SUMMER MEANS MANY THINGS TO MANY PEOPLE—more time off to spend with family, warm weather to better enjoy a weekend getaway, and a time to increase our outdoor exercise routines. But here at Saint Barnabas Medical Center, we see June and July as the best time of the year to become our healthiest selves. There’s no better place to maintain or improve upon our health than at Saint Barnabas Medical Center, where our patients are always provided with comprehensive, technologically advanced care, all year round. In this issue of Morris/Essex Health & Life magazine, we discuss a few of our newest programs, including our innovative approach to hypertension care. Millions of Americans suffer from high blood pressure but not all respond to treatment. Saint Barnabas Medical Center treats a large number of these patients and we have many physicians who specialize in hypertension care. As a result, we are one of only two hospitals in New Jersey participating in an international trial investigating the use of radiofrequency waves on the nerves that control the kidneys, which help manage blood pressure. Learn more about this study and the minimally invasive technique on page 25. Skin cancer, the most common type of cancer, is especially prevalent in the summer. Many types of skin cancer are caused by overexposure to the sun, and experts recommend wearing an SPF of 30 or higher. We also report on Merkel cell carcinoma (MCC), an aggressive and increasingly common form of skin cancer. Turn to page 28 to find out why this disease is becoming more commonplace and why patients with this diagnosis should be referred to a comprehensive cancer center like ours at Saint Barnabas Medical Center. Lastly, on page 26 we highlight our stroke center, which is equipped to treat strokes of all types and severities—and most importantly, treat them quickly, as every second matters when a patient suffers a stroke. Our stroke center includes a 24/7 Acute Stroke Team, a Neuro-Intensive Care Unit, dedicated stroke units and two neuro-hospitalists, physicians who specialize in stroke care and are available day and night. Unlike other facilities, Saint Barnabas also focuses on what stroke patients need as they recover and leave the hospital, and our stroke care team helps them transition back into their everyday lives. As these three programs and numerous others prove, providing compassionate care for our communities is our passion. STILL GOT IT SUPER SCHOOLS
Statewide recognition is cool, but nationwide’s even cooler. That’s why Reservoir Tavern in Boonton is celebrating, as it’s been named one of 56 Greatest Old-School Pizzerias in America by the national website The Daily Meal. The establishment is largely unchanged since it opened in 1936, with its rec room-style dining room and understated bar area. The pizza itself is what sets it apart, though—there’s a line to get seated to grab a slice of pie seven days a week.
We all know our counties are lauded for their amazing public schools, and now the entire state is taking note. Essex’s Wyoming School in Millburn and Morris’ Mendham Township Elementary School placed second and third respectively in a recent ranking of the state’s 50 best public elementary and middle schools by the data analysis group Niche. The ranking isn’t a complete picture because the numbers were based primarily on standardized test scores, but it’s still good to get recognized, isn’t it?
WE ARE THE CHAMPIONS
Millburn has long been one of the top-rated school districts in the state (see item at left); now it has one of the best robotics teams in the world. Millburn High School’s VEX Robotics team, officially called Millburn Phreak Show, was crowned one of five champions in the VEX World Championship in Kentucky after competing among 1,650 teams from dozens of countries. Millburn is the first New Jersey team to win a division in the World Championship.
JERSEY ‘PRIDE’
NEWARK GOES HOLLYWOOD Don’t worry if you noticed some 1940s-era cars on Newark’s streets in mid-April; you weren’t in a time warp. You likely came across the set of The Plot Against America, the HBO adaptation of Philip Roth’s novel of the same name. The miniseries, which stars Winona Ryder and John Turturro, revolves around a Jewish family in Newark during World War II. The story presents an alternate history of America, one in which aviator Charles Lindbergh, considered by some to be a Nazi sympathizer, won the 1940 presidential election instead of Franklin Roosevelt. The miniseries also shot elsewhere in northern Jersey, including Jersey City, Clifton and Englewood, but the cast and crew will be back in Newark on and off until September, so keep a lookout!

