October is Breast Cancer Awareness month, which provides a great opportunity to draw attention to the fact that mammography saves lives, as 75 percent of women diagnosed with breast cancer have no family history of the disease. Since opening in 1994, the Wilentz center has offered the most comprehensive array of services in the region and is committed to offering the most state-of-the-art breast imaging equipment for the early detection of breast cancer. In this issue you also can read about Monmouth Medical Center’s third annual Swing Pink Event, which raised money to purchase a highly advanced mammography unit that sets the new standard in mammography screening. Monmouth Medical Center is truly leading the way in quality breast care for the RWJBarnabas Health Southern Region. I am proud to announce that board-certified radiologist Cynthia A. Barone, D.O., formerly lead mammographer for the Wilentz Center, now serves as Regional Medical Director of Breast Imaging for Monmouth Medical Center, Monmouth Medical Center Southern Campus in Lakewood, and Community Medical Center in Toms River. In her new role, Dr. Barone is responsible for the overall clinical quality provided at all affiliated breast imaging locations which, in addition to Monmouth Medical Center, Monmouth Medical Center, Southern Campus and Community Medical Center, includes satellite Wilentz locations in Colts Neck and Holmdel. In addition, she will collaborate with physician and administrative leadership to develop new programs that improve access to breast imaging services for the communities we serve. OH, THE PERILS OF EDITING while hungry! Preparing Monmouth Health & Life’s annual food issue is a vicarious feast. But around midday there are certain articles we can’t edit, certain photo spreads we can’t plan, without either going crazy or breaking hurriedly for lunch. And that’s OK—good things to eat should be tempting. But have you noticed how the world has changed in recent years? Everyone seemed to have a friend or two who were considered “foodies.” They traveled far and near in search of fresh ingredients, exotic dishes and veggies whose names we couldn’t pronounce without the help of Google. Now their sensibility has been absorbed in the general culture. Today, we all want what we eat to be fresh, local if possible, sustainably produced and interesting. We hope the food featured in this issue piques your interest. In Local Buzz, you’ll find a cheat sheet for apple picking as well as an introduction to three new Monmouth eateries that are already making waves among diners (page 17). Dessert lovers should turn to “A World of Treats” on page 36, where we present nine international treats that have been satisfying sweet tooths for centuries. Yanni Erbeli is a native New Yorker of Albanian decent. Born and raised in Brooklyn, New York. At the age of 16, a friend who was working at the famous Oscar Blandi Salon, located at the Plaza Hotel, and at the time one of the top hair salons in the world, offered him a cut and style. The environment and the experience was magical. It made an impression upon Yanni. He wasn’t sure he was cut out to be a stylist, but the magical way he felt and the look he saw upon other clients faces in response to their couture coiffure, changed his life. THE SALON’S NAMESAKE YANNI, REMAINS ONE OF THE MOST SOUGHT OUT STYLISTS IN THE NATION.
WHO IS
At the age of 17, Yanni began beauty school and later that year he started working as a young apprentice at Oscar Blandi Salon. After only a year, Yanni found himself styling the tresses of celebrities and socialites. When he was just 19 years old, his reputation and skills caught the eye of Tatum O'Neill, who personally requested Yanni to style her for an editorial.
From that moment on, his career began to take off. When he turned 21, Yanni became a stylist at the Warren Tricomi Salon, which came to the Plaza Hotel. It was then that he felt he truly achieved his dream of becoming a sought-after hair stylist in one of the greatest salons in the world...or so he thought.
Shortly after, Yanni met his wife Taye. He realized that his life as a NYC stylist was not the end all be all and that he yearned to be a family man. The birth of their son Anden changed Yanni more than the city lights, celebrities, and prestige of a Manhattan salon ever could. Yanni realized that dropping everything to fly to an exotic island and style exclusive clients was not necessarily the life he wanted. He knew there was something even more exclusive the joy of having an amazing family. A few years later, Yanni left the city and became a stylist in a small salon in central New Jersey, where he saw a need for his expertise. He built an extensive clientele in 1 short year and then opened his first salon, Yanni Erbeli Salon in Red Bank, New Jersey. The idea behind it was to bring the same level of quality, service, and specialization he had experienced and offered in exclusive Manhattan salons.
Specialization is one of the key elements Yanni attributes to the success of his team. Each individual specializes in their particular craft - whether it be cut, color, or more intricate treatments and services - allowing them to focus on what they are great at. The top salons in the “meccas” of the hair industry do not have one stylist who does it all, they specialize. “Yes, all the skills are similar; however, a top chef does not prepare every course of a meal alone, they really on everyone in the kitchen. NEIGHBORHOOD FAVORITE Barrio Costero’s chef Anthony Bustamante has created a rotating seasonal menu that changes based on which market-fresh ingredients are available. Of course, tacos are on offer too, with Al Pastor (pork with smoked pineapple and jalapeño) and pollo (chicken with scallion créma and red onion) being standouts. During her visit, Maria Valades, 41, of Jersey City tried the Al Pastor and pescado (fish). “I liked the way the pineapple on the pork taco balanced out the flavors in the sauce,” she says. Her only regret? “Not trying more plates or giving the cocktails a chance!”

