Over the last few weeks, the team at Monmouth Medical Center has come together for our patients in extraordinary ways to prepare for and deal with the coronavirus (COVID-19) pandemic. This rapidly evolving and highly complicated pandemic is a health care crisis that is unprecedented in our lifetime. Every day, I see how hard everyone at Monmouth Medical Center is working together for our patients and staff in response to the crisis. As a system, RWJBarnabas Health is working around the clock, seven days a week. We are sharing best practices, developing policies and continuing to develop additional emergency plans to address staffing, supplies, testing and other logistical considerations for managing the demand for our care. We are working hard to prevent the spread of coronavirus (COVID-19) while maintaining hospital operations as much as possible. Joni Mitchell’s lyrics ring in my ears as I sit at home at my work computer. It’s one thing to have an option to work from home; it’s another to have to work from home. And who hasn’t had to cancel dinner plans due to a scheduling conflict? But having to postpone because the restaurant is shut down— well, that’s novel. In the past few days, I’ve seen colleagues cancel weddings and vacations. Watched as others talked of remote learning for their kids and begged loved ones not to check their 401(k)s as I was tempted to peek at my own. (In the end, I was too chicken.) Longtime Monmouth residents are no strangers to crisis. I recall working with colleagues around a U-shaped table near a specially transported computer server at a local hotel back when Superstorm Sandy hit. We’ve had our share of storms, blackouts and gasoline rationing. But this is different: COVID-19 has changed everything. Well, almost everything. Happily, what isn’t different is our response as a community. I’ve seen friends and acquaintances share information and supplies. We’ve offered to pick up medicine for elderly neighbors and run errands for those in self-quarantine. Of course, there’s a great deal of stress and anxiety. When will the economy recover? When will we return to normal? As we go to press, Monmouth County has 158 reported cases of the virus, with several dozen more presumptive positives. As a monthly publication, we prepare articles long before you read them; thus this issue was conceived before the major U.S. outbreak. But in a way, perhaps the timing is fitting. This is our HOME issue, and now that most of us are home working and nesting, we see the importance of home—and the way it reflects who we are—as never before. This is an unprecedented time, for sure. My hope is that we’ll come out of it stronger and more grateful for what we’ve “got.” And that it’s not really “gone,” just postponed.

It’s Friday, March 20th and I have witnessed some of the most volatile days in stock market history. When markets decline and the news is depressing, the urge to panic and “play it safe” can be intense. Maintaining a clear vision of your long-term goals is vital to making it through market uncertainty. For now, let’s focus our attention on staying healthy, being smart with your money and what you can do now to prepare for better times.

SPRING CLEAN YOUR FINANCES As many are working from home, what better time than now to organize important documents, review your insurance coverages and update your estate plans. DOCUMENTS TO KEEP are likely to be those that are difficult to obtain: tax returns, legal contracts, insurance claims and proof of identity. Always keep birth & marriage certificates, adoption records, citizenship, military discharge papers and social security cards for all family members. Create a personal document locator to give to a family member or trusted advisor that provides your personal information, contacts such as attorney, tax preparer and financial advisor, on-line accounts with username and passwords along with a list of specific location of those documents. UMBRELLA LIABILITY INSURANCE When the local weather forecast calls for rain, we typically grab our umbrellas. So why not consider an umbrella policy that can protect you in stormy financial weather? Umbrella liability insurance provides liability protection above and beyond the basic coverage that a homeowners/renters and auto insurance policies offer. Ask yourself these questions

