What was different about the salon you trained at? During my apprenticeship I trained in every discipline and this is where I discovered my overwhelming enthusiasm for color. 3 Biggest Decisions When Divorce Happens W

ELCOME to the latest edition of Fiscal

Fitness! Tax season is over for most of us and hopefully so is the rain! As a CERTIFIED FINANCIAL PLANNER™ Professional, equity is a term I refer to on a daily basis. But recently, I met with a client and suggested she begin building equity in herself. My client, who is divorcing after a 27- year marriage, was trying to understand her housing options and what she could afford once the marital home was sold. My suggestion was to rent for a year or two rather than rushing into buying a home. Why?

Rent or Buy? Most of us think about building equity in our homes or in our portfolios, but have you ever thought about your own personal equity like peace of mind? When people are facing significant financial transitions, particularly in divorce, what made sense while you were a couple may not always make sense on your own. Can you physically maintain a home by yourself? Will purchasing a home leave you cash poor with no liquidity for emergencies? Make decisions that are right for you during the transition, not what your friends or family think is best. Although well intended, they are probably looking at it from a different point of view.

Pension or lump sum buyout? One of the biggest

decisions a divorcing spouse may face is the option to share a spouse’s pension at a future date or take the present value of that future payment in the form of a lump sum or what we refer to as a “buyout” of the pension. This is no easy decision. Keep in mind, the nuances of pensions work very different

depending on whether your spouse worked in the private or public sector. One of the most confusing is the division of military and civil service (CSRS) pensions and the survivor benefit election.

Stocks or Bonds? When a couple divorces after a longterm marriage, assets and investments will eventually be divided. If you are the recipient of your ex-spouse’s 401(k) or investment portfolio, what was right for the two of you as a joint household may not make sense moving forward alone. Do you understand what you own and the risks of a particular investment? It’s not uncommon for a spouse to receive half of a portfolio with little or no idea of what they own or why. Don’t put yourself in the position of owning an investment that could potentially be illiquid or has high surrender charges should you need to sell an investment. Understand what you own before making any decisions when dividing assets.

THEATER FOR ALL

Budding thespians have been enjoying Summer Theater Camp at Red Bank’s Two River Theater for the past 12 years, but this summer, the arts center is also offering Spectrum Theater Classes for kids ages 10 to 17 who are on the autism spectrum. The goal of the classes is to help students improve their communication skills and confidence while they learn about the art of theater. Trained teachers and assistants will guide students through storytelling, games, imagination exercises and the plays of William Shakespeare. The Cat’s Meow

Monmouth County’s first cat café is expected to open this month in Asbury Park, and it will be aptly named Catsbury Park. The café is the creation of resident D.J. Bornschein, who had the idea when he visited a cat café in California in 2015. Cat cafés, where kitties can roam free and be petted while customers enjoy tea or coffee and snacks, have become more popular in America after trending in Taiwan and then Japan. And if you’re looking for a new feline friend, Catsbury Park plans to partner with animal rescue organizations to promote the adoption of the dozen or so cats that will live in the café. Let ASID update your space You wouldn’t dare wear clothes from 1995, so why would you let your home become outdated? The professionals at the New Jersey Chapter of the American Society of Interior Designers (ASID), which includes designers from Monmouth County, want to help homeowners turn drab spaces into fab and offer tips to update a room without breaking the bank. Running through June, “Design Experience…Impacting Lives Through Professional Interior Design” matches clients with an ASID pro, who’ll work some magic. Here’s how: Homeowners who sign up at the ASID website will be paired with an interior designer and schedule a consultation. Once on site, the designers will assess and offer consumers design advice, from repainting walls and replacing carpets to knocking down walls and rebuilding fireplaces. The advice is intended to improve aesthetics and boost home values. Each session is $250 an hour. Money raised through this program will benefit future ASID progams. Ready for a change? TOP OF THE CLASS Did your local high school make the grade? U.S. News and World Report recently released its annual ranking of America’s best high schools and not only did three Monmouth County schools make the top 500, one of them placed in the top 20: High Technology High School in Lincroft. This small academy with selective enrollment was number one in New Jersey and placed 16th in the nation. The other two Monmouth County schools on the list are the Marine Academy of Science and Technology in Middletown Township (ranked 206th nationally) and the Academy of Allied Health and Science in Neptune Township (ranked number 378).