June brings the official start of summer, but it’s also known internationally as Gay Pride Month, in which parades, rallies and other events are held all over the world to celebrate the LGBTQ community. The most notable ones in the United States occur in such major cities as New York, San Diego and New Orleans, but Morris and Essex counties get into the spirit too. Here’s how you can take part in Pride right here at home: •June 9: North Jersey Pride Festival This Pride celebration in Maplewood’s Memorial Park is undoubtedly the biggest in North Jersey, bringing together the LGBTQ community and its allies for a full day (12–6 p.m.) of fun, including live music, more than 100 vendors, an expansive food court and the Rainbow Kids Zone. Maplewood is also the only New Jersey town to have a permanent “rainbow crosswalk” painted in the middle of a busy intersection—a gayfriendly gesture that is year-round. •July 11–14: Newark Gay Pride Newark’s Pride celebration spans a full four days in July across the entire city. Activities include a parade, a festival and tons of educational opportunities for both kids and adults.

CULINARY CORNER ORANGE YOU GLAD BURKE’S HERE? Restaurateur David Burke is making himself at home in Essex County. The famed chef is taking over the restaurant at the historic Orange Lawn Tennis Club in South Orange. The menu offers modern American fare with an Italian touch and an extra focus on veggies and healthful foods—this is a tennis club, after all! But Burke fans can expect some of his signature dishes too, including bacon-on-aclothesline, lobster dumplings and pastrami-smoked salmon. Only members get access to the 140-year-old (yet recently renovated) club itself, but the restaurant is open to the public with a dining membership, for which there is a small, one-time fee. One Bloomfield High School senior certainly has his pick when it comes to colleges. Emmanuel Odekunle has been accepted by 15 universities including Duke, Princeton, Penn, Brown and Columbia. Highachieving Odekunle, whose family immigrated from Nigeria, will likely be some sort of science major, and plans to attend medical school after college.
BEYOND THE SLAM Chef Sam Freund has been known around these parts as “the Slamwich guy,” as he’s the one behind Madison’s diner-esque Slamwich Scratch Kitchen. FINDING A NEW TREATMENT FOR
HIGH BLOOD PRESSURE
SAINT BARNABAS MEDICAL CENTER IS PART OF A GLOBAL STUDY ON AN INNOVATIVE APPROACH TO HYPERTENSION CARE. MILLIONS OF PEOPLE HAVE HYPERTENSION, commonly known as high blood pressure, and millions more will get it eventually. “If you live long enough, you will likely develop hypertension,” says Sabino Torre, M.D., director of the Cardiac Catheterization Lab at Saint Barnabas Medical Center and a member of Barnabas Health Medical Group. Most patients respond well to basic treatments, which include lifestyle adjustments like losing weight, quitting smoking and exercising more, taking one or more of a variety of medications, or both. However, some people don’t respond to treatment, or they don’t want to take medications because of side effects, cost, inconvenience or other reasons. A new option is being tested for those patients, and Saint Barnabas is one of just two hospitals in New Jersey participating in an international trial. Called the SPYRAL HTN Global Clinical Trial, the study is investigating the use of radiofrequency waves on the nerves that control the kidneys, which play an important role in managing blood pressure. Dr. Torre says the procedure, called renal denervation, involves inserting a catheter into the groin and through the arteries leading to the kidneys. The catheter is connected to a device that delivers radiowave energy to several nerves entering and leaving the kidneys which effect blood pressure. He says the whole process takes about an hour. The patient is sedated and feels nothing, and is kept in the hospital overnight for observation. Sabino Torre, M.D.
The procedure is being tested on patients with systolic blood pressure (the upper number) of between 150 and 180 mm/Hg and diastolic blood pressure (the lower number) above 90 mm/Hg. Two groups of patients—one on up to three blood pressure medications, the other on no medication—are being tested in the randomized trial. Dr. Torre says the study should run for several years. The technique already has been approved in Europe, with very good results. “It has proved safe and effective, with almost no complications,” Dr. Torre says. Many patients have seen their blood pressure drop by significant amounts. “Some patients have been able to lower their medications or stop taking them entirely,” he says. Dr. Torre and his team expressed interest in joining the trial, and were selected because the hospital treats a large number of hypertension patients and has many physicians who specialize in their care and are skilled in minimally invasive surgical techniques. “It is exciting for us because we see the need for bringing a different kind of treatment to these patients,” he says. “We expect a positive result.”

