I am so happy to be an integral part of this redesign and to join Wainscot Media as the Editor in Chief of the Health & Life family of publications. I spent most of my publishing career, more than 13 years, at Country Living magazine as an editorial director and style maven, traveling across the U.S. uncovering unique places, people and trends to share with readers. We’re not talking Alka-Seltzer—we’re talking bath bombs, those tablets that bubble and fizz in the tub, making you feel as if you’re bathing in champagne! To make your next bath a super-soothing indulgence, why not try whipping up your own tension-taming bath bomb? Blend 4 drops chamomile or lavender essential oil into ½ cup almond, canola or sunflower oil. Next, combine 1 cup baking soda, 1 cup citric acid powder, ½ cup cornstarch and the oil mixture until if forms a crumbly dough. Pack the mixture into a 12-cup minimuffin tin, let set overnight and unmold in the morning. Store in a sealed plastic container in a cool, dry place, and they’ll keep indefinitely. To find your inner bliss, here are Davis’ step-by-step instructions: • Set aside 5–10 minutes each day. Keep time with your cell phone or a non-ticking timer. • Choose a tranquil spot. Sit comfortably in a chair with your spine and neck in a straight line. • Choose a peaceful word (such as “om” or “peace”) to allow your mind to be still. Slowly breathe in and out through your nose, saying your word to yourself on each inhale and exhale. • It’s normal to have thoughts come up. “Use your word as a sword” to push them away, Davis suggests. • When done, sit in the stillness for a few minutes. It’s such a good match to help clients train their abs and protect their lower backs.” Want to increase your core strength and alleviate lower back or hip pain? Pohuja suggests a move called the Scoop: • Lie flat on your back with both knees bent and your feet flat on the ground, knees and feet in line with your hips. • Place the palm of your hand underneath your lower back. • Tighten your abs and gently push your back down toward your hand, doing a small pelvic tilt movement. • Hold for 10 seconds; breathe deeply and evenly. • Relax and release for 30 seconds, then repeat 7‑8 times. • Do it daily for best results.

eeping in mind this month’s focus on mind, body and soul, doesn‘t it make sense to get your financial house in order? I know having a financial plan for my business and future lets me rest a bit easier at night. What better time to start planning than right now! Most of my articles have been focused on individuals entering or just finishing the divorce process. Why? Too many people come to me after the fact—when things can’t be changed or someone didn’t fully understand the consequences of their decisions. Whether you are single, married, a domestic partnership or recently divorced, planning at every stage needs to be addressed.

5 Steps to financial well-being

FocuS on what iS poSitive in your liFe. Sounds simple, yet too many people beat themselves up over bad financial decisions and never move forward. Stop talking about how much you home was worth in 2007. Stop analyzing about how high your retirement account was before the market crash. Stop talking about how you almost bought Apple stock at 100. Look for positives—have you been contributing to a 401(k)? Do you have a good credit score? Do you have a job and your health?

Get a handle on your “real” Financial Situation. Have you ever prepared a net worth statement? Do you really know how much you waste each month on non necessity items that could go toward paying down debt or increasing you retirement contributions? Here’s an idea– carry a mini notepad in your purse or briefcase and write down every dollar you spend over the next 2 weeks.You will begin to see a “trend”. I tracked my expenses for a month and was shocked to see how much my morning coffee and bagel added up to. I am not saying that you can’t splurge now and then, but if you are serious about establishing a college fund for your kids, maybe that extra seventy-five dollars on coffee could go to a 529 plan each month.

Set 1 or 2 GoalS and Stick with it. Too many people try to tackle all of their

financial issues at once. Start with building an emergency fund or reducing credit card debt. Once you see some progress, it makes it easier to move on to more issues. Establishing and acheiving your financial goals is similar to a training regimen followed by sucessful athletes.

orGanize your documentS. Do you know where everything is and how much you are worth? Do you have copies of your birth certificate, passport, social security card and credit cards? Do you have power of attorney? Make it a priority to organize your important documents. Consider services that can digitally store all of your documents and aggregate your financial accounts in a private and secure location. If something happened to you tomorrow, could your spouse or child be able to find everything?

