A SEASON TO SHINE LIKE CLOCKWORK, THE end-of-the-year festivities have again quickly snuck up on us. Think about how many times in your life you’ve thought (or maybe even exclaimed aloud), “I can’t believe the holidays are here already!” In the past, I usually followed the sentiment by frantically drafting lists: people to see, gifts to buy, cards to write, food to cook, decorations to hang. But the story’s different today: Instead of feeling the stress and pressure of December, I’m immediately filled with excitement. In putting together this year’s Holiday Issue, our hopes were to not only fill you with a festive spirit but also give you ideas that might relieve some of your early winter worries. Let’s say, for example, you’re hosting a get-together and want to fill your home with holiday joy. If over-the-top decor isn’t your cup of tea, turn to “A Simple Holiday” on page 38, where four Monmouth County-based designers offer decorating advice that, when followed, proves less really can be more. Hunting for the best gifts to slide under the tree or stuff a stocking is always a challenge, but this issue is packed with dozens of ideas to make everyone happy. The chef in your life, for instance, will love one (or more) of the hot kitchen gadgets featured in “Cook Up A Storm” on page 24. Meanwhile, you’ll likely check off some names on your gift list after you see the bags in “Round & Round” (page 20) and bracelets in “Cuff ’Em” (page 22). CYNTHIA BARONE, D.O., regional medical director of breast imaging for Monmouth Medical Center (MMC), Monmouth Medical Center Southern Campus (MMCSC) and Community Medical Center, shares what’s new at MMC and why Jacqueline M. Wilentz Comprehensive Breast Center is your “one-stop shop” for breast cancer care. The Jacqueline M. Wilentz Comprehensive Breast Center achieved the highest certification level offered by the National Quality Measures for Breast Centers (NQMBC). What makes the center so worthy of this certification? CYNTHIA BARONE, D.O. This certification measures quality of care that a patient receives from a breast center regarding every aspect of management from diagnostic imaging to breast biopsy to surgery following a cancer diagnosis. Everyone at the breast center who is involved in patient treatment strives for excellence in the caring of the breast cancer patient.

What do you love about MMC’s breast center? The team approach and cohesiveness of the staff are fantastic at streamlining the process for the patient from beginning to end. This includes support staff, coordinators, technologists, nurse navigators and highly specialized breast imaging physicians. Everyone is here for the benefit of the best outcome for the patient. Personalized, inclusive high quality care is delivered, which is a hard quality to find. Why should patients choose a comprehensive breast center like MMC’s over one that does only breast imaging? Many “breast centers” do not have the ability to perform all aspects of breast related care. A mammogram may indicate further evaluation is needed—perhaps with biopsy or MRI, but the facility may not have this capability. This means that the patient may be recommended to
another facility with little guidance as to what the next steps may entail. I believe it is better to be at a comprehensive breast center where there are nurse navigators and coordinators to guide the patient during what may be a very difficult time in their life. Our surgical coordinators help the patients schedule follow-up appointments with one of our breast surgeons if further surgery is necessary following biopsy. We have a weekly multidisciplinary conference where the best care of the patient is decided amongst our team of imagers, surgeons, oncologists and radiation oncologists. It’s comparable to getting multiple second opinions regarding the patient’s best clinical management. We also have wonderful genetic counselors should that be needed. We have always had state-of-the-art, dedicated breast imaging equipment. At MMC, we were the first in the region to be able to offfer tomosynthesis to our patients. What can you tell us about the expanded Lakewood center? Lakewood has implemented tomosynthesis (also called 3-D mammography), which is a mammogram machine that takes slices of the breast, making multiple images depending on the size of the breast. We’re able to look through the breast like we would look through a book or deck of cards. By slicing through the breast, tomosynthesis helps eliminate superimposed breast tissue that could be hiding an abnormality. In mid-November, we began breast biopsy services at the Lakewood Wilentz Center. The Lakewood location always has offered screening mammograms, diagnostic mammograms and ultrasound. In addition, we also offer other services such as whole breast screening ultrasound and breast MRI. What new programs and initiatives are in the works for 2019 and beyond? We are going to be adding tomosynthesis to our Colts Neck satellite and expanding the number of tomosynthesis machines that we have at MMC. We are hoping to implement a software called Volpara, which standardizes measurement of breast density. This will be beneficial to dense breast patients who may benefit from supplemental screening, such as whole breast ultrasound or breast MRI. We also are researching a wireless breast surgical localization device called Magseed. This is a radiofrequency clip that eliminates the use of a surgical wire placed on the day of the procedure and makes the surgery more convenient for both the patient and the surgeon.

