Wine Spectator has announced the winners of its annual Restaurant Awards, which pay homage to the best-of-the-best wine menus spanning 50 states and 75 countries. Did you know the Jersey Shore was once the top vacation and recreation destination along the East Coast? Historians and authors Rick Geffken and Muriel J. Smith will tell you all about those times and more in their new book on the county’s rich past. The not-yet-titled piece is due out next year. Geffken, of Farmingdale, is a longtime newspaper contributor and wrote Lost Amusement Parks of the North Jersey Shore (above) with George Severini and coauthored The Story of Shrewsbury Revisited, 1965-2015 with Shrewsbury Mayor Donald Burden. Smith, a Freehold resident and member of the Monmouth County Historical Association, is a regular newspaper contributor and columnist. The book will be a blend of their unique writing styles and fascinating stories.
RIDE IT OUT Ready for the ride of your life? Stretch your legs, strap on your cycling shoes and sign up for the annual Cycle Monmouth, a satellite event of Memorial Sloan Kettering’s Cycle for Survival initiative. One hundred percent of the money raised during the event will fund cancer research studies and clinical trials. Since its inception in 2013, Cycle Monmouth has donated more than $233,000 to the cause. The indoor cycling event takes place Oct. 4 at AB Fitness in Sea Bright. KUDOS Let’s Dance We don’t think, we know Cole Mills can dance. The Ocean Township resident was one of eight finalists competing in Fox’s So You Think You Can Dance this season. Mills, who has taken up football, lacrosse, rugby and surfing, as well as studying theater and dance at Montclair State University, is a national ballroom dancing champion who caught the judges’ eyes for his versatility. When he excelled at a contemporary routine, judge Nigel Lythgoe likened the Latin DanceSport specialist to Dancing with the Stars and World of Dance star Derek Hough.

Two wheels can be better, faster and cheaper than four. And several Monmouth towns want residents to share in the experience. Earlier this summer, Keyport launched LimeBike, a dockless bike-sharing program that rents bicycles at an hourly rate ($1 for 30 minutes). You can find your wheels by using the LimeBike app—but it’s likely you’ll spot one to rent on the street. Asbury Park began its own bike-sharing program last year, and Red Bank is developing one too. It’s part of a growing trend as cities across the globe are looking for sustainable means of transportation and ways to ease environmental stress. One of the goals is to get commuters to ride them to and from the train station. The result: less congestion and healthier citizens.

Garden Party The Master Gardeners of Monmouth County donates more than 3,000 pounds of produce to area food pantries through the Monmouth County Plant A Row garden program. The initiative, run in conjunction with the Rutgers Cooperative Extension, encourages all gardeners to dedicate a row of their produce for local food banks and pantries. This year, the Monmouth green thumbs have grown cucumbers, squash, potatoes, sweet potatoes, snow peas, radishes and kale in the 2,000-square-foot garden in Freehold.

State Sen. Anthony Bucco is working hard to pass a law that would designate the Seeing Eye dog as the official pooch of the Garden State. “That’s not a breed,” we can hear you mutt-ering, but doggone if there’s not a certain logic here. The 90-year-old Morristownbased philanthropic organization The Seeing Eye breeds dogs—mostly Labradors and golden retrievers—as service animals for the visually impaired, both locally and internationally. To become a law, legislation must be passed by the Senate and Assembly and signed by the governor. But considering Jersey officials recently established a state reptile (the bog turtle) and even a state microbe (streptomyces griseus), a celebrated canine would fit right in.

In particular, it’s welcomed the LGBTQ community—the annual Jersey Gay Pride parade draws thousands to the city, and Garden State Equality’s headquarters is on Main Street. Its history was also one of culture and innovation. James Bradley, a New York City native, founded Asbury Park in 1871, naming it for Francis Asbury, the first American bishop of the Methodist Episcopal Church. Bradley’s plan was to develop the location into a residential resort. By 1874 it was incorporated as a borough with a cutting-edge infrastructure that included the boardwalk with pavilions; electric and trolley systems; an artesian well; planned parks and churches; and an oceanfront business district. Much of the original plan has since been upgraded, including the education system. There are five schools in the city: three elementary schools, one middle school and Asbury Park High School. DINING Asbury Park has a variety of options: Brando’s Citi Cucina, an authentic Italian restaurant; Barrio Costero, a purveyor of modern Mexican cuisine; and Pascal & Sabine, a European-style eatery specializing in French comfort food. Casual options include Talula’s, a pizzeria and community hub; MOGO Korean fusion tacos; and Langosta Lounge, a beachfront restaurant. Need a drink? Check out Asbury Festhalle & Biergarten—it’s modeled after an old German beer hall.

