a four-star rating by the Centers for Medicare and Medicaid Services (CMS), the highest hospital rating achieved in the state. This impressive rating is a reflection of the hard work, dedication and expertise of our entire team here at Monmouth. Excellent care is something all patients expect and deserve. Hospitals work hard to achieve top ratings—it is not an easy goal to reach; it takes the knowledge, teamwork and dedication of the entire hospital staff. This hard work was also recently recognized with a number of other awards and designations, including: n Monmouth Medical Center once again received an “A” Hospital Safety Score by The Leapfrog Group, the nation’s leading experts on patient safety. The “A” score was awarded in the October 31 update to the Hospital Safety scores assigned to U.S. hospitals based on preventable medical errors, injuries accidents and infections. In Monmouth County, Monmouth Medical Center is the only hospital to consistently receive an A rating. n Additionally, the safety of our maternity service was recognized by Leapfrog, as Monmouth Medical Center was the only area hospital to fully meet every safety standard in all areas of maternity care. I’m very proud to say that the Leapfrog Group has validated what we have known for a very long time—our maternity services’ longstanding commitment to providing quality care is outstanding. n Monmouth recently was named the Best Hospital in Monmouth County by the readers of The Asbury Park Press, and for a fourth consecutive year, the Jacqueline M. Wilentz Comprehensive Breast Center at Monmouth Medical Center was also determined to be a “Best Of.” Our breast center was once again named a recipient of the Women’s Choice Award as one of America’s Best Breast Centers, acknowledging its dedication to providing exceptional patient care and treatment. We have earned this award for four consecutive years by having met the National Accreditation Program for Breast Centers (NAPBC) standards from the American College of Surgeons. n In November, the Jacqueline M. Wilentz Comprehensive Breast Center completed a very successful 2017 NAPBC survey, with the surveyor praising our overall excellent program and dedicated staff and very patient-centered care. This prestigious certification recognizes the Wilentz Center for meeting all national standards for quality and safety for breast-cancer specific care. It is enormously gratifying for me as president and chief executive officer to conclude this first year of my administration by celebrating our ongoing success. A TIME TO CELEBRATE THE HOLIDAYS ARE HERE, and I’m ready to celebrate with family and friends and give thanks. In this issue of Monmouth Health & Life, we chat with New Jersey native Daphne Oz, who talks about growing up here and life on The Chew. She dishes on those topics, plus motherhood and even shares two special holiday recipes, starting on page 30. Empowerment. Knowledge. Control. These are just some of the reasons that holistic and alternative techniques have gained wide recognition within the realm of healthcare. “Who You Are” Psychotherapy is an approach that helps an individual tap into the “who” aspect of themselves— analyzing the inner workings of their mind to better understand and appreciate all that encompasses the person they have become. This introspective approach empowers greater awareness of oneself—recognizing patterns in one’s thoughts, behaviors and interactions that have negatively impacted one’s view of themselves as well as the world around them.

“Why You Are” Hypnotherapy is a holistic approach that works to help an individual delve deeper into the psyche. Asbury Park Polar Bear Races: The Shore Athletic Club holds its 53rd annual event at the Asbury Park Convention Hall. The 10-mile racewalk and 5-mile healthwalk begin at 10 a.m., and the 5K starts at noon. Information: shoreac.org. JSRC New Year’s Eve Twilight Fun Run and Party: The Jersey Shore Running Club’s annual event takes place at Leggett’s Sand Bar in Manasquan. The 5K begins at 4 p.m. More info: jsrc.org.

