February is American Heart Month and March is Colon Cancer Month, a friendly reminder to schedule your preventive care appointments and screenings. So many diseases, including colon cancer, can be avoided with early detection.
In fact, in this issue of Morris/Essex Health & Life, you’ll meet two patients who had lung nodules detected on scans through CBMC’s Incidental Lung Nodule Program and High Risk Lung Screening Program. Turn to page 16 to find out more about the programs, and how these screenings saved these women’s lives.
On page 18, you’ll learn about the brand-new Virtual Immediate Provider (VIP) Program at the Emergency Department (ED), which expedites the emergency process and limits wait time for patients. The pilot program debuted in late 2022 and has proved successful at our Livingston campus, and will be expanding to other RWJBarnabas Health sites throughout the year.
Lastly, we’re also excited to offer Next-Generation Sequencing technology at Cooperman Barnabas Medical Center. This powerful technology has many applications including identifying the genomics of an individual’s cancer in order to determine how best to treat the cancer. It’s Time To Reset And Recharge
We know perfectly well that more than a month of 2023 has already slipped away— perhaps taking many of your well-intentioned New Year’s resolutions with it. Whether or not you’re on track with your goals, it can’t hurt to tweak the path in which you’re pursuing them—or set new objectives entirely.

Food is about nutrition and taste, but doesn’t it help if it’s Instagramworthy too? With National Flapjack Day coming up March 7, five local eateries’ syrupy stacks are ready for their close-ups:
• The Committed Pig (28 W. Park Pl., Morristown) is seriously committed to its pancake game. Pumpkin pancakes with cream cheese glaze and cinnamon sprinkle are a fall favorite back every year by popular demand, but the year-round pancakes—red velvet, cookie-dough, blueberry or buttermilk—are as good as it gets too.
• Missy’s Main Street Café (181
E. Main St., Rockaway) is a hot spot for brunch and breakfast, and customers love its ever-changing pancake specials. A few recent favorites include the Twelve Carat Toothache (with funfetti, vanilla chips and strawberry reduction),
Reese’s Peanut Butter Cup pancakes and a savory Asian-inspired scallion pancake made with cheddar cheese and pork, ham or sausage.
• Minia’s Breakfast & Lunch (22 Lackawanna Plaza, Montclair; 419 Bloomfield Ave., Bloomfield) has only one type of pancake, such is
its confidence that that choice is a winner. Try an entire platter of pancakes served with two eggs and a meat of your choice, or veggies or avocado as a vegetarian side option. Pancakes are dusted with powdered sugar, and you can opt for a mixed berry topping and/or chocolate syrup drizzle.
• The Original Pancake House (831 Rte. 10 East, Whippany; 817 Bloomfield Ave., West Caldwell) is an old-school restaurant without the bells and whistles, but that doesn’t matter when all you want are solid flapjacks. Buckwheat, buttermilk, banana, blueberry, bacon—that’s just the B list!
• Toast City Diner’s (700 Bloomfield Ave., Montclair) pancake options include buttermilk, red velvet, carrot cake and gluten-free. They’re all cooked on the griddle, which gives them that authentic diner taste. Choose a single pancake or a short stack, depending on your appetite.

More people these days know the differences between a bluebird and a blue jay, and that’s because bird watching has risen in popularity. It’s been said to reduce stress and blood pressure. Simply set up one of the feeders below and watch the magic happen.
• Hopper Bird Feeder. These feeders are enclosed on all sides to protect seed from rain and snow.
• Suet Feeder. This feeder has a cage that encases a suet cake, which is typically made of hardened fat of beef or lamb.

Geo Moon is a lovable puppy who always likes cuddles and who was adopted from St. Hubert’s Animal Shelter in Madison. He enjoys hikes in the South Mountain Reservation, running super-fast in circles at dog parks and watching movies with his owners.
His favorite foods are apples, peanut butter and baked chicken. “Whenever we slice an apple, he comes running from wherever he is in the house to have some!” Rhianna says. And Geo loves the winter. During this time of year, he loves sporting his new puffer jacket, jumping in and out of the snow—and trying not to become a pup-sicle!