THE COMMUNITY AT HEART THE NEW EATONTOWN FACILITY PROVIDES CONVENIENT ACCESS TO MONMOUTH MEDICAL CENTER’S EXPERT CARDIOLOGISTS. IF YOUR HEART DOESN’T WORK WELL, the rest of your body can’t either. Whether a person has a life-changing heart attack, a congenital defect or a progressive condition, such as congestive heart failure, the best care can make a dramatic difference in survival and quality of life. That’s why Monmouth Medical Center (MMC) created a new cardiac care facility in the landmark Pinnacle Building in Eatontown. The new location for Barnabas Health Medical Group’s (BHMG) cardiology practice, Monmouth Heart Specialists, opened in October and offers the community convenient access to personalized, high-quality care in a state-ofthe-art, dedicated outpatient center. The new facility is easily accessible from three major highways—the Garden State Parkway, Route 35 and Route 18—making it highly convenient for patients from all over Monmouth County. “It’s a cardiology hub,” says BHMG interventional cardiologist Isaac Tawfik, M.D., chief of cardiology at Monmouth Medical Center. “We have all outpatient cardiology services available—including sonography, echocardiography, nuclear medicine and arrhythmia monitoring by telemetry.” The cardiology center is furnished with new equipment, including the most recent Philips 3D scanning technology and the “fastest nuclear scanner on the market,” according to Dr. Tawfik, who adds that the facility is spacious with an easy-to-navigate layout and comfortable examination rooms. “The waiting room is fresh and attractive,” says Dr. Tawfik, “but we want patients to go back to the exam room within minutes of arriving. Our goal is to respect their time and focus on their needs.” During an October 24 dedication ceremony for the new center, Monmouth Medical Center President and CEO Bill Arnold said the hospital took into consideration that it wanted to be a center of excellence in cardiology and built this site from the ground up to ensure that the group can provide the best, all-inclusive heart care.

Here, we can do everything in-house.” The group that has come together as Monmouth Heart Specialists is led by Dr. Tawfik and offers board certification in cardiology, interventional cardiology, echocardiography, nuclear medicine, cardiac CT and vascular medicine. Each member is a dedicated specialist in his or her field. ANNUAL TOY RUN BRINGS JOY TO THE PATIENTS AT THE UNTERBERG CHILDREN’S HOSPITAL AT MONMOUTH MEDICAL CENTER. THANKS TO SANTA’S LITTLE HELPERS, THE HOLIDAYS got a little brighter for patients at The Unterberg Children’s Hospital at Monmouth Medical Center. Nearly 200 motorcycle riders participated in the ninth annual toy run on Nov. 18, delivering hundreds of toys and gifts to the hospital for distribution to pediatric patients. It was the second of two annual motorcycle rides that the Blue Knights, New Jersey Chapter XV, make to Monmouth Medical Center. The first trip, “Christmas in June,” took place this summer. Each rider’s $10 donation benefited The Comprehensive Cystic Fibrosis Center at The Unterberg Children’s
Hospital, which offers the highest level of pediatric services for newborns to adolescents, including cutting-edge treatment, specialized expertise and an unsurpassed dedication to medical excellence in 32 pediatric subspecialty areas. The November ride began in Wall at Creative Performance Motorcycle Repair Shop and is organized by shop owner Bill Blakely. When the motorcyclists arrived at the hospital, they met in the lobby for live music, hot chocolate and a presentation from a representative of Children’s Hospital’s Cystic Fibrosis Center about the impact of the group’s donation on kids living with cystic fibrosis this holiday season.

REAL RAGU WITH TAGLIATELLE Yields: 4 servings INGREDIENTS FOR THE RAGU SAUCE n 2 Tbs. olive oil n 3½ Tbs. unsalted butter n 7 oz. smoked pancetta, finely
chopped 1 onion, finely chopped 2 carrots, finely chopped 2 celery stalks, finely chopped 3 Tbs. tomato paste 1 Tbs. pumpkin pie spice 2 cups plus 2 Tbs. red wine 2 cups plus 2 Tbs. milk 2 dried bay leaves 2 rosemary sprigs fine sea salt and coarsely ground black pepper n 2¼ lbs. beef brisket, cut into ½ inch dice n n n n n n n n n n
DIRECTIONS In a large pot, heat the oil and butter over medium flame. When the butter has melted, add the pancetta and cook, stirring occasionally, until the fat renders down and the pancetta is only just slightly crispy. Add the onion, carrots and celery; stir to coat in all the fat; then cook very slowly, stirring every so often, until soft, a good 20 minutes at the very least. Once the vegetables are soft, increase the heat to high and stir in the tomato paste and spice for a minute or two. Add the wine, milk and herbs. Add the chopped brisket and bring to a boil, then reduce to a very low simmer and cook, partially covered with a lid, for 3 hours. Give the pan a stir every so often to ensure the bottom isn’t catching. When the ragu is ready—it will be thick and the meat will be oh-so-tender—season to taste. Cook the pasta according to the package directions, but ensure the water is very well salted. Reserve a generous ¹⁄³ cup of the pasta cooking water, then drain the pasta. Add the pasta to the ragu pan along with the reserved pasta water, the olive oil and parsley. Stir well to mix. Sprinkle Parmesan on top and serve.