Let’s face it, technology has transformed the way we read. (We’re looking at you, smartphones, tablets and e-readers!) Vanishing are paper books and periodicals, and disappearing with them are the big-name stores that raised previous generations of bookworms. But Monmouth County is home to a handful of independent and used bookstores that have bucked that trend. They have plenty of titles, and they’re a source for great holiday gifts too. The quaint store is packed with new titles, classics and reference material, while the space hosts regular family events and author signings. The Book Garden (868 Monmouth Rd., Cream Ridge, 609.758.7770; bookgardennj.com): It’s easy to miss this used bookstore, but those who have visited are glad they did. Prepare to spend hours browsing the aisles, which are full of fiction, mystery, bios and New Jersey– specific books. Wondering where the “garden” in their name came from? They also sell flowers. New beginnings

Alexander Broome (pictured with mother Ginessa) weighed 1 pound, 9.75 ounces when he was born at just 26 weeks in December 2015. During his three-month stay at the Monmouth Medical Center NICU, he required a ventilator and CPAP, experienced digestive problems and underwent hernia surgery. With help and support from the NICU staff, Alexander, his mother and father, Greg, overcame all of the hurdles they faced. The family stayed in the parent transition room on three occasions while Alexander was at MMC and can’t say enough how important that was for them. Finally, on March 25, 2016—99 days after his birth and weighing 5 pounds, 3 ounces—Alexander was able to go home.

A neonatal intensive care unit (NICU) is, according to Bonny Adler, MS, RNC-NIC, “a very busy place.” She would know. As clinical director of the Hirair and Anna Hovnanian Foundation Regional Newborn Center, Monmouth Medical Center’s NICU, Adler helps treat more than 500 of the hospital’s tiniest and sickest patients a year. “These babies need constant monitoring and 24-hour care from a team of health care providers,” Adler says, to treat conditions such as prematurity, low birth weight, acute life-threatening illnesses and congenital disorders, as well as for delicate surgeries. This NICU was the first of its kind in New Jersey and among the first six offered at community hospitals nationally. Today, it remains among the best rated nationally, thanks to a combination of the most sophisticated technology and the expertise of a small army of highly trained caregivers. That technology includes Giraffe Omnibed Isolettes, the most advanced technology available to monitor and control the babies’ environment. They can serve as both a closed and open warming unit, says Susan Hudome, M.D., medical director of the NICU and chief of Neonatology. “We don’t have to move the baby from an isolette to an open warmer if emergent procedures are needed. This is safer and less stressful for tiny, fragile infants,” she says. The NICU belongs to a national database called the Vermont Oxford Network, which helps track and improve outcomes. “The data allows us to assess and improve quality of care in real time, as advances in the field are implemented,” Dr. Hudome says. “We remain consistently in the top quartile nationally for survival, and have lower complication rates than many comparable units.” The NICU, with the assistance of Michael’s Feat, renovated its parent transition room to give it a homier feel. The Michael’s Feat Parent Suite allows parents to spend the night with their newborn and assume the responsibility for the care of their child, including mastering any special equipment needed. The room was built with the main renovation but decorated and funded last Christmas by Michael’s Feat, which previously decorated and supported the resource room in the main waiting area. “We use family-centered care that provides open visiting hours, which offer many opportunities for families to bond with the baby and prepare for the day when he or she can go home,” Adler says.

Joining the team

The department recently added two new neonatologists. Meera Kale, M.D., attended medical school in India and completed her pediatric residency at Brookdale University Hospital and Medical Center in Brooklyn. She then did fellowship training in neonatology at Robert Wood Johnson Hospital. Erin Qualter, M.D., graduated from Albany Medical College, completed her residency in pediatrics at Columbia University Medical Erin Qualter, M.D. Meera Kale, M.D. Center then did her fellowship in neonatology at Mount Sinai Hospital. “These doctors have been trained specifically to handle the most complex and high-risk situations and are a great addition to the NICU team,” Adler says. Dr. Kale had worked at Monmouth Medical Center part time before joining the staff full time in January 2016. Dr. Qualter also has a master’s degree in nursing. Not only do Dr. Kale and Dr. Qualter add more hands on deck as the practice grows in scope and in coverage, “people just out of training can help bring new ideas and help us grow,” Dr. Hudome says. Physicians, though, are only part of the equation when it comes to caring for premature babies. “It takes more than just one doctor or nurse,” Adler says. “It takes a team of neonatologists, nurse practitioners, nurses, respiratory therapists, social workers and case managers who draw on their experience, advanced skills and compassion to provide the best care possible to the smallest patients.”

