We are officially well past the peak of COVID-19 in New Jersey, so now is the time to start thinking about rescheduling any medical appointments you may have put off during the pandemic. We understand some people may be hesitant to seek medical care during this time of so many unknowns, but rest assured that we at Saint Barnabas Medical Center (SBMC) are taking all necessary precautions to ensure that our patients and our staff are safe and well taken care of. For example, we enforce stringent disinfecting rules throughout the hospital, perform temperature screening upon entry to our facilities and maintain strict social and physical distancing practices. Still, we cannot forget what we’ve all been through, and we are so thankful for the tremendous support that our community has shown us over the past few months. We set up the Emergency Response Fund for donors to help bolster the Emergency Departments across all RWJBarnabas Health affiliates, and we are humbled by the support and appreciation. Hello, Summer Traditionally, our summer issue extols the virtues of the great outdoors, and this year is no different—except, well, it is. Faced with continued social distancing and the uncertainty due to COVID-19, visiting our parks, courses, trails and beaches takes a lot more planning. Perhaps that’s why this issue has me especially excited about our very own backyard beauties. Now more than ever, we’ll need inspiration from our talented landscape designers to deliver distinctive spaces that will help us forget what we’ve been through and encourage us to get out and enjoy the balmy weather. That’s exactly what Rich Cording did for a Montclair family whose small backyard was dominated by a lot of lawn. The owner of CLC Landscape Design, Cording created an inviting and entertaining space with a swimming pool, dining space and lounging area. Turn to “There’s Room for Fun” on page 36 and see the project that keeps the family in the yard for hours. Thomas Fitzsimmons of Artisan Landscapes and Pools had a similar task when designing the swimming pool outside of a Boonton mansion. To get the family out of their cozy home, Fitzsimmons and his team designed a backyard sanctuary so architecturally stunning that it resembles an ancient Roman bath. And speaking of the great outdoors, be sure to check out “Return to Nature” on page 40, where we provide a snapshot of the best places in Morris and Essex counties to fish, bird watch, get a little R&R and more. SLOW RIDE, TAKE IT EASY While curbing motor vehicle traffic and limiting mass transit options, the coronavirus shutdown has breathed new life into two-wheel travel. To keep bikes a viable transportation option, stores such as Whippany Cycle, Cycle Craft in Parsippany, Urban Cyclery Shop in East Orange and Diamond Cycle in Montclair have been deemed essential businesses and permitted to remain open with restrictions during the pandemic. Though most shops have halted their showroom hours, many are offering online sales and repair service for curbside pickup and home delivery. “Because of the pandemic, people have been driving less and using bikes to get around now,” notes Michael Hassan, a competitive rider from Montclair who recently had his bicycle tuned at Diamond Cycle. If the pandemic has inspired you to unearth your bike from the garage, Hassan suggests three tips: • Service your bike. Have a professional check its chain, tires, brakes and bearings. • Check your helmet. Make sure it fits properly. The foam in most helmets wears down because of heat and other environmental factors, giving most helmets a three- to fiveyear life span. • Be visible. When you share the road with motorists, wear bright-colored clothing and outfit your bike with rechargeable daytime running lights that have a flashing setting.
WAKE-UP MUSIC It’s a good thing Verona resident John Palatucci followed through on a friend’s “dare” to record his rendition of “Abblasen,” the uplifting theme song for TV’s CBS Sunday Morning, and submit the video to the show’s producers. About two weeks later, on April 29, the show used Palatucci’s 37-second euphonium performance of “Abblasen”—a German term that loosely translates to “cancel” or “call off”—to launch the day’s social media feeds. Since the COVID pandemic took hold in March, Sunday Morning has been featuring a viewer submission on Facebook and Instagram to start each morning. “I worked on it for about 30 minutes, and I didn’t even know if they received it,” says Palatucci, a retired music educator who taught at Madison High School and Eastern Christian School, among others. It wasn’t until a friend shared the show’s posts that Palatucci learned he’d been put in the spotlight. “I look great and sound great, and my friends say I look terrible,” he jokes. Since it was posted, the video has been viewed nearly 4,800 times on Instagram and liked more than 940 times on Facebook. “The response has been overwhelmingly positive,” he says. “Given where we are today, doing this was a lot of fun and gratifying.”

