When a man in an old movie is asked to “step outside,” that’s ominous. But when we at Monmouth Health & Life make that invitation in our annual Outdoors Issue, no violence is intended—except perhaps the silent smack of innovation against the humdrum. We’re believers, you see, in making the most of what life in our beautiful county has to offer. And what “outside” offers in this season is warm, green, luxuriant possibility—a time of refreshment that can be a cue to fresh thinking too. For one Long Branch family, that meant bringing the outdoors into the living room they hoped to redesign (page 30). Their designer gave them exactly what they wanted: beach-inspired yet not over-the-top Shore décor—exactly the vibe they sought to make them feel like they’re always outside. Being outside isn’t just about enjoying your own space—it’s about going out and exploring. On page 38, you’ll read about five outdoor activities we know you love and the many places in our county where you can enjoy them. We’re fortunate to have many trails, waterways and parks from which to choose! But if you prefer to rest and relax along the ocean, Monmouth is the place to be. Flip to page 42 to see our guide to the best beaches in the area. What do you need to do today to make for a relaxing tomorrow? First, be sure to snag some just-off-the-vine veggies at your nearby farmers’ market (page 13). In time for Father’s Day, fire up the grill to make sure it can properly light (page 12). And celebrate our country’s independence with a fireworks show. (A sampling of local displays is on page 12.) The outdoors exerts a siren call, but it’s not a call to passivity. We can do things to shape our experiences outside just as we design our homes and plan our schedules and choose our healthy diets. In a sense, our outdoors is what we make it. Not being Southern Californians, we can’t live outside year-round. But that just makes our Jersey summer all the more precious. So step outside. Enjoy the great outdoors—and this issue!

EAGLE EYES You may not be able to tell the difference between a sparrow and a swallow, but there’s no mistaking a bald eagle when you see one. To spot this bird of prey and patriotic symbol in the wild is a thrill for non-birders and enthusiasts alike. On American Eagle Day, June 20—or any day— head to one of these parks for a chance to see one: • Hartshorne Woods Park, Middletown. A nesting pair has been spotted over the years at this popular walking and hiking destination. • Manasquan Reservoir, Howell. Eagles have been seen nesting and soaring above this body of water since the early 2000s. • Shark River, Neptune and Wall. Many eagles scan this waterway, from the air or perched in a tree, for an easy-to-catch meal. • Swimming River Reservoir, Colts Neck, Holmdel, Middletown. Bald eagles have been spotted here swooping down from nests to catch fish in the water.

WATCH THEM LIGHT UP THE SKY What’s on the agenda for July 4th weekend? Towns all over Monmouth are planning fireworks, parades and concerts to celebrate Independence Day. Here’s a sampling: • Aberdeen: A fireworks display begins around 9 p.m. July 1 at Cliffwood Beach/Veterans Memorial Park. • Atlantic Highlands: The town’s fireworks display will be held at 9:45 p.m. July 8 at the Atlantic Highlands marina. • Farmingdale: Historic Allaire Village will hold its American Flag Celebration from 11 a.m. to 4 p.m. July 1 to 4, and a special Independence Day celebration July 3. • Freehold: Fourth of July festivities are scheduled from 6 to 11 p.m. July 3 at Freehold Raceway. • Long Branch: Oceanfest returns to Pier Village with a street fair, craft sale, live music, food and entertainment beginning at 10 a.m. on July 4. The fireworks show will come after sunset. • Manasquan: The Independence Day celebration will be held July 2, beginning with a parade at 3 p.m. from First Avenue to the Main Beach. A fireworks show will commence shortly after sunset. • Ocean Township: Fourth of July fireworks begin after sundown on July 1 at Joe Palaia Park.

