• There are 7,000 rare and ultra-rare diseases in the United States alone.

Celebrating Old And New
Will you all please raise your hands if plaid donuts are part of your family’s annual holiday festivities?
I didn’t think so. Mine neither.
You’ll learn how to create this fashionforward taste treat in “Festive Flair,” starting on page 22, in which we showcase holiday ideas (edible, visual or, like the donuts, both) from entertainment guru Stephanie Nass. But I’m making a larger point.
Holiday rituals are wonderful, and it can be pleasing to do things the same way each year. But sometimes, when something new comes along, it’s good to be open to it. It may actually add to the fun.
One family I know listened for decades to the same favorite Christmas albums. Then someone shared a recording of Louis Prima’s 1936 tune “What Will Santa Claus Say? (When He Finds Everybody Swingin’)” and its infectious jazz rhythms earwormed their way into the family’s holiday observances, there to remain. Moral: There’s always room for something new (even when that something is, like Prima’s, something old).
As this issue shows, we at MONMOUTH equally celebrate both what you do every holiday season and what you may do for the first time this year. Perhaps you’ll take in the menorahs that illuminate Hanukkah’s Festival of Lights (page 10) or make New Year’s Eve memorable by celebrating it at one of the great venues on the Shore (page 11). Or, if you’re ready to hop in the car for a drive, enjoy dazzling displays of holiday lights in nearby states (page 46). In our Gift Guide, beginning on page 32, you may find a novel present that’s perfect for a child in your life who previously had you stumped.
On page 16 we introduce a new department called Milestones. Its premiere column pays tribute to a business—the Garmany clothing store—that is marking its half-century anniversary. Garmany led a renaissance in Red Bank, and it thrives with a philosophy of winning lifelong customers rather than pushing an individual sale.

You needn’t be a chionophile to enjoy ice, especially when you’re gliding gracefully across its surface. While ice skating indoors is great, there’s a certain romance about enjoying ice time outdoors and in the fresh. Here are some places where, when ice is at least 5 inches thick, outdoor skating is permitted:

Riding a bicycle in wintertime may seem unusual, but it’s a great way to stay fit and boost your immune system, say experts at the New Jersey Bicycle & Pedestrian Resource Center (just remember to dress accordingly and be aware of hazards like ice, slush and potholes). Not sure about biking this time of year? Stop by Highlander Bicycle Shop, which opened in Atlantic Highlands in late 2023, where the pros can help riders with necessary winter equipment, gear and apparel. They also lead weekly bike rides (weather permitting), so that people of all ages and skill levels can cycle safely throughout the year. These rises “are great for people learning to road- or mountain-bike,” says Highlander co-owner Diane Chabak, “and they’re also a wonderful way to link up with riders on different levels.”

More than a year after the death of the Medinas’ beloved Labrador retriever, Lucy, the couple decided to open their home to a new furry companion. Peter had a friend who volunteered with a local animal rescue, and she introduced the pair to Curtis last spring. While there were other pups they adored, Curtis had a “calm and patient” demeanor and puppy-dog eyes that Elisabeth and Peter couldn’t resist. It wasn’t long until they welcomed the pooch into their home.
Today Curtis still has his calm personality, but he’s much more playful. “He bounces from toy to toy,” Peter says. “We don’t know if he has a favorite because he plays with every ball, stuffed animal and squeeze toy equally.” Curtis also loves to take walks with his family on the trails in Holmdel and along the Manasquan Reservoir.

FOND FAREWELL
Like many in Monmouth, we’re sad that the historic Freehold Raceway is scheduled to close for good Dec. 28. At 170 years old, the harness-racing venue predates the Civil War and is the oldest racetrack in the U.S. Before we say goodbye, there will be live races Fridays and Saturdays until the last day, and the Renaissance Room will remain open for lunch during that time. At presstime, no plans have been announced for the future of the site. To some, the raceway was more than a sporting venue. Below, MONMOUTH readers share their thoughts on saying farewell:

