Welcome to the “new” Monmouth
Twenty-one years ago, we published the debut issue of Monmouth Health & Life, the county’s first consumer magazine to cover health topics in every issue. We believed—and you agreed— that to fully enjoy the lifestyle of this great area, you needed to be healthy in body and mind. Of course, we still believe that, and our passion for celebrating and enhancing readers’ lives has never been more vital to us.
Then why change, you ask? Well, for starters, let’s face it: Our old name was a mouthful, and almost all of our loyal readers and advertisers referred to us as Monmouth So we reasoned that Monmouth it should be. Once we decided to change our name, it seemed to make sense to refresh our look. You’ll notice that the new design is a lot cleaner and more modern, and that translates into easier to read. And we’re adding more local coverage. We polled our readers and discovered that—along with fashion, travel and home décor—local life is what’s most important to you.
What hasn’t changed is our dedication to all things Monmouth County and to giving you cutting-edge information you can count on. Celebrating life on the Shore with YOU is still our primary goal.
To that end, I present our biggest issue of the year, packed with “good life” articles that either highlight your neighbors or help you meet life’s challenges—or both. On page 46, for example, we learn how a newly constructed home in Holmdel was filled with personality and coziness. We read on page 14 how mimicking a fictional wizard turned Monmouthite Kimmi Pizzo into a big-time influencer. Where to go crabbing—or catch a glimpse of a whale? Those secrets are spilled on page 10. What to do about a beehive? Page 11. You’ll also learn of a fine new Spanish-Mexican eatery (page 85) and read about young people in our county whose achievements are making us all proud (page 38).
Fittingly, this issue includes the results of our Best in Monmouth Readers’ Choice Awards—the finest bakeries, barbers, BBQ joints and breakfast spots, plus dozens of other local merchants and services. This year, your votes totaled 5,044—an impressive number for this countywide competition. Turn to page 21 for the results. There you’ll find old favorites and lots of new places to try.
We plan to celebrate our new look with you at an upcoming event, and we’re working out the details of our second Monmouth Food & Wine extravaganza, hopefully in spring. The Retirement Income Puzzle
WELCOME to the latest edition of Fiscal Fitness. It’s a hot, steamy day at the Jersey Shore as the dog days of summer are upon us. As expected, the FOMC just raised interest rates for the 11th time in an attempt to tame inflation. The markets continue to climb in the right direction but for how long?
WILL I RUN OUT?
One of the most frequently asked questions I hear is “how much can I withdraw yearly from my retirement savings without running out of money?” Saving and investing for retirement seems easy when you’re working, but when the paycheck stops, figuring out how to generate a lifetime income stream presents many challenges, especially in a down market.
SEQUENCE OF RETURNS RISK
is one of the biggest challenges retirees can face. In simple terms, it’s the risk of receiving lower or negative returns in your investment portfolio just before and after you retire. The combination of lower returns and withdrawals could quickly deplete a portfolio. Timing is everything. Proper planning, effective portfolio construction, along with a “safety net” of liquid assets to draw from could help minimize the risk.
Annuities are another tool that can help mitigate the risk, but are often underutilized due to the perceived complexity and general misunderstanding in how the financial products work.. Think of it this way-would guaranteed lifetime income on a portion of your assets to cover basic living expenses make sense? In theory, it’s similar to creating your own pension, while allowing your other investments time to recover or continue to grow.
WHICH ASSETS SHOULD YOU DRAW FROM FIRST?
Good question and it depends on many factors. Should you draw from taxable accounts first, tax-deferred, then tax -free (Roth IRAs)? What if your spouse is still working? Downsizing and selling a home with a large capital gain? Starting Medicare? Do you plan on leaving an estate to your beneficiaries? If so, you will want to coordinate your retirement income plan with your estate plan. So many decisions that could have a wide range of tax implications.
REQUIRED MINIMUM DISTRIBUTIONS
Are required from Traditional IRA, SEP, SARSEP, and SIMPLE IRA accounts once you reach age 72 OR age 73 if you reach age 72 after 12/31/22. If you have more than one IRA and an employersponsored plan such as a 401(k), those amounts are added together to determine your RMD for the year. Sounds complicated? You bet. Once again, due to ongoing confusion about RMDs, the IRS is providing limited relief to both owners and beneficiaries who may have missed taking their RMD1 Speak to your tax advisor for specifics.