ALMOST 200 PEOPLE—MANY OF WHOM DONNED PINK ATTIRE— joined together at the Navesink Country Club in Middletown for the third annual Swing Pink event on Sept. 25 to benefit the Jacqueline M. Wilentz Comprehensive Breast Center at Monmouth Medical Center. The program, which sold out each of its activities, raised more than $60,000 to help purchase a highly advanced mammography unit, which provides patients with a low-dose digital exposure and excellent quality images. Swing Pink, led by co-chairs Debbie Memmott and Kara Short and supported by the Women of Wilentz, was a day filled with activity, lunch and celebration. The morning started with participation in tennis, paddle, golf or pickle ball, followed by a celebratory luncheon, underwritten by Sickles Market. Bill Arnold, president and CEO of Monmouth Medical Center, opened the luncheon with welcoming remarks. “Because of the generosity of our community and the dedication of supporters like the Women of Wilentz, our Breast Center is able to offer the highest level of care to our patients,” Arnold says. “We are truly leading the way in quality breast care for our community.” Guest speaker Lisa Becker, who was diagnosed at age 15 with the autoimmune disease Crohn’s, shared her health story with the attendees, detailing the fears and concerns many people deal with in living with chronic illness. She noted that after going through many years of challenges and surgeries, she ultimately was left with an overwhelming sense of gratitude for life as well as for the support of family, friends and a great medical team of doctors and nurses. “Having these special relationships with your medical team will enhance your outcome, so always speak out, ask questions and listen,” she said, urging the audience to take charge and be the “CEO” of their health. “You can’t control everything but you can control your actions and attitude. Everyone in this room will either experience a major medical event or have to deal with a loved one