Manasquan’s Laurie Kelley believes everybody deserves a chance to get comfortable—and feel proud—riding a horse.
The Sunnyside Equestrian Center in Lincroft, part of the Monmouth County Parks System, is pleased to offer therapeutic, or adaptive, horseback riding. Staffers there work to ensure that everyone, whatever their ability level, has a chance to get on a horse. Sunnyside’s program director, Manasquan resident Laurie Kelley, 62, has lived in Monmouth most of her life. She and her husband, who works as an wheel alignment trainer for the Hunter Engineering Company, raised four sons here. Kelley started with Sunnyside as a volunteer in 2007. Since then, she has climbed the ranks and collected certifications until she got to the very top—always in service of her students.
Can you tell us about your history with horses?
Often, people who work with horses have been doing it their entire lives. Not me. I was lucky enough, as a kid, to get a horse. All my girlfriends rode and had horses, so I wanted to do it too. My dad got me one, but I had no idea what I was doing. I learned boots-onthe-ground: “Here’s a horse, figure it out.” I had that horse for about two years. Then I sold her to another beginning rider, and I was away from horses for about 30 years. When my kids got older, I started volunteering at Sunnyside. I’m a real hands-on learner; I love to just throw myself into things and figure them out as I go along. Tell us about what you do.

Really, I think therapeutic riding should be called adaptive riding . We can adapt horseback riding to a variety of students, depending on their needs. Whether it’s a physical or a neurological disability, we can change our teaching methods, the equipment or the horse. Everybody learns a different way, but that doesn’t mean they can’t ride. We can modify the saddle, for instance, for someone with
Because everyone should have the opportunity to ride. It’s something to be proud of—not too many people can say they can ride a horse. If a person uses a wheelchair, there’s a lot they can’t do, but now they can ride a horse. A child can go to school and say, “Oh, I had my riding lesson last night.” There’s a sense of pride and accomplishment. If you can build someone’s confidence, you’re going to build them up in many other ways.
What does your day-to-day look like?
Programming is our No. 1 priority. We spend time keeping things clean and our horses healthy and happy, and my great staff helps with that. I also work on the scheduling. I know every
student who walks in here, and I help with their assessments. I also know all my instructors—their strengths and weaknesses. A lot of time goes into every lesson. I tell everybody here that if you don’t love this job, you can’t work here.
A moment of success?
I had developed a school program with middle-school-aged kids in 2011. (The school still participates in it.) It ran eight weeks, and then we ended with a horse show. It wasn’t just for fun—we had a real judge come in. And I remember one rider sitting on his horse, holding his ribbon, so proud of himself. He announced to everybody, “This is the first time I’ve ever won anything.” That’s what we do here. We give people “first” moments.
A favorite horse at the center?
He’s not with us anymore, but he’ll probably be my favorite horse forever. His name was Titan. He was a little hard on the outside, but he was a softie on the inside. You had to get to know him to see it. He was a hard worker too. He reminded me, I guess, a little of myself.
Is your family involved at Sunnyside?
None of my kids or my husband ride, but they are all very supportive of what I do and help when they can. My husband plays the upright bass, and he and one of my sons play music for some of our events.
A lesson from your time at the center?
Patience. I was never patient with my own children, and I needed to develop it here.
Favorite place in Monmouth?
Turkey Swamp Park. My husband and I were working together in Farmingdale and, when we needed a break, we would take our lunches over there and eat together. That’s where I first found the flyer for Sunnyside, and decided to volunteer. It brought me here.