HELPING THE HELPERS Schools are closed these days, but young scholars are just as enterprising as ever. Roxbury STEM students have been putting their science, technology, engineering and math skills to good use during the pandemic— beyond the classroom. Since mid-April, the kids—with their teachers’ assistance—have been making face shield frames and mask straps to donate to frontline workers at area hospitals. Using personal 3D printers and the Roxbury High School robotics team’s equipment, the students (from both the high school and Eisenhower Middle School) have been making the personal protective equipment (PPE) to increase the safety and comfort of medical professionals. The students have donated approximately 400 face shield frames and 400 mask straps. “I think this has been an important lesson for my students about civic duty and being a good neighbor,” says Phil Moskowitz, middle school STEM teacher and robotics advisor. “I feel the true measure of a person is what they do during times of adversity...If after six weeks our masks have potentially saved even one life, then our time has been well worth it. However, I honestly think our efforts have helped save more than just one.”

Doctors, nurses and first responders have become the faces of heroism in the coronavirus pandemic—and deservedly so. But let’s not forget to thank those unsung heroes, the essential workers who have been doing their best to keep things normal for the rest of us: postal and parcel service employees, gas station attendants and auto mechanics, sanitation crews and food delivery drivers. For example, there’s Marc Aronson, owner of Four Aces Landscaping. His crews have been following social distancing guidelines and wearing masks on the job. “While people are at home, they’re spending more time in their yards,” he says, “so they want something beautiful to look at—that’s where we can help.” And then there’s Patrick Smart, a grocery store clerk in East Orange. With nonstop interaction with customers, employees like him are continuously at risk. “We follow the highest safety guidelines, and our shoppers have been cooperative too. Everyone is in the same boat...we all want to be safe,” he says.

ART ON THE GO Craving creativity? Take a quick trip to the South Orange Performing Arts Center. Though the entertainment venue hadn’t reopened as we went to press, that hasn’t stopped the “Inspired Minds: Young Artist Exhibition.” Now in its sixth year, this exhibit showcases the work of Essex County’s high school artists. But instead of filling the center’s Herb + Milly Iris Gallery, prints of the students’ pieces, 64 total, are mounted in the SOPAC’s large glass windows for passersby to admire. “This year, students were torn away from classes and their friends, and all the momentous events were canceled,” says Linda Beard, the center’s director of community engagement. Roughly 1,000 pieces were received, Beard says, which were scored by curators and professional artists. The highest scoring pieces were selected for the exhibit. “This is such an accomplishment for the students; we couldn’t not hold it. It was important to us that these students not have another thing taken away from them.” The exhibit will be on display through Aug. 17, and it can be viewed online at sopacnow.org/inspired-minds. • South Orange Performing Arts Center, 1 Sopac Way, South Orange, 973.313.2787
TELL YOUR STORY Whether you’ve been on the front lines, WFH while schooling children or quarantined alone in your apartment, you have a coronavirus pandemic tale to tell. And if you’re willing to share it, the Morris Museum wants to hear from you. Temporarily closed to visitors, the museum is nevertheless busy compiling an oral history from COVID-19 stories. It has set up two dedicated phone lines residents can dial to leave their stories via voicemail. When the pandemic ends, staff will download these accounts, then preserve them in the archives. Voicemails should be no longer than five minutes (rehearse your story in advance), and while callers can remain anonymous, the museum requests names and brief personal information to give material more “historical value.” Written stories will be accepted via email. “I explained the challenges of working from home while trying to teach two children,” says Madison mom Gina Neary. “Maybe one day my great-grandkids will hear what we went through.” Leave your stories at 973.971.3727 (English) or 973.971.3735 (Spanish), or send them to morriscountycovidhistory@morrismuseum.org.
ALWAYS A MCBRIDESMAID? Twenty-nine-year-old Nutley native Christina Kapushy— stage name Ckay—was a contestant on Season 2 of NBC’s Songland, where undiscovered songwriters pitch their original material to a panel of judges and global superstars. The opera singer and songwriter appeared in the May 4 episode with special guest star Martina McBride and performed her original song “Heroes.” “The verse is very Adele,” said judge Ryan Tedder after Ckay took the stage. Kapushy made it onto the studio round, when she worked with Shane McAnally to finesse the melody and lyrics and make the song perfect for McBride. McBride ultimately chose another competitor’s tune to record and release, but Ckay still made us proud! MSXHEALTHANDLIFE.COM