With a mile-long beach, an iconic boardwalk, unique boutiques, eclectic waterfront restaurants, the newly restored Paramount Theatre and Convention Hall, Asbury Park has distanced itself from the Springsteen song “My City of Ruins” that was written to help promote the revitalization of the town. That revitalization is evident in the restaurants and stores that line Cookman Avenue and projects such as The Asbury hotel, which was named the “Best New Hotel” in the country by USA TODAY in 2017. Developer iStar has pledged to invest more than $1 billion in the city over the next decade. Today, Asbury Park is diverse and progressive with a

Zika, the dreaded mosquito-borne virus, has shown an ability to infect and kill cancerous cells in adult brains. While more research is needed, preliminary studies show that Zika shrank tumors while leaving other brain cells untouched. Researchers are optimistic that this discovery could lead to treatment for diffuse brain cancers that haven’t responded to chemotherapy, radiation or surgery.

MINDING YOUR BACK PAIN Folks who attended mindfulness-based stressbusting classes were 37 percent more likely to have less lower back pain compared with people who used more conventional methods, such as taking pain meds.
Researchers found that people born in nine states had a 28 percent higher risk of dementia, even after adjusting for age, sex and race. Happily, New Jersey was not among them. LYNNETTE AND MICHAEL MARTIN » Lynnette and Michael Martin of Middletown knew that getting healthy again would be an uphill battle, but with the help of weightloss surgery, they faced the challenge together. When the couple married nearly 30 years ago, Lynnette, an administrative coordinator for a local engineering firm, weighed 100 pounds. But after having two children, the life of a busy working parent often meant eating on the go and little time for exercise. By 2017, Lynnette, now age 54, was 5’1” and weighed 262 pounds with a body mass index (BMI) of 48. She suffered from sleep apnea and hypertension. Lynnette’s 6-foot-tall husband Michael, now age 51 and working in telecommunications, weighed 420 pounds with a BMI of 57. He also had sleep apnea. In addition to the obesity-related medical conditions, the extra pounds interfered with the Martins’ lifestyle. The couple enjoyed traveling with their two children—Jessica, 23, and Michael, 21—but they were having an increasingly difficult time keeping up with them. “We do an annual pilgrimage to Disney, and on our last two trips I had to rent a Rascal (mobility scooter),” Lynnette says. “It was the only way I could get around. I felt awful, so it was time to say this can’t continue. Michael and I were both at the point where we saw all the limitations of the weight gain.” The Martins began to research weightloss surgery, and in January 2017, they attended one of MMC’s new patient lectures, where they met Frank J. Borao, M.D. Dr. Borao is board certified and fellowship trained and has been the director of Minimally Invasive Surgery and Bariatric Surgery at MMC since 2001. “We see patients coming in who are morbidly obese with diabetes and high blood pressure, taking multiple medications and having issues with vision and losing sensation in their extremities,” says Dr. Borao. “By performing a procedure that can remedy these issues, we can change their lives Frank J. and give them more longevity. Most patients live 15 to 20 years longer.” “When we met Dr. Borao, we immediately felt at ease,” Michael recalls. “He embraced us as a couple. Dr. Borao is very thorough and patient. We felt very informed and well prepared for our surgeries.” Dr. Borao was frank with the Martins, particularly with Michael. “Dr. Borao said to me, ‘how many 425-pound 65-year-old men do you see walking around?’ And that clicked.” In July 2017, Lynnette underwent sleeve gastrectomy, a procedure that creates a vertical “sleeve” of the stomach that is about the size of a banana. The rest of the stomach is removed. Three months after surgery, Lynnette had lost 50 pounds and her BMI was reduced to 40. Two weeks after his wife’s surgery, Michael’s sleeve gastrectomy was performed. At his three-month follow-up visit, his weight was down by 85 pounds. The surgeries were done laparoscopically through four puncture holes the size of mosquito bites and a one-inch incision. The surgery typically requires an overnight hospital stay, and patients are expected to be totally back to their normal routines in about four weeks. To date, Michael has lost 125 pounds and Lynnette lost 77 pounds. “We lost a combined weight of more than 200
pounds—that’s like losing a whole other large person!” Michael says. Dr. Borao says every patient at the MMC Bariatric & Metabolic Institute and Weight Loss Surgery Center is treated like family and they only make recommendations they would to their own families. “When a patient first comes to see us, we spend quite a bit of time going over the actual problem and looking at the best option to maximize a good outcome,” Dr. Borao says. “This is not just a one-time encounter [with the patient] and then the operation. It’s a multi-disciplinary approach. Many members of this team are going to be a part of the patient’s care—the operating room team, the floor nurses and ancillary services. Over the years, we’ve established an excellent team at MMC.” Weight-loss work continues for the Martins. They have flipped the script on how they approach food, from living to eat to eating to live. They also continue follow-up visits with their medical team, attend support groups and meet with nutritionists to ensure their long-term success. “Doing this surgery together was lifesaving,” Michael says. “Doors are opening to things we were restricted from doing for 20 years. I feel like I am getting to be the person that’s always been inside me.” continued