TREATING YOU LIKE FAMILY
FOR 50 YEARS, RED BANK-BASED FASHION RETAILER GARMANY HAS THRIVED ON PROVIDING A FIRST-CLASS CUSTOMER EXPERIENCE.
At the half-century mark maybe it looks easy, but it wasn’t. Since Larry Garmany founded his first store in New York City in November 1974, recessions, a pandemic and ever-changing trends and tastes have shaken up the fashion industry, sending its less committed entrants packing. But Garmany has stayed true to its founder’s goal: providing the world’s finest fashion in a customer-focused environment.
“Even at a young age, he loved fashion and had great style,” recalls Johnell Garmany, Larry’s son and the owner of the current store in Red Bank. Larry introduced shoppers to luxurious clothing from Italy and France, showing styles and fabrics many here had never seen before. He always spent time with customers, explaining the materials and construction techniques that artisans used to put the garments together. “He made sure to share everything he knew about the clothing with everyone else,” Johnell says.
Customers took note of Larry’s commitment to them, and they trusted not only that he stood behind the products he sold, but also that he would find the best pieces for every individual. It wasn’t long before the demand for fine clothing and customer-focused service outgrew the first store, so Larry and his best friend opened another shop in Park Slope, Brooklyn. Soon after, Larry opened another store on his own in Manhattan, and then one in Summit, N.J. While his dad was building the brand, Johnell was developing the same eye and passion for fashion. “I started early and always loved clothing and dressing well,” he says. In fact, finding time amid school, sports and extracurricular activities, he often traveled with Larry into the city to work at the stores.
Business permanently shifted from New York City to New Jersey in 1989,
when Larry moved his family and opened the Red Bank store. Now a men’s and women’s clothing retailer, the shop was the first of its kind in town. At the time, Red Bank was struggling economically, and business was slow at Garmany.
“We didn’t sell anything in our first 11 days,” Johnell recalls. “We used to mess up the store so it looked busy. But once word got out and customers caught on to the quality of our service and the clothing, everything took off.”
“Everything” included Red Bank itself. More businesses followed Garmany into town, and Red Bank began to flourish. The mayor during those years even credited Larry and the store for the town’s economic turnaround.
“He was the driving force behind so much—the business, the town, family,” Johnell says. “He taught me more than just fashion: to pay attention to everyone’s needs, never to push someone, to do your best to make others happy.”
Fifty years after its founding and almost a decade since Larry’s passing, Garmany still reflects all of those virtues. Following Larry’s example, the staff is on hand to help the customer, never to push a sale.

SUGAR
IS TASTY, TEMPTING— AND POTENTIAL TROUBLE. A MONMOUTH DIETITIAN EXPLAINS WHEN TO TELL YOURSELF “NO.”
Here come the holidays, the season of piled-high dessert tables, when temptation is all around us. Sugary treats abound at parties and in celebratory breakfasts, lunches and dinners, while scrumptious goodie or candy trays may sit out all day, calling to us. The American Heart Association says Americans eat two to three times the recommended amount of sugar in a year, and this season surely accounts for more than its share.
So first, the cautionary news. “A high consumption of sugar through sweets and sugar-sweetened beverages makes it easy to overconsume our daily caloric needs, which can often cause unexpected weight gain,” says Annie Zappulla, a registered dietitian nutritionist and owner of A to Z Wellness Solutions in Sea Girt. “High-sugar diets have also been associated with an increased risk of heart disease and type two diabetes. Excess sugar intake can
lead to high blood pressure, high triglycerides and high blood sugar,” Zappulla adds, last but certainly not least, “Consuming too much sugar can also lead to tooth decay.”
Must we turn, then, into monastic self-deniers, constantly shaking our heads from side to side until Valentine’s Day with its chocolates is safely behind us? Not quite. “No one food can define a person’s health. For overall health, we are looking at a balance of all
nutrients,” says Zappulla. “Being conscious of your sugar intake is a healthy habit, but if restricting yourself around it causes other poor habits such as binge eating, that is not healthy either. All foods can fit into a healthful, nourishing diet.”
A key distinction: The danger here is in added sugar. There are naturally occurring sugars in everything from fruit to dairy to complex carbohydrates. As Zappulla says, “Sugar is a carbohydrate source. All carbohydrates break down in our body as sugar, which gives us our body’s preferred energy source— that’s glucose. There are a variety of carbohydrate sources outside of added white sugar that we can get energy from. We want adequate carbohydrates in our diet, but we want them from balanced sources.”
So what’s the best way to manage your sweet tooth?
MONMOUTH asked our diet expert five questions:
Will swapping out sugar for natural sweeteners help? A Google search for “healthy dessert recipes” brings up thousands of hits for treats that replace white sugar with something like agave, honey or maple syrup. Alas, says Zappulla, all of these sweet options “have the same calorie and sugar content per serving. It is still best practice to be conscious of your overall sugar consumption no matter the source.”
What these natural sweeteners can do, however, is give you some nutritional benefit where white sugar has none. Zappulla explains, “For example, honey has other health benefits like antioxidants, as well as antibacterial and anti-inflammatory properties.”
Are artificial sweeteners the solution?
Sugar substitutes taste sweet, but don’t contain sugar. They have fewer calories, and some have no calories at all. Are they the solution to our sweet-tooth woes? “Artificial sweeteners are not recommended as a long-term option,” says Zappulla, “but they are a short-term option to begin reducing your sugar intake overall.”
Long-term studies on the health effects of artificial sweeteners are ongoing, and have been inconclusive as of yet. “There is some evidence that artificial sweeteners may still affect blood sugar even with the low calorie and sugar content. Some experts believe that these sweeteners can change a person’s gut bacteria, which affects overall health,” says Zappulla. “Natural low-calorie sweeteners like Stevia and monk fruit [instead of low-calorie sweeteners made in a lab, such as aspartame] would be a healthier alternative. Still, these low-calorie sweeteners may cause bloating for those with digestive issues.”
There are also more immediate concerns. Explains our expert: “Due to these sweeteners being low calorie, our body can often feel tricked into thinking it is getting real sugar when it isn’t. This can lead to more sugar cravings and hunger throughout the day.”
Zappulla once again stresses that the research on these artificial sweeteners causing more serious health risks, such as type-two diabetes, is ongoing, limited and conflicting. The Food and Drug Administration (FDA) classifies all of them as safe, though it also lists a recommended amount that a person should stick to a day. That recommended amount is different for each sweetener, and can be found on the FDA’s website. For instance, the
recommended daily intake of aspartame, the sweetener in many diet sodas, is 50 mg/kg of body weight per day.
• Can sugar get you hooked? “When we eat sugar, our brain releases a hormone called dopamine,” says Zappulla. “Dopamine is a neurotransmitter that is in charge of our ‘reward system.’ When a behavior releases dopamine, it makes us feel good, which can encourage us to repeat this behavior. If we don’t have alternative feel-good practices, it can be easy to rely on food to make us feel good.”
This reliance explains sugar’s “addictive” reputation, though it’s not addictive by the conventional, diagnostic use of the word. “We want to consider what someone’s diet and relationship with food looks like,” adds Zappulla.
What are the danger signs that you’re consuming too much sugar? Keep an eye out, Zappulla advises, for headaches, mood changes, energy crashes, strong sugar cravings, unintended weight gain, joint pain or abnormal blood work. All can be signs that you are consuming too much sugar. “The American Heart Association recommends nine teaspoons for men and six teaspoons for women a day,” she says.
So what’s the plan for the holidays? Above all, Zappulla stresses the importance of awareness and moderation when regulating your daily sugar intake. Make sure you know when you are consuming large amounts of sugar. Zappulla cites “sweetened beverages” in particular as items in which people may consume excessive sugar without realizing it.
If you feel yourself getting a sugar craving, Zappulla suggests finding lower-sugar alternatives so you don’t feel totally deprived. “Choosing fruit, flavored Greek yogurt or dark chocolate are great alterations,” she says. “The more whole foods we can add to our diet, the less likely added sugar can be snuck in.”