Against

all odds An Oceanport resident diagnosed with stage IV pancreatic cancer is spreading a message of hope. More than 50 percent of patients had never heard of pancreatic cancer before their own diagnosis, according to Pancreatic Cancer Action, and half the population cannot name a single symptom of the disease. Monmouth Medical Center, a leader in cancer care, urges everyone to know the symptoms and risks. When John DiDomenico was diagnosed with stage IV pancreatic cancer two years ago, he knew the odds were against him: this disease is one of the deadliest types of cancer. But thanks to a rigorous regimen of chemotherapy and what John sees as the unique abilities of his Monmouth Medical Center oncologist, the 63-year-old Oceanport resident today considers himself a “1 percenter”—among the small group of people still alive more than two years after an inoperable pancreatic cancer diagnosis. As such, he has set out to spread the message that a diagnosis of late-stage pancreatic cancer is not necessarily a death sentence. “It’s my mission to provide hope to others with this disease that are face to face with this very bleak prognosis,” he says, noting that the typical life expectancy following a stage IV pancreatic cancer diagnosis is six months. He is also looking to spread the word that it isn’t necessary to travel to New York City or other far-off destinations for the very best cancer care—there is no special sauce, John says. He credits his remarkable survival to his hematologist oncologist Seth Cohen, M.D., medical director of Oncology Clinical

Research and Outpatient Infusion for the Leon Hess Cancer Center at Monmouth Medical Center, as well as the staff of oncology nurses at the Monmouth Vantage Point infusion center, or his “angels,” as he calls them. Currently, Dr. Cohen is a principal investigator of numerous clinical trials of various tumor types at Monmouth Medical Center. “Seth utilizes a scientific approach, along with a heavy measure of the human touch,” John says. “My goal is to give people who have a similar diagnosis hope that survival is an option. Dr. Cohen has the ability to stand toe-to-toe with anyone treating pancreatic cancer. I really want to spread the word that there is someone right here in our community with an attention and feel for the management of pancreatic cancer. Hope is there for me, and it can be for others as well.” Noting that he was originally referred to Dr. Cohen by his primary care physician, Jeffrey Felzenberg, M.D., for hematology care after suffering a pulmonary embolism in 2011, John says a Thanksgiving 2014 visit to Monmouth Medical Center’s Emergency Department for very sharp pain in his lower right back revealed the diagnosis of a pancreatic tumor. After seeking opinions at two New York hospitals, he decided to come back to Monmouth and Dr. Cohen. “I felt very comfortable with Seth,” he says. “Yes, pancreatic cancer is deadly, but he is able to manage a very ferocious disease— and his level of success is real. I want others to know that there

is hope, there is someone right here in our community who is as proficient as anyone treating pancreatic cancer. There is a lot of hope based on results created here, and I want to offer myself as an example of what can be done.” John’s wife, Annie, concurred – adding that at their initial visit with Dr. Cohen, he never said anything about having six months to live. “He said we are not going to talk about life expectancy and urged us not to go online and look at the statistics,” Annie says. “Seth has always been John’s personal cheerleader—there were days where he would feel defeated, but if he had a visit with him, he would leave feeling so uplifted.” It is estimated that 41,780 people in the U.S. (21,450 men and 20,330 women) will have died from pancreatic cancer by the end of the year. It is a disease that is often difficult to diagnose because there are no specific, cost-effective tests that can easily and reliably find early-stage pancreatic cancer in people who have no symptoms. This means it is often not found until stage IV, when the cancer can no longer be removed with surgery and has spread from the pancreas to other parts of the body. John is fighting hard against this aggressive disease that has seen him admitted to Monmouth Medical Center’s ICU three times, and in addition to Dr. Cohen, points to the hospital’s outstanding nursing care and the additional medical care he has received from Dr. Felzenberg and Ben Terrany, M.D., a gastroenterologist. John emphasizes that because the message surrounding pancreatic cancer is so negative, the psychological component and family advocacy are essential to keeping people with pancreatic cancer alive. “I have a great family who is so supportive of me,” he says, pointing to his family, which includes: Annie, his wife of 42 years; Gabriella, his 33-year-old daughter, her husband, Tim, and their 3-year-old daughter Lucia Susanna; John, his 29-year-old son, and his girlfriend Cora; and Timeo, his 20-year-old son. “It is so much easier on them as well as me to have this treatment close to home. Quality moments spent with them are priceless.” “Dr. Cohen knows how to ground the psychological with the physical. Cancer patients today are looking for someone with a deeper understanding of what science and technology have always brought to the human condition, and there is someone right here who truly understands this,” John says. In addition to raising hope, John is eager to use his story to raise awareness of the need for data sharing, fundraising for the small group of patients surviving with advanced pancreatic cancer and funding for research into a cure. “There are not a lot of solutions, and finding solutions will only come through a sharper attention, and money,” he says. “I will do anything I can to help raise awareness—I want charitable value to come from this.”