When someone has a stroke—and more than 795,000 people in the United States suffer a stroke every year—every minute counts. Administering treatment quickly can mean the difference between life and death, and between permanent disability and significant recovery, because the sooner a patient is evaluated and treated by a stroke team, the greater the odds of lessening or reversing the effects of a stroke. That’s why it’s always best to receive care at a comprehensive stroke center, like the one at Saint Barnabas Medical Center. “Comprehensive stroke centers have the ability Danielle Haskins, M.D.
to treat patients with strokes of all types and severities,” says Danielle Haskins, M.D., the center’s medical director. “We have the expertise, facilities and protocols to provide rapid gold-standard care.” Those facilities and programs include an Acute Stroke team available 24/7, a Neuro-Intensive Care Unit, a team of neurosurgeons, a specialized neuro-interventional catheterization lab, advanced imaging capabilities and dedicated stroke units where patients receive care from nurses and therapists with additional training in caring for patients with stroke. “This expertise matters,” Dr. Haskins says. “Patients treated in comprehensive stroke centers are more likely to receive emergency treatments to restore blood flow in a more timely fashion, which is vital to limiting irreversible brain injury.” Speed matters, because when blood flow to the brain is disrupted, the brain cells are deprived of vital nutrients and oxygen and begin to die quickly. Once these cells have died, they can-

I can be running all around, and I find that invigorating.” Dr. Haskins says that Saint Barnabas is special because the team also focuses on what patients need when they leave the hospital. “All stroke patients are urged to follow up in our Stroke Discharge Transition Center, where they receive additional education regarding their stroke, risk factors, medications, therapies and any other interventions that can help them not only reduce their risk of having another stroke, but also transition back to their lives and communities,” she says.

A RARE
SKIN CANCER IS ON THE RISE
MERKEL CELL CARCINOMA IS INCREASINGLY COMMON AND VERY AGGRESSIVE, AND REQUIRES A COMPREHENSIVE TREATMENT APPROACH.
SKIN CANCER, THE MOST COMMON type of cancer, has been covered extensively over the past few years, and everybody knows at least something about the disease. However, there is a rare form of skin cancer that many don’t know about called Merkel cell carcinoma Franz O. Smith, M.D. (MCC), and it is on the rise in the U.S. Only about 1,500 cases of MCC are diagnosed in the United States each year, according to Franz O. Smith, M.D., a surgical oncologist with Saint Barnabas Medical Center. “But the incidence is increasing,” he says. The rise in MCC is related to increases in the risk factors for the disease. These include an aging population—the median age of patients is about 75, Dr. Smith says—and the fact that more people are living with weakened immune systems because of organ transplants, HIV and other immune-weakening disorders. Other risk factors include exposure to ultraviolet (UV) light, as with all skin cancers, and a virus called the Merkel cell polyomavirus. Merkel cells, first discovered in the late 1800s by German doctor Friedrich Merkel, are an unusual type of skin cell, according to the American Cancer Society (ACS). They have features that are similar to nerve and hormone-making cells. They are located close to nerve endings and help in the sense of touch. Though rare, MCC is one of the most dangerous types of skin cancer. “It can be extremely aggressive and spread to the liver, lung, lymph nodes and other sites,” Dr. Smith says. MCC most often starts in the head and neck area, followed by the arms, but it can begin anywhere on the body. The ACS says that Merkel cell tumors typically look like firm, pink, red or purple lumps or bumps on the skin. They usually don’t hurt, but they can sometimes turn into open sores or ulcers. Due to its rarity and aggressive behavior, patients should be referred to a center with expertise in treating MCC. It is often diagnosed late, after the tumor has already spread. “Caught early, it is fairly treatable, but that takes a multidisciplinary approach that includes a surgeon, radiation oncologist and medical oncologist,” Dr. Smith says. “And from a diagnosis standpoint, it is important to have an experienced pathologist examine the specimen.” Dr. Smith conducted research on MCC during his fellowship training, and because of his expertise, has many patients referred to his practice. And that number is increasing, he says. His message is clear: Patients with a diagnosis of MCC should be evaluated and treated at a cancer center, like Saint Barnabas Medical Center. Experts trained in MCC and the multiple treatment options—including new therapies like immunotherapy—can keep Merkel cell carcinoma under control. OCTOPUS AND CHORIZO KEBAB

