The shelter can be an especially lonely place for an older dog who’s once been in a home. Andy is a senior Pug, very sweet, but found as a neglected stray. His overgrown nails had grown into the pads causing lesions and infection. He’s all fixed up now, but wonders ... who will take him into their heart and home? Please call and ask about Andy, # 25188-NM.

Not everyone has a home for the holidays Brandy, a German Shorthaired Pointer mix, was found on the street in Newark, hit by a car. We rushed her to an emergency care center, and then brought her to our Tinton Falls shelter, where she completed her recuperation. Just over a year old, Brandy would like to live with someone who will cherish her, and make sure she is always safe ... the dream of each and every one of our orphans who hope to see you come visit. #24447-F

Handsome Max was surrendered to us when his owner ran into trouble with the law, and the timing was critical. Max was skin and bones, with numerous medical issues that had never been addressed - he needed us urgently. We’ve plumped him up, treated his deep ear infection, and undertaken a simple regimen for his hyperthyroidism. Max is one of the sweetest boys you could meet, and only 8-1/2 years young. He longs to know loving care forever ... might that be you? #11515-NM The holidays bring joy for many ... but not everyone. In our Tinton Falls shelter alone over 210 cats and dogs close their eyes every night and dream ... of a home where they will be snuggled daily, where they can breathe deeply and relax in the sun, where they know they will be safe. They dream of a real home of their own. Please make their dreams come true. Call 732-922-0100 or come visit. Or help support them until they find their dream.

GIVING THE BEST CARE

THESE DAYS, MOST OF US CAN’T NAVIGATE THE BUSY HOLIDAY season without a list. Whether it’s baking ingredients, gifts to purchase, or card recipients—we all rely on lists to ensure that our holidays are special. At Monmouth Medical Center (MMC), we have a very important list that drives the work of the entire team—24 hours a day, 365 days a year. It’s the list of key components of high-quality health care as defined by the Institute of Medicine. This list clearly details six domains of quality health care—safe, effective, patient-centered, timely, efficient and equitable. What’s not as well defined is how to achieve all aspects of every domain, all the time, with every patient, as a diverse care team. At MMC, we’ve long been committed to quality, so every day we collaborate, examine protocols, refine procedures and set up programs to ensure that we are providing the best care possible and that every member of the team is part of the process. As part of this effort, MMC was chosen as one of only 10 acute-care hospitals to participate in the New Jersey High Reliability Organization Collaborative, which will help us keep quality and safety at the forefront of everything we do. While we will never stop striving for more, I’m proud to say that in 2017, MMC earned recognition for our consistent effort to bring patients the very best care possible. • Recognized as a Top Teaching Hospital by The Leapfrog Group, which is widely acknowledged as one of the most competitive honors an American hospital can receive and underscoring the highest commitment to patient safety and quality. Among thousands of hospitals in the country, MMC and its sister hospitals, Jersey City Medical Center and Saint Barnabas Medical Center, are three of 36 Top Teaching Hospitals. • MMC is the only hospital in Monmouth and Ocean counties to receive an “A” Hospital Safety Score by The Leapfrog Group, the nation’s leading experts on patient safety, for six consecutive rating periods. MMC is also the only area hospital to fully meet Leapfrog safety standards in all areas of maternity care. •The Leon Hess Cancer Center at MMC attained American College of Surgeons—Commission on Cancer Accreditation with silver commendation and the Jacqueline M. Wilentz Comprehensive Breast Center received the Women’s Choice Award as One of America’s Best Breast Centers for the fourth year in a row. As a hospital and a system, the New Year is bright. Through our partnership with the Rutgers Cancer Institute of New Jersey, we’re providing access to the latest advances in cancer genomic analysis and cancer research. A partnership between RWJBarnabas Health and Rutgers University is creating the state’s largest academic health care system providing high-quality patient care, leading-edge research and world-class health and medical education. In July, MMC will change its academic affiliation to Rutgers New Jersey Medical School. We thank all of you who turn to us for your health care needs. To all of our readers, I offer best wishes for a joyful holiday season, and a healthy and rewarding New Year.

