Love’s All About Taking A Chance
When you think about it, a hundred things could go wrong when you encounter the one you’re going to love. You might show interest and be rebuffed. You could make an embarrassing slip of the tongue— or suddenly drop something, in clumsy and uncool fashion. There are horrible possibilities! Little wonder, then, that at the end of a night out with friends Sarah panicked and simply walked out of the bar without stopping to greet that boy who had caught her attention.
“I slipped out of the bar in a hurry, hoping to avoid an awkward conversation,” she says.
But you’ll be relieved to learn, in “How Love Found Us” on page 20, that Sarah and Brian managed to get together after all. They’ve been married 23 years now, so it all worked out. MONMOUTH celebrates Valentine’s Day by inviting couples in the county to share the stories of how they found each other—and love. You’ll find their tales full of humor, coincidence and feelings you can relate to—like Sarah’s nervousness.
Love, of course, doesn’t always involve romance. It’s also the force that connects parents with children, sisters with brothers, residents with their community. In “Love’s Many Faces” starting on page 24, we spotlight the different ways you show love and how you proudly display it on social media.
Are you thinking about ways you can demonstrate to your friends that you care? Call up a girl friend or two and suggest a get-together for Galentine’s Day, Feb. 13—on page 9 we share four ideas for that occasion. Plan a cold-weather walk with a buddy that will do your heart good, literally. (On page 16, we discuss winter’s special challenges to cardiac health.) Schedule a Bourbon Street-style outing for Mardi Gras (page 8).
The bonds we share with others can truly be life changing. That’s the case for Donna and Gary, long-time friends who had been in each other’s lives through marriage, children, divorce and life’s good and bad. They always had mutual respect, admiration and caring for one another. So on Labor Day weekend in 2010, they finally decided to take a chance—and it paid off. They’re happily together now too, as you’ll read on page 20. My wish for you this February is that, in whatever way works for you, you’ll give happiness a chance. Enjoy!

OUR GUIDE TO NEW IDEAS, TIPS, TRENDS AND THINGS WE LOVE IN OUR COUNTY.
MARDI GRAS, MONMOUTH STYLE
It may be too late to plan a trip to New Orleans, but you needn’t miss out entirely on Fat Tuesday revelry. The best part of N’awlins fun is the food, and there are Mardi Gras-inspired options right here in Monmouth: Broad Street Dough Co. (multiple locations, broadstreetdoughco. com) is a Readers’ Choice selection for best donuts, but its warm beignets always hit the spot this time of year.
Clementine’s Restaurant (306 Main St., Avon-bythe-Sea, 732.988.7979; clementinesavon.com) is an upscale eatery specializing in Creole and Southern cooking. Before you dive into your main course, start with the classic gumbo, a spicy but smooth seafood stew.
Drew’s Bayshore Bistro (44 E. Front St., Keyport, 732.739.9219; drews bayshorebistro.com) has an all-around menu that foodies love—the restaurant’s crawfish étouffée is truly memorable.
Ragin’ Cajun (1102 River Rd., Belmar, 732.280.6828; ragincajun nj.com) has a CajunCreole-inspired menu that inspires raves. There’s much to try, but be sure to order its signature seafood jambalaya, which comes with Andouille sausage, celery, onions, green peppers and other veggies.
Simona’s Bakery (2201 Rte. 35, Sea Girt, 732.223.8373; simonas bakery.com) is known for its large variety of baked goods and custom cakes, including colorful king cakes and cupcakes (complete with a plastic baby).
SPOTS FOR SLEDDING
So far, Old Man Winter has taken it easy on us this season: 2025 snow accumulations pale in comparison to other years. But when the white stuff does fall, sledders quickly gear up for action. Here are some great Monmouth spots to take your kids sledding and tubing. (Parents are reminded to supervise children and take necessary safety precautions.)
• Atlantic Highlands Elementary School
• Beacon Hill Country Club, Middletown
• Cheesequake State Park, Matawan
• Holmdel Park, Holmdel
• Howell Public Library, Howell Township
• Ivy Hill Park, Aberdeen
• Monmouth Battlefield State Park, Manalapan

CANDLE POWER
A scented candle adds a warm glow and the perfect perfume to any space—and it’s a gift for any occasion. While it’s fun to browse your local Yankee Candle or test out scents in your go-to department store, there’s even more to love in looking local.
For instance, in Marlboro, Brighter Days Candle Co. (87 S. Main St., Marlboro, 732.587.5383; brighterdaysco.com) creates natural soy wax candles with organic wooden wicks that crackle when they’re lit. Scents change with the season and include options like “Currently Reading” (with notes of teakwood, leather and cedar) and “Mood: Berry Lit” (a top note of lime and mint with a base of rum and vanilla).
The Midnight Candle Company in Belmar (811 Main St., Belmar, 908.670.8257; midnightcandle.com) doubles as a candle-making workshop where you can try out the craft. The candles on the shelf, however, are crafted and poured by a candle-making expert, include scents such as honeysuckle, sage and citrus and will burn up to 45 hours.
For super-fun packaging, try Surf’s Up Candle (they’re currently on the move from Belmar to Red Bank; surfsupcandle.com) where you can find soy candles in brightly wrapped mason jars and paint cans. Scents range from coconut lime to apple crumb. They also have a line of zodiac sign-themed candles. (If you were wondering, Aquarius smells like citrus splash.)
NIGHT FOR THE GIRLS
Celebrating love means acknowledging all loving relationships, including the friendships that get you through the day. So it’s fair that this month includes Galentine’s Day, Feb. 13, when can spend quality time with your girlfriends. There’s no one way. Which approach suits you?
Go out. If you’re looking for a night on the town, our readgave nods to The Proving Ground (56 Shrewsbury Ave., Highlands, 732.872.2266; theprovingground.com) in Highlands The Bistro (108 Schanck Rd., Freehold, 732.813.8700; thebistronj.com) in Freehold as perfect spots for joyful celebration. Enjoy craft cocktails, extensive menus and incredible ambiance at both. The Proving Ground’s schedule of events filled with crowd-pleasing live music, and The Bistro’s happy hour includes colorful drink specials and great apps.
• Stay in. Sometimes the best option for fun with friends is to settle in for a no-stress evening at home and indulge in a wine-and-whine. Organize a charcuterie board potluck and have all your girls bring their favorite parts of a grazing spread, put them together for some mix-and-match. And/or do same thing with signature drinks—have everyone indulge inner mixologist and then set up a sampling table. (Maybe even vote for the party’s favorite and have a prize on hand for winner.)
Get cooking. Monmouth’s bar scene is second to none, our readers selected Fair Haven’s Taste and Technique River Rd., Fair Haven, 732.741.2665; tasteandtechniquenj. com) as the best spot in Monmouth for a girls’ night. This cooking studio’s adult classes are fun, hands-on and sure to inspire your inner chef. Multiple adult classes are available each week, with themes ranging from seafood prep to wine tasting to cake decorating.
• Get creative. Howell’s Wine and Design (2214 Rte. 9 S., Howell, 732.614.3850; wineanddesign.com) offers a full paint-and-sip experience. Enjoy some great drinks and better company while creating a masterpiece to take home. Another option: Uncorked Wine Inspired Creations in Asbury Park (612 Cookman Ave., Asbury Park, 732.988.9463; uncorked wineinspired.com) offers crafting sessions and paint-and-sips, where you and your party can drink and chat while creating cozy blankets and other fabric items.
THEY’RE BLACK-OWNED
February is Black History Month—what better time to check out the eateries in Monmouth that are owned by members of the Black community? For example—
• Ada’s Gojjo, 1301 Memorial Dr., Asbury Park, 732.222.5005; adagojjo.com
• Eileen’s Soul Food a nd Catering, 86 Hillside Ave., Neptune City, 732.807.3223