Yields: 6 to 8 servings INGREDIENTS n 4 lbs. octopus, cleaned and tenderized n 1 onion, chopped n 1 carrot, chopped n 2 celery stalks, chopped n 2 Tbs. olive oil, plus more to coat sauce pan n 2 cups white wine n water to cover n 1 head of garlic, chopped, plus 2 cloves, crushed n 4 bay leaves n ½ lb. chorizo n 1 cup olives n 1 cup Peppadew peppers n 1 cup scallions n c hili flakes to taste n p eel from 1 lemon
DIRECTIONS In a medium-sized saucepot (large enough to fit 4 lbs. of octopus), sweat vegetables with 2 Tbs. of olive oil for approximately 6–8 minutes on medium heat. Add octopus, white wine, water to cover, garlic and bay leaves. Cover and cook on low heat for 1½ hours or until tender (pokes easily with a fork). Remove octopus from the pot, discard water and cool the octopus in refrigerator for about 20-30 minutes. Once chilled, cut octopus into ½-inch pieces then place on skewer with sliced ¼-inch thick chorizo, olive, Peppadew and scallions. Grill kebabs for approximately 2–3 minutes on each side. Or coat a sauté pan with olive oil. Once hot, add skewers with 2-4 crushed garlic cloves, chili flakes (amount depends on preferred level of heat) and the peels from 1 lemon. Roll kebabs in sauté pan for about 4-6 minutes. Plate and serve.

HONEY ROASTED DUCK Yields: 6 to 8 servings INGREDIENTS FOR THE MARINADE: n 1½ cups orange marmalade n 1 cup orange juice n 4 cups water n 2 tsp. white vinegar n ½ Tbs. cracked black pepper n 5 Tbs. ketchup n 1 tsp. green peppercorns n 4 sprigs of thyme

FOR THE DUCK: n 2 4-lb. Long Island ducks, thoroughly rinsed and patted dry n 1 Tbs. peanut oil n ½ cup minced shallots n 2 tsp. garlic, minced n 1 tsp. fresh ginger, minced n 1 small onion, julienned n 1 cup celery, julienned n 1 cup carrots, julienned n ½ cup sliced shiitake mushroom caps n 1 cup snow peas n 2 Tbs. scallions, chopped including some of the green part n coarse salt and freshly ground black pepper to taste
DIRECTIONS To make the marinade, combine all ingredients except the thyme into a saucepot. Heat to simmer and whisk together. Remove from the stove and add 4 sprigs of thyme. Cool in refrigerator. Once cool, pour into a deep, non-reactive container large enough to hold the two ducks. Add duck and marinate in refrigerator for at least 12 hours. Preheat the oven to 325°F. Remove the ducks from the marinade and place them on a wire rack in a roasting pan. Cover with aluminum foil and place in the preheated oven. Roast the ducks for 1 hour, or until the skin is crisp and an instant-read thermometer inserted into the thickest part reads 165°F. If the skin is not crisping, lift off the aluminum foil for the last 15 minutes of roasting. Place the marinade in a small saucepan over medium heat and bring it to a boil. Immediately remove it from the heat and set aside. About 15 minutes before the ducks are ready, prepare the stir-fry. Heat the peanut oil in a large wok over medium-high heat. Add the shallots and minced garlic and allow them to sweat for about 4 minutes, or until the vegetables are translucent. Add the minced ginger and sauté for about 2 minutes, or just until the ginger has softened slightly. Add the onion, celery and carrots and stir-fry them for 2 minutes. Raise the heat to high and add the mushrooms. Stir-fry vigorously to help the liquid evaporate. Add about ¼ cup of the reserved marinade and, again, stir-fry vigorously to deglaze the pan. Stir in the snow peas and remove the mixture from the heat. Stir in the chopped scallions along with salt and pepper to taste. Using a chef’s knife, cut the duck into eight pieces: two thighs, two legs and the two breasts cut in half. Place a mound of the stir-fried vegetables into the center of each of six dinner plates. Place a piece of duck on top of the vegetables. Drizzle some of the reserved marinade around the edge of the plate and serve immediately.

