That’s why the Mountain Lakesbased Lake Drive Program for Deaf and Hard of Hearing Students has developed the Sound Start Program for hearingimpaired kids age 3 and younger. “It’s a very rich, full-day program including intensive language therapy, music therapy and yoga—the only one like it in the state,” says Sueanne Sylvester of the Lake Drive Foundation, which raises funds for the program. “We see such dramatic results from these little ones that we want to get the word out about early intervention to professionals— educators, referral agencies and pediatricians—and, of course, parents.” To that end, the foundation hosted two free talks on April 8 by Jill Stamm, Ph.D., author of Bright from the Start: The Simple, Science-Backed Way to Nurture Your Child’s Developing Mind from Birth to Age 3. What’s Best for the breast? Confused by the latest news in breast health and treatments? Join the crowd. “You can’t look at a magazine or turn on the T V without hearing news about advances in technology or research,” says Ogori Kalu, M.D., a specialist in breast surgical oncology at Montclair’s Mountainside Hospital. “Women get a bit overwhelmed about what to do to stay healthy, or what should be done if treatment is needed.” That’s where the Breast Health Program at Mountainside (973.429.6120, mountainsidehosp.com) aims to come in, with cutting-edge medicine and education. The hospital recently brought its existing breast health resources under one roof in its Harries Pavilion and added Dr. Kalu to its staff. Advanced diagnostic techniques include digital mammography and nonsurgical biopsies. If surgery is needed, specialists perform advanced procedures that also take into account a patient’s cosmetic and

reconstructive concerns, says Dr. Kalu. Throughout treatment, each patient is assigned a “navigator,” a specially trained nurse who will coordinate the case. Whatever a patient’s condition, the goal is to ease the fear surrounding the topic of breast health. “Breast cancer is one of the few cancers that has excellent long-term sur vival rates, particularly when caught in an early stage, ” notes Dr. Kalu. “We can teach women to be a little less anxious and more proactive in screening and doing self-exams.”

S

pring cleaning isn’t only about your home’s interior. What’s outside —from your garden to your pool— needs to be properly awakened from its winter slumber. Once you dig in, roll up your sleeves and get your hands dir ty (literally), you can get your garden looking like something out of a landscape design book. Follow these 10 rules of (green) thumb from top landscapers in Morris and Essex counties to get your garden spring-ready:

SURVE Y THE DAMAGE.

Put on your investigator’s hat and inspect your property. “After a harsh winter, you should look for broken or damaged branches on your trees and plants,” says Ron Cording, owner of Cording Landscape Design in Towaco. Check for any cracks in the swimming pool, dead plants or trees that need replacing or anything else that is out of sorts after the snow and freezing temperatures. Once you know what needs fixing, you can devise a plan.

Perennial plants sur vive the winter thanks to their underground roots. As they return to life, cut them back to promote healthy grow th if you didn’t do it last fall. Ornamental grasses, Russian sage, black-eyed Susans and butter fly bushes are among the plants that should be pruned in spring. Timing is eve r y th i n g w h e n p r u n i n g. Wo o d y o r n a m e nta l s s u c h a s lavender, for example, have to be cut back in late spring or you risk losing the plant. But take care: Improper pruning is a common mistake among first-time gardeners, warns Cording. When in doubt, go online and research your perennials to find out how and exactly when to prune each.

Using organic material from your own garbage (think eggshells and leftover salad) as fertilizer will work if you turn over your compost pile before applying it, says Pamela Dabah, owner of Dabah Landscape Designs in Morristown. Another idea is to use animal manure from pigeons, horses or cows, which you can buy at your local nursery in a ready-to-use form. It’s important to understand what kind of fertilizer your plant needs. For instance, Cording suggests adding a granular fertilizer to plants that are in decent shape and a faster-acting liquid fertilizer, such as Miracle-Gro, to any plants that might have more trouble rejuvenating.

When landscapers do spring cleanups, their clients often ask them to add a little color to their gardens, and you can do the same. Perk up your home’s curb appeal by planting cool-temperature annuals, such as pansies or violas, which can stand up to frost. Early spring is also the perfect time to split your perennials to get more plants out of them and move them to other parts of the garden, says Dabah.