who is going through one, and we all need to be prepared.” That gratitude fueled her with a desire to want to give back, a sense of wanting to help others. Becker not only started a company that did just that, she continues to provide hope for others who are going through difficult medical challenges. Becker, who continues to speak and share her story of survival and path to gratitude, is happily married with two children. The Jacqueline M. Wilentz Breast Center meets the needs of all women. Since opening in 1994, the breast center has offered the most comprehensive array of breast health services in the region. Because of the generosity of community supporters, the breast center offers state-of-the-art breast imaging equipment for the early detection of breast cancer.
MMC NAMES NEW REGIONAL MEDICAL DIRECTOR
Board-certified radiologist Cynthia A. Barone, D.O., has been named regional medical director of Breast Imaging for Monmouth Medical Center (MMC), Monmouth Medical Center, Southern Campus (MMCSC) and Community Medical Center (CMC). In her new role, Dr. Barone is responsible for the overall clinical quality provided at all affiliated breast imaging locations, which in addition to MMC, MMCSC and CMC, include satellite locations in Colts Neck and Holmdel. In addition, she will collaborate with physician and administrative leadership to develop new programs that improve access to breast imaging services for the communities MMC serves. Dr. Barone joined the breast imaging team at the Jacqueline M. Wilentz Comprehensive Breast Center in 2010. She previously served as the center’s Cynthia A. Barone, D.O. lead mammographer. The center recently
achieved status as a certified quality breast center of excellence—which is the highest certification level offered by the National Quality Measures for Breast Centers (NQMBC). An optimal level of care is offered through the latest technology and services, including: a Breast Cancer High Risk Assessment Program with access to genetic testing, whole-breast screening ultrasound and 3D mammography. After earning her medical degree from the University of Medicine and Dentistry of New Jersey, School of Osteopathic Medicine, Dr. Barone completed her residency in diagnostic radiology at the Pennsylvania Hospital. She then went on to complete her fellowship in body imaging at the Hospital of the University of Pennsylvania. “Dr. Barone’s education, work experience and clinical expertise make her highly qualified for this critical role within the Jacqueline M. A LASTING LEGACY DON SUMMA IS GIVING BACK TO THE HOSPITAL THAT SAVED HIS LIFE. DON J. SUMMA IS A MAN WHO HAS A CHALLENGE FOR everyone. After you have lived a long life, as Don has, you’ve earned the right to tell it like it is. For instance, the way Don talks about his commitment to Monmouth Medical Center (MMC) through a planned gift in memory of his late wife, Helen. As Don remembers so vividly, the doctors at MMC saved his life after a nearly fatal glider accident. As a result, he established a significant bequest to the hospital to repay the dedication of the medical staff that didn’t give up. During Don’s recovery, the doctors told Don how they had said to one another during the surgery, “He’s gone.” Don added, “If they had put down their instruments, no one would have criticized them for giving up, but I wouldn’t be alive today. What made them keep going? Dedication. And how do you compensate dedication? Through philanthropy.” Don hopes his planned gift will encourage and inspire young aspirants to the medical profession to become residents in internal medicine, which he believes is one of the most important areas of medicine. Believing that “life is about doing things” and in simple yet eloquent terms, Don describes why it is important to “do something” to support MMC during life and, if one is fortunate enough, also Helen and Don Summa
through a planned gift. As the former chairman of the Monmouth Medical Center Foundation (MMCF) board of directors, Don has participated firsthand in the fundraising efforts to support the professional medical staff and services that saved his life. “The only way that MMC can continue into the future is to get donations from people who believe in our mission,” Don says. “We would love to have the money now, but a legacy gift is a different matter since it doesn’t affect your current income, forces the government to rebalance your estate taxes based on your charitable donations, and benefits your heirs.” MAKING HIS DECISION On the subject of leaving money to charity in addition to his family, Don—a retired CPA and widower with two sons and two grandsons—speaks passionately about the fact that he did not ask his kids for permission to leave a major bequest to MMC, he told them. For Don, his decision was made after weighing his responsibility to society against his responsibility to family: “We are all beneficiaries of living in a caring community, and we have a debt to repay to society.” Don considered a planned gift as soon as he recovered from his accident, but it wasn’t until the staff of MMCF approached him for a gift to create the Medical President’s Wall that he decided to actually establish and document his planned gift. In doing so, he became a member of the Cranmer Legacy Society. According to Don, if he hadn’t been asked, he probably would still be thinking about it. “One of the things that has impressed me in my life is how many things are done for us in which we have no control and by people we don’t know,” he says. “The people who patched me up after my glider accident were anonymous helpers whom I will never be able to pay back individually, but I can pay them back institutionally—by supporting the medical center where they work, through a planned gift.” ALWAYS ON THE WALL The President’s Wall at MMC recognizes the hospital’s great medical team, and Don challenges others to come forward to do the same for the dental and nursing staffs. A planned gift is one that anyone can make and it’s easier to do than one might think, he says. One will reap the benefits for the rest of his or her life, in ways never imagined—as Don has. (At age 90, there seems to be no stopping him.) Don and his fellow members of the Cranmer Legacy Society had the foresight, vision and generosity in establishing their planned gifts for MMC. They are honored each year at a special gathering for Legacy Society members and receive other member benefits. It takes a village DONATIONS FROM THE COMMUNITY PROVIDE SUPPORT FOR MONMOUTH MEDICAL CENTER SERVICES.
MONMOUTH MEDICAL CENTER IS KNOWN FOR PROVIDING SAFE, EVIDENCE-BASED HEALTH CARE, BUT IT’S ALSO FREQUENTLY recognized for the staff’s compassionate care and support for all patients. The hospital was recently the recipient of two gifts that will help it provide the best for families of the youngest patients. THE LEVIS For parents, parting with a stillborn baby is the first step in a long and difficult grieving process. Thanks to the generosity of Jennifer and Matt Levi, who suffered the loss of two newborns in six months, that journey has been made a bit easier for parents coping with a stillborn. The Tinton Falls couple recently donated a Cuddle Cot to Monmouth Medical Center in honor of their daughter Helen Rose, who was delivered at the hospital this past April at 16 weeks gestation. The special cooling device preserves a stillborn baby’s body in a bassinet or crib, giving grieving parents extra time to spend with their infant. About 24,000 babies are delivered stillborn in the United States every year. When not kept cold, stillborn babies’ bodies quickly begin to deteriorate after delivery. Developed in the U.K., the Cuddle Cot was brought to the U.S in 2013 and has been recognized as significantly helping parents who suffer the loss of a baby by giving the family the option of spending time with the infant. Extra time is internationally encouraged by midwives, bereavement practitioners, stillbirth/neonatal charities and academics, as it allows the family to form an important bond with their baby. “By donating this Cuddle Cot to Monmouth Medical Center in honor of Helen Rose, we hope that it will ease the pain of families grieving the loss of a baby,” said Jennifer, who also had a full-term stillborn son, Connor, in October at another area hospital. “This unit will give parents the gift of time in the best way possible before having to give their babies that last hug and kiss goodbye.” A silver plaque has been affixed to Monmouth Medical Center’s device. An inscription engraved on the plaque reads: “There is no footprint so small that it cannot leave an imprint on this world.” Sheryl Dwyer, the bereavement support nurse for Labor and Delivery at Monmouth Medical Center, thanked the Levis for their generosity, strength and resilience, noting that their gift will absolutely help future grieving parents and families.