ALMOND PINE CONE
Yields 4 servings
INGREDIENTS
n 2 (8-oz.) blocks cream cheese, softened to room temperature
n 6 oz. goat cheese, softened to room temperature
n 1 Tbs. chopped thyme
n 1 tsp. kosher salt
n ½ tsp. freshly ground black pepper
n 2 cups almonds
n 3 sprigs rosemary
n crackers, for serving, such as Triscuit Original or Lesley Stowe’s Raincoast Crisps
DIRECTIONS
Prepare your serving platter. Put the cream cheese, goat cheese, thyme, salt and pepper in the bowl of a stand mixer with the paddle attachment. Beat on medium speed until thoroughly incorporated, about 5 minutes.
On the prepared baking sheet, mold the mixture into an oval shape with one pointy tip, mimicking the shape of an actual pine cone.
Starting at the bottom of the pointy tip, insert the first almond (pointy side out). Work your way around the pine cone from the pointy tip to the rounded side. Make rows of almonds around the entire shaped cheese until the whole mound is covered. Insert rosemary sprigs at the top.
You can serve immediately, or cover and refrigerate until ready to serve, up to 2 days in advance. Serve with sturdy crackers.
The holidays are all about fun and celebrating with loved ones. For every holiday party I host, I like to come up with something new and festive. For instance, I’ve served cocktails in ornaments instead of glasses. In my tablescapes, I typically include fresh herbs, fruits and vegetables. The scents of lavender, rosemary and basil add a lovely touch that makes a big impact and brings a seasonal flair. My go-to appetizer is bacon-wrapped dates. You can stuff them with various cheeses, but I typically choose goat cheese. Simply wrap them in bacon and cook until crispy.”