DIRECTIONS Cook the pasta according to the package directions, but make sure you do so in very salty water. Once the pasta is cooked, drain it, reserving about 3½ Tbs. or so of the cooking water. Have the pasta handy. FOR THE SAUCE
Heat a medium skillet over high heat. Once it is hot, add the oil and butter, along with the onion, mushrooms and peppercorns. Sauté, stirring and tossing the pan continuously, for a few minutes, until the mushrooms wilt down and the onion is just slightly softened and colored. Add the brandy and let it bubble and evaporate almost entirely. Add the chicken stock and let that bubble and almost entirely evaporate. Add the cream, letting it bubble for one minute, then turn off the heat and season to taste. Add the pasta to the pan and stir to coat well—if the sauce is a little thick, let it down with the reserved pasta water. Serve immediately.

LAMB WITH BLACK OLIVES IN ROSÉ WINE WITH WHOLE WHEAT PASTA Yields: 4 servings INGREDIENTS
FOR THE PASTA n 14 oz. dry whole wheat
pappardelle n ¹⁄³ cup extra virgin olive oil n small handful of flat-leaf parsley, coarsely chopped FOR THE SAUCE n 3½ Tbs. unsalted butter n 1 Tbs. sunflower oil n 1 onion, finely sliced n 8 anchovy fillets from a jar, n n n n n n n
coarsely chopped 3 garlic cloves, crushed ½ cup pitted black ripe olives, coarsely chopped 18 oz. boneless lamb neck slices, diced 1¾ cups dry rosé wine 1¾ cups chicken stock 1 rosemary sprig fine sea salt and coarsely ground black pepper
DIRECTIONS FOR THE SAUCE
Heat a large pot over high heat. Once hot, add the butter and oil, then the onion and anchovy fillets and sauté, stirring until the onion starts to soften and color slightly. Add the garlic, olives and lamb and stir to coat, then add the wine, stock and rosemary. Bring to a boil, then reduce to a simmer and cook, partially covered, until the lamb is tender and the sauce has reduced, 2 to 3 hours. Give it a stir every so often. Once the sauce is cooked, taste it before adding any salt or even pepper. FOR THE PASTA
When the sauce is ready, cook the pasta according to the package directions, but ensure the water is very well salted. Reserve a generous 1⁄3 cup of the pasta cooking water, then drain the pasta well. Mix the pasta into the sauce along with the olive oil, reserved pasta cooking water and parsley before serving.

A GREEN GODDESS MOVE OVER, KALE. WITH ITS DISTINCT FLAVOR AND NUTRITIONAL PUNCH, BROCCOLI RABE IS THE KITCHEN’S NEXT RISING STAR. FIRST THINGS FIRST: Broccoli rabe is not a type of broccoli. Also called rapini, this leafy green is—like broccoli—a cruciferous vegetable, but it’s more closely related to turnips. In fact, in some parts of Italy, broccoli rabe is called cime della rapa, or “tops of the turnip.” Its large leafy stems do somewhat resemble the heads of turnips and other leafy greens, but its buds have clusters of broccoli-like florets. (Note: Broccoli rabe should not be confused with broccolini, which resembles long broccoli stalks.) Known for its bitter yet nutty taste, rapini is a staple in many southern Italian dishes— and is a main ingredient in the country’s “most popular sandwich.” (Soppressata and rapini, anyone?) And it has an array of health benefits to boot. POWER UP One cup of raw broccoli rabe has only about nine calories and .2 grams of fat (this, of course, doesn’t take into account the olive oil or heavy Italian sauces that the vegetable is often cooked in). But the pièce de résistance is the nutrients it contains: notably almost 90 milligrams of vitamin K (or more than 100 percent of the daily recommended value), which promotes blood and bone health. It has copious amounts of immune-boosting vitamins A (21 percent) and C (13 percent), iron (5 percent) and lutein, which is beneficial