OYSTER COMEBACK?
The phrase “underwater castles” suggests oceanic luxury, but it’s not luxury for people—it’s for oysters. Recently, more than 80 new oyster “castles,” all seeded with oyster larvae, were added to Sandy Hook Bay at the Naval Weapons Station Earle in Colts Neck, a location central to Monmouth University’s aquaculture facility. This addition is considered by environmentalists an important step in enhancing the area’s biodiversity.
Oysters were once native to Monmouth’s waterways in large numbers. (They were vital for filtering pollution and creating a “living shoreline,” which increases flood resilience.) But, due to environmental changes and overfishing, their population has dipped dramatically. These new castles are an attempt to reintroduce oysters and to study their growth, along with the survivability of the waters. Leading the charge is West Long Branch’s Monmouth University and its Urban Coast Institute (UCI), which studies the “interactions between humans and the coastal and ocean environment” and seeks to create “sustainable coastal development along New Jersey’s coasts and watersheds.” Students and staff will monitor and study oyster larvae as they grow in hopes of using that information to build a more sustainable Monmouth. For more information, see monmouth.edu/uci.
CULINARY CORNER
Our county has no shortage of established eateries, but sometimes a change of scene does us good. Three recently opened restaurants deserve a try:
The tasty double T Tatum’s Table puts an artisan spin on brunch and lunch options. How about a flight of croffles (a croissant/waffle mashup), a rise-and-shine burger or a lobster Cobb salad? We’ll take all three, please.
• Tatum’s Table, 650 Newman Springs Rd., Lincroft, 732.741.1100; tatumstable.com
Big bites
Also serving breakfast and lunch is Minnows, offering diner classics such as pancakes and French toast for breakfast, salads and burgers for lunch—and more. Take, for example, a “Velvet Elvis” sandwich with peanut butter, bacon, banana and honey, or a “Reuben Studdard” filled with hot corned beef, melted Swiss, sauerkraut and Russian dressing. (See our full review on page 72.)
• Minnows, 416 Higgins Ave., Brielle, 732.612.1403; minnowsbrielle.com
Noodle news
We can never have enough hot noodle options, especially in mid-winter. Soho Ramen, Freehold’s newest noodle house, features a long list of ramen bowls (ribeye or ox-tail ramen, anyone?) as well as stirfry entrées, fried rice options and other Korean and Chinese staples.
• Soho Ramen, 21 W. Main St., Freehold, 732.858.0088; sohoramennj.com
A HISTORY OF BOOKS
The Freehold Public Library recently celebrated its 120th anniversary. It’s an original Carnegie library, built with funds from philanthropist Andrew Carnegie, and while A.C. wasn’t around for its recent major renovation, he doubtless would approve. Improvements include new elevators, a teen room, HVAC upgrades and restrooms that comply with the Americans with Disabilities Act (ADA).
“To me, this anniversary has its greatest meaning for what the library promises for its next 120 years,” says director Kathy Mulholland. “The recent renovation results in the building being 100 percent ADA-compliant while keeping the warmth and charm that have been central to the library’s popularity since 1904.”
While the library looks ahead, it’s also the perfect place to immerse yourself in stories from the past. Mulholland suggests these:
• Outlander series, Diana Gabaldon. Though there are fantasy elements to this story as well (the main character, Claire, is a British time traveler from the 20th century), its roots are in historical fiction— and the romance between Claire and dashing Highland warrior Jamie. The popular Starz TV show keeps interest in it high, and the eighth book in the series, Written in My Own Heart’s Blood, has strong local interest, as it includes the 1778 Battle of Monmouth.
• The Book Thief, Markus Zusak. Though marketed as a young adult title, this book enjoys crossover status into adult collections and is a favorite with book clubs. Narrated by Death personified, it tells the World War II story of young Liesel Meminger and the lives, loves and deaths of those around her.
• The Women, Kristin Hannah. Published in 2024, this book debuted at No. 1 on The New York Times bestseller list. It follows a young nurse who serves in the U.S. Army Nurse Corps during the Vietnam War and, according to Mulholland, “has spent very little time on our library shelf.”
• Al Capone Does My Shirts, Gennifer Choldenko. “I have to recommend something for kids,” Mulholland says. But she quickly adds that adults too may find joy in this tale of a young boy who moves with his family to Alcatraz Island.
PUPPY LOVE
Dog: Jersey, 4½-year-old Cavalier King Charles spaniel Owners: Danielle and Greg Waters of Highlands
Jersey’s known on Instagram as the “unofficial mayor of Highlands,” a title the pooch has truly earned: He’s always on the go and stops to make friends everywhere. When he’s not on the campaign trail, Jersey spends time sitting at the gate to the Waters’s backyard, greeting everyone who passes by. Danielle describes Jersey as “a very loving and a kind soul,” as he stays low to the ground when approaching another dog or a person, then rolls on his back so everyone knows he’d never hurt them. (And if he gets extra belly rubs out of it, all the better!)
Jersey often visits the local QuickChek to greet one of its employees, Eileen, and to grab a special treat (usually pretzels). In addition, the Waterses take Jersey all over Highland Hills, and he can be spotted in Freehold, where his “grandparents” live, and in Sandy Hook for beach days. (He loves the water!)
So, what does this lovable pup dislike? Bananas, Danielle reports. Want to see your pet in an upcoming issue of MONMOUTH? Email a brief description and photo to Editor Rita Guarna at rita.guarna@wainscotmedia.com.
FRIENDS & NEIGHBORS
He’s All About The Beach
Alek Modjeski wants to restore the shoreline’s ecosystem for the benefit of horseshoe crabs—and human beings too.
They call him Captain Al. Originally from Myrtle Beach, South Carolina, Alek Modjeski joined the Air Force in the late 1980s and was deployed in Frankfurt doing air passenger service during Operation Desert Storm. After that, he worked dispatching limos in Atlantic City—but always the ocean called to him. He earned his bachelor’s degree in marine biology from Stockton University, and later got a master’s in environmental policy and management from the American Military University. This path led him to Monmouth; the 55-year-old lives in Bradley Beach, where he and his ex-wife raised their teenage daughter.
Now he is the Habitat Restoration program director at the Highlandsbased American Littoral Society, which “promotes the study and conservation of marine life and habitat, protects the coast from harm and empowers others to do the same.” He works with damaged ecosystems to help them grow back into something functional and living. Since Superstorm Sandy in 2012, he has managed dozens of restoration projects throughout the state—he has, for instance, helped to plan living shorelines and restore oyster reefs.
How did you come to marine biology?
It’s funny—I remember the exact moment I decided. I was stationed in Germany, thinking about what to do next. I’d grown up at the beach. I love being around the ocean. I thought, “How am I ever going to stay there? I need to find a job that keeps me near the ocean.” Both my parents are scientists, so I decided I was going to study marine biology. What do you love about the ocean?
It keeps you sane. It’s all open space. I can breathe. Tell us about the American Littoral Society. “Littoral” literally means “near shore.” We care for the coast, and we empower others to do the same. We do that through education, outreach, restoration and conservation. I do the restoration
and conservation. There’s a lot more planning and implementation involved. Since Hurricane Sandy in 2012, we’ve done 60 or 70 habitat restorations all over New Jersey. We have a big focus down in Delaware Bay, where we restore beaches and marshes for horseshoe crabs and the red knot [an endangered bird on the list of federally threatened species], which forages on their eggs. We make sure the beaches are still there for them. Horseshoe crabs have been here for 50 million years and, without our help, they would have been wiped out. What does a habitat restoration entail?
We try to bring back a place’s natural ecology. For instance, I restored a parking lot on the north end of Bradley Beach. It used to just be a blacktop that lifeguards and fishermen parked on. I thought, “This isn’t ideal for anybody because, when it rains, all the water that comes off the blacktop feeds
into the lake and causes pollution [running off asphalt exposes water to oil and other pollutants]. How can I stop that?” By planting things. We built a topography with dunes and native plants—cedars, hollies, all kinds of grasses. There are paths you can walk on now. You can see the lake. Plus, it helps with the runoff. And this work has taken you all over the world?
My first habitat restoration was actually building reefs in Puerto Rico. We were building them because a company needed to run cables through the area and didn’t want to disrupt the wildlife. While diving, we saw the first queen conch to be sighted there in almost 20 years. That was cool.
Why is what you do important? Because humans are part of this environment too. Restoring the ecology of what was once here is important, but it’s also important to connect people with that ecology. That’s part of the reason we love our volunteers.
A triumph you recall?
We recently restored a beach on South Riverside in Neptune Township. It was a horseshoe crab beach. And the residents rallied for us to come in, and around that flagship species. They wanted a living shoreline. They marched on city hall, with signs and everything. That’s when I realized that people are really starting to get what we’re trying to do here. It was huge.
A dream project?
I want to restore the Shark River Inlet. Between the railroad bridge and the Route 35 bridge, there used to be a marsh island when the tide went out, and it’s not there anymore. I could build that island back. I know I could.
Something special about Monmouth?
It’s hardy; it’s resilient. The ecosystem is so strong. I drive my daughter to school, and when I’m going over that Route 35 bridge I always say, “Look where we live. It’s so beautiful.”

