YOUR RETIREMENT PLAN may offer you several options for managing your retirement plan assets when you change jobs or retire. This article explains these choices in order to help you make the right decision. Your retirement plan may offer you several options for managing your retirement plan assets when you change jobs or retire. Understanding these choices will help you make the right decision. YOUR OPTIONS Following are the choices that may be available to you. Note that these selections apply to your contributions, the vested portion of your employer’s contributions, if any, and the earnings attributed to both. • your money in the plan. You may be able to leave your savings in your employer’s retirement savings plan. Usually, minimum distributions must begin after you reach age 70½. This option allows you to continue deferring taxes on the account.1 Although you can no longer make contributions, you can still control how the money is invested. • Roll over your money to another retirement account. You can move your money into an individual retirement account (IRA) or, if you are changing jobs, into your new employer’s retirement plan, if allowed. With a “direct rollover,” the money goes directly from your former employer’s retirement plan to an IRA or to your new plan—you
never touch the money. This option also allows you to continue deferring taxes.1 • Take a cash distribution. You can choose to have your money paid directly to you in a lump sum or in installments (if you are retiring). However, you will be subject to income taxes, and if you are younger than age 59½, a 10% additional tax. In addition, your employer will withhold 20% of your distribution to put toward your federal income tax obligation. Therefore, if you are under age 59½, the amount you receive could be signifcantly less than you expect. AVOIDING AN IMMEDIATE TAX BITE If you receive a distribution, you can avoid an immediate income tax bite and the penalty if you roll over the entire amount into an IRA or a qualifed employer plan within 60 days. You will receive your distribution minus 20% in withholding for federal income tax, but you can make up the withdrawal amount from your own pocket. The withheld amount will be recognized as taxes paid when you fle your regular income tax. Think carefully before making any decisions about the money in your retirement plan. It may also be a good idea to discuss your options with a tax advisor.1 Withdrawals will be taxed at thencurrent rates. Withdrawals prior to age 59½ are subject to a 10% additional tax.

For your lawn and garden, it’s time to think—spring? OK, next year’s lush plants and carpet-like green aren’t top of mind as the mercury drops and jack-olanterns appear. But Jason Sponzilli of the Sponzilli Landscape Group in Fairfeld says a homeowner should do seven things now to assure a beautiful landscape next spring: n Trim dead branches. Large, lifeless branches can be dangerous, especially when wind and snow take over. Protect smaller trees from further damage by trimming diseased branches close to (but not fush with) the trunk. For larger trees, call a certifed pro. n Protect plants. Trim perennial foliage to the ground; this sends energy to the roots for next season. Plant bulbs and mark them with a small stick so you don’t disturb them during spring planting. Snails and slugs feed on annuals left to decompose; cull out annuals—and these critters—for a healthier garden bed next spring. n Mulch young plants. Till decomposed mulch or compost into your soil to give plants fresh nutrients to survive the winter. Then—after a light frost but before the ground freezes—place a 2- to 4-inch layer of mulch around the plants to guard them from runoff in cold weather. n Compile compost. Save leaves collected from lawn and gutters to create a compost bin in your yard—you can contain it in chicken wire. Use a plastic tarp to transport leaves to the compost pile, adding leaves weekly so they’ll be ready to “feed” next year’s beds and lawn. n Mow to 1-1¼ inches. Grass cut shorter may not grow right; grass left longer can more easily ensnare leaves, creating an opening for possible disease. n Fertilize your lawn. Grass roots grow till temps get down to 40ºF, so fall is a perfect time to apply highphosphorous mixes to encourage root growth for a bright green lawn next spring. n Aerate. Aerating—perforating with small holes to allow water and nutrients to reach grass roots—is especially important in high-traffc or shady areas or places where rainfall pools. Use a garden fork for small areas; for larger sections a walk-behind aerator is more effcient.

THE MANAGEMENT of complex breast conditions has been a cornerstone of my practice for nearly twenty years. One growing trend in breast cancer management involves oncoplastic reconstruction at the time of lumpectomy. Tis is where the plastic surgeon performs a combination breast lif and/ or reduction with local faps to fll in or camoufage the partial mastectomy (lumpectomy) defect. It ofen allows the breast surgeon to remove even more tissue without fear of resulting large deformities. It allows me the opportunity to be quite creative, and every case is unique. Although challenging, the results are very satisfying. Another trend is nipple sparing mastectomy and reconstruction. Tis requires great collaboration between breast surgeon and plastic surgeon and ofen involves a sophisticated combination of tissue expanders, tissue grafs and later shape refnements, replacement with a choice of a growing array of implants, and even fat grafing. It is always my objective to make my reconstruction surgery cases rival my cosmetic surgery cases in their aesthetic outcomes. Another very important area to discuss is the management of congenital or developmental breast anomalies. Dramatic size asymmetries, constriction malformations, tubular (or tuberous) deformities, or unilateral absence of breast (Poland’s Syndrome ) have tremendous psychosocial impact on young adult females. Treatment may be single or multi-staged and requires a creative and well-planned approach. Combinations of implants, reductions, lifs and faps may be needed. Tese outcomes are truly uplifing in spirit to young women. Hundreds of examples are shown on my website, on my YouTube channel, and in our testimonial section.