How often do you have guests in your home? Do you have a home business? Do you have teenage drivers? Does your lifestyle give the impression you have “deep pockets”? As your wealth grows, so do the challenges of preserving and protecting yourself from creditors and predators. Speak to your insurance carrier for more information about coverage. SUDDENLY SINGLE Have you had a change in circumstances due to divorce or death of a spouse? Survivor fans may recognize a local face on the current season of the popular CBS reality show. She’s business development manager Michele Fitzgerald, and she’s back for the “Winners at War”-themed 40th season in Fiji. Now living in Hoboken, Fitzgerald is a Freehold native who graduated from Freehold High School—and there’s little doubt that her seaside Jersey Shore upbringing aided her victory in the 32nd season of the show set in Kaôh Rong, Cambodia. The wait is over—we finally know which acts will take the stage at the third annual Sea.Hear.Now. festival in Asbury Park in September. Pearl Jam will headline the popular two-day music festival, marking the legendary rock band’s first performance in town. They’re in good company, though, as such acts as Billy Idol, the Beach Boys’ current incarnation, Cage the Elephant and Grouplove also are set to take the sandy stage on Sept. 19 and 20. The highly anticipated festival has become a summertime staple for Monmouth County pop music fans; plans call for it to feature surf sessions by pros of the sport surfboard shaping as well as immersive art displays by local and professional artists from varied media. JUST LIKE POP USED TO MAKE Professional caterer Michael Young earned the sobriquet “The Domesticated Dad” for the gourmet bagged lunch service he created with his two kids in mind. Lucky for us, the chef just expanded on his unique culinary services by opening a storefront for his brand, which sells the same ampedup American lunch eats he’d been brownbagging for almost a decade.

Construction on a nine-hole disc golf course in Leon Smock 80 Acre Park in Eatontown is well under way, but the plans aren’t flying with everyone. The decision to install the course came after a group of residents lodged a nearly year-long protest with local council members, contending that a disc golf terrain would disrupt the park’s ecosystem. Still, the course is expected to be completed soon and open for recreational games of the hybrid half-frisbee, half-golf sport.

The brainchild of Drew Adelman and Holmdel native Peter Pannullo, Bada Bean is set to open four cafes in the state—including one in Toms River—that will serve up mob-inspired specialty drinks (in the appropriately named “soldier,” “capo” and “boss” sizes) such as “Fugetaboutit,” a café latte, and “Paisan Petey,” a traditional Americano. Says Pannullo: “The blueprint is to cover Monmouth County and the rest of New Jersey, and perhaps even go beyond our famous state.”

Who’s that featured on the packaging for Thanksa-Lot, one of the Girl Scouts’ newest cookies? A FAIR HAVEN FAREWELL Locals recently bade “arrivederci” to Umberto’s Pizza in Fair Haven, a staple in the small town for nearly four decades. The pizzeria was known primarily for its quality pies topped with everything from classic pepperoni to rich baked ziti. Reports say the building will house a new restaurant, but there’s currently no indication of what will be sold there.

Pizza was the name of the game recently on Guy’s Grocery Games for chef Joe Brignoni. The owner of the soonto-open Joe’s Rotisseria in Asbury Park battled it out with three other culinary masters on The Food Network’s supermarket-centric cooking competition show. Little Silver

This historic, scenic borough is a little sliver of peace and quiet along the Jersey Shore. Safe, family-friendly and tight-knit are adjectives that undoubtedly come to mind about Little Silver, a 3.3-square-mile town in east Monmouth County. That could be because it’s been dubbed the No. 2 best place to raise a family in the county, according to niche.com, and has an excellent school district that has just one elementary school and one middle school (students then continue on to Red Bank Regional High School from there). But Little Silver is full of history and old-school community charm too.

THE TRAIN STATION Today, the Little

Silver train station on Sycamore Avenue is used by thousands of commuters traveling to and from New York City each day, but it’s more than just a mode of transportation—it is also one of the town’s most historic landmarks. It was designed by the noted American architect Henry Hobson Richardson and built in 1890 (and then restored in 2003). It has been on the National Register of Historic Places since 1984.

WHAT’S IN A NAME?

There are two primary theories about how Little Silver received its moniker. One insists that early settlers and brothers Joseph and Peter Parker named it after their father’s estate in Portsmouth, Rhode Island, on which they grew up. A second is that Little Silver refers to the form of currency European settlers paid to its Lenni-Lenape inhabitants when purchasing the land.