The numbers are scary, but the reasons are always the same. “I don’t have time”. Most people do not want to address issues like death or disability. It’s too uncomfortable. Chrissy Valerio turned h e r pa s s i o n for fitness i n t o a t h r i v i n g b u siness The Bar Method Shrewsbury is a fitness studio that teaches The Bar Method, a workout program that is popular in studios around the country. Owner Chrissy Valerio was a student in such a program who took classes regularly. Inspired by her results, she opened the Shrewsbury franchise in September 2008. WHAT IS THE BAR METHOD? It’s an intense one-hour, non-impact workout that integrates interval training, isometrics and dance conditioning to quickly burn fat and build muscle. The idea is that you use your own body weight to create resistance and work the major muscle groups. Stretching is also an important part of the workout—we stretch at intervals throughout the hour to increase flexibility. A ballet bar is used for much of the class, although you don’t have to have any prior dance training. We also incorporate straps for stretching and light free weights to build strength. WHAT MAKES THE WORKOUT DIFFERENT FROM OTHER EXERCISE OPTIONS OUT

The Bar Method has a big focus on safety. The founder, Burr Leonard, designed the workout with the help of physical therapists so that it wouldn’t cause injuries. What also makes it unique is the commitment to individual attention, since proper form is so important. It’s almost as if you’re getting personal training in a group setting. WHAT WILL THE BAR METHOD DO FOR YOUR BODY? It will give you a lean, sculpted physique and also help improve posture and flexibility. My students tell me they notice definition in their arms, legs, glutes and abs that they’ve never seen before. WHY DID YOU DECIDE TO OPEN A BAR METHOD STUDIO? I started out as a professional dancer and then worked as an esthetician. After taking Bar Method classes, I noticed amazing changes in my body that I hadn’t seen since my dancing days. W

e all long for a harmonious home—a tempting space where color and texture blend seamlessly and each room has a visual connection with the next. A home so well-planned you can chat on the phone while stirring supper, where work lights are aptly placed, and there’s always a connection for the laptop. Even better, one whose space configuration perfectly matches your lifestyle, whether that means flexible areas for socializing or a tiny cottage for two. In an ideal world, we’d all reach design nirvana with a newly built home. The reality, however, is that most of us will need to tweak the property we already own. The first step in creating a harmonious home is to think through why an existing home isn’t working, and how it may be altered. Is the lighting system beyond its years? Do you have to run from room to room to answer the phone? Apply these thought processes across the whole home, not just to random rooms. Think of it as a home health-check. And when it’s time for decorative decisions, the whole-home approach makes light work of creating a cohesive scheme. Many of us plan individual rooms with little thought to how everything hangs together visually. Yet the dynamic of any home is that we travel constantly through it catching glimpses from room to room, even moving furniture between spaces. So it makes sense to pick a limited palette of colors and surfaces, which can be reinterpreted around the house, giving balance and contrast. In its simplest form, a unifying hard surface might be wood flooring that runs across the ground floor. Or it may be the decision to choose polished plaster walls throughout, or oak-paneled storage everywhere. When it comes to fabrics, plan schemes in the context of the whole home so that key textures or patterns repeat from room to room. Plain curtains or Roman blinds, all identical, can be wonderfully unifying. So, too, can the same slip covers in every room: white cotton, say, or linen. If it’s difficult to work out which fabrics will suit a variety of rooms, get a large sheet of cardboard, sketch out every room on a particular floor, then start to assemble fabrics. You will soon see if a gray denim upholstery