MORRIS HISTORY ON THE MAP
Last year marked the 20th anniversary of the Morris County Historic Preservation Trust Fund, which considers grants for “the acquisition, stabilization, rehabilitation, restoration or preservation of historic resources by the County.” To celebrate, Morris has launched an interactive online story map that depicts the historical sites that have benefited from the nonprofit’s historical grants—from the Ralston Cider Mill in Boonton to the Hopatcong State Park Fountain, to name just two of dozens. team went to work. Bateman’s efforts have won him the 2022 Charlie Kontos Environmental Activist Award from the Silvio Laccetti Foundation. He’s only the second person to win this student award, named for a naturalist and Rutgers doctoral candidate who died in 2010 at age 33.
Why the Alonzo Bonsal Wildlife Preserve?
I am a varsity rower for the Montclair High School crew team, and the Passaic is our home. I spend countless hours on it training with my team, and because it’s one of the most polluted rivers in the nation, I have always wanted to do something to improve the quality of the water. Realizing the Third River at the Bonsal was a tributary to the Passaic made me realize this was the perfect project.
What did your Eagle Scout project entail?
that was previously left in the preserve to a new location. With 10 to 12 guys, we walked it through the winding trails to its final resting place. It took longer than expected but we got the job done. It was one of the hottest days on record, so we had to take many breaks and stayed hydrated. How long did the project take?
The idea took several months to work out, and the planning took over a month—from securing sponsor approvals, town approvals, Scout approvals, etc., to fundraising, to the actual design of the space and sourcing of the trees and materials. Once I had the plans, approvals, funding and volunteers in order, it took about two days for us to physically do the project.
Before this restoration, what did you know of the preserve?
For most of my life I didn’t know it existed. My father introduced me to Jonathan Grupper, the president of the Bonsal Preserve Conservancy, to see if he had any needs for Eagle Scout help at the preserve. We had a nice conversation and came up with the trail and river restoration project together. It was a tremendous leadership experience. This project was particularly fun and fulfilling for me because I got to lead many of my fellow Scouts, friends and family on a project that helped our community.
How did it feel to win the award?
It was extremely heartwarming, and a cherry on top to the whole project. Dr. Laccetti’s [president of the Laccetti Foundation] honor was humbling and so appreciated. It was also quite a surprise and an incredible honor to speak with the governor.
Have your parents, Alicia and Michael (who is also scoutmaster), been an influence?
A hidden gem—21 acres of wilderness and wildlife sanctuary known as the Alonzo F. Bonsal Wildlife Preserve—straddles Montclair and Clifton, but even many residents don’t know it exists (or that it was named for a textile executive and Upper Montclair resident who died at 71 in 1966). Logan Bateman, a senior at Montclair High School, happened upon the preserve while checking out a site for his Montclair Troop 13 Eagle Scout project, and something clicked. He investigated what could be done to improve the preserve, got a project approved by the Scouts and recruited others to assist. Then, during last July’s heat wave, he and his
I led a group of 30 volunteers to build four walking bridges and planted 40 native trees throughout the preserve. The walkways have opened up the trails for people to explore and made it safer for them to enjoy. And the native plantings will help fight against invasive species, improving the river’s water quality. As we were finishing, a woman actually stopped us on the trail and mentioned how thankful she was since she had ruined so many shoes over the years by walking through the muddy preserve.
What challenges did you face?
We had a plan to carry a 300-to-400-pound bridge
They’ve always taught me to treat every day like a gift, so I try to live life to the fullest, always pushing myself to do more, whether it be through my engineering pursuits to figure out how to get an engine running or competing with my teammates or making a bigger impact on our society. The Third River experienced a tremendous fish kill a few weeks before your project. What do folks need to appreciate about the environment if it is to be saved?
People need to understand how fragile the environment is. They need to be aware of how small, careless gestures can have serious consequences. We all have an important responsibility in protecting our environment and natural resources.