HOME SWEET HOME Thinking about buying or selling a home here? The median home value in Little Silver is $636,140, according to Zillow. Home values are expected to rise 2.6 percent within the next year. There is range of home styles available, from ranches to capes to colonials, many of which are on the Shrewsbury River.

Located just four miles from the Atlantic Ocean and the Jersey Shore, Little Silver is a hot destination for boaters. Some residents’ homes have private docks that give them access to the water—about 8 percent of all homes are located on the Shrewsbury River and another 35 percent are along its stream corridors, according to The New York Times—but there is also a free boat ramp for the public to use at Dominick F. Santelle Park off Riverview Avenue. For those who like the outdoors but prefer to stay on land, Parker Sickles Farm Park is a popular destination, with its playground, sports fields and close proximity to the fourth-generation, family-owned general store, Sickles Market.

THE PARKER-SICKLES HOMESTEAD

This property, also on the National Register of Historic Places, is one of the oldest houses in the state. It was constructed in the 1660s by brothers Peter and Joseph Parker, two of the area’s earliest settlers. In 1995, after the Parkers’ descendant Julia Parker passed away—the home reportedly housed eight generations of Parkers—it was left to the borough and preserved at her request. The restoration of The Parker Homestead house and its three barns across 10 acres was complete in 2016, and it now serves as a historic site for both residents and visitors.

Many of Little Silver’s finest eateries are populated along Prospect Avenue, the downtown area that intersects with Church Street’s vintage-style shops and houses. Examples included Little Szechuan (Chinese), Turning Point (Americanstyle brunch) and Olivia’s Trattoria and Artisan Pizza (Italian). Other must-tries in the neighborhood include Palumbo’s for when you’re craving a quick slice or the historic Edie’s, where breakfast and lunch are served all day.

FAMOUS FACES

Little Silver’s surrounding towns like Middletown and Red Bank are or were home to two big-name Jons (as in Stewart and Bon Jovi), but Little Silver has a few athletically inclined residents to call its own. Most notably is Harold Hartshorne, a gold-winning figure skater who lived in The Hartshorne Estate at 80 Oakes Road before his death in 1961; Meghan Tierney (pictured), a snowboarder who competed in the 2018 Winter Olympics and grew up in Little Silver and Rumson; and former Rutgers Scarlet Knights basketball coach Mike Rice Jr., who resides here now.

WHAT PARENTS SHOULD KNOW ABOUT COVID-19 through respiratory droplets produced when an infected person coughs or sneezes. It may also be possible that a person can get COVID-19 by touching a surface or object that has the virus on it and then touching their own mouth, nose or eyes; however, this is not the main way the virus is thought to spread.

Margaret (Meg) Fisher, M.D., FAAP, pediatric infectious disease specialist and chair of the Department of Pediatrics and medical director for The Unterberg Children’s Hospital at Monmouth Medical Center, an RWJBarnabas Health Facility, answers parents’ questions regarding the novel coronavirus, COVID-19—including RWJBH’s response to the public health incident. What is novel coronavirus? A novel coronavirus is a new coronavirus Margaret (Meg) Fisher, that has not been previously identified. M.D., FAAP The virus causing coronavirus disease 2019 (COVID-19) is not the same as the coronavirus that commonly circulates among humans and causes mild illness like a cold.

Who is most at risk for catching COVID-19? Much like the flu, individuals with compromised immune systems are at a higher risk for catching COVID-19, including the elderly and those with serious medical conditions. What is the risk of my child becoming sick with COVID-19? According to the Centers for Disease Control and Prevention (CD), children do not seem to be at higher risk for getting COVID-19 than adults. While some children and infants have been diagnosed with COVID-19, adults make up most of the known cases to date.

What is COVID-19? Coronavirus (COVID-19) is a respiratory illness that can spread from person to person. Patients with COVID-19 have mild to severe respiratory illness symptoms including: fever, cough and shortness of breath.

Are the symptoms of COVID-19 different in children than in adults? The symptoms of COVID-19 are similar in children and adults. However, children with confirmed COVID-19 have generally presented with mild symptoms. Reported symptoms in children include cold-like symptoms, such as fever, runny nose, and cough. Vomiting and diarrhea have also been reported.