5 Tips For Financial Wellness W

ELCOME to the latest edition of Fiscal

Fitness! The holiday hustle and bustle is in the air as the stock market continues to climb. This is typically my busiest time of the year as clients are looking for ways to save on taxes, rebalance portfolios, get their estate plans in order and plan for the new-year. With so much going on in the news, it’s easy to get sidetracked.

Turn off the Noise As consumers, we are exposed to an abundance of news and bombarded with a barrage of investment choices and vehicles to invest in. Passive vs. Active investments, alternative strategies, indexed annuities and smart beta. What? It’s enough to make your head spin. The constant onslaught makes it difficult for people to digest and may prevent you from making any decision at all.

Take Some Chips off the Table I have been in the business long enough to know that when times are good, we tend to become overly optimistic. As of 11/17, the S&P 500 had gone 33 straight days without a 0.5% drop, the longest streak since 1995.1 This combination of a strong bull market with historically low volatility is surprising, to say the least. I am not suggesting that is a reason to sell, but is it prudent to assess whether you are taking on more risk than needed? Now may be the time to rebalance your portfolio, making sure you it’s in line with your longterm goals and tolerance for risk.

Establish Your Safety Net Most financial experts suggest keeping at least 3 to 6 months of your fixed expenses readily available, such as in a savings or money market account.

Have you also included co-pays, deductibles for health insurance and car insurance in those figures? As tempting as it is to invest your emergency money, how would you feel if your portfolio declined by 15%? Now imagine that in actual dollars.

Dollar Cost Average If you are uncertain about the markets, dollar cost averaging1 is a well know investment strategy designed to help reduce volatility by buying fixed dollar amounts at regular intervals, regardless of which way the market is headed. It’s easy to understand, eliminates timing difficulties and removes emotions from the decision-making process.2

Why Financial Planning Now? The financial world has become a very complex place. As the market heads higher, tax reform is on the way, and interest rates are still at historical lows, perhaps now is the time to schedule a financial check-up. Even if you are used to handling your own financial affairs, collaborating with an experienced CFP® professional who can review your financial health may be just what the doctor ordered. Together we can make it happen.

LATE-NIGHT DINERS

New Jersey is known for its diners (who doesn’t love creamy milkshakes and crispy fries?), but how are you supposed to quell those late-night cravings if your favorite spot closes early? Fortunately, the Monmouth area boasts plenty of diners that are open well past midnight. All Seasons Eatontown 176 Wyckoff Rd. The Rockefeller tree tradition began in 1933 and is as popular as ever—an estimated 125 million people visit it every year. This year’s tree is a 12-ton Norway spruce from State College, Penn. It is decorated with approximately 50,000 LED lights and topped with a large Swarovski crystal star.

YOGA FOR PMS RELIEF

Say “om,” and kiss monthly cramps goodbye. Regular yoga helps lessen the intensity of pain and makes you more relaxed during your period. Experts aren’t sure why, but the deep breathing and meditation aspect of the discipline is thought to have a positive effect on the autonomic stress response.

THE FIBERKNEE LINK

Folks who eat a high-fiber diet have a lower incidence of knee arthritis, according to two recent studies of more than 6,000 subjects. While there is no direct link between high-fiber diets and knee health, researchers posit that the benefits are related to weight and inflammation control.