Labor Day signals summer’s windup and the beginning of the back-to-school period, but there are plenty of events in our county to enjoy before the long weekend is over. Here are a few:
• SEPT. 2, MAIN BEACH, MANASQUAN: A concert featuring the Wallnutz starts at 7:30 p.m., followed by fireworks at dusk. Admission is free.
• SEPT. 2–4, MONMOUTH PARK, OCEANPORT: The annual BBQ & NJ Craft Beer Festival takes place from 11 a.m. to 5 p.m. each day at Monmouth Park. The event features food trucks, craft breweries (adults only), live music and children’s activities. Admission: $6 for adults, free for ages 12 and under.
• SEPT. 4, PNC BANK ARTS CENTER, HOLMDEL: Grammy Award winner James Taylor takes the stage for an end-ofsummer concert starting at 7:30 p.m. Tickets begin at $39.50 for general admission.

Just as apple picking is a seasonal rite for some New Jerseyans, crabbing’s a tradition for many residents along the Shore. Most pros can do it without a fuss, but it’s not uncommon for recreational crabbers to wind up with the best catch of the day. In Monmouth waters we catch blue crab, which can hold its own in flavor competitions with larger variants such as Dungeness, king and snow. Ready to start trapping your own crab? Remember these tips:
• Where to go: Blue crabs are abundant across Monmouth waters and can be caught along “any bank, bulkhead, bridge or pier bordering tidal waters,” says the state’s Department of Environmental Protection (NJDEP). Areas with shallow waters and submerged or floating structures are usually prime spots for blue crabs.
• What to use: Commercial-style crab pots must include a biodegradable panel that can open, allowing crabs and other wildlife to escape if the pot is lost or abandoned.
The NJDEP also says all commercial-style pots “set in a man-made lagoon or any water body less than 150 feet wide must include a turtle excluder device inside all pot entrance funnels. A license, available on the DEP website (dep.nj.gov), is required to use a crab or lobster pot in New Jersey.”

The Promenade, which had a soft opening this spring, is now rockin’ full time. It has quickly gained a loyal following thanks to a menu that boasts local ingredients and some of the area’s best seafood. One musttry is the seafood salad, made with shrimp, crab, lobster, red pepper, celery and a tangy vinaigrette. But the land gets its due too, with chicken, pork, beef and veggies.

Spotify, Apple Music and Pandora are great and all. But these believe it or not, more and more people are listening to music vinyl. On Aug. 12, National Vinyl Record Day (or any day when mood strikes), pay a visit to any of these four record stores in mouth—we bet there are more of them than you thought!—which are chock-full of used and new records to add to your collection…or help you start a new one. “People love to collect vinyl because a record is an entire experience that you can’t get with a download or a stream,” says David Hernandez of Lofidelic Records in “People want to feel the product in their hands. They want to gatefold and read the lyrics or the production notes. We wouldn’t be the Garden our official state insect, the honeybee. That’s because they’re master tors and are vital to farmers, bees responsible for nearly a pollination. So don’t bug out when you see them. Heed these tips from Beth and Tim Couchoud of Honeysuckle Nectary Apiary and Gardens to get your bees to bee-have: Remain calm and avoid sudden movements if you find bees on the ground or flying about, says Beth Couchoud. “Resist the urge to swat at any stinging as this can make them feel threatened. best option, if a bee is flying you, steady your breathing and heart rate and to walk away calmly.” The same rules apply if you see a swarm of honeybees. Couchoud suggests “observing from a distance and waiting for them to cluster in a day or two, but if you can contact a beekeeper to capture them before they move out of the cluster, that’s ideal.” Cohabitate with honeybees, if possible. Though the
Wildlife Federation doesn’t consider endangered, North American honeybee populations are on the decline because of habitat loss and climate change. can create a habitat by “growing native plants that have not been treated with neonicotinoids, which provide an invaluable source of food pollinators as well as regenerate the soil, carbon and recharge groundwater system,” our expert suggests. Mike Daneman, a technology teacher at St. Leo the Great School in Lincroft, who donated a kidney to his colleague, Lauren Crupi, who teaches middle school language arts there. When Crupi found out she’d need a transplant due to a genetic condition, she took to social media and GoFundMe to find a match; turns out Daneman was her guy, and the two underwent successful transplant surgery at NewYork-Presbyterian Hospital in June.