This Season Of The Heart
WINTER BRINGS CARDIAC RISKS THAT CALL FOR SPECIAL PRUDENCE, TWO MONMOUTH DOCTORS EXPLAIN.
Patel, D.O. interventional cardiologist, CentraState Medical Center,
The phrase “winter blues” usually refers to matters of the metaphorical heart, but make no mistake: The coldest season can spell trouble for your literal ticker as well. Freezing winter weather and its consequences, including both a sedentary, indoor life and the sudden exertion required to shovel heavy snow, can increase your risk of a cardiac episode.
“Some of it has to do with lack of exercise,” explains Isaac Tawfik, M.D., a cardiologist at Monmouth Heart and Vascular in Eatontown. “Some of it has to do with not being as disciplined around the holidays, and binge-eating and consuming alcohol more than usual. Some of it has to do with weather factors themselves.”
Jatinchandra Patel, D.O., interventional cardiologist and medical director of CentraState Medical Center’s Robertshaw Cardiovascular Interventional Center in Freehold, expands on that point. “Cold temperatures put you at increased risk for hypothermia and dehydration. These can both elevate your heart rate and elevate blood pressure. That’s the issue with doing strenuous activity in cold weather and snow. It will elevate your heart rate above what your heart is used to; your heart rate gets very fast, very quickly. This causes
constricting of the blood vessels and increased workload of the heart, which can lead to cardiovascular events.” This can become a particular
problem after a heavy snowstorm, when the instinct of many is to head outside right away and ambitiously shovel driveways and sidewalks. More than a chilly inconvenience, this chore can put certain people’s lives in danger, particularly if they’re older or have other heart-attack risk factors. The strain of heavy labor, combined with that abovedescribed vasoconstriction and the added weight of protective clothes, can trigger the formation of a blood clot that blocks the artery and causes a heart attack. Dr. Patel says snow shoveling is “a big ‘no’—especially in Monmouth, where a lot of driveways are very big. It’s simply too much. Most people don’t need to go out there and do it themselves.”
Dr. Tawfik echoes the sentiment: “Generally, in my practice—especially for my patients who have established heart disease—I advise against it.”
Dr. Patel also notes that snowy conditions can delay lifesaving medical care. “Emergency Medical Services (EMS) vehicles are often traveling more slowly, and so are the people on the team who need to come in and attend to the patient. All of these things lead to delays in the patient’s getting the attention. You’re taking a bad situation and making it worse. I always tell people to, please, do me a favor and stay inside.”
But you can take steps to reduce the danger, the doctors say:
• Stay (safely) active.
“It has to start in October,” says Dr. Patel. “As the weather gets colder, people tend to decrease activity such as outside walks. But there’s no reason why you can’t continue them through November. The more you keep up your fitness level, the less your chances of having an event from a massive snowstorm.”
For folks who want to keep up their exercise in winter and do it safely, Dr. Tawfik says: “We recommend staying indoors, but for outdoor exercise it’s best to start with a warmup period indoors. Don’t start vigorous exercise in the outdoor setting.”
To keep up physical activity such as daily walks when the weather gets frigid, both Dr. Patel and Dr. Tawfik suggest walking at a mall or another indoor location, or braving a gym membership until the springtime.
• Remember other risks. Any health burden is a heart burden, especially infection. In the winter, it’s particularly important to stay up-to-date on vaccines. Ask your doctor about inoculations for COVID-19, the flu and RSV (respiratory syncytial virus) and wash your hands regularly with soap for at least 20 seconds. Dry, cracked skin can create open portals for germs to enter the body, so hand lotion is a must as well. Dr. Tawfik adds: “Getting adequate sleep is important. It’s healthy for both your heart and your body in general. And abstain from tobacco products; there is a strong link between tobacco and heart disease.”
Adds Dr. Patel: “Stay hydrated, eat healthy and be vigilant. Don’t ignore any new symptoms that are developing.”
• Know signs of trouble. The first steps to surviving a heart attack are identifying that you are experiencing one, and getting help as fast as possible. Familiarize yourself with the symptoms of a heart attack, both common and uncommon. Dr. Tawfik explains: “The typical sign is pressure in the chest, sometimes with radiation to the neck, the back or the arm. It may or may not be associated with difficulty breathing or breaking out in a sweat.”
More atypical symptoms, says Dr. Patel, “we tend to see more in diabetics, elderly people and sometimes women. You may have dyspepsia [abdominal discomfort or an upset stomach]. You may have neck pain, or jaw pain. I’ve seen some of the elderly folks come in with what they think is tooth pain, and then the emergency-room physician tells them that they’re having an acute heart attack.”
If you are experiencing these kinds of symptoms and think you are having a heart attack, immediately dial 911. Says Dr. Patel: “Those operators are trained to guide you through the next steps.”