or cream linen curtains will work well throughout. As for color, a home feels calmer if colors blend smoothly throughout the whole interior. A carefully chosen palette (from three to six shades) can be reworked in varying tones and quantities in every room. The core palette will depend not just on the colors you personally find uplifting, but on how light or dark the property is, whether the planned mood is cozy or tranquil, and if the desired decorative effect is dramatic or soothing. The best homes have a balance of great spaces. Be they boxy and modern or a mix of big and small, it’s not dimensions that matter, but the ebb and flow from intimate space to open-plan and back again. If you have a big room, list the room’s good and bad architectural points. How can you enhance or correct them? Decide what your focal point will be. Do you need to add one? Ask yourself what functions the large space must fulfill. How will you arrange furniture to create different activity zones? Does your furniture look in proportion? If you have small rooms, consider visual tricks to prevent claustrophobia. A room will seem bigger if the borders between individual planes (walls, floors, ceiling) are blurred. So try painting everything in one color. Check that a fireplace and mantel aren’t too large for the room, and plan treatments that elongate, rather than shorten, windows: full-length curtains, not tiny blinds. It’s a common misconception that large furniture clutters up a small room. In fact, it can actually make it feel larger. So use

scale cleverly, to trick the eye. A four-poster bed can make a bedroom ceiling seem higher; a generous round table sociably fills a dining room. The key is to keep furniture shapes streamlined, accessories bold yet minimal, and—most important—plan room layouts for ease of movement. Just as every lifestyle is unique, there’s only one individual who can guarantee a truly personalized environment—and that is you. So take responsibility for it. Time spent planning a tailor-made home shouldn’t be a chore, but a pleasure. Enjoy the ride.

As she progressed in her yoga practice, however, she realized she was getting a lot more than she bargained for: She was experiencing a change not just in her body, but in her mind as well. “I noticed so much more than just a physical improvement. Over time, I realized I was also learning how to relax and calm the mind, and it carried over into helping me feel happier and stronger in my everyday life,” says Mezzina, who is now a certified yoga instructor teaching at Yoga Plus Herbs in Marlboro and Centrastate Fitness & Wellness Center in Freehold. Through the holistic practice of yoga, Mezzina learned a valuable lesson: Being healthy doesn’t just mean keeping your body fit; it means taking charge of your whole well-being—body, mind, and spirit. Countless studies confirm that there is an inseparable connection between mind and body. One such study, done by a Harvard researcher, shows that more than 60 percent of doctor visits are due to stressrelated issues. In other words, your thoughts and stress can actually make you sick. Experts agree that exercise is one of the best things you can do to relieve stress, improve mood and benefit overall health. Not only does it improve cardiovascular health, flexibility, coordination and strength, it also releases endorphins, lowers stress hormones and ups your energy level. To get even more of a mental boost, you could try a mind-body activity such as yoga or tai chi, which helps you be mindful of your present thoughts and breathing patterns and promotes inner calm. These practices have been shown to relieve stress and improve health in various ways. “I have patients who come to the center to do yoga and experience an improvement in blood pressure,” says Dr. Berger. But you don’t need to become a Zen master to include mind-body activity in your life. Almost any exercise can have a mind-body component if you simply shift your mental focus while doing it. Whatever it is you like to do, whether it’s walking, yoga, gardening, dancing or kickboxing, do it mindfully—take in the environment, listen to your breathing or feel the beat of the music in your core as you dance—and you’ll give your mind as big a boost as you give your body.

Come On, Get Happy

Another key way to make yourself healthier and more energetic is to make yourself happier. And as you can imagine, there are many ways to accomplish that if you give yourself the opportunity. For instance, take time—even if it’s just a few minutes a day—to do something that relaxes you, such as reading a soothing book, doing a crossword puzzle or picking up a new hobby like playing guitar. Not only will you enjoy yourself, but these activities will also sharpen your mind and boost your memory, says Dr. Berger. “Learning a new task, such as playing an instrument, builds synapses in the brain, thus improving its function,” he says. Or, to bring more joy into your life, simply take time to de-clutter your mind. Meditate, write in a journal or just breathe deeply while thinking of a happy place. “Take a few minutes to inhale fully and exhale while you don’t allow yourself to think of the tasks you need to do,” says Dr. Berger. The increase in oxygen and the unburdening of your mind will help ease headaches and stress, he says. Another way to get happy is to connect with others. After all, we are social creatures, and research shows that people with social ties actually live longer. So have lunch with a friend, snuggle with your spouse or volunteer in your town. Staying socially connected and giving to others will help you feel good spiritually, lower stress and ultimately make you healthier.

