This observance honors the role played by organ, eye and tissue donation in helping recipients live longer, fuller, happier lives. We at Saint Barnabas Medical Center are proud to mark this occasion as the home of one of the nation’s largest kidneytransplant programs, with a special focus on living-donor transplants in our Living Donor Institute. SEARCHING FOR DESIGN INSPIRATION? SISTER PARISH, THE legendary American interior designer (who happened to live in New Jersey), often talked about the genesis of her design inspiration. She said, “Lifestyle, personality, taste, hidden desires—you have to analyze all these things before you can start designing in the correct way. We begin at the beginning.” Indeed. Through the years, designers have told me that the most successful projects are those in which clients are able to articulate what means the most to them. It might be a color scheme, a beloved heirloom, a favorite rug or chair—something that sparks the inspiration for a design that reflects the people living there. One homeowner in North Jersey, for instance, was moved by a perfect setting. She wanted a home that celebrated her waterfront property, and the 1960s ranch-style abode that was a “mishmash” wasn’t going to dissuade her. See how she and Montville-based designer Sandy Cabelis updated the home to fit the owner’s vision in “Lakefront Living” on page 36. Meanwhile, designer Diane Boyer, who runs a firm in Verona, honored a family’s desire for spaces that reflected both their love of parties and their Indian heritage. The result: “a home where nothing is ordinary,” notes Boyer. She adds that not everyone “follows the neutral look that’s trending now.” Turn to page 40 to see the results of “House Warming.” Some of us travel far and wide to find inspiration. If this is your preference, the trio of U.S. cities featured in “3 Hot Design Spots” on page 48 will not disappoint—they’re full of artistic ideas for architecture, home décor and much more. Of course, we at Morris/Essex Health & Life know that an idea is just the first step in the creative process. And that idea might come from a movie, a painting, a far-flung city, a field of flowers or even the local lifestyle magazine you’re reading now. Sister Parish knew a thing or two about the twists and turns a project can take, but she loved the process. So enjoy the issue, and let the process begin.

Now that the weather is warming up, there’s no excuse not to get outside and start exercising. And Livingston just made it easier to do so by establishing The Walking Club, a seasonal weekly event in which members walk around town to get fresh air (and meet some fresh faces). The Walking Club is free and open to adults 18 and over, and it’s held Fridays from April 12 to May 31, 10 to 11 a.m., weather permitting; your hour will be spent walking the 1.75 miles around the reservoir at the South Mountain Recreation Complex in West Orange. Julio Arostegui is living the dream. The Chester resident is one of five kids in the tri-state area joining Kiditor-in-Chief Waverly Winchester to be a Legoland Lego Kid Reporter. As you’d expect, it’s a pretty sweet gig; the 9-year-old and his cohorts will share updates on, get a sneak peek at and attend launch events for the Legoland theme park, set to open in 2020 in Goshen, N.Y. The Cub Scout and junior taekwondo black belt will also get four annual passes, Legoland-branded swag and a commemorative microphone, not to mention a once-in-alifetime experience that we’re sure will get him into the college of his choice in 2028.

Many of us learned science, technology, engineering and math in grade school, and one Livingston teenager wants to be sure kids throughout the world have the same opportunity. Molly Cantil-

lon, a sophomore at Newark Academy, started Techshare Project, an initiative that will bring STEM subjects to underprivileged kids. Why the need? Molly got the idea after visiting her grandfather, who lives in a remote village in China where technology resources are limited. Molly plans to raise money to buy essentials, including computers and school supplies, to bring to children when she returns to China later this year. She has also partnered with Peace Corps of Santo Domingo with plans to hold a robotics workshop in the Dominican Republic.

Don’t you love it when the best-ever TV series set in New Jersey is back in the news? The Sopranos house in Montville, which was featured in a few Season 6 episodes of the HBO series, has officially sold for $2.3 million. But the major headline surrounding the long-running series about an Italian mob boss is that the movie prequel has been given a title and release date. Ladies and gents, mark your calendars for Sept. 25, 2020, when New Line Cinema will release The Many Saints of Newark. The film will explore Tony Soprano’s life in the 1960s, as it is set during the Newark riots of 1967. Nineteen-year-old Michael Gandolfini, the late James Gandolfini’s son, will play young Tony in the film.