How does COVID-19 spread? COVID-19 spreads from person to person and is thought to spread between people who are in close contact with one another (within 6 feet)

How can I protect my family? Currently there is no vaccine to prevent COVID-19, but the CDC recommends these other ways to stay healthy and prevent the spread of illness: •P ractice social distancing by avoiding crowds. Social distancing means staying at least 6 feet away from others. •W ash your hands often with soap and water for at least 20 seconds. • I f soap and water are not readily available, use a hand sanitizer. •A void touching your eyes, nose, and mouth. •K eep your children away from others who are sick. •S tay home and keep your children home if they are ill •T each your children to cough and sneeze into a tissue, their arm or elbow—not their hands •A void travel to highly infected areas.

•M onitor their screen time: Keep younger

children away from frightening images they may see on TV and social media. Be a good role model: COVID-19 doesn’t discriminate and neither should we. Additionally, parents should try to plan their children’s schedule. The AAP recommends keeping your kids’ days as routine as possible. Some ideas to keep busy while practicing social distancing include: • r eading books with your child •m aking time for active play or playing games that gets their creativity going • taking a virtual tour of your favorite museum • cooking and baking as a family • getting a head start on spring cleaning • video chatting • meditating

My child is sick and I suspect COVID-19, what should I do? We advise that you call your child’s pediatrician and discuss the symptoms. Based on your discussion they can guide you on appropriate next steps. Do not come to the hospital unless advised by your child’s pediatrician. However, if your child is experiencing a healthcare emergency, dial 911. How do I talk to my kids about COVID-19? Much of the news coverage on COVID-19 can be overwhelming for parents and frightening for children. The American Academy of Pediatrics (AAP) has provided tips for parents and caregivers on how to filter this information and present it in a way that is easy for children to understand. •S imple reassurance: Remind kids that researchers and doctors are learning as much as they can to keep everyone safe. •G ive them control: Remind them of what they can do to stay safe. •W atch for signs of anxiety: Signs of worry include increased crankiness and trouble sleeping.

RWJBARNABAS HEALTH: KEEPING FAMILIES SAFE Visitor Restrictions: Only one parent/ guardian will be permitted to visit our inpatient facilities. At our outpatient locations, only one adult will be permitted to accompany each patient to an appointment, unless an aide or assistant is required. Increased Screening: Upon arrival to one of our facilities, you can expect screening of patients and those accompanying them for travel history, exposure to an indivudual with COVID-19 and any clinical symptoms at every point of entrance. We will be on high alert for any individuals with the following signs and/or symptoms: fever, respiratory infection, cough and/or shortness of breath, sore throat and/or those who have traveled and been in contact with travelers. Training Drills: We have been practicing readiness drills at each of our hospitals to assess and address the potential needs of all of our patients and employees. Isolation Rooms: RWJBH has identified and designated areas in each of our hospitals to use in order to keep COVID-19 patients separate from other patients and families. Following Recommendations: We are following all guidelines and recommendations set by the Centers for Disease Control of Prevention (CDC) and the New Jersey Department of Health (NJDOH). We will continue to monitor and prepare our protocols, facilities, and work force based off of these continuously updated recommendations. We are taking all necessary precautions to protect our patients, families and employees. Should I keep my child’s appointment? Yes. You and your child will face no additional risk coming to one of our facilities for your scheduled appointment. We recommend not postponing necessary and important care unless you or your child is experiencing flu or cold like symptoms. Why are we being asked about our travel history? In order to keep all patients, families, and employees safe we are asking every individual who enters one of our hospitals about their recent international and domestic travel—even employees. This is especially important because CDC guidelines now list multiple countries as nations of concern for potential COVID-19 patients. This screening measure helps us prevent possible exposure to COVID-19 even if the individual isn’t showing signs or symptoms of illness.

