As we continue to provide COVID-19 vaccinations to our community and the CDC gradually lifts restrictions, we want to remind you to continue to prioritize your health this summer by seeing your doctor and staying on track with your regular check-ups, screenings and tests, as well as by applying sunscreen and practicing skin safety when you’re out in the sun. June is Men’s Health Month, a reminder for all males to implement healthy lifestyle choices and take better care of their minds and bodies. In this issue of Morris/Essex Health & Life, Michael Kuo, M.D., an internist, RWJBarnabas Health Medical Group, discusses imperative screenings for men of all ages, how to banish the stigma surrounding men and mental health and the importance of establishing a healthy lifestyle and routine right now. Turn to page 20 to read his tips. July 28 is World Hepatitis Day. More than 290 million people around the globe are unknowingly living with viral hepatitis, but the World Health Organization (WHO) anticipates it can be completely eradicated by 2030. In support, SBMC has a hepatitis screening program pioneered and championed by Su Wang, M.D., RWJBarnabas Health Medical Group internist and medical director for the Chinese Medical Program at SBMC, which automatically screens high-risk individuals who come through our emergency department for hepatitis. The program also takes proactive measures in an attempt to mitigate the disparity in outcomes for racial and ethnic minority populations with this chronic condition. Turn to page 22 to learn more about this program and to read 71-year-old SBMC patient Joseph Clayton Jr.’s success story; his hepatitis C developed into liver cancer, but he is now living a healthy life without evidence of disease. Lastly, this issue also gives an update on how two recent, generous donations from The Healthcare Foundation of New Jersey have helped to ensure the safety of our staff and patients during COVID-19 and beyond. The article on page 24 also explains why it is so important to support the Medical Center. We hope you enjoy our June/July issue, and wish you and your family a happy and healthy summer! See For Yourself

We’ve all heard the phrase “a picture is worth a thousand words,” and it’s true. Photos provide a visual narrative; they grab our attention and help us process information. Great images can even prompt us to make certain decisions. Haven’t you wanted to visit a particular place or eat a specific food based on a stunning photo? That’s why we turned to you, our readers, when preparing the Outdoors Issue. We asked you to share compelling images of the places and things you’ve enjoyed here in Morris and Essex counties. For example, instead of telling you about the plethora of birds you can watch with awe, we provide a photo essay showing

you our fine feathered friends. And because we process images in short snippets of time, as fast as 100 milliseconds, you can determine if a new pastime might be something you’d like to explore. After a year of canceled experiences, we thought it would be fun to consider getting reacquainted with our area post quarantine. So, turn to “Where the Birds Are” on page 30 and feast your eyes on the beauty that surrounds us—in the skies and in the trees. The locales spotlighted in that story are just a small sample of our counties’ best outdoor destinations. Mother Nature awaits in all corners, whether you want to feel grass beneath your feet, traverse unpaved trails, voyage across water and more. In “Adventure Awaits” on page 26, we again turn to you to showcase these picturesque places where hiking, boating, horseback riding and other activities are easily accessible. If outdoor exploration isn’t your forte, you can still enjoy the company of others while soaking up the fresh air. That means ditching the quarantine sweatpants and putting on great, fashionable clothing. Flip to “On the Town” on page 34, where you’ll see stunning summer outfits for both ladies and gentlemen. And we can’t talk about the season without mentioning grilling and the Fourth of July. We cover both summer traditions in Buzz, where we interview a product expert from New York City-based appliance retailer AJ Madison about setting up an outdoor kitchen. Also in Buzz, we offer a list of Independence Day events where you and your family can enjoy festivities—in person! If you haven’t ventured far from home over the past year, now is the perfect time to get out. Businesses, restaurants, sports arenas and more have reopened under the most up-to-date guidelines. But if you’re not quite ready for those, the great outdoors awaits your return.

OUR GUIDE TO NEW IDEAS, TIPS, TRENDS AND THINGS WE LOVE IN OUR COUNTIES.