GO FOR A SPIN

A new bike sharing program has arrived in Asbury Park just in time for summer, thanks to an unanimous vote by the Asbury Park City Council in April. Bike sharing company Zagster beat out the competition to win the opportunity to provide the service. Four stations launched Memorial Day weekend, with 10 bicycles per station. Eventually, if the program is successful and attracts enough sponsors, there could be up to 10 stations with 110 bicycles. For now, look for locations at Springwood Avenue Park, the Transportation Center, downtown and at the waterfront. Consider taking one of the bikes for a spin this summer: It’s a great way to get fresh air and exercise while exploring your community.

River Rangers RISE AGAIN Good news for the parents of bored couch potatoes this summer: The annual Red Bank River Rangers program has been resurrected for the 2017 summer season. (The program was cancelled last summer but it makes its triumphant return—much to the delight of residents.) This five-day program for children ages 10 to 14 takes place in July and August at the Navesink River. NEW FACILITY AT MONMOUTH MEDICAL CENTER IS FIRST IN STATE DEDICATED TO COMPREHENSIVE PERINATAL CARE.

ONE IN SEVEN WOMEN MAY BE AFFECTED by perinatal mood and anxiety disorder (PMAD). Although temporary and treatable, it is the most common complication of childbirth with symptoms ranging from mild to severe. For this reason, on May 4, Monmouth Medical Center hosted the grand opening of its Center for Perinatal Mood and Anxiety Disorders making it the first and only hospital in New Jersey to offer a dedicated treatment center where new and expectant mothers can receive comprehensive care for PMAD. Initially formed as a support group in 2011, Monmouth Medical Center established a designated perinatal mood and anxiety disorder program in 2015, which led to the development of a dedicated center this year. Since its inception, the program has screened more than 800 women and has treated more than 500 patients from all over New Jersey and bordering states. The center’s wide patient reach is attributed to the great need and severe lack of services available to treat PMAD in New Jersey as well as other states. With much help and support from Mary Jo Codey, former First Lady of New Jersey, in 2006 New Jersey became the first state to enact a law that every new mom must be screened for PMAD prior to leaving the hospital after giving birth. Codey attended and spoke at the event, sharing her own personal struggle with PMAD and highlighting the need for a safe, welcoming place for women to seek treatment. “This center was formed to let our patients know that our commitment to them and their families doesn’t stop with the delivery. We know that for many women adjusting to the birth of their baby can be challenging, but we want women to know

that they aren’t alone and that there is help,” says Lisa Tremayne, director of the Center for Perinatal Mood and Anxiety Disorders at Monmouth Medical Center. “We know that the best treatment is delivered through a combination of approaches, which is why we offer individual therapy, medication and support group services and tailor each woman’s treatment plan to meet her unique needs. We want women to know that the sooner you contact us for help, the sooner you will start to feel better.” The Center for Perinatal Mood and Anxiety Disorders offers free group support as well as evidence-based psychotherapy. Patients are supported by a multidisciplinary team of experts, including psychiatry, nursing and social work, and all the center’s clinicians are certified by Postpartum Support International. “Monmouth Medical Center has built

one of the safest obstetrical and gynecologic services in the nation, and we are at the forefront for women’s health care needs,” says Eric Carney, chief operating officer at Monmouth Medical Center. “The creation of this center is the result of a pressing need for services available to treat perinatal mood and anxiety disorders. As a part of our comprehensive continuum of care for expectant and new moms and babies, we’re proud to be the first hospital in New Jersey to open a PMAD Center offering a safe and welcoming space that provides the highest level of care rivaling any other hospital in the nation.” It’s important for women to know that PMAD is very common and not their fault, says Robert Graebe, M.D., FACOG, director of the Department of Obstetrics and Gynecology at Monmouth Medical Center. “It is equally important that they receive the proper care so they can get better.”