CHEESECAKE LOLLIPOPS Yields: 45 pops INGREDIENTS FOR THE CHEESECAKE: n 3 packages (8 oz. each) cream cheese, softened n 1 cup sugar n 1 cup sour cream n 3 Tbs. shortening n 1 tsp. vanilla extract n 3 yolks from large eggs, lightly beaten n 4 5 lollipop sticks (4 inches long)
DIRECTIONS Heat cream cheese, sugar, sour cream and shortening in a small saucepot over low heat. Once cream cheese mixture is melted, add vanilla. Remove from the heat and temper in egg yolk. Pour mixture into lollipop mold and refrigerate. If you do not have a mold, cool in a container until firm, then roll into balls. Once cooled and solid, insert lollipop sticks. Melt the chocolate in microwave. Dip lollipops in melted chocolate or roll in graham crackers, shaved chocolate, nuts or other assorted toppings.

BIRD WATCHING From hawks and herons to eagles and egrets, you can

MORRIS: Great Swamp National Wildlife Refuge Pleasant Plains Rd., Harding This ornithological gem almost became an airport back in 1959, but 3,000 acres were preserved instead as a wildlife refuge—to the relief of local activists. Today, the reservation contains over 7,600 acres and is a bird-watcher’s paradise. In the Great Swamp’s cattail marshes and grasslands, a variety of stateendangered species (like the barred owl and red-shoulder hawk) can be viewed. Frelinghuysen Arboretum 353 E. Hanover Ave., Morris Township After local birds return from their winter migrations, they are known to lay eggs at the arboretum. Staff members put out seeds and natural supplies to help the birds build nests, and they take visitors on guided tours
around the grounds. Experienced bird-watchers are free to join or simply roam the property on their own. Troy Meadows Wetlands New Edwards Rd., Parsippany-Troy Hills Troy Meadows is a large freshwater marsh and home to a number of ordinary, threatened and endangered bird species. Bald eagles are known to nest at Troy Meadows, and other species like the Savannah sparrow, American bittern and black crown night heron call the marshlands their home. FISHING The counties don’t have deep-sea fishing, but you can still hook a record-breaking catch in your local waterways. You can go water-skiing, tubing and wakeboarding at Morris County’s Budd Lake, but the spot is best known for its schools of both small- and large-mouth bass just waiting to tug at your line. There’s also the 2,600-acre Lake Hopatcong, which boasts some of the state’s best freshwater fishing. You’ll be sure to reel in trout, hybrid stripers and catfish…to name a few. Over in Essex County, there are plenty of trout to catch at Verona Park Lake. This smaller body of water is great for amateur fishers and kids looking to cast a line from the shore.