5 RULES FOR YOUR OUTDOOR KITCHEN

As summer arrives and we ease back into in-person gatherings, backyard entertaining has never looked better. “Outdoor living has become an accepted normal, especially with the pandemic,” says Jessica Petrino, editorial director at AJ Madison, a New York-based kitchen and home appliance retailer. “People are realizing their next vacation is in their backyard, so they are taking more time and care with home improvement projects.” Petrino shared with Morris/Essex Health & Life a few recommendations homeowners should consider if they choose one of the hottest projects, an outdoor kitchen: • Keep it all outside. A good setup will reduce or eliminate the need to shuttle back and forth to your indoor kitchen. That means an area with cooking space, refrigeration, a cleanup station and cabinet storage. “We are seeing an uptick in people wanting cabinetry and islands,” Petrino says. “Everyone has separate outdoor cooking equipment and dishes, so why not store them outside? And a faucet is good for handling meats and comes in handy when gardening too. Everything should be centralized in the outdoor kitchen.” • Express yourself. Silver and black are classics, but there are many ways to customize your kitchen. “People are looking for ways to be original, and they’re adding pops of colors,” Petrino says. Brands like Hestan have grill lines in orange, yellow and emerald, while pizza ovens and hearths

Ah, in-person street festivals, in which to walk around browsing homemade crafts and eating the best ear of corn you’ve ever tasted—remember those days? They’re back for 2021, and they’re better (and safer) than ever. These outdoor, sociallydistanced fests are coming to our counties this summer:

can be customized as well. • Worry not about size. Let’s face it: Not all backyards are created equal. It’s easy to fit a grill, a pizza oven, a dishwasher and more when you have a sprawling backyard, but what if you don’t? Petrino says the basics call for 6 feet of grill area, counter space and refrigeration. “Prefabricated modular islands take the guesswork out of it,” she says, adding that models are built with ample counters and dedicated openings for different appliances. • Consider an expert. Though not strictly necessary, hiring professionals to help with your kitchen design can help. AJ Madison staff, for example, can help homeowners choose appliances that fit their lifestyle and entertaining needs, while plumbers can take care of water and gas lines. “People are more committed now to their largescale projects, so they want them to look nice, complement the architecture of the house and most of all be safe,” Petrino says. • Think winter. We’re certain you’re not contemplating snow in June. Well, Petrino suggests it should be in the back of your mind when creating an outdoor kitchen. “It should be close enough so that one can get to the house quickly, and in places where the plow guys don’t pile snow and where snow won’t slide off slanted roofs,” she says. For our infamous winters, appliances made of marinegrade stainless steel are best as they are most resistant to rust.

LET’S GO FOURTH! A summer without proper Independence Day festivities—we’re never doing that again! Towns in Morris and Essex counties are celebrating the nation’s birthday and the (slow) return to normal this year with in-person parties and fireworks shows. In these four towns you can enjoy the revelry: • Lake Hopatcong, July 4, 9–10 p.m. The fireworks here will be held on the water at the Lake Hopatcong Yacht Club. • Livingston, July 4, 8–9:15 p.m. Enjoy live performances of cover songs and originals by The Uptown Band at Livingston High School before the festivities conclude with a fireworks show. • Montclair, July 3, 6:05 p.m. Stay put after you watch baseball’s New Jersey Jackals play the Sussex County Miners at Yogi Berra Stadium: A postgame fireworks show, the biggest of the season to celebrate the Fourth, awaits. • Parsippany, July 4, 7:30 p.m. The celebration held at Parsippany High School will feature music, ceremonies and a fireworks display beginning at sundown. This marks the township’s first first inperson, public event since March 2020. JUNE/JULY 2021

HIGH TIME FOR THAI TIME Thai street food with an actual restaurant to eat it in is what you’ll get at 2Sis Thai Kitchen, Towaco’s newest eatery. Founded by two best friends with a passion for the cuisine, the menu features authentic Thai faves such as pad see ew, lemongrass soup, roast duck, green papaya salad and, of course, peanut sauce for dipping. • 2SiS Thai Kitchen, 634 Main Rd., Towaco, 973.588.4394; 2sisthai.com