CREAM? SUGAR? FUR? We get it: this pandemic threatens to become one long bad hair day. But surely you’ve noticed that Rover is in need of a grooming too. That’s the challenge for dog owners such as Belleville’s Marci Alvarez, who began finding her 3-year-old golden retriever’s fur in the most unlikely places. “It was ending up in my coffee!” she says. “I was doomed when the pandemic hit and groomers closed.” But tails began to wag again in April, when Gov. Phil Murphy declared that pet grooming, day care and boarding businesses could reopen provided they adhered to social distancing guidelines. And good canine hygiene makes a difference. Proper dog grooming not only cleans fur and removes dead hair, dirt and dandruff; the pros also can detect issues with the skin, nails, teeth and ears and other health conditions. “You might take your pet to the groomer more than the vet,” says Tricia Hillman, owner of Denville-based mobile groomer Spot On Spa. “As a result, we can detect and monitor any lumps or infections that may need medical attention. This is also tick and flea season, so it’s important to have your pets checked and bathed to get rid of those pests.”

“Aneurysms are a progressive disease and they need to be followed carefully by a specialist—both a surgeon and cardiologist—because they tend to grow. Every patient is different, and we always try to individualize treatments.” If a patient has to undergo a surgical procedure, he or she undoubtedly wants the best of the best doctor to perform it. That’s especially true if you need an operation on your aorta, which has the ever-important job of carrying blood from the heart to the rest of the body. Ioannis Loumiotis, M.D., cardiothoracic surgeon at Saint Barnabas Medical Center and Newark Beth Israel Medical Center, explains here the differences in the types of aortic surgeries, whether or not aortic aneurysm has genetic ties and the two highly specialized aortic operations he performs at RWJBarnabas Health. Q: What are the most common types of aortic surgeries you perform? A: I perform the entire spectrum of aortic surgery, including complex aortic valve repair, bicuspid valve repair, valve sparing root replacement, total arch replacement and thoracoabdominal aneurysm surgery. I perform both open (chest) and endovascular aortic surgery. Q: What are the differences between these two methods? A: In open surgery, we do an incision in the body, localize the aneurysm, resect the piece of the dilated aorta and replace it with a dacron graft that is basically a cloth material that has been used in cardiac surgery for decades. Alternatively, endovascular surgery makes use of catheters through a remote location, the groin for example, to deploy a stent graft to the aneurysm. However, not all patients and pathologies can be treated with either surgery, and there are numerous factors that a surgeon takes into account when deciding on the approach. Q: What is the hospital stay and recovery like for each of these procedures? A: The usual length of stay for open surgery is between 5 and 7 days. With endovascular surgery, which is a less invasive treatment, it’s usually 1-2 days shorter before discharge. Q: Who is at risk for aortic aneurysm? A: There are a lot of risk factors for developing an aneurysm, and many of them are like those causing heart attacks and heart failure. Patients with high blood pressure, atherosclerosis, smokers and those with certain autoimmune diseases are at high risk of developing aneurysms. If someone has a family history of an aortic aneurysm, he or she definitely has to get checked out. Studies have shown up to 20 percent of aneurysms have a familial component. There is also a genetic component in aneurysm formation. Certain connective tissue diseases like Marfan syndrome predispose patients to develop aneurysms at a younger age.
Q: If someone does have one of these genetic predispositions, can he or she still limit the chance of needing aortic surgery? A: These are progressive diseases; once you have a stretch of the aorta it’s always stretched, but you can decrease the rate of stretching. Avoid smoking, control your blood pressure and the most important thing of all is to have regular checkups with your aortic surgery specialist. Aneurysms are a progressive disease and they need to be followed carefully by a specialist—both a surgeon and cardiologist— because they tend to grow. Every patient is different, and we always try to individualize treatments. Q: What determines whether or not a patient needs surgery to treat their condition? A: We know for a fact that there are specific thresholds that when they are met the patient needs surgery. The absolute aneurysm size is one of them, and when it reaches a specific size, the risk of complications like rupture, dissection or even death is significantly increased. Importantly enough, every patient is different and he/she could also have other risk factors, like rapid aneurysm growth, family history of aneurysms or a connective tissue disease that brings the threshold to intervene to lower levels. In our aortic program, we tailor our approach to each patient in order to achieve the best outcome. Q: What are the symptoms of an aortic aneurysm? A: Actually, the majority of patients with aneurysms (90-95 percent) are asymptomatic. Patients don’t know [if they have one] and usually only find out while undergoing imaging such as CT scans for other reasons. If they do develop symptoms, which may include chest pain, back pain or shortness of breath, this usually means the disease is quite advanced. We try to intervene beforehand by monitoring and operating sooner. Q: What other aortic procedures do you perform? A: Among others, I perform highly complex operations that are not really common and only a handful of surgeons can perform. The first is called valve-sparing root replacement. I perform this operation on patients who have an aortic root aneurysm and who need replacement of the aortic root, but I keep their own aortic valve. The benefits are that patients do not need to be on a blood thinner and they also have less of a chance of requiring another operation in the future since prosthetic valves can degenerate with time. The second is highly complex thoracoabdominal aneurysm surgery, which may be performed via open and endovascular approaches. These are patients that have extensive aneurysms involving both the chest and abdominal aorta, a highly lethal condition if left untreated. The open surgical approach is especially beneficial for younger patients, those who have a connective tissue disorder or patients with a chronic dissection, which is essentially when the aorta dissects and degenerates over time. Q: How do you work with other specialists at Saint Barnabas Medical Center to ensure the best for your patients? A. Our team is composed of specialists not only in surgery but also cardiologists and experts in medical imaging. We take a multidisciplinary approach to this complex disease which is tailored to each patient’s unique pathology. We offer consultations and second opinions and we work together with the patient’s referring physician for the best patient outcome.