2018 TRENDS

The willingness to make anti-aging changes inside and out BEGINNINGS AESTHETIC & WELLNESS can help you achieve a more beautiful you, inside and out. Dr. Thomas Theocharides (Dr. T.) (of Beginnings Aesthetic & Wellness) is always at the forefront of groundbreaking non-surgical cosmetic procedures and technology. and he also guides patients on all levels of well-being from proper nutrition to spirituality because he believes genuine health starts inside. “We encourage and instruct patients to be open to making changes on the inside, too,” he says. Dr. T. further explains that it’s not just what you put into your body that affects how you look and feel, but your behavior and mental focus can dramatically affect your happiness and contentment which can impact your short- and long-term health. Daily actions as well as food choices impact your levels of dopamine and serotonin, critical neurotransmitters that impact our experiences of happiness and joy. Indulging in something temporarily pleasurable may deliver a temporary state of happiness, but long-term contentment and joy is another matter, says Dr. T. By promoting elevated serotonin levels along with anti-aging treatments we can foster true and lasting beauty, inside and out! Beginnings Aesthetic & Wellness was among the first to introduce ThermiVa®, a non-surgical procedure improving sexual satisfaction, bladder control and vaginal dryness, all with no down time. Dr. Theocharides explains that dark under-eye circles are often shadows from volume loss in your cheeks. “A youthful face has fullness; restoring this can take you back ten years without surgery. With longer-lasting fillers like Sculptra® and Bellafill®, the benefits can last for years.”

Thomas Theocharides, m.d. Dr. Theocharides is a highly accomplished cosmetic surgeon and board-certified obstetrician and gynecologist who has had international training in aesthetics. Dental artistry now means making teeth look naturally beautiful HAVE YOU EVER HAD dental work done and while it functioned well and looked pretty good, it lacked the character and real appearance that natural teeth possess? New advances in materials such as pressed ceramics have opened the door to naturally beautiful crowns especially in the front where the smile is most visible. Previously, the only option for crowns and bridges was a porcelain fused to metal material which was durable but not aesthetically pleasing to the eye. Often a dark line appeared around the edge of the crown where the gum tissue had receded allowing the metal core to become visible. The new pressed ceramic crowns are also durable but have a translucency that mimics human enamel and looks realistic and lifelike. Who wouldn’t want that for their own smile if given the option? Similarly, removable prosthetics have new advances in the selection of denture teeth, as well. Older versions were generally one solid color which left very little doubt that they were “fake.” Today, by using polychromatic multilayered (lifelike) composite denture teeth, it can be virtually impossible to know they’re not really yours. We can select a shade and shape with characteristic markings to get that naturally beautiful smile. Our real world affordable solutions will incorporate the best of all available materials to provide patients with peace of mind. Get in on the trend in cosmetic dentistry to look fabulous now. Call Dr. Zaidi and Chapel Hill Dental Arts for a consultation to see how you can benefit from these new materials.

Asim R. Zaidi, d.m.d., owner Chapel Hill Dental Arts is dedicated to improving the confidence, smile and well-being of every patient. Dr. Zaidi started his full service practice 20 years ago. He is a member of the ADA, AACD and currently serves on the NJ Board of the AGD. Dr. Zaidi has received extensive training in the All on 4 Surgical and Restorative Technique, attended the Spear Training Institute for continuing education and has been recognized as high level Gold Provider for Straumann Implants. Besides cosmetic and implant care, Dr. Zaidi’s office provides a complete array of general and specialty dentistry to address all your dental needs. A potent way to discover your beauty from the inside out IF YOU’RE A DEDICATED green tea drinker or you’re thinking about taking up a healthy green tea habit, read this first. There’s a more potent way to use green tea that originated in Japan, but has recently found its footing here in the West. Eden Spa and Salon’s world-class team of hair and makeup artists and beauty specialists know how to bring out your inner glow, and they want to make clients aware of the extreme inner and outer body benefits of matcha green tea. Matcha is the powdered form of the whole green tea leaf, making it more concentrated than steeped tea leaves, and Janet Redmond, Eden Spa and Salon’s lead esthetician knows first-hand how beneficial matcha can be for health. Matcha has ten times more nutritional value than regular green tea, she explains. “One cup of matcha offers as much antioxidants as ten cups of regular green tea, for example.” Janet teaches Eden’s clients the range in which matcha powder can be used for skin care. Matcha soothes inflamed, itchy, sensitive skin while it also detoxes and cleanses congested, acned skin, as well. She personally uses a matcha toner combining the powder, water and essential oil to create a spray to cleanse and freshen the skin and a matcha paste for facial and under-eye puffiness. Eden Spa and Salon is currently developing skin treatments with matcha, including scrubs and massages paired with coconut oil as a healthful addition to its vast array of beauty services.