As guests sip a cocktail served from the sitting room’s raspberry soufflé bar, they get a taste of the festive experience that awaits them in a seashore colonial the homeowners wanted to be fun and different. A duo of designers continued the color story from the fuchsia wool rug by Kravet right down to the pillow embroidery. From the homeowners’ own treasure trove, they drew upon the bright hues of a glass coffee table with a Chinese vase base and artwork.

For a couple of empty nesters, there’s nothing like living on the Navesink River with its rich blue hues to evoke a spirit of serenity. When they downsized into a riverfront colonial, it was a no-brainer that they’d upsize the windows to drink in nature’s masterpiece from every angle. But the couple didn’t stop there; they worked with two Monmouth Countybased designers: Joan Norkus of Boxwood in Colts Neck and Kaila Williams of Town & Country Kitchen and Bath in Red Bank. Their mission? Create a soothing and fun décor with pinks and florals reflective of the vacation-like setting and open the floor plan to, as the homeowner says, “optimize this beautiful view.” “We wanted something we thought was special,” says the homeowner, who while downsizing hoped to hold onto that connection she previously enjoyed with the river. Though their 80-to-90-year-old Middletown colonial is sized right for two, “virtually every room has river views,” she says—a situation created by knocking down a wall that shut the living room off from the tranquility so near. The pièce de résistance was creating one easy-breezy, larger space that marries the living room with an open sunroom (expanded by five feet), kitchen and dining area. “With the large windows, it’s almost like we’re on the water,” she declares. Once small and off the beaten path, the relocated kitchen became a key part of this design. But the homeowners posed a challenge to Williams, who took on that room: Design a space that didn’t look like a kitchen at all. Impossible? Not for Williams, who tapped into the room’s inner chameleon with stained-oak cabinets quarter-sawn for a linear look that breaks with tradition, as well as a pink undertone, also seen in the cabinetry hardware and plumbing brass, “to play on the fact that she does love pink,” the designer explains. The homeowner also adores flowers, and once she saw the floral marble tile from Downtown Tile in Belmar with its glistening metal elements “she was set on that” for the backsplash, says Williams. From its star position under a custom hood with a bronze metal finish, a chevron mosaic in polished Calacatta gold and brushed gold aluminum creates just the right accent, while the countertops in mystery white marble combine pale gray,

You won’t find cabinets by the sink, and that’s deliberate, to let the homeowners’ vintage brass sconce lighting stand out against the Calacatta gold marble brick, while dual pendants from Hudson Valley Lighting grace the island. (The homeowner had many accumulated treasures that took on new life in this redo.) The lavender-hued island stools with brass legs are a cool find the homeowner herself contributed to the mix. Her husband let her have the kitchen of her dreams—even with a blush of pink—as long as his home office was masculine. The remodel, which called for gutting much of the house in February 2019, combined the warmth of a fireplace decked in twoinch-square Calacatta gold tiles with the warmth of conversation in a cozy grouping punctuated by two aquamarine swivel chairs from Shrewsbury’s The Store from River Road—another Navesink tie-in. With entertaining in mind, the dining room table from Shore Casual was custom-designed with a pedestal base sturdy enough for its

sizable stained-wood top, while the chairs are upholstered in floral both front and back. From the homeowner’s collection came the oilrubbed bronze chandelier and antique mirror. Because the start of any social gathering is often a drink, the couple packed a punch of bright color in their transitional sitting room, striking a happy note with a bar by Town & Country in raspberry soufflé. Norkus and Williams joined efforts on this sanctuary, playing up the pink with its hand-knotted-wool Kravet carpet in fuchsia, and tailored valences by M. Silberstein in Shrewsbury. The Chinese vasebased glass coffee table provides its own pop of color and comes from the homeowners’ collection, as does the painting between the two glass-and-brass towers. Even the entryway offers something grand with a Circa Lighting chandelier from the gilded Aerin Collection and another pop of raspberry in the Greek key pattern and blossoming wallpaper. “I feel like so many homes are sterile—lots of grays and white,” says the homeowner. “Color makes me happy.”