YOUR NEW HANGOUT It already has locations in Staten Island and all over New Jersey, but let’s welcome Tommy’s Tavern & Tap to Morris County. This fun hotspot with elevated bar fare is the perfect place for when you and your dinner crew can’t decide what you’re craving. The menu has just about everything, from apps like General Tso’s cauliflower and filet mignon sliders to burgers, pizzas, salads, sandwiches and even sushi and poke bowls. • 1900 Route 10, Parsippany, 973.998.6429; tommystavernandtap.com

ORANGE YOU GLAD THIS PLACE IS HERE? Calling it now: Vegans and vegetarians have found their new favorite spot in South Orange. It’s Michezo, a Black- and family-owned restaurant whose focus is on “real ingredients and a unique experience.” The small-but-mighty menu features creative vegan takes on cheeseburgers, crab cakes, chicken taquitos and pulled pork. • Michezo, 329 Valley St., South Orange, 908.989.3420; michezovegan.com

Dog: Harper, 14-month-old cavapoo Owners: Catie Conboy and Ryan Polachi of Mendham This Morris County couple was last on the list when getting their new puppy from a breeder in upstate New York, and they ended up with Harper, the last pick in her litter. “It was fate because she is perfect!” her proud “mama” Conboy says. And this high-energy pup is a social little one who loves making new friends and taking trips to the vet and the groomer. Harper is a great defensive soccer player who has a ruff and adventurous side too—she loves to walk around Morristown and explore its parks such as Jockey Hollow, Lewis Morris and Loantaka. But most important, she is great for laughs and full of love for her family. “We love her back doubly,” Conboy concludes. Follow Harper along on Instagram @little_miss_harper_ the_cavapoo. If you’d like to see your dog or cat in an upcoming issue, email rita.guarna@wainscotmedia.com.

SHOWS ARE COMING BACK You didn’t think 2020 would make live performances extinct, did you? Happily, live entertainment is reawakening as the world returns to semi-normal, and Newark in particular has big plans. Newark Symphony Hall is moving forward with a $50 million renovation project, which will culminate in 2025 in time for the venue’s 100th birthday. The reno will modernize the space yet still pay homage to its history, and it will also improve the overall look and convenience of Broad Street. Meanwhile, here are two live shows to catch this summer (inquire with each venue about social distancing/masking rules): • Mayo Performing Arts Center, Morristown: Doors tribute band The Soft Parade recreates the experience of being at a real concert performed by Jim Morrison and company. June 25, 7:30 p.m., $29–$49, mayoarts.org • New Jersey Performing Arts Center, Newark: Jersey boy Mike Marino returns to NJPAC for a socially-distanced night of stand-up comedy about the Italian-American experience in the tri-state. Kapeesh? July 10, 8 p.m., $35, njpac.org

{ HEALTH NEWS } SLEEP FOR YOUR HEART

BABIES AND GERMS

Newborns exposed to dirt, dander and germs may be less vulnerable to allergies and asthma than babies in a super-disinfected environment. Researchers say rather than focus on floors and walls, pay attention to keeping the kitchen and bathroom super clean as that’s where the most harmful bugs reside.

RATION NEWS WATCHING

In a study of college students, watching the news for only 15 minutes heightened their anxiety and changed mood negatively. The effects were mitigated when followed up with exercise or a relaxing activity.

People who get a “good” night’s sleep have a 42 percent lower risk of heart failure compared with those who don’t sleep well. What constitutes a good night’s sleep? Getting seven to eight hours per night with little or no snoring, insomnia or daytime sleepiness. —American Heart Association

