Getting Healthy Together Exercise—we all know we should. Sometimes the hardest part about exercising is being motivated to get started. Fiscal Tips for 2020 & Beyond W
ELCOME to the latest edition of Fiscal Fitness! A lot has happened in 2019 which will affect the way we save for retirement for years to come. Recently passed legislation included the SECURE Act which represents the most sweeping set of changes to retirement legislation in more than a decade. While many of the provisions offer individuals and small business owners enhanced opportunities, there is one major drawback for investors with significant assets in traditional IRAs and retirement plans. ELIMINATION OF THE “STRETCH IRA” This requires the most urgent attention as many of us have socked away money pre-tax into our 401(k)s, savings plans, SEPs and traditional IRAs. Prior to the changes, provisions allowed non-spouse beneficiaries who inherit traditional IRA & retirement plan assets to spread the distributions (and the tax obligations associated with it) over their lifetimes. The ability to spread out taxable distributions after the death of an IRA owner over a long period of time was referred to as the “stretch IRA” rule. THE NEW RULE generally requires any beneficiary who is more than 10 years younger than the account owner to liquidate the account within 10 years of the account owner’s death unless the beneficiary is a spouse, a disabled or chronically ill individual, or a minor child. Why is this Important? This shorter distribution period could result in unexpected high tax bills for beneficiaries who stand to inherit high-value traditional IRAs. This is also true for IRA trust beneficiaries, which may affect estate plans that intended to use trusts to manage inherited IRA assets. PLAN FOR THE CHANGES BY reviewing beneficiary designations. Traditional IRA owners may want to revisit how IRA dollars fit into their overall estate planning strategy. Some might consider
the possibility of converting traditional IRA funds to Roth IRAs, which can be inherited income tax free. It’s important to collaborate with your financial professional, estate planning attorney and accountant before implementing any changes . GOOD NEWS FOR SMALL BUSINESS OWNERS! Start-up Credit for Small Employer Plans and New Credit for Small Employer Plans Adopting Automatic Enrollment. Too much to go into here, but now may be the perfect time to offer a new retirement plan for your employees. Did you know that 529 Account Assets can now be used to pay for student loan repayments ($10,000 lifetime maximum) and costs associated with registered apprenticeships? CONGRATULATIONS NEW PARENTS! New rules allow penaltyfree early withdrawals of up to $5,000 from their qualified plans and IRAs due to the birth or adoption of a child. Regular income taxes will still apply, so proceed with caution. This New Year, make Fiscal Fitness a top priority. A Toast to Your Health We know perfectly well that a month of 2020 has already slipped away—perhaps taking many of your well-intentioned New Year’s resolutions with it. But it’s become something of a tradition for us to celebrate well-being and fitness in our February/March issue. Maybe we do it to help you get back on track with your health goals, or perhaps it’s to give you a few extra tips and one last nudge to get started. For me, heeding the advice will certainly be easier—and more fun—with my new fitness tracker. If fitness technology doesn’t motivate you to get moving, perhaps your inspiration is in the stars. Turn to “Your Secret Workout Weapon” on page 34 and find out which exercise regimen matches with your zodiac sign. There’s one other thing I’m looking forward to this year: eating. Hear me out. In “Swap Your Snacks” on page 28, Monmouth Health & Life sought the advice of a registered dietitian for snacking solutions. I can’t wait to try some of the tips. Last fall, celebrity chef Gordon Ramsay filmed two episodes of his restaurant rehab show 24 Hours to Hell and Back at the Jersey Shore. The episodes featuring Blend on Main in Manasquan and Caneda’s White Rooster in Ocean County’s Toms River (pictured) aired consecutively (and respectively) on Jan. 14 and 21 on Fox. In just 24 hours, the sharp-shooter chef gave both of the eateries makeovers and offered the staffs a lesson or two in preparing and serving food. White Rooster even got a new interior design, an updated Cuban-centric menu, friendlier price points, a new bar and an eye-catching bright blue exterior.
Admit it—you were one of the thousands of patrons who mourned the demise of 75-year-old Freddie’s Pizzeria in Long Branch. Are we right? If so, you’ll be happy to know that the pizzeria that has taken its place is just as good… if not better. LADY WHO LUNCHES A vegan Turkish bakery and café might sound like a super niche market, but one taste of the yummy creations at recently-opened The Baklava Lady in Englishtown and it’s clear anybody can (and will) enjoy this food. Whether you order the Turkish “meatballs,” lentil soup, scrambled tofu, chickpea salad, avocado toast or, of course, sweet baklava, vegans and non-vegans alike will find something to love on this quaint and homey place’s unique menu.
HISTORY IN THE MAKING About a year ago, Governor Phil Murphy signed into law a new measure that requires boards of education to broaden middle and high school social studies classes to include LGBTQ-inclusive curriculum. And 12 public schools in New Jersey will be among the first to do so in a special pilot program during the 2020-2021 academic year, including two here in Monmouth County: Dr. Martin Luther King Jr. Middle School in Asbury Park and Forrestdale School in Rumson. More than 50 schools statewide applied to be a part of this initiative; teachers at the 12 selected ones will provide 45 lessons from September to June to students in grades 5, 6, 8, 10 and 12. These dozen schools will also be given curriculum coaches and professional development training, along with other resources to ensure all goes well.