Lung cancer is a leading cause of cancer deaths in the United States. But, as with most types of cancer, catching it early dramatically improves the chances of survival and prognosis.
Cooperman Barnabas Medical Center (CBMC) has been catching lung cancer early in individuals who are at high risk since 2012, thanks to its program offering free screenings and testing.
HIGH RISK LUNG SCREENING PROGRAM
Marie Napoli, 77, from Bloomfield, started smoking in her 20s and continued for 40 years, until she quit cold turkey in 2009. Given her history, she asked physicians about screening, but was told every five years would be fine. “That didn’t sit well with me,” she says. “I always worried about lung cancer, even after I stopped [smoking]. I always thought I did the damage already.”
In 2017, she saw an ad for the CBMC High Risk Lung Screening Program and qualified. She was tested every year, and in 2021, her annual screening identified a 2.5mm nodule on her left lung, small enough to be of low concern. But in March 2022, her screening showed it had grown to 11.5mm. The size, coupled with its rapid growth, was worrisome; nodules greater than 10 mm have an 80 percent probability that they are malignant. “I cried a lot,” she says. “Then I also realized we were catching it early. The doctors told me this is nothing to cry about. They told me I’m very lucky.”
Because of the nodule’s size and rate of growth, her doctors advised she go right to surgery. Joanna Sesti, M.D., chief of thoracic surgery and chief of robotic thoracic surgery, CBMC, and regional director of thoracic surgery northern region, RWJBarnabas Health, performed the surgery. She removed the cancerous nodule and several nearby lymph nodes to check for spread (thankfully, they were clear of cancer). Marie did not require chemotherapy, but Andrew Brown, M.D., medical oncologist and co-director of the Cooperman Barnabas Lung Cancer Screening Program, will monitor her health for the foreseeable future. She had her first lung nodule scan following surgery in December and will repeat them every six months for at least five years, when a clear scan would indicate she is effectively cured.
Because it was caught at stage 1, Marie has five-year survival rate odds of 95 percent, says Killol Patel, M.D., medical director of the Lung Nodule Program and director of Interventional Pulmonary at CBMC. That drops to 35 percent at stage 4. Without early detection, “the cancer could have spread, and we’d only be able to control the disease, not cure her.”
Now, Marie says, “I feel great. I’m amazed I have no problem breathing.” Though she took a break during the height of COVID—she contracted the virus herself—she went and still goes to the gym three days a week. “I thank God I went for the
scans. The recovery was easier than when I had COVID,” she says.
INCIDENTAL LUNG NODULE PROGRAM
Jessica Chiu, project coordinator for cardiovascular services at CBMC, was hired for the position in early 2022. All new hires receive physical screenings which includes a TB screening. Jessica opted for a chest X-ray to avoid needles, and it’s a good thing she did. Unexpectedly, the chest X-ray revealed an incidental lung nodule on her lung. Further testing revealed the nodule was stage 3 cancer, meaning it had spread to her lymph nodes. Jessica, 40, of Parsippany, neither smoked nor drank alcohol, and she had no symptoms—no cough, no chest pain, no shortness of breath. “They were surprised that I had it, there was no explanation,” she says.
Jessica needed surgery quickly, and Dr. Sesti performed the surgery. She removed the nodule and the impacted lymph nodes. “The surgery wasn’t bad. I was in the hospital for three days,” Jessica says. She stopped needing painkillers quickly and went back to work in about 10 days. “I felt fine,” she says. However, she needed chemotherapy and immunotherapy treatments, which caused side effects like dizziness, nausea and headaches. “There were ups and downs,” she says. “Some days I would cry to my doctors, but they are very supportive.” Going forward, she will receive a CT scan every three months, and if all is clear, progress to six months and then to every year. Despite her hardships, Jessica knows, “I was very lucky I went through the whole thing.”
Recently, CBMC introduced the Incidental Lung Nodule Program, which is for patients in whom an abnormal lesion or spot has been detected incidentally, during a scan ordered to look for something else. When this happens, a software system alerts the lung nodule team and sends a letter to both the ordering provider and the patient, offering an opportunity to follow up at the Lung Nodule Clinic. The patient also gets a follow-up phone call from the team. If a patient chooses to follow up at the Clinic, providers will review the case and recommend a course of action. If the patient is ultimately diagnosed with lung cancer, as Jessica was, he or she may be referred to a surgeon.
This program is unique to CBMC. In two years, it has found and treated 33 lung cancers in patients who, Dr. Patel says, “otherwise would be ignored, because lung cancer often has no symptoms until it’s too late. Like an iceberg, it keeps growing under the surface.” The program’s goal is to start patients on treatments as quickly as possible to minimize the chance of the cancer spreading, he adds.