How long have you been with Monmouth Medical Center? I’ve been an attending physician since 1985 and chair of Obstetrics and Gynecology since 2004. Monmouth’s maternity service was recently recognized by Leapfrog, an independent national nonprofit organization. What can you tell us about that? We are the only hospital in Monmouth and Ocean counties to earn an “A” in the most recent Hospital Safety Score and the only area hospital to completely meet full safety standards in all four critical areas of maternity care, including rates of C-section, early elective deliveries, episiotomies and having an experienced neonatal intensive care unit for at-risk deliveries. You received a few other awards recently as well, from HealthGrades and Becker’s Hospital Review, correct? Yes, Monmouth Medical Center received a Labor and Delivery Excellence Award by HealthGrades and an Obstetrics and Gynecology Excellence Award by HealthGrades in 2016, and Monmouth Medical Center was named by Becker’s as one of the top 100 hospital and health systems with great women’s health programs in December 2016. We’ve heard more expectant parents turn to Monmouth Medical Center than any other area hospital. How many babies did Monmouth deliver last year?

How are Monmouth’s surgical delivery rates? Monmouth maintains the lowest surgical delivery rate of a Level III obstetrical unit in New Jersey—below 20 percent compared to the statewide average of 39 percent and the national rate of 32 percent. Additionally, Monmouth’s trial of labor after C-section rate of 35 percent is well above the state and national average, with 90 percent successfully delivered vaginally. What kind of obstetrical training do nurses have? All new obstetrical nurses must go through a 24-week clinical and didactic training program including review of procedural/ process for medication safety; cardiovascular assessments; gastrointestinal assessments; neurological assessments; care of the laboring patient; care of the delivered infant and many other core measures. All nurses must be certified and maintain certification in Basic Life Support; Advanced Cardiac Life Support and Neonatal Resuscitation. Plus, all nurses must participate in ongoing quality improvement efforts and performance improvement efforts. What are the requirements for attending physicians? All attending OB physicians must be board-certified on Obstetrics; must be certified in Basic Life Support, Advanced Cardiac Life Support and Neonatal Resuscitation; and must be active on staff. What else differentiates Monmouth’s maternity services? The Labor-and-Delivery Unit offers at least two attending Ob/Gyn physicians and one resident Ob/Gyn physician on site 24

hours a day, seven days a week, 365 days a year. This is in addition to an attending anesthesiologist, a neonatal intensive care specialist and full hospital support staff. On-call sub specialists are available 24 hours a day for immediate consultation. The hospital has a new center for mothers suffering from postpartum depression or anxiety. Tell us about it. The Center for Postpartum Mood and Anxiety Disorders at Monmouth Medical Center is the first and only hospital-based outpatient program for the treatment of PMAD in New Jersey. It offers all forms of treatment by certified postpartum mood and anxiety disorders treatment specialists and is led by a board-certified psychiatrist. Monmouth has a long history of offering cutting-edge care, correct? Yes. Nearly 50 years ago, Monmouth Medical Center’s Neonatal Intensive Care Unit (NICU) was the first of its kind in New Jersey and among the first six offered at community hospitals nationally. Monmouth also offered the first full-time Laborist Program in the state. This distinctive program increases patient safety with ’round-theclock Laborist physicians who are boardcertified obstetricians with Advanced Life Support in Obstetrics national certification to monitor patients and perform deliveries on an “as-needed” basis. What’s new for OB patients at Monmouth? The Eisenberg Family Center recently unveiled a new wing of its postpartum unit, featuring additional expansive private postpartum rooms for new mothers recovering from childbirth. Monmouth’s Labor-andDelivery Unit also was expanded and underwent renovations that included all new labor beds and bedside tables. The unit is designed to accommodate each expectant mother’s birthing plan.

A JOINT ACCOUNT THANKS TO CUTTING-EDGE TECHNOLOGY, A 70-YEAR-OLD WOMAN RETURNS TO A PAIN-FREE LIFESTYLE AFTER TOTAL HIP AND KNEE REPLACEMENT SURGERIES. WHEN MARY LEE BASS SUFFERED AN INJURY TO HER LEFT knee after a tap dancing accident 11 years ago, the now 70-year-old took time off to complete physical therapy and recuperate before putting on her dancing shoes again. “Mary Lee had advanced arthritis in both her hip and knee,” recalls Dr. Gesell. “Her knee symptoms improved with injections and physical therapy, but her hip symptoms got worse.” “Dr. Gesell discussed the surgical options for my hip, and we decided to go with Makoplasty robotic-assisted total hip replacement,” says Mary Lee. “At the time only hip and partial knee replacements were being done robotically, and Dr. Gesell wanted me to wait until I could have my full knee replaced robotically. I knew my knee was on the backburner.” And just like she did before, Mary Lee bounced back. But once her hip replacement was behind her, Mary Lee’s knee pain became more limiting. “I’m very active,” she says. “But the pain