Nutrition Know-How

Anyone who has ever skipped a meal could tell you that when you don’t eat regularly (or healthfully), you end up feeling cranky, lethargic and depleted. That’s because taking in nutritious fuel on a regular basis is key to the proper functioning of your body and mind. “Avoid the processed junk food and go for whole foods that are free of chemicals and are in their most natural state,” says Dr. Berger. So instead of grabbing a fat-filled muffin on your way to work or a processed bag of chips for lunch, put pure, nutrientdense, fiber-rich foods (such as whole grains and vegetables) into your body throughout the day—and don’t forget to keep a drink of water handy (aim for eight 8-ounce glasses a day). You’ll keep your blood sugar stable (which will reduce mood swings and cravings), your energy up, your waistline in check and your mind clear.

Sleep Sense

Most Americans skimp on sleep because we feel our lives are too busy to fit it in, but we all would be wise to make time for more shuteye. “Sleep is a huge factor for physical and mental health since sleep is when the body and mind heal,” says Dr. Berger. “Without adequate sleep, we accelerate deterioration and the aging process.” To ease yourself into a calming bedtime routine, don’t exercise within two hours of going to bed, turn off the TV or computer in your room, don’t eat heavily right before lying down, and try to still your mind before sleep. This will send you on your way toward a restful night, which will replenish both your body and your mind for the next day.

The American Cancer Society recommends that women age 40 and older do a breast self-exam monthly and get a clinical (physical) breast exam by a health professional and a mammogram every year. If you are at increased risk for breast cancer, you may need to start screening earlier and get additional tests. Many experts recommend DRE and PSA every one to two years for men age 50 and older. Discuss this with your doctor based on your personal and family history because experts disagree as to when testing should start and how frequently it should be done. Vibrant—the word is akin to a mantra for Nicholas Harary, owner and chef of Restaurant Nicholas in Red Bank. The CIA-trained master uses the word to describe a dish in which each ingredient retains its integrity. His inspiration? “I’ll never forget a meal I ate at Bouley in New York City about 20 years ago,” he says. “It was a veal entree with about three components, and I was struck by the concentration of flavors—each was so intense. I said to myself, ‘This is how I want to cook.’” To achieve the same vibrance in his own dishes, he uses ingredients like organic chickens from Pennsylvania and genuine day scallops—they’re caught on a boat that trolls the waters around Barnegat Bay and returns daily, unlike other “day boats” that are out to sea for 21 days. “That means our scallops are never out of the water for more than a day,” he says. Served with ingredients that reflect the season, they’re among the most popular items on the menu. Another favorite: the chicken. That’s right, the chicken! Maybe because it takes three days to prepare. It’s brined for 24 hours, dried on fans, then roasted in an oven providing both steam and dry heat. The result: “The chicken gets a nice crust, and since the brine soaks to the center, it’s moist inside,” says Harary. What’s in the brine? Salt and water. “A lot of people think the more you add to a dish, the better it’ll taste,” he says, “but I say the more you take away, the better it’ll taste.” Call him the Coco Chanel of cooking.

Pickling liquid: 1 quar t apple cider vinegar 1 tablespoon salt 1 clove garlic, chopped 1 shallot, chopped 2 tablespoons coriander seed 2 tablespoons fennel seed 1 Thai chili pepper 1 bay leaf 5 sprigs parsley 5 sprigs thyme ¼ cup sugar Preparation for pickling liquid

Place all ingredients except for the parsley and thyme in a large pot and bring to a boil. Reduce heat and simmer for 45 minutes. Remove pot from heat, add fresh herbs and let steep for 1 hour. Strain. Preparation for roasted beets