TAKING THE ‘WAIT’ OUT OF WAITING ROOM
On Nov. 1, 2022, Cooperman Barnabas Medical Center (CBMC) introduced a pilot program in the Emergency Department (ED) called the Virtual Immediate Provider (VIP) program, which streamlines some patients’ visits and limits their wait time. It proved to be so successful that in 2023, it’ll continue at the Livingston campus, and will be introduced at other RWJBarnabas Health sites across New Jersey.
The ED at CBMC always works diligently to move patients through the department to ensure shorter wait times in addition to top-notch medical care. But this innovative program works to expedite emergency care even more. Qualified patients who come into the ED meet virtually with an Advanced Practice Provider (APP, a nurse practitioner or physician’s assistant). After the patient is assigned an Emergency Severity Index (ESI), which determines the severity of their case, an experienced tech will bring the patient into the triage room. The virtual APP will complete an initial assessment, enter orders into the computer system, start their chart and initiate testing. From there, depending on the results, the patient will be either sent for testing such as lab work or scans, brought to a treatment room or return to the waiting room.
This initiative at CBMC is among the first virtual triages in the country. It has proven to be a game-changer both for patients and providers. Under the direction of Christopher Freer, D.O., senior vice president of Emergency and Hospitalist Medicine at RWJBarnabas Health, Gidon Coussin, physician’s assistant and director of telehealth for the Emergency Medicine Service at CBMC, helped create VIP’s initial proof of concept at CBMC. “If you compare the numbers from November/ December of 2021 to 2022, the volume in our ED increased by 20 percent, but the patient wait time didn’t change at all,”
take away from the in-person ED experience. Coussin notes that as soon as a bed is available, patients in the VIP program will be examined by an attending physician, just as those ED patients who don’t qualify for the VIP program would be.

The physicians benefit from VIP too. “Doing the intake process virtually frees up the on-site provider so they can better tend to their current patients,” says Eric Handler, D.O., chairman of Emergency Medicine at CBMC. “We’ve been able to evaluate close to five patients an hour with this new process.”