AS CHAIR OF THE CRANMER LEGACY SOCIETY AT MONMOUTH Medical Center, Karen Siciliano is on a mission to educate people about something near and dear to her heart: planned giving. The successful Long Branch businesswoman was inspired to take on this cause after experiencing two lifechanging events: First, Karen’s mother was just 60 years old when she lost her life to breast cancer after a misdiagnosis. Karen believes that if Monmouth Medical Center’s Jacqueline M. Wilentz Comprehensive Breast Center had existed then, her mother’s fate might have been different. A few years later, September 11 happened. At the time, Karen was putting in her 18th year as a successful Wall Street Karen Siciliano broker. For her, like many others in the region, the tragic event had a personal impact and forever changed Karen’s outlook on life. She lost 26 friends that day, many of whom worked in the World Trade Center at Cantor Fitzgerald. Karen tried to return to work one week after the terrorist attacks, but the “sights and sounds were raw.” Ultimately, she resigned. After a period of soul-searching, Karen landed on her feet and decided it was time to pursue something she contemplated six months before—running her family’s Red Bank-based business, Siciliano Landscape Company, L.L.C.

New outlook on life The combination of tragic events reminded Karen of how fleeting life can be and led her to Monmouth Medical Center. “I wanted to establish a legacy for my mother by contributing to the Wilentz Center,” she says. “By doing so, I keep her spirit alive through the breast center. “After going through these tough life experiences, I learned that there’s no better time than now to plan your legacy gift,” she

adds. “Many of the friends I lost on 9/11 did not have wills. It became important to me to put into writing where I wanted my assets to go when I’m no longer here. Through planned giving, I can take matters into my own hands. My planned gift will provide for everything and everyone that’s important to me.” Karen says that planned giving is one of the most painless ways to give. “It’s an IOU that puts money into purposeful use after your passing and leaves the world a better place,” she says.

“The apple doesn’t fall far from the tree.” It’s a phrase that comes to mind after meeting New Jersey native Daphne Oz, 30, a prolific food author and co-host of TV’s The Chew. And that’s fine with her—it means she’s already got you thinking about a food that’s both healthy and fun. Daphne is the daughter of renowned cardiologist Mehmet (“Dr. Oz”), and like her father she spreads the gospel of good health. Eating right is key, of course, but to her that means foods that aren’t just beneficial, but enjoyable too. “I refuse to eat food that is only fuel,” says Daphne. The child of two published authors—mom Lisa is also a producer/actress—Daphne broke into print herself as a student at Princeton University in 2006 with The Dorm Room Diet, a book designed to help students avoid putting on the “freshman 15.” She scored another best seller in 2013 with Relish: An Adventure in Food, Style, and Everyday Fun, which combined recipes with career counsel, relationship tips and personal experiences. This fall she’s out with a new volume, The Happy Cook: 125 Recipes for Eating Every Day Like It’s the Weekend, which features everything from kale-and-plum salad to coconut-mango pancakes. Daphne has made guest appearances on her dad’s The Dr. Oz Show—naturally—but also pops up on Good Morning America, The View, Fox & Friends, Good Day New York and The Rachael Ray Show. A frequent health lecturer and motivational speaker, she’s active with HealthCorps, a nonprofit organization she helped to