PRIORITIZING MEN’S HEALTH

Smart lifestyle choices and regular visits with your primary care physician are key to men’s overall health, says a doctor of internal medicine. June denotes the end of a school year and the start of the sunny summer season, but it also marks National Men’s Health Month, a reminder for all males to implement healthy lifestyle choices and take better care of their minds and bodies. So, to inspire you and the guys in your life to get healthy, Morris/Essex Health & Life spoke to Michael Kuo, M.D., an internist at Saint Barnabas Medical Center and a RWJBarnabas Health Medical Group provider. Dr. Kuo, who is fluent in English, Chinese and Mandarin, discusses preventive care and important screenings for men of all ages, the stigma surrounding men and mental health and the importance of establishing a routine right now that involves healthy eating, regular exercise—and annual visits to your primary care physician (PCP). What can a male patient expect at his annual exam? Starting at around age 25, we recommend patients see a primary [doctor] once a year, even if you feel great. The annual exam includes a physical exam, a blood pressure check, a urine sample and bloodwork that tests for diabetes, cholesterol, electrolytes, vitamin D and thyroid [levels]. What are some of the most important preventive screenings you do on male patients and at what age do they start? As primaries, we try to prevent disease from happening—the three big ones are hypertension, diabetes and high cholesterol. We start screening patients for hypertension starting around age 18 and screening patients who are overweight or obese for diabetes between the ages of 40 and 70. What about colon and prostate cancer screenings? Colon cancer is a bit complicated, but we go by the U.S. Preventive Services Task Force recommendations, which say to screen for colon cancer between the ages of 45-75 only once every

Joseph Clayton Jr.

A 71-year-old diabetic and hep C patient who underwent a trio of surgeries at SBMC has a new lease on life thanks to the multi-disciplinary team at The Liver Center.

Joseph Clayton Jr. has a longstanding history with Saint Barnabas Medical Center (SBMC). It’s where he had a kidney transplant in 2009 after complications from diabetes, and where he underwent bypass surgery in 2012. A routine scan in 2019 found a lesion in his liver, and after completing high-quality, dedicated liver imaging, doctors discovered that the lesion was malignant. He was diagnosed at age 69 with solitary liver cancer. “This patient has a history of hepatitis C which was treated; however, hep C does increase one’s risk of developing liver cancer by 1-4 percent annually even when treated,” says Russell Langan, M.D, Chief of Surgical Oncology and Hepatopancreatobiliary Surgery at Saint Barnabas Medical Center. In March 2020, just before the economy shut down because of the pandemic, Dr. Langan and his surgical team performed an innovative surgery on Clayton using a combination of microwave ablation as well as surgical resection. The microwave device, in combination with surgery, has the ability to help clear the surgical margin and thus decrease the risk of local recurrence. It also decreases bleeding at the time of the procedure. After a few days’ stay in the hospital, the Paterson resident, now 71, was discharged and feeling much better—he is currently living a full life without any evidence of disease. “He very well may have been cured of his liver cancer by this surgical intervention,” Dr. Langan says. And Clayton is just one success story among many who are part of The Liver Center at Saint Barnabas Medical Center. In conjunction with the Rutgers Cancer Institute of New Jersey, “SBMC is at the forefront of high quality, evidence-based liver care, where fellowshiptrained physicians use modern technology to treat liver patients,” says Dr. Langan. Its multidisciplinary team treats a wide spectrum of liver diseases, including patients with tumors, cirrhosis and fibrosis and chronic viral hepatitis. The team also monitors those with fatty liver, which is often a result of our more sedentary lifestyle and a high fat, high carbohydrate diet, and is the top-growing cause of liver transplants in the US. Additionally, SBMC has a hepatitis screening program championed by Su Wang, M.D, a primary care physician and Medical Director

SHOWING THEIR SUPPORT

Two generous, recent donations from The Healthcare Foundation of New Jersey ensure the safety of staff and patients at Saint Barnabas Medical Center—during the pandemic and beyond.

Amy Schechner, left, chair of The Healthcare Foundation of New Jersey Board of Trustees, and Marsha Atkind, right, executive director and CEO of The Healthcare Foundation of New Jersey.

The local community has shown unwavering philanthropical support to Saint Barnabas Medical Center (SBMC) and RWJBarnabas Health as a whole since the start of the COVID-19 pandemic last year, and that includes local foundations such as the Millburn-based Healthcare Foundation of New Jersey (HFNJ). Its goal is to “connect underserved people in greater Newark/Essex County to quality health care,” says Marsha Atkind, the foundation’s outgoing executive director and CEO. “We want to help patients from all over the area get the best care possible at Saint Barnabas Medical Center.” So, when the pandemic began, HFNJ focused all its grant-giving efforts on COVID-19, and in April 2020 gave the Medical Center and other