Roasted spiced pumpkin salad seRves 4
Executive Chef COREY HEYER of The Bernards Inn in Bernardsville Ingredients n 6 cups sugar n Pumpkin, cut into 1-inch squares n 3 Tbs. olive oil n 2 tsp. ground cumin n 2 tsp. Spanish paprika n Salt n 2 tsp. sherry wine vinegar n 1 cup baby arugula n 1 cup cooked French lentils n 24 ½-inch cubes of Brie cheese n 24 Marcona almonds, lightly toasted to a golden brown n 1 Tb. mint chiffonade n 1 Tb. cilantro chiffonade
Directions 1. Heat oven to 375° F. 2. toss the diced pumpkin with the olive oil, cumin, paprika and a heavy pinch of salt. 3. lay the pumpkin in a single layer on a sheet tray and bake for 10 minutes. 4. Flip the pumpkin pieces and roast for another 5 to 10 minutes. 5. Remove the pumpkin from the tray and drain the olive oil into a small bowl. 6. allow the pumpkin to cool to room temperature. 7. add the sherry wine vinegar to the olive oil, whisk well and adjust the seasoning with a pinch of salt, if necessary. 8. combine the lentils and arugula in a bowl. dress with the sherry wine vinaigrette mixture. 9. arrange the salad in the center of four plates. 10. place the roasted pumpkin over the arugula salad. 11. put three pieces of Brie on each side of the salad and place a marcona almond on top of each piece of the pumpkin. 12. divide the remaining herbs equally over the pumpkin and drizzle any remaining vinaigrette around the plates.

PreP: 10 minutes cook: 10–20 minutes Ingredients n Salt and fresh ground black pepper n olive oil n 4 tsp. Dijon mustard n 6 tbs. fresh lemon juice n Splash of white wine n 3 cloves garlic, chopped n 2 tbs. unsalted butter n 1 cup quartered artichoke hearts n ¼ cup capers n ¼ cup grape tomatoes, halved n ¼ cup sliced red onions n 2-3 lbs. fresh wild-caught salmon fllet (skin on/scaled preferred) in 10-oz. portions
Directions 1. Preheat oven to 425° F. 2. rub the salmon fllets with the dijon mustard and season with salt and pepper. 3. heat an oven-safe skillet over medium-high heat and add olive oil to coat the bottom of the pan. 4. sear the salmon fllets skin-side up for approximately 30 seconds. then, fip onto skin side. 5. add the onions, garlic, tomatoes, artichokes, capers and butter into the skillet. 6. when the butter melts, add wine and lemon juice. 7. remove from stove and place the skillet in the oven. 8. cook for another 2 to 3 minutes for rare, 4 to 6 minutes for medium and 10 minutes for well done. 9. carefully remove skillet from the oven. 10. use spatula to remove the fllets from the skillet. 11. arrange the salmon on the plates and pour reduced sauce and vegetables on top.