CLIPPED WINGS Monmouth Medical Center recently hosted a dedication ceremony for a new “First-Class Lounge” for patients and their families. The space was designed and funded by the local chapter of Clipped Wings, a national organization formed in Chicago in 1941 by a former flight attendant as a way to maintain airline friendships and to support various charities. The organization’s Newark chapter raises money for the Valerie Fund Children’s Center for Cancer and Blood Disorders at Monmouth Medical Center’s Unterberg Children’s Hospital. Money raised through its annual Comedy Night was used to create the lounge. “The area is truly first class, as the space is designed like the first class section of a luxury jetliner to allow children and their parents to relax and take a break while spending time at the Valerie Center,” says Eric Carney, chief operating officer for Monmouth Medical Center. “It is really clever and so fitting coming from an organization comprised of retired airline attendants.” The room features a dramatic window screen that simulates the controls of an airplane cockpit, allowing patients to take a break from treatment to watch a movie or play a game while their parents enjoy a cup of coffee and snack. The organization will continue to stock the refreshments and other supplies. Flooring for the lounge was donated by Fromkin Brothers, a family-owned architectural finishing company with a history of support for Monmouth Medical Center oncology patients. “We often say it takes a village to meet the needs of the children of our community, and this is a perfect example of that,” Carney says. Known as kürt skalács in the native tongue, chimney cakes date back to the 15th century, when they were baked over hot coals in the medieval kitchens of Transylvania. These truncated treats have since become popular throughout Eastern Europe and are a perfect combination of crisp and fluffy. To create them, dough is rolled into an even strip, wrapped around a wooden or steel cooking roll and baked to crusty perfection. Their cone shape gives them a distinctive appearance, while the slightly sweetened yeast dough and walnut cinnamon-sugar topping make them nearly impossible to resist. Once a popular wedding treat, chimney cakes are now part of everyday meals, baked to a shade of golden brown that would make Dracula salivate.

Central to Argentine culture, pastelitos are often shown in artists’ renderings of the 1810 revolution that led to the nation’s freedom from Spanish rule. More than 200 years later, these puffy pastries remain a staple of Argentine dessert fare and are seen as a symbol of independence when served during celebrations of May 25 aka May Revolution Day. Pastelitos are made primarily of pastry dough and either sweet potato puree or quince paste, a sweet, thick jelly derived from the pulp of quince fruit. And though it’s tempting to cheat with ready-made squares of puff pastry or—heaven forbid—wonton wrappers, true pastelitos are made from dough that is kneaded well and rolled to 1/16 of an inch. They are then formed to resemble stars and submerged in hot oil, separating into many layers for that classic “flower” formation. Never has a history lesson tasted so good.
Warning: koeksisters are likely to cause sticky fingers and can be extremely habit-forming. Pronounced “cook sisters,” these South African donuts are sweet and crunchy with hints of cinnamon, ginger and lemon. With a name derived from the Dutch word “koekje”—often interpreted as “cookie”—they are not only sold by vendors on the streets of Johannesburg and other cities but have also made their way onto the shelves of many South African grocery stores. Koeksisters were originally brought to the region by Malaysian workers and are now enjoyed as a mid-day snack (or for breakfast, for those feeling particularly decadent), but they’re also special enough for birthdays and holiday parties. The baking process involves braiding thin strips of dough into a rope shape, which is submerged in hot oil and dipped into an irresistible bowl of sugary syrup or honey. Note: Koeksisters are best served with a cup of hot tea and plenty of wet napkins.