Dog: Sandy, 16-month-old, half mini-poodle and half bichon frise mix Owners: Betty, Jimmy and Jamie Kelleher of Middletown With everything shut down during the middle of the pandemic, Betty and Jimmy knew their daughter Jamie needed more companionship. They also wanted a dog, so timing was perfect. “Our only child felt lonely,” Betty recalls. “And since we weren’t able to give her a human sibling, we got her a doggie ‘sister’!” When the Kellehers saw Sandy online, they immediately took a trip to Whitehorse Station to visit her. “We knew she was the one when we saw her—but she still needed a check-up, so we didn’t get to bring her home until a week later.” Sandy was worth the wait. “Sandy and Jamie play together, have the same bedtime and sometimes there’s even some sibling rivalry—she loves all her stuffed animals and my daughter’s stuffed animals equally,” Mom jokes. What do burgers, mascara wands and cell phones have in common? They’re three of the most common distractions that steal our attention when we’re behind the wheel, according to a new study from Rowan University in Glassboro. In the research, engineering students drove some of New Jersey’s most treacherous roads—including the Garden State Parkway, I-80 and I-95—logging which distractions interfered with drivers’ attentiveness. The most common culprits, in no particular order, were phones, fidgeting, personal grooming, eating or drinking, talking to a passenger, reaching for the radio or another object and driving drowsy. “It’s scary how many people I see on the roads not paying attention while driving,” says Seth Guttenplan of Fair Lawn. “Most of the time I notice drivers on their phones, but I’ve seen people eating meals or checking themselves out in the mirror too. I wish Bergen County drivers were more careful!” Researchers hope the study will help the Department of Transportation create a safer driving environment. But until that happens, keep your eyes on the road, folks!

Beach-chair Tycoons Their deal on TV’s Shark Tank fell through, but that didn’t stop these Shoregoing entrepreneurs from marketing their invention.

The family’s amped for a relaxing day in the sun and surf, but first there’s the dreaded trek—when beach chairs are haphazardly opening and closing, umbrella pieces are falling to the ground and everyone’s complaining. That’s a familiar scene to any beachgoer, and it was the scene nearly five years ago, when Short Hills resident Leslie Hsu, now 50, hit the sand with her husband, Greg Besner, now 56, and their two daughters. That’s when Hsu declared: “There has to be a better way.” The inspiration led the couple to create what they call Sunflow, an innovative beach chair setup (with accessories) that they say is more comfortable and easier to carry than the typical beach paraphernalia. Their invention won them a spot on the investment-appeal TV reality show Shark Tank, where they nearly secured a $1 million deal with investor Kevin O’Leary, nicknamed “Mr. Wonderful.” The handshake arrangement fell through after the taping, but the couple did the show one better and raised $3.5 million from investors.

Monmouth Health & Life recently spoke with the pair, who plan an upcoming move down the Shore to Spring Lake. What sets your chair apart from the competition? Leslie: We wanted to make it easier to carry and created a patented telescoping backrest, so with the push of a button it retracts. It’s small to carry but opens into a very big chair. I spend quite a bit of time on the beach when I get there, and typical chairs become uncomfortable over time. We set out to change that. Our chair is made with one piece of fabric so it’s almost like a hammock. Some Shark Tank judges were skeptical of the price—$198 for just the chair or $296 with all the accessories. Greg: People care a lot about their work-life balance. It seems we’re all working 24/7, being connected all the time, so when we finally do have our earned personal time, people treasure it and will invest. They’ll invest in premium camping or ski gear, or whatever their hobby is, but we found there really weren’t premium beach products.