breast cancer, which strikes one in eight women in this country, usually has a familiar course: it slowly forms a mass that is discovered through a mammogram or a physical exam, and in most cases the patient is treated successfully and survives. but there’s a particularly virulent form of the disease, infammatory breast cancer, that appears seemingly out of nowhere, invades much of the breast tissue in a matter of weeks, and is almost always fatal. sharolyn kennedy, a 41-year-old fight attendant from colts neck, is one of the unlucky few to develop this disease. she’s also one of the lucky few who have survived. she and her husband, patrick, 42, owner of a graphic design company, had just bought a new house and were moving in, in early January 2015, when she noticed a rash on her left breast. when she was putting lotion on it one day soon after, she felt a lump. “i knew it was something more serious than detergent rash,” she says. she visited her ob/gyn, who ordered a mammogram and a breast ultrasound exam. she recalls: “the technician kept pushing underneath the lump, and i said, ‘you found something else, didn’t you?’” the radiologist told her to see a breast surgeon—immediately. “i was in shock,” says kennedy. “i was just 40; where do you look for a breast surgeon? My husband had surgery at saint barnabas a few years ago, so he called some doctors there and asked. they all said to see dr. Michele blackwood.” M. Michele blackwood, M.d., is the director of breast health and disease Management at saint barnabas Medical center. “sharolyn came in, kind of panicked, with her husband,” she remembers. “her left breast was very, very red, hot and three times the size of her right breast. cancer had enveloped all the breast and lymphatic tissue. they were scared to death.” the physician knew right away it was infammatory breast cancer. “dr. blackwood told me, ‘whatever you do, please don’t google it,’” kennedy says. but she already had—and she’d read that only 5 percent of patients survive for fve years. “i had a lot of confdence in dr. blackwood, but that was still a very scary thing to learn,” kennedy says. “still, i had the attitude that she and her associates knew what they are doing, and i needed to beat this. you have the choice to fght or not. i was not ready to let this get me at 40.” amid all this bad news came a ray of hope. the pathology report on her biopsy showed that her cancer, though already at stage 3, would respond to a recently developed drug called perjeta (pertuzumab). dr. blackwood, who had been involved in
trials for the drug, knew that this cancer required chemotherapy before surgery—reversing the typical protocol—followed usually by radiation. “if you don’t do it this way, it can be deadly,” dr. blackwood says. “it’s like putting out a wildfre, then cleaning up the ashes with surgery. the good thing was that i knew her cancer would respond beautifully to this medication.” it did. Just 10 days after her initial exam, kennedy began chemotherapy, and after only a couple of treatments of perjeta, in combination with the better-known breast cancer drug herceptin (trastuzumab) and three other drugs, the swelling and redness were gone. after about 10 of her scheduled 20 weeks of chemotherapy, kennedy saw the results of a new Mri (magnetic resonance imaging) scan. “we realized how amazingly the treatments worked,” she says. “i saw my two Mris next to each other, and i was shocked at the difference. it was like night and day.” her last round of chemo was on June 11, after which she took a month to regain strength and visit her family in california. by the time of her operation, a modifed radical mastectomy, on July 14, she was cancer-free—although surgery was still needed as a safeguard. “sharolyn’s results were very dramatic, very exciting,” dr. blackwood says. “they’re what we hope to achieve with all cancers someday.” in august, kennedy was still a bit sore from the surgery and was scheduled to begin radiation therapy. but she remained as upbeat as ever. “i feel great,” she says. “sometimes i get pity parties from people, but i tell them i don’t want pity. be strong for me instead. let’s fght this. NiNe years ago, Laura schNeider was a schooLteacher in new Jersey. today she is a patient advocate living in boston, helping women learn about and deal with ovarian cancer. that change came after her own victory over the disease. in 2006, schneider started experiencing random, unexplained abdominal pain. imaging tests revealed a mass in her pelvic region, and she was referred to thad r. denehy, M.d., a gynecologic oncologist who is co-director of the division of gynecologic oncology and reconstructive pelvic surgery at saint barnabas Medical center. “she had advanced, stage 3c ovarian cancer,” dr. denehy says. “that means she had large amounts of cancer. only about 40 percent of women with cancer that advanced survive.” at that point, recalls schneider, now 60, “the only thing i knew about ovarian cancer was how to spell it.” her treatments were diffcult. dr. denehy operated in september 2006 and took out some of the cancerous tissue, but at that time it was only safe to remove part of it. after four cycles of chemotherapy, he performed a second surgery to remove all remaining cancerous tissue. then fve more courses of chemotherapy were delivered through a port directly into her abdomen. schneider was lucky—she has been cancer-free ever since. along the way, she learned as much as she could about the disease that nearly took her life. “i consider myself well read and well educated, but i knew nothing about this disease,” she says. “and i thought that if i knew nothing, i probably had a lot of company.” she went back to school and earned a Masters in health advocacy from sarah lawrence college. “i knew i had a message,” she says. “too many women don’t know the symptoms, which are so vague people call this ‘the disease that whispers.’ even many doctors aren’t informed enough. being a teacher, i want to educate others because awareness is critical for early detection.”