We’re calling it now: Essex County is basically the new Hollywood. Eighties boy band New Kids on the Block paid a visit in January to Cedar Grove High School, where they spent 18 hours filming their new music video for their song “Boys in the Band.” The video, released in early March, also features a cameo from the Montclair State University cheerleading squad. And if you missed the hoopla, no worries; the Boston-based band will be returning to the area this summer when they play the Prudential Center on July 2 with Debbie Gibson, Naughty By Nature, Salt-N-Pepa and Tiffany for the “Mixtape Tour.”

SATELLITE REHABILITATION CENTERS (SBMC) OFFER PATIENTS THE SPECIALIZED CARE THEY NEED TO RESUME AN ACTIVE LIFE AFTER SURGERY, INJURY OR ILLNESS. YOU CAN’T FIGHT GRAVITY—UNLESS YOU’RE A PATIENT undergoing treatment at Saint Barnabas Medical Center’s Outpatient Physical Rehabilitation Center in Millburn, that is. The center, one of three SBMC outpatient rehabilitation locations, recently acquired a state-of-the-art piece of equipment called the Alter-G, an anti-gravity treadmill. This air-based device for reducing weight-bearing stress helps patients recover from orthopedic surgery or injury and neurological conditions, as well as build strength and endurance with less risk of injury. There are three places residents can go for their rehabilitation needs: the hospital’s Ambulatory Care Center and the two “satellite” facilities in Millburn and at the Jewish Community Center. The Millburn center focuses on a variety of orthopedic and musculoskeletal conditions, while the JCC center takes on patients who are otherwise healthy and can withstand fairly rigorous exercise, along with sports rehabilitation, including post-concussive therapy. Patients with more serious health problems, including physical and neurological disorders such as stroke or Parkinson’s disease, are treated at the Barnabas Health Ambulatory Care Center. The anti-gravity treadmill “eliminates weight-bearing restrictions and enables patients

to progress through rehabilitation safely and effectively,” says Tim Mahoney, P.T., D.P.T., supervisor of the Millburn center. It does so with a pressurized “anti-gravity” chamber that uses air pressure to gently compensate for body weight so that it’s effectively reduced to as little as 20 percent. “The treadmill lessens the force of gravity, reducing barriers to mobility for post-operative rehabilitation patients without worrying about damaging the surgical repair,” Mahoney says. The JCC gives patients access to all of the JCC’s equipment and facilities for use during therapy. That includes a fully renovated gym, a running track, a pool, a basketball court and yoga and dance studios. “It allows our patient-athletes to do what they want to do in a space they need to do it in,” says Mike Heitzman II, P.T., D.P.T., the center’s supervisor. “Other physical therapy clinics generally don’t have that.” The center also has its own special piece of equipment called FitLight, and it is designed to improve speed, agility, stamina and mind-body coordination through a series of flashing lights that record the patient’s reaction times. Heitzman, as team leader of the concussion program, oversees athletes undergoing rehabilitation from such injuries, and FitLight is a good tool for these patients, he says. Having satellite locations “allows us to reach out to specialty populations,” Heitzman says. “This is new and exciting for us. WITHOUT FEAR

A NEW TECHNOLOGY MAKES CANCER TREATMENT FASTER, QUIETER AND MORE COMFORTABLE.

WHEN DENNIS CAREY HAD A ROUTINE COLONOSCOPY in the fall of 2018, the test came up negative—his digestive tract was normal. But his doctor did find something else. “He noticed some peculiarities with my prostate,” says Carey, 67, of Livingston. The retired superior court judge who now practices as a private mediator had no symptoms of prostate disease, but he saw his urologist to follow up. A PSA test came back positive, and further tests, including a biopsy, confirmed he had prostate cancer. Carey was referred to Alison Grann, M.D., chair of the Department of Radiation Oncology at Saint Barnabas Medical Center. She recommended hormone injections and radiation therapy to destroy the cancer cells. Carey began treatment just after Thanksgiving. He was to have therapy five days a week for nine weeks—45 treatments in all. Nothing unusual so far—he was under the standard course of care, with an excellent prognosis. But after 30 treatments, Carey’s treatment regimen took a different course. At that point, the medical center unveiled its new, state-of-theart radiation delivery system. It goes by the brand name Halcyon, and the department is the first in New Jersey to offer this high-tech, imageguided radiotherapy. This new technology can be used to treat a wide range of cancers, including prostate, lung, head and neck and more. What makes Halcyon different—and better, Dr. Grann says—is that it incorporates several features that make treatments more comfortable, offering a less intimidating experience for patients. For exHalcyon Radiation Therapy System ample, it limits the noise and vibrations that are common with most such systems, so that the machine’s motions are quieter and smoother. In addition, the Halcyon system is programmed with sophisticated automation software that enables a shorter treatment time. And, to facilitate a closer connection between patient and technician during treatment, the system includes a couch-mounted camera that travels with the patient and a twoway intercom, making it easy for the technician to monitor and converse with the patient. “As a physician, I like that the daily image-guided capability of this new treatment tool coupled with faster treatment times enhances both the quality of care I can deliver and the overall experience,” Dr. Grann says. “This is a win for all.”