VERTICAL SALADS POINSETTIA WREATH
Reimagine your favorite salads in a vertical format. This is a traditional pear and arugula salad with slivered almonds, goat cheese and herbs—arranged within a full pear for a surprising and unique presentation. The pear is cut horizontally into three pieces: The top of the fruit with stem is cut off, then the pear is cored; the bottom part of the pear is cut crosswise into two more pieces and salad ingredients are inserted in between these pieces. The stem piece is placed back on the top. You also can apply this technique to other produce to suit the season: Summer tomatoes can be sliced, filled with mozzarella and basil, and drizzled with balsamic reduction. Autumn apples can be filled with a dressed mix of crushed walnuts, spinach, sliced red onion and feta. Or, in the winter, a roasted acorn squash can be loaded with a lemony rice.

INGREDIENTS
n 1 sheet frozen puff pastry, thawed n 4 Tbs. cranberry sauce, ideally homemade but if using a can, warm it so it’s easier to spread n 8 (¼-inch-thick, 1½inch-wide) slices Brie n 1½ Tbs. pistachio nuts, grated n 1 large egg, beaten n chopped fresh herbs, optional for garnish
DIRECTIONS
Preheat the oven to 350°F. Line a large baking sheet with parchment paper.
Unroll the puff pastry dough onto the prepared baking sheet. Within the rectangular pastry sheet, carve a circle about 10 inches in diameter and discard the scraps. In the center of the circle, carve a star shape with 8 points. The points should be long and narrow so they can partially cover the filling and touch the opposite side of the circle. Discard the center star.
Spread the cranberry sauce all over the puff pastry circle (but not on the star points), and add slices of Brie where they will be nestled once the star shapes cover them. Sprinkle pistachio over the cranberry sauce and Brie.
Bring the star points outward, over a slice of Brie and the filling, to the outer edge of the puff pastry round. Press together, so that the dough sticks. Continue with all of the star points until a wreath shape is formed.
Brush the exposed puff pastry with beaten egg. Bake the wreath until golden brown and puffy, 15 to 20 minutes.
Garnish with herbs, if desired. Cut it into 8 pieces so that each piece includes a piece of Brie. Serve while still warm.
Whether you make these donuts by hand or source them from your favorite local shop, make sure you dress them up extra special. Nass uses patterned sheets carefully cut to fit each pastry.
DECORATING DOUGHNUTS
To decorate doughnuts with the plaid pattern seen opposite, apply our patterned sheets to a doughnut’s wet glaze. Many doughnut stores will allow you to purchase extra glaze, and you can dip one side of each doughnut into it. For circles that fit your doughnuts, you can trace circles on the patterned sheets, or use a hot metal cookie cutter to cut them to the exact size. A metal cookie cutter can be heated over the flames in a stove; just use a mitt to protect your hands from getting burned. This treat doubles as décor.

Whether it’s twinkling electric lights on a Christmas tree or the flickering illumination of a menorah or kinara in the window, the holiday season is an excuse for turning the year’s darkest time into a visual symphony of brightness. Many of our Monmouth neighbors go all out, mounting ambitious outdoor holiday light displays at their homes in which each year’s effort strives to outdo the last. A December drive around the ’hood is bound to bring delights. But if you’re ready to drive a little further, there are also places with more space, bigger budgets and more annual visitors that outdo any private home with their holiday lights, and one of them may be worth a trip:
THE BRONX ZOO HOLIDAY LIGHTS

About an hour and 40 minutes from Monmouth by car, this tradition transforms one of the nation’s most celebrated zoos into something otherworldly. Millions of twinkling lights invite you and your family to explore paths of life-sized animal lanterns and celebrations of some of the world’s beautiful and naturally bioluminescent creatures. There’s also holiday décor galore, from trees to Santas. Enjoy ice-carving demonstrations, costumed performers, a holiday train ride, interactive exhibits, sweet seasonal treats and much more. And the zoo offers quieter “sensoryfriendly” nights (Thursday, Dec. 5, and Friday, Jan. 3) for those with sensory issues.
Beyond the lights: Don’t forget to greet the animals during your visit. The Congo Gorilla exhibit, one of the zoo’s most popular, allows you to get an up-close look at one of our nearest animal relatives. For something quick, try the Pine Tree Café, a grab-and-go spot with Neapolitanstyle pizza, sandwiches, sweet treats and killer coffee. KOZIAR’S CHRISTMAS VILLAGE