MAKING US PROUD Add Craig Mazin to the long-running list of awardwinning New Jerseyans. The Marlboro native and Freehold High School alum is now officially a Golden Globe winner, as Chernobyl, the HBO series which he created and executive produced, won the statue for Best Limited Series during the Jan. 5 NBC telecast. The five-episode drama, which examines the 1986 nuclear disaster that occurred in the Soviet Union, also won 10 Emmy awards back in September, two of which the 48-year-old accepted for Best Limited Series and Writing for a Limited Series. A DAILY TREAT There’s a weird dichotomy at The Daily Gourmet in Millstone—it serves traditional breakfast dishes that turn customers into regulars. But also on the menu are daily specials that often include a soup, a pasta, a sandwich or a burger, plus extra fresh seafood and fish specials on weekends. Basically what we’re saying is this place has pretty much everything, so stop on by when you don’t know what you’re in the mood for until you see it. OFF TO THE RACE(WAY)
One of the biggest neighborhood attractions in Freehold Borough is the legendary Freehold Raceway, the country’s oldest harness horseracing track. Operating since the 1830s (it’s so old, historians aren’t even sure of an exact opening date!) and attracting large crowds of spectators ever since, Freehold Raceway offers seasonal events and daily free admission for all live races and simulcasts. Spend a day at the races or take a quick trip to the spectacular Raceway Mall in Freehold Township—home to more than 200 shops and restaurants— between heats.
They share a name but Freehold Borough and Freehold Township are two distinct Monmouth County towns. For starters, Freehold Township is the oldest municipality in the state (327 years old), while Freehold—“the boro”as its known to residents—broke off from the larger township and incorporated in the 20th century. Farmland takes up the majority of the township, whereas the borough is home to the downtown district. Today, both towns have separate governments but they’ll always remember their shared pre-Revolutionary roots.

Quite literally, Freehold’s name derives from the English noun “freehold”—a legal term that describes a property that’s completely free of mortgage or lease.

Locals are keen on the hometown rivalry between Freehold Borough and Freehold Township. While Freehold Township is the larger of the two sections, Freehold Borough is the official county seat of Monmouth County. The two do not share a high school, instead separating between Freehold Township High School and Freehold High School depending on where students live in town. Every year, the Freehold Township Patriots and the Freehold Borough Colonials come face-to-face to compete for the Norman “Duke” Ferrell trophy, or “The Duke,” in a friendly football matchup that gets the entire town talking.

With such early roots in American history, it’s no surprise that Freehold has a pre-Revolutionary War structure in the heart of town. The HankinsonMoreau-Covenhoven House is listed on the National Register of Historic Places and was constructed in Freehold Borough in 1752 for William and Elizabeth Covenhoven. Today, the site serves as a museum run by the Monmouth County Historical Association and holds a traditional Thanksgiving-themed dinner every November for those who are looking for an immersive (and delicious) experience of life during the 18th century.
DINING OUT It’s official: Freehold is a must for foodies. For a taste of the Mediterranean, Lemon serves up authentic dishes like sweet and savory Moroccanstyle duck and spicy paella. Freehold Township is prime for the exploring, as it’s home to a whopping 14 parks and recreational spaces. Frolicking through the splash pad at Michael J. And if you’re a true naturalist, lace up your hiking boots for a stroll along Durand Park’s trails and scenic pond area. The most iconic of these spots, however, is Turkey Swamp Park, which movie buffs might recognize as the eerie lake from the final scene of the 1980 cult classic Friday the 13th. You probably know that Freehold is where rock ‘n’ roll legend Bruce Springsteen spent most of his childhood, but it’s also where a long list of professional athletes have hung their hats (and helmets) at one time or another. Indianapolis Colts defensive tackle Darrell Reid grew up in Freehold Borough and played for the Freehold High School football team; New York Mets pitcher Brad Brach was once just a fan of the blue and orange while attending Freehold Township High School; and swimmer Robert Griswold, who competed for Team USA in the 2016 Summer Paralympics in Rio, hails from the area.