2020 MONMOUTH COUNTY IS HOME TO SOME OF THE MOST SEASONED AND TALENTED REAL ESTATE PROFESSIONALS IN THE COUNTRY. To help readers find the best agents to work with, Monmouth Health & Life contracted DataJoe Research of Boulder, Colorado to facilitate a multi-faceted research campaign. It consisted of an online survey delivered directly to agents across Monmouth County via email as well as internet research. In the survey, real estate agents were asked to provide sales volume ranges and also nominate their peers. In the Internet campaign, DataJoe consulted a variety of websites to build richer knowledge of individual licensed real estate agents across the county. DataJoe checked and confirmed that each published winner had, at the time of review, a current, active license status with the appropriate state regulatory board. If they were not able to find evidence of a real estate agentâ&#x20AC;&#x2122;s current, active registration with the state regulatory board, that real estate agent was excluded from the list. Finally, DataJoe presented the tallied results to Monmouth Health & Life for final review. We recognize that there are many good real estate agents who are not shown on the representative list. LAMB & PEARL BARLEY STEW WITH FRESH HERB GREMOLATA Yields 8-10 servings

INGREDIENTS

n1 2 oz. unsmoked (green) bacon n 4 lbs. gigot or rack chops from a shoulder of lamb, not less than 1 inch thick n well-seasoned all-purpose flour, for dusting n extra virgin olive oil n 12 oz. mushrooms, thinly sliced n 1 lb. 9 oz. whole small onions n 12 oz. carrots, peeled and thickly sliced n 5½ oz. parsnips, peeled and thickly sliced n scant 2¼ cups pearl barley n 3 qts. lamb or chicken stock n sprig of thyme n sea salt flakes and freshly ground black pepper FOR THE GREMOLATA: n 4 Tbs. chopped mixed herbs (such as flat-leaf parsley, chervil and mint) n 2 garlic cloves, finely chopped n 1 generous tsp. lemon zest, grated or finely chopped n sea salt flakes, to taste

DIRECTIONS

Preheat the oven to 350°F. First make the stew. Cut the rind off the bacon (if necessary) and cut into approximate ½-inch cubes. Divide the lamb into eight pieces and roll in the well-seasoned flour. Heat a little oil in a 10-inch/3-quart casserole dish over medium heat and sauté the bacon until crisp. Remove to a plate. Sauté the mushrooms, season well and set aside. Add the lamb to the casserole dish in batches, with a little more olive oil if necessary, and sauté until golden. Heat control is crucial here: The pan mustn’t burn, yet it must be hot enough to sauté the lamb. Remove the lamb to a plate. Add another splash of olive oil to the pan and sauté the onions, carrots and parsnips until golden. Return the bacon and lamb to the casserole dish, together with the pearl barley. Season well, pour in stock, add the thyme and bring to a simmer. Cover with a lid and transfer to the oven for 1-1¼ hours until meltingly tender; the cooking time will depend on the age of the lamb and how long it was sautéed for. Add the mushrooms about 30 minutes before the end. Meanwhile, make the gremolata. Mix together the chopped herbs and garlic in a small bowl, add the lemon zest and season to taste with a pinch of salt. Once the casserole is cooked, remove the thyme and season to taste. Leave the casserole to sit for 15-30 minutes to allow the pearl barley to swell. (If necessary, the casserole can be reheated later in the day or the next day.) Serve bubbling hot, sprinkled with the gremolata.

ROAST CAULIFLOWER WITH SAFFRON, BAY LEAVES & CRISPY CHICKEN Yields 4 servings

INGREDIENTS

n 4-8 organic, free-range chicken thighs or drumsticks, depending on the size n extra virgin olive oil n ½-1 tsp. rosemary, chopped n 2 pinches of saffron strands n 1 large or 2 small cauliflowers, leaves snapped off, broken into florets and stalk chopped roughly n 2 medium onions, finely sliced n 1 Tbs. Aleppo pepper or a good pinch of dried chili flakes n 3 bay leaves n 1/3 cup golden raisins, soaked in hot water to plump up n 1 /3 cup almonds, coarsely chopped n sea salt flakes and freshly ground black pepper n 2 Tbs. flat-leaf parsley, roughly chopped n 4 scallions, sliced on the diagonal