In September, Subroto paul, m.D., joIneD SaInt barnabas medical center as chief of thoracic surgery. he excels as a surgeon, as you might expect, but he feels he has another calling too. “i’m a teacher,” he says. “i really like to explain things to my patients,” adds dr. paul, who is also director of thoracic surgery for barnabas health. “i describe what they have, what the options are and what the best
therapy is for them. it’s like when i go to a car mechanic; i have no idea what is wrong with my car—it’s beyond me. i have to trust the mechanic to tell me what’s wrong. i try to make sure that information is presented clearly.” dr. paul specializes in the surgical treatment of lung cancer and other thoracic malignancies. as a surgeon who embraces the multidisciplinary approach to cancer care, he works collaboratively with the members of the oncology team including medical oncologists, pulmonologists, radiologists, pathologists and radiation oncologists. born in india, he came to the united states at age 2 and grew up in Queens and long island. now 43, he and his wife, chandra, the chief scientific officer for a biotech startup company, and their daughter, lila, 9, live in manhattan. dr. paul received his undergraduate education at yale university. he then earned his medical degree at harvard medical school and stayed in boston to complete both a general surgery residency and a thoracic surgery fellowship at brigham and women’s hospital, a harvard medical school affliate. he has also earned a master of public health degree from columbia university. before joining saint barnabas, dr. paul served as associate professor of cardiothoracic surgery and attending surgeon in the division of thoracic surgery at the new york presbyterian hospital/weill cornell medical center. he also held a secondary appointment in the department of health policy and research. dr. paul is one of New York magazine’s “best doctors” and has published more than 90 peer-reviewed articles in thoracic surgery. he is particularly interested in the minimally invasive treatment of both malignant and benign thoracic disorders. his new position, he says, offers “a great opportunity to advance the thoracic surgery program, including the use of robotics in surgery.” he enjoys working in oncology because “we haven’t found a cure for cancer, so we are always trying to make strides against it, like chipping at a wall,” he says. “it is intellectually stimulating from both a clinical and a research standpoint.”

Wendy Kaplan-Milstein to a better way to have her hip replaced. Maybe this article can do the same for you. Like her, you may undergo this minimally invasive procedure at Saint Barnabas Medical Center and go home the same day. Kaplan-Milstein, 61, is a psychotherapist living in Chatham with her husband, Harold, 62, a hospitalist. She frst noticed hip problems while on vacation last October. “By November it was substantially worse, to the point where walking up the slightest incline was very painful,” she says. “And it got progressively more painful. I was limping, and I couldn’t straighten my leg. Some days it would make me cry.” The problem was diagnosed as osteoarthritis, the common degeneration of the soft tissues in the joint, which is associated with aging. Kaplan-Milstein lived with it for months, tried a cortisone injection— “the pain got worse rather than better,” she says—and was about to visit an orthopedist in May when she happened to see a local magazine article on minimally invasive hip replacement. It told of a lecture to be given by Timothy J. Henderson, M.D., an orthopedic surgeon at Saint Barnabas. “He explained exactly what he did and the training he’d had in Europe to learn this technique,” she recalls. “He had pictures of people walking after surgery, but was very realistic about what recovery would be like. And he didn’t talk down to the audience. He was very professional. My husband and I were so blown away by Dr. Henderson that I cancelled my other appointment.” On June 3, Kaplan-Milstein became the frst patient to undergo this groundbreaking procedure at the medical center. What makes it unique is a special piece of equipment called the Athello. It looks like something you might fnd in the gym, but it attaches to an operating table and allows the surgeon to manipulate the hip, leg and knee so that there is no need to cut through any muscle or tendon, as is required with
standard techniques. “I only cut through skin, then push the muscle and tendons aside, without damaging them, and work through a very minimally invasive window to get to the hip,” Dr. Henderson explains. “There is very little bleeding and minimal pain.” Hip replacement typically puts a lot of stress on the knee joint as well, because the surgeon has to rotate the leg to the point where the foot is almost pointing backward. Not so with the Athello, which Dr. Henderson helped design in consultation with the manufacturer. It has a patented knee stabilizing system that protects the knee ligaments during external rotation. “I like to say that I don’t go to the hip; the Athello makes the hip come to me,” he says. He is able to take real-time X-rays during the procedure to ensure that all the bone angles and lengths are accurate and identical to the other hip. After performing about 400 such procedures, he can now replace a hip in a little over an hour. “Wendy went home in six hours, from check-in to the drive home,” he says. From the surgeon’s perspective, remarks Dr. Henderson, “once you get this under your belt, there is no going back to the standard way of hip replacement.” Mastering the technique did take some time. He assisted on 22 cases with senior surgeons in Switzerland and Italy, as well as in Texas and Colorado, before he was considered profcient enough to perform the procedure by himself in 2012, in Atlanta, where he then lived and worked. “It took me two to three hours the frst time,” he says. “But ever since, I’ve had very little reason to admit people to the hospital for hip replacement.” Kaplan-Milstein walked out of the hospital without crutches or a walker. Two days after her surgery, she was able to attend a play in which her daughter, Samantha, performed. “My husband made a video of me beforehand,” she says. “I was on some pain meds, but I

could sit through the whole show.” Eight weeks later she was back in her strenuous exercise class. “I can do everything,” she says. “I’ve had fewer problems with this than I had with foot surgery I had a year ago. I would not hesitate one second to recommend Dr. Henderson.” Dr. Henderson moved to New Jersey in 2013 and has been practicing at Saint Barnabas since early 2015. Part of his mission is to educate area physicians and residents about this procedure, and he conducts frequent seminars in the community, like the one Kaplan-Milstein attended. “People just don’t know about it, but they can be off crutches in a week and back to work in two weeks,” he says. “I had a police offcer as a patient, and he was back to work in a month. This is a revolution in hip replacement surgery. The replacement your grandmother got, which made you afraid every time she tried to tie her shoes—that’s gone.”