Tell me about your experience on Shark Tank. Leslie: It was just as fun as you can imagine it would be. It’s really amazing how it comes together, and the right questions and information come out and then the final clip is so suspenseful. They’re really very kind—it’s all genuine smiles because they know it’s intimidating. They try to make every person who walks in take a deep breath and just feel welcome. How did you feel about the deal with Kevin O’Leary falling through? Greg: The experience was absolutely amazing. Leslie came up with this idea almost five years ago, and now we have a company, a product and brand and many happy customers. To be able to show it to the world on TV—what could be better than that? The deals are handshake agreements that happen in a very short time, then there are additional discussions and negotiations. We couldn’t come to a final agreement with Kevin O’Leary, but fortunately we have other investors who are excited about our business. We’ve raised $3.5 million, and that will allow us to make Leslie’s vision of additional products a reality. You’ve worked together in the past—with Leslie, a former handbag designer, on the creative side and Greg the business side—but this is your first time working solely on one business together. What’s it like working with your spouse? Leslie: I think one of the best things about it is we both have the same end goal, and we really stay in our lane. We’re adult enough to know what we don’t do well and experienced enough to know what we do well. Greg: I could never do this without Leslie— she’s the product visionary and designer and makes the vision come to reality. My background has always been general management—CEO, CFO, COO—the less sexy part of the business. Designing the product is the heartbeat of the company, but of course you need the rest of it too. On Shark Tank you spoke about the possibility of more products for Sunflow. What’s next? Leslie: We’ll have a higher chair—we’re hoping to have that out on the market by spring 2023. And there are other accessories coming that I’m really excited about, and I hope people will agree are very thoughtful. Greg: Innovating and invention of products is one piece of our growth, but we’re also focused on geographic diversification and expanding to other channels. It all leads to delighting more customers in more places. —Sarah Nolan

Jayme Gordano had a busy spring, what with a newborn baby and a new golden retriever puppy to look after. Her son, Westin, has been easy-going thus far, but labor and delivery of her first child was far from simple. Gordano, 31, a dance instructor and former part-time restaurant server and

bartender, lives in Lumberton with her husband, Joseph, 33, who works in analytics for Janssen Pharmaceuticals. Her pregnancy was going along nicely until October 2021, when she noticed blood in her urine. During a normally scheduled ultrasound, a growth was detected in her bladder, and when it was surgically

removed in January, pathology revealed it was cancerous. Beyond regular monitoring, no other treatment was required. “It was a blessing in disguise,” she says, because the prenatal ultrasound found the tumor early. At the same time, Gordano’s blood pressure was beginning to rise, a warn-

ing sign of pre-eclampsia. Her ob/gyn, Rahab Khalil, M.D., decided to schedule her for induction in late February, a few weeks ahead of her March 4 due date. Two health scares during pregnancy are challenging enough, but Gordano then had a third: A week before her induction, doctors noticed and removed a cancerous skin

lesion, stage 0 melanoma. Fortunately, it also was caught early, and required no other treatment. She stopped her restaurant work on Feb. 5, as her delivery date approached. Then, at a regularly scheduled doctor’s office visit on Feb. 15th, her blood pressure was very high. She was admitted to Monmouth Medical Center (MMC) the next day. MMC, which has been a Level III Regional Perinatal Center since that designation was first created nearly 60 years ago, has built and maintained one of the safest obstetrical and gynecologic practices in the nation. It is also one of the busiest: More than 6,200 babies are born at this hospital annually, more than any other facility in Monmouth and Ocean counties. Because of the hypertension, Gordano was having severe headaches, and she was given magnesium supplements to prevent seizures. She was induced at 8 p.m. on Feb. 16. “The nurse came in the room, and she felt something else was going wrong,” Gordano says. Doctors at MMC’s Eisenberg Family Center Labor and Delivery Unit learned that the umbilical cord had wrapped around the baby’s neck, and so they had to expedite the delivery. “The actual birthing experience