It was certainly a win for Carey. “You lie down on a table that slides into the machine,” he explains, adding that this system was quieter, with a wider and thus more comfortable table than the one he’d been treated on before. “But the big difference was that it was faster.” Indeed, Dr. Grann confirms that the new system cuts what had been a 15-minute procedure down to about 10. Halcyon was unveiled in 2017, at the annual meeting of the European Society for Radiotherapy and Oncology. It was developed by a company called Varian; the company says it worked on the project for about four and a half years, with the goal of creating what it calls “a human-centered design that would automate, streamline and simplify virtually every aspect of treatment.” Among its features are a gantry, which delivers the radiation, rotating four times faster than standard image-guided radiotherapy systems. The system is designed with a larger-than-normal “bore,” the area in which the patient lies, and with integrated ambient lighting to make patients more comfortable and relaxed. The bed and gantry are powered by specially designed motors so that the machine’s motions are smooth and virtually silent. The camera travels with the patient, who is always at the center of the image that the technician watches. A noise cancellation feature on the integrated intercom enables immediate and clear communication between the therapist and the patient. Most important, of course, is Halcyon’s ability to deliver sophisticated, highly targeted cancer treatments with precision and accuracy. “The image quality is excellent, which ensures accurate targeting,” Dr. Grann says. That means only the cancerous tissues receive radiation, and healthy tissue nearby is spared, reducing side effects. Carey, in fact, reports he had no side effects with his treatments, which he finished in January 2019. “Everyone is confident that this should take care of it,” he says. Though he was frightened by the initial diagnosis, his doctors assured him that his cancer was highly treatable. “As I went through the treatments, I felt fine,” he says. “No anxiety. No fear.” He continues to work, and spends his free time with his wife, Kathleen Carey, an English teacher at Heritage Middle School in Livingston, their five sons and four grandchildren. SAVES A LIFE SHE WASN’T A CLASSIC HEART-ATTACK CANDIDATE. BUT FORTUNATELY, WHEN SYMPTOMS STRUCK, SHE DIDN’T DELAY. THIS PAST DECEMBER, SANDY SULLIVAN, a 55-year-old mother of four children, was looking forward to seeing her twin boys, United States Army Rangers, who were coming home for Christmas. On December 16, 2018, at 4:00 a.m., Sandy woke up with a pain in her throat. “It definitely did not feel like a normal sore throat,” Sullivan recalls. “It was just getting worse and then I started to break out in sweats.” She woke up her husband and they went to the Emergency Department at Saint Barnabas Medical Center. The doctors quickly concluded that she was having a heart attack and rushed her into the Cardiac Catheterization Lab, where Bruce J. Haik, M.D., system director of Cardiac Catheterization Labs for RWJBarnabas Health, placed a stent in her heart. “What was unique about Sandy’s case was the fact that although she did have a history of tobacco use, she had no other heart-attack risk factors and was relatively young for a woman to suffer a heart attack,” says Dr. Haik. “The whole thing happened pretty quickly,” says Sullivan. “I remember being on the table telling the doctor, ‘I hope this goes well because my twin boys are being deployed in a couple of weeks.’ I wasn’t sure if I was going to be alive or not.” Sullivan recovered in the Coronary Care Unit and was up and walking the next day. She was able to start getting back to her normal daily routine a week later, just in time to see her sons. “The entire Emergency Department staff and Cardiac Department were amazing and made me feel very