Technology gives patients easier access to health records and Monmouth Medical Center’s services.
Patient access to Monmouth Medical Center’s (MMC) award-winning facilities, services and staff continues to get easier thanks to ongoing waves of technological advances. The Long Branch facility was named to the 2019 list of Most Wired Hospitals, a survey released by the American Hospital Association that measures how healthcare organizations leverage information technology (IT) to improve performance for value-based healthcare in the areas of infrastructure, business and administrative management, quality and safety and clinical integration. “As a part of the RWJBarnabas Health system, Monmouth Medical Center is improving the efficiency of care delivery through advances in technology and IT systems across a multitude of platforms,” says Eric Carney, MMC president and CEO. “Hospitals are breaking out of their traditional four walls and providing care where and when patients need it by harnessing technology, engaging patients and offering services and access to health records remotely and more conveniently within the hospital, which is in keeping with the vision of our hospital to be a leader in designing unparalleled new ways for delivering healthcare and meeting our patients’ needs.” A series of new initiatives at MMC are designed for patient convenience and ease of access to health information. The latest is the Release of Medical Records Office in the front lobby of the hospital. This enhanced and convenient service allows patients to easily pick up copies of their medical records, radiology CDs or test results (X-ray, MRI, CT, ultrasound, NM, IR). In addition to the new office, health records and other services can be accessed securely via the patient’s smartphone and online by using one or more of the following:

The RWJBarnabas Health Patient Portal is a free service that provides access to personal healthcare information in a secure, online environment. Through the Patient Portal, users can email their visit summaries, access educational materials, view current medications, allergies, immunizations, health problems/procedures, and select lab results.
HEALTH CONNECT
By using the RWJBarnabas Health Connect app, patients can access the RWJBarnabas Health System from a smartphone or mobile device. The app allows each user to view and manage his or her personal health record, search for a doctor by specialty, location, gender and more and book realtime appointments for physician and diagnostic visits.
APPLE HEALTH APP
Patients who use an iPhone with iOS 11.3 or later can integrate their records from RWJBarnabas Health into the Apple Health app. The new health-records feature in the app makes it easy to access and visualize key parts of one’s health records all in one place, including allergies, conditions, immunizations, labs, medications, procedures and vitals. All data is kept secure because it is encrypted and protected with the passcode on the user’s iPhone.

With the RWJBarnabas Health TeleMed service, patients can have a “virtual visit” with a U.S. board certified doctor any time of day or night, including weekends and holidays, via Apple or Android app. It’s an ideal service for patients with ailments such as colds, flu, fever, minor rashes, earache, sinusitis, migraine, allergies, pink eye and abdominal and joint pain. And virtual doctors are always available: while you’re on vacation, when your regular doctor’s office is closed, when you’re too sick to leave the house, when it’s difficult to take time off from work, if you can’t get a same day appointment with your doctor and more.