Janet Redmond, lead esthetician With over 70 years of combined spa and salon ownership experience, the team at Eden Spa and Salon provides a unique and inviting environment with an extraordinary staff that believes in superior hospitality. Our commitment to a fantastic guest experience drives us in all aspects of the business. Eden Spa and Salon, a Paul Mitchell® Focus Salon, is owned by Barbara Glass and Hans Max Rietbergen, both with extensive backgrounds in salon ownership, Onita Luisi, one of the few American Board Certified Hair Colorists, curly hair specialist and professional educator with John Paul Mitchell Systems and Michael Glass, Mark Fatka and Lynn Fatka who all keep the salon’s daily operations moving smoothly along. IF YOU’VE EVER BEAT YOURSELF up for quitting a hardcore competition or exercise routine, you’re not alone. But the pendulum is swinging towards a more reasonable and balanced approach to long-term health and fitness. That’s why Aaron Ellis opened Live Life Moving, a fitness and wellness studio replacing quick-fix trends with a customized approach that lets you create programs that fit your lifestyle. “Fitness marketing and social media makes change look easy, but for most of us, it’s not.” says Ellis. “I listen to understand your unique strengths and barriers, helping you overcome your struggles to make a change.” LLM helps you move towards fitness at your own pace, starting with a comprehensive coaching session to understand your goals in the areas of fitness, nutrition and well-being. A new, gentle and highly effective training tool for pets IF YOU’VE EVER OWNED A DOG, you know it can be tough to teach obedience or deescalate rough play on the spot. Dick Palazzo, owner of Purr’n Pooch Pet Resorts, found the solution. After nearly 50 years of dog training experience, Dick was inspired to create the Purr’n Pooch Pet Shield while watching dogs interact during social play. The Pet Shield is a gentle command tool for home and professional venues, including shelters, kennels and even for police and fire departments. The soft design of the lightweight shield helps you to safely protect, separate and direct pets. “Since we’ve started using the Pet Shield, we’ve seen a significant decline in pets jumping up and injury. It’s also a wonderful addition to families with young children to help control and teach correct behavior,” says Dick. Though the shield is primarily used for dog training, cats and other animals respond to it just as well.

MAKING THE GRADE MONMOUTH MEDICAL CENTER EARNS TOP TEACHING HOSPITAL HONOR FROM THE LEAPFROG GROUP. MONMOUTH MEDICAL CENTER (MMC) HAS been recognized as a Top Teaching Hospital in 2017 by The Leapfrog Group. Widely acknowledged as one of the most competitive honors an American hospital can receive, the recognition underscores an academic medical center’s commitment to patient safety and quality. Among thousands of hospitals in the country, MMC and its sister hospitals Jersey City Medical Center and Saint Barnabas Medical Center are three of just 36 Top Teaching Hospitals recognized nationally and are among only nine hospitals recognized in New Jersey. Performance across many areas of hospital care is considered in establishing the qualifications for the award, including infection rates, maternity care and the hospital’s capacity to prevent medication errors. The rigorous standards are defined in each year’s Top Hospital Methodology. “This tremendous achievement is a testa-

ment to the dedication of our highly skilled physicians, nurses and care teams and their commitment to providing the highest quality patient-centered care in the safest environment,” says Bill Arnold, president and CEO of MMC. “Monmouth Medical Center’s reputation as a university-level medical center attracts the best physicians to our Medical staff. And our resident physicians and medical students are an integral part of this collaborative approach to safety and quality.” “We are proud to recognize three RWJBarnabas Health facilities as 2017 Leapfrog Top Hospitals. This demonstrates extraordinary dedication to patients and the local community. The entire staff and board deserve praise for putting quality first and achieving results,” says Leah Binder, president and CEO of Leapfrog, a national nonprofit organization founded in 2000 by large employers and other purchasers. The Leapfrog Group is driving a movement for