MAKING THE MOST OF SUMMER
Is your community worth celebrating? A handful of Shore towns’ chambers of commerce will be throwing free community-centric celebrations as the summer winds down. Support your neighbors and enjoy a day of fun Sept 9 at Brielle Day (Brielle Park, 9 a.m. to 4 p.m.), featuring a craft show, kids’ entertainment, a beer garden and music, or the Sea Girt Family Luau (Boulevard Beach, 6 to 8 p.m.). Two weeks later, on Sept. 22–24, is Asbury Fest, (across from Convention Hall) with tons of live music and local food vendors. Sept. 23 is Middletown Day (Croydon Hall, 11 a.m. to 4 p.m.) with local businesses, first responders and a food court. It’s tough not to unwind during summer break, a time when students fill their days with family vacations and day trips, camp and sports, books and video games. The kids earned it! But many use the time for more than rest and relaxation—they also work, volunteer and prepare for the future. Monmouth asked local high school students how they spent their summer; here’s how two answered:
“I started fundraising efforts through the Leukemia and Lymphoma Society and I also babysat kids around my neighborhood for some work experience. I enjoyed my time off, but also prepared for my sophomore year. One of my goals as the 10th grade class president is to help grow my school’s partnership with other schools in Monmouth County as well as implement community service ideas from last year. I hope to continue to engage my peers at Trinity Hall this fall and beyond!”

“At first, I was hesitant about going away from home for a service trip, especially to somewhere as distant as Jonesville, Virginia, but I pushed aside my worries and went. I developed relationships with not just my fellow students and volunteers, but with the children of the family we were assisting too. As the week went along, these relationships strengthened and so did my gratefulness for going on the trip. By the end of the week, I had made so many connections and memories that it was difficult to say goodbye. This experience made me realize that service is less of a sacrifice of my time to help someone in need and more of an opportunity to build relationships and spread love.”

Former Gucci employee Pizzo, 30, is now a full-time content creator—and still a Jersey girl at heart.
When did you start creating your videos?
During the pandemic. I walked into my sister’s room one day and I saw her wand—’cause all my sisters are huge Harry Potter dorks. So I took that wand and, when I saw a blanket, put it on and did it on the spot; I didn’t even think about it. I just walked into her room and was trying to annoy her and make her laugh. She’s constantly filming me because I’m always doing something stupid. You have more than 765,000 followers. Did you imagine that? No! You just gave me goosebumps. No absolutely not, no.
When you went viral, were you excited—or nervous?
Both. It all kind of happened rather quickly. Do you feel different now from when you started?
Just a little. It’s a lot of pressure. I think that’s what people don’t realize. People sometimes think you’re a robot. I started this just having fun, and that’s what I’m gonna keep doing. It changed a little bit because of the pressure. People don’t think you’re a human sometimes.
Why Harry Potter impressions?
My sisters and I literally quoted [Harry Potter books] all day, every day, just in conversation. We’re a Harry Potter house, and we love it so much.
Can you tell me about your process?
I honestly think I was a parrot in my last life. I’m just good at imitating. I don’t know why; I don’t know how. I’m not gonna do things just because they’re trending or its cool; it’s going to be something I know and love.
Do you get paid for the content you create?
Yes, actually. I’m a full-time influencer now. I actually just hired a manager, who’s amazing, his name’s Brian.
Do you plan to stop creating any time soon?
No way. I’m just getting started.
Where do you see this taking you?
I’ve always been into movies. I’ve always wanted to act—I love acting. Honestly, I’ve always wanted to be famous. Also, standup comedy, I think. I’m very excited. Endless possibilities!
What’s one piece of advice to aspiring TikTokers?