In 1945, on a small chicken farm, the Monmouth County Society for the Prevention of Cruelty to Animals (MSPCA) was born. Its stated goal was “to protect and advocate for all animals.” Today, the organization remains dedicated to that mission, but it has far outgrown that little chicken farm.
Its animal shelter and adoption center take in an average of 4,500 animals a year and engage a full veterinary staff, 60 full-time employees and an even larger number of volunteers. MSPCA offers a public veterinary clinic and educational and support programs for residents (including providing therapy dogs and “puppy school” for prospective animal “parents”), is responsible for lost and stray animals in Monmouth and has one of the leading feline trap-neuter-release programs in the state. Under the group’s current leadership, reports of animal cruelty in Monmouth have gone from 900 instances a year to 300.
The 80 years haven’t all been easy. In fact, when current executive director (and lifelong Monmouth resident) Ross Licitra stepped into the position in 2015, MSPCA was at a low point, on the brink of bankruptcy. “I was only supposed to be the temporary executive director,” says Licitra, “but the Board of Trustees asked me to stay on and continue with the job.” Before that, Licitra had been the organization’s law enforcement officer, a position he also took in 2015 after a 30-year career as a police officer in West Long Branch and then as a county detective.
“The majority of my career was in violent crime,” says Licitra. “I constantly saw animal-cruelty situations there, and I worked with the MSPCA Law Enforcement Division when they happened. I saw what they were doing, and I love animals—we all do. I thought, what an opportunity to bring together two of my life passions, law enforcement and animal welfare.”
Understanding of the law gave Licitra an edge from day one. The first thing he did as chief law enforcement officer was to integrate the county prosecutor’s office into MSPCA’s law enforcement division. “I learned that, in the rest of the state, SPCAs were all volunteer,” explains Licitra. “There would be hundreds of animal-cruelty complaints, and they wouldn’t be investigated because volunteers were relied on to do so.” That had to change.
“I needed to have the support of the county,” says Licitra. He got it. With the prosecutor’s office, the county commissioners and the MSPCA all working together, the fight against animal cruelty began advancing in the right direction. “In our first year here, we were knocking cases out left and right, like we’d never seen before,” says Licitra. “People started to realize that animal cruelty wasn’t going to be tolerated. We were going to do something about it.”
Their success was so great that it caught the eye of the state legislature. Licitra was called to testify before the Senate Economic Hearing in Trenton about the way Monmouth County handled humane law. “I asked, ‘How come out of the 21 counties, the only one that does it right is Monmouth?’” State officials got the message, the laws changed and Licitra helped rewrite them.
It is now state law that every police department in the state must have a humane law enforcement officer—not just volunteers—to combat animal cruelty, working with the county prosecutor. Those humane law enforcement officers needed training, of course—and MSPCA helped to develop that as well.
It’s not all successes, of course. “The animals are easy; the people are difficult,” says Licitra. Educating the public on responsible pet ownership is a constant project, always with the hope of keeping adopted pets from being returned to the shelter. As Associate Executive Director Barbara Lovell explains, “We have eight huskies here right now. They are wonderful dogs, wonderful pets, but people aren’t prepared for them. They need special training. And then they end up here.”
However, Lovell also gets to see firsthand the good that MSPCA does—not just for animals, but for all Monmouth residents. “We did a week-long youth camp once, and one little girl who attended was incredibly shy. Her mom had me on the phone about it; she had very little confidence, but she loved animals. By the end of the week, the transformation was unbelievable. She was taking her mom by the hand and introducing her to all our humane officers,” Lovell says. “That’s how it is—we help animals, and animals help people.”
With Executive Director Ross Licitra at the helm (pictured at top left with a pup named Balto), the Monmouth County Society for the Prevention of Cruelty to Animals (MSPCA) cares for lost and stray animals in Monmouth, while overseeing wildlife rescue, support and education groups, a public veterinary clinic and more. The shelter and adoption center, which has 60 full-time employees and a large volunteer base, takes in an average of 4,500 animals a year, from dogs and cats to guinea pigs and goats.
‘HOW LOVE FOUND US’
THREE
MONMOUTH COUNTY COUPLES TELL THE STORY OF HOW THEIR RELATIONSHIP BEGAN.
AS TOLD TO RITA GUARNA
Is it random happenstance, or a knowing Fate? An achievement, or merely a lucky gift from the universe? We all know that marriage takes work, but finding the person you love enough to marry can also involve a bit of magic, depending on how you interpret your story. We at MONMOUTH have no general theory of how to find romantic happiness, but we can present anecdotal evidence. That’s because three Monmouth couples were kind enough to share their meeting-a-mate autobiographies. We wish them—and you—a Happy Valentine’s Day!
JENNIFER AND ROSS HANSEN, WALL:
“Our love story began in the spring of 2007, when we were college students. I went to Caldwell College, and Ross went to The College of New Jersey. My best friend from high school, Kate, had been trying to introduce us for years, but the timing was never right—I was in a relationship. It wasn’t until Kate’s 21st birthday party that we finally met, and as soon as I saw Ross, I found myself asking Kate why she hadn’t introduced us sooner. We had only a brief interaction that night, but it left a lasting impression.
“A month later, I broke up with my boyfriend, and while I was hanging out with Kate, she decided to call Ross to see if he wanted to join us. That evening, we ended up at his parents’ house with a group of friends, hanging out in the basement. The chemistry was undeniable from the start. Ross offered to make me a drink—a screwdriver, which I found an amusing choice! We played cards and talked all night. By the time I went home, I couldn’t stop thinking about him.
“Ross must have felt the same way because he started texting Kate about me. She gave him my number. We began dating at 20 and 21 years old, growing up and evolving together as we graduated college, started our careers and experienced life’s highs and lows.
“By 2013, after seven years together, we were ready to take the next step. We got engaged and planned our wedding at Sea Oaks in Little Egg Harbor on the 4th of July. Ross had started his own business, Hansen Renovations, and I was building my career as a teacher. In 2014, we got married and bought our first home in Keyport.
“As newlyweds, we poured our hearts into renovating and designing our first home together. It was during this time that I also pursued my dream of becoming a yoga teacher. A year later, we sold the house, proud of the profit and memories we’d created. This sparked a journey of designing, renovating, and selling homes, which became a shared passion.
“In 2020, during the peak of the pandemic, we sold our home in Wall and bought a property where we decided to build our dream home. Ross took on the role of general contractor, and together we designed every detail. While living in a small apartment in Spring Lake, we poured our energy into creating a house that reflected our shared vision.
“Since moving into our dream home, life hasn’t slowed down. We’ve opened a second yoga studio in Belmar, and I continue managing both studios and working full-time as a schoolteacher.
“Through all of life’s challenges, we’ve learned that hard work pays off, that resilience is key, and that leaning on each other makes us stronger. We don’t have children yet, so we make the most of our time traveling and dreaming about what’s next.”
DONNA DOHERTY AND GARY PAINE, BELFORD:
“Gary and I have known each other for 41 years. We started as friends, remained in each other’s lives through marriage, children, divorce, dating, and life’s good and bad. The one constant that has never changed is the respect, admiration and caring we have always had between us.
“On Labor Day weekend in 2010, I invited Gary to go to the beach and a concert. He came to hang out for the weekend, and our flirting jumped to the next level. By the end of the night we were kissing and realized just how attracted to one another we really were. After spending every moment together for those three days, we knew we wanted to spend all of our moments together. We told our kids, our parents, our friends and they were all on board and thrilled for us.
“We have now been together as a couple for 14 years, and recently Gary surprised me with a proposal on a trip to Ireland. He is my biggest supporter and the love of my life. Every day he makes me smile and laugh, and I feel like the luckiest woman on the planet. I love our love, and I choose him as my forever.”
SARAH AND BRIAN WILTON, LAKE COMO:
“Our love story began in the summer of 1996, when we were both 21, in Belmar. Brian, originally from Bayonne, had been a lifeguard on Belmar Beach for years, while I was from Wall and worked as a waitress at a local restaurant. One summer evening I was out with college friends at a bar in Belmar. As I looked around the crowded room, my eyes fell on Brian across the bar. There was something about him—his calm demeanor and easy smile—that caught my attention. Our eyes met for a brief moment, and I felt a spark, but instead of approaching him, I quickly looked away, unsure of what to do.
“Brian, however, had noticed me too. He was with a friend, and the two of them decided to make introductions. As the friend approached me to bring us together, I panicked. I slipped out of the bar in a hurry, hoping to avoid an awkward conversation.
“For the next week, it seemed like the universe had a hand in bringing us together. Everywhere I went, I kept bumping into Brian in town—at the beach, on the boardwalk and on the street passing each other in a car. But each time, neither of us spoke. It was as though we were stuck in a cycle of near-misses, each encounter teasing the possibility of something more.
“Curious, I asked my best friend, a lifeguard named Beth, about him. She had been working alongside him for years. She casually said, ‘Brian? He’s a good guy. You’ll like him.’ Still unsure, I decided to leave it to fate.
“Then came a Tuesday night at D’Jais, Belmar’s popular night spot, hosting its reggae night. I was there with my friends when I saw him again—this time, Brian walked right up to me. He smiled, introducing himself. Feeling both nervous and relieved, I said, ‘You’re the infamous Brian I keep hearing about.’
“We talked all night, laughing and getting to know one another. The chemistry between us was undeniable. When the night drew to a close, Brian offered to walk me home. He was kind and genuine, and it felt like the start of something special. By the time he left me at my friend’s house, we both knew we had made a connection that was just the beginning.
“The rest of the summer was a whirlwind of moments spent together—long walks on the beach, quiet dinners and deep conversations about our lives. When we went back to our respective colleges for senior year, we stayed in touch, talking on the phone for hours and even writing letters. When I studied abroad in England during the spring semester, we made it work, proving that our bond was strong.
“After graduation, I began my career at Freehold Township High School, teaching English, while Brian took a year off to work at Prudential in Newark, figuring out his next steps. The following year, he enrolled in law school, and it was during his second year that he proposed, solidifying our future together.
“In 2002 we were married, choosing Belmar for our reception at the Waterview Pavilion. When it came time to settle down, Brian asked me to choose between Bayonne and Belmar. I chose Belmar—more specifically, Lake Como, a small town nearby. It felt like home.
“We bought a house in Lake Como, and our roots began to grow deeper in the community we had both come to love. Brian eventually got into politics, first becoming a councilman, and later the mayor of Lake Como. I moved to Belmar Elementary, where I went on to become the principal. We have raised two daughters in Belmar, living a life rich with love, community and shared memories. Having met by chance, we turned a summer romance into a lifetime of happiness.”
LOVE’S MANY FACES
IT’S THE ROMANTIC PULL THAT MAKES YOU SAY “I DO,” BUT IT’S MUCH MORE BESIDES. HERE’S WHAT LOVE, IN ALL ITS VARIETY AND SPLENDOR, LOOKS LIKE AROUND MONMOUTH COUNTY.
They say love makes the world go round, that it’s blind, that it’s all you need, that it means never having to say—well, never mind. The point is, words keep chasing after the notion of love because they can never entirely capture it. Maybe pictures can’t fully do so either, but often they can make a memorable stab at it.
That famous February 14 holiday may inspire us to celebrate a romantic connection (and purchase chocolates!), but we all know that’s just one of many kinds of love. And love is ubiquitous—if you take a look. Monmouth residents show their devotion to their children, their parents, their neighbors, their pets and their community—and proudly display this affection on Instagram. On these pages are images of love shared poignantly on social media.