Preheat oven to 425 degrees. Remove any stems from the beets and discard. Separate beets by color so that the colors do not bleed into each other. Toss beets in oil, season with salt and wrap tightly in foil. Place foil packs on a sheet pan and roast on the middle oven rack for 30 minutes. Use paring knife to check tenderness (if the knife pierces through with no resistance, the beets are done). Remove from foil and let cool for an hour. Wearing a pair of rubber gloves, remove skin. Cut the largest beets into quarters and the smaller ones into halves. Place each variety into a separate container and cover with warm pickling liquid. Let cool on countertop, then refrigerate. Assembly

Remove the bottom stem from head of frisee, then trim into bite-size pieces. Toss the frisee with 1 tablespoon of the pickling liquid. Salt and pepper. Place 1 cup of dressed frisee on the center of the plate. Alternate beets by color around frisee and top each beet with half a walnut. Drizzle with olive oil.

Via 45 Don’t go to Via 45 in Red Bank if you’re not prepared to sit, relax, enjoy … and wait a bit longer for your food. See, owners and chefs Claudette Herring and Lauren Phillips Daly prepare each dish especially for you. “Nothing is pre-seared, pre-seasoned and sitting around,” says Herring. “We cook everything to order.” It’s about respect for the diner and respect for the food, a philosophy that was bred into the native of Pisa, Italy. “My mother used to go to the markets every day; she taught me that food should be fresh, local and simply prepared.” Which is why Herring generally uses no more than five ingredients per dish. Whole branzino, for example, is stuffed with herbs and fresh-cut tomatoes and grilled with olive oil and lemon. And you can be sure those ingredients have been hand-selected by the chefs themselves. “We love to see, touch and smell the foods we present,” says Daly, Via 45’s pastry chef. “For us, a trip to the market is like going to a toy store.” Of course, picking foods

each day means the menu is far from carved in stone. It changes daily, showcasing the duo’s creativity and versatility. “We even allow guests to recreate dishes to their liking,” says Herring. “We can accommodate vegans, vegetarians and those who want to eat gluten-free.” Adds Daly: “We want everybody to be able to sit at the table and share a meal, no matter what.”

Heat oils in a pan. Add onion and sausage, salt and pepper to taste and fresh herbs. Cook until onions and sausage are slightly golden. Add sherry. Add mussels. Add stock. Let simmer until mussels open. Add plum tomatoes. Toss and reduce the broth by half. Serve in a bowl with five basil leaves on top. Enjoy!

Today’s organic and biodynamic wines aren’t just good for you and for the planet, they’re also delicious

If you’re a wine drinker who is concerned about protecting both your health and the environment, there’s good news. These days, vineyards that use healthy, environmentally friendly growing techniques are producing some of the tastiest wines in the world. “The taste of organic and biodynamic wines has definitely improved,” says Dick Wilson, wine manager of Rumson Wine & Spirits in Rumson. “We see more and more customers coming in asking for these wines.” It’s no wonder. Organic and biodynamic wines aren’t just kinder to the soil; there’s evidence that they’re kinder to our bodies as well, containing more of the cholesterol-reducing compound resveratrol and more vitamin C, iron, magnesium and phosphorous. For a wine to be called organic, says the U.S. Department of Agriculture, it must come from a vineyard that for at least three years has