for eyesight. It also works to cleanse the body: 33.2 micrograms (8 percent) of folate help with liver function, and 1 gram of fiber promotes digestion. Finally, the vegetable contains a small amount (45.2 mg) of omega-3 fatty acids, useful for brain function. BUY/STORE/SERVE Though broccoli rabe is in season through the end of October, it can be found in the produce section of most supermarkets all year long. Look near the other bitter greens, like kale and mustard greens, and select a bundle that is crisp, sturdy and a vibrant green color, without any browning or yellowing. It can be stored in a refrigerator wrapped in plastic for about five days, according to the Department of Agriculture’s Jersey Fresh campaign. The major hurdle in cooking this vegetable is overcoming its acrid flavor. Chefs offer several solutions: Blanching it in boiling water followed by an ice bath brings out its sweetness, and a splash of lemon or
apple cider vinegar also works well to counterbalance the bitterness. Chef Steve Dunn wrote in Cooks Illustrated that after experimenting, he found that keeping the leafy tops intact while cutting the stems into bite-size pieces before blanching or roasting also did the trick. To serve, broccoli rabe can be used in place of spinach in recipes, or as a side dish, topped with olive oil and copious amounts of garlic. It pairs well with pasta or Italian sausage (or even better, both), as well as in sauces, on pizza and even in lasagna. DID YOU KNOW? THE FARM-TO-TABLE TREND MEETS FAST CASUAL DINING IN SEA GIRT. LIKE ANY GOOD ITALIAN GIRL from New Jersey, the concept of comfort food has an iron clad connection to gluten-full pastas, fat-rich cuts of pork and fistfuls of pecorino shavings. While I still love a good stuffed braciole, I have learned that eating lighter foods can be just as comforting as a lasagna (well, almost as comforting). Keeping this in mind, I checked out Farmly in Sea Girt. This fast-casual restaurant executes simple recipes and serves slow-cooked, roasted meats and home-style sides. This “farm-to-family” restaurant opened its doors in June. The co-owner and chef, James Avery, is well-known around Monmouth County and is a very busy man. Early in his career, he worked under David Burke at Fromagerie in Rumson. Today, Avery serves as executive chef at The Bonney Read and is a creative partner at Asbury Festhalle & Biergarten, both located in Asbury Park. Walking through the doors of Farmly is like being transported to a café in a rapidly gentrifying, trendy outer borough. White tile walls, an open kitchen and wood shelving follow the urban rustic style guide to the letter. But don’t let the basic décor and paper napkins fool you into thinking this is just a hipper version of a Boston Market. The ingredients at this place have pedigrees. For example, the meat for Farmly’s most popular dish—the rotisserie chicken—is sourced from Shenandoah Valley Organics, a farming industry leader in standards for raising chickens. Thinking locally, Farmly sources vegetables from Lanza’s Nursery, an all-organic farm in Wall Township. We started our meal with the cream of tomato soup appetizer special. The soup was more tomato than cream and tasted off-the-vine fresh. We also ordered honey and lavender corn bread. One order includes a plate of five mini loaves for $2, and, if left on my own, I would love to eat
them all myself. Farmly patrons can select one rotisserie item—organic chicken, herb-roasted pork, grass-fed beef or a seasonal vegetarian option—with a choice of two sides. My companion ordered the lauded chicken with mashed potatoes and a cucumber and red onion salad. I now can attest that happy chickens do make for a delicious meal. The breast was juicy and served with gravy that was well-seasoned and had hints of rosemary. The mashed potatoes were smooth and the perfect consistency. The cucumber and red onion salad was refreshing and dressed with a well-balanced vinaigrette and dill. We also ordered a side of roasted carrots, which were perfectly firm, substantial in size and just sweet enough. For me, choosing a side felt a little like choosing a favorite child. Torn between the gigante beans and broccoli rabe and the white cheddar mac and cheese, I decided to go for the squash and quinoa with Craisins, pumpkin seeds, mint and a sherry vinegar dressing. This dish is like eating autumn by the forkful. The menu also includes sandwiches and salads with unique combinations. I couldn’t resist ordering the butternut squash sandwich because it has two of my favorite things—chimichurri and goat cheese. The hearty, roasted squash is so dense and flavorful, I didn’t even miss having meat between the bread. Topped with red onion and arugula, this sandwich is a savory delight. The dessert choices at Farmly are limited, but they do offer four different varieties of enormous, fresh-baked cookies. According to one of the employees, the salted caramel cookie is the best but this flavor was sold out by the time we arrived. We tried the lemon blueberry and chocolate chunk cookies but it was the oatmeal raisin cookie that we devoured to the last crumb.