Is there a better buddy than a sister? At Holmdel Park, siblings Elle and Cami each embrace their built-in best friend, so absorbed in pulling silly faces at each other that they seem to have forgotten the camera. Photographer Jillian Schulz says it was “a joy to witness their unique connection during this shoot,” noting that both their personalities and their tenderness for each were on display.

MAMA’S BOYS
photo by @littlemamaspops, Samantha Lake Lexann Angerami of Middletown traveled a long journey to bring her sons into her arms, and she’s thankful for it every day. “My husband and I went through fertility treatments for more than five years until we were blessed with our twin boys,” she says. “I’ll never forget the day we saw both of their heartbeats on that ultrasound screen.” Here she hugs Brody (left) and Nash close—and that smile says it all.
Frederick and Courtney Dolan of Brielle were celebrating their engagement and preparing for their wedding, and Courtney’s grandfather Harry Tahan—her “Pops,” who’s 103 and a World War II veteran—was with them every step of the way. “Leading up to our wedding, Pops gave us ballroom dance lessons for our first dance,” says Courtney. “Having him in our wedding was beyond special.”

It’s easy to express love to people we know (well, sometimes!), but showing compassion to a stranger takes commitment. The staff at JBJ Soul Kitchen restaurant in Red Bank serves hot meals to all guests for either a suggested donation or volunteer time, fostering a sense of empowerment and dignity. “It’s a welcoming space where individuals from all backgrounds can come together to share a meal and support the community,” says Tessa Caruso, a member of the Jon Bon Jovi Soul Foundation.

It was love at first sight when Brian Swope met Brentley; he couldn’t resist those longing dalmatian eyes. They’ve been the perfect pair ever since the pup came home in 2023, even though Brentley immediately learned how to sneak onto counter tops. “There’ll be many lost sandwiches in the future,” he says. No worries, though, as Brentley’s face is undeniably forgivable and always earns kisses from his owner.

According to Gina Ricker, Jack’s wife, their family just wasn’t complete without Mr. Hobbes, and welcoming him into their lives has provided nothing but joy. He also never hesitates to return that affection in spades. Says Gina: “He was originally named Olaf. I was told it was because, when he gets picked up, he melts into you like a warm hug.” (Olaf is the snowman in the Disney film Frozen who dreams of experiencing the joys of summer.)

TRIBUTE TO A LEGEND
A mural masterpiece by Red Bank’s Michael White pays homage to jazz great Count Basie.
There’s nothing terribly remarkable about the Navesink River Bridge, yet artist Michael White finds plenty of beauty in the 112-year-old structure. In fact, the Red Bank resident sees the splendor in nearly everything with a long history—bridges, restaurants, music and people, for instance. It was only fitting that it was White who turned a bare, somewhat rundown wall in his hometown into a stunning two-story mural of the legendary jazz pianist, composer and band leader Count Basie.
The black-and-white mural illustration of the musician and Red Bank native, which White completed a week before Thanksgiving 2024, is on the east wall of 110 Monmouth Street in Red Bank, a 120-year-old structure fondly known by locals as the Monmouth Meats building. He worked six to eight hours a day for three weeks, with the first week spent repairing and power-washing the wall and then priming it. “I usually work on interior murals,” says White, 55, who’s done permanent murals at Long Island Railroad stations and in New York City office buildings. “This one went relatively fast, considering I had to go 25 feet up basically to the second floor.”
Even before White started painting, the project was a labor of love. He moved to Red Bank from Long Island five years ago to teach art at a Rumson school. After two years, he realized that teaching wasn’t in his heart and decided to focus full time on his own paintings as well as private commissions and architectural and airport renderings. His subjects include the Sandy Hook Lighthouse, Calico the clown in Middletown, the Carousel and the “Tillie” murals
in Asbury Park and the Navesink River Bridge in Red Bank. Busy as he was, White wanted to do more for Red Bank and paint an outdoor mural.
In early 2023, after meeting with several borough officials, White connected with Bob Zuckerman, then executive director of Red Bank RiverCenter, a nonprofit that improves and promotes the business district. “This past summer, he told me that they had a wall for the mural,” White recalls. “I met with the owner of Monmouth Meats, and when I saw the wall—which faces the Count Basie Center for the Arts—I was sold.”
The community was on board too. As he worked, passers-by gave White their collective thumbs-up. “As I was working 25 feet in the air, people would cheer and yell stuff like ‘Way to go!’ and ‘We can’t wait to see it!’” he says. His wife and two school-aged kids also supported him along the way, stopping by to see his progress and admiring the mural when it was completed. “They love that a work of mine is out in the public like this.”
So, why Count Basie? “I’m a big music fan, and I have a lot of jazz and Count Basie albums,” he says.
“Some artists are all about new effects and doing new things, and that’s great. But I’ve always found quality in just reflecting on history, architecture and colors. Maybe Count Basie and jazz aren’t for everyone, and we tend to pave over things quickly. But there’s absolute beauty in something and someone so historic, a kid who grew up on Mechanic Street in Red Bank.
“This mural is paying homage to an artist through art.”
Red Bank artist Michael White has been painting Monmouth County landmarks for years, but he painted on a historic structure for his most recent project. Last fall, White completed a mural of legendary jazz musician Count Basie on the 120-year-old “Monmouth Meats” building.

THE BRAND-NEW HOUSE HAD EVERY POSSIBILITY, BUT ITS LOOK WAS BLAH. IT WAS TIME FOR THE HOMEOWNERS TO MAKE IT THEIR OWN—FUNCTIONAL, BUT ALSO STARTLING.
In real estate, location often outweighs looks. That held true for Cherielee Passalaqua and Matthew Jeffers. The couple—already celebrating 10+ years together—were looking forward to exploring new adventures on their shared journey. So in 2020, when they found a 2,500-square-foot, new-construction home in Atlantic Highlands, they were willing to overlook its cookie-cutter design. After all, what’s a little blah when your first home purchase has easy access to Manhattan while also being minutes from the beach, and great stores and restaurants? It was a no-brainer for the busy professionals with demanding work and frequent-flyer schedules. Goodbye, one-bedroom Hoboken rental. Hello, four-bedroom, 2.5-bath colonial with the promise of a more playful, peaceful lifestyle.
The house had zero personality but loads of potential. “We wanted it to have character and charm, to reflect us individually and as a couple,” Passalaqua says. Seeking inspiration online, she found Swell Design Co. of Atlantic Highlands and the work of its co-founders, Katy Champion-Uras and Elissa Palamara.
“What caught our eye was how in every picture they posted, they had found ways to bring their clients’ personalities into the rooms,” says Passalaqua. “After meeting with them, we knew they were fits for us.”
Starting in April 2021 and working in stages for the next three years, the design duo devoted their expertise to transforming the builder-grade rooms into singular spaces. Most of the rooms they tackled—living, family and dining rooms, powder bathroom, kitchen, primary bedroom and upstairs hallway—needed to be furnished, functional and fabulous.
Serving as the dining room’s inspiration in this four-bedroom Atlantic Highlands home, the Farrow & Ball wallpaper’s graceful floral pattern makes a statement without overpowering. The organic design looks almost painted, evoking an artistic, handmade quality.
“Cherielee wanted people to walk in and be wowed by the unexpected,” Palamara explains. “But everything had to be practical too. We really thought about how they’d use the spaces now and in the future.”
Noting that the homeowners got married during the project, Champion-Uras elaborates: “They like entertaining and having things tidy, so we wanted to create conversation areas and places to store and showcase wedding gifts and entertainment must-haves. We also considered their nieces and nephews and dogs as we selected performance fabrics.”
To set the mood the homeowners desired—an elevated, modern, casual vibe—the designers incorporated different types of stone, wood, textures, metals and artwork. For unifying flow, they adorned the rooms’ walls and trims with Benjamin Moore’s Cloud White Eggshell. Bringing the fun, they injected color perks: rich green tiles in the powder bathroom, mood-brightening blue kitchen cabinetry—and eye-catching pieces like the living room’s eucalyptus velvet couch.
“Each room is different, but the home feels cohesive through repeated use of certain colors, textures and styles,” says designer Champion-Uras. “It has a fairly open floor plan, and we were able to accomplish graceful transitions while still making each space distinctive and reflective of both of them.” For instance, the living room is a haven where Passalaqua meditates and reads in the mornings, then in the evenings listens to Jeffers play the guitar and sing. To showcase meaningful objects yet keep to the clean aesthetic, the designers fashioned floating shelves in the same neutral wall color; this continued the seamless flow while instilling individuality through the curated display