« LUANNE TRPISOVSKY About two years ago, Middletown grandmother and hairstylist Luanne Trpisovsky was taking medication for high blood pressure and high cholesterol. She had been suffering from lupus since 2011 and battled breast cancer in 2015. At 62, Luanne was 5 foot tall, weighed 221 pounds, and her BMI was 43. “I finished my last radiation treatment for breast cancer in June 2016, and decided I wanted to change my life,” she says. “I was tired of being fat and unhealthy.” Trpisovsky’s best friend had weight-loss surgery, and she was inspired to explore that option for herself. She attended a new patient lecture at MMC and met Steven J. Binenbaum, M.D. “Dr. Binenbaum was fantastic,” she recalls. “He discussed my lupus and told me that gastric bypass was the better weight-loss surgery option for me because of that illness.” “The bariatric weight loss surgery [a patient] will end up with can be a difficult decision,” Dr. Binenbaum says. “Patients can expect total honesty from me on what I think is the best option. We discuss, come to an agreement and get on the same page about what option will give the patient a prolonged life.” Dr. Binenbaum is board certified and fellowship trained. He started his career with MMC during his general surgery residency in 2007. Here, he went on to serve as chief surgical resident and earn the Dr. Cyril S. Arvanitis Memorial Award, given to the surgical resident who epitomizes the important virtues of dependability, efficiency and promptness in the conduct of his work. Gastric bypass surgery reduces the stomach’s functional volume and response to food, dividing it into a smaller, upper pouch and a larger, lower portion. Both sections are then connected to the small intestine. One year and 100 pounds after her surgery, Trpisovsky no longer needs to take any medication related to high blood pressure and cholesterol. What’s more is that her lupus is in remission. Now, Trpisovsky is working to maintain her weight loss. “I eat everything in moderation—cottage cheese, yogurt and protein shakes—and I make sure I take my vitamins,” she says. Trpisovsky is enjoying life with her husband, Charles, and their children and says she wishes she had the surgery Steven J. Binenbaum, M.D. sooner.

PHILLIP TSAMBAZIS » At 53 years old and weighing 336 pounds, Phillip Tsambazis of Toms River was facing a health crisis. The 6-foot-1 father of three adult sons suffered from sleep apnea, chronic obstructive pulmonary disease (COPD), atrial fibrillation (AFib) and edema in his legs. He was on multiple blood pressure pharmaceuticals and a high dosage of cholesterol medication. Tsambazis also worked a high-pressure job as a supervisory officer with the Department of Homeland Security. Tsambazis’ cardiologist, pulmonologist and primary care physician all were concerned that if he didn’t lose weight, the outcome could be fatal. His doctors advised that he explore bariatric surgery and recommended he meet with surgeon Steven J. Binenbaum, M.D. “The circumstances were so difficult to comprehend,” Tsambazis says. “Right up until the surgery, I couldn’t believe I was actually going to do it. I was afraid I’d never wake up and was very concerned about my parents and children if something went wrong during surgery.” Tsambazis took comfort in Dr. Binenbaum’s care. “He was phenomenal,” says Tsambazis. “Dr. Binenbaum has the best bedside manner and goes the extra yard to make sure everything was explained to me properly. I trusted him so much that I came back to have him fix my hernia. The staff at MMC was outstanding. It is the most courteous, kindest and professional staff on the planet.” Not only did Tsambazis survive, he is now thriving. After the surgery, Tsambazis lost 130 pounds and hasn’t been at his current weight since he was in high school in 1979. And his health has significantly improved. Tsambazis no longer has sleep apnea, COPD or edema and was able to come off of his prescription medications. “The most rewarding part [of what I do] is that I get to have an immediate impact on someone’s disease,” Dr. Binenbaum says. “I get to see patients getting better right in front of my eyes instead of continuing to treat them on a chronic basis with medication. Patients walk out of the hospital not needing their medication and that is the biggest reward.”