SUPPORT WORKS TWO WAYS
Throughout the pandemic, community members and donors have shown their dedication and thanks to Saint Barnabas Medical Center, and the feeling is mutual.
Saint Barnabas Medical Center (SBMC) and the community it serves go hand-in-hand. And perhaps never has this relationship been stronger or more palpable than amid COVID-19. In response to the pandemic, the RWJBarnabas Health organization as a whole established the Emergency Response Fund for all of its affiliate hospitals. “Originally it was used for supplies, PPE and equipment, but it’s expanded beyond that,” says Stephen P. Zieniewicz, FACHE, president and chief executive officer of Saint Barnabas Medical Center. “Then, people started asking how they could help.” As of press time, the Fund for SBMC has received upwards of 1,000 donations: about 250 food donations from local restaurants and individuals for staff on the front lines, and the remaining 675 or so in monetary gifts ranging from $25 to $150,000. “This was a very unusual crisis that we’re still making our way through and the community responded in such a heartful way,” says Zieniewicz. “Without hesitation, our community members not only from Livingston but from the surrounding communities stepped forward to show their thanks and appreciation for the healthcare workers.” Many small organizations from local rotaries, chambers of commerce and soccer clubs donated money, as did Temple B’nai Jeshurun in Short Hills. “They felt like they wanted to support the Medical Center, so they started a donor drive page and they’ve donated over $50,000,” the CEO says of the synagogue. Cumulatively, donations have now surpassed the $1 million mark. And to ensure that SBMC shows its thanks in return for such generosity, each and every donor receives a personalized acknowledgment letter and a “thank you” call. Gifts of the tangible variety were just as appreciated, especially by the frontline staff. “I don’t think we ever expected the amount of generosity that came our way,” says Maggie Lundberg, vice president and chief nursing officer and a 25-year veteran at SBMC. “Most of the clinicians on the
front lines could not have gotten off their units to grab something to eat, so having food and beverages brought in was nothing short of amazing.” Lundberg says some of her staff’s favorite gifts included smoothies and Dr. Scholl’s inserts, since they’re on their feet all day. “We have always felt the community’s support, but this was overwhelming and beyond anything I’ve ever seen before.” Additionally, on April 14, local community members and first responders showed their support in another way: by gathering for a Healthcare Heroes parade outside the Livingston facility. “Livingston, West Orange and other surrounding towns had their fire engines and their police cars all come into the roadway of the hospital,” says Zieniewicz. “The healthcare workers came out and we were clapping and cheering, and it was great to see the community recognizing the work our healthcare heroes are doing.” SBMC is still working just as hard to serve its community as we pass the peak of COVID-19, fortunately seeing fewer COVID-positive patients coming into the emergency department and more patients getting discharged. “We are welcoming back services that had been put on hold during the pandemic,” says Zieniewicz. “We are taking precautions and moving forward to safely and reliably serve our communities.”