What do you like to do when you’re not creating content?
I’m a huge makeup fanatic. I was a fashion merchandising major; I worked in fashion up until a year ago, really, so I’m very into fashion and makeup. It’s either “You’re a book nerd or you’re into fashion”—why can’t I be both? I’m also really into cooking, I would cook all day every day if I could. Another huge dorky thing about me? I love looking for seashells—I could do it for hours, and I do.
What’s your favorite spot in the county?
This is tough, I love Red Bank. I love the waterfront park. Basically, anywhere by the water I love. When I was in high school, we used to go to the Keyport docks and just sit there and hang out.

Oh my god, so much. It’s like a small town— everybody knows everybody. I love living by the beach—it’s “chef’s kiss.” I can’t imagine living anywhere else.

A NEW ACADEMIC YEAR IS ALMOST HERE. CONSIDER FIVE WELLNESS BASICS TO MAKE SURE HE OR SHE IS PREPARED FOR SUCCESS.
It’s a fact: Healthy kids are better learners. Studies show that children who suffer from poor vision, mental health issues, obesity, substance abuse or an array of other health disorders don’t perform as well in school as their peers. “If anything is bothering them—if their stomach is upset or their throat is sore—it’s harder for kids to concentrate and learn properly,” says Rebekah Lipstein, M.D., a pediatrician with the Unterberg Children’s Hospital at Monmouth Medical Center. She shares tips on what you can do to help make this year your kid’s healthiest and most successful yet:
• Prioritize hygiene. If the pandemic taught us anything, it’s the importance of washing our hands regularly and covering our mouths when sick to avoid spreading or receiving germs. The common cold, the stomach flu, strep throat and other illnesses are common in schools, so Dr. Lipstein echoes the need for kids to wash their hands throughout the school day, particularly upon arrival at school, before eating and after each bathroom visit. Students should wash (or sanitize) more frequently if they’re blowing their noses, sneezing or coughing a lot.
• Establish healthy eating and exercise habits. Kids ages 5 and up should get at least an hour of physical activity a day that’ll get their heart rates up, notes the doc. This can be through organized sports, or simply “going to the playground or running around in your own backyard,” which are easier to do in the summer and should be continued once the school year begins. Also make sure your child’s diet is rich in fiber, fruits and vegetables, and that any fruit juice and sugary drinks and snacks are consumed as treats, just one or two times a week. “Eating a diet with fruits and vegetables is going to give your immune system a lot more support than adding supplements into your diet,” Dr. Lipstein says.
• Check in on mental health. A child’s mental state is just as important as their physical well-being. Keep an open line of communication and encourage your child to discuss her or his feelings. If you sense your child is struggling but won’t open up, make it clear that many people go through stages of feeling sad. And if it’s a persistent issue of emotional health, the youngster isn’t alone there either— just make sure that the line of communication is strong.
• Establish good sleep hygiene. “You’ll feel better and function better if you’re getting an appropriate amount of sleep for your age,” Dr. Lipstein explains. “Sleep is very important, especially with teenagers, who are chronically sleep deprived. They think it’s normal to get five to six hours of sleep.” She recommends teens get eight to 10 hours of sleep each night, even more for younger kids. One of the biggest factors in good sleep hygiene is avoiding screen time an hour before bed; if kids’ eyes are exposed to blue light, their bodies won’t produce melatonin, which helps the body wind down. Proper sleep and nutrition, Dr. Lipstein adds, will set a child’s health baseline higher and “set it up so when kids are exposed to whatever viruses and illnesses that are going around [they] don’t get as sick or it doesn’t throw them for as much of a loop as it would have if they’re not optimizing baseline habits.”
• Encourage sensible limits with extracurricular activities. Though kids will be spending more time indoors during the school year, parents should make sure children are still going out to play instead of spending too much time inside with video games and television. If kids play sports, however, parents and children should be aware of their limits. Many of those can be addressed with a pediatrician during annual physical exams. During a regular or sports physical, “there will be questions and discussion about how things go when participating with sports, [such as] are you having any symptoms associated with activity or any concerns about your sports, keeping up with other kids your age,” Dr. Lipstein says. If your child seems stressed out by too many to-dos, encourage him or her to choose top two sports or activities and stick with those.
3 DANGERS YOU SHOULD UNDERSTAND
Yes, they’re disparate—like apples, oranges and pears. But the three problems below can affect even healthy kids in elementary, middle and high schools. So here’s your primer:
• Head lice: The bad news with lice is they’re extremely contagious with headto-head contact. The good news: Once your child is treated for them (usually with topical creams and shampoo), she or he can go back to school the next day.
• Scoliosis: This is a horizontal curvature of the spine, usually in adolescents, that in mild cases often needs only careful monitoring, but that can occasionally require corrective surgery. Schools these days screen for scoliosis, as do pediatricians during annual well visits, especially when kids are going through growth spurts. If your child is experiencing back pain or complains about it more than once, get them screened as soon as possible, says Dr. Lipstein. She also recommends that the weight of a student’s backpack and contents shouldn’t exceed more than 10 to 20 percent of his or her body weight.
• Bullying: Sometimes a child’s vague comments about stomach aches or headaches can be a clue that something (or someone) at school is upsetting them. Parents should look for possible warning signs such as a drop in grades, resistance to attend a class or a shift in behavior and consider talking to teachers to determine if anything might be wrong, Dr. Lipstein says. This can help open a dialogue saying, “Hey, if someone’s bothering you or if someone is hurting your feelings, let Mom or Dad, a teacher, a doctor know.”