HIGH FIVE HARDWORKING MONMOUTH COUNTY TEENS ACHIEVE THINGS THAT WOULD DO ANY ADULT PROUD—AND STILL MAKE IT TO HOMEROOM ON TIME. BY DARIA MEOLI
THE PRESSURES NEARLY EVERY TEEN FACES— COLLEGE applications, competitive extracurricular activities, the demands of an active social life and meeting parents’ expectations—would make the average grown-up’s head spin. But the local kids you’ll meet below are anything but average. BROOKE ROTONDO, 11TH GRADE, MIDDLETOWN HIGH SCHOOL NORTH, MIDDLETOWN One ambitious Middletown teen has spent years dancing her way into the spotlight. At just 16, Brooke Rotondo is a show-business veteran. In addition to appearing in commercials and television shows, such as Madame Secretary, Elementary and the Wonderama reboot, Brooke was a backup dancer for TeenNick and Radio Disney star Meredith O’Connor as well as a featured dancer at this year’s Los Angeles Fashion Week. After 12 years of training in hip-hop, tap, jazz, modern, lyrical dance and musical theater at Not Your Ordinary Dancers in Middletown, Brooke attends workshops at the world-renowned Joffrey Ballet School in New York City and has studied acting with Todd Etelson at Actors Technique NY. “I think my hardest challenge is balancing my training schedule, my family life and my social life,” Brooke says. “When you spend most of your time training or going in and out of NYC for auditions, everything in the world that’s not your career becomes very hard to maintain.”

JOSEPH BUTLER, 10TH GRADE, ST. JOHN VIANNEY HIGH SCHOOL, HOLMDEL At a wrestling tournament at age 10, Joseph Butler noticed that several kids on an opposing team had to share one pair of wrestling shoes. Learning that these kids who loved wrestling as much as he did couldn’t afford the sports equipment they needed made an impact. After speaking with his parents, Joe founded the not-for-profit organization Wrestle in My Shoes, which collects used wrestling shoes and distributes them to kids in need. Joe still remembers his first donation. “The shoes went to a high school senior in the Midwest who was still wearing his wrestling shoes from eighth grade,” he says. “His mother was deceased and his father was incarcerated, so he had to live with his grandmother and work odd jobs to help with her bills.” Five years later, Wrestle in My Shoes has donated more than $200,000 worth of equipment, which includes 2,000 pairs of shoes and approximately $30,000 worth of wrestling mats. Joe has been named Volunteer of the Year by Freehold Township and nominated for the Asbury Park Press “I Am Sport” award. Wrestle in My Shoes gets support from the wrestling teams at Rutgers University and Princeton University as well as from members of the U.S. Olympic and national squads. But the demand for wrestling equipment is great. “Most times requests for donations far outweigh the number of shoes that get donated and refurbished,” says Joe. “It is absolutely heartbreaking when we have to say no to a requesting organization. Even letting down one youth athlete is hard to swallow.” Besides running the charity organization with his parents, Joe and Alyson, the young philanthropist continues to wrestle. He has earned the titles of state Greco-Roman champion and state freestyle champion. And Joe keeps thinking bigger. “My goals for the next five years are to be a multiple-time state and national champion in wrestling and gain admittance to either the U.S. Naval Academy or the U.S. Air Force Academy,” he says. “By that time I hope that Wrestle in My Shoes will be more successful and attract more volunteers who want to help on a local or regional level. My more long-term goals include becoming a 2024 Olympic champion in wrestling.”