About two-and-a-half hours from Monmouth by car and nestled in quiet, rural Berks County, this Christmas attraction has been running for 77 years and is often listed as one of the state’s must-see seasonal attractions. Approaching it is like being transported into a fairy tale—as you crest over the last hill, the darkened country road seems to melt away, to be replaced by a dazzling valley set aglow with more than one million Christmas lights adorning buildings, gift barns and landscape. Visit Santa’s post office to mail your holiday letter (or see the man himself!), grab a treat from the traditional bake shop and wander the winter wonderland at your leisure.
Beyond the lights: While you wait for the sun to go down, there are plenty of other attractions to pass the time in Berks County. Check out the Colebrookdale Railroad in Boyertown, which offers a seasonal Santa’s Polar Bear Express and Winter Wonderland train rides with beautiful scenery and great food; it’s within easy driving distance of the village. Or visit the delightfully quirky Historic Crystal Cave in nearby Kutztown to see a geological wonder.

With sprawling displays and several brand-new spaces being unveiled in 2024, this isn’t a show you want to skip.
Beyond the lights: One of those new spaces is The Fountain Room, an airy, inviting space in the heart of Longwood with a spectacular view of the holiday display. On select days, you can enjoy a meal there and try the imaginative Taste of Christmas menu, sure to put you in a holiday mood. For something more hands-on, Longwood also offers holiday-inspired classes and experiences, including classes on preserves and botanical mixology.

A drive to our nation’s capital will take you about three-and-a-half hours, but the Smithsonian Zoo’s holiday lights display is well worth it. See glowing lantern animals in their dazzling habitats, enjoy live nightly musical performances, take a spin on the Conservation Carousel done up in its holiday best and snack on seasonal treats as you wander the zoo’s sprawling grounds. Nearly every tree you’ll see twinkles with LED lights, directing you to different attractions.
Beyond the lights: The Smithsonian offers you the chance to see almost every animal you can imagine. Check out the elephant exhibit, renowned for its dedication to conservation. At the kids’ farm young ones can get up close and personal with cows, alpacas, donkeys and goats. Want to get some last-minute holiday shopping done while you take in the lights? The zoo has three stores scattered throughout, filled with gifts for the science lovers in your life.

BEEF TENDERLOIN WITH CRANBERRY AND SHALLOT RELISH
Yields 6-8 servings
INGREDIENTS
For the Beef:
n 2¼ lbs. beef tenderloin
center cut roast
n 2 Tbs. Chinese five spice powder
n 5 Tbs. olive oil
n 2 Tbs. kosher salt
n 4 cloves garlic, minced
For the Relish:
n 1 shallot, peeled and chopped
n 1½ cups whole fresh or frozen cranberries
n 1½ cups sweet apple, like Gala, chopped
n ¼ tsp. kosher salt
n 1 Tbs. sugar
n 2 tsp. orange zest
n ¹/³ cup orange juice
n ¹/³ cup flat-leaf parsley, chopped
DIRECTIONS
For the beef: Remove tenderloin from the fridge 30 minutes before cooking. Heat oven to 450°F.
Make a paste with the Chinese five spice powder, garlic and 3 tablespoons of olive oil and set aside.
Rub salt all over tenderloin. Heat a large, oven-proof sauté pan on medium-high heat, add the remaining 2 tablespoons of olive oil. Cook the tenderloin, turning until each side is a rich brown, 1 to 2 minutes per side.
Transfer the entire pan to the oven and roast for 15 minutes for medium-rare; internal temperature should be 120°F to 125°F on a meat thermometer. When tenderloin is done remove it to a cutting board and tent with foil. Let it rest for 15 minutes.
For the cranberry relish: In a food processor chop the shallot and cranberries for 5 to 6 pulses. Remove to a bowl and stir in remaining ingredients. Serve with the sliced tenderloin.
“For a healthy tweak to this recipe, use grassfed beef and organic gala apples, and instead of sugar, I would substitute with 1 Tbs. of unsweetened applesauce. You also can swap out high-sugar orange juice with a lowersugar juice like unsweetened tart cherry juice, vegetable juice, tomato juice or even beet juice.”