Even if you don’t have pests in your garden, you may want to take preventive measures by applying pesticides. There are many options, from spraying a fine dust to adding ladybugs to control other insects. Three organic treatments to tr y are insecticidal soap, hot pepper wax spray and dormant oil sprays, suggests Cording.

7 Check your sprinklers.

Starting in the first week of May, water your garden for 30 minutes each day, in the early morning or in the evening. (In June, begin watering twice daily.) Your sprinkler clocks have to be set accordingly, and you’ll want to make sure they’re turned on and working properly. Switching to a low-volume sprinkler head will help you conserve water by adjusting the level of watering according to the weather.

You should clean out your gutters three times per year— once in the fall af ter the leaves have fallen, once in the spring af ter the pollen has passed (around the third week of May), and once more during the summer in case any storms leave behind waste, says Peter Liberatore, vice president of Bednar Landscape Services

Inc. in Boonton. Your goal should be to clear your gutters of any debris that might prevent water from easily passing through.

9 Improv e ligh ting, deck s a nd pat hways. Re-stain wooden decks, make sure pathways are free of limbs and debris lef t over from winter storms and replace any lightbulbs that no longer work. You might want to try low-voltage lighting or fiberoptic spotlights to get a sophisticated and soft look, says Richard Sponzilli, owner of Sponzilli Landscape Group Inc. in Fairfield.

Although spring is too early for a swim in Morris and Essex counties, some people open their pools then simply for the look

of it. “I open my pool in April, while others prefer May,” says Cording. “I like to look at it because it’s a natural pool, so it fits well with the landscaping.” You should have your pool’s special features such as waterfalls, fountains and infinity edges, plus main drain covers, pool lighting and tile surfaces inspected annually by the builder or a pool professional. “After heavy snow, you need to make sure there are no loose tiles,” says Cording. “Until you’re ready to open the pool, check that the cover and anchors are secure.” Whatever you do, don’t put off prepping your garden. “Think ahead—people end up spending more time outdoors this time of year, and you want everything to be just right,” says Dabah. “Your garden makes your life happier.” —Francesca Di Meglio

Kristy Ranieri: going green with sustainability It was li v ing for sev er a l years in San Francisco, prior to making Maplewood her home, that took Kristy Ranieri’s ecological awareness to a new level. “Everyone was concerned about water quality and recycling. Every apartment had multiple recycling cans, and reducing waste was really big there before anywhere else,” explains Ranieri, Ranieri in her Maplewood home office

43. “I guess I began modeling my behavior on what I saw.” It was also in San Francisco that Ranieri began working for Circlepoint, a communications and environmental planning consulting firm that primarily works with government agencies to help them to inform, educate and involve the general public in their prosocial initiatives. “Through my work and

“each mayor is trying to out-green all the others!” becoming a mother, I’ve grown much more aware of and passionate about caring for our environment,” she says. One of Ranieri’s local clients is Sustainable Jersey, a two-year-old program that helps New Jersey towns go green (see box at right). Towns that become “Sustainable Jersey-certified” are recognized at an annual awards ceremony. The certification has become prestigious—and competitive. Ranieri says, “Each mayor is trying to out-green all the others!” Ranieri’s own hometown of Maplewood was among the first to become Sustainable Jersey-certified. She helps the town stay eco-smart as a principal member of the Maplewood Green Team, a group of volunteers who are passionate about promoting sustainability. The group’s projects include the annual Maplewood Green Day, an event dedicated to educating citizens about how to im-

plement eco practices and sustainable solutions into their everyday lives, and the Maplewood Green Challenge, which asks each Maplewood household to pledge to take at least five actions (such as switching to energy-efficient lightbulbs) to reduce its carbon footprint. Next up for Ranieri: sustainability in the Maplewood schools. “One day my son came home from preschool quite upset that he didn’t get a turn to go toss garbage into the trash bin,” Ranieri recalls. He’d had no trash to dispose of because Ranieri makes her children “no-waste lunches” without disposable packaging or utensils. Her son’s reaction motivated her to begin working with the school to come up with a campaign to encourage other parents to make no-waste lunches. “Soon no child will have a reason to visit the trash bin,” she says.