affiliate hospitals within the northern region $50,000 emergency grants. Then, earlier this year, HFNJ approved a grant of $455,350 that provided SBMC with two pieces of technology, each of which has helped tremendously to keep staff and patients safe. One item supported by that grant is the Roche 6800 ($350,000), a molecular lab testing apparatus used in renal transplants and to detect the coronavirus and other pathogens. This machine is housed in SBMC’s labs, and “complements the Medical Center’s existing testing equipment,” says Amy Schechner, board chair of The Healthcare Foundation of New Jersey. “It increases our capabilities of testing for COVID,” adds Kelly Goss, vice president for development at SBMC. “Typically we would test 300 [patients] a day for the virus, but the Roche allows us to administer 1,600-1,800 tests a day.” The second item is the $105,350 Xenex light-strike robot, which is a UVC-disinfecting machine that sanitizes rooms between patients. SBMC had two of these robots pre-COVID, so the staff is trained on it and comfortable with its use. Adding a third to the hospital dramatically increases efficiency, as the robot sanitizes more quickly and effectively than any human could. Ultimately, says Schechner, HFNJ approved these grants because “the Foundation felt they would lead to greater peace of mind for both the SBMC staff and patients,” she says. “They help alleviate the increased medical challenges that SBMC faced due to COVID.” Both of these grants have longevity and impact beyond the pandemic too, says Goss, which she says was in part why HFNJ gave them the green light. It’s always important to support one’s community hospital, but never has it been more imperative than now. “Especially over the last 16 months, hospitals have been overrun and overwhelmed,” says Atkind. “When people in this community need urgent or critical care, we don’t want them to neglect going to the hospital because they’re afraid of COVID—we want to minimize that fear and that risk.” Stephen P. Zieniewicz, FACHE, president and CEO of Saint Barnabas Medical Center, is grateful for the support shown by both individuals and organizations like HFNJ. “We are pleased with the strong relationship we have with The Healthcare Foundation of New Jersey. This partnership helps to advance safety, quality and access, enhancing the care we provide patients and our community,” he says.

“It is important to support our local hospitals because that is where we, as residents of these local communities, turn to in times of a health crisis. The hospitals need the extra funding to supplement what they cannot fund themselves.”

WHERE THE BIRDS ARE Spotting nature’s airborne ambassadors has become a popular pastime, and our counties have great places for it.

Who could get excited about a hobby whose essence is waiting and watching? Birders, that’s who, and there are millions of them worldwide. Birding, or bird-watching, is a relaxing way to commune with nature, but it has thrilling moments too—such as when you identify one of the earth’s roughly 10,000 feathered species that’s new to you. Birds are evolutionary links to prehistory, and they’re also creatures of beauty, fascinating in their varied colors, sizes, shapes, movements and hunting and nesting practices. Birding has become so big that Instagram is packed with photos of cardinals and mourning doves, while livestreams of trees, feeders and nests are watched by thousands on YouTube and Twitch. Whether you’re a casual watcher with a pair of binoculars or an ornithologist with spotting scopes and cameras, birding in Morris and Essex counties is easy thanks to the area’s varied landscapes and its efforts to protect the land. “As I started to educate myself more on birds and wildlife in general, my eyes were opened to the anthropogenic perils that they face,” says Roberto Melendez, a nature photographer whose fascination with birds started when he watched David Attenborough’s BBC nature documentary, The Life of Birds. “Thus, my mission slowly shifted more toward promoting conservation,” he says. “Through my work, I hope to inspire others to engage in conservation efforts and to protect our natural world for future generations.” Where best to practice this hobby? Here’s a birder’s guide to a handful of our popular spots:

Echo Lake Park, Mountainside Though the trail here is a mere half-mile around a petite body of water, a surprisingly large number of bird species may be observed at Echo Lake Park. These include the yellow-rumped warbler, the downy woodpecker, the northern cardinal and the red-winged blackbird, depending on the season. “Species diversity is a good indication of environmental health, which ultimately impacts our quality of life and well-being,” says Mountainside’s Leonard McDonald (@lennysfineartphotos), who took this photo of a black-crowned night heron.