giant leaps forward in the quality and safety of American health care. To qualify for the Top Hospitals distinction, hospitals must submit a Leapfrog Hospital Survey. The selection of Top Hospitals 2017 is based on surveys from nearly 1,900 hospitals. Monmouth Medical Center also is the only hospital in Monmouth and Ocean counties to receive an “A” Hospital Safety Score by The Leapfrog Group, an independent national nonprofit organization of employer purchasers of health care and the nation’s leading experts on patient safety, for six consecutive rating periods. The “A” score was awarded in the latest update to the Hospital Safety ScoreSM, which are assigned to U.S. hospitals every six months based on preventable medical errors, injuries accidents and infections. Monmouth was also the only area hospital to fully meet Leapfrog safety standards in all areas of maternity care.

CELEBRATING LIFE

DINNER AND FASHION SHOW RAISES MORE THAN $50K FOR MONMOUTH’S CANCER SUPPORT COMMUNITY.

THE CANCER SUPPORT COMMUNITY (CSC) AT MONMOUTH Medical Center (MMC) hosted its Celebration of Life Dinner and Fashion Show. The event raised more than $50,000 for CSC programming and featured fashions modeled by cancer survivors, on Nov. 2 at the Ocean Place Resort and Spa in Long Branch. Frank J. Vozos, M.D., FACS, chief executive for Monmouth Medical Center, Southern Campus (MMCSC) and executive vice president for RWJBarnabas Health, introduced the honoree for the 10th annual Celebration of Life, Ilene Winters, a longtime advocate for cancer patients, survivors, their families and friends in Monmouth and Ocean counties. Dr. Vozos recognized Ilene’s dedication to helping MMC and MMCSC expand their mission and vision to serve these individuals. “When she approached me three years ago and asked me to

consider taking on her Cancer Support Community affiliate as a hospital-based program, I never could have imagined what it would grow into,” says Dr. Vozos. “Today, we offer more than 60 free programs a month and we’re serving more than 7,000 individuals affected by cancer annually between both campuses.” MMC has partnered with CSC to carry on CSC’s mission to ensure that all people impacted by cancer are empowered by knowledge, strengthened by action and sustained by community. This international non-profit group offers a menu of personalized services centered around support groups, cancer education, nutrition and healthy cooking, exercise and movement, meditation and relaxation and social activities. These support services are available through a network of professionally led communitybased centers and hospitals, including MMC’s main campus in Long Branch and its southern campus in Lakewood.

SANTA’S LITTLE HELPERS

MOTORCYCLISTS JOIN ST. NICK TO DELIVER GIFTS TO PEDIATRIC PATIENTS DURING ANNUAL TOY RUN. SANTA FOUND A FEW EXTRA HELPERS FOR THE HOLIDAYS TO USHER IN the season of giving, as motorcycle riders from around the region participated in the fifth Annual Toy Run, sponsored by the Blue Knights, New Jersey Chapter XV (BKNJXV), and the Harley Davidson JS-HOG. Riders and volunteers delivered funds and other gifts to brighten the holidays for patients at The Unterberg Children’s Hospital at Monmouth Medical Center, as well as the Madonna House in Neptune. The motorcyclists accompanied Santa and his elves, traveling from Atlantic Highlands to Long Branch to deliver hundreds of gifts to the hospital for distribution to pediatric patients during the holiday season. The BKNJXV first organized this event in 2013, with just a few riders participating. This year, they partnered with the Harley Davidson JS-HOG to bring together the largest toy run to date: The Nov. 12 event featured more than 300 riders. Each rider’s $10 donation was directed to the Comprehensive Cystic Fibrosis Center at The Unterberg Children’s Hospital. A total of $1,000 was donated to the center and presented to Margaret Fisher, M.D., medical director of The Unterberg Children’s Hospital and chair of pediatrics at Monmouth Medical Center. At the center, a multidisciplinary team of clinicians provide patient care while offering clinical trials of the newest therapies for cystic fibrosis.