comfortable,” says Sandy. “Thank you for saving my life.” “Although Sandy’s symptoms were textbook—chest pain and associated diaphoresis [excessive sweating without a known cause] waking her up from sleep—she did initially present with a sore throat,” explains Dr. Haik. “Nausea, dizziness, anxiety as well as chest pain, which may include back or neck pain or throbbing in arms—that’s not an uncommon presentation for women.” “If it doesn’t feel right, it’s probably not right,” Sullivan now warns people. She continues her cardiac care with cardiologist Devang Gandhi, M.D., and is enrolled in Cardiac Rehabilitation at Saint Barnabas Medical Center. BUSY PROFESSIONAL JANI HEGARTY SAW A LOT OF POTENTIAL IN a large property she found on the water. Only problem? The 1960s ranchstyle house that inhabited it was a “mishmash” of things she didn’t love. So, after deciding to knock down the home and securing an architect, Hegarty hired Sandy Cabelis of Cabelis Interior Design in Montville to help her design a six-bedroom, six-bathroom traditional-style house fit for her needs and those of her grown children. Understandably, Hegarty wanted her new home to take full advantage of the serenity of the lake and truly celebrate the stunning property. “When you come through the front door, you can see straight through to the lake in the back,” Cabelis says. “She wanted the home as spacious as possible, with open entertaining areas and lots of windows so you can enjoy the whole space.” The great room fills this purpose, with a custom “woodsy” concrete-topped bar in the corner, built-ins for both storage and displaying collectibles and a row of French doors that open to a porch with a fireplace, grill and phantom screens, perfect for waterfront hosting in the warmer months. And the kitchen, built by Kitchen Kaboodle in Hawthorne, is an entertainer’s paradise too, centered on a custom banquette table, blue cabinets on the attached island and brown-gray quartzite countertops, which pay homage to the homeowner’s love of wine country.

“This color combination reminds me of the shale mixed with warm earth found in many vineyards,” Hegarty says. “The blue cabinets add warmth to the room.” In fact, design elements inspired by the homeowner’s travels to California and Europe are found throughout the 5,800-square-foot home. There’s a wine room off the kitchen, maps of Napa Valley hung on the walls and a nook in the master bedroom with a reupholstered antique wingback chair that’s reminiscent of the delft blues of the Netherlands. “This strong blueand-white print complements smaller elements in the home,” she says. The house is custom from top to bottom, and that meant incorporating a few other surprises. For example, there’s a cozy window seat in Hegarty’s daughter’s bedroom, a fitness center in the basement and—at the suggestion of Kitchen Kaboodle owner Dan Holwerda—an outdoor shower beside it that the professional and mom loves to use post-workout. The project took about two years to complete. That’s not a crazy timeline considering it was a total knockdown, resulting in a modern, custom home that meets the owner’s needs—and truly encapsulates her personal taste and style. “Aesthetically the home is fresh and bright, but its warmth and energy come from the owner’s personal belongings and the things that are sentimental to her,” Cabelis says. Isn’t it always that way?

VERONA-BASED INTERIOR DESIGNER DIANE BOYER INHERITED A relatively blank canvas when she was asked to redesign the interior of a nearly 7,800-square-foot, six-bedroom North Jersey mansion. The house, built in 2004, was the original builder design marked mostly by plain white walls. The lackluster appearance was in stark contrast to the personalities of the homeowners and their three children, all of whom loved to use the space for parties and get-togethers. “Not every family follows the neutral look that’s trending today,” says Boyer, whose eponymous design firm completes projects throughout the area. “This is a family of lovely, vibrant people who entertain and embrace their Indian heritage and traditions. We shared a vision to make a decorative home where nothing is ordinary.” Entertainment central starts in the kitchen, an integral first-floor room for a mother who enjoys cooking and a daughter who’s enrolled in culinary classes. The old kitchen was “one big space,” recalls Boyer, who ultimately divided it in a way to create more cabinets and a large island with ample prep space as well as a table for quick bites and conversations. The cabinets were custom-made by Showcase Kitchen & Bath, as was the canopy installed over the main island. Also above the island—and in the adjacent, octagon-shaped breakfast nook—hang antique chandeliers. “Mixing antiques and custom pieces is part of creating a unique