KEVIN YU, 12TH GRADE, RANNEY SCHOOL, TINTON FALLS Kevin Yu is a bit of a perfectionist—with a passion for robotics. At Ranney School, he can be found working in the robotics room during study halls, lunches, evenings and weekends. As a robot engineer, Yu routinely dismantles competition-winning robots and starts over in order to keep innovating and remain a top competitor. Robotics as a competitive sport is growing rapidly around the world. In the largest middle-school and high-school robotics league, there are more than 20,000 teams from 50 countries that compete in 1,700 tournaments worldwide. At the beginning of the season, students are presented with an engineering challenge and asked to build a robot to address that challenge. Kevin has participated in national and international robotics competitions and won 30 awards in the last two years. “Teams throughout New Jersey have had to radically change their game plan in order to remain competitive against Kevin,” says Ranney School robotics program advisor Chiara Shah. “Last year, at VEX Robotics World Championship, the coach of another New Jersey team came up to me and said, ‘My teams, and all the New Jersey teams, are doing better than we ever have because of your student. [Kevin] has substantially raised the bar, and we’re all trying to play catch-up to get to his level.’” Shah adds that Yu is one of the best robot drivers and strategists she has ever seen. “Even if I teach for 20 or 30 more years, this student will most likely end up being the most brilliant engineer that I have ever had the honor to teach and coach,” Shah says. DANIEL DRAGANOFF, 2018 GRADUATE, CHRISTIAN BROTHERS ACADEMY, LINCROFT When Daniel Draganoff was a high school freshman, he didn’t even know all the rules of chess. But his math teacher, who headed the chess program, asked him to join the chess team anyway. Less than three years later, he has a distinction only 5 percent of chess players of any age accomplish: He is ranked as an expert. “I found chess to be extremely addicting, and quickly improved,” says Dan. “It’s a combination of logic, competition and tangible improvement, and all of these things drove me to put in thousands of hours of playing and studying.” He led CBA to national honors, including the 2018 12th Grade National Championship. “I was surrounded by a group of highly motivated and highly successful classmates who set the bar high and challenged me to keep up,” he says. Dan also has learned how humbling the game can be. “Chess can be brutal, in that you can play for six-anda-half hours and lose the equivalent of a 10-goal lead in the last second,” he says. “It’s extremely hard to recover psychologically from situations like that, especially for someone who is very self-critical.” This fall, Dan is a freshman at the University of Pennsylvania, where he hopes to get to the next level and earn the title of “master” while playing with the Penn chess team.
VIVIAN PARKIN DEROSA, 12TH GRADE, COMMUNICATIONS HIGH SCHOOL, WALL TOWNSHIP While other kids her age were downloading Snapchat filters and hanging out at the local pizza place, Vivian Parkin DeRosa was writing a novel. At age 14 she wrote 9 Months, a story of two adult women forced to make difficult choices. The work earned her a prestigious national Scholastic Art & Writing Award. At 17, she is completing her second novel, The Space We Take. This young adult novel features a space-obsessed teenage girl who is offered an internship at NASA but is struggling with family issues and significant weight gain. “I wanted to write a book that deals with issues people around me are talking about,” says Vivian. “People my age talk about weight and appearance a lot, and I want to deal with that in a realistic way.” She considers the Scholastic Art & Writing Award her most satisfying accomplishment to date, but it’s far from her only one. She’s also written articles for HuffPost, and her poetry has been published by several literary journals. Vivian is an intern at Project Write Now in Red Bank, where she teaches writing and facilitates a teen writing group. She believes in helping others through the power of storytelling. “Storytelling and reading create empathy and understanding between people,” she says. “That is so important right now.” So, how does a talented teen manage to keep up with academics, hold an internship and pursue her passion for storytelling? “People say ‘I’ll write my book when I have the time,’ but that time doesn’t exist,” Vivian says. “You have to make the time. A FRANKLIN LAKES COUPLE JUST CAN’T GET enough of the Jersey Shore—and the wholesome, sunny times that build family memories. So when the opportunity arose to move up to the beachfront in Mantoloking, they couldn’t resist. This was just a few doors down from the expanded Cape Cod-style home that served as their happy retreat for 36 years, but what a difference! Now they can sit on their couch and marvel at the ocean, and there is room enough for the entire family, including two children and four grandchildren. “The larger kitchen and living areas have made it a great place to gather, not to mention the improved views and the wonderful soothing sound of the ocean,” says the homeowner. Such a momentous move for a couple devoted to the Atlantic Ocean since their childhoods
called for a home design worthy of this step-up. And in the spirit of the Shore, that could only mean inviting the beauty of the beach inside. Their designer Ron Nathan, of the Wyckoff firm Ron Nathan Interiors, let the palette work its magic by reflecting the ocean’s dark blues as an accent hue in the first-floor living space. Some striking examples are the kitchen’s checked chairs and the living room’s custom wool rug, but it’s present also in the details, such as the trim of the couch. Built in the 1990s—and renovated after Superstorm Sandy—their new home is eclectic with a modern flair. While contemporary décor often plays gray against accents, in this case “we wanted a warmer, friendlier feel,” says Nathan, who also updated furnishings in their former beach house as well as their Franklin MONMOUTH HE ALTH & LIFE