was a lot,” she says understatedly. “The doctors saved him; they were great.” Baby Westin was born at 1:08 p.m. on Feb. 18th—but Gordano’s troubles weren’t over. The day after the birth, doctors found that her uterus was full of blood clots, which had to be expressed. She was in the hospital two days after the birth. “Because of the pre-eclampsia I couldn’t sit up—I would black out,” she recalls. “I needed a bladder catheter because I couldn’t get out of bed.” She credits MMC’s nursing and physician staff with controlling her headaches with medication, removing the stitches from her skin cancer surgery and, eventually, motivating her to get out of bed. “These nurses went above and beyond for me,” Gordano says. “The nurses did everything they could to make sure I was OK and feeling as comfortable as I should.” After discharge, she was on blood pressure medications for two to three weeks, and her entire body was swollen. “But I’m fine now,” she says. She hopes to begin teaching dance again in the summer— she teaches acrobatic, jazz, hip-hop, “everything really,” at three different dance studios. Westin is fine too. “He’s great, meeting all his markers, gaining weight,” she says. “He’s getting his chubby cheeks.” How did she get through all these travails? “The mother instinct was, I will be fine, just keep going to the doctor and being seen,” she says. “I wanted to make sure my baby was healthy, to do everything I could. My husband was there the whole time, and when the doctors told me about the blood clots, he made simple analogies about what they would do. Obviously it was a lot more than that. He was trying to put me at ease.” Despite the difficulties, she says she is thinking about having another child. “The first two weeks [after giving birth] I said, ‘I don’t want more kids,’” she says. “But Westin’s so great, so cute—I might be open to it.”

Monmouth Medical Center’s renowned Joint Replacement and Spine Center gives patients a new lease on life.

Elizabeth Monge knew she was in good hands when she checked in for surgery at Monmouth Medical Center’s Joint Replacement and Spine Center in mid-January. Just days before her procedure, the hospital received national recognition, achieving Joint Commission Disease Specific Certification for total hip, total knee and spine surgery. Admittedly though, accolades weren’t on her mind—feeling better was her objective. Flash back about two years prior, when the now 68-year-old Toms River resident began feeling a suspicious pain in her neck that eventually traveled down her left arm and into her fingers. The pain left her in such agony that she couldn’t even sling a purse or bag over her shoulder. “My doctors told me to go to physical therapy for it,” she recalls, “but no one

really knew what was wrong until an orthopedist said I had a deteriorated disc in my back.” To help manage her condition, in late 2020, Monge’s doctors administered an epidural steroid injection. The shot, a common treatment option for back pain, did the trick temporarily and kept Monge comfortable for roughly three to four months—then the suffering returned. “The pain came back, and it was worse than before,” she says. “I was on a series of medications and pills, but the pain was 24/7 this time. It was so bad at one point that I had to go to the emergency room because [the pain] was too much. I felt like I was going to have a heart attack from the pain.” A second epidural was administered in November 2021, but that injection, unlike the first, did not offer any reprieve. That’s

when she was referred to MMC and Praveen Yalamanchili, M.D., orthopaedic spine surgeon, who recommended and then performed a cervical discectomy and fusion surgery in January of this year. “He used grafts to replace and repair two discs in my back,” she says. About an hour after surgery in her recovery room, Monge caught herself stretching, arms fully extended and without pain. “I thought maybe the anesthesia was still in my body and that’s why I didn’t feel anything,” she says, “but I felt so great.” Monmouth Medical Center’s comprehensive, coordinated Spine Program delivers unparalleled expertise with the lowest infection and complication rates and outstanding outcomes,” says Dr. Yalamanchili. “We offer individualized care plans for pain management and a designated inpatient unit that is staffed by nurses and therapists who specialize in the care of spine surgery patients. Monge spent just one night in the hospital, which was required because of her age, before she was discharged. Other than minor postsurgery soreness, which was remedied with acetaminophen, she no longer had any pain. Physical therapy sessions and follow-up appointments every six weeks ensured that Monge stayed on track for a full recovery. “I perform the majority of my surgeries at Monmouth Medical Center due to the excellent care and results my patients experience,” says Dr. Yalamanchili. “I have had many patients find life-changing relief after their treatment at the Spine Center.” The procedure immediately renewed Monge’s life, so much that she jokes that “I felt like I didn’t even need PT!” “It’s amazing how the surgery changed my life,” she notes. “My posture got better, and even the incision for surgery was nice—it looks like [the scar] is even shrinking. Everything was just great.”