Mahlon Dickerson Reservation, Lake Hopatcong Lake Hopatcong, New Jersey’s largest freshwater lake, has year-round activities such as boating, picnicking, swimming and hiking and of course, birdwatching is among the mustdos. One of the top-rated trails in this area for birding folk is Prospect Point and Liffy Island, where hikers are apt to find red-tailed hawk, tufted titmouse and pileated woodpecker. Lake Hopatcong’s Mahlon Dickerson Reservation is also a hot spot for birds and birds of prey such as the bald eagle. “The peace and quiet is nice on these trails and you will see anything from cardinals and blue jays (pictured here) to hawks,” says Billy Sickley (@billysickley) of Lake Hopatcong, who started photographing birds during the pandemic. “When you take pictures of birds, you have no shortage of subjects in this area.”

Troy Meadows, Parsippany Located downstream from Great Swamp National Wildlife Refuge is this large and diverse watermarsh, a wildlife habitat for ordinary and endangered species of fauna and flora. It is also plentiful in the bird department, since it is located along the Atlantic Flyway and serves as a staging area for migratory waterfowl. “There are no boundaries here, so as long as you are properly equipped, you have free rein to go offtrail and explore like a true pioneer,” says William Jayne (@hurrayitswill) of Madison, who snapped this photo of a prothonotary warbler. “Just make sure you have your camera at the ready!

Cora Hartshorn Arboretum and Bird Sanctuary, Short Hills This historic nature center has programming for adults and children, and its 16.45 acres of woodlands serve as a critical habitat for 45 species of trees and more than 100 species of birds. At the bird sanctuary, look above for birds that CHA divvies up into various categories on its official checklist, which includes blackbirds and orioles, nocturnal raptors, tyrant flycatchers, wrens, thrushes and tons more.

Branch Brook Park, Newark You’d be hard-pressed to scroll through your Instagram feed and not find a few of your friends or acquaintances who visited Branch Brook Park in the springtime, just as its 2,700 Japanese cherry blossom trees were blooming. However, “observing the spray of the fountain, the mirror-like reflection in the pond and listening to the mellifluous tones of the birds draws many visitors from miles around,” says Cedar Grove resident Stacy Ratel (@back_yard_birdie), who took this photo of the American robin, turdus migratorious. But locals come out to see the birds, not just hear them, as this park crosses the North American Flyway and is an important pit stop for migrant varieties. All year long you’ll spot gulls, geese, herons, hawks and ducks, as well as the red-winged blackbird, common yellowthroat and blue jay.

Allamuchy State Park, Mount Olive Tilcon Lake, located within Allamuchy State Park, is a beautiful place to go birding and a favorite spot for members of the New Jersey Audubon Society. Why? The species are plentiful; spottings include orange-crowned warblers, pipit, snow buntings and eastern meadowlark. Shannon Merolla (@shannonbirder) of Long Valley is a fan too. “I have found some amazing species of birds here, from this American kestrel flying overhead to a not-so-common Vesper sparrow hiding in the grasses,” she says. Take in the birds’ sights and sounds from a kayak, while on a hike or when biking the trails.

Great Swamp National Wildlife Refuge, Harding View the wildlife at this ornithological gem via its 11.5 miles of trails accessible by foot, in addition to three wildlife observation blinds and an overlook. In 1959 this reservation was almost transformed into an airport that would have supplemented Newark Airport, but luckily it survived as a nature center and now contains more than 7,600 acres. The Great Swamp’s cattail marshes and grasslands are both a bird-watcher’s paradise, featuring a variety of stateendangered species (such as redshoulder hawk and the barred owl) and, more common yet just as special, birds like the eastern wood-pewee, mourning doves and screech owl, photographed here by Billy Sickley (@billysickley) of Lake Hopatcong.