DIRECTIONS

Preheat the oven to 400°F. Slash the chicken drumsticks. Drizzle with a little extra virgin olive oil. Season with salt and pepper. Sprinkle with chopped rosemary, toss and arrange in a single-layer roasting pan. Roast for 30-45 minutes, depending on the size, while you prepare the cauliflower. Put the saffron into a small bowl, cover it with a few teaspoons of boiling water and leave it to steep. Put the cauliflower, onions, chili flakes and bay leaves into a bowl and season with salt and pepper. Once the saffron has steeped, add to the cauliflower mixture with the drained golden raisins and almonds. Transfer to the roasting pan and cover loosely with parchment paper to protect from burning. Bake for 20 minutes. Remove the parchment and roast for a further 10-15 minutes until the edges are nicely caramelized, the cauliflower is tender and the chicken is cooked. Move into a shallow serving dish. Sprinkle with the chopped parsley and scallions. Serve.

ANDALUSIAN SHELLFISH STEW Yields 6 servings

INGREDIENTS

n ½ tsp. saffron strands n 2½ cups chicken stock n Approximately 6 Tbs. extra virgin olive oil n 2 onions, chopped n 2 garlic cloves, crushed n 1 large red bell pepper, seeded and sliced n 1 large green bell pepper, seeded and sliced n 6-12 waxy potatoes, cut into 1-inch dice n 3¾ oz. piece of Serrano ham, cut into ½-inch dice n 14-oz. can of lima beans or cannellini beans n 4 lbs. cockles or mussels, or a mixture, scrubbed and washed really well n sea salt flakes and freshly ground pepper n 4-6 ripe tomatoes, peeled and very finely chopped n sprigs of flat-leaf parsley

DIRECTIONS

Put the saffron into a bowl and cover with 2-3 tablespoons of chicken stock. Set aside to infuse. Heat the olive oil in a 10-inch sauté pan over gentle heat and sweat the onions and garlic for 4-5 minutes until soft and slightly colored. Add the sliced peppers, season with salt and pepper and continue to cook over medium heat for 6-8 minutes until the peppers are beginning to soften. Add the diced potato, Serrano ham and lima beans and pour in the chicken stock and saffron-infused stock. Bring to a boil and season to taste. Reduce the heat and simmer for about 10 minutes until the potatoes are cooked. The stew can be prepared to this point ahead of time. Just before you are about to serve, return the pan to the heat and tip in the cockles or mussels. Cover with a lid. They will open in the heat. Cook for 2-4 minutes. Taste the sauce and season with salt and pepper. Serve in deep soup bowls, topped with finely chopped fresh tomato and parsley. Accompany with crusty sourdough bread to mop up the juices.

The Color Purple Move over orange. The ube, a nutty-tasting root vegetable from the Philippines, has hit the big time.

Wondering why you’re seeing so many purple desserts popping up all over Instagram? That would be thanks to the ube, a tuberous vegetable similar to a purple yam. The root veggie has been a staple in Filipino cuisine for decades, often boiled, mashed and then baked into desserts or bread. But the brightly-hued potato is now making its way stateside, where it’s prized both for its sweet, nutty, vanilla-like flavor and for its undeniable social media appeal. Pronounced “oo-beh” (though “oo-bae” is acceptable too), this distinctive tuber most closely resembles the standard sweet potato and, like its orange cousin, has a soft texture when cooked. But you may also confuse ube with taro, another lavender-skinned potato, despite the vast differences in the two spuds’ tastes and uses. The ube’s nuttiness makes it a godsend for adding flavor to desserts, and it grows from the ground, whereas taro has a more neutral flavor and grows on trees. (By the way, the taro is poisonous when eaten raw.) Besides being photogenic, the ube is nutritional and multi-purpose too, so it’s no wonder it’s become a majorly hot food commodity here in the United States. POWER UP Like its sweet-potato pal, the richly textured ube is considered the good kind of carbohydrate. One cup is just 140 calories and provides nearly 40 percent of the recommended daily value of vitamin C. But while the orange hue of sweet potatoes signals a rich carotenoid content, the ube’s amethyst color indicates the presence of anthocyanins, which help fight inflammation. The ube is also considered a prebiotic fiber, which means it aids in diges-