Sustainable Jersey Sustainable Jersey is a voluntary certification program for towns in New Jersey that want to become more green and sustainable. Towns must agree to take certain actions, such as supporting local farmers or agreeing to conserve water usage, to reach the minimum points required for certification. Sustainable Jersey provides towns with specific guidance and access to grants—the organization has distributed more than $500,000 to New Jersey communities to help them achieve certification.

Jennifer Carcich: going green by recycling Living ecologically is all Morristown resident Jennifer Carcich, 38, has ever known. “I was born to hippies,” she says. “They instilled in me a pride in myself, the community and the earth.“ The fact that money was tight also contributed to the family’s resourcefulness. “I was never raised to be a consumer,” says Carcich. “We always ate from our garden. We always composted. My mom made a lot of our clothes and we wore hand-me-downs.” Now that she’s a mother herself, Carcich lessens her family’s environmental impact by regularly composting and gardening and landscaping organically and using washcloths instead of baby wipes and cloths in place of paper napkins and towels. Her family uses homemade, all-natural household cleaning solutions,

washable plates, utensils and cups (even for big parties), refillable water bottles and energy-saving lightbulbs. To lesson her carbon footprint, Carcich also truly “runs” her errands. “I take my two youngest in the double jogger and stop at the grocery store, the bank and the post office,” she explains. But Carcich’s commitment to the earth goes beyond her own home practices. Six years ago she formed Morristown Moms & Tots & More (MATAM), an eco-minded community group that started with just three families and has expanded to 210. The group holds weekly discussions using guides from the Northwest Earth Institute, with topics like “Voluntary Simplicity” and “Healthy Planet, Healthy Children.” It also conducts an annual exchange and giveaway

of gently used toys and has organized a system for members to trade magazines and clean local playgrounds. Perhaps the group’s most impressive accomplishment has been convincing Morristown to become the first town in New Jersey to accept expired or damaged car seats into its recycling program. “Child/infant car seats are made of number-five plastic,” says Carcich. “When the town began collecting plastics one through seven, I jumped at the chance to make sure that disassembled car seats would be included.” After many phone calls and letters, Morristown agreed to accept all metal and plastic from the car seats, picking them up curbside along with the rest of the recycling. “I was shocked at how willing to help our local government was and

how smoothly the entire process went,” she says. “It made me so proud of where I live, and it felt so great to know that a small number of voices could make a big change for the better!“ After hearing of Morristown’s success, Morris Township followed suit. “I have fielded calls and e-mails from all over the globe about this program,” says Carcich. Montclair resident Jennifer Chaky, 37, credits her mother for teaching her ecological values. “She was the type who would leave things that could be recycled in the back of her car and make it her business to take them to a recycling facility,” explains Chaky. “Growing up, we were always recycling and conserving water and electricity.” This instilled in Chaky a commitment to doing whatever she could to improve the planet. “When you have that mentality,” she says, “you go through life looking to learn about more things you could do better.” Often it is Chaky who is sharing her knowledge with others as the owner of Go Lightly, a Montclair store that carries an array of eco-friendly products, from basics such as refillable bottles and green cleaning and beauty products to unique and inspired gifts like Vinylux bowls made of molded vinyl records and

cuff bracelets made from recycled license plates. Chaky also writes about greener living on her website, golightlystore.com. “Three years ago, when I first thought about starting my business, I wondered if there would be enough to fill a store,” says Chaky. “Now I could fill a department store—I wish I could carry all the great things I see!” Living green is not only accessible, but also affordable, Chaky insists: “Someone recently said