from my knee began causing mobility problems. We had to wait until the technology was ready.” When he treated her hip, Dr. Gesell told Mary Lee that 2017 was the year that the Makoplasty technology required for robotic total knee replacements would be available. So when January rolled around, Mary Lee began checking in with Dr. Gesell’s office to see when she’d be able to have surgery. “I was calling Dr. Gesell’s office once a week to see when it would be time. Because the hip replacement went so well, I was ready to have the second surgery done,” she says. After a few short weeks, Mary Lee got the news she was hoping for—Dr. Gesell was able to perform roboticassisted total knee replacements and Mary Lee’s surgery could be scheduled. “Monmouth Medical Center was the first in the region to offer Makoplasty robotic-assisted partial knee surgery. Now we are also the first to be able to offer the advanced option of Mako Total Knee replacement to patients like Mary Lee,” says David Chalnick, M.D., FACS, medical director of The Joint Replacement Center at Monmouth Medical Center. (See sidebar.) “Mary Lee had significant arthritis in her whole knee joint,” adds Dr. Gesell. “Because the arthritis affected all three compartments of her knee, she required a total knee replacement.” In preparation for her surgery, Mary Lee underwent a CT scan of her knee joint, which was used to generate a 3D virtual model of her joint and pre-operative plan to ensure exact placement, orientation and alignment of the implant. During the surgery, Dr. Gesell used the Mako robotic arm to follow the personalized pre-op plan to remove the diseased portion of Mary Lee’s bone and cartilage. Implants, chosen to accommodate Mary Lee’s active lifestyle, were then secured to allow the knee to move smoothly again, in a natural-like motion. Following the surgery, Mary Lee spent just two days in the hospital and was back on her feet and driving herself to physical therapy in two weeks. After a month of rehabilitation, she has a smile on her face and feels better than she could have imagined. Today, thanks to aggressive physical therapy, Mary Lee shows no sign of slowing down. She is back to walking, going to the gym and keeping up with her grandchildren. “When you have surgery, you can anticipate the discomfort and measured healing over time but you can’t guarantee a high-level of care. Thanks to Dr. Gesell, the nurses and the staff at the hospital, it was perfect,” she says. “I’m so glad I waited for the robotic-assisted surgery. I wanted my knee to be happy and healthy, and it is!”

Mako Total Knee replacement

For the thousands who had been waiting for a solution to their knee pains, the wait is now over. Monmouth Medical Center is the first hospital in the region to offer Mako Total Knee replacement surgery. It had previously been the first in the area to give patients the option of a Mako Partial Knee replacement procedure. Mako Total Knee replacement is a minimally invasive approach. It utilizes a surgeon-controlled robotic arm system that enables precise alignment and placement of implants. This results in smaller incisions, less pain and a quicker recovery—all good news for patients. Additionally, the Mako System software assists surgeons in preplanning and treating patients, allowing for a customized approach to accommodate active and varied lifestyles. This is welcome news for patients, as knee replacements can be designed to meet specific sizes and functions. Ultimately, the Mako Total Knee replacement provides more natural motion and the potential for greater implant longevity. The Mako platform has been supported by significant primary clinical research, including more than 50 peer reviewed clinical publications, more than 300 scientific abstracts and numerous ongoing clinical studies. If you go early in the morning, Monmouth offers some great spots for ogling a wide variety of winged species during breeding season. Learn more at njaudubon.org.

Assunpink Wildlife Management Area, which features three lakes that are popular resting spots for migratory waterfowl. A nesting site for Cooper’s hawks. Big Brook Park Region Grasslands, a mixture of habitats including scrub-shrub areas that support species like the vesper sparrows. Manasquan River Watershed, which provides refuge for migrating landbirds and wintering waterfowl. Navesink and Shrewsbury Rivers, breeding grounds for the bald eagle, listed as endangered in the state, and the osprey, listed as threatened. North Shore Coastal Ponds Complex, where piping plovers and least terns, among many other species, breed and forage.