AN “A”-WORTHY HONOR SBMC has received its seventeenth “A” rating in a row for patient safety and quality.
Twice each year, in the spring and in the fall, The Leapfrog Group releases its scores for hospitals across the country for various measures. And for spring 2020, Saint Barnabas Medical Center (SBMC) has received its seventeenth “A” rating in a row for patient safety and quality. This makes the Medical Center the only facility in the tri-state area and one of only 32 in the country to earn an “A” grade every year since Leapfrog began these surveys. “It’s the continuous and intentional focus of everyone that works at our Medical Center that we create and support an environment that is safe, provides a quality outcome and a great experience for our patients and their families,” says Stephen P. Zieniewicz, FACHE, president and chief executive officer of SBMC. “This is what helps us maintain and achieve this recognition.” The Leapfrog Hospital Safety Grade awards scores to more than 2,600 hospitals in the U.S. across 28 measures of data. And as with many of its other measures, safety and quality is always of paramount importance at SBMC. “We have a daily safety briefing seven days a week
where approximately 40 key managers of the organization participate and discuss any safety issues in the past 24 hours or if they anticipate any in the next 24 hours,” says Zieniewicz. “The good news is everyone is there who can immediately speak to resolve or support a department so we avoid a particular safety issue.” Additionally, each department has a safety coach who does rounds throughout their areas, and there are also monthly department meetings where managers highlight specific safety-related metrics—such as the number of UTI, blood stream and catheter infections— that have achieved continuous successes. So what makes SBMC stand out against its competitors in the safety and quality category specifically? “As nurses, we have administrative support at the highest level,” says Maggie Lundberg, vice president and chief nursing officer at SBMC. “The C-suite team is totally behind what we need to do and what we need for the patients. It’s always patients first.” This also includes having the resources needed to provide nursing staff, the hospital’s largest workforce, with “onboarding and education to keep their skills and competence up.”

A PLACE OF HER OWN This home office is one bright, contemporary room in this family’s secondary residence in Sea Girt, where they spend summers and holidays. (Their main residence is in England’s capital.) Nine years after purchasing the “dark and overly ornate” French-country-style home, they hired Nancy Lucas of N. Lucas Interiors and Decorating Den Interiors in Monmouth County to turn this room into a “bright and streamlined” space. This office is located in the master bedroom suite, a haven for the parents of four. But the man of the house has his own separate work area—this one is designated for the matriarch, who wanted a space dedicated exclusively to her in which she could do her finance work and also just unwind (hence the plush sofa). “She didn’t want drawers or anything like that,” the designer says. “She just wanted to be able to have her laptop and a really clean space that was bright, airy and comfortable.” Mission accomplished. LESS IS MORE Designer Lisa Schiller sought two main qualities when planning her own home office in Scotch Plains. It had to be “far away from the main living area” and “open, bright and free of clutter” so as not to hinder her creativity. So she transformed her sunroom, located 60 feet down the hall from the living room in her ranch-style home, into her own personal hideaway (though she admits her husband sneaks in on the weekends to watch TV away from the kids). Schiller designed around meaningful pieces—“the couch and desk were 25 years old and from my apartment in New York City,” she says—and added in stylistic elements she loves, such as a neutral palette with bursts of bold animal prints and stripes. Her advice for others designing their own home office? “It doesn’t have to be a room with bookshelves, a big desk and a computer,” she says. “Now, thanks to technology, we can have the bare minimum of what we need to work.”
A HOME RUN Why not make a favorite hobby or passion the design inspiration for your personalized workspace? That’s what designer Judy Sturdevant of Freeman Hall Design in Westfield did in this Summit bedroom for her clients’ 23-year-old son, who visits on weekends and needed a room where he could both sleep and get some work done (his employer is a technology consulting firm). “Our clients requested an open plan that would create ample desk and storage space,” Sturdevant says, “as well as showcase their son’s beloved autographed Yankees memorabilia collection.” Using the baseball team’s bold blue hue as inspiration, she built a bespoke desk by the windowsill to make the most of the natural light. “Choose somewhere [for a home office] that the lighting and/or view will impact your productivity and well-being most positively,” the designer advises. She also installed shelving units flanking the desk on both sides. Gold accents in the drawer hardware, brass fittings and lighting elements add contrast and a more modern vibe. “A clean and pleasing aesthetic was of utmost importance to our client,” says Sturdevant. MASCULINE RETREAT Style meets function in this blue-and-white home office situated on the main floor of a house in Bergenfield. It was designed for the husband in finance, who works from home quite often even during ordinary times. Hillsdale-based designer Jennifer Pacca says it needed to be both “handsome and pretty. We thought the navy-and-white lent itself to this; it has a masculine feel, yet the white keeps it bright.” The clients wanted built-ins and concealed storage, which they got in the bookcase behind the desk, as well as ample seating, present in the form of two additional desk chairs and a cushioned window seat. “It’s not that big a room but we maximized the space by keeping the walls and shelving light,” Pacca says, “and just using the pieces we needed.”