of personal items—books, records, music sheets, photos and travel mementos. Framed on the wall, the homeowners’ wedding song, hand-painted in calligraphy, pays lyrical tribute to their love for each other and for music.
In the dining room, the Restoration Hardware dining table is a happy marriage of wood and metal; the Arhaus chairs, with elegant curved backs and performance fabric, meet equally the goals of form and function. Assorted art—from Artfully Walls, Minted and Etsy—synergize the couple’s eclectic tastes.
Little changes make a big difference in the kitchen. Basic-build fixtures and hardware are replaced by choices such as a sleek black faucet and satin brass knobs and pulls, all from Signature. Featuring vintage art and Etsy prints, custom white oak floating shelves elevate the look. Rhino white quartz countertops and a subtle Fireclay Tile Mini Star & Cross backsplash allow the cabinets, painted in Sherwin-Williams Stargazer, to shine. An “awkward nook” is maximized by adding a practical, much-used beverage center.
“Initially, the clients wanted a built-in banquette seating area and kitchen table,” Champion-Uras explains. “We used 3D renderings to help them visualize how a beverage bar would free up counter space and still allow for a cozy dining set in the middle of the room. We also worked with them to create a cabinet layout that stores what they wanted while looking beautiful and symmetrical.”
“The home’s overall vibe is fun, colorful and a bit moody, while still keeping comfort and functionality essential parts of the mix,” designer Palamara notes.
The owners’ verdict is an enthusiastic one. “Katy and Elissa took a house with minimal character and created a one-ofa-kind home,” Passalaqua says. “If you know us and come over, you see what we love throughout. We feel it’s us.”

HOORAY—FIELD
Can learning be fun? Five nearby destinations will prove to your kids that the answer is yes.
When it comes to visiting museums and other attractions, many children are of two minds: a joyful thumbs-up if it means a “field trip” that gets them out of school for the day, but a groan of reluctance if it’s proposed for a “free” weekend or vacation day.
But just maybe your kids don’t know it all. Exploring the right museum promises not only to enlighten them, but to show them a good time too. And a day trip of this kind just may succeed in temporarily peeling your kids’ eyes off their various screens, be they phone, laptop, tablet or TV.
Isn’t it worth a try? Here are five nearby road-trip destinations:
THE AMERICAN MUSEUM OF NATURAL HISTORY, NEW YORK, N.Y.
Distance from Monmouth: 56 miles. This famous museum is big—you could get lost for days in its 21 interconnected buildings. Almost any subject that captures your child’s heart will be the focus of an in-depth display here. See artifacts from cultures around the world (one example: the Northwest Coast Hall, illustrating the history of indigenous cultures of the Pacific Northwest, re-opened in 2022), or browse the Halls of Gems and Minerals, where specimens glitter under the lights. Of course, the dinosaurs and fossils are among this destination’s biggest draws, including the towering T-Rex and the museum’s newest prehistoric display, Apex, one of the largest and most complete Stegosaurus specimens ever uncovered.
After you browse. If you and the kids get hungry, there are several dining options in the museum, including a full food court (with both gluten-free and nut-free choices), two cafes and the sit-down The Restaurant at Gilder, which overlooks the impressive architecture of the Kenneth C. Griffin Exploration Atrium. Venturing outside can take you to one of hundreds of great Manhattan eateries. You’ll find plenty of chains if you’re looking for something quick (there’s a Shake Shack down the street), in addition to New York-style pizza places for the perfect slice. More information: amnh.org
LIBERTY SCIENCE CENTER, JERSEY CITY.
Distance from Monmouth: 50 miles. Intended “to inspire the next generation of scientists and engineers and excite learners of all ages,” this facility is full of interactive exhibits designed to captivate the imagination and foster a lifelong curiosity and love of learning. Stop by for the Boom Time exhibit, where you can see watermelons, pumpkins and bouncy balls explode under controlled circumstances, or play in the Dino Dig Adventure and uncover replicas of fossils (weather permitting). There’s also the 80-foot Touch Tunnel, which encourages kids to move through a pitch-black space to dramatize how much we rely on our eyesight. The Jennifer Chalsty Planetarium, America’s largest, plays jaw-dropping star shows daily.
After you browse. Not far from the Science Center is Pinwheel Garden Dumpling and Noodle Bar, an Asian-fusion spot where you can enjoy a colorful, innovative meal (and maybe convince the kids to try something new). Liberty State Park offers an incredible view of the Statue of Liberty. (Don’t tell anyone we said this, but it’s better than the one you get from NYC.) For older kids and thrill seekers, just down the street is RPM Raceway, where you can zip around on go-carts and enjoy an arcade.

TRIP!
WESTCHESTER CHILDREN’S MUSEUM, RYE, N.Y.
Distance from Monmouth: 82 miles. Learning and play go hand in hand in this 22,000-square-foot facility, which prides itself on removing the “do not touch” signs from the museum experience. From the constantly-open MakerSpace stocked with clay and other art supplies to the “build your own roller coaster” tracks to the mini wind tunnel, nearly everything here is interactive and made with little hands (and STEM learning) in mind. There are daily drop-in programs, including story times and music and movement classes. There’s also a special themed weekend at the start of each month. On Feb. 8 and 9, you can celebrate “Kindness Weekend” with friendship bracelets and cookie-themed crafts, and on March 8 and 9 enjoy Slimefest, with every kind of slime, dough and sand you can imagine.
After you browse. Nestled against Long Island Sound, Rye is a beautiful place to take a stroll any time of year. (The museum itself overlooks the water.) For a sit-down lunch or dinner, Rye Grill & Bar is a short drive away and has something for every taste (and an extensive kids’ menu). If you want to end a fun day with a sweet treat, local chain Longford’s Ice Cream is happy to provide the perfect send-off. More information: discoverwcm.org
THE MARITIME AQUARIUM, NORWALK, CONN.
Distance from Monmouth: 100 miles. Dive under the sea and discover seals, turtles and all kinds of fish at this Connecticut aquarium. You’ll find extensive exhibits on the creatures of Long Island Sound here, including rays and playful river otters. You can also see less familiar animals, such as the spiny lionfish or the giant Pacific octopus. One of Maritime’s marquee exhibits is Pinniped Cove, where playful harbor seals swim back and forth for hours. There’s also a 4D theater on the premises. In February, two screenings will be held daily—Turtle Odyssey and Sea Monsters: A Prehistoric Adventure Besides eye-popping 3D effects, the theater’s seats vibrate and move, creating a totally immersive experience.
After you browse. For comfort food and a name sure to make the kids giggle, check out Jacob’s Pickles South Norwalk. (The mac-and-cheese is legendary.) If the weather is nice and you’re craving more education, check out Norwalk’s Oyster Shell Park, which combines scenic views of the river with trails that lead past historical buildings. Want to double-dip on a museum day? Stepping Stones Museum for Children is also nearby, with daily hands-on activities. More information: maritimeaquarium.org
GROUNDS FOR SCULPTURE, HAMILTON TOWNSHIP.
Distance from Monmouth: 50 miles. This year-round sculpture garden will delight young artists and young outdoor enthusiasts alike. Art and nature mingle across 42 landscaped acres dotted with about 300 contemporary sculptures, many of them towering high above the ground. (The starker landscape of winter as a backdrop lends extra drama to some.) There are also several indoor gallery spaces. On display until the end of February is a special “Light as Material” exhibition, for which artists sculpt with light and shadow. The Grounds also hosts special craft days for kids—join them on Feb. 15 for a fun paper-marbling craft session and take home a special “love monster.”