From top: Front and center is Margaret Fisher, M.D., medical director of The Unterberg Children’s Hospital and chair of pediatrics at Monmouth Medical Center; 17-yearold Maddie Somers of Monmouth Beach is pictured with former NFL player Rasheed Simmons, whose restaurant Simply Southern in Belmar held a fund-raising event and served as a drop-off location for the toy drive; Dr. Fisher also is pictured with Robert Zanni, M.D., chief of pediatric pulmonology at Monmouth, and Meagan Enriquez, mother of 14-year-old Cystic Fibrosis Center patient Chloe.

STAFF PICKS Stephen Vitarbo, art director: Taft boots. This small Brooklynbased company searched for the best shoe factories in the world and found them in Spain. The craftsmanship and quality of these boots are second to none. You can only get them online (no retail markup), which means you get beautiful shoes at beautiful prices. Rita Guarna, editor-in-chief: I love Workman Publishing’s Gallery desk calendars. The photography is beautiful so it’s like having an art book on your desk. They’re per fect gifts for coworkers or as part of a theme gift. I’ll be giving me “Italy,” so I can daydream about going back there.

MAKE A WISH

WE DIDN’T SIT ON SANTA’S LAP, BUT MONMOUTH HEALTH & LIFE STAFF MEMBERS STILL HAVE HOLIDAY LISTS. OUR TEAM ANSWERED THE QUESTION: WHAT GIFTS ARE YOU LOOKING FORWARD TO GIVING OR RECEIVING THIS SEASON? WHAT ARE YOU PINING FOR THIS HOLIDAY—A CHIC NEW SWEATER OR NECKTIE? Perhaps the latest iPhone or gaming system? In the spirit of giving, we share what we hope to find under the tree—because sometimes the gifts that one wants are oftentimes the very best ones to give others.

Darius Amos, associate editor: A Tateossian bracelet is something nice that any guy can use almost daily. I wear a watch every day, so a double wrap leather bracelet on the other wrist would offer balance and complement the look. It’s very understated but high quality—and it would go well with most casual or formal outfits.

Yvonne Marki, art assistant: I’ve always wanted a Fuji Instax or a Polaroid OneStep camera. Anyone can take pictures with their phone, but these cameras create instant memories in a fun format that can be shared or framed instantly.

Alena Woods, editorial assistant: The Plum & Bow Cat Pillow is a gift I might actually ask for and get for my sister, who just moved to Virginia. We both have our own spaces to decorate after graduating from college, and she and I are notorious cat lovers. What’s cuter than a painted cat pillow for your bedroom? Functional and a sweet, homey touch.

From a dining room table topped with seasonal candles to a staircase adorned with playful children’s stockings, the options abound when creating your own holiday spectacular!

FESTIVE HANGING COOKIES Yields: 40 cookies INGREDIENTS n 1 batch of light gingerbread dough (see this page) n 1 batch of Royal Icing (see page 53) FOR THE LIGHT GINGERBREAD DOUGH n ½ cup light molasses, golden syrup or honey n 1 cup light brown sugar n 14 Tbs. unsalted butter n zest of one lemon n 4 tsp. ground ginger n 2 tsp. ground cinnamon n ½ tsp. ground nutmeg n ¼ tsp. ground cloves n 1 tsp. baking soda n 4 cups all-purpose flour n 1 tsp. salt n 1 lightly-beaten egg EQUIPMENT n Christmas cookie cutters n string or ribbon