Talk about knowing what you want in a swimming pool. The Boonton Township homeowners—a builder and his wife and child—already had a large, tiered backyard. They knew their new pool had to be architecturally stunning and centered along the same axis as the imposing house itself. To help execute their vision they brought in the pros at Pine Brook-based Artisan Landscapes and Pools. But merely stunning wouldn’t be enough. The homeowners also wanted the pool to complement the aesthetics of their mostly modern mansion. “They liked a more finished architectural look, so we came up with a formal design,” says Artisan President Thomas Fitzsimmons, who collaborated with designer Matt Meaney. That design included a Greco-Roman-inspired pool and a patio done entirely in marble to complement it. An elevated spa in the foreground would add a visual focal point. “The pool house is also elevated, so we stepped up the spa to give the eye a vertical element as well and add some dimension,” Fitzsimmons recalls. Two giant fire urns with water features also help reduce the scale of the pool house, he says, which is “tricked out” with a full kitchen, sitting room and a bar. Speaking of a kitchen, this patio was essentially treated as a kitchen counter would be, as each of the coping stones was custom-made and saw-cut out of giant slabs of marble, resulting in minimal cuts to the stone. “Cutting it out of a giant square created nice curves,” Fitzsimmons says of the masonry. “Doing this by hand adds a very rich dimension.” The same meticulous treatment was given to the spa, which is the perfect marriage of the pool and the house itself. It takes on two qualities, says Fitzsimmons: “Half of it is veneered with the marble like the patio, and the water side has a glass tile to complement the pool.” The homeowners were thrilled with the end result. When Fitzsimmons took clients there the other day, he says, “they were proud to show it off.” Left: A grand staircase leads to the pool’s cabana, giving it a “museum-like” effect. A simple dining set is perfect for small groups, but if you anticipate spending several hours outdoors, be sure to add seat cushions with varied colors and patterns to create comfort and a welcoming invite to sit, interior designer Karla Trincanello suggests. “A small bench would also be good to add for more seating that won’t overtake the space,” she says. A trellis with vegetation adds life to this area and provides opportunity to hang strip lighting for parties that go into the evening hours, she adds.

So they hired CLC Landscape Design in Ringwood to help bring their vision to fruition and make the most of their outdoor space. “They have a big house but a small lot, so they didn’t need a lot of lawn,” CLC owner Rich Cording says. “What they wanted most were a swimming pool, a dining area and some blockage and privacy from their neighbors.” After about a month of sketching out the design, Cording and his team, including this project’s lead designer, Burns Benson, got to work. “We wanted to put the pool as close to the setback line as we could, so we put plantings there and it worked out nice visually,” says Cording. Instead of a patio, two sides of the pool are surrounded by florals, such as pink roses, purple Rozanne geraniums and silver lamb’s ear. The team even transplanted some of the homeowners’ existing plants—including a Japanese red maple tree—into the back area and integrated them into the new design. solved the clients’ privacy problem too. Adjacent to the pool, designed by The Pool Boss in Wayne, is a sunbathing spot, and at the opposite end are two separate sections— one right next to the house for grilling and dining, and one for sitting, with a pergola and a natural granite fireplace. “The client wanted a fireplace [instead of a firepit] from day one,” Cording says. “This one is an elongated 54 inches and has a sleek, contemporary look.” The pergola has a louvered system, so the shades can be opened or closed, depending on the weather (and the company). Natural quartzite flooring in neutral shades of gray and beige is both pretty and practical—it stays cool to the touch, so the kids don’t have to worry about burning their feet when barefoot. Another plus? Once the sun goes down, the yard is quite a spectacle, as the LED lights in the pool can change color. There are also bright, twinkly lights built right into the pergola. Cording’s clients were thrilled with the finished product and recommended the firm to family and friends—and the feeling is mutual. “Montclair is one of our best towns,” says Cording. “These people appreciate good design. This is an older home, but the homeowners have a contemporary flair.” JUNE/JULY 2020