Cream Of The Crop
These hearty recipes not only taste delicious, but they can soothe the soul all season long.
PUMPKIN SOUP
Yields 4 servings
INGREDIENTS
n 1 medium yellow onion
n 3 cloves garlic
n 1 large bunch fresh thyme
n 2 Tbs. olive oil
n 1 15 oz. can pumpkin purée (about 2 cups)
n 3/4 tsp. kosher salt
n 1/2 tsp. ground cumin
n 1/4 tsp. freshly ground black pepper
n ¹/₈ tsp. ground ginger
n ¹/₈ tsp. cayenne pepper
n 2 cups low-sodium vegetable broth
n 2 Tbs. maple syrup
n 2 Tbs. heavy cream
n toasted pumpkin seeds and flaky sea salt, for garnish
TASTES
DIRECTIONS
Prep the ingredients. Very finely chop 1 medium yellow onion. Finely grate 3 garlic cloves. Pick the leaves from 1 large bunch fresh thyme until you have 2 tablespoons.
Cook the aromatics. Heat 2 tablespoons olive oil in a medium saucepan over medium heat until simmering. Add the onion and garlic and cook until fragrant, 3 to 4 minutes.
Add the pumpkin and spices. Add the thyme, 1 15-oz. can pumpkin purée, 3/4 teaspoon kosher salt, 1/2 teaspoon ground cumin, 1/4 teaspoon black pepper, 1/8 teaspoon ground ginger and 1/8 teaspoon cayenne pepper. Cook over medium-low heat until steaming and fragrant, about 5 minutes.
Add the vegetable broth. Add 2 cups low-sodium vegetable broth and cook, stirring constantly, for 3 to 4 minutes. (The mixture will bubble.)
Add the maple syrup and cream. Remove the pot from the heat. Add 2 tablespoons maple syrup and 2 tablespoons heavy cream, and stir to combine. (At this point, for a creamier soup, you can use an immersion blender or transfer to a blender to purée until it reaches your desired consistency.)
Garnish and serve. Serve warm, garnished with toasted pumpkin seeds, flaky salt, fresh thyme leaves and more black pepper.
“Pumpkin soup may
be the coziest meal for winter! Pumpkin is known for its beta carotene content, which gives it that deep orange color. Our body converts beta carotene into vitamin A, which helps fight infection and keeps our vision sharp. One cup of pumpkin has 209 percent of the daily value for vitamin A. It is also loaded with vitamin K, copper, vitamin E, iron and more.”

CREAM OF BROCCOLI SOUP
Yields 6 servings
INGREDIENTS
n 2 Tbs. ghee
n 4 shallots, roughly chopped
n 1 large yellow onion, thinly sliced
n 1½ lbs. broccoli florets
or frozen broccoli
n ½ green apple, peeled and diced
n 4 Yukon gold potatoes, boiled and roughly chopped
n ½ tsp. thyme
n 32 oz. bone broth
n ½ tsp. oregano
n ½ tsp. turmeric
n 1 tsp. curry powder
n ½ tsp. cinnamon
n 13.5 oz. canned
coconut milk full fat
n sea salt to taste
n black pepper to taste
n pumpkin seeds and slivered almonds, for garnish
DIRECTIONS
In a large stockpot, melt ghee over medium heat.
Add the shallots and onions. Sauté until they have become softened.
Add the broccoli florets, apple, potatoes and the chicken broth. Top off with some extra broth or water if the vegetables aren’t fully covered.
Turn the heat up on a high temperature until it reaches a boil. Lower it to a simmer and cook until the vegetables are all soft. This will take 15 to 25 minutes.
Stir in the spices and let cook for another 5 minutes. Using an immersion blender or by transferring the soup into a high-speed blender pitcher, blend until everything looks smooth throughout.
Pour back into the stockpot and whisk in the canned coconut milk. Blend again to combine.
Garnish and serve. Serve warm, garnished with toasted pumpkin seeds, slivered almonds and more black pepper.
“Soup is one of my recommended ways of squeezing extra vegetables into my clients’ days. Veggies can be left whole or blended into the broth. Both will easily boost a meal’s fiber content. This cream of broccoli soup is a great vegetarian recipe for those looking to add more than 6 grams of fiber to their day with just one serving.”

TOP DENTISTS MONMOUTH COUNTY’S 2025
TO HELP YOU FIND GREAT DENTAL CARE, Monmouth magazine commissioned Professional Research Services (PRS) of Troy, Michigan to conduct a peer-review survey of hundreds of practicing and active dentists across Monmouth County. Dentists were asked to choose which of their peers they consider the very best, across seven different practice areas—endodontics, general dentistry, oral and maxillofacial surgery, orthodontics, pediatric dentistry, periodontics and prosthodontics.
All the final honorees were fact-checked with the State of New Jersey and the New Jersey Division of Consumer Affairs License Verification System. The highest vote getters within each specialty who are in good standing with the state are included here in the 2025 “Monmouth County’s Top Dentists” list.
There are many other good dentists practicing in Monmouth County who may not be included on this list; we recommend that you consider “Monmouth County’s Top Dentists” and other resources before scheduling your next dental procedure.

Dr. Ponquinette uses it in all aspects of his practice from the treatment of TMJ to full mouth rehabilitation. Additionally, he now offers customized bone regeneration as a more precise means of reconstructing large bone defects.
Dr. Ponquinette’s chairside manner is to keep it casual, direct, and transparent. He says that the best way to obtain a successful outcome is through healthy dialogue. THE TINIEST AND MOST ANXIOUS DENTAL PATIENTS ARE ALWAYS HAPPY TO VISIT ATLANTIC PEDIATRIC DENTISTRY’S OFFICE thanks to Drs. Matt Safari and Sally Guerrasio’s calming manner, pain-free dentistry, and welcoming environment. Both dentists strive to make children view going to the dentist as positive as possible so they can grow up to be great lifelong dental patients.
What sets this pediatric dental office apart is its latest technology, the Solea® laser, often called a miracle for pediatric patients. Drs. Safari and Guerrasio are among the few pediatric dentists in the tri-state area who are extensively trained to use the Solea laser for painless, injection-free dentistry. The Solea laser is a powerful dental laser that replaces the dental drill in the majority of procedures. It causes virtually no pain, vibration, or noise and it can be used for a number of hard and soft tissue procedures, from frenectomies (fixing an infant’s lip or tongue tie) to preparing for cavity removal and more. About 95% of patients complete treatments using the Solea laser without ever having the need for numbing shots.
Drs. Safari and Guerrasio are highly respected and active members of both their professional and personal communities. Dr. Guerrasio and Dr. Safari are both past presidents of the Monmouth-Ocean County Dental Society, which is a component of the New Jersey Dental Association, and they continue to volunteer their time on the board of trustees. The dentists are consistently chosen by peers and patients to receive awards for their exceptional pediatric dentistry and practice. Families appreciate the practice’s open-door philosophy, which encourages caregivers to stay with children during exams and treatment for support and to learn more about their family’s dental health. Visit Atlantic Pediatric Dentistry to see how a gentle dental touch and the Solea laser can keep your kids happy and smiling.