CHILLED CUCUMBER SOUP Yields 10 servings

INGREDIENTS:

n 2 large cucumbers, 1¼ lb. each n 2 level tsp. Guérande sea salt (or kosher salt) n 1–1½ cups plain whole milk yogurt n 4 Roma tomatoes, 3½ oz. each (optional) n 6 scallions (optional) n 10 walnut halves (optional) n 3 Tbs. finely chopped fresh cilantro n 3 Tbs. finely chopped fresh mint

DIRECTIONS:

Wash and peel the cucumbers, leaving a few strips of skin. Cut the cucumbers in half lengthwise, scoop out the seeds with a spoon and slice thinly. Place the slices in a strainer set over a bowl to collect the juice. Sprinkle the cucumber with the salt, place a weight on top to press it down and let it sit for 15 minutes so the excess liquid in it drains out. Whisk the yogurt in a salad bowl until smooth and then stir in the cucumber juice. Rinse and drain the cucumber slices and mix them with the yogurt. Add more whisked yogurt if you’d like the soup to be thinner or, if you’ve used thick Greek yogurt, you may need to thin it with a little whole milk. Chill for 30 minutes. Meanwhile, peel the tomatoes (if using) with a tomato or vegetable peeler. Cut them in half, remove the seeds and dice finely. Rinse the scallions (if using) and slice thinly. Roughly chop the walnuts (if using).

The walnuts are a wonderful addition to this soup, adding protein, fiber and heart-healthy fats including omega-3 fatty acids.”

—Jennifer Melanson, RD and owner of Jennifer Melanson Nutrition, Montclair

When ready to serve, stir the cilantro and mint into the chilled soup. Serve at once with the optional tomatoes, scallions and walnuts in separate bowls so guests may garnish their soup to taste.

Season with freshly ground pepper and drizzle generously with ½ cup (of the balsamic vinegar, followed by a drizzle of olive oil. Let rest for 2–3 hours at room temperature, adding more vinegar and oil as needed, if the eggplant has fully absorbed them. Just as the eggplant drinks up the vinegar, your guests will devour these golden-brown, melt-in-themouth eggplant slices.

SPECIAL SECTION

MORRIS COUNTY’S

TOP

LAWYERS 2021 TO HELP YOU FIND SOME OF THE BEST ATTORNEYS IN MORRIS COUNTY, across more than 35 specialties, Morris/Essex Health & Life contracted DataJoe Research of Boulder, Colorado to facilitate an online peer-vote process and create a Top Morris County Lawyer list. Attorneys throughout the county were asked to select peers whom they deem are the best within their practice area and whom they would seek out for particular legal needs. DataJoe checked and confirmed that each published top vote getter had, at the time of review, a current, active license status with the State of New Jersey regulatory board. If they were not able to find evidence of a lawyer’s current, active registration, he or she was excluded from the list. In addition, any lawyer who has been disciplined for an infraction by the State of New Jersey regulatory board was excluded from the list. Finally, DataJoe presented the tallied result to Morris/Essex Health & Life for its final review. We recognize that there are many good attorneys who are not shown in this representative list. This is only a sampling of the huge array of talented professionals within Morris County.

ESSEX COUNTY’S

TOP

LAWYERS 2021 TO HELP YOU FIND SOME OF THE BEST ATTORNEYS IN ESSEX COUNTY, across more than 30 specialties, Morris/Essex Health & Life contracted DataJoe Research of Boulder, Colorado to facilitate an online peer-vote process and create a Top Essex County Lawyer list. This is only a sampling of the huge array of talented professionals within Essex County.

Some cases must go to trial, like the international kidnapping case that Deb tried over a 12-day period in Bergen County Superior Court. Cases involving custody and parenting rights must sometimes go to trial, as well, to promote and preserve a child’s best interest. Most cases, however, resolve amicably utilizing alternative dispute resolution processes such as arbitration, mediation and collaborative law. Deb is frequently retained as an arbitrator, mediator and collaborative law practitioner and is also listed on the Court-approved roster of economic mediators, is certified in collaborative law and serves on the New Jersey Supreme Court Complementary Dispute Resolution Committee. Deb is a former President of the Morris County Bar Association and the Morris County Bar Foundation. In continued efforts to give back, Deb volunteers with Susan G. Komen, an organization dedicated to eliminating breast cancer.