Raritan Bay and Southern Shore, host to many state-listed species during breeding season including black skimmers. Sandy Hook, where as many as 600 least terns and 60 piping plovers have nested. A major stop along the migration pathway for more than 340 species traveling the Atlantic flyway. Shark River, another key wintering habitat for many species of waterfowl. Turkey Swamp Wildlife Management Area, home to several forestbreeding species and a critical stopover habitat for songbirds during spring and fall migration. Upper Freehold Grasslands, an exceptional site for the Northern bobwhite, field sparrow, Eastern woodpewee and American kestrel.

What could be better for a day of outdoor relaxation than a fishing expedition? Happily, the county offers many promising spots to cast off. Here’s a sampling. The Manasquan Reservoir in Howell is a good place to catch largemouth bass as well as bullhead catfish, muskie, sunfish, bluegill and black crappie. Angling for bluefish, striped bass or summer flounder? Head to the Navesink River, which runs about eight miles through Monmouth County. LET’S GO DUTCH TURN OFF THAT PHONE AND ENJOY THE RUSTIC SIGHTS AND TEMPTING TASTES OF PENNSYLVANIA DUTCH COUNTRY, SURPRISINGLY CLOSE TO HOME. BY RITA GUARNA Amish Country is famous for its smorgasbords, or all-you-can-eat buffets, where little ones who are always hungry will get their fill. At the Plain and Fancy Restaurant (part of the eponymous farm), food is served “family style.” That means you’ll be seated at a random table with strangers. You’ll pass platters around the table and make small talk with people with whom you might have little, if anything, in common. And yet, it’s surprisingly pleasant to have an amicable chat with those whose views are not our own. Could this be the lost art of conversation? With that conversation you’ll get great fried chicken, carved roast beef, ham, corn bread, bread pudding, sausages, veggies and baked goods. Here too you can catch “Jacob’s Choice,” a short flick that explains what it means to be Amish. Or check out the Sight and Sound Theater where Bible stories—think Samson, Moses, Jonah—are brought to life on stage. And speaking of food, don’t miss a visit to the city’s Central Market. The Romanesque-style building was constructed in 1889 and is home to ethnic foods, sweets (shoofly pie, anyone?), cured meats, plus plenty of fruits and veggies. It’s the oldest continuously operating farmers’ market in the U.S. If you prefer an attraction with your shoofly pie, check out Dutch Haven. Yes, it looks like a tourist trap with its big windmill on the roof, but it sells more pies than any other bakery in Lancaster

County. (Some folks swear that it’s the perfect souvenir.) Check out the Hans Herr House and Eastern Woodland Longhouse. Built in 1719, the house is the oldest building in the county. Guides point out a still-intact wood and iron steamer trunk, belonging to one of the original immigrant occupants. Leave enough time to visit the Native American Longhouse on the property. The 62-foot-long, 20-footwide structure was recreated to depict life during the early years of European settlement. Train buffs will love the Strasburg Rail Road in nearby Strasburg. Hop aboard for a steam-powered 45-minute meander through the charming countryside. Once the kids are good and tired (isn’t that why you brought Grandma?), Mom and Dad might want to drop by one of the area’s two outlet shopping malls. Better yet, check out downtown Lancaster, its streets teeming with chic art galleries, boutiques—antiques, jewelry, even midcentury furniture—and restaurants. There’s a BYO French bistro, Citronnelle, or Luca, where you’ll find Italian favorites and wood-fire-ovencooked pizzas. The Federal Tap House features more than 100 beers on tap and great pub grub, presented by superattentive servers. And the Horse Inn, a horse-stable-turned gastropub, is a hotspot with good food and sips. When it’s time to return home, you’ll leave the buggies behind—but keep that new perspective.