Pain relief for
prostate cancer patients a new drUg “trIckS” boneS Into FIghtIng the cancer’S Spread. I n M ay 2013, t h e U.S. F o o d a n d d r U g administration approved a new drug for the treatment of prostate cancer that had spread to the bone. It immediately got the attention of alison Grann, m.d., chair of radiation oncology at saint Barnabas medical center. “I was excited about this medication, because it would improve quality of life and patients would be more comfortable, so I really pushed to get this here,” she says. Her zeal helped persuade the medical center to become one of the frst in new Jersey to administer the radioactive isotope radium 223, which goes by the brand name xofgo (pronounced zoh-FEE-go). In a study published in the New England Journal of Medicine, it signifcantly decreased pain and improved survival rates for men whose prostate cancer had spread to the bone and was resistant to other medical or surgical treatments. Prostate cancer often spreads to bone frst; “it has an affnity for bone tissue,” dr. Grann says. The frst line of treatment when this happens is medication that blocks testosterone, which encourages the growth of prostate cancer cells. “However, at some point the cancer often becomes resistant to these medicines,” dr. Grann says. Bone cancer is typically quite painful, but until xofgo there
was little that could be done to help patients other than administering narcotics. This new drug, however, can slow the cancer’s progress in the bone. It works through trickery, dr. Grann says. The bone tissue mistakes the radium for calcium, and takes it in readily where bone is growing rapidly from cancer. once it is in the bone, it releases radiation, but in very small and localized doses that spread less than 100 microns—about the width of a human hair—to kill the cancer while doing little or no damage to healthy cells. The treatment consists of six intravenous injections, one every four weeks. dosage is based on weight, so patients are weighed before each injection, which takes about a minute. “side effects are nausea and diarrhea, though both are pretty uncommon, and also lowering of blood counts, so we do a blood check before every injection,” dr. Grann says. Though the overall prognosis for patients with metastatic prostate cancer is variable, xofgo “gives them a new option with limited toxicity that potentially can improve their quality of life,” says the doctor. “They can remain on their other medications, which may be controlling their disease well except for the pain. now they can also go out and walk or play golf or do their thing.”

asted Sal ith rtichoke Caper Butter INGREDIENTS • Salt and Fresh Ground Black Pepper • Olive oil • 4 tsp Dijon Mustard • 6 tbsp fresh lemon juice • Splash white wine • 3 cloves garlic, chopped • 2 tbsp unsalted buter • 1 cup quartered artichoke hearts • ¼ cup capers • ¼ cup grape tomatoes, halved • ¼ cup sliced red onions • 2-3 lbs fresh wild caught salmon flet (skin on/scaled preferable) in approx. 10 oz portions
INSTRUCTIONS • Preheat oven to 425. • Rub the salmon flets with the Dijon mustard and season with salt and pepper. • Heat an oven-safe skillet over medium high heat, add olive oil to coat botom of pan. • Sear seasoned salmon flets skin side up for approx 30 seconds. Flip onto skin side. • Add the onions, tomatoes, artichokes, capers and buter. When buter melts add wine and lemon juice. • Remove from stove and place skillet in oven. • Cook another 2-3 min. for rare, 4-6 min. for medium and expect it cooked through/well within 10 minutes. • Carefully remove skillet from oven using hot pad. • Use spatula to remove flet from skillet. Arrange salmon on plate and pour reduced sauce and vegetables over top.

Greek Lamb with Orzo
INGREDIENTS • 12 pieces of lamb shank • 5oz of extra virgin olive oil • 4 diced carrots • 1 cup of diced celery • 6 diced onions • 8 cloves of sliced garlic • 4 tbsp of kosher salt • 4 tbsp of black ground pepper • 1 cup of red Greek sweet, dry wine • 1 bunch of thyme • 1 bunch of rosemary • 1 6 lb can of crushed tomato sauce • Orzo Greek pasta • Greek feta cheese
Greek Taver INSTRUCTIONS • Marinate the lamb shank with a thin layer of kosher salt and ground black pepper on a large pan. Place in refrigerator for 30min-1 hr. • At the botom of a large pan, place celery, carrots, onions, garlic, olive oil, thyme, and rosemary. Season the vegetables with lefover kosher salt and ground black pepper. • Place lamb shanks over the layer of vegetables. Layer the shanks with tomato sauce and equal amounts of water, covering the lamb shanks. • Cover the pan with aluminum
foil and bake in the oven at 450 F for 3 hrs-3 ½ hr. For the duration of the baking time, check to make sure the dish is not dry or overcooked. Once the meat falls of of the bone, take the pan out of the oven. • Take the lamb shank out of the pan to rest. In a blender, place vegetables and tomato sauce for the sauce. • Cook the Greek Orzo pasta in hot water and drain. Mix the pasta with the sauce. • Serve pasta in a large bowl with the lamb shank on top. Optionally, top with crushed feta cheese.