“i shop locally at independent stores for almost everything.” to me that a green dishwasher detergent may be great for the environment, but not everyone could afford it,” she says. “But actually the big container of mainstream brand dishwasher detergent comes out to 23 cents a load, and what I sell, which is super-concentrated and in a much smaller container, is 16 cents a load!” Chaky recently made a dramatic decision to go carless. “I shop locally at nearby independent stores for almost everything,” she explains. “So when my

car lease came up last September, I didn’t renew.” She’s discovered a bonus to biking and walking: It builds community. “My friend bikes to pick up her son every day and often stops in the store to say hi,” she says. “Then one week she was lent a car, and I literally didn’t see her all week.” To decrease her family’s energy consumption, Chaky also began turning down the heat in her home substantially. “People think this is crazy, but during the winter our heat is set between 50 and 55, just to keep the pipes from freezing,” she says. It was Chaky’s 12-year-old daughter who inspired this innovation. “My daughter had read an article about a town that held a challenge to see who could go the longest without turning their heat on, and the main goal was making it to New Year’s Eve. My daughter said, ‘I bet we can go longer.’ Before I got rid of my car and turned my heat down, my everyday life had been all climate-controlled—from my house to my car to a building. I was working inside all day, and I only walked to my car. I enjoyed the walk, the natural temperature and fresh air. So I decided, ‘Why not take it further?’”

fter the brutality of this year’s winter, most of us are eager to trade our snow shovels in for garden spades. But while warm-weather outdoor activities can be refreshing, the sun-splashed days of spring also spell misery for seasonal-allergy sufferers. “People with seasonal allergies react to exposure to an airborne substance that only appears during a specific time of the year,” says Smruti Parikh, M.D., an

allergist at ENT and Allergy Associates in Parsippany. While perennial allergies occur year-round and are sparked by indoor pests like pet dander, dust mites and mold, the culprits that cause pain from early-March through October are all found outdoors. “In the Northeast, tree pollen is the allergen that causes springtime trouble,” says Dr. Parikh. As trees such as birch, maple, oak and poplar start to flower,

they release into the air a powder we call pollen. When it’s inhaled by someone who is sensitive to that particular allergen, he or she will experience seasonal allergic rhinitis—more commonly known as hay fever. This inflammation of the nasal airways affects more than 35 million Americans, making it one of the most common chronic diseases, according to the American Academy of Allergy, Asthma and Immunology (AAAAI).

Trees in the Northeast typically release pollen only from March to June. The bad news? Once they die down, the grasses kick into high gear, causing difficulty come mid-summer. “From late August to early November, ragweed generates hay fever,” says Dr. Parikh. Then there are molds, which grow when it is warm and damp, such as in spring thaws and on humid summer afternoons. Regardless of the trigger, seasonal allergic rhinitis symptoms are the same. “They can include sneezing, nasal congestion or a runny nose, a scratchy throat, red or runny eyes and itchiness of the ears, eyes and nose,” says Fuad Baroody, M.D., chair of the AAAAI’s Rhinitis, Rhinosinusitis and Ocular Allergy Committee. The amount of pollen in the air determines how severe one’s suffering will be. “Certain highly allergic individuals may even experience respiratory problems, like asthma or wheezing,” says Dr. Baroody. The first thing to do is limit your exposure to pollen. “You can figure out how high the day’s pollen count will be by reading your local newspaper or looking online at weather.com,” says Dr. Parikh. “When pollen levels are elevated, I tell my patients to run the air conditioning in their homes and drive with the windows rolled up.” Because trees, grasses and weeds generally emit pollen from 5 a.m. to 10 a.m., postponing outdoor activities until afternoon is a good idea. “You may want to shower and shampoo at the end of the day, to get pollen out of your eyes and hair before going to sleep,” adds Dr. Parikh. “It’s also important to change when you come in from being outside because huge amounts of pollen can cling to clothes and shoes. Finally, laundering sheets and towels in hot water will help remove any pollen that may have been transferred from your body to your linens.” Of course, none of us can exist in a bubble. If precautionary measures fail, it’s time for treatment. “There are three classes of medication seasonal-allergy sufferers can try,” says Dr. Baroody. Here’s how they break down:

effective for relieving itching and sneezing, but they don’t offer full runny-nose control,” says Dr. Baroody. And while certain newer antihistamines such as Claritin and Zyrtec (both available over the counter) are non-sedating, many of the first-generation agents like Benadryl will cause drowsiness. “That’s problematic

because it can affect job performance and driving ability,” says Dr. Baroody.