IF YOU’RE SHORT ON TIME (AND frequent flyer miles) and want to show your family a different world without traveling too far, consider Lancaster, Pennsylvania. About 140 miles from Red Bank, this city at the heart of Pennsylvania Dutch Country may be your quickest ticket out of the 21st century. At first glance, the kids might not think cows nibbling on grass, bearded men in straw hats and apron-andbonnet-clad girls are all that cool. But the Amish, who’ve been “Witnessed” by Harrison Ford (in the 1985 movie of that name) and spoofed on David Letterman’s TV show aren’t the only “attraction.” (And truth be told, they are cool.) “Pennsylvania Dutch” is a misnomer, as the Amish came here in the early 18th century from Switzerland, not Holland. Along with the Quakers, Mennonites and others, they came to William Penn’s land seeking religious freedom. They’re a simple people who preach pacifism, eschew electricity (the better to avoid the influences of computers and TV) and encourage members to marry within the flock. One of the best ways to learn about them and see the countryside is to take a buggy ride. We took one with Aaron and Jessica’s Buggy Rides, conveniently located at the Plain and Fancy Farm. Guides—ours was a lovely young woman named Esther—are very open about their lifestyle and happy to answer questions.

DR. FRANK’S FAVORITE BARBECUE RIBS Serves: 6

INGREDIENTS n ½ cup brown sugar, packed n ½ cup blueberry jam n 1 Tbs. smoked paprika n 2 tsp. salt n 1 tsp. ground white pepper n 1 tsp. crushed red pepper ﬂakes n 2 garlic cloves, minced n 2 cups barbecue sauce (bottled or homemade) n 4 lbs. baby-back-style pork ribs DIRECTIONS In a saucepan over medium heat, stir together all the ingredients except the ribs, bring the sauce to a simmer, and continue to cook for 10 minutes, stirring often. Remove the saucepan from the heat and allow the sauce to cool on the stovetop while you prepare the pork ribs. You will need to peel the membranes off the ribs. You can have your butcher do this, or you can do it yourself. Slide a small sharp knife under the silver skin, or membrane, move it sideways along the length of the ribs, then grab the loosened skin with a paper towel and remove it. Combine the ribs with half of the cooled sauce in a large zip-top plastic bag. You may need several bags to hold the ribs; if so, divide the sauce into equal parts per bag. Seal the bags and massage the sauce to cover the meat and marinate in the refrigerator for at least 3 hours. Reserve the remaining half of the sauce for basting on the grill. Preheat a grill to low heat. Remove the marinated ribs from the plastic bags and discard the marinade in the bags. Wrap the ribs in heavy-duty aluminum foil and seal the edges, making several sealed packages. Place the aluminum foil packages on the grill and cook for 45 minutes, turning the packages every 10 to 15 minutes. Be careful not to let them burn. Remove the ribs from the grill, then remove the ribs from the packages and set aside. Increase the heat on the grill to medium. Place the ribs directly on the grill, and cook for another 15 to 20 minutes, basting with sauce generously every 2 to 3 minutes, until the meat is evenly browned and caramelized. Serve warm.

CORN AND TOMATO SALAD with Fresh Basil Serves: 6 INGREDIENTS n 3 cups frozen corn kernels, thawed, or the kernels from 6 cobs freshly cooked corn n 2 cups baby tomatoes, halved n ½ red onion, coarsely chopped n ½ cup chiffonade (thin ribbons) of fresh basil leaves n 2 Tbs. balsamic vinegar n 3 Tbs. olive oil n 1 tsp. salt n ½ tsp. pepper DIRECTIONS In a large bowl, stir together the corn, tomatoes, red onion and basil. In a separate bowl, combine the vinegar, oil, salt and pepper and whisk to blend.

GRILLED PEACHES with Red Onions Serves: 6 INGREDIENTS n 6 large ripe peaches, pitted and quartered n 3 Tbs. olive oil n ½ small red onion, sliced n 6 Tbs. balsamic vinegar n 1 tsp. ﬂaky salt n 1 tsp. freshly cracked black pepper

DIRECTIONS Preheat a grill to medium heat. In a large mixing bowl, toss the peaches with the olive oil. Grill the peaches for 5 minutes on each side, or until the fruit has caramelized. Transfer the grilled peaches to a large serving platter and place them cut-side up to show grill marks. Sprinkle with the sliced onion, balsamic vinegar, salt and cracked pepper and serve immediately.