PORK ROAST WITH CHESTNUTS, FIGS AND DATES
Yields 6-8 servings
INGREDIENTS
n 3 lbs. pork shoulder roast boneless
n 1 cup onions diced
n 2 Tbs. extra virgin olive oil
n ¾ cup dark rum
n 2 bay leaves
n 1 tsp. ground cardamom
n 1 tsp. ground nutmeg
n 3-4 cloves
n 1 tsp. chili pepper flakes
n 2 garlic cloves
n 1 cup Medjool dates, pitted and halved
n 1 cup chestnuts cooked, whole
n 1 cup dried figs
n 1 cup chicken broth
n sea salt
n freshly ground pepper
DIRECTIONS
Season the pork shoulder with sea salt and freshly ground pepper all over. Leave it out on the counter to reach room temperature and dry brine a little for about 1 hour.
Using a thick bottom pot (like a dutch oven) sear the meat in mediumhigh heat with two tablespoons of olive oil for 6-7 minutes, until it is golden brown on all sides.
Add the rum and let the alcohol evaporate for 1 minute. Then, add the spices, cloves, bay leaves, garlic cloves and diced onions.
Add the broth and bring to a boil. Lower the heat, cover the pot and cook for about 1.5 hours until the meat is tender.
Add the dried fruits and chestnuts to the pot and cook on very low heat for another 30 minutes.
Remove the meat and fruit with a slotted spoon and arrange them on a serving platter. Pour the sauce in a gravy boat and serve.
“What a perfect holiday roast. For a healthy tweak, use organic pork shoulder roast—I suggest Wegmans or Whole Foods. Reduce the dark rum to ¼ of a cup, as the dates and figs will make it sweet enough. To reduce the sugar content, use fresh figs instead of dried figs. You can also use low-sodium chicken broth.”

restaurant reviewer recalls some of the year’s most memorable meals.
There’s little room for sentimentality when you dine as a proxy for the reading public. Your taste buds demand to be dazzled, and excellence in fresh ingredients and a meal’s conception and execution is the expected norm—no big deal. Remembering yesterday’s culinary triumphs quickly yields to an insistent new question: What’s on the menu for today?
Still, when I look back on the restaurants I’ve visited in the line of duty in 2024, my mind does flash on certain favorite meals—and they’re not necessarily the fanciest or costliest ones. The four below, for example, reflect well on recent entrants into the world of Monmouth eateries. I find myself semiconsciously coming up with excuses to go back and taste them again.

After several attempts to score a place at this trending Asian fusion bistro, I finally found myself in the swanky bar area—and it was well worth the wait. While my friend and I had a front-row seat as Bad Hat’s bartender mixed cocktails, we had attentive food service as well. I relished every bite of this half-bird, which was easily one of the best I’ve tried.
Dining at a mall once meant picking up a tray and ordering a burger and fries. While those options still exist, I was excited to try the sit-down service at this spot at Freehold Raceway Mall. Before I could sink my teeth into this dish, my server taught me how to pronounce it correctly—not in a patronizing manner, but in a welcomed effort to share his culture. I was truly grateful for the language lesson, as well as the classic Turkish dish made with cubes of lamb served over a bed of roasted eggplant and a sharp goat’s milk cheese.

Entrées at this Indian restaurant reflect the best of both the nation’s northern and southern regions. It’s not common to find a restaurant that does both, so the menu here is a treat. During my visit this summer, I ordered a northern-leaning goat curry. The meat was as tender as any red meat I’ve tried— each bite was delicate, no gamey flavor here. Diners may select the spice level of their dish, and I asked for hot curry sauce, which was made with tomato, onion and many chilies.
The breast meat was moist and lean with very little fat, and the leg portion was of the same taste and quality. The flavor was the result of a five-spice marinade and sauce, and the accompanying bok choy and purple sweet potatoes were also on point.

The hospitality alone was a notch above many eateries I’d been to this year, but I also appreciated that L’Olivia puts as much care and creativity into its classic dishes as it does its specialties. Case in point: The seafood fra diavolo was divine. It’s a heaping bowl of pasta with a full catch of fresh shrimp, calamari, mussels and clams, which were served with a spicy (but not fiery) red sauce. And don’t let the extra sauce go to waste: Save some of the table bread to sop up the remainder.