Lakes home. So he chose lots of creamy tan—to mirror the sandy beach—and let it dominate the window treatments, walls and living-room seating. A recycled dining-room table has a ceruse finish, keeping with that beachy-chic vibe. But this is more than a color story: Wise to the ways of the Shore, the couple knew the virtue of performance fabrics that can stand up against intense sun, along with the occasional sand and salt that children might bring in. His clients’ timing couldn’t be better, Nathan says, because today’s performance fabrics are soft—not what one would expect from furniture durable enough for outdoors—and come in many varieties. With walls of windows reflecting the ocean at every possible angle, fading was inevitable, but “these fabrics are UV-friendly so you don’t have to worry,” he says.

To create interest, Nathan also sprinkled about nautical decor like the wooden schooner over the fireplace, but says these objects took second place to the colors, finish and texture played up in the open, airy design. Nathan focused most of his effort on the first-floor living area, but also styled the master bedroom and sitting area with a beige-and-palegreen combo. There’s a wall of windows, once again maximizing the view. With the work done and time for fun, the family is right where they want to be: “My husband spent his youthful summers a few miles down the road in Ocean Beach, and those friendships have shaped his life,” says the homeowner. “It was our hope to have that same experience for our kids and grandkids.”
Nathan’s designs extend from the living/dining room combo to the kitchen, where Wyckoffbased Peter Salerno Inc. added to the look with such features as sleek white cabinetry. There are enough walnut and blue-checked counter chairs to fit the growing family and provide interesting contrast, which Nathan continued with window treatments as well as a wall in dark blue.

FLUFFY GLUTEN-FREE PANCAKES Yields: 5 servings INGREDIENTS n ½ cup gluten-free oat flour n ¾ cup buckwheat flour n 1 cup homemade applesauce (see pg. 77) n ½ cup dairy-free milk n 2 Tbs. maple syrup n 1 tsp. baking powder n 1 tsp. baking soda n 2 tsp. lemon juice n 1 tsp. vanilla extract
DIRECTIONS Place all the ingredients in a blender and purée until smooth. Heat a nonstick skillet over medium-high flame and when hot, pour 2⁄3 cup of pancake batter into the center of the pan. Spread it into a circle with the back of a spoon, keeping it reasonably thick. Cook for 2 to 3 minutes.

Serve with banana slices, berries, jam, coconut yogurt and a drizzle of maple syrup.
Slide a spatula underneath the pancake, flip it over and cook for another 2 to 3 minutes before removing it from the pan. Put the pancake on a warm plate and cover with a dishcloth. Repeat until you have used up all the batter.

PROBIOTIC CHIA & SPIRULINA JAR Yields: 4 servings INGREDIENTS FOR THE CHIA PUDDING n 2 cups nut or seed milk n 1 Tbs. honey or other sweetener (optional) n ½ tsp. vanilla extract n 1 ⁄3 cup chia seeds FOR THE PROBIOTIC SPIRULINA YOGURT n 2 cups cashew yogurt n ¼ tsp. vanilla powder n 1 Tbs. honey or other sweetener (optional) n ½ tsp. spirulina powder n pinch of salt
DIRECTIONS To make the chia pudding, blend the nut or seed milk with the honey (optional) and vanilla extract in a mixing bowl. Stir in the chia seeds until well combined. Soak until the seeds have absorbed all the liquid and become gelatinous. This mixture will keep for 3 days in a sealed container in the refrigerator. To make the yogurt, blend all the ingredients together in a highspeed blender. To assemble, put a layer of strawberry slices around the edge of the bottom of a parfait jar and add some yogurt. Spoon a layer of chia pudding on top of this. Finish with more strawberry slices, the bee pollen (if using), coconut chips and sliced almonds.