THE BEST TEAM FOR BREAST HEALTH The Jacqueline M. Wilentz Center achieves three-year reaccreditation— again.
This past fall, Monmouth Medical Center’s Jacqueline M. Wilentz Comprehensive Breast Center successfully achieved another three-year reaccreditation from the National Accreditation Programs for Breast Centers (NAPBC). The Wilentz Center is the first NAPBC-accredited program in Monmouth and Ocean counties. Accreditation by the NAPBC is granted only to those centers that are committed to providing the best possible care to patients with diseases of the breast. Each breast center must undergo a rigorous evaluation and review of its performance and compliance with NAPBC standards. To maintain accreditation, centers must monitor compliance with NAPBC standards to ensure quality care and undergo an onsite review every three years. The Wilentz Center, like other NAPBC-accredited breast care facilities, provides patients with comprehensive care, including a complete range of state-of-the-art services and equipment. The staff employs a team approach to breast cancer in order to provide the best available treatment. It also offers patients information about ongoing cancer clinical trials and treatment options and gives access to prevention and early detection programs, cancer education and support services. Reaccreditation is one of many accolades bestowed upon and milestones achieved by The Wilentz Center, which has locations at MMC’s Long Branch campus as well as satellite offices in Colts Neck, Howell and Lakewood. The cen-
ter is one of the first two New Jersey facilities and among only five in the nation to receive the highest certification as a quality breast center of excellence by the National Quality Measures for Breast Centers (NQMBC). It is among only a few breast imaging centers across the nation designated a Breast Imaging Center of Excellence by the American College of Radiology’s (ACR) Commission on Quality and Safety and the Commission on Breast Imaging. The facility also is the first in New Jersey to earn ACR’s Gold Seal Accreditation for Breast MRI, and holds ACR accreditation for mammography, breast ultrasound and stereotactic breast biopsy. In addition to The Wilentz Center’s achievement, MMC has also recently completed a rigorous on-site survey for its comprehensive cancer program. In September, the Leon Hess Cancer Center achieved another three-year accreditation from the American College of Surgeons Commission on Cancer (ACS CoC) with commendations on several of the standards, including oncology nursing care, accuracy of data and cancer registry education. These accreditations provide an assurance to patients that they will receive comprehensive care, including a full range of state-of-the art services and a multidisciplinary approach to providing the best treatment options, says Manpreet Kohli, M.D., FACS, medical director of breast surgery at Monmouth Medical Center and cancer liaison physician for the Commission on Cancer – American College of Surgeons.
WHEN SHOULD YOU HAVE A MAMMOGRAM? Mammography is the primary imaging tool used to detect breast cancer that cannot be felt during regular breast examinations, especially cancers too small for even the most experienced physicians to identify. A mammogram may detect breast cancer many years before it is physically detected. According to MMC dedicated breast imager Alexander King, M.D., the American College of Radiology (ACR), Society of Breast Imaging (SBI), National Comprehensive Cancer Center Network (NCCN), National Consortium of Breast Centers (NCBC) and American Society of Breast Surgeons (ASBrS) all recommend average risk women begin screening at age 40, continuing annually as long as the woman is healthy and desires to be screened. Also remember: — Regular mammograms should continue for as long as a woman is in good health. — Women at high risk—because of family history, a breast condition or another reason—need to begin screening earlier and/or more often. Monmouth Medical Center’s nursing program has flourished under Diann Johnston’s guidance. In recognition of her exceptional leadership, guidance and service to RWJBarnabas Health, the Organization of Nurse Leaders, New Jersey (ONL NJ) has named Diann Johnston, MSN, RN, NEA-BC, regional chief nursing officer (CNO), the recipient of its Nurse Executive Award. Since 1971, ONL has been the preferred professional organization for nursing leaders in their quest for a united voice in representing nursing administration and management in all practice settings. ONL NJ is affiliated with both the New Jersey Hospital Association and the American Organization of Nurse Leaders. Under Johnston’s leadership, Monmouth Medical Center (MMC) has earned 10 consecutive Leapfrog grade “A” scores (now considered a straight A), the Leapfrog Top Teaching Hospital Award, the IBM Watson Top 100 Hospitals Award and recently achieved the 2019 Press Ganey Success Story Award for demonstrating innovation and leadership to measurably improve safe, high-quality, patient-centered care. Johnston recently presented nationally at the 2019 National Press Ganey Client Conference in Orlando about the successes of MMC through the attributes of shared governance. This work was also published in the Journal of Nursing Administration in September 2018. “In Diann’s 12 years at Monmouth Medical Center, she has transformed the organization’s nursing workforce from working in a top down-driven environment with performance outcomes in the lowest quartile to an engaged and empowered nursing workforce that proudly ranks in the highest decile in New Jersey and nationally,” notes Julie Villa, MSN, RN, CCRN-K, MMC’s director of nursing excellence and innovation as well as the Magnet Program. “Diann’s transformational leadership has resulted in MMC earning its first MONMOUTHHEALTHANDLIFE.COM

The appraisers commented on how ‘the level of engagement of the staff during the site visit far exceeds that of current Magnet organizations.’ As a testament to Diann’s leadership, Monmouth Medical Center ranked as the highest scoring acute care hospital within RWJBarnabas Health for staff engagement scores in 2019.” In many cases, Johnston is willing to go above and beyond to learn about the nursing staff. “Diann always embraces diversity and inclusion,” says Sharmine Brassington, MSN, RN, director of patient care for emergency services. “She truly cares about her nurses and takes the time to get to know them and their families. Monmouth Medical Center (MMC), the hospital that delivers the most babies of any healthcare facility in Monmouth and Ocean counties, welcomed its first baby of the new decade just after midnight on New Year’s Day. Baby Margarito was born at 12:59 a.m. to parents Latisha Francoescamilla and Margarito Juarez of Matawan. He came into the new decade at 7 pounds, 14 ounces and 20.5 inches long and was the first of the nearly 6,000 babies expected to be born at MMC in 2020. “Helping families bring new lives into the world is a truly special part of what we do at Monmouth Medical Center,” says MMC President and CEO Eric Carney. “For expectant parents, choosing a hospital for the birth of their baby is an important decision, and at Monmouth, the heart and soul of our Eisenberg Family Center is the personalized attention and care provided to the whole family from pregnancy through birth and beyond.” Robert Graebe, M.D., chairman of obstetrics and gynecology at MMC, says there are many reasons why Monmouth is the trusted choice among parents throughout the region. These seven healthy swaps for your usual munchables are perfect for upping your healthy eating game. Take one to work for a small nibble at your desk, prepare one to graze on guilt-free while you watch your favorite Netflix show on the couch or keep one handy for whenever else a craving strikes.