Leukotriene Receptor Antagonists (LTRs) Instead of blocking histamines, these drugs block leukotrienes, another inflammatory chemical released by the body

after it is exposed to an allergen. Besides relieving sneezing, itching and congestion to a similar degree as antihistamines, LTRs such as Singulair (available by prescription) can also clear nasal congestion. Another bonus? “They’re non-sedating, and they’ve even been approved by the FDA for preventing asthma,” says Dr. Baroody. “Yet because they’re more expensive than the antihistamines, they wouldn’t be my first choice of medication to prescribe.”

Intr anasal steroids “By and large the most effective medications we have for controlling allergic rhinitis, nasal steroid sprays like Flonase have none of the side effects people typically worry about when taking steroids,” says Dr. Baroody. “There is no risk of becoming addicted to them, and they don’t make you fat or cause hair to grow where it doesn’t belong.” In fact, the worst result is typically an irritated nose. Five to 10 percent of users may experience dryness or bleeding, but even those problems often can be resolved by switching to a different preparation.

Immunother apy Immunotherapy (allergy shots) is an excellent treatment option for people whose allergies are not relieved by medication or who suffer side effects from medication. Each shot contains enough of a specific allergen to stimulate the immune system, though not so much that it will cause a full-blown reaction. Though it’s extremely effective in treating seasonal allergies, immunotherapy does require a time commitment. Injections must be administered once or twice a week for the first three to six months, so that the body can become accustomed to increasing allergen doses. Once the target dose is achieved, patients are weaned to maintenance injections every few weeks. Maintenance therapy is continued for three to five years, after which patients experience immunity that lasts for several years. “The last 15 years have seen great progress in the development of new and more effective seasonal-allergy medications,” says Dr. Parikh. “Now the majority of all seasonal allergy cases can be treated effectively, so see your doctor or an allergist to find the therapy that will work best.”

on T YPES OF CHEESE In my view, the consistency of a cheese and the presence or absence of rind are the easiest ways to categorize cheese, together with how strong the flavor is. Here are seven key varieties: YOUNG, UNRINDED Young goat and sheep cheeses dominate this popular style. When they’re first made, they’re light and moussey, just formed into a small flat disc or cylinder. A few days on they can be

crumbled, and a week or so later, sliced. After a month on they will have acquired a protective greyish coating of mold, often described as a “natural rind.” Better-known ones are the pyramid-shaped Valençay and Tymsboro, and the herbcoated Perroche cheeses. Other well-known examples are Moz zarella and mascarpone. SEMI-SOFT Unlike other cheeses, Bries and Camembert, which are also known as

semi-soft cheeses, get softer as they age rather than firmer and drier. HARD How hard must a hard cheese be? Some experts consider only rock-hard crystalline cheeses such as Parmigiano Reggiano truly hard, but most of us would include cheeses that were cut from big wheels such as cheddar or Gruyère. VERY HARD CHEESES These are the oldest cheeses you’re likely to find—cheeses

so hard they’ve become almost crystalline and need to be shaved or grated rather than sliced. The best-known type is Parmesan or Parmigiano Reggiano but matured Grana Padano and Pecorino (also from Italy), Sbrinz from Switzerland, Roomano from Holland and Vella Dry Jack from California are similar. WASHED-RIND These are described as washed-rinded because the surface of the cheese is rubbed with a brine

(salt water) solution, which promotes the growth of a bacterium which breaks down the texture of the cheese, turning it soft and pliable. Well-known examples are Epoisses, Langres, Munster and Reblochon from France, Chimay from Belgium, Appenzell from Switzerland and Stinking Bishop from England. BLOOMY-RINDed This term refers to the downy white surface these cheeses acquire as they mature. Some bloomy-rinded cheeses are exceptionally rich and creamy thanks to the addition of cream during the cheesemaking process. Referred to as double- and triple-creme cheeses, they’re popular in France, which produces some of the most indulgent examples—Explorateur, Brillat Savarin and Pierre-Robert among them. BLUE Cheeses develop their blue veining when a harmless penicillin mold is added to the milk or curds. Once the cheese is formed fine steel needles are inserted to expose the center to oxygen, which enables the mold to spread throughout. Favorites include Gorgonzola, Roquefort, Stilton and Cashel Blue. On cheese boards The classic approach is to aim for a contrast of textures, tastes and shapes. Mild to strong, rounds and wedges, light against dark, soft and hard— it’s an aesthetic impact as much as a gustatory one. A classic selection would be a young, fresh-tasting goat cheese, a white or bloomyrinded cheese such as a Brie or a Camembert, a hard cheese like a cheddar and a blue such as a Stilton. You could also add a washed-rind cheese, a sheep cheese or a cheese flavored with herbs. What I like to do is create a miniature cheese board for two. You could have two goat cheese buttons, two wedges