Once the rice is cooked, it can be mixed in with the rest of the ingredients. Mix well. Lay the rice out on parchment paper so it can be cut with a cookie cuter about 3/4” thick. When ready to cook, dredge the rice cake in four and sauté in oil until golden brown.
INSTRUCTIONS Season the snapper with salt and pepper. Place in a sauté pan on the stove with oil and make it very hot. Place the fsh in the pan skin side down. Use a spatula to press down on the fsh to crisp and brown the skin. Turn the fsh over and continue to cook the fsh in the oven at 500 degrees for 4 to 5 minutes.

INGREDIENTS • 1 cup mayonnaise • 2 tsp whole grain mustard • 1 tsp honey or agave nector • Pinch of cayenne pepper • Pinch of smoked paprika INSTRUCTIONS Combine all ingredients in a clean mixing bowl and refrigerate before serving.
BRINED PORK CHOP INGREDIENTS • 4 pork chops with bone, each 12-14oz • 4 cups of water • 1 cup of kosher salt • 1 cup of brown sugar • Rosemary sprigs

INSTRUCTIONS • Combine the water, sugar, salt, and rosemary in a pot and bring to a boil for 2 minutes or until the sugar and salt have dissolved. Remove from the stove and chill to 45 degrees before using. Place the 4 pork chops into a large zip lock bag and pour in the brine, seal, and refrigerate for 2-6 hours. • When ready to serve, remove pork from the brine and season with fresh cracked black pepper (do not use more salt). • Place pork chop on a preheated grill or grill pan for 5-7 minutes on each side. Pull the pork of the grill when it has reached an internal temperature of 140 degrees and place on a clean plate. Cover the chops and plate in foil for 10 minutes allowing the pork to continue cooking to 145 degrees and rest before serving.
CHERRY CHUTNEY INGREDIENTS • 2 cups frozen or dried cherries • ½ cup brandy • 1 cup water • ½ cup cider vinegar • ½ cup brown sugar INSTRUCTIONS Place all ingredients into a sauce pot and cook over medium heat for 20 minutes. You want the cherries to rehydrate and break down, the alcohol to cook of, and the liquid to thicken. Best if served warm.

Beet, Black Rice and PeaR WRaPs Makes 4
ingredients n 4 whole-wheat tortillas n 2 large romaine lettuce leaves, torn in half n 1 large pear, grated n sea salt For the beet paste n 2 cooked beets, roughly chopped n 1 garlic clove, crushed n small handful of fresh cilantro n small handful of fresh fat-leaf parsley n 1/3 cup walnuts n 1 tsp. coconut oil n 2 tsp. apple cider vinegar For the black rice n 1 cup water n ½ cup black rice n ½ tsp. caraway seeds n Finely grated zest and juice of ½ lime n scant ¼ cup golden raisins n scant ½ cup slivered almonds, toasted To make the beet paste, throw everything into a food processor, add a pinch of sea salt to taste and blitz until a paste has formed. Transfer to a bowl for later. To make the black rice, put 1 cup water in a saucepan and bring to a boil. Add the rice, caraway seeds and a pinch of sea salt. Reduce the heat to low, cover and leave to simmer for 20–25 minutes, or until all the water is absorbed, then let cool. Once cooled, transfer the rice to a bowl and add the lime zest and juice, golden raisins and almonds. Stir well. Place 2 tablespoons of the beet paste in the middle of each tortilla and cover with one of the lettuce leaf halves. Top with a couple of heaping spoonfuls of the black rice flling. Sprinkle with the grated pear and fold or roll the tortillas to create a wrap.

Baked tofu and apple on Mixed Greens and WakaMe
serves 2
ingredients n 1 lb. frm tofu n 1 tb. olive oil n 1 tb. tamari n 1 tb. apple cider vinegar n 1 tb. lemon juice n 1½ tb. dried wakame n 3 cups mixed salad greens n 1 apple, cored and thinly sliced n 2 scallions, chopped n 2 tbs. sesame seeds n 1 tb. olive oil n 1 tsp. dried chili fakes n baking sheet lined with parchment paper Pat the tofu dry with some paper towels. Line a plate with some paper towels and place the tofu on top. Place another small plate on top of the tofu and weigh it down with something heavy (such as a can of beans). Leave for 15–30 minutes for the liquid to seep out. Remove the plate and cut the pressed tofu into cubes. Mix the olive oil, tamari, apple cider vinegar and lemon juice together in a small bowl. Pour this over the tofu and leave it to marinate for 30 minutes. Preheat the oven to 350˚F. Arrange the tofu on the prepared baking sheet in a single layer. Depending on how large your cubes are, bake the tofu in the preheated oven for 25–40 minutes, until golden. Meanwhile, soak the dried wakame in lukewarm water for 10–20 minutes. Pat dry with a dish towel or paper towels, and coarsely chop. Put the salad greens, apple, scallions, sesame seeds and wakame in a large bowl, and toss with the olive oil and chili fakes. Top with the baked tofu and serve.