From Russia (with love) comes the vatrushka (pronounced vat-ROOSH-kah), a round pie topped with sweetened cottage cheese and usually sprinkled with raisins or dried fruit. The name is thought to derive from the word vatra, meaning “fire” in many Slavic languages, a reference to the way this treat is baked in a wood-fired oven. Vatrushkas vary in size from fiveinch personal-sized to almost three feet in diameter and are typically baked using a sweet yeast bread dough, though there are savory options made with unsweetened dough and topped with onion or ground meat. To liken it to a cheese Danish doesn’t do this delicacy justice. It’s closer to a pirozhki (Russian for “small pie”), with one major difference: While pirozhki are closed, vatrushkas are open-faced, or “sunny side up”—their thick, creamy topping in full view. No guilt, though, because cottage cheese is good for a diet, right? That’s what we keep telling ourselves.
Kolompehs are like snowflakes: No two are exactly alike. These delicate dessert pies are crafted in many sizes and formats, the top layer of dough carved either by hand or with a wooden stamp—some mass-produced, others hand-carved family heirlooms handed down through generations and often depicting bucolic nature scenes. Referred to as edible works of art, kolompehs originated in Kerman (also spelled Kirman), the capital city of Iran’s Kerman Province, where they were traditionally baked with local oils, Persian walnuts, cardamom, sesame and wheat flour. Today, industrially produced kolompehs have become popular souvenirs and are prepared with a variety of nuts and sometimes hints of cloves, saffron and rose water, and decorated with pistachio or sesame powder. The best part? These fragrant, flaky pies are made without sugar, deriving their sweetness from Medjool dates. All flavor; no regrets.
Tracing its origins to France’s northwest cultural region of Brittany, kouign amann is not a dessert for the calorie counter. Pronouced kween ah-mon, its name translates from the Breton language as “butter cake,” with traditional recipes calling for almost as much butter as dough. Invented around 1860, kouign amann was traditionally served as slices from a large cake, though the trend has been toward individual cupcake-sized pastries, particularly in North America. It is considered the perfect (and most decadent) French breakfast pastry, a denser version of the croissant but with a healthy dose of sugar. Some say it’s more about technique than ingredients, as kouign amann is made from layering dough with sheets of butter, then folding it, rolling it out and repeating multiple times to create hundreds of layers. As it bakes, the butter-sugar mixture forms pockets of sweetness in the moist center, while the outside remains crispy, with a caramel-like coating around the edges. We’ll have ours with a café au lait, s’il vous plait.

Origliettas are almost too pretty to eat. (That’s almost.) These lesserknown cousins of Italian desserts like cannoli, zeppoli and tiramisu are just as delectable—they’re rolled around a stick into an accordion shape and deep-fried in olive or seed oil. The result is a convoluted confection whose honey coating makes it that much more mouthwatering. And while some bakers fry them to a golden brown, others go for a translucent finish that means they’re sure to melt in your mouth. Origliettas originated in Sardinia, known for its elegant and irresistible desserts, and are a favorite treat at carnivals and other celebrations. Yet some would insist they’re best served in an Old World trattoria or on a quaint outdoor patio with a view of the crystal-clear Mediteranean Sea. One thing is for sure: Put them out at a party, and they’ll be gone before you can say “arrivederci!”
AUSTRALIA LAMINGTON
As legend has it, the lamington was created quite by accident in the late 1800s. A maidservant of Lord Lamington, a Brit who served as the eighth governor of Queensland, mistakenly dropped the royal’s favorite sponge cake dessert into a bowl of melted chocolate. To keep his fingers from getting too messy, the governor rolled the confection in coconut, and the rest, as they say, is history. Known as the “National Cake of Australia,” this favorite is still a luscious combination of tender sponge cake, chocolate icing and shredded coconut, though there are variations that include a raspberry sauce coating and/or a layer of cream or strawberry jam between spongy halves. Affectionately called “lammos,” these “bloody, poofy, woolly biscuits” (as Lord Lamington actually described them) are so popular Down Under that in 2006, July 21 was declared National Lamington Day. How many desserts have a day all their own?