establish that advises teens on nutrition, exercise, body image and stress. But her two favorite topics these days are Philomena (almost 3) and Jovan (age 2)— her kids. They kept popping up when Monmouth Health & Life caught up with her recently for a wide-ranging chat— read on for more. When you visit your parents in New Jersey, do you stay at their home? Yes! It’s the best. My kids are in paradise when they get to see their grandparents. I’m there almost every weekend. Is there anything you’ve learned from your parents that you hope to pass on to your children? “Work hard and have fun!” What do you remember from your days attending school in New Jersey? Amazing teachers—and lots of work. We took great field trips to study the Hudson River and cared for a “baby egg,” which is very different from having actual babies, as it turns out. I remember spending a couple of months researching a history project in which we had to act as a historical figure for a day. I was Cleopatra! What was New Jersey like as a place to grow up? The best of both worlds. My parents chose it because of its proximity to my dad’s work at Columbia Presbyterian in New York. They wanted to be near the city but also give their kids space and a more laid-back growing-up experience. Which three words best describe you? Wife, mother, talker. What do you love most about motherhood? Morning cuddles and chatterbugs. My kids wake up extra talkative and loving in the mornings. I also love bedtime stories and hearing the crazy things that come out of our daughter Philomena’s mouth— she’s hysterical. Given your hectic schedule, how do you achieve a work-family balance? My sense of balance is always being recalibrated. Some weeks I feel like I’m working nonstop and missing time with my kids and husband. Other weeks I get to spend all day with them and take a break from the grind. The trick is to enjoy what you’re doing in that moment. I try to get into

my home kitchen most days, even if it’s just for 15 to 30 minutes. Cooking relaxes me, and it lets me come back to center in a rewarding way. As a writer and speaker on health, what’s your own big health concern? Just trying to lose baby weight, slowly but surely. Food and cooking always feel like a celebration to me, and my goal is to find the balance where I can enjoy my food and get back to feeling strong in my body too. It’s a process. I follow my two-bite rule on The Chew: the first bite is just to check out all the flavors going on. The second is to really indulge. What are your nutritional staples— and your guilty pleasures? My kids and I have smoothies in the mornings as an insurance policy for the rest of the day. Theirs has yogurt, banana, avocado and spinach—sometimes I’ll add foods with essential fatty acids and vitamins C and D. Mine is a protein shake I blend up with all my vitamins and supplements. I keep fresh flavor boosters on hand to dress up simple meals—homemade pesto or chopped fresh herbs with lemon zest, olive oil and some nuts or grated garlic. I make big batches of lentils or quinoa on the weekends that I can throw into recipes all week long, and we have a lot of lean protein. My guilty pleasures are homemade cookie dough, brownies à la mode, French fries and pizza. Any foods you’ve banished from your life? No. I don’t rule things out because they become taboo and have control over you. What’s your exercise routine? These days, most of my working out is chasing my children around. But when I get to a workout class, I love DanceBody and Ballet Beautiful. I also love to find old Steve Ross yoga routines on YouTube. In a few words, what’s your new book’s mission? To give people confidence in the kitchen with recipes guaranteed to make them look good. What do you hope people remember about you and your TV show? I hope seeing how much fun we have helps people get comfortable in the kitchen. We always talk about how lucky we are—we get paid to eat delicious food and hang out with great friends!