Pour the dressing over the vegetables and gently toss to coat. This salad may be prepared a day ahead; cover with plastic wrap and refrigerate overnight.

RED, WHITE & BLUE POTATO SALAD with Thyme and Rice Vinegar Dressing Serves: 6 INGREDIENTS n 1 lb. purple potatoes, peeled and halved or quartered n 2 tsp. salt n ¼ ₃cup mayonnaise n 1 Tbs. chopped fresh thyme leaves n 1 Tbs. chopped fresh chives n 1 celery rib, finely chopped n 1 tsp. fresh lemon juice n 1 Tbs. rice vinegar n 1 tsp. salt n 1 tsp. pepper n 1 large red bell pepper, cut into ¼-inch pieces n 1 (14-oz.) can artichoke hearts, drained and cut into bite-size pieces DIRECTIONS Put the potatoes in a stockpot and fill with enough water to cover the potatoes. Add the salt and bring the water to a boil over high heat. Continue to boil the potatoes for 15 minutes, or until they are fork tender yet firm. Drain and set aside to allow the potatoes to cool while you prepare the dressing. Stir together the mayonnaise, thyme, chives, celery, lemon juice, rice vinegar, salt and pepper in a small bowl. Transfer the cooled potatoes to a large mixing or serving bowl, along with the red peppers and artichoke hearts. Add the dressing and gently toss to coat. Refrigerate, covered, until ready to serve.

BESIDES COCONUT, PINEAPPLE IS PERHAPS the fruit that most quintessentially represents the taste of the tropics. Featuring a spiny exterior and nectarous, juicy flesh, a pineapple is actually a fusion of multiple berries that grow around the core and combine to form that delicious fruit we love to slice, grill, blend and bake.

POWER UP Like most fruits, pineapples have a knack for satisfying a sweet tooth without packing on the pounds. One cup of diced fruit has only 82 calories, no fat, and a whopping 130 percent of the daily-recommended amount of immune-boosting vitamin C for someone on a 2,000-calorie diet. It’s also high in manganese (76 percent of the daily recommended value), which promotes bone health and helps with metabolism, and contains bromelain, a mixture of enzymes that have been shown to be effective in

reducing inflammation, treating osteoarthritis and aiding in digestion. One caveat: Pineapple is particularly high in sugar, with 16 grams in each cup, so as difficult as it may be, enjoy in moderation.

BUY/STORE/SERVE When selecting a pineapple, look for bright, green leaves and the absence of any bruises or squishy spots. Pineapples are already ripe and ready to eat once they hit supermarkets (they do not ripen further as bananas and avocados do), so don’t be deterred if the fruit appears green on the outside—that’s perfectly normal. Once purchased, it should be eaten within a few days for optimal freshness (or within four days if it’s kept in the refrigerator). You can serve a pineapple plain and raw (a quick Google search will reveal many creative ways to cut and serve the fruit), turn it into a refreshing salsa (mix it with cilantro, red onion, a serrano pepper,

lime juice, and salt*), grill it on kebabs with chicken or shrimp, or try it on a pizza (trust us on this!). Also, the bromelain it contains works as a natural meat tenderizer, making it ideal for a marinade for steak, pork and other meats. Other ways to use the sweet treat? Try pineapple in ice cream, salad dressing, smoothies and even cocktails.

DID YOU KNOW? Christopher Columbus may be best known for his discovery of the New World, but the Italian explorer is also responsible for introducing the pineapple to Europeans, according to the California Rare Fruit Growers organization. Columbus first found the fruit, which was originally domesticated by Indians, in Guadalupe in 1493 and brought it back with him to Spain. From there, it was passed on to the Philippines and other tropical areas.

Grapefruit and Lavender Sake (Serves 2) INGREDIENTS n 2 cups sake n 2 cups fresh grapefruit juice n 1 Tbs. dried lavender n ¼ cup sugar n ¼ cup water n mint leaves for garnish DIRECTIONS

Bring sugar and water to a boil for 25 minutes until a thick syrup forms. Add dry lavender to sake and infuse for at least 30 minutes. Mix infused sake with grapefruit juice and 1 tablespoon of simple syrup from the sugar water. Add mint leaves as garnish.