of Camembert or other whiterinded cheese, two slices of Beaufort and two radicchio leaves topped with a spoonful of a soft blue cheese such as Gorgonzola or Cashel Blue. Perch two small pots of fruit compote or chutney alongside or a couple of shots of grape jelly, add a few grapes or a couple of fresh figs, some small home-baked rolls or precut slices of raisin bread and some rustic artisanal breadsticks, and you’ve got a very pretty-looking board indeed. On bread In general, softer and sliced breads are better with harder, sliced cheeses and crustier breads like baguettes and ciabatta with soft or semi-soft cheeses. Try Scandinavian-style crispbreads with mild, semi-soft cheeses like Havarti; seeded, crisp flatbreads with creamy cow, goat or sheep cheeses; breadsticks with mozzarella; a baguette with Brie and Camembert; sourdough bread with all kinds of cheeses, particularly washed-rind cheeses and hard sheep cheeses; mixed-grain bread with cheddar, Cheshire and Lancashire; light rye with alpine cheeses such as Beaufort and Comté; darker ryes with creamy, spreadable cheeses. OTHER PAIRINGS In summer, take advantage of the wealth of fresh fruit and vegetables to show off your cheeses. Also, don’t be afraid to introduce a touch of spice. Chili peppers and garlic work well with cheese. One idea: Serve thinly sliced sheep cheese with grilled peppers and almonds as a mini tapas plate with a glass of fino sherry, or do as the Basques do and serve it with a cherry compote and a glass of fruity red wine. Or plate up individual ploughman’s platters with a good chunk of cheddar, some thickly carved ham, a dollop of chutney, an apple and some crusty bread.

Bobolink owners Nina and Jonathan White last year moved their Vernon farm to Milford, where their cows have plenty of room to roam and munch on grass. From the cows’ milk the Whites produce a variety of cheeses, including the Brielike Baudolino, a cave-ripened cheddar and the bold, firm Frolic. Their cheeses are sold at the farm and at a variety of farmers’ markets including Union Square in New York City. Hands-on classes limited to four people are taught by Jonathan White, and each Saturday when the weather allows there are one-hour walking tours of the farm to view the milking parlor, creamery, cheese caves and bakery.

Cherry Grove Farm Kelly Harding has worked at dairy farms since he was 13, and eight years ago he took over Cherry Grove, where cows graze on the pasture in summer and eat hay in winter so they can produce the milk that is used to make a variety of cheeses. Those include the raw, cheddar-like Havilah, a hard-aged Alpine-style cheese; creamy Shippetaukin Blue; Camembertstyle Buttercup Brie; and the tangy Toma Primavera, made using a recipe from the Piedmont region of the Italian Alps. Cheeses are sold at the farm store, gourmet shops and local restaurants. Visit the farm any day and watch the cows being milked at 4 p.m. On Mondays, Wednesday and Fridays, the cheesemaker is usually at work, and you can watch him too.