“This one was given to us by one of my grandmother’s friends, and it’s pure decadence. Plan to make twice the recipe.” Ingredients

1 ( 8.5-oz. box) Jiffy corn muffin mix (or vegetarian equivalent) 1 can cream-style corn 1 can corn niblets, drained ½ cup butter, melted 2 eggs, beaten 1 cup sour cream Directions

Mix all ingredients together in a large bowl. Grease an 8-inch-by-10-inch pan with butter and pour in mixture. Bake at 350°F for 55–60 minutes. Serves 6. CHRISTMAS BUTTER COOKIES

“Our traditional Christmas cookies. Perfect in every way!” Ingredients

1 cup butter 1 cup, plus 1 Tb. sugar 1 large egg 1 tsp. baking powder 2 Tbs. orange juice 1 tsp. vanilla extract 2½ cups sifted flour Directions

Mix first six ingredients with electric mixer until fluffy. Gradually stir in flour by hand until combined. If you use a cookie press, don’t chill dough. Otherwise, wrap disks of dough in plastic wrap and chill in refrigerator at least two hours. Roll out dough to ¼-inch thick and cut shapes with your favorite cookie cutters. Bake at 350°F for 8–10 minutes. Watch cookies—when they are golden around the edges, they’re done! Makes 50 small cookies. monmouth he alth & Life

Coarse salt & rosemary focaccia This is an easy, popular bread to make and results in a generous slab that everyone can share. Ingredients n 1 batch olive dough, rested for 1 hour (see page 44) n 4 Tbs. olive oil, plus a little extra n A few sprigs of fresh rosemary n Good-quality coarse salt, such as kosher salt Quantity: 1 large slab Preparation: 20 minutes Resting: 2¼ hours 2nd Rising: 45 minutes Baking: 25–30 minutes

Directions With the help of the rounded end of a dough scraper, turn the dough out onto an oiled tray. Drizzle the oil over the dough, then, using your fingers, push and prod the dough so that it spreads from the center toward the edges of the tray—but try not to stretch or pull it. Cover with a lint-free dishtowel and let it rest somewhere warm and draft-free for 45 minutes. Prod the dough again, dimpling it with your fingertips, and rest for 30 minutes more. Preheat the oven to 475°F. Take the leaves off the sprigs of rosemary and push them evenly into the dough. Sprinkle the coarse salt over it and immediately put into the preheated oven. Turn down the heat to 425°F and bake it for 25 to 30 minutes, until it is light golden brown. Remove from the oven and slide onto a wire rack to cool. Brush with a little more olive oil while it’s still hot.

Bread Shots

These are tiny pieces of dough, which make unusual little canapés to pass around with drinks. Ingredients 1 Batch: n White dough, rested for 1 hour (see page 44) n Flour for dusting n A little olive oil for greasing, plus extravirgin olive oil for finishing Quantity: About 30 bread shots Preparation: 20 minutes Resting: 1¼ hours 2nd Resting: 45 minutes Baking: 8–10 minutes

selection of 2 or more fillings: n Pesto n Tomato paste: Mix some finely chopped herbs into some good-quality tomato paste n Olive paste n Cheese: Choose a strong-flavored, mature hard cheese, cut into ½-inch cubes n Walnut halves n Good-quality, whole, pitted olives

Directions With the help of the rounded end of a plastic dough scraper, turn the rested dough out onto a clean counter and, with the flat edge, divide it first into five 6-ounce pieces, roll each piece into a log, cut each log in half, then cut each half into three, to make 30 pieces. Roll each piece into a tight, smooth ball. Place the balls onto a flat-edged baking tray that has been lightly greased with oil (make sure there is space between them or they will touch as they rise) and let them rest for 15 minutes. Dip the handle of a wooden spoon or your index finger into the flour and then push it into the center of the first ball. Put a little of your chosen filling into the well you have made. Repeat with the remaining balls. Let the balls rise for 45 minutes on a baking tray, covered with a lint-free dishtowel. Preheat the oven to 475°F. Put the tray into the preheated oven and mist the inside with a water spray. Turn down the heat to 425°F and bake for 8 to 10 minutes until they are light golden brown. Remove and let cool a little, so that they are just warm before serving. Brush with a little olive oil to give a nice sheen and an extra layer of flavor. Part-baking in advance: Bake the shots for 4 minutes, leave to cool and store in a plastic bag in the fridge. When you are ready to serve, put them back in the oven (again at 425°F) for a few minutes until they color.