From the street carts of Beijing to the bakeries of Chinatown, these buttery buns are a delightful combination of chewy texture and light sweetness— they’re recognized mostly for their vividly purple filling, but there’s no food coloring on the ingredients list. The purple comes from taro, a vitamin-rich natural root vegetable that’s a dietary staple in Asia. To make this drool-worthy dessert, the sticky bun dough is brushed with an egg wash before baking to achieve a shiny gold coloring and can be topped with a few sliced almonds for an enticingly nutty flavor and crunch. Yet it’s really about the taro, which is sweeter than red bean paste but less sweet than custard or cream. The root is cooked to a puddinglike consistency and used as a filling, formed into a multi-layer marble shape or rolled inside the dough for a pinwheel effect. In any form, it’s a joyous celebration of purple yum.

Take a seat at casual, perfect-for-peoplewatching Michael Jordan’s The Steak House N.Y.C. in Grand Central. You might not see him there, but you will see slabs of beef aplenty. Designed by David Rockwell in 1998, the eatery pays homage to glamorous train travel with a design reminiscent of a dining car. The dining room stretches across the north balcony so you can watch the comings-and-goings while choosing from the traditional menu or, during brunch hours, a three course fixed-price special ($25). Also worth checking out is the recently opened Met Breuer, a new satellite space of The Metropolitan Museum of Art in the shell of the old Whitney Museum. The Marcel Breuer-designed edifice was acquired to expand The Met’s more contemporary collections. There’s plenty for best friends to enjoy in the City by the Bay and vicinity, and the best part is much of it can be done without spending a lot of money. Take in San Francisco’s sights via cable car, which can take you to the top of Lombard Street to enjoy a stroll down the famous crooked roadway. If you’re in the mood for a longer hike, visit Lands End Park, where you can explore the Lands End Labyrinth and the ruins of the Sutro Baths. And, of course, you can’t miss a walk across the iconic Golden Gate Bridge. (It’s a must, even on a foggy day.) On nicer days, brave the crowds at Baker Beach for a fantastic view and soak in the friendly vibe at Fisherman’s Wharf and Pier 39—two tourist-friendly waterfront attractions with plenty of shops and restaurants (as well as a boisterous group of sea lions). You can also catch a ferry from the Wharf and visit the infamous Alcatraz prison. If shopping is more your cup of tea, Union Square is the place to be, as is the nearby nine-story Westfield San rancisco Centre. If you’d prefer to go off the beaten path, visit the Haight-Ashbury neighborhood for vintage finds and the Mission for both high-end and thrift stores. There are other destinations just outside of the city— Sausalito and Telegraph Avenue near the California-Berkeley campus have shops and vendors that offer unique wares, services and food. About an hour outside of San Francisco is Muir Woods, where you can hike through a forest of redwoods, the world’s tallest trees. And a 90-minute drive north will lead you into Napa Valley, where you can stop at different wineries and sample some of the world’s best wines. (Many wineries allow you to bring food or buy it there for an afternoon picnic!)
1 WEEK PARIS
The capital of France is loaded with iconic, can’t-miss destinations: You won’t regret visits to the Eiffel Tower, the Louvre Museum, Avenue des Champs-Elysées and Notre Dame de Paris. Once you’ve checked those off your list, you’ll want to escape the throngs of tourists and start shopping. You’ll find trendy designer boutiques in the chic Marais neighborhood and haute-couture along the Avenue Montaigne. You should also explore the covered passages, or les passages couverts, that were the original malls of Paris. Start with the Galerie Vivienne, a truly stunning shopping destination. On the weekends, don’t miss the famous Les Puces flea market at Porte de Clignancourt; it’s the perfect place to find a unique treasure to take home. For a low-key museum day, head to the Musée de l’Orangerie (and see the Tuileries Gardens while you’re there), the Musée Rodin or the Musée Marmottan, which houses the world’s largest collection of Monets. Getting around the city on foot is encouraged, but when you’re ready to rest your feet head to a café for some people watching. Chez Prune, situated on the Canal St-Martin, is popular among both tourists and locals. The famous Café de Flore is also worth a visit, as it is one of the oldest coffeehouses in Paris. Dining in Paris can often be an overwhelming experience—and not just in terms of the price. Luckily there are friendly bistros like Café Constant and intimate restaurants like Cinq Mars, where you serve yourself from a giant bowl of chocolate mousse. If you’d like your dinner to include a view of the Eiffel Tower, Les Ombres and Monsieur Bleu are known for both their food and picturesque locations. Of course, you can’t leave Paris without stocking up on the delicious and colorful macarons from Ladurée.