MORRIS: GREAT SWAMP NATIONAL WILDLIFE REFUGE Pleasant Plains Rd., Harding This ornithological gem almost became an airport back in 1959, but 3,000 acres were preserved instead as a wildlife refuge—to the relief of local activists. Today, the reservation contains more than 7,600 acres and is a bird-watcher’s paradise. In the Great Swamp’s cattail marshes and grasslands, a variety of state-endangered species (like the barred owl and red-shoulder hawk) can be viewed. Note the Wildlife Observation Center is closed. FRELINGHUYSEN ARBORETUM 353 E. Hanover Ave., Morris Township After local birds return from their winter migrations, they are known to lay eggs at the arboretum. Staff members put out seeds and natural supplies to help the birds build nests, and they take visitors on guided tours around the grounds. Experienced bird-watchers are free to join or simply roam the property on their own. The site is temporarily closed.
TROY MEADOWS WETLANDS New Edwards Rd., Parsippany-Troy Hills Troy Meadows is a large freshwater marsh and home to a number of ordinary, threatened and endangered bird species. Bald eagles are known to nest at Troy Meadows, and other species like the Savannah sparrow, American bittern and black crown night heron call the marshlands their home.

Migrating birds are provided with refuge and food at the bird sanctuary during the spring and fall. For the catch of the day, head to one of the state’s freshwater fisheries—the stock is eager to take your bait. Known more for water skiing, tubing and wakeboarding, Morris County’s Budd Lake is the spot for schools of both small- and large-mouth bass just waiting to tug at your line. There’s also the 2,600-acre Lake Hopatcong, which boasts some of the state’s best freshwater fishing. You’ll be sure to reel in trout, hybrid stripers and catfish, to name a few. Over in Essex County, there are plenty of trout to catch at Verona Park Lake. This smaller body of water is great for amateur fishers and kids looking to cast a line from the shore. Don’t forget that a New Jersey fishing license is required for anyone between the ages of 16 and 70. Fees are $22.50 for ages 16 to 64 and $12.50 for 65 to 69. SPICY KOREAN PORK BULGOGI Yields 4 servings
INGREDIENTS
n 1½ lb. pork belly (or pork shoulder/pork butt) n 3 stalks green onions (cut into 1½ inch chunks, including the whites) MARINADE n 2 Tbs. garlic (grated, approximately 5–6 cloves) n 1½ Tbs. ginger (grated, approximately 1 inch of ginger) n 1 medium onion n 3½ Tbs. gochujang n 1 Tbs. soy sauce (or ½ Tbs. fish sauce) n 2 Tbs. honey (or sugar) n 1 Tbs. sesame oil n 2 Tbs. mirin cooking wine n 3 Tbs. water n 1 Tbs. gochugaru (Korean chili flakes), optional, if you like it spicy
DIRECTIONS
Remove the root end of the green onions and cut them into 1½-inchlong chunks (including the whites of the green onions). Slice the thicker, white ends length-wise again so that they are the same thickness as the greens. If your pork belly comes with skin, remove the skin and discard it. Freeze the pork belly for 1 hour. This will make it easier to slice thinly. If you are using a larger cut of meat like a pork shoulder, you may need to freeze it for a longer period of time. MARINATE THE PORK BELLY Peel the garlic, slice the ginger and cut the onion into 1-inch cubes. In a food processor, blend the garlic, ginger and onion together into a paste. (You can also grate it by hand if you don’t have a food processor.) Place the blended garlic, ginger and onion in a large bowl. Add the ingredients under “marinade” into the bowl with the garlic, ginger and onion and mix everything together. Remove the pork belly from the freezer and thinly slice it, approximately 1/8 inch or thinner. Add the pork belly into the marinade and mix everything well. Marinate it in the fridge for a minimum of 1 hour. To cook the bulgogi, set the stove on high heat and set a non-stick frying pan or a high walled pot (to prevent splatter) on the stove and add a bit of oil into it. Once the oil is hot, add the pork belly in the pan (including any extra marinade, as this will be the sauce). Pan fry on high heat for 8-11 minutes. Pork belly splatters quite a bit, so be careful or wear an apron to prevent staining on your clothes. Once the pork belly is cooked, turn off heat, add green onions and mix the onions around to let the heat wilt it.