THE SNACK: POTATO CHIPS THE SWAP: VEGETABLE CHIPS/EDAMAME To get your crunchy fix, ditch the greasy potato chips and carb-filled pretzels for some vegetable-based bites. Simply slice up hearty veggies such as carrots, beets and turnips and drizzle them with a touch of olive oil before baking them in a 350-degree oven until they’re crispy (not burnt). Doing this makes a tasty, healthy alternative to your favorite chip. “Baked chips are always better than fried, which can often have more saturated fats,” says Laura Allen, a registered dietitian at Monmouth Medical Center. Allen suggests raw or quick steamed edamame— soybeans still in their green bean-like pods, often found in Asian cuisine—sprinkled with a pinch of sea salt (preferably without, but it’s fine for flavor) for a nutrient-rich alternative when you’re looking for something salty on the fly. “Edamame has much more fiber than a regular potato chip,” says Allen. We bet you can’t eat just one!

THE SNACK: MICROWAVE POPCORN THE SWAP: AIR-POPPED “CHEESY” POPCORN Is there any snack more fitting to munch on while watching your favorite flick than a bowl of popcorn? Unfortunately, most microwave popcorns are packed with hydrogenated oils and loads of sodium, so air-popped kernels are always the healthier way to go. “Popcorn is also a good source of fiber,” says Allen, adding that a serving of the air-popped stuff clocks in at about three cups. She also suggests spicing up the otherwise bland popcorn with your favorite seasoning—or you can test your culinary savvy and make some nutritionist-approved “cheesy” popcorn. Allen says sprinkling two tablespoons of nutritional yeast onto air-popped popcorn gives the kernels a cheese-like, nutty flavor that is the perfect healthy (and vegan) stand-in for a gourmet blend of popcorn.
THE SNACK: ICE CREAM THE SWAP: “NICE” CREAM You may have a favorite ice cream to curl up with after dinner, but that mint chocolate chip or even plain vanilla is loaded with sugars and fats. Instead, switch that ice cream to “nice” cream! Yes, “nice” cream—a low-calorie, vegan dessert of pulverized frozen fruits that becomes velvety and tastes sweet like regular ice cream when blended. “It has natural sugars from the fruit content and it’s dairy-free, so it’s a great option for vegans,” says Allen, who emphasizes that portion sizes still should be monitored to keep this healthy snack wholesome. And if you’re a fan of packing on the wild and wacky toppings at the make-your-own bar, you may want to hold off on those extra fixings. “Toppings are good here and there, but you can accidentially diminish the healthy aspect of your ‘nice’ cream if you aren’t mindful,” Allen warns.

{ FOOD FOR THOUGHT } THE SNACK: PEANUT BUTTER THE SWAP: ALL-NATURAL NUT BUTTERS Peanut butter isn’t the world’s most unwholesome snack, but choosing a kind that’s heavily processed with lots of added sugars can be nuts from a health perspective. According to Allen, you should always opt for the nut butter that is the least processed. “Some companies will add lots of fat to get a creamy, smooth texture,” she says. Allen adds that when it comes to nut type, they’re all pretty equivalent and which to buy depends on your preference. “Walnut butter has omega 3s, which might be a good alternative if you’re looking for those,” Allen says of the fatty acids that help lower blood pressure and reduce triglycerides, among other health benefits.

THE SNACK: MILK CHOCOLATE THE SWAP: DARK CHOCOLATE Sometimes there’s nothing more satisfying than a chunk of sweet, silky chocolate. But milk chocolate is often loaded with added sugars—a no-go for our nutritionist. Allen advises that chocolate lovers opt for dark chocolate to satisfy a sweet craving and soak up the benefits of the food’s main ingredient: cacao. “Dark chocolate is antioxidant-rich and has a lower sugar content, but most people don’t love it because it’s a little more bitter,” says Allen. So, what’s the secret for measuring a nutritionist-approved nosh of the sweet stuff? Allen suggests keeping your chocolate bar pre-wrapped and breaking off a pre-measured square on the bar to keep your snack perfectly portioned.
THE SNACK: PACKAGED SNACK BAR THE SWAP: HIGH-PROTEIN BARS While homemade options are usually best, most of us are guilty of quickly grabbing a snack bar “to go” before heading out for the day. Being mindful of what ingredients are in that convenient little bar, like added sugars and overly-processed fruits that can sneakily add calories, makes all the difference in your healthy snacking regime. The solution? Allen says you should look for a snack bar that is less than 200 calories and has high levels of protein (at least 4 grams) and fiber (at least 3 grams). “Protein will curb your hunger and keep you feeling full,” says Allen.

THE SNACK: CANDY THE SWAP: DRIED FRUITS The holidays are over, but the sugary, candy-coated remnants of them are probably still lurking in your desk drawers and candy bowl at home. Instead of giving in to those leftover treats, invest in a package of fiberous dried fruits such as cherries, figs, pineapples or apricots that will deliver all of that same fruity flavor and then some. “Because it’s real fruit, you’ll get lots of vitamins and minerals that you wouldn’t otherwise get from candy,” says Allen. She also suggests reaching for a bowl of fresh fruits when a sweet craving strikes that’ll pack the same benefits without the added sugar.