refrained from using genetically modified seeds, chemical fertilizers or pesticides. USDA labels that say “100 Percent Organic” or “Organic” (which requires that 95 percent of ingredients be certified organic) also mean that no sulfites have been added, while the phrase “Made with Organic Grapes” means that a wine has been produced using at least 70 percent organic ingredients, and sulfites may have been added up to 100 parts per million as a preservative. (A word to the wise: Foreign labels may say “Certified Organic” even when the wine falls into the USDA’s “Made with Organic Grapes” category.) Sulfites occur naturally in wine in small quantities because they’re a by-product of the fermentation process. They have also been added to wines for centuries to prevent oxidation and spoilage. But for about 1 percent of us, sulfites can cause allergic reactions such as asthma or stomach cramps. So if there’s a chance you’re allergic, stick with “100 Percent Organic” or “Organic” wine to avoid these added sulfites. But if you choose a wine from which even the natural sulfites have been removed, don’t expect it to last long. “They have a tendency to spoil,” warns Wilson. Biodynamic wines are another earth-friendly, pesticide-free option to consider. The term “biodynamic” means that a wine is made from grapes grown with an agricultural system inspired by the teachings of the early 20th-century Austrian philosopher Rudolf Steiner, who originated Waldorf schools—a system reputed to be better for the soil. To earn this label, a wine must meet strict standards set by an international certifying body called the Demeter Association. Biodynamic growing practices can sound a bit strange to the uninitiated. They include planting, pruning and harvesting according to the moon’s phases, and sprinkling a mixture that includes diluted cow manure on the vines. Critics complain that the biodynamic approach has little formal scientific support, but supporters say these wines excel in what the French call “terroir”—expression of the unique flavor of a wine’s place of origin. And a blind taste test conducted by Fortune magazine in 2004 gave biodynamic boosters some ammunition. Twenty biodynamic wines were pitted against similar conventional wines, and 19 of the biodynamics were declared superior.

Deduct job-search expenses. If you had to scramble for a new job in 2010’s tough economy, you’re not alone. However, while most relocating expenses for that new position aren’t deductible, expenses from the search itself are. Christie notes that they may include fees for consultants who help you prepare a resume, union dues, train and airplane fares, gas mileage, tolls and parking (but not, alas, that spiffy new suit for the interview). Enter these on Schedule A—even though it doesn’t specifically request them.

you can deduct medical expenses (including health-insurance premiums) only when they exceed 7½ percent of your adjusted gross income. “But you can deduct these expenses on your New Jersey state return starting after just 2 percent of adjusted gross income,” says Barbara Christie, a certified financial planner with TFS Income Tax Services in Lincroft. “That’s a special reason to be sure to keep complete, accurate records for tax time, which you should be doing anyway.”

Fund an individual retirement account (IRA). The law allows you to

put money into a 2010 IRA until April 18, 2011. Adding to your IRA—if you’re sure you can afford it—can reduce your tax obligation. (The deductibility of IRA contributions is phased out at certain income levels if you’re an active

participant in an employer-sponsored retirementsavings plan such as a 401K, but you may still qualify for a deduction—ask your tax preparer.) And if an IRA brokerage account charges you a management fee, says Christie, you can deduct that fee if you pay it by check, but not if it’s simply subtracted from your balance.

Deduct charitable expenses. Most people know they can take a tax deduction for a check written to a charity. But they may not realize they can also deduct other charitable expenses—for example, 14 cents per mile for driving to provide charitable volunteer services, such as delivering meals to the homebound.

Report first-time home buyer’s credits. You’re probably aware that this credit

was extended to include homes bought by May 1 of last year. But did you buy a first home in 2008? That year’s credit was temporary, and its 15-year

Claim education credits. Did you pay tuition in 2010 for schooling for yourself or a family member? Claiming one of two tax credits on Form 8863 may offer relief. The American Opportunity Credit (AOC), which debuted in 2009, covers—for the first four years of post-secondary education—100 percent of the first $2,000 of qualified tuition or related expenses and 25 percent of the next $2,000, to a total credit of $2,500 per student. Then there’s the Lifetime Learning Credit, which covers 20 percent of the first $10,000 in tuition paid. Ask your tax preparer which education credit is better for you. Each is phased out at certain income levels, which are lower for the Lifetime Learning Credit, where phaseout begins at a household income of $100,000 for married couples filing jointly.

Report health savings account activity. These accounts (not to be confused

with flexible spending accounts) are offered by a growing number of employers to employees who choose health insurance plans with low premiums and high deductibles—they’re a way of putting money aside to pay medical expenses tax-free until you meet those deductibles. You can deduct contributions on your tax return. Check Form 1099-SA, which you’ll receive from the plan sponsor, and be sure to report contributions and distributions—or you’ll risk a fine.