THE FUTURE OF CANCER CARE
Innovative technology at Cooperman Barnabas Medical Center determines an individualized treatment plan for metastatic cancer based on a patient’s genetic makeup.
Next-Generation Sequencing (NGS) is used to sequence DNA and RNA to quickly identify and understand the gene abnormalities responsible for a variety of diseases and conditions. NGS is typically tested through a tissue biopsy, but, depending on the case, can also be performed through a blood sample. Available for more than a decade, this technology was limited to a few commercial companies around the country.
The Cancer Center at Cooperman Barnabas Medical Center was an early adopter, collaborating with those facilities to obtain this genetic analysis and integrate it into the care plan. Cooperman Barnabas Medical Center (CBMC) is now one of a few hospitals in the region that has NGS within its facility. “Sending out the samples took more than two weeks to get the results,” says Michael Dardik, M.D., chairman of Pathology at CBMC. “By doing it locally, we can better target the analysis more efficiently in about two business days and facilitate treatment much faster.”
WHY USE NGS?
Because cancer isn’t a one-size-fits-all disease—each type is specific, and even the same cancer may act differently in different individuals. Not all treatment plans will be effective for all patients. By using NGS and identifying mutations that cause cells to become cancerous, doctors at RWJBarnabas Health and CBMC, in partnership with Rutgers Cancer Institute of New Jersey—the state’s only NCI-designated Comprehensive Cancer Center— can determine which specific drugs to administer to a particular patient. The targeted treatment will inhibit the mutation from causing the cell to grow and divide and thus metastasize, says Michael Scoppetuolo, M.D., medical director of The Cancer Center at CBMC.
For the patient, targeted therapy, often called precision medicine, is more effective with less toxicity, as it zeroes in on specific genes in the cancer cells and causes them to stop grow-
ing, Dr. Scoppetuolo adds. The medication is typically an oral drug—though it may sometimes be administered via injection or infusion—and for many patients has better outcomes than chemotherapy, which does not differentiate between cancerous and healthy cells.
NGS analysis is used across the board for most types of cancer, particularly in those with stage four disease. “However,” Dr. Scoppetuolo notes, “we can use NGS to identify markers for prognosis and use them to help patients in earlier stages.” Dr. Dardik adds that it’s used primarily for oncology patients now, and will soon be expanding to other areas at CBMC.
There are limits, however, to the information provided by NGS. “We know of driver mutations that occur in most cancers, but we don’t have specific drugs for all of them,” says Dr. Scoppetuolo, adding that, for example, only a few mutations leading to breast cancer have been identified. On the other hand, NGS can identify many mutations that cause sarcoma and lung cancer, and thus doctors have several treatment options to prescribe. And though most patients with metastatic cancer can take advantage of the results from NGS, only about 30 to 40 percent of patients who undergo the test will have a mutation that can be treated, Dr. Scoppetuolo adds.
Still, “this is the wave of the future for how cancer care is going to be dictated,” Dr. Scoppetuolo says. “Studies are looking at how these gene mutations play a role in the management of the patient, from the initial diagnosis up until metastatic disease.”
The Cancer Center at Cooperman Barnabas Medical Center uses an interdisciplinary team approach to cancer care, where surgeons, pathologists, radiologists and others across various disciplines assemble at more than 13 tumor boards. Here, the teams discuss care for each patient, including how the information provided through NGS will affect each patient and what drugs may be available for their care.

How many years in a row have you put “lose weight” or “get in shape” at the top of your list of resolutions? Don’t worry—you’ve got company. HIGH-INTENSITY INTERVAL TRAINING (HIIT).
A workout is considered HIIT if it involves short bursts of intense exercise, followed by brief rests or lower-intensity moves in between sets. Overall, HIIT routines help decrease fat, build muscle and improve body composition, and they don’t need to be an hour long to be effective. The American College of Sports Medicine’s (ACSM) official recommendation is a more doable 30 minutes of moderate-to-intense activity five times a week.
What’s next: “We’ll see more programs designed with HIIT or SIT (sprint interval training) aspects included,” predicts Allison Kalsched, a personal trainer in Maplewood. “Additionally, with more studies and an increase in awareness of the importance of exercise for peri- and post-menopausal women, I think we’ll see more of these kinds of classes and programs available.”
How-to at home: Choose four exercises such as squat, reverse lunge, plank variation and bicycle, and do each for one minute with 20 seconds of rest in between. Aim to do five to six rounds, says Kalsched, but you can start with fewer and work your way up.