For the empathetic and intuitive water signs, tranquility is the theme for your exercise routine. Say “see ya!” to crowded gyms and loud pop music, and “hello” to patient instructors and mindful silence. Not only can yoga help your resolution to shed those extra pounds (a single yoga session can burn between 180 and 460 calories), but it also helps build muscle, increase flexibility and relieve pain. Katherine Gonzalez, a Pisces and an amateur yogi, has been practicing yoga for 11 years. “Self-love is the most important part of my daily routine,” she says. “I make sure to do a brief stretch every morning and set my intentions for the day. Yoga basically lets us focus on the present.” Emphasizing the “now” is a vital component for water-sign individuals because of their tendencies toward regret of the past and apprehension for the future. Known for getting lost in their thoughts, water signs are constantly searching for a deeper understanding of themselves and the people around them. Relax by getting out of 2019’s obsolete workout program and replacing it with yoga, equally affordable but quite possibly twice as valuable to you. Are you a fire sign, passionate, strong and excitable? Why not reach for an exercise that fuels that fire, like Zumba? Everywhere you go you bring unmatched energy, and sometimes that means you become a little impatient. There is no workout alternative more lively than Zumba. Your competitive side will be charged up, as these classes are not as easy as they seem. Those in the front of the room have been practicing for ages, are on a first-name basis with the instructors and know all the routines—can you keep up? “I thought it was weird at first,” says Gabrielle Davidson, a Gemini and Zumba trainee. “It is the best cardio workout I’ve ever done!” Zumba is a huge calorie burner (reportedly between 350 and 650 per workout) and improves coordination. Plus, it’s loads of fun, whereas cycling burns a similar amount of calories but isn’t as entertaining. The energetic fire-sign exerciser is usually up for something different, and the instructors at studios and local gyms often change up their dance routines monthly, so you are never stuck in a cycle. Zumba is known for its social aspects as well, often placing you in a community of likeminded gym-goers. (See how many of you are fire signs!) And there are many intensity levels to choose from—true athletes may wish to try the “Strong by Zumba” version, which is more high-intensity than the regular Zumba classes. For the grounded earthsign person who sometimes struggles with motivation, cycling is the best exercise for this New Year. COFFEE AND BLACKBERRY MILLEFEUILLE Yields 6 servings
INGREDIENTS
np lain flour, for dusting n 5½ oz. ready rolled puff pastry n 3 Tbs. ground coffee n 4 Tbs. boiling water n 2 oz. soft ricotta n ½ oz. caster sugar n 3½ fl. oz. double cream n 10 oz. maple syrup n 1¾ chestnut puree n 3½ oz. blackberries, halved
DIRECTIONS
Preheat the oven to 350°F. Have two large baking trays and two large pieces of greaseproof paper ready. Flour a flat surface and a rolling pin. Roll the pastry out until it is 16 inches long. Sandwich between the pieces of greaseproof paper on one baking tray, and weigh down with the other baking tray on top. Bake for about 10 minutes, or until golden brown and crisp. When ready, remove from the oven and allow to cool. Meanwhile, prepare the coffee cream. Mix the ground coffee and boiling water together and leave to infuse for a few minutes. Strain through a cheesecloth, muslin or clean tea towel into a jug, squeezing out as much of the liquid as possible. Mix together the ricotta and sugar until smooth, then stir in the coffee. Whip the cream until soft peaks form and then fold through the ricotta mixture. Transfer to a piping bag fitted with a small round nozzle and refrigerate until needed. Mix together the maple syrup and chestnut purée and set aside. Trim the edges of the pastry and cut it into 20 rectangles, roughly 4-by-2 inches. You will have 20 pieces but only need 18, so use the best ones. To assemble, place 6 blackberries on a sheet of pastry and pipe cream in between. Top with more pastry and repeat. Place a final sheet of pastry on top and spread over a thin layer of the maple syrup and chestnut glaze. Repeat and serve immediately.