Olive, herb & romano sticks The flavors of these breadsticks are very southern Mediterranean. If you like, you can serve them with a little dish of good extra-virgin olive oil to dip them into. Ingredients n ½ batch white dough, rested for 1 hour (see page 44) n 4 oz. purple olives, such as Kalamata, pits in (¾ cup) n 2 oz. grated Romano cheese, or Parmesan if you prefer (1 cup) n 1 tsp. herbes de Provence n Cornmeal for dusting Quantity: 12 breadsticks Preparation: 20 minutes Resting: 1 hour 2nd Rising: 30–45 minutes Baking: 10–12 minutes

prepare Pit the olives and cut each one roughly into three. Mix the olives, cheese and herbs together in a bowl. Directions With the help of the rounded end of a dough scraper, turn the dough out onto the counter, lightly dusted with cornmeal. Using your hand, flatten out into a rectangle about ¾-inch thick. Sprinkle the cheese and olive mixture on top and press it into the dough with your fingertips. Fold one third of the dough into the center and press down with your fingertips. Then fold the opposite side over on top (as if you were folding a letter to put into an envelope). Press with the palms of your hands to work the olives

into the dough. With the flat edge of a scraper, cut the dough width-wise into 10 to 12 strips about ½-inch wide. Flour the counter with cornmeal. Twist each strip and roll them a little on the counter so they stretch to the length of your baking tray (nonstick, or covered with foil so that the cheese in the dough doesn’t stick to the tray) and place the strips on top, leaving a good gap between each one. Cover with a lint-free dishtowel and let rise for 30 to 45 minutes. Preheat the oven to 475°F. Put into the preheated oven. Mist the inside with a water spray, then bake them for 10 to 12 minutes until golden brown. Use a spatula to lift them from the baking tray. Cool on a wire rack.

Make the dough White Dough n 1/3 oz. fresh yeast (preferably) or ¼-oz. envelope active dry yeast (1½ tsp.) n 18 oz. white bread flour (about 3¾–37/8 cups) n 2 tsp. fine-grain salt n 13 oz. water

Preheat the oven to 475°F (or as high of a temperature as the oven will go). Rub the yeast into the flour using your fingertips as if making a crumble. Add salt and water. Hold the bowl with one hand and mix the ingredients around with the other (or use the rounded end of a scraper) for 2–3 minutes until the dough starts to form. Continue, according to the steps below. Olive Dough n 18 oz. white bread flour (about 3¾–37/8 cups) n 2 Tbs. coarse semolina n ½ oz. fresh yeast (preferably) or ¼-oz. envelope active dry yeast (1½ tsp.) n 2 tsp. fine-grain salt n 5 Tbs. good quality extra-virgin olive oil n 12 oz. water Mix the bread flour and semolina together and rub in the yeast, using your fingertips as if making a crumble. Add the salt, olive oil and water, then continue, according to the steps below. Step 1 Begin to work the dough. Slide your fingers underneath it like a pair of forks, with your thumbs on top, swing it upward and then slap it back down, away from you, onto the counter (it will almost be too sticky to lift at this point). Stretch the front of the dough toward you, then lift it back over itself in an arc (to trap the air), still stretching it forward and sideways and tucking it in around the edges. Keep repeating this sequence.

Step 2 Keep working the dough until it comes cleanly away from the counter, begins to look silky and feels smooth, firm-but-wobbly and responsive. Continue for 5 minutes.

Step 3 Flour the counter lightly, place the dough on top and form it into a ball by folding each edge in turn to the center of the dough and pressing down well with your thumb, rotating the ball as you go. Turn the whole ball over and stretch and tuck the edges under.