If we were to crown a “coastal queen” of Monmouth County, it could be Nicole Rice. She owns the home décor store Coastal Décor & Interior Design in Fair Haven, and prior to returning to her roots in New Jersey, she spent a decade as a model-home designer on the California coast. So when the clients of a Long Branch home walked into the shop seeking a beach-inspired yet not over-the-top Shore vibe for their living room, Rice knew she could make it happen. The homeowners moved to their home along the beach in Long Branch a few years ago after their kids moved out of their house in Colts Neck. They wanted to retire their old, traditional furniture and enliven the new residence with a fresher, airier feel. “They asked for an upgrade from what they had and a casual space that could entertain, since they have grown children and a grandchild who visit,” Rice recalls. “The daughters bring their dogs too.” That inspired Rice to choose a large navy blue sectional—“you can have a party of 20 in here,” she says—in a performance fabric that can stand up to kids, pets and the summer sun. Instead of “random

upholstered chairs,” Rice chose a duo of organic-inspired string chairs made from actual rope, which she says “stand out and are beautiful. They really draw the eye in.” Organic and natural elements are seen throughout the space, in fact; the woven shades and light fixture ground the room, Rice says, and the wooden coffee table adds warmth. “Previously, this room was designed with blue-and-white seahorses,” Rice notes. “We did a large blue sofa but wanted to keep everything else neutral and natural to give it that coastal feel that’s not in-your-face.” Rice furnished and accessorized this room from top to bottom with custom and off-the-rack items from her store; the only piece from the previous space that was incorporated into the new design was the gold drapery rod, which was reimagined with off-white drapes. “For some reason she didn’t want to part with it!” Rice says with a laugh. This project is proof that the “California coastal” aesthetic doesn’t have to include coral, shells or nautical symbols. Says the designer: “It’s all about that serene, casual vibe.”

It’s tough to beat a leisurely bike ride along the Shore, and with cyclist-friendly streets along boardwalks, there’s plenty of room to roll. But if you’d rather avoid the beach crowd, Monmouth has plenty of trails for all skill levels to enjoy. The Edgar Felix Memorial Bikeway (pick up entry points in Allenwood and Manasquan), for instance, is 5.4 miles of trails that take riders through historic neighborhoods and deep into forests, ending at Allaire State Park. For a longer ride, the 22-mile Henry Hudson Trail (trail heads in Freehold and Highlands) is a scenic route that cuts into wetlands and passes many fields and streams. The Union Transportation Trail (access points in Freehold), meanwhile, follows the path of a former railroad and includes a 9-mile stretch of gravel terrain for stronger riders.

The Manasquan Reservoir in Howell is a good place to catch largemouth bass as well as bullhead catfish, muskie, sunfish, bluegill and black crappie. Angling for bluefish, striped bass or summer flounder? Head to the Navesink River, which runs about 8 miles through Monmouth County. Don’t be surprised to find a largemouth bass on your line at Assunpink Lake, which sits between Allentown and Upper Freehold. Hybrid striped bass, catfish and bluegill are also plentiful here. Don’t forget that a New Jersey fishing license is required for anyone between the ages of 16 and 70. Fees are $22.50 for ages 16 to 64 and $12.50 for 65 to 69. For information, visit nj.gov..

Description: Those looking to escape the Jersey Shore crowds will find solace at Bradley Beach, which has a serene boardwalk with shops and restaurants. Patrons can also walk, bike ride or jog along the boardwalk, and fishing is permitted at certain spots along the water. Meanwhile, tots will enjoy the amenities here too, including a bevy of playgrounds set up for the 4-and-younger set. Beach fees: $12 for adults; kids 11 and under are free. Description: Mile-long Manasquan beach is a clean, well-maintained beach for the whole family. Main Beach has food and an arcade, while active types will find plenty to do (like surf or fish) at Manasquan Inlet. Municipal Beach is also walking distance to Sea Bright’s downtown area, but there’s no boardwalk—it’s more like a sitting area, with no activities or concessions. FRENCH SAVOYARDE WITH BACON, CHEESE AND LEEKS Yields 4 servings