Their entry, Digital DOC (Detector of Conditions), is an injectable microchip featuring sensors, radio waves and an in-body GPS. When the chip is connected to a downloadable app, it can communicate information such as abnormalities in the body and possibly enable quicker diagnoses.
• Winner on the water. Red Bank Catholic junior Anna Ciardiello and her team at the Mercer Rowing Club finished 10th at the USRowing Youth National Regatta in Florida this summer. Anna’s squad, which was seeded 17th entering that event, now enters the 2023–24 season as a top-10 team. Anna began rowing in seventh grade and hopes to compete in the sport for a Division 1 college.
• They’re all smiles. They don’t swim or sing, but siblings Madeline and Tyler Lapman are making people smile in other ways. The Freehold Township High School students founded Project Smile at their school with the goal of providing toys for pediatric hospital patients through fundraisers and donation drives. Last year, Project Smile collected and donated 800 toys—worth more than $3,000— to K. Hovnanian Children’s Hospital at Hackensack Meridian Jersey Shore University Medical Center.
• Cooking up a storm. Some college students worked summer jobs while others took well-deserved vacations. Brookdale Community College’s Gabriela Ramirez Hernandez, a Long Branch resident and culinary arts student, spent a month training at Yomisha Yakitori restaurant in Sado, an island off the coast of Japan. Gabriela had been awarded the Benjamin A. Gilman International Scholarship to help offset the cost of training. Before she departed, Gabriela said: “When I go to Japan, I am most looking forward to gaining new perspectives in my culinary field and in everyday life. This will be a life-changing experience for me, and I’m going into this head first!”

Somehow both capacious and cozy, a newconstruction Holmdel home became a country-inspired “wow” for its owners.