FLAVIO’S WARM CHICKEN AND PESTO SALAD Yields: 4 servings INGREDIENTS n 8 boneless chicken thighs, skin on n 4 ¼ oz. mozzarella n 16 cherry tomatoes, halved n s alt and freshly ground black pepper FOR THE PESTO: n 4 ½ oz. pine nuts n 2 oz. basil leaves and stalks n 2 Tbs. Parmesan, finely grated n 1 small garlic clove, peeled n 8 Tbs. extra virgin olive oil FOR THE SALAD: n 7 oz. spinach leaves n 1 Tbs. extra virgin olive oil
DIRECTIONS Preheat the oven to 350°F. Put the pine nuts on a baking tray and roast for a few minutes until golden brown. Remove from the oven and tip onto a plate to cool. Peel the skin from the chicken thighs and set aside. Season the thighs lightly with salt and pepper and stretch each one out onto a baking tray. Stretch out the pieces of skin onto an oven rack, scatter with a little salt and cook just above the chicken thighs in the oven for about 25 minutes— the fat from the skin will drip onto the thigh meat below. The skin will shrink and become golden and crispy, and the chicken thighs should be cooked through in about the same time, but remove one or the other if one is ready before.

Meanwhile, to make the pesto, whizz all the ingredients together in a small food processor or use a pestle and mortar. Season to taste and set aside. When the chicken is cooked, remove the rack with the skin and set aside. Remove the tray with the chicken thighs and spoon over the pesto, using about 1 Tbs. per thigh. Tear the mozzarella into thumb-sized pieces and lay on top of the pesto. Scatter the tomato halves around the chicken and bake for an additional 5 minutes or until the cheese begins to brown. To make the salad, toss the spinach with the oil and a pinch of salt and pepper, and divide between four bowls or plates. Lay the chicken onto the spinach with the tomatoes, crumble the chicken crackling over the top and serve.

BUTTER CHICKEN Yields: 4 servings INGREDIENTS n 8 chicken thighs, skin on and bone in n 1 tsp. salt plus more to taste n 2 tsp. chili powder n 2 Tbs. lemon juice n 4 fat garlic cloves, grated n 1 Tbs. fresh ginger, peeled and grated n 2 Tbs. ghee, butter or coconut oil (optional) n 2 onions, finely chopped n 1-2 small green or red chilies, split in half, to taste n 2 tsp. ground cumin n 1 tsp. ground turmeric n 1 tsp. ground coriander n 4 Tbs. butter n 14 oz. can of plum tomatoes, chopped n a few coriander leaves
DIRECTIONS Put the chicken thighs into a bowl and scatter over 1 tsp. of salt, the chili powder, lemon juice and half the garlic and ginger. Mix thoroughly and set aside to infuse for 15 minutes. Put the chicken thighs skin-side down into a large frying pan over a medium heat. When golden brown turn to the other side and repeat—it will take about 20 minutes to do this. Remove the chicken from the pan and set aside while you make the sauce.

Add the ghee to the pan (unless there is enough chicken fat) and fry the onion with a little salt until softened, about 10 minutes. Add the remaining garlic, ginger and chilies and fry for a couple of minutes. Stir in the remaining spices and cook for another couple of minutes. Add the butter and tomatoes and fill the can halfway with water and swirl it around. Add this to the pan and cook for 15 minutes or until the tomatoes are soft, stirring frequently. Add the thighs to the pan and continue to cook, covered with a lid, for 45 minutes or until they are cooked through and the meat falls easily from the bones. Season to taste. Add the coriander and serve right away.

CHICKEN TAGLIATA Yields: 4 servings INGREDIENTS n 4 boneless chicken breasts, skinned n 1 Tbs. extra virgin olive oil n 7 oz. rocket leaves or watercress n 2 Tbs. Parmesan or Grana Padano, in shavings n s alt and freshly ground black pepper FOR THE DRESSING: n 8 -inch sprig of rosemary, leaves picked n ½ fresh red chili, to taste n 1 small garlic clove n 3 Tbs. extra virgin olive oil n 1 Tbs. balsamic vinegar
DIRECTIONS Preheat the grill to high. Prepare the dressing by finely chopping the rosemary, chili and garlic together on a board with some salt and a good twist of pepper. Mix in a bowl with the oil and vinegar. Set aside. Open out the chicken breasts by cutting them three-quarters of the way through with a sharp knife along one long side. Butterfly them by opening them out like wings and flatten under a piece of cling film with a meat tenderizer or base of a small pan. The chicken should be an even thickness to ensure the same cooking time all over. Season the chicken breasts and rub a little oil over each one. Grill the breasts until they are cooked through— this will take about 4 minutes each side if the breasts are ¾ of an inch thick. If you have a meat thermometer, check that the chicken is 176°F inside, or cut into the deepest part with a sharp knife to check that the juices run clear and are not pink. Arrange the rocket leaves and Parmesan shavings on a plate or large wooden chopping board. When the chicken is cooked, slice it into strips and transfer to the serving plate. Drizzle the dressing over and serve immediately.