When they ask where you got that (Grenada) tan, just smile. By Rita Guarna

Admit it: When you find an amazing restaurant or boutique you’re sometimes tempted to keep it to yourself lest it “go mainstream.” That’s how I felt when I visited Grenada. Though it was spotted by Christopher Columbus on his third voyage in 1498, it’s not on many Caribbean travelers’ radar, so it’s unpretentious, rugged and real. How nice it would be to keep it that way. I’d visited the island 100 miles north of Venezuela years ago and marveled at how relaxed I felt—even though that was the first (and so far, thankfully, only) time my luggage was lost. So recently when I was in dire need of a little R&R, I headed back, with plans to do nothing more than morning yoga, some vegging on the beach and a little sightseeing. I found the perfect home-away-from-home at Laluna, a bohemian-luxe resort on Morne Rouge Bay. Its 16 one- and two-bedroom cottages and villas are set in the hills amid 25 secluded acres, each cottage with its own private veranda and plunge pool. Designed by Gabriella Giuntoli, creator of Giorgio Armani’s villa on Panarea in the Aeolian Islands, the intimate bungalows feature open floor plans, thatched roofs and indoor/outdoor bathrooms. “It’s all about barefoot luxury,” explains Bernardo Bertucci, the resort’s owner and as unlikely a hotelier as you’ll ever meet. A 15-year fashion-industry marketing executive, he had no experience in the hospitality business, unless you count simply being from Italy. Working for brands including Prada, Armani and Bell Logo, parent company of Tod’s, he fell in love with Grenada and decided that clothing the elite wasn’t so different from catering to their vacation needs. As a result, there are daily complimentary classes in yoga and meditation in a beachfront pavilion and an authentic Asian spa with Balinese therapists. When I met Bernardo, he declared us paisanos—compatriots, more or less—as he’s from the same region, Calabria, as my father. But when he discovered that my mother hails from Sicily, he took to calling me Siciliana, a nickname that stuck during my visit. Unlike larger resorts, this one makes you feel like a treasured houseguest of a host who’s kind and gracious without being overly intrusive.

Then there’s the food. A beachfront Italian (natch) restaurant serves up Bernardo’s favorite dishes with ingredients flown in from his native land. These include tuna preserved in extra-virgin olive oil for 12 months, olive oil from the Bertucci family farm in Calabria, Parmesan cheese, tomatoes, olives (which are delicious!) and Pasta Conte, artisanal pasta from southern Italy, which is only available there. To this mix, Bertucci adds local fish and Grenada’s spice bounty—not for nothing is this place known as “the spice island”; it’s a leading producer of cinnamon, cloves, ginger, allspice and nutmeg. My favorite plates included an octopus salad with potatoes, chickpeas, sun-dried tomatoes and snap peas and olives; a chilled seafood salad loaded with shrimp, calamari and scallops with olives and capers; and Grenadian spiced pumpkin soup, which was creamy without being heavy and had a nice ginger taste. To wash down the great food, there’s a full bar. The resort’s signature drink, the Laluna Mist, is made from pineapple-lime slush, citrus vodka and blue Curaçao and is both pretty and tasty. In keeping with the Italian vibe, however, my drink of choice was a refreshing Aperol Spritz, a combo of prosecco with a splash of Aperol, a bitter liqueur, and club soda garnished with an orange. For those who’ve never tasted it, Aperol is akin to Campari but less bitter (and with far less alcohol). Between the sunshine and the great food and drink, it’s easy to become a true sloth here—Grenadians like to “lime,” a verb that basically means “chill out”—but that would be a mistake. The 120-square-mile island boasts beautiful waterfalls (Seven Sisters Falls inside Grand Etang National Park is the one we visited), nutmeg factories, cocoa plantations and a rum distillery, and all are worth seeing. Or do as we did and check out the island from the sea. We set sail for a few hours aboard Savvy, a 43-foot sloop, which leaves St. George’s harbor. Go snorkeling at Molinere Underwater Sculpture Park and then take in one of the most gorgeous sunsets I’ve ever seen. Keep Grenada secret? Ah, but the guilt would torment me. This place is too special not to share.