They added custom details throughout the entire home, including cabinetry, millwork and window seating in the large kitchen. The light over the dual-level island is by Crystorama Lighting.
It was an HGTV moment. After a year of planning and six weeks of getting everything in place, the designers who revamped this brandnew home in Holmdel orchestrated a big reveal for their clients to see it once it was completely redesigned and finished—and not a minute before. “They kept saying, ‘Girls, how did you do this?’” says Victoria Mancino Kroeck, an associate of Jill Ryan Interiors in Tinton Falls. “They were in shock and excited.” And that’s because Jill Ryan and her team turned what was originally called a “vanilla box” new-construction build into one of their favorite design projects of all time.
This home is the antithesis of cookie-cutter. The house was built on a prime spot in the Bell Works development—you can see the Bell Laboratories Transistor Water Tower from the kitchen
window and backyard. And the interior needed to reflect its fantastic location. The clients, who have six kids and seven grandkids, wanted “modern with a little bit of a farmhouse flair,” says Ryan. The three-bedroom, four-bathroom home needed to be cozy, accommodating to their large family and suited to their personal style.
Instead of falling back on all-white everything, Ryan and her client worked with the contractor, Toll Brothers Regency at Holmdel, to select and install the vanities and cabinets in the bathrooms and kitchen, respectively—and make them interesting. A drop-down island in a rich navy blue has a dual purpose: food prep on one side, seating for five to six people on the other. The bedrock granite island is custom, as are the beams and millwork in the ceiling, a pair of built-in window seats and
even the brick accent wall behind the banquettes. Complementary but not too matchy-matchy is the nearby dining room, for which Ryan chose wide-plank flooring, silk draperies by Kravet and a wool-textured geometric pattern rug by Masland that also goes up the stairs as a runner.
This home isn’t lacking in the sitting-room department, with one conveniently located on each floor. Off the foyer and the dining area is what the homeowners have dubbed “the Friday room,” where they sit and relax with a cocktail in anticipation of the weekend. But with a duo of custom-built desks, it’s become useful during working hours too, and is among their favorite spaces to hang.

wall of sorts in the middle (with custom cabinetry and millwork by Brick-based Sharpe Creations). One side has a countertop with stools for a custom bar and TV area, along with a custom banquette and dining table for game playing and dining. There’s also a football shrine here, a nod to the homeowners’ two grown sons, who played at the college level. On the other side sit four swivel chairs and a studded hexagonal ottoman from Precedent Furniture, to keep that cozy vibe going. This zone is primarily neutral, but gets a welcome punch of color from the orange dog painting by Wendover Art.
Enough seating? Not a problem. Upstairs between two bedrooms is a loft space featuring a double chaise sectional by Sherrill Furniture. The design team built the fireplace from scratch (with the help of Woodsmith Woodwork in South
Amboy) and painted it blue and white to resemble the kitchen, in Sherwin-Williams Sea Serpent and Benjamin Moore’s White Dove. Flanking the fireplace on either side are twin shelving units by Lexington Furniture.
Whimsy is the word for the grandkids’ bedroom, featuring the library-inspired Bella Books Confetti wallpaper by Kravet and a grainy, starry wallpaper on the ceiling. Shaker molding millwork separates the two prints so that they’re beautiful together, rather than too busy.
“We used a lot of textured wallpaper in this home,” says Ryan. Examples include a silver damask grass cloth in the powder room, a metallic floral in the laundry room and a sophisticated solid blue suede with a geometric design of tiny metallic rivets by Wolf-Gordon. The lady of the house got a custom walk-in closet here. “She
really wanted a lot of texture and comfort in the primary bedroom,” says Ryan. Her husband’s stuff is stored in an equally spacious built-in wall of custom cabinetry.
The couple didn’t live in the home while every detail was being put in place, and they weren’t even allowed to peek while it was in progress. The six-week-long installation period involved all the custom millwork, the painting, the drapery and shutter installation, as well as the staging of all the furniture and accessories, Ryan says, which led up to the perfect “wow” moment. “We spent the entire week before they moved in at the house making sure every detail was perfect, and we served champagne, Orange Crush—our clients’ favorite drink—and crudités,” says Mancino Kroeck. “This job was truly a labor of love, and they loved everything.”

Take it inside at iPlay, Freehold. Whether it’s a rainy day or you simply want to avoid the crowds at Jenkinson’s Boardwalk and other tourist-centric spots, you can spend a solid few hours (with or without the kids) at iPlay. This indoor entertainment center has amusement park rides, an arcade and boardwalk games, as well as attractions such as laser tag, a TopGolf swing suite and two brandnew additions: the Ballocity play structure and the interactive XD Dark Ride.
Pro tip: Guests can’t bring in their own food or drinks to the park, but there’s a new restaurant called The Loaded Spoon, as well as snack vendors, located inside. Prefer a quieter day at iPlay? Wednesdays are half-off ticket prices, and on Thursdays you can earn double the tickets.