feeling,” she says. “You don’t have to rip everything out to do that; you can add and redo a great deal.” Boyer also redid the dining room, which too had no particular points of interest. Red is a color of celebration and happiness in the family’s culture, so Boyer dressed the room with crimson wallpaper and a similar shade for the window treatments. The texture of the drapes and chair upholstery were also important, as the homeowners are Garment District professionals. Hanging from the custom-designed ceiling and above the 14-seat Francesco Molon dining table is the centerpiece. “The dining room chandelier is critical,” she says. “With the red walls, the glow from this piece is very exciting.” In the nearby library, Boyer added molding to the former flat ceiling and walls to create visual interest. Built-in cabinets and a custom-made L-shaped desk provide the perfect workspace when the father of the family invites clients to his home office. Those clients, Boyer says, are treated to a “cocoon of comfort,” as they sit in either a cozy sofa or armchairs, each with textured fabrics. “Everything is comfortable when you go there,” she says. It’s a very warm house now, from the art and draperies to the moldings and color scheme. “When you’re working with someone, you make sure both your visions are going in the same direction. And we accomplished that, creating a dream environment for the family.”

ASHEVILLE, NORTH CAROLINA

Home to an active arts community, Asheville boasts a vibe that can be described as boho meets classic Southern charm. While the backdrop of Blue Ridge Mountains can take your breath away, the breadth of architectural jewels is a worthy rival for visitors’ attention. Asheville is home to the Biltmore Estate, a 250-room castle built by millionaire art collector George Washington Vanderbilt II. Constructed between 1889 and 1895, the Châteauesque-style structure is still the largest privately owned home in America and one of the most prominent examples of Gilded Age mansions intact. Asheville may not be the first city that comes to mind when you think of art deco design, but there’s a wealth of wonderful examples here. Built in 1928, its pink-roofed city hall reflects the area’s spectacular sunsets. Another art deco treasure is the S&W Building, a former cafeteria and speakeasy. Asheville is also home to many stellar examples of Victorian and arts-and-crafts architecture. It seems that around every corner of this city lies another design inspiration. If all this sightseeing makes you hungry, make a pit stop at Luella’s Bar-B-Que, where the pulled pork and barbecue tempeh are cooked up by smoking and grilling experts, or sample the locally sourced meats at Buxton Hall Barbecue. After all, you’re in the South; why not enjoy some good ol’ Southern cooking?

ST. AUGUSTINE, FLORIDA

Think your town is historic? This northern Florida city ups the ante. It was founded by Spanish explorers in 1565, making it the oldest continuously inhabited European-established settlement in the continental U.S. Today St. Augustine retains its old-world European atmosphere thanks to plentiful Spanish Colonial and Spanish Revival architecture. In the Old City section, buildings from the 18th and 19th centuries make visitors feel they’ve been transported back in time. While St. Augustine is famous for Castillo de San Marcos, the oldest masonry fort in the continental U.S., there’s a lot more to see here. Start your city tour at the Lightner Museum, housed in a Spanish Renaissance Revival-style building that serves as a one-of-a-kind showroom for arts from the Gilded Age. Vintage furniture and musical instruments are displayed in former Turkish baths and ballrooms. A stroll through Flagler College will lead you up a decadent marble and onyx stairway to the breathtaking dining hall, ringed by 79 Tiffany windows. Treat yourself to a libation or two at the St. Augustine Distillery, which is set in a former ice manufacturing plant. And no visit to St. Augustine is complete without a visit to the famous Ponce de León’s Fountain of Youth Archaeological Park for a tiny blue bottle of water that just may help you turn back the clock.

Today that same bohemian spirit prevails. The Provincetown Historic District was listed on the National Register of Historic Places in 1989 and the Center Methodist Church cannot be missed. Built in 1860, it exemplifies the beauty of traditional New England-style architecture. Don’t leave town before you’ve been to MacMillan Pier for some early morning humpback whale watching, and be sure to make an appearance at Tea Dance at the Boatslip Resort and Beach Club. GOAT CHEESE & GRAPEFRUIT SALAD Yields: 2 servings INGREDIENTS n 3 ½ oz. ciabatta or sourdough bread (slightly stale is best) n 2 Tbs. olive oil n 2 oranges n 2 pink grapefruits n juice of ½ a lemon n 3½ oz. arugula leaves n 2 oz. mâche n ¼ cup walnuts, smashed n 4 oz. soft goat cheese n 1 Tbs. argan oil n sea salt and freshly ground black pepper to taste

DIRECTIONS Preheat oven to 350°F. Rip the bread into bitesized pieces and put into a roasting pan. Drizzle with the olive oil and bake for 5-6 minutes, until golden brown. Set aside to cool. Segment the oranges and grapefruits over a mixing bowl to catch the juices as you go. Add the lemon juice and a pinch of salt. Put the arugula and mâche leaves into the bowl and toss together. Arrange on a serving plate and spoon over the juices. Scatter the bread and walnuts over the top, and dollop over the soft cheese. Drizzle over the argan oil and add a pinch of pepper to the goat cheese. Serve immediately.