CHOCOLATE ROULADE WITH PASSION FRUIT MASCARPONE Yields 10 servings
INGREDIENTS
n5 ½ oz. dark chocolate, minimum 70% cocoa solids n 6 medium eggs, separated n 5½ oz. caster sugar n pinch of salt n ¾ oz. cocoa powder n 5 oz. non-fat Greek yogurt n 3½ oz. mascarpone cheese n 1 oz. clear honey n ½ oz. icing sugar n seeds of 4 passion fruit n salt
DIRECTIONS
Preheat the oven to 350°F. Line a 9-by-13-inch Swiss roll tin with greaseproof paper. Place the chocolate in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn’t touch the water. Stir occasionally and when melted, remove from heat and allow to cool slightly. In a large bowl, whisk together the egg yolks and sugar until pale and thick. Stir in the cooled chocolate. Whisk the egg whites with a pinch of salt until soft peaks form, then fold a few spoonfuls into the chocolate mixture and then fold in the rest, working gently so as not to knock out too much air. Be patient—it will come together as you fold it. Sift over the cocoa and gently fold again. Pour into the prepared tin and bake on the middle shelf of the oven for 20-25 minutes, until firm and a little crispy. When done, place damp tea towel over the tin and allow to cool. This stops the roulade from drying out too much, which can make it crack when rolling. Mix the yogurt, mascarpone and honey until smooth. Lay a piece of greaseproof paper on a flat surface and sift over the icing sugar. Gently turn out the roulade and peel away the paper. Spread over the mascarpone, then the passion fruit pulp. Cut a shallow line 1 inch from the long edge of the roulade—this makes it easier to fold. Roll tightly, using the paper to help you. It will crack a little but this is fine. Slice and serve.

LEMON AND JUNIPER PORTUGUESE CUSTARD TARTS Yields 12 servings

½ oz. caster sugar 5 peeled rind of one lemon 15 juniper berries 6 fl. oz. semi-skimmed milk 1 vanilla pod, halved and seeds scraped out 1 oz. plain flour mixed with 1 fl. oz semi-skimmed milk to form a paste 4 large egg yolks, beaten butter, for greasing 13 oz. packet ready-rolled puff pastry 1 tsp. ground cinnamon grated zest of 1 lemon icing sugar, to dust (optional)
DIRECTIONS
Place the caster sugar, lemon rind and juniper berries in a medium saucepan with 3¼ oz. water. Bring to a rolling boil over medium heat, stirring to help the sugar dissolve. Simmer for 5 minutes, then remove from the heat and strain. Heat the milk with the vanilla pod and seeds in a saucepan until just about to boil, then strain and gradually whisk into the flour paste. Slowly pour in the sugar syrup, whisking continuously. Allow to cool slightly, then whisk into the beaten egg yolks in a bowl. Cover with plastic wrap and set aside to cool completely. Lightly grease a 12-hole muffin tin. Unroll the pastry, dust with the cinnamon and rub it in, then sprinkle over the lemon zest. Tightly roll it up lengthwise, like a Swiss roll. Cut 12 round discs 5/8-inch thick. Preheat the oven and a baking tray to 475°F. Lightly dust a surface and rolling pin with flour. Flatten each disc with your hand (with the swirls facing upwards), then roll out big enough to be pressed into each muffin hole with a little above the rim. Fill each tart with the cooled custard until ¾ full. Place on top of the hot baking tray and bake for 18-20 minutes. Keep an eye on them—you want the top to be blistered and the pastry to be golden and crisp. Cool slightly, dust with icing sugar, if using, and serve.