DIRECTIONS FOR THE LIGHT GINGERBREAD DOUGH Pour the light molasses into a large saucepan with the sugar, butter, zest, and spices and melt over low/medium heat, stirring frequently until the sugar has dissolved. Bring the mixture to boil. Remove from the heat and beat in the baking soda. The mixture will froth up at this point as the baking soda reacts—mix briefly until combined, then let cool for 15 minutes. Sift the flour and salt, then fold into the mixture in batches. Beat in the egg until just combined. Do not overwork the mixture, or the cookies will spread during baking. The dough will be very sticky to begin with, but do not add any flour. Scrape out of the bowl onto a clean surface and knead together until just smooth. Wrap in plastic wrap and chill in the fridge for 1 hour. FOR THE COOKIES Preheat the oven to 350°F. Line 2 large baking sheets with parchment paper. Cut a large piece of parchment paper and roll out the gingerbread on top of it to ¼ inch. Using any Christmas-themed cutters, cut out pieces of dough and use a palette knife to transfer them to the lined baking sheets. Leave space for them to spread a little. Using a straw, press one end into each of the cookies where you would like to thread a ribbon to hang, twist the straw, and pull away to remove a circle of dough. Place in the freezer for 5 minutes until hard—this second chill helps them to hold their shape and pattern better while baking. Bake in the oven in batches for 6 to 10 minutes depending on size, until golden brown at the edges. Let cool, then transfer to wire racks to cool completely. Add a little water to the royal icing until you reach soft peak consistency. Spoon the icing into a piping bag fitted with a fine nozzle. Decorate the cookies with dots, lines and swirls, then add the sprinkles. Let cool completely for 4 hours before tying with ribbon and hanging.

GLASS-PRESSED SANDWICH COOKIES Yields: 20 sandwich cookies INGREDIENTS n 1 batch light gingerbread dough (see page 49)

DIRECTIONS Preheat the oven to 325°F. Line two large baking sheets with parchment paper.

FOR THE BUTTER FROSTING n 14 Tbs. unsalted butter, softened n 4 cups confectioners’ sugar, sifted n 1 tsp. vanilla extract n pinch of salt

Cut a large piece of parchment paper and roll out the gingerbread on top of it to ¼ inch. Now select from your drinking glasses the ones that have the most beautiful patterns on their bases. Press one at a time into the dough firmly enough to leave an imprint but not so hard that you squash the whole cookie!

EQUIPMENT n assorted drinking glasses with embossed bases n round cookie cutters of various sizes

Then use a round cookie cutter approximately 3 inches in diameter to cut around the imprinted patterns. Use a range of sizes to make your collection of cookies look more eclectic. Use a palette knife to transfer the cookies onto the lined baking sheets. Leave space for them to spread a little. Place in the freezer for 5 minutes until hard. Bake in the oven in batches for 8 to 10 minutes until golden brown at the edges. Let cool for 5 minutes on the pans, then carefully transfer with a palette knife to wire racks to cool completely. Beat the butter, confectioners’ sugar, vanilla and salt together with a handheld mixer until light and fluffy. Pipe or spread the butter frosting onto the bases of half the cookies and sandwich together with the remaining cookies.

RUSSIAN DOLLS Yields: 45 cookies INGREDIENTS n 1 batch of light gingerbread dough (see page 49) n 1 batch of Royal Icing (see below) FOR THE ROYAL ICING n 2 cups confectioners’ sugar n 1 lightly beaten egg white n ½ tsp. lemon juice n 1 tsp. water DIRECTIONS FOR THE ROYAL ICING Sift the sugar into the bowl of an electric mixer. Add the beaten egg white and lemon juice. Whisk on low speed, so you do not incorporate too much air into the icing, for 2 to 3 minutes until you have a smooth, but not wet, stiff peak consistency. It should be dense and spreadable but hold a stiff peak. If it looks dry and crumbly, add a little water. Transfer to a bowl and cover with a damp cloth to prevent it from drying out. The icing can be prepared ahead and stored in an airtight container in the fridge for up to 1 week.