FRIED ATLANTIC SHRIMP WITH PRESERVED LEMON & OREGANO Yields: 4 servings INGREDIENTS n 4 Tbs. olive oil n 4 garlic cloves, roughly chopped n 1 preserved lemon, pith discarded and the skin finely chopped n 1¼ lbs. peeled jumbo shrimp n 1 tsp. ground cumin n ½ tsp. ground black pepper n ½ tsp. paprika n ¼ tsp. ground turmeric n ¼ tsp. chile flakes n h andful of finely chopped cilantro leaves n h andful of finely chopped flat-leaf parsley leaves n handful of dried oregano n 1 lemon cut into wedges, to serve n sea salt

DIRECTIONS Heat the oil in a large frying pan over medium-high heat. Add the garlic and preserved lemon and stir-fry for 10 seconds until fragrant. Add the shrimp and continue to stir-fry for 2-3 minutes or until just turning pink. Add the spices and dried oregano to the pan, season well with black pepper and salt and continue to stir-fry for 1-2 minutes until the shrimp are cooked through. Stir through the chopped herbs and serve immediately with the lemon wedges.

POMEGRANATE & CHOCOLATE CAKE Yields: 8-10 servings INGREDIENTS FOR THE CAKE: n 1 cup self-rising flour n 1 tsp. baking powder n ½ cup plus 2 Tbs. cocoa powder n ¾ cup light brown sugar n 3 free range eggs n 2 sticks (½ pound) butter, melted, plus extra for greasing n 2 Tbs. pomegranate molasses n 2 Tbs. honey n 1¼ cups Greek yogurt n sea salt

DIRECTIONS Preheat the oven to 350°F and grease and line a 9-inch springform cake pan with butter and parchment paper. Sift the flour into a mixing bowl. Add the baking powder, cocoa powder, sugar and a pinch of salt. Mix together gently to combine ingredients.

FOR THE TOPPING: n ²⁄³ cup heavy cream n 3½ oz. dark chocolate n 1 Tbs. honey n h andful of pomegranate seeds

Remove from the oven and set aside to cool in the pan.

In a separate bowl, beat the eggs until really fluffy and light in color using a hand-held mixer. Pour the melted butter and pomegranate molasses into the flour and mix together. Fold in the honey and yogurt, and then add the beaten eggs, a little at a time, and fold together until completely combined. Scrape the mix into the cake pan and roughly smooth over. Bake for around 25-30 minutes or until risen and the sides are just pulling away from the pan. The cake will still be a bit wobbly, but it will firm up as it cools.

Meanwhile, heat the cream in a pan over low heat. Break the chocolate into a small mixing bowl and add the honey. Pour the hot cream over the chocolate and gently stir together until velvety smooth. Leave for 10 minutes to cool and thicken. Spoon the topping over the cake and spread out using the back of a spoon so that it drizzles down the sides. Scatter the pomegranate seeds over the top and leave to set before serving.

2019 To help readers find the best real estate agents in Essex County to work with, Morris/Essex Health & Life contracted DataJoe Research of Boulder, Colorado to facilitate a multi-faceted research campaign. It consisted of an online survey delivered directly to agents across Essex County via email as well as internet research. In the survey, real estate agents were asked to provide sales volume ranges and also nominate their peers. In the internet campaign, DataJoe consulted a variety of websites to build richer knowledge of individual real estate agents across the county. DataJoe checked and confirmed that each published winner had, at the time of review, a current, active license status with the appropriate state regulatory board. It they were not able to find evidence of a real estate agent’s current, active registration with the state regulatory board, that real estate agent was excluded from the list. Finally, DataJoe presented the tallied results to Morris/Essex Health & Life for final review. We recognize that there are many good real estate agents who are not shown on the representative list. This is only a sampling of the huge array of talented professionals within the county.

SCALLIONS—A VERSATILE, VERDANT VEGGIE—FIND A TANGY PLACE IN CUISINES ALL OVER THE WORLD.