What’s next: Apps that do it all—such as the F45 Challenge App, which includes meal plans, recipes, educational articles and videos to support one’s health and fitness goals—are continuing to gain steam. And in addition to wearables and apps, experts are projecting 2023 as a big year for AI-based fitness training programs. This means that a workout aficionado can expect bespoke workouts with moves and intensity levels specific to his or her body and needs, resulting in highly personalized regimens—and top-notch results.
How-to at home: There are hundreds of apps you can download right to your phone, from Fitbit Charge 5 to Sweat, to help push you to your personal best in terms of both diet and overall fitness. “Many of us don’t have a great understanding of how many calories we take in on a daily basis,” says Rodriguez. “These tech tools help us understand this area better so ultimately we make healthier lifestyle choices.” FitnessAI is at the forefront of artificial intelligence workouts; its algorithm adjusts your level of difficulty and your rest intervals based on each workout you track. It also has messaging in the app to keep you accountable, much as a personal trainer would “IRL.”
TOTAL-BODY RESISTANCE EXERCISE (TRX).
This is suspension training that improves strength and tightens muscles by using just your body weight and gravity—no weights or kettlebells required. All you need is the adjustable straps (the original TRX straps were invented by a Navy SEAL), which amplify standard moves such as planks, pushups, squats, crunches and chest presses. “TRX works for all fitness levels and can target all the major muscle groups, including upper body, lower body and core, depending on the particular exercise,” says Rodriguez. You’ll probably want to work with a trainer at least at first to perfect your form and limit the risk of injury. But once you’re well equipped with the basics, this regimen is completely scalable for just about anyone, from student athletes to seniors.
What’s next: Some studios offer TRX-specific classes, but many gyms have the straps so that members can utilize them as they please. At F45, for example, TRX is used frequently on the studio’s cardio and resistance training days. How-to at home: Alternatively, you can purchase a set of TRX straps for between $100 and $200 online and do this exercise at home.
EXERCISE “SNACKING.”
This may be the best life hack for those of us who are busy and can’t always commit to a lengthy workout. The idea is that rather than one long session, you get some movement in via “bite-sized” bursts throughout the day, in whatever way feels comfortable to you. “This gets people moving throughout the day who otherwise don’t work out, and helps build consistency and motivation for a lifestyle that includes exercise,” Kalsched says. Bonus: Short-but-sweet workouts will make you feel accomplished, and that, in turn, can improve your mood and mental health. What’s next: Expect to see more online programs and challenges offering five-, 10and 15-minute workout snippets that you can pepper into your daily routine. (Peloton is known for this, and Kalsched offers a program like this too.) Low-intensity moves such as walking the dog or climbing the stairs count too, so you can feel productive knowing you’re doing even just a little something to get your body moving. How-to at home: The point of exercise snacking is that it doesn’t need to be formal and planned out. But if you prefer it to be, in between Zoom calls or the chauffeuring of kids, aim to take three 10-minute breaks each day, with three sets of 10 exercises during each. Kalshed suggests “using your stairs for a step-up and your coffee table for a push-up and doing resistance band rows—you can buy an inexpensive resistance band on Amazon.”

Something new? Of course not. But this ancient practice is breathing new life into workouts in ’23. It combines breathing techniques, physical movements and meditation to challenge both the mind and the body. Yoga improves strength, balance and flexibility, and it has cardio and circulatory health benefits as well.
What’s next: Yoga is more than just exercise, and it’s gaining steam with the current focus on mental health and wellness. “Yoga helps to release tension from the body and create more clarity in the mind, and it can lead to better sleep and reduced stress and anxiety,” says Sarah Bodnar, co-owner of Three Birds Yoga Studio with locations in Florham Park and South Orange. She adds that in-person classes will replace hybrid options, as more and more people are getting comfortable with working out in-person once again. “On-screen classes have lost their charm, and there is nothing like the energy created in a studio yoga practicing with your fellow yogis!” Bodnar says. How-to at home: “Start your morning with five sun salutations and five minutes in quiet meditation,” says Bodnar. Doing so will give you a good stretch and get your heart rate going.