DIRECTIONS FOR THE COOKIES Preheat the oven to 325°F. Line two large baking sheets with parchment paper. Cut a large piece of parchment paper and roll out the gingerbread on top of it to ¼ inch. Using Russian doll cutters, cut out pieces of dough and use a palette knife to transfer them to the lined baking sheets. Bake in the oven in batches for 6 to 10 minutes depending on size, until golden brown at the edges. Let cool for 5 minutes on the pans, then transfer to wire racks to cool completely. Add a little water to the royal icing until you reach soft peak consistency. Transfer ¼ cup to a small bowl, then cover the large bowl with a damp cloth and set aside. Add a little peach coloring to the icing and pipe small round circles for the doll faces. Add a little extra water to the remaining peach icing to make flood icing—a thick but runny consistency. Spoon into the circles to fill the faces. Transfer 2 Tbs. of the remaining white icing to a separate bowl, cover with a damp cloth and set aside. Add a little red food coloring to the large bowl of icing until you have a punchy red. With a fine nozzle, pipe a smooth red outline around the cookies. Add a little more water to the red icing to make flood icing, then use it to carefully fill the centers. Keep any remaining icing covered with a damp cloth. Let set completely for 4 hours or overnight. Using a paintbrush and the reserved white icing, paint decorative patterns on the dolls’ bodies and around the faces. Paint little red lips on the faces and tiny dots for nostrils. Use a drop of black coloring to paint eyes and eyelashes. Leave one final time to set for 2 hours.

POWER FOOD

STALK OF THE TOWN DON’T SELL CELERY SHORT— SAVVY FOLKS ARE REDISCOVERING THIS LEAN, GREEN NUTRITION MACHINE. ISN’T IT ALWAYS THE ONE YOU LEAST SUSPECT THAT IS REVEALED AS

a “wow”? Unsung celery, the oft-overlooked cruncher on the crudité platter or the untouched garnish in a Bloody Mary, turns out to have a celebrated past. In the 1800s, the low-calorie vegetable was regarded as a high-class treat, put on display in many wealthy homes in artistically designed glassware called celery vases. And those Victorians were onto something: When it comes to health benefits, this is a super stalk. POWER UP There’s a reason celery is a dieter’s dream food. One cup (100 grams) of raw chopped celery is fat-free and has only 16 calories. It’s also a bloat buster—thanks to its high water content, it works as a diuretic—and because it’s loaded with fiber (1.6 grams per cup), it aids digestion. For more long-term effects, celery is beneficial for blood health, with 29 micrograms of vitamin K (about 25 percent of the daily amount recommended for men; 33 percent for women, according to the National Institutes of Health), and contains nine percent of the daily recommended value of vitamin A, which aids vision and boosts immune function. It may help prevent certain diseases too. Celery is a significant source of lutein, the consumption of which Harvard University researchers found may decrease risk for agerelated macular degeneration. And a study published in the American Journal of Clinical Nutrition found that eating luteinrich foods, including celery, spinach, broccoli and other fruits and vegetables, may reduce the risk of colorectal cancer. Celery also contains a compound called apigenin, which has been shown to reduce inflammation and, according to research published in 2011 in Cancer Prevention Research, may delay the growth of tumor cells in women at risk for breast cancer. Finally, a 2013 study in Natural Medicine Journal linked celery seed extract to lowered blood pressure in people with mild to moderate hypertension. BUY/STORE/SERVE When buying celery, look for stalks that are crisp and leaves that are green, not browned or yellowed. Suggestions abound for how to maintain this veggie’s crispness while storing—a website called Tipbusters put multiple methods to the test and found that refrigerating celery wrapped in paper towels in a plastic bag yielded the best results over several weeks.

54

Celery is often served as a vessel for dips and spreads or to add texture to soups, stews and salads. But also consider trying recipes that highlight its subtly sweet flavor, such as cream of celery soup or celery au gratin. Served raw, it goes well with the licorice-like taste of fennel (tip: some chefs recommend shaving off the outer layer of celery with a vegetable peeler to make it less fibrous). And don’t overlook the leaves. Often discarded, they can be used as an herb, like parsley, to add freshness to a dish or in salads. Martha Stewart even recommends freezing the leaves in ice cubes to use in cocktails or water. DID YOU KNOW? There’s a celery museum in Portage, Mich., called the Celery Flats Interpretive Center; it features information and exhibits about the history of celery, how it’s grown and more. —Liz Donovan