{ POWER FOOD }

Crunch Time

Almost any occasion is right for the delicious, nutritious, slightly noisy peanut. Did you know that the peanut isn’t really a nut? Botanically speaking, it’s a legume, kin to beans and peas, because it grows in pods underground rather than in trees, where actual nuts develop. Known to science as Arachis hypogaea, peanuts originated in the Andes and were spread throughout Asia and Africa by Spanish and Portuguese explorers. In the 1700s they were brought to the North American continent; in ensuing centuries, with agriculture’s advance, they became a major commercial crop. More than 6 billion pounds of peanuts were produced in the U.S. last year, and China and India are even bigger producers. Peanuts are a ubiquitous snack and a versatile food ingredient, as well as the basis of peanut butter and peanut brittle. These bad boys are so prevalent, with four main varieties (Runners, Virginias, Spanish and Valencias) and a wealth of seasonings (from honey roasted to spicy Cajun), that their sheer profusion may drive you absolutely legumes. Peanuts, however, aren’t for everyone. Peanut allergies affect 1.2 percent of the U.S. population— and 2.5 percent of the kids. For them, consuming peanuts may produce an anaphylactic reaction that can be fatal. For the rest of us the peanut is an old reliable snack— traditional, accessible and more beneficial than you may realize.

contemplating your food’s former face, you can’t go wrong with peanuts. The USDA reports that just one ounce can account for 15 percent of your daily recommended protein intake. But you needn’t be a vegetarian to appreciate peanuts. Relatively low in carbohydrates, they have a low glycemic index, which means they’re better for your blood sugar than, say, white bread or corn flakes. Peanuts can actually cut down on the risk of cardiovascular disease by giving you a healthy dose of vitamin E. They’re also a good source of another heart protector, vitamin B3 (alias niacin), which may help boost brain function too. Peanuts are rich in minerals. One hundred grams—that’s about 3½ ounces—provide slightly more than half of your daily requirement of magnesium (good for muscle function, heart function and energy production) and just under half of your daily phosphorus (good for cell growth and the formation of teeth and bones). They’re fiber-intensive, and although they’re high in fat, it’s mostly a healthy monounsaturated fat that can help reduce the body’s levels of low-density lipoprotein (LDL), “bad” cholesterol. If you choose raw peanuts with skins attached, you’ll get the benefit of the skins’ antioxidants,

POWER UP If you’re looking to get protein without necessarily

which can help prevent cellular damage from free radicals. Because they’re filling, peanuts can also be part of a weight-control regimen. But be aware that a handful of peanuts, 39 or so, has 170 calories, so if you munch heedlessly and the handfuls go on, calories can tally up fast. And if you’re someone who needs to watch your sodium intake—for instance, because of high blood pressure or known stroke risk—choose unsalted peanuts. An ounce of salted dry roasted peanuts contains about 280 milligrams of sodium, so that just a few ounces can rapidly approach the American Heart Association’s suggested daily maximum of 1,500 milligrams. Peanut butter has the benefits of peanuts, but is often manufactured with salt, sugar and hydrogenated fats for flavor and ease in spreading. You can cut down on these additives by choosing “natural” peanut butter. BUY/STORE/SERVE Peanuts can be consumed raw, boiled, roasted or incorporated in a number of prepared dishes. Any grocery store is apt to sell them in the shell and shelled, salted and unsalted (check the baking aisle if the snack section doesn’t have them unsalted and shelled), and they’re a popular cooking ingredient in a number of cuisines around the world, combining a pleasant taste with a satisfying crunch. The shelf life of peanuts depends on whether they’ve had their hard exterior removed. With the shell they can last about four months in the pantry, and without it they’ll last four weeks. Either way, if you put them in the fridge they can endure about a year—if it takes you that long to consume them. “Sometimes you feel like a nut,” a TV ad jingle once sang. So why be technical? Grab a handful of peanuts—even if they’re really NINOs (nuts in name only).

DID YOU KNOW? In 1916, schoolboy Antonio Gentile won $5 in a contest for designing what became one of advertising’s most iconic images: Mr. Peanut.

“I love New Jersey and love to capture its beautiful spots—some hidden in plain view, some truly hidden. This photo of a farm in Boonton Township is one I knew I had to have, with the wispy clouds, the old-growth tree and the beautiful barn. My favorite shots are the things we drive by every day and might not stop to appreciate—especially, in some cases, before they are gone.”