CASHEW-CREAM QUINOA SOUP
Yields 4-6 servings
INGREDIENTS:
FOR THE SOUP:
n 2 Tbs. extra-virgin olive oil
n 3 shallots, diced
n 4 carrots, shredded
n 1 rib celery, diced
n 1 tsp. kosher salt
n 1 tsp. freshly ground black pepper
n 4 cloves garlic, minced
n 6 cups chicken or vegetable stock
n 1 15-ounce can chickpeas, drained and rinsed
n 1 cup quinoa, rinsed
n 1 14.5-ounce can finely chopped tomatoes, preferably Mutti
n 1 tsp. dried basil
n 2 tsp. dried thyme
n ½ tsp. red pepper flakes
n 3 cups baby spinach
n ½ cup Cashew Cream (see below)
n ¼ cup grated Parmigiano Reggiano, for serving
FOR THE CASHEW CREAM:
n 1 cup raw cashews
n 2 Tbs. extra-virgin olive oil
n 2 Tbs. freshly squeezed lemon juice
n 1 clove garlic
n ½ tsp. sea salt
DIRECTIONS:
Heat the oil in a large stockpot or Dutch oven over medium-high. Add the shallots, carrots and celery. Season with ½ teaspoon of the salt and ½ teaspoon of the pepper. Sauté, stirring occasionally, until soft, 5 to 7 minutes. Add the garlic and sauté for 1 minute.
Add the stock, chickpeas, quinoa, tomatoes and spices. Stir to combine. Season with the remaining ½ teaspoon salt and the remaining ½ teaspoon pepper. Bring to a boil, then reduce the heat to a simmer. Partially cover the pot and cook for 25 minutes. Stir in the spinach and cashew cream. Allow the spinach to wilt. Divide among bowls and top with the grated cheese.
For the cashew cream, place the cashews and ½ cup water in a small bowl. Let sit in a warm area for at least 8 hours. Drain. With a high-speed blender, blend the cashews, oil, lemon juice, garlic and salt until smooth. Store the cashew cream in an airtight container in the refrigerator for up to 1 week.
Since dairy is a culprit to bloating and other digestive symptoms, I recommend eliminating the grated cheese. Doing so will also make this soup vegan.”

n 1 Tbs. extra-virgin olive oil, plus more for drizzling
n 1 shallot, diced

n 6 cups chicken stock
n ½ cup stoneground yellow
cornmeal
n 1 cup grated Parmigiano
Reggiano
n 8 oz. baby spinach leaves
n 2 cups shredded rotisserie chicken
n ½ tsp. kosher salt
n ½ tsp. coarsely ground black pepper
DIRECTIONS:
Heat 1 tablespoon oil in a large stockpot over medium heat. Add the shallot and garlic. Sauté for 3 minutes until tender.
Add the stock to the pot and bring it to a simmer. Add the cornmeal to the stock in a thin stream, whisking constantly. Simmer over medium heat, stirring occasionally, until the soup is slightly thickened, about 10 minutes.
Whisk in the cheese and simmer for 1 additional minute. Stir in the spinach and chicken.
Simmer until the spinach is wilted and the chicken is heated through, 3 to 5 minutes. Season the soup with salt and pepper. Ladle into bowls and drizzle with olive oil.