The Egg and You
Packed with protein and minerals, this staple food is everything it’s cracked up to be. Regardless of what you call New Jersey’s loveable breakfast meat, neither Taylor ham nor pork roll would be on the culinary map without the egg. We’ve always been reliant on eggs in that way. The consumption of eggs dates back to around 7000 B.C., when people in China and India domesticated chickens. Although other fowl like quail, duck and ostrich produce edible eggs (as well as fish and reptiles), the chicken variety is most popular in the U.S. thanks to the animal’s rapid biological cycle and poultry commercialization. It also helps that they’re so versatile and delicious. POWER UP Perhaps no other American diet staple has had as many ups and downs as eggs—and we’re not just talking about the various sunny-side ways to prepare them. For decades, medical publications like the Journal of the American Medical Association have touted the food’s health benefits, and there are plenty in the basket. As Rocky Balboa can attest, eggs are packed with energy-producing and muscle-building components: One whole large chicken egg (about 50 grams) contains 70 calories and provides 6 grams of protein, roughly 12 percent of the recommended daily value (DV). Prefer the jumbo size? Those will boost your protein intake to 8 grams (16 percent DV). Eggs are also a go-to source for vitamins D, B6, B12, biotin—a vitamin that improves hair, skin and nails—as well as the antioxidant selenium. Despite the pros, eggs continue to scramble minds in the medical community. JAMA, the same authority that praised eggs, just last year reported on a study linking high egg consumption with increased risk of heart disease. One whole large egg contains 185 mg of cholesterol (a whopping 62 percent of the DV)—a known contributor to cardiovascular disease. Although the U.S. Department of Agriculture and the Department of Health and Human Services both recommend capping daily cholesterol intake to 300 mg—less than two large eggs—the two federal offices still consider eggs to be
part of a healthy diet. If you’re concerned, opt for egg whites. Removing the yolk drops the calorie count to 17 and eliminates all of the cholesterol. BUY/STORE/SERVE Eggs are a grocery-list essential, and there are a variety from which to choose. White and brown eggs are similar in taste and nutrition, so whichever you select is based on personal preference. (The chicken’s breed determines color.) The best eggs are pasteurized from local farms. Chickens at these sites live on an open range and are free of antibiotics, hormones and steroids, and their eggs are typically picked and on the shelves within 48 hours of being laid. Most supermarkets offer farm-fresh (organic) eggs as well as store brands, which use the product of battery-caged hens that are given a formulated feed. To maintain a consistent temperature, eggs should be placed in the main compartment of the refrigerator instead of the door and kept in their carton where they’ll be protected and won’t absorb other odors and flavors. (Bonus: The “Best By” date is stamped on the carton.) Eggs will stay fresher longer when they’re stored large-end up (pointy side down); this prevents the egg’s natural air pocket from rising and keeps the yolk centered. Because of their proteins, eggs are an ideal binding agent and thus are often used to give stability to dishes like meatloaves, baked goods and casseroles. While their culinary applications are innumerable, eggs are incredible on their own—scrambled with home fries for breakfast or poached on a Benedict for brunch, sunny-side up atop a burger for lunch, hard-boiled for a midday snack or mixed with meat and veggies for an easy dinner frittata. INGREDIENTS
■ ½ shot Malibu rum ■ ½ shot peach schnapps ■ ½ shot plain vodka ■ 3 shots cranberry juice ■ 2 strawberries, for garnish
INSTRUCTIONS
■ To make strawberry hearts for the garnish, cut a small “v” to remove the stem of the strawberry, then cut it lengthwise into slices. ■ Rim your martini glass with sugar by rubbing a lime or lemon wedge along the rim of the glass to get it wet, then dip the glass in a plate with sugar. ■ Gently mix the Malibu rum, peach schnapps, vodka and cranberry juice together in a shaker—over ice if your cranberry juice is not cold— and pour it into the prepared glass. ■ Garnish with a couple of strawberry hearts and a strawberry on the rim.

A Taste of Ireland
Any bartender can pour a pint, but your Irish eyes (and appetites) will smile at these three Monmouth pubs.
The Irish Rail, Manasquan Though this pub has been known for its fresh homemade burgers since it opened its doors in 2007, its menu boasts a plethora of potato dishes that are sure to get you into the St. Patrick’s Day spirit. Opt for a bowl of their reportedly “famous” rustic potato soup or swap out your typical tortilla chip-based nachos for the “Irish” variety complete with shaved sweet potatoes topped with all of your favorite fixings. Not in the mood for spuds? My favorite main at Irish Rail is the flavorful, slow-cooked beef stew braised with—you guessed it—Guinness. In fact, fellow fans of the beer that is synonymous with The Emerald Isle will find this pub delightfully dedicated to the country’s signature stout thanks to its brand-certified pours in 20-ounce imperial pint glasses. Bring the whole family or a large crowd of lads and lassies on the night of March 17 to experience the tavern’s annual Irish dinner platter complete with a corned beef and cabbage entrée, traditionally prepared carrots, soda bread and, for the grown-ups, an Irish coffee or Guinness to wash it all down.
Dublin House, Red Bank Entrées reign supreme at this Victorianstyle eatery that is believed to date back to the 1840s. Stop by for mains like a hearty shepherd’s pie, chicken in a savory whiskey cream sauce and, of course, bangers and mash. During a recent visit, I ordered a meaty reuben—a sandwich that makes corned beef a delicacy all year long—and I wasn’t disappointed. This age-old public house keeps the merriment going with five different variations of Irish coffee, so you can enjoy the spirit of St. Patrick’s Day until the very last drop. If you take a trip to this historic spot on the holiday, expect to find a special menu with an array of even more Irish staples. Be mindful, though, that this place fills up quickly on the Dublin House’s most important day of the year, so prepare for a crowd (and come hungry, of course). St. Stephen’s Green Publick House, Spring Lake There aren’t many restaurants in the 732 that can say they’re modeled after one of the most bustling metropolitan areas in Ireland. That’s not the case for St. Stephen’s, which has been inspired by the menus and atmosphere of a real, true-blue (or green?) Irish bar and kitchen. Make your way here if you crave traditional meals that are hard to find anywhere else like homemade kettle chips topped with tangy cheddar and bleu cheese and a wine-soaked chicken Murphy. Eager to try something off the beaten path, I ordered the “Dublin Rolls,” aka corned beef and cabbage-filled egg rolls paired with a spicy Guinness-infused mustard dipping sauce. And indeed, they were just about everything you love about Irish eats rolled (get it?) into one. Top off your meal with bread pudding drenched in a sweet whiskey cream. Get an authentic St. Patrick’s Day experience when you stop by for a bite and a sip while jigging to a traditional Irish band that plays all day long.