PINEAPPLE CHICKEN Serves: 2 INGREDIENTS n 9 oz. boneless chicken thighs, sliced into ½-in. cubes n pinch of sea salt n pinch of ground black pepper n 1 Tbs. cornstarch n 1 Tbs. canola oil n 2 dried chiles, whole n 1 Tbs. Shaoxing rice wine or dry sherry n ½ small pineapple, sliced into ½-in. cubes n ½ red pepper, seeded and sliced into ½-in. cubes n small handful of roasted cashews (optional) n 1 scallion, finely sliced n fresh cilantro leaves, to garnish FOR THE SAUCE n ½ cup pineapple juice n 1 Tbs. low-sodium light soy sauce n 1 Tbs. cornstarch n juice of 1 lime n 1 tsp. honey n ¼ tsp. Sriracha chili sauce
DIRECTIONS Put the chicken in a bowl and season with the salt and pepper. Add the cornstarch and mix well. Whisk together all the ingredients for the sauce in a small bowl, then set aside. Heat a wok over high heat and when the wok starts to smoke, add the canola oil. Add the chiles and fry for a few seconds to release their aroma, then add the chicken pieces and stir-fry for 2 to 3 minutes. As the chicken starts to turn opaque, add the Shaoxing rice wine or dry sherry and cook for another 2 to 3 minutes until the chicken is cooked through. Add the pineapple and red pepper pieces and cook for less than 30 seconds. Then pour in the sauce, bring to a boil and boil until the sauce has reduced, is slightly sticky and has a thicker consistency. Add the cashew nuts (if using), followed by the scallion and cook for 20 seconds. Stir together well, then transfer to a serving plate, garnish with fresh cilantro and serve immediately.

RADISH IN BLACK VINEGAR WITH CRABMEAT AND BLACK SESAME SEEDS Serves: 2 INGREDIENTS n 1 tsp. canola oil n 10 oz. radish leaves n 1¾ cup radishes, cut into ¼-in. slices n 1 Tbs. Chinkiang black rice vinegar or balsamic vinegar n pinch of superfine sugar n 7 oz. fresh white crabmeat n 1 Tbs. black sesame seeds, to garnish n pinch of dried chili flakes, to garnish
DIRECTIONS Heat a wok over high heat until smoking and add the canola oil, then add the radish leaves and sliced radishes. Toss for 10 seconds, then drizzle 2 tablespoons cold water around the edge of the wok to create some steam to help cook the radishes. Season immediately with the vinegar and sugar and toss through. Spoon the radish onto serving plates, then top with the fresh crabmeat and garnish with the sesame seeds and chili flakes.

CHINESE WOK-FRIED SCALLION SALSA VERDE WITH KALE AND EGG NOODLES Serves: 2 INGREDIENTS n 1½ cups sliced curly kale n 7 oz. dried Chinese egg noodles n 1 tsp. toasted sesame oil n 2 Tbs. canola oil n pinch of salt n knob of fresh ginger, peeled and grated n 1 red chile, seeded and finely chopped n 1 pinch of dried chili flakes n 2 scallions, finely chopped n ¼ cup cold vegetable stock n 1 Tbs. low-sodium light soy sauce
DIRECTIONS Pour 4¼ cups cold water into a pan and bring to a boil. Add the kale and blanch for 30 seconds, then drain and remove. Cook the noodles according to the package instructions, then run them under the cold tap, drain and drizzle with the toasted sesame oil. Heat a wok over high heat until smoking and add the canola oil. Add the salt and let it dissolve in the hot oil, then add the ginger, fresh chile, dried chili and scallions in quick succession to explode their flavors in the wok. Add the vegetable stock and stir-fry over medium heat for 30 seconds. Add the kale and cooked egg noodles and toss all the ingredients well to warm through. Season with the light soy sauce and give it one final toss, then transfer to serving plates and eat immediately.