INGREDIENTS:

n▢ 8 eggs, lightly beaten with a fork n▢ 2 tsp. butter n▢ 2 Tbs. olive oil n▢ 4 medium potatoes, peeled and cut into small cubes n▢ 6 rashers bacon, chopped n▢ 2 medium onion, chopped n▢ 2 oz. Gruyere cheese, roughly grated n▢ salt and black pepper, freshly ground n▢ Gruyere cheese, freshly grated, for serving n▢ 1 spring onion, finely chopped, for garnish

DIRECTIONS:

In a medium-sized frying pan measuring 14 inches in diameter, melt the butter and oil together over medium heat. Place the potatoes in the pan and fry them for about 10 minutes, tossing regularly and cooking until they are lightly golden and almost cooked through. Add the bacon and onion to the pan and continue to cook these for another 10 minutes or until the onion has softened. Preheat the grill to the highest setting. Season the eggs with pepper and just a pinch of salt (it will get more saltiness from the bacon).

To reduce the cholesterol content in this dish, replace half of the eggs with egg substitutes. There are a variety of vegan egg brands with less fat and low or no cholesterol. Or, choose a smaller portion size and enjoy!”

Arrange ¾ of the grated Gruyere cheese over the ingredients in the pan. Turn the heat up and pour in the eggs. Using a palette knife or spatula, draw the outside of the omelette inward, allowing the liquid egg to escape around the edges. At this point, your omelette will still look a little liquid on top. Sprinkle the rest of the cheese, then place the pan under the grill for less than 10 seconds to set the top. Cut into wedges and serve with more freshly grated Gruyere cheese and spring onions.

FRENCH TOAST CASSEROLE WITH SAUTÉED APPLES Yields 8 servings

INGREDIENTS

Spray a 9x13 baking dish liberally with non-stick cooking spray. Next, cut or tear your bread into cubes or small pieces and place into a large bowl. Set aside. In a separate large mixing bowl, combine eggs, milk, sugar, vanilla and orange juice and whisk until combined. Pour the mixture over your bread cubes and gently fold until combined. Transfer coated bread to the prepared glass baking dish, cover and refrigerate for a minimum of 2 hours or overnight.

If you don’t like apples or are allergic to them, skip the apple compote and top with fresh pineapple and dried coconut instead. Swap coconut sugar for brown sugar to boost the coconut flavor too.”

Once ready to bake, remove the casserole dish from the refrigerator and preheat oven to 375°F. Prepare your brown sugar cinnamon topping by combining melted butter, brown sugar, sugar, cinnamon and salt in a mixing bowl. Whisk until smooth. Spoon mixture evenly over the top of your French toast casserole and bake in the oven for 35-45 minutes or until it is a light golden brown and your desired level of crispiness. Place on a wire cooling rack to cool for 10 minutes. While waiting for casserole to cool bring a sauté pan to medium heat. Add butter, apples and orange juice and sauté for about 8-10 minutes or until apples have softened. Top with apple compote and sifted powdered sugar or a drizzle of maple syrup.

AMERICAN STRATA WITH HAM, BREAD, ONIONS, CHEESE AND EGGS Yields 8 servings

INGREDIENTS:

n 10 cups bread, cubed n 3 cups cooked ham, cubed n▢1½ cup cheddar cheese, grated n 1½ cup Monterey cheese, grated n 9 large eggs n▢2 cups milk n▢1 tsp. salt n▢1 tsp. dry mustard n▢½ tsp. garlic powder n ¼ tsp. black pepper n chives, for garnish

DIRECTIONS:

Butter or coat with cooking spray a 9x11-inch baking dish. Layer in bread, ham and cheeses. In a medium-sized bowl, whisk together eggs, milk, salt, mustard, garlic powder and pepper. Slowly pour over bread, ham and cheese. Cover with foil and place in the refrigerator overnight. Take strata out of the fridge. Heat oven to 375°F. Bake for 30 minutes covered. Remove foil and continue to bake for 15 to 20 minutes until the top is golden brown and puffy.