Experience the great outdoors at Allaire State Park, Farmingdale. This property is best known for its historic Allaire Village, a 19th-century iron-making town complete with a museum and a railroad that’s a little slice of Monmouth County’s storied past.
But there’s also 3,200 square feet of grassy areas at this park, bustling with more outdoorsy activities. Go fishing along the Manasquan River, which is stocked annually with trout, camping at one of its 45 campsites or hiking, biking or horseback riding at one of its many trails. Animal lover? The Atlantic flyway is a hotspot for migrating birds, plus dogwalking is permitted on trails.
Pro tip: If you’re looking for hiking trails, park near the south side of Allaire, which features hundreds of acres of unmarked trails perfect for adventurous explorers.

Find your wild side at Turtle Back Zoo, West Orange. Whether you prefer animals in the sea or in a tree—or housed in spacious enclosures—this zoo in Essex County is where your family can commune with more than 200 species. Grab a free map and head to the revamped Wild America exhibit (formerly known as Wild New Jersey), with bald eagles, hawks and ravens. Of course, there are more interactive displays and things to see, including gift shops and the Savannah Café for those who work up an appetite. And each section of the zoo is easily accessible: Outside strollers are permitted (they’re also available for rent), and the facility is ADAcompliant and friendly to service animals.
Pro tip: The zoo permits outside snacks, so pack sandwiches, pretzels and popcorn to nosh throughout the day (or to cater to the fussy eaters in your group). Just don’t share your food with the animals!

“Sea” the world at SeaQuest, Woodbridge. For an up-close-and-personal experience, visitors have the chance to touch and pet specific animals, and special food is available for purchase so that you can feed animals “dessert.”

FRENCH ONION SOUP BURGERS
Yields 2 servings
INGREDIENTS
n 4 Tbs. butter
n 4 cups red onions, thinly sliced
n 8 oz. ground beef
n 1 oz. French onion soup mix
n 3 oz. Gruyere cheese, sliced
n 2 oz. Gruyere cheese, shredded
n 2 hamburger buns
DIRECTIONS
Heat a large skillet over medium-high heat. Add the butter and swirl until melted.
Cook the onions, stirring occasionally, until golden brown and caramelized. Add a few tablespoons of water as needed to keep the onions from getting dry.
Fold the French onion soup mix into the ground beef. Form 4 thin patties out of the ground beef.
Place 1 tablespoon of the onions in the center of one of the patties and top with half of the shredded Gruyere cheese.
Carefully place another patty on top and press the edges together to seal the burger.
Repeat with the remaining 2 patties.
Preheat a griddle pan (or grill) to medium-high heat. Cook the burgers 5 to 7 minutes and then turn the burgers over.
Top with the sliced Gruyere cheese and cook an additional 6 to 8 minutes or until the burger is cooked to your liking.
Toast the buns and place on patty on each of the bottom buns. Top with the remaining caramelized onions and serve.

Spicy Mayo and Slaw
n 1 garlic clove, finely grated
n 1/2 cup mayonnaise
n 1 Tbs. Louisiana-style hot pepper sauce
n 1/2 small red onion, thinly sliced
n 1 jalapeño, thinly sliced
n 4 cups cabbage, thinly sliced
n ½ cup bread-and-butter
pickle slices, plus 1/4 cup pickle juice
Fried Chicken and Assembly
n 2 cups all-purpose flour
n 1 Tbs. ground
black pepper
n 1/2 tsp. kosher salt plus more
n 1 cup buttermilk
n 2 8-oz. skinless, boneless chicken breasts, halved crosswise
n peanut or vegetable oil
(for frying)
n 4 white sandwich rolls
n 2 Tbs. unsalted butter, room temperature
DIRECTIONS
To make the mayo and slaw, mix garlic, mayonnaise and hot pepper sauce in a small bowl; cover and chill. Toss onion, jalapeño, cabbage, pickles, and pickle juice in a large bowl to combine; cover and chill.
To make and assemble the fried chicken, whisk flour, pepper and ½ teaspoons salt in a shallow bowl. Pour buttermilk into another shallow bowl. Working with 1 piece at a time, dredge chicken in flour mixture, shaking off excess. Dip in buttermilk, allowing excess to drip back into bowl. Dredge again in flour mixture, shaking off excess.
Pour oil into a large heavy skillet to a depth of 1/2-inch. Prop deep-fry thermometer in oil so bulb is submerged. Heat over medium heat until thermometer registers 350°.
Fry chicken until golden brown and cooked through, about 3 minutes per side. Transfer to a wire rack set inside a baking sheet; season with salt.
Spread cut sides of rolls with butter. Heat another large skillet over medium heat. Working in batches, cook rolls buttered side down until browned and crisp, about 1 minute. Spread with spicy mayo. Build sandwiches with rolls, chicken and cabbage slaw.