WANT ONIONS THAT WON’T MAKE YOU CRY? STRONGER THAN chives but milder than most other onions, scallions—alias green onions— just may fit the bill. They’re young plants of the Allium genus that haven’t formed a full bulb. (Some varieties can’t.) They have long, tubular green stems, are sold nestled in bunches and can be served cooked or raw. Chefs have the option of using the bulbous bottom of the vegetable, the hollow green top or—for boosted nutrition and flavor—the entire stem. Adding a sprinkle of chopped scallions to a dish right before serving can provide a mild onion flavor, a hint of texture, a burst of bright green color and several notable health benefits. This slender veggie gets around. Scallions are grilled and sprinkled with salt in Mexico, ground for a condiment in the Philippines, munched as an appetizer in India and added—chopped—to mashed potatoes in Britain. And in the homes of Sephardic Jews in or from Iran or Afghanistan, they take on a special ritual function. In memory of the ancient days of slavery in Egypt, family members gathered for the Passover seder meal use long green onions to ceremonially whack each other. POWER UP Scallions pack a wallop nutritionally too. A little bit of them goes a long way not just in flavor, but in beneficial content. When a full cup of scallions (tops and bottoms) is used in a dish, it adds only about 30 calories and 0.2 grams of fat. With that comes an array of health-boosting vitamins and minerals, including vitamin C (31 percent of the recommended daily value) as well as vitamin A (20 percent of DV) and its related antioxidants, such as lutein, zeaxanthin, beta carotene and retinol (the last two linked to skin and eye health). Scallions also have a respectable amount of fiber (10 percent of DV) and of the B vitamin folate (16 percent of DV), which promotes cell growth, along with less than 10 percent of DV of iron, calcium, potassium and manganese. Besides helping the body function at its best, studies have found that eating Allium vegetables may reduce the risk of various types of cancer, including colon, prostate and stomach. But the pièce de résistance is the vegetable’s potency of vitamin K (more than 250 percent of DV in one cup), which helps the blood to clot. In fact, sprinkling just a tablespoon of scallions over a dish as a garnish can offer 16 percent of DV of the vitamin.

Illustrated recommends refrigerating them upright in a container with a little water and topped with a plastic bag for ideal freshness. Once you’re ready to use it, wash the vegetable well and peel the thin layer of skin off the unformed bulb before slicing off the bottom. Chopped scallions offer a blast of flavor when served in eggs (add them to your favorite omelet) or rice, or when baked into biscuits. Sprinkle the raw tops thinly sliced over soups, salads and even on top of cooked fish marinated in an Asian sauce to add zing. A popular Chinese dish, cong you bing, is made by combining the scallion with flour and sesame oil to cook it into a flaky, crispy pancake—Marco Polo is said to have become fond of this treat during his travels. But don’t be afraid to celebrate the scallion for its simplicity. Coat scallions with olive oil and grill or roast them for a sweet and savory side dish, or whizz them in a food processor for a zesty vinaigrette. Top Chef Masters judge and food writer Francis Lam earned internet popularity for an addictive Cantonese ginger-scallion sauce recipe he published in Salon paying homage to a dish he loved in his childhood. INSTRUCTIONS

CHAMOMILE HONEY SYRUP: n Combine water and honey in a small saucepan and bring to a low boil, simmer 1 minute and remove from the heat. Add the tea bag, cover and steep for 5-10 minutes. Remove the tea bag and allow the syrup to cool completely. FOR THE DRINKS: Store in the fridge. n 3 oz. fresh grapefruit juice (about half of 1 grapefruit) n 2-4 Tbs. chamomile honey syrup, depending on your taste n 2 oz. tequila n 4 fresh strawberries, sliced n sparkling water for topping off n crushed ice

DRINKS: n Add the grapefruit juice, chamomile syrup, tequila and strawberries to a glass. Using a muddler (or even the end of a rolling pin), gently push the strawberries down until they release their juices and are lightly smashed. Add a handful of ice and then add sparkling water to top off. Give the drink a gentle stir. Taste and add more chamomile syrup if desired. Garnish with fresh chamomile flowers (yes, they’re edible!) and strawberries if desired.