tion and helps maintain a healthy immune system, and it has been found to contain more antioxidants than any other sweet potato. (Antioxidants protect our cells from damage and help keep blood pressure at bay, for starters.) The ube is also a good choice for a post-workout snack, as it helps replenish the body with key minerals after exercise. Hmm—we’d say the Filipinos are onto something. BUY/STORE/SERVE Fresh ubes are certainly harder to come by in your average store than other types of taters, but check your local farmers’ market, Whole Foods and Asian specialty markets like H Mart to see if they have it in stock. If you’re lucky enough to get your hands on the whole veggies, you can steam or purée them or prepare them as you would any other potatoes—mash them, bake them, roast them or fry them. Ube also comes in powder form and in that way is added to cakes, cheesecakes and even pancake or waffle batter. Most commonly, though, it’s sold as a jam—referred to as ube halaya—and transformed into ice cream or spread onto donuts, flan, tarts, bread and other delicacies. Its largest claim to fame in the Philippines is in a yummy dessert called halo-halo, which contains shaved ice, evaporated milk, various fruits and other toppings over a scoop of ube ice cream. Happily, we New Jerseyans needn’t travel to the Pacific to enjoy this trendy and healthful violet varietal—and photograph it for the ’gram, of course—right here in the comfort of home. —Haley Longman

Bollywood Bistro Matawan eatery’s simplified menu captures all of India’s complex flavors.

Most of us have proclaimed Jersey is home to the best of the best pizzerias and bagel shops, but we might have to add Indian restaurants to that list. In Monmouth County alone, a number of wonderful establishments specializing in the South Asian cuisine have opened (or reopened) in the past 12 months. One of the newest, Bollywood Bistro in Matawan, made its debut shortly before eateries were forced to cease dine-in service because of the COVID-19 pandemic. Luckily, I squeezed in a visit prior to the restrictions. The restaurant and new management takes over the space formerly occupied by Amravathi, another Indian restaurant. Guests are greeted with updated décor and a beaming smile from owner Deep Kawatra. He explained to my dining companion and I that a new kitchen staff was brought in to cook up the offerings of the simplified menu. As we sat, we noted Kawatra taking numerous to-go orders via phone and walkin—clearly people already have discovered Bollywood. For us first-timers, we shared a double order of vegetable samosa to start. Each of the fried morsels was stuffed with as much onion, pea, potato and spice as the surrounding flaky pastry could hold. Though the bites were tasty, nothing set this dish apart from other samosas we’ve tried. Perhaps next time we’ll add a second appetizer like fish amritsari or tandoori paneer. The sentiment changed when our entrées arrived. My vegetarian friend ordered mater paneer, a popular dish from India’s northern region. Bollywood’s version scores high for presentation, with sizeable paneer cubes popping above the surface of a bright red tomato masala sauce. It earns equal grades for taste: Whether it’s spooned right out of the bowl, eaten with rice or sopped up with garlic naan (we ordered the bread for the table), this light-yet-filling dish is everything one would expect from a good Indian restaurant. For my main, I passed on familiar (and heavier) plates like kormas, tikka masalas and vindaloos and opted for chicken bihari kebab. The recipe is Kawatra’s own—one that he brought to a family gathering years ago and earned the highest praise. The chicken had a melt-inyour-mouth taste, marinated and grilled to perfection. Each piece picked up extra aroma and taste from the veggies that came with the kebab, but make no mistake—the meat doesn’t need the flavor boost. I just rewrote my list of “Best Things I Ever Ate.” To top off this dinner, we each enjoyed a mango lassi and decadent gulab jamun, the beloved milk-solid and rosewater “balls” that I always crave. After this dining experience, frankly, I have a craving for the entire menu.