DR. ELIZABETH FANCIULLO’S ROAD TO DENTISTRY IS ANYTHING BUT ORDINARY. Dr. Fanciullo began her professional career as an awardwinning television reporter and producer. But, it never truly sparked her passion. Following in the footsteps of generations of family before her, she decided to dedicate her life to the field of dentistry. Once she set course, she knew she had found her life’s work.
Dr. Fanciullo envisioned a practice that could change the way that patients see dentistry. A place that offers patients a comfortable, relaxing environment and excellent care. So when she started her own family practice, choosing the name Luxe Dental Spa seemed to capture her vision. Never sacrificing quality over quantity, Dr. Fanciullo's first priority is offering her patients a very personal, individualized experience. At Luxe Dental Spa, patients are immediately offered a “comfort menu” of choices from a list of a la carte spa-like amenities to enhance the visit, including warm-scented towels, hot or cool eye masks, lip balm, stress balls, and disposable ear plugs. The waiting area sets a tone of calm and
serenity where patients can listen to music or relax in a massage chair in front of a fireplace.
Essential to Dr Fanciullo’s vision was curating a team of warm, compassionate and friendly professionals, including an associate, Dr. Leon Zebede. “The team at Luxe Dental Spa is incredibly good at what they do. I treasure them and the camaraderie we have built amongst ourselves and with our patients.”
To complement her family practice, Dr. Fanciullo has expertise in cosmetic dentistry and facial aesthetics, particularly related to TMJ disorders. She received her Doctor of Dental Medicine degree from Rutgers School of Dental Medicine and participated as a member of the Prosthodontics Honors Society, which recognizes top students in the field of restorative dentistry. She completed a General Practice Residency at Jersey City Medical Center.

Cuozzo, affectionately known as Dr. Pat, joined his father’s practice in 1997, and continues to uphold the family tradition by consistently demonstrating exceptional orthodontic work. His commitment has earned him multiple recognitions as one of the Top Orthodontic Specialists in New Jersey.
Dr. James joined the Cuozzo team in July, 2021. He earned his certificate in Orthodontic and Dentofacial Orthopedics from Albert Einstein College of Medicine/Montefiore Medical Center in the Bronx, NY. He is a boardcertified orthodontist, and both doctors are Diplomates of the American Board of Orthodontics. They treat their patients at two state-of-the-art offices, one in Lincroft and one in Sea Girt, where they and their staff are dedicated to improving the health of the community. They know that creating beautiful smiles requires the latest technology, both for diagnosis and treatment, and maintain one of the most advanced orthodontic systems in the field.
They strongly believe that beginning treatment at the appropriate time yields the best results in as short a time as possible. “We minimize the patient’s time in braces by waiting for the right time to start treatment, ultimately improving not only the look of your smile, but also the health and longevity of your teeth,” says Dr. Pat, a Clinical Professor at the University of Pennsylvania School of Dental Medicine. His office is one of the few in New Jersey to offer VATECH PaX-i3D Green CBCT technology. Because the system performs a 3D scan of a tooth or the entire jaw, it gives a detailed analysis of the mouth while using only a low dose of radiation. The technique provides extraordinary accuracy, crucial to any diagnosis.
Cuozzo Orthodontic Specialists offers both traditional and clear braces, as well as Invisalign®. The entire staff has earned a long-standing reputation for their professionalism, honesty, and compassion, having patients and their families smiling at every visit.

Breakfast Done Swimmingly
In Brielle, Minnows serves up delicious comfort classics for any morning or midday meal.
I don’t remember much from Big Joe’s Trailer Truck, an illustrated children’s book published in the 1970s, but I have vivid memories of one drawing that still influences how I think. Among the pictures of “Big Joe” in his 18-wheeler is an image of this main character sitting at a diner counter with his buddies, a heaping pile of eggs and a stack of flapjacks piled in front of him. Oh, if you saw his face you knew he was in heaven. That’s the feeling I want all the time.
In New Jersey, the diner capital of the world, breakfast bliss is easy to come by. It’s even easier here in Monmouth, where there’s not only an assortment of classic diners and chain restaurants, but also a robust lineup of independent brunch spots and eateries. Each is seemingly better than the next, and you’re all but guaranteed to find a good one whether you’re strolling a boardwalk or hurrying along a highway. So what made Minnows, which recently opened in Brielle, jump to the top of my list?
I’d driven past the small café several times since it debuted late last fall, but the hustle and bustle of the holidays— and loyalty to my go-to spots—always prevented me from stopping by. I’m thankful that my girlfriend and I made a breakfast date to hang out in Minnows, as it was a treat from the get-go. As soon as you walk through the storefront doors, you enter a charming marketplace with goodies typically found in an artisan market or shop. There are dozens of locally sourced products for sale, from jars of honey and bottles of olive oil to farm-fresh eggs and packaged veggie chips. Minnows also sells its own line of merch (hats and mugs, anyone?) and offers other snacks and drinks to go. Of course, we were there to sit and dine, and we were presented a table in the adjacent, sunlight-rich dining room.
Before we ordered, I spied the lunch menu and its many tempting offerings, from
salads to wraps to burgers to sandwiches. The specialty sandwich called “Big Dipper,” with its slow-cooked, shredded beef and sharp provolone, is something I’d want to try in the future, but on this day I craved a traditional morning meal, eggs and pancakes in particular. I went with classic banana pancakes, a wonderful stack of golden cakes with nothing but butter and syrup on the side. The pancakes were light and fluffy, truly satisfying if what you want is an uncomplicated order. (One can have extras like Nutella and powdered sugar added, but I went the simpler route.) On the side, I ordered two lightly scrambled eggs—for a little extra protein on my plate and to recreate that glorious image of Big Joe and his buddies. A bottomless cup of coffee—Minnows uses beans from Belmar-based Turnstile Coffee Roasters— helped wash everything down.
My girlfriend, meanwhile, also ordered a griddle item: classic French toast with a side of home fries. Like the pancakes, her dish was straightforward, a no-fuss serving of perfectly cooked French toast. The middle was done to her liking: a soft and eggier center. The home fries also suited her preferences, as each potato had been tossed over the heat long enough to create crispy edges.
Both of our dishes came out just right—we didn’t have any hangups, and the meal left us satisfied with extra room to spare in our bellies. That’s, of course, what we wanted out of the first meal of the day: something to energize and get us going instead of a big breakfast that would weigh us down and have us craving naps by noon. Though I didn’t think of it then, we probably could’ve walked around town and then returned in the afternoon for an equally satiating lunch.
Oh well, the Big Dipper sandwich will have to wait—until next time.
—Darius Amos

DR. JOHN MAK, board certified in pain medicine and anesthesiology, utilizes a multi-disciplinary approach to pain management. Dr. Mak and his fellow physicians at the National Spine & Pain Centers implement the latest technology with a full complement of tools including physical therapy, medications, ultrasound-guided injections, and advanced interventional procedures to treat pain. “We strive to get to the bottom of what causes a patient’s pain instead of just masking that pain,” says Dr. Mak. “That’s our philosophy.”
At National Spine & Pain Centers, patients receive personalized and compassionate care. All team members—from the doctors and physician assistants to the medical assistants—listen to patients and tailor their treatment plan to their unique needs. With an eye toward improving each patient’s quality of life, the doctors treat patients through minimally invasive procedures. Treatments like minimally invasive decompression for spinal stenosis and spinal cord stimulation are among some of the cutting edge, effective methods of relieving chronic back pain. A MONMOUTH MOMENT
“My fiancé and I looked at rings in the summer of 2024, but I didn’t know when the proposal was going to happen. One weekend, he kept telling me he wanted to go to Sea Girt to watch the sunrise on the beach. I argued with him at first because I thought I would be too tired that day, but he was adamant. I was a little suspicious, but still so surprised when it happened! Watching beach sunrises together has been a constant in our relationship. He wanted the moment to be the perfect memory.”
—Avery Peddicord, Chesterfield