Radish and avocado salad with chia-tahini dRessing
seRves 2–4
ingredients n About 24 radishes, roughly chopped n 2 small red bell peppers, seeded and chopped n Large handful of black or Kalamata olives n Large handful of fresh cilantro, roughly chopped n 1 small avocado, peeled, pitted and diced n ½ red onion, thinly sliced n 1 scallion, chopped For the chiA-tAhini dressing n 2 tbs. chia seeds n 2 tbs. tahini n ½ tb. cumin seeds n Juice of 1 lemon n 1 tb. chopped fresh fat-leaf parsley n ½ tsp. tamari n 1 tb. raw honey n Pinch of sea salt n Pinch of chili powder Put all the salad ingredients in a large salad or serving bowl. Put all the dressing ingredients in a blender or food processor and blitz until smooth. The dressing will be quite thick, but as you mix it through the salad, it will coat the ingredients nicely. Pour the dressing over the salad, toss together until well combined, and serve.

broccoli’s bright cousin is ready for its shining hour. chances ar e you’ve been munching cauliflower at salad bars for years without fully appreciating this super food. It’s a pleasant-tasting, versatile veggie that’s low in calories—just 29 per cup—and full of vitamins and minerals. Caulifower belongs to the species Brassica oleracea along with broccoli, brussels sprouts, cabbage, collard greens and kale. And yes, whether munched from a salad plate or served as a side dish, it’s familiar. But as the British newspaper The Guardian recently declared, “It’s time for the dowdy old caulifower to have its moment to shine.” for example, restaurants now offer popular caulifower entrées, and clever cooks realize that in puréed form the veggie can be a lean, healthy pinch hitter for mashed potatoes.
POWER UP one cup of raw caulifower, says the U.S. department of Agriculture, provides 77 percent of the vitamin C you need for the day, 20 percent of the K, 11 percent of the B6 and smaller amounts of thiamin, ribofavin, niacin, pantothenic acid, calcium, iron and magnesium. It’s a good fber source too, and fber helps you feel full, control your weight and keep your digestive tract healthy. Caulifower and its cruciferous kin contain glucosinolates, which break down to form compounds that have been found to inhibit the development of cancer in rats and mice.
DID YOU KNOW? Most caulifower is white, but not all. You can often fnd green, purple and orange varieties at farmers’ markets. Chemicals account for the differences—there’s more of the pigment chlorophyll in green caulifower, for example, while the purple plant gets its hue from the antioxidant anthocyanin, also found in red cabbage. Because it has more beta carotene, orange caulifower has about 25 percent more vitamin A than the white variety, and green caulifower— sometimes called broccofower—is higher in protein than either white caulifower or broccoli.

BUY/STORE/SERVE white caulifower is widely available at supermarkets and farmers’ markets. Look for a frm vegetable with compact forets and crisp, fresh leaves with no sign of yellowing or wilting. (The size of the head doesn’t affect quality.) Tightly wrap your raw caulifower; it’s good in the refrigerator up to fve days. Before using, wash and remove the leaves at the base and trim the stem as needed. Caulifower can be eaten raw, roasted, grilled or lightly steamed. It’s usually broken into forets before cooking and served in soups (such as cheddar caulifower soup), salads, casseroles or with creamy sauces (say, Gruyere sauce) for dips and salads. If you’re ambitious, try preparing a caulifower pizza (look online for recipes) or the increasingly popular caulifower “steak.” (with a large knife, slice the head vertically into slabs about ¾˝ thick and sear in a skillet with olive oil, then place in the oven at 400°f for 15 minutes.) —michael ardizzone october/november 2015