MOVE OVER, SAUERKRAUT! KIMCHI IS BEING HAILED AS A VERSATILE SUPERFOOD THAT PACKS A NUTRITIOUS— AND TASTY—PUNCH. KIMCHI ISN’T JUST A TRENDY SIDE DISH: STUDIES SHOW Korea’s national dish—a combination of fermented cabbage and other veggies and spices that has been served in the motherland for more than two millennia—comes with a host of health benefits. So what can kimchi do for you? Here’s the lowdown on what’s being hailed as one of the world’s most powerful foods—including how it’s made, how to store it and why you just might need a serving. POWER UP According to the Korea Tourism Organization, there are more than 180 different types of kimchi, but the most common is made from napa cabbage (baechu) and flavored with chili flakes, ginger, garlic, fish paste, and other herbs and spices. With so many variations, Kimchi’s nutritional facts differ based on preparation, but the standard napa cabbage variety is about 10-15 calories for two tablespoons, according to two leading brands. It’s fat-free and contains vitamins A (percentage of daily values vary, but figure about 4 to 6 percent in two tablespoons) and C (6 to 10 percent). Napa cabbage is also known for its high levels of vitamin K, which promotes blood health. But perhaps most important, kimchi is a fermented food, meaning it’s chock-full of lactic acid bacteria—aka the probiotic that’s found in yogurt. This type of “good bacteria” comes with a string of health boosts: Two studies, one published in the Journal of Cancer Prevention and the other in Journal of Medicinal Food, found that the healthy bacteria in kimchi gave it the ability to ward off cancer, prevent constipation and boost immune function. It’s also been shown to promote weight loss and skin health. One catch: Kimchi tends to be a high-sodium food because of the salt used in the fermentation process and the added soy- or fish sauce sometimes used in preparation.

In autumn, Koreans hold kimjang (also called gimjang), an annual tradition during which people prepare and share kimchi among households. Says the website of the United Nations Education, Scientific and Cultural Organization: “The custom emphasizes the importance of sharing and is a reminder of the need to live in harmony with nature.” —Liz Donovan
BUY/STORE/SERVE Kimchi is relatively easy to find at most specialty food markets. While shopping, vegetarians should read the jar carefully: Many brands of kimchi include fish paste, and some also have beef broth, but vegan varieties are available as well. It’s possible to make kimchi at home, and instructions are available through a Google search, but special care must be taken during the process to keep harmful bacteria from growing in the jar. Keep in mind that kimchi is what’s called a “living food,” meaning that it continues to ferment while stored and will do so faster when stored at room temperature. In Korea, it’s common for a household to have a kimchi refrigerator, designed specifically for storing the food. Of course, a standard refrigerator works just as well to slow the fermentation process and prolong the life of the dish. Once the jar has been opened (tip: do this over

Slap the mint leaves and place them in a collins glass. In a Boston shaker filled ¾ with bar ice, add whiskey, Raki, simple syrups and tea. In collins glass, add a few large ice cubes; strain the cocktail over the ice. Dot cocktail with Peychaud Bitters; add mineral water for a lift. THE KORTNEY ROSE FOUNDATION The Kortney Rose Foundation held its 12th annual Kortney’s Challenge family fun run/walk at Monmouth Park to raise money for the Children's Brain Tumor Tissue Consortium at the Children's Hospital of Philadelphia. Attendees enjoyed attractions like face painting and balloon animals, plus refreshments from Strollo’s Lighthouse Italian Ices and Rook Coffee. Afterward, many participants attended the Day at the Races event, where jockeys wore pink for the Kortney Rose horse race.

More than two dozen musical performers joined environmental groups for the NJ Friends of Clearwater Festival at Brookdale Community College. The event celebrates the environment with music and song on three stages, along with exhibits on how to protect our natural resources. This year’s theme was “Fight to Keep Earth Great.”

The Knob Hill Golf Club in Manalapan recently hosted its 11th annual Play for P.I.N.K. Tournament, which was open to country club members and public guests. Participants enjoyed breakfast, a golf tournament and an awards ceremony during a catered lunch. Play for P.I.N.K. (Prevention, Immediate Diagnosis, New Technology, Knowledge) is a charity that raises money for breast cancer research; 100 percent of funds from their events go to The Breast Cancer Research Foundation.

POWER OF PINK LUNCHEON WOMEN’S COUNCIL FOR THE LEON HESS CANCER CENTER The Women’s Council for the Leon Hess Cancer Center at Monmouth Medical Center hosted its Power of Pink Luncheon to benefit the Leon Hess Cancer Center’s Patient Infusion Unit at Monmouth Medical at Monmouth University’s Guggenheim Library. The event’s guest speaker was award-winning journalist and community advocate Tamron Hall; Seth Cohen, M.D., regional medical director of Oncology Clinical Research at Monmouth Medical Center, was this year’s honoree.

The annual Ride for Autism, a charity bicycle tour, was recently held in Lincroft. The event, designed to raise funds for Autism New Jersey, is open to all levels of cyclists. Participants choose from five routes, designed by the Jersey Shore Touring Society bicycle club ranging in length from 10 to 100 miles. A celebratory lunch, catered by Surf Taco, took place after the ride.