GRILLED SPICY SOY CHICKEN WINGS Yields 6 servings

4 lbs. chicken wings ¾ cup soy sauce 1 / 3 cup cooking sherry ¼ cup ketchup 2 Tbs. olive oil 2 Tbs. granulated sugar ½ tsp. ground ginger hot sauce, to baste
DIRECTIONS
Place chicken wings on cutting board and cut through the main joint to separate each wing into a drumette and a wingette. Cut off the tip (attached to the wingette) and discard. Add drumettes and wingettes to a container for marinating or to two sealable gallon-sized plastic bags. Add soy sauce, cooking sherry, ketchup, olive oil, sugar and ground ginger in a bowl and whisk until combined. Pour marinade into container or evenly into plastic bags, if using. Place container/bags in the refrigerator and let wings marinate for 2-3 hours. Heat grill to 375°F. Using tongs, place wings on the grill over indirect heat. Discard marinade. Cook wings for 35-40 minutes, turning them using tongs every 10 minutes or so. Move wings over direct heat and baste with hot sauce. Turn them over after 2-3 minutes and then baste again. Let them cook for another 2-3 minutes. The wings are fully cooked when the center of the thickest part of a wing reaches 165°F. Once done, remove from grill and serve.

VEGAN SEITAN CARNE ASADA TACOS Yields 12 servings
INGREDIENTS
n 1 lb. seitan steaks n 3 dried ancho chiles n 1 chipotle in adobo, seeded for less heat if desired n 2–3 cloves garlic n ¼ cup coarsely chopped cilantro, leaves and tender stems n ½ cup orange juice, freshly squeezed n 2 Tbs. lime juice, freshly squeezed n 2 Tbs. olive oil n 1 Tbs. apple cider vinegar n 1 Tbs. soy sauce n 2 tsp. packed brown sugar n ½ tsp. whole cumin, toasted and ground, or ½ tsp. ground cumin n ½ tsp. salt, more to taste n freshly ground black pepper TO SERVE: n corn tortillas n pico de gallo n vegan queso fresco n minced cilantro
DIRECTIONS
Toast the ancho chiles on a dry skillet over low heat until softened, about 5 minutes, or microwave in 30-second increments until soft and supple. Remove seeds and stems, roughly chop and add the chiles to a blender. Add the chipotle in adobo, garlic, cilantro, orange juice, lime juice, olive oil, apple cider vinegar, soy sauce, brown sugar, cumin, salt and black pepper to the blender. Blend until thick and smooth. Taste and add more salt if desired. Place the seitan steaks in a quart-sized ziplock bag and smother with all of the marinade sauce, making sure the sauce gets in between the steaks and fully coats each one. Seal the ziplock bags and place in the fridge for at least 2 hours, but ideally overnight. When ready to make your tacos, heat a grill pan to medium high heat. Brush the hot pan with a little bit of oil, then remove the steaks from the marinade, taking care to only leave a thin layer of marinade on the seitan. Grill the steaks for about 3-5 minutes on each side, not flipping until blackened char marks from the grill have formed. Alternatively, you can cook these steaks on an actual grill. [Note: if using store-bought seitan that comes pre-sliced or diced, you’ll want to pan fry the marinated strips until slightly charred.] Thinly slice the grilled seitan carne asada and set aside, covered to keep it warm. Heat the corn tortillas, either over the gas flame (for charring) or on a dry skillet, and wrap in a cloth or a tortilla warmer to keep warm. To assemble the tacos, place the sliced seitan asada in a warm tortilla and top with pico de gallo and crumbled queso fresco. Sprinkle on a little extra cilantro and serve with extra thinned mojo sauce if desired. Enjoy!