This recipe works best with stale bread. Stale bread is dehydrated and will soak up more of the egg mixture when combined and make the recipe richer in flavor.”

Little Red Dynamo

Nutritionally speaking, the raspberry, a tasty fruit with a silent “p,” packs a potent punch. The raspberry isn’t really a berry, botanically speaking. Part of the rose family, it’s actually several species of the genus Rubus, including Rubus idaeus (the European red raspberry) and Rubus occidentalis (the North American “black” raspberry). Growing on a bush three to six feet high, it’s cultivated in temperate zones the world over. Raspberries have a bumpy, “aggregate” quality: A fruit is made up of roughly a hundred tiny blobs called drupelets, each containing a seed. So is its cousin the blackberry (also not technically a berry!), but here’s a difference: Pluck a blackberry from the vine and you’ll get its stem (called the torus) too; do that with a raspberry and its torus stays on the plant, leaving the fruit with an indentation. Greek mythology would have you believe red raspberries get their color from the blood of the nymph Ida, who sought to comfort Zeus. (Modern science tips its hat to the Greeks with that idaeus name, but attributes the hue to water-soluble pigments called anthocyanins instead.) The Roman agricultural writer Palladius wrote of raspberries, and their seeds were found in Roman Britain. Centuries later, Edward I (reign 1272–1307) was said to be the first to call officially for the fruit’s cultivation. But today, if we connect raspberry with royalty, we’re apt to think of the late musician Prince and the color of a certain beret.

POWER UP The raspberry tops the Mayo Clinic’s hit parade of fiber-rich fruits, with about 8 grams of fiber per cup, lending a well-known boost to regularity and blood-sugar control. Just 80 grams of red raspberries provide 21 milligrams of vitamin C, useful for fighting off infections and protecting the immune system. That’s almost one-quarter of your daily need—for a modest 42 calories. A 2014 study showed that “black” raspberries helped suppress the effects of endothelial dysfunction, a coronary artery disease in which large blood vessels constrict. With a low glycemic index in addition to the fiber content, you can’t go wrong with raspberries. They’re a good source of folic acid for the development of red blood cells and potassium for the balance of fluid levels in the body. And considering the fruit is 86 percent water, you don’t have to worry a whole bunch about portioning. Paint the town red with them. BUY/STORE/SERVE Your local grocery, fruit stand or farmer’s market most likely has this fruit in abundance from late spring through October. Unlike with people, you want to be superficial about raspberries. Look for uniformity of color and gloss on

the exterior. Make sure fruits aren’t crushed or moldy. If the raspberry’s color looks dull or fading, pass that package by. (One trick: If you can, discreetly turn a plastic box of raspberries upside down. If some fruit adheres to the bottom, that’s a bad sign.) Raspberries have a short shelf life once picked; if rinsed, they can take on mold easily. So only wash them if you plan to eat them right away. Always go organic when it’s available, and keep unwashed berries in a covered, shallow container in your fridge. Raspberries can be served as they are, straight from the container. They can be pulverized into jams. They cameo well in a lot of breakfast items, such as cereal, oatmeal, yogurt or even your classic fruit salad. The tang of the fruit pairs well with a nice cheese if you’re preparing a platter, and even a barbecue sauce can be helped by the slightest hint of raspberry. The leaves of the raspberry plant? Starting June 11 Pick-your-own isn’t just a fall activity: Happy Day Farms in Manalapan debuts their U-Pick Raspberries event in mid-June for the summer. “I love shooting first birthday portraits and cake smash sessions. It’s so much fun to watch these babies play with props, laugh at Mom and Dad and of course, enjoy the cake. This little guy is Andrew Christopher Jr. of Tinton Falls, which we shot at Holmdel Park. Andrew’s birthday is June 10, in between Memorial Day and July 4, so his parents chose this American-themed shoot. He’s their little firecracker!