ENJOY A TASTE OF VIETNAM AT PARSIPPANY’S NEW EATERY. I used to blame my mother for passing on to me her tastes in food: She tries everything, prefers savory over sweet, eats oodles of noodles and devours anything that’s fried. But as I grow older and learn to appreciate flavors and Mom more, I’m now thankful that I inherited her palate. Back in the day, she turned me on to Vietnamese cuisine, which is similar to the Filipino and Chinese foods served regularly in our home yet still so strikingly different. That early introduction came in handy when my friend and I dined at Pho Binh Duong, which recently opened in Parsippany. Tucked away in a busy shopping plaza, Pho Binh Duong took over a space formerly occupied by Saigon Pho, another Vietnamese restaurant. Though I’m not familiar with the former establishment, the eatery that’s there today serves some of the best Far East dishes in the area. We started with goi cuon, the Vietnamese version of fresh spring rolls. What’s inside the rice wrapper, which is neither steamed nor fried, differentiates it from Chinese-American egg rolls and Filipino lumpia; these are stuffed with a flavorful combination of shrimp, rice vermicelli, bean sprouts and a refreshing bundle of mint leaves and served with a delightfully sweet peanut dipping sauce. Our second appetizer, muc chien don, satisfied my craving for seafood. The plate is filled with crispy morsels of fried squid (think popcorn-shrimp shape rather than a calamari ring) on top of a layer of cool lettuce, cucumber and tomato. Each bite was filled with flavor, while the texture of the squid was spot-on. Good food is always shared, so we split a trio of plates for our main course. First was a seafood medley (shrimp,

squid, fish balls and crab sticks) and vegetables served atop a bed of pan-fried egg noodles. The crispy noodles gave the dish a desirable crunch that complemented the soft and savory seafood. Next, my friend and I each picked from a plate of bo luc lac, shaken beef cubes that had been marinated perfectly in a mix of soy sauce, pepper, onion, cucumber and other spices. The presentation matched the stellar flavor, as the meat came nestled in a bowl lined with colorful veggies. Our third plate (which was so good that I could’ve easily scarfed it down myself) was bún, rice vermicelli with mixed vegetables, crushed peanuts and two of my personal favorites: grilled pork and a cut-up fried egg roll. Add a dash or two of the accompanying fish sauce and you’ve got heaven in a bowl. I’d be remiss to say that I opted for this dish over a bowl of pho, the traditional noodle soup that is most commonly associated with Vietnamese restaurants. I vowed to try Pho Binh Duong’s version when I return. Of course, no Asian meal would be complete without green tea ice cream, which we shared for dessert. My friend protested because she wanted to try the black sesame ice cream, but my choice ultimately won her over, as I knew it would. To highlight the system-wide visits, 2018 NHL All-Star and cancer survivor Brian Boyle, 2018 NHL MVP Taylor Hall and NJD leading goal scorer Kyle Palmieri spent time with patients at the Valerie Fund Children’s Center for Cancer and Blood Disorders at RWJBarnabas Health’s Children’s Hospital of New Jersey at Newark Beth Israel Medical Center. RWJBarnabas Health is the official health-care provider of the New Jersey Devils.

CAPTAINS FOR A DAY RWJBARNABAS HEALTH, PISCATAWAY rwjbh.org Breast cancer survivors Ana Harper of Springfield and Lori Monaghan of Branchburg served as honorary captains at the Rutgers-Penn State NCAA football game in support of RWJBarnabas Health’s fall breast cancer awareness campaign. The women joined Thomas A. Biga, president, Hospital Division at RWJBarnabas Health, and the Rutgers University football captains at midfield to participate in the ceremonial coin toss. Both Lori (RWJ Somerset) and Ana (Saint Barnabas Medical Center & Rutgers Cancer Institute of New Jersey) have been receiving treatment for breast cancer at RWJBarnabas Health facilities, in partnership with the Rutgers Cancer Institute of New Jersey. RWJBarnabas Health is the official healthcare provider for Rutgers Athletics.

Gasalberti Award for Excellence in Recreation Programming for the 2018 Intergenerational Prom. In collaboration with the Livingston Board of Education, the Intergenerational Prom brings 250 people of all ages together—from high schoolers to senior citizens—for a night of fun, food and entertainment.

Sixteen breast cancer survivors modeled in the fashion show and were styled by Nancy Alfano of Style Solutions in Bernardsville and Fine Lines Salon in Chatham to look and feel their fabulous best. More than $36,000 was raised in support of Komen North Jersey’s efforts to save lives.