SPROUTED QUINOA GRANOLA WITH HOMEMADE APPLESAUCE Yields: 12 servings INGREDIENTS
DIRECTIONS
FOR THE GRANOLA n 1 cup homemade apple sauce (see below) n ¼ cup maple syrup n 3 Tbs. tahini n 1 tsp. vanilla extract n 12 oz. sprouted quinoa n ½ cup sunflower seeds n ½ cup pumpkin seeds n 2 tsp. ground cinnamon n pinch of salt n ¼ cup raisins n ¼ cup goji berries
TO MAKE THE APPLESAUCE: Put the apple slices in a large saucepan, add the water and cover. Bring to a boil over medium-high heat, then reduce the heat and simmer, stirring occasionally, until the apples break down into a thick sauce. This will take about 20 minutes.
FOR THE APPLESAUCE n 10 medium apples, peeled, cored and sliced n 1 cup water n pinch of ground cinnamon n sweetener of choice (optional) n squeeze of lemon juice (optional) Note: Most apple varieties will work in this sauce, but a sweet variety will eliminate the need to add sweetener.
Pour the cooked apple slices into a blender and whizz until smooth. Add any of the optional ingredients to taste. Store in a refrigerator for 1 week, or freeze. TO MAKE THE GRANOLA: Preheat the oven to 300°F. In a small bowl, mix together the applesauce, maple syrup, tahini and vanilla until you have a thick paste. In a large mixing bowl, combine the quinoa, sunflower and pumpkin seeds, cinnamon and salt. Pour the applesauce mixture over the quinoa and seeds and stir to combine. Spread the granola evenly over a baking pan lined with nonstick parchment paper and bake in the oven for 20 minutes. Remove the pan, stir the granola minimally to ensure you keep nice big clumps and bake for another 20 minutes, until toasted. Allow the granola to cool, then stir in the raisins and goji berries. Store in an airtight container.

TRE PIZZA IT’S EASY TO BECOME A CREATURE OF habit, especially when it comes to food. We have go-to places because they meet our expectations—a Chinese takeout joint for an easy after-work dinner or the bakery across town that makes the best bread in the county, for instance. And when it comes to pizza or fast-casual Italian dishes, it’s almost certain that you have your fail-safes. At first glance, Tre Pizza in Freehold goes against the grain, particularly if you’re used to the comfortable confines of a corner pizzeria. The space is expansive, with a bar equipped with TVs on one end and a formal dining area for families and couples on the other. The folks here also dub themselves as a beer garden—there are plenty of wines and craft brews—but the menu is unlike a typical biergarten. (You’ll find fried calamari and meatballs here, not pretzels and wiener schnitzel.) So my friend and I threw out all expectations and experienced what the restaurant had to offer. To start, we shared an order of arancini, two perfectly fried rice balls filled with savory ragu, fontina and peas. Growing up with several Italian friends, I’ve tried many a grandmother’s arancini, and Tre Pizza’s version brings back those fond and delicious memories. Intrigued by the menu’s mozzarella bar offerings, we ordered a light and creamy burrata with a generous portion of mouthwatering proscuitto as our second appetizer. For a brief moment, I contemplated another round (or two) of proscuitto for dinner, but other selections on the menu were calling. I wrestled with the idea of a pasta dish—the porcini ravioli and salsiccia e rabe (Italian

sausage and broccoli rabe) were beckoning—but I knew I’d be filling up on carbs elsewhere. Instead, I went with the maile valdostana, a wonderfully moist pork loin stuffed with hefty amounts of proscuitto (we meet again!), spinach, fontina, mushroom and truffle oil. The meat, palatable on its own, got a boost from the accompanying marsala sauce. “It’s the perfect flavor harmony,” noted my friend, who coaxed me into surrendering a few forkfuls to her. Good food is meant to be shared, so I didn’t mind sliding my plate across the table. That gave me a few moments to dive into the pizza we added to our order. Tre Pizza offers a variety of classic and experimental pies (the gamberi with shrimp, garlic, oregano and other herbs piqued my interest), along with a list of toppings that runs the gamut. Each is fired up in a wood-burning oven, resulting in a soft and chewy dough with beautifully charred crust. The best part is that Tre’s pizzas can be ordered as an appetizer, entrée—or dessert! To satisfy your sweet tooth, the eatery offers a Nutella pizza, which also comes with strawberries and toasted hazelnuts. We resisted the temptation and sided with more traditional desserts. A plate of chocolatecovered spumoni ice cream hit the spot, as the blend of chocolate, strawberry and pistachio has always been my personal favorite. We also shared a small bowl of panna cotta, the silky smooth (and playfully wobbly) treat topped with hazelnuts and cream. The verdict? Tre Pizza does more than fit into the rotation of go-to places. The quality and variety of Italian comfort food favorites