Was it when I frst spied its cinematic white cliffs? When I glided 450 feet above the harbor in the funicular past lemon groves, reed-thatched roofs and swaths of wisteria? When I realized that much of the island is blessedly free of cars? Or when I explored its caves and grottoes, knowing that this is where Homeric sailors, Roman emperors, A-list celebrities, artists and novelists, industrialists and intellectuals had romped? On Capri, the world’s frst resort, anything is possible. No one seems to be in a rush to get anywhere. But this is no lazy man’s trip: Because Capri is small and steep (four miles long and two miles wide) with so few roads, it’s a walker’s island (though you can rent a Vespa to explore some byways). In fact, Capri is a geological castoff from the peninsula of Sorrento in the southern part of the Bay of Naples. Limestone cliffs separate the two main towns: laid-back Anacapri and the more populated Capri (the town) in the east. Anacapri boasts Monte Solaro, 1,900 feet high, while Monte Tiberio, its somewhat shorter sibling, is topped by the ruins of the Emperor Tiberius’ palace, Villa Jovis. Most streets are really narrow twisting lanes or paved paths that criss-cross what is still a surprisingly wild, rocky island, home to goats and lizards, maritime pines and oleander. (The word Capri comes from the Greek word kapros, meaning wild boar— but I didn’t encounter those!) The island’s beauty is ft for a king. In fact, it was the Roman Emperor Augustus and his successor Tiberius who set their greedy eyes on Capri two millennia ago. Tiberius built the Villa Jovis, where he cavorted and caroused through his last decade. And if someone displeased him, legend contends that he hurled that someone from the Salto di Tiberio, a cliff 1,000 feet above the sea. Like so much that’s worth seeing on Capri, visiting Villa Jovis requires a trek— it’s an hour’s climb. But the bluff-top view is spellbinding: Sorrento and Vesuvius to the east; a panorama of Capri to the south and west. After seabirds halt their crying, there’s a profound silence, leaving only tranquility—that and an eerie sense that the ghost of Tiberius might just sneak up behind you. It seems the hellion was on to something. In the 1950s, then-exiled King Farouk of Egypt found himself at the Hotel Caesar Augustus, an idyllic spot with some of the island’s best views. His apartment, today known as the Farouk Suite, is one of 55 elegant rooms and suites. Original antiques and two oversize bathrooms, one with a

large Jacuzzi, the other a mega shower, both luxuriously outftted, are highlights of the suite. Though grand, the interior pales by contrast with the terrace: Its Doric columns frame 180-degree views. (Capri is no place for people with a fear of heights. In most places, you’ll be peeking over railings, balconies and alcoves down, down, down to the azure waters below.) A wealthy German built the hotel in the 1850s, but traces of previous structures dating back to the 9th century can be seen. Prince Emmanuel Bullak of Russia bought it in the 1900s and commissioned the life-size statue of Caesar Augustus pointing out to the sea. Thirty years later, the Signorinis bought the resort and made it one of Italy’s most stylish small hotels. No trip to Capri would be complete without swimming in the sea (and seeing the Blue Grotto—yes, it’s a big tourist attraction, but worth visiting if only once). Alas, beautiful beaches there ain’t—most of these tend toward small and pebbly, and the few sandy swaths you’ll fnd are awash with people and umbrellas. But what they lack in sand they more than make up for in scenery and scenes. La Fontelina on the southern coast is one of the best lidos, or beach clubs, with a good restaurant tucked into the rocks that serves pasta and seafood galore. And it sells day passes. You can slip into the water from the rocks and have a lemon granita waiting after your swim. Back on terra frma, it’s a toss-up as to what will captivate you more: heart-stopping views of the sea and the three iconic Faraglioni rocks, named Stella, Mezzo and Scopolo, or the beautiful people whose comings and goings make the dock a sort of catwalk. Of course, it can’t be reached by taxi. You either go by private boat or walk down a steep hillside (which means you’ll have to climb back up at day’s end).
When it’s time for dinner, you will be tempted to overindulge, no doubt scarfng down plates of homemade pastas, just-caught fsh and bowls of fresh fgs and washing it all down with bottles of fne wine. The Caprese grow their own herbs, fruits and vegetables. They buy seafood from the fshermen and make pasta at the kitchen table. It doesn’t get any fresher than this. Whether you eat at the hotel’s La Terrazza di Lucullo (try the orangescented risotto) or one of several nearby ristoranti, you won’t be disappointed. Try Aurora for pizza, or Da Paolino if you’d like to dine smack in the middle of a lemon grove. For dessert, I recommend the not-too-sweet sfogliatella, a Neapolitan specialty consisting of crispy pastry crust flled with creamy ricotta. It’s best warm from the oven. But no one will look askance if you decide to have only the famous Caprese salad—vine-ripened tomato, basil and mozzarella drizzled with extra virgin olive oil—and a glass of prosecco. Finally, you simply cannot miss taking a passeggiata, or nocturnal stroll. This nightly rite is practiced all over Italy, but here in Capri it’s akin to having front-row seats to the latest runway show in Milan. No sensible shoes for these fashionistas—only strappy, high-heel sandals will do for the women. As with any great parade, you’ve got to be both spectator and participant to experience it fully. Your reward: At the end of the night, you too will be an espresso-sipping bella donna or gentil’uomo. Now, that’s amore.