Papaya’s Paradise
THIS SIZABLE BERRY PACKS A TROPICAL PUNCH THAT’S EQUAL PARTS DELICIOUS AND NUTRITIOUS. IT MAY BE JUST BEGINNING TO WARM UP here in New Jersey, but thanks to the yearround import of this tropical delight, a culinary escape to paradise is as accessible as your local grocery store. Papayas, found in the produce department of most markets, are recognizable as green or yellow oblong melon-like mounds. Native to Mexico and Central America, this fruit—it’s classified as a berry— is also grown in parts of the U.S., including Hawaii (this variety, though, is smaller than the Mexican papaya). Don’t be intimidated by its size or puddle of seeds that await when you cut into it—its sweet tropical taste is just the start of its benefits (and you can even enjoy those seeds on the side).
with an allergy may experience a reaction if they consume or use the fruit this way. BUY/STORE/SERVE When buying, pay attention to color and feel. A papaya should be firm and streaked yellow, CSPI recommends. Storing it at room temperature for two to three days will allow the fruit to ripen. It’s ready to eat when the fruit feels soft and has turned a yellow-orange hue. Once the fruit is ripe, it should be refrigerated and eaten within a day. To eat, cut the papaya in half, take out the seeds and rinse and reserve
them if you plan to use them separately. Serve the fruit whirred into a tropical smoothie alongside other warm-weather fruits, such as avocados, bananas and mangoes; chopped into a salsa to add a hint of sweetness; sliced in a salad or with yogurt; or simply on its own. Martha Stewart suggests roasting it with brown sugar, and on its webpage, the Hawaiian Papaya Industry Association offers a recipe for an impressive papaya bowl stuffed with chicken salad. —Liz Donovan
POWER UP Papayas are the fourth most nutritious fruit— after guava, watermelon and kiwi, respectively—according to the Center for Science in the Public Interest (CSPI), a nonprofit consumer advocacy organization. The group ranked fruits based on calorie count (one cup of papaya has 60) and levels of various nutrients. The papaya earned high marks for its rich content of vitamin C (88 mg, 98 percent DV), which boosts the immune system, potassium (360 mg, 7.5 percent DV), folate, (53 micrograms, 13 percent DV) and fiber (2.5 grams, 9 percent DV). It’s also rich in beta-carotenoid, an antioxidant that converts into eye protecting–vitamin A and gives the fruit the reddish color you’ll see when you slice it open. A 2014 study published in the Journal of Nutrition found papayas to be a better source of this antioxidant than tomatoes and carrots, vegetables often associated as leaders in promoting eye health. There are topical benefits, as well. Papayas contain an enzyme called papain, which helps with digestion. It also makes papaya effective as a meat tenderizer or even a skin exfoliant. (Note: Because of this, papaya is a popular ingredient in beauty products, but speak to a doctor or dermatologist before crafting your own face mask.) A word to the wise: Raw and semi-ripe papaya contains latex, so people