Valley Shepherd Creamery Children and adults enjoy visiting New Jersey’s only rotating sheep-milking parlor at Valley Shepherd. They also can watch the milk being used to make a variety of cheeses, including the Pyrenees-style Oldwick Shepherd, truffle-laced Tartuffo Shepherd and Smokey Shepherd, which is smoked over applewood embers. Mixed-milk cheeses, which combine sheep’s milk and jersey cows’ milk, include Babaloo, a caveaged blue; the softer Crema De Blue; the flavored Nettlesome made with stinging nettles, and Carameaway made with caraway seeds. The cheeses are available at farmers’ markets, in gourmet shops and some local restaurants. By law, Scotch must be aged for at least three years—aging is usually done in oak barrels. The whisky can be “single malt,” meaning it’s the product of just one type of malted grain, made at one distillery, or “blended” from as many as 50 malts. And there’s more geography to know—and taste. As David Williamson of the Scotch Whisky Association explains, Scotch falls into six categories based on the country’s main whisky-producing regions: SPEYSIDE, bordering the River Spey in the northeast, is home to half the country’s distilleries and produces Scotch known for its intricacy and smoothness. Macallan is one of its more famous singlemalts. In The World Atlas of Whisky, Dave Broom describes a bottle of 15-year-old Macallan Fine Oak ($80) as “complex and fruity, with hints of nutty oak, cooked orchard fruits, black banana, caramel toffee, bracken, malt and dark chocolate.” highlands to the north and west boast malts that are dry and robust, with hints of smoke created by peat, decayed vegetable matter harvested on the moors. “Ardmore is a newcomer to the singlemalt market,” says Regis Lemaitre, owner

Like many whiskies from this region, it has a light, citrus character. Lemaitre describes the 12-year-old bottle ($50) as “flowery and aromatic, with notes of lemon, custard and vanilla.” ISLAY is a 25-mile-long island off the west coast that contains eight major distilleries. Pummeled by Atlantic storms, it turns out potent whiskies. “Laphroaig is heavy and rooty, like walking down a freshly tarred seaside road on a hot day,” writes Broom. The 25-year-old version ($400) excites with such aromas as “soy sauce, fish boxes, dried tar, heavy tobacco and burning lobster creels.” campbeltown in the far southwest had 34 distilleries before the depression— of the 1850s. Today there are just three, but the region’s lush malts make their products highly prized. “Springbank, a small, privately owned distillery, buys only local barley and does all its malting on-

site,” says Lemaitre. “Its 10-year-old label ($52) is complex and well-balanced with hints of malt and nutmeg.” Islands that lie off Scotland’s rugged western coast are marked by gorgeous flora and abundant fauna, including orca whales, dolphins and sea eagles. Appropriately, the whisky boasts aromas of salt spray, seaweed, bracken and crab shells. Case in point: The 18-year-old Talisker, from a spectacularly situated distiller y on Loch Harport. Broom writes that among other flavors it has a “smoked-fish note … and builds in stages to an explosive finish.” —francesca moisin

The seven-story, castle-like hotel dates back to 1869, when Alfred H. Smiley visited the area and decided to build a peaceful retreat where people could enjoy nature surrounded by the spectacular Shawangunk Mountains. Smiley and his twin brother, Albert K., tore down the 10-room inn and tavern that stood on the property and began building the enormous structure that today accommodates up to 500 guests. The rustic Victorian wood and stone architecture, countless fireplaces and antique-filled parlor rooms transport you back in time so completely that you almost expect to run into a Smiley

As interesting as the hotel is, though, the real draw is what you find when you walk outside. rooms, steam rooms and saunas, a fitness center, a yoga studio, an outdoor heated mineral pool and an indoor heated swimming pool. The awardwinning spa, built in 2005, is the newest addition to the sprawling hotel. Dining is a big deal at Mohonk, perhaps because guests work up such a big appetite with all the available recreation. Extensive breakfast, lunch and Sunday brunch buffets, plus a fourcourse, sit-down dinner (and afternoon tea and cookies) are included in room rates. Guests are expected to dress for dinner, with gentlemen required to wear jackets and a no-T-shirts-orsneakers-allowed policy. The formality adds to the historical feel of the place, as does the nightly entertainment: live-music dance parties or movies in the screening room. ( You won’t find a T V in your guest room.) Depending on the room you get, accom­ modations can look antiquated, but if you don’t want “Victorian” ambiance, you may request what the hotel calls a “Traditional” room, which is updated (but won’t have a wood-burning fireplace). A standard room with a double bed will cost you $540 plus taxes and gratuity per night for double occupancy, but most of your food, recreation, entertainment and even a kids’ club is included, and the unique charm of Mohonk is hard to match. —Marisa Sandora