New Flame In Town
Spanish and Mexican eatery La Candela Gallega lights up the dining landscape in Colts Neck.
There’ve been a few recent additions to The Orchards at Colts Neck strip mall over the past few months, but none struck my fancy the way the new restaurant La Candela Gallega did. I usually visit this retail plaza when I have a hankering for a cup of coffee or a slice of pizza, but I wondered: Might the new eatery become my new go-to for Spanish and Mexican cuisine?
A friend and I stopped for a late lunch at La Candela Gallega (meaning “the Galician candle,” a reference to the Spanish region of Galicia) about a month after its grand opening in June. We were delighted by the festive décor: Bright florals hung from the ceiling and even brighter bottles of Mexican soda lined one of the walls. After a boisterous greeting, our delightful host and server, Rene, showed us to our table and presented us the hefty (and heavy) six-page menu.
Trying to choose appetizers and entrées here is like browsing an extensive New Jersey diner menu—everything is appetizing. Do we nosh on fried calamari and empanadas or try the tempting seafood bisque? We finally decided on New Zealand mussels, a plate of six opened shells in a savory “green” sauce. The sauce, made of parsley, garlic, onion and white wine, surely hit the spot, its creaminess giving the mussels extra flavor. Though diners have the option to select from nine different sauces for seafood dishes, we knew after one taste of the “green” that we’d made the right decision.
Filling our craving for something crispy, we also had fresh guacamole and chips to start. The avocado mashup had just the right amount of all the key ingredients: onion, garlic, tomato and parsley. The chips were thick and toasty, so there was little risk they’d shatter if you tried to scoop too much guac.
In addition to our appetizers, Rene also brought a basket of warm, crusty bread to our table. It was a type of bread more suited for a steakhouse than for a Spanish/Mexican restaurant, my friend and I thought, so we
decided to avoid filling up on extra carbs and left it alone—for the moment.
We were finishing the guacamole when our entrées arrived. I had toyed with the idea of getting authentic Mexican tacos, but instead went with a big plate of diced pork and clams with a colorful mix of veggies. The sizzling platter was overflowing with tender pork, and many pieces had melt-in-your-mouth fat still clinging to the meat. The tangy sauce (flavored heavily by the olives and spices in the dish) had a kick, which was tamed by the potatoes on the plate as well as the thinly sliced spuds and yellow rice that came as side dishes.
A fan of Spanish-style seafood in stews and rice dishes, my friend had broiled scallops in her choice of garlic sauce. Accustomed to receiving three or four scallops when ordering at a restaurant, she was overwhelmed when our server opened a pot and poured more than a dozen oversized scallops onto her plate. The garlicky aroma made both our mouths water, and lucky for me there were plenty of scallops for me to sample. Both of us devoured our entrées, making me think she should have ordered the scallops and shrimp in the same sauce, which would have given us a few more bites!
Ah, but we did have something extra to eat. The bread that had been pushed to the side at the start of the meal reemerged, and we (mostly I) ripped off pieces and dipped them into the garlic sauce. We must’ve sopped up every last drop because our bellies felt as if they’d reached their breaking point.
La Candela Gallega didn’t offer a dessert menu when we visited in July, but it does have a lengthy kids’ menu and plenty of mocktails, smoothies and other drinks. At the end of our meal, we toasted with a couple of sips—grapefruit Jarritos for me and freshly squeezed orange juice for her—and thought about what we’d order next time at our new go-to spot.