Attorneys throughout the county were asked to select peers whom they deem are the best within their practice area and whom they would seek out for particular legal needs. DataJoe checked and confirmed that each published top vote getter had, at the time of review, a current, active license status with the State of New Jersey regulatory board. If they were not able to find evidence of a lawyer’s current, active registration, he or she was excluded from the list. In addition, any lawyer who has been disciplined for an infraction by the State of New Jersey regulatory board was excluded from the list. GET A TRUE THAI TASTE AT THIS MONTCLAIR EATERY. NOT ALL THAI FOOD IS CREATED equal—just ask Gordon Ramsay. When the celebrity chef got chewed out some eight years ago for plating sub-par pad thai, the world found out just how hard it can be to prep topflight Asian cuisine. Perhaps Ramsay could’ve taken a hint from Sheree Sarabhaya, executive chef and owner of Kai Yang, which recently opened a stone’s throw away from the Wellmont Theater in Montclair. Sarabhaya is no stranger to Thai food and the area’s culinary landscape: She owns Boon Thai Kitchen in Livingston and operated the highly-popular Spice II in the township until it closed last year. But, as Ramsay can attest, you can’t get by on reputation alone. My friend and I recently gave Kai Yang a try and were quickly excited by the vibrant décor, from the wall and ceiling fixtures to the bright, floral tabletops. The menu boasted all the usual suspects found in a Thai restaurant in the states: soup, fried rice, stir fry, curry and, of course, pad thai. To start, we ordered a pair of sweet Thai iced teas to drink with our two appetizers, vegetarian spring rolls and chicken dumplings. Unlike Chinese egg rolls but similar to Vietnamese spring rolls, Thai chefs fill their fresh (not fried) veggie rolls with soft glass noodles, which provide a smooth, silky texture with each bite. My friend went the unconventional route and deconstructed her roll to enjoy the components individually, spooning a bit of plum dipping sauce onto the ingredients for extra zest. We filled up on more carbs with the dumplings, four bite-size pouches stuffed with a variety of textures: soft marinated chicken and shiitake mushroom and crispy onions and carrot. The mashup of flavors, including the ginger dipping sauce, was on point. Mixing and matching main dishes and complementary sides can be a daunting, albeit fun, task at any eatery, especially when there are plenty from which to choose. Our first entrée to share was kai yang, the restaurant’s
namesake, which means grilled chicken. The dish is adapted from Laos recipes and features a wonderful depth of flavor thanks to an herb rub, lemongrass, pepper, palm sugar and coriander. Our half-chicken was infused with so much deliciousness that we regretted not ordering the whole bird at the time. In retrospect, it was the perfect size because each order comes with a choice of three sides; we chose a sweet papaya salad, sticky rice and two grilled (and super tender) pork skewers. And looking back, our second entrée, green curry, essentially came with another half-chicken. The green curry flavor is one of my favorites, the coconut milk base of Kai Yang’s version blending exceptionally well with bamboo shoots, eggplant, basil and other spices. Pour it over rice and you have heaven in a bowl. We ordered shrimp pad thai to accompany the two main dishes. In contrast to Chef Ramsay’s “bad thai,” Kai Yang’s was a knockout. Instead of mixing all the ingredients, Kai Yang lets the diner control the amount of bean sprouts and crushed peanuts used in the dish. The presentation and form of the noodles/egg/shrimp combination was almost too striking to ruin, but watering taste buds and hungry bellies prevail. The portion size was smaller than what we were used to, so polishing off this pad thai was not a problem. (It didn’t hurt that everything tasted so good.) The last time I ate at a Thai restaurant, I ordered sweet sticky rice for dessert so I passed on Kai Yang’s during this visit. Instead, my friend and I shared a fried banana with Thai iced tea flavored ice cream. It was the perfect end to what was one of the best dining experiences I’ve had in restaurant-rich Montclair. GATHERINGS SPIN FOR A CHILD CASA FOR CHILDREN OF ESSEX COUNTY Newark Indoor cyclists of all levels participated in CASA’s (Court Appointed Special Advocate) 11th annual Spin for a Child, which took place at D*Fit in Montclair. The event raised more than $23,000 for CASA, which trains volunteers to speak up for the best interests of children who have been removed from their homes because of abuse or neglect.