Yields 2 servings
INGREDIENTS:
n 2 tbsp. extra-virgin olive oil
n 1 small yellow onion, finely
diced
n ½ tsp. ground cinnamon
n ½ tsp. ground cumin
n ½ tsp. ground coriander
n 1 tbsp. harissa paste
n 1 large head cauliflower, cut into small florets
n 1½ cups vegetable or chicken
stock
n 1¼ cups almond flakes, toasted
n ¼ cup half-and-half
n 1 small baguette, cut into
¾-inch cubes and toasted
n freshly ground black pepper to taste
DIRECTIONS:
Heat the oil in a large stockpot over medium heat. Add the onion and sauté until very soft, 5 to 7 minutes. Add the cinnamon, cumin, coriander and harissa paste and cook, stirring constantly, for 2 minutes. Add the cauliflower florets, stock, and 1 cup of the toasted almond flakes. Cover and cook until the cauliflower is tender, about 20 minutes.
Puree the soup with an immersion blender until smooth. (If you don’t have an immersion blender, you can let the soup cool, then purée the solids in a food processor fitted with the metal blade and return them to the pot). Reheat the soup in the stockpot. Add the half-and-half and mix thoroughly.
To serve, ladle the warm soup into bowls and top with the remaining toasted almonds and the toasted bread cubes. Season with pepper as needed.

This soup is loaded with antioxidants and anti-inflammatory ingredients. Cooking with spices like cinnamon and cumin along with garlic and onion help to reduce inflammation and control blood sugar levels.”

The Practical Prune
This vitamin-rich dried fruit is much more than just a way to keep things moving.
Prunes are dried plums. The dark-purplish fruit—sweet, chewy, squishy and stickytextured—is usually made from Prunus domestica. That’s the European plum, the fruit of a flowering deciduous tree that grows not only in Europe, but also in the Americas (especially California), the Middle East and the Far East. No beauty, the prune is widely hailed simply for one purpose: helping to keep us regular. But such typecasting does the wrinkly little thing an injustice, selling short its culinary versatility and its manifold nutritious boons.
While all prunes start out as plums, not all plums are candidates for prunehood. Generally, plums sold to be eaten as plums are “clingstone” fruits, with hard-to-remove pits, while plums with a pruny destiny are “freestone”—the pit can be taken out easily. In 2001 some prune marketers won permission from the U.S. Food and Drug Administration to call what they were selling “dried plums” instead of prunes to avoid what they thought were negative connotations of the latter label. Fortunately, many of these prune prudes have since recovered their prune pride.
POWER UP:
When it comes to assisting your body’s blood clotting and bone building, vitamin K is a powerhouse. And guess what food is a veritable K-mart! A 100-gram (3.5-ounce) serving of uncooked prunes meets 57 percent of your daily need for K—as well as 16 percent each of your riboflavin, alias vitamin B2 (which can help the body absorb nutrients and prevent damage to cells caused by free radicals), B6 (good for the brain, nerves and immune system) and potassium (an aid to maintaining normal fluid levels in cells). At 115 calories for a serving of five prunes, this fruit can be a healthy snack alternative.
And what about prunes’ claim to fame? Five London researchers, not content simply to ask their grandmothers, rigorously reviewed previous trials to assess the fruit’s vaunted prowess as a laxative. Results published in 2014 in Alimentary Pharmacology & Therapeutics charted groups of participants, with and without a constipation complaint, as they ate 100 grams of prunes a day for three weeks.
“Number twos” became more frequent for the constipated group and easier for both groups. The reasons? Probably both prunes’ high fiber content and their generous quantity of sorbitol,
which can help stimulate the gastrocolic reflex, a signal to the colon to go into action.
Prunes do have potential downsides. Eating too many can trigger gas and/or diarrhea. Also, the Mayo Clinic warns that if you’re taking monoamine oxidase inhibitors (MAOIs) for depression, eating foods like prunes that are high in the amino acid tyramine can result in excessive tyramine levels in the body—and a possible blood-pressure spike.
BUY/STORE/SERVE
Almost every grocery store and many fruit markets sell prunes; you’ll find them among other dried fruits, often in jars or plastic packages. The U.S. Department of Agriculture says dried fruits such as prunes can retain their quality stored in a pantry for up to six months. “After opening,” it adds, “you may wish to store them tightly sealed in the refrigerator to preserve the quality for up to six additional months or freeze them for one month.”
You can pop a prune into your mouth and be happy about it—it’s a healthy snack with natural sweetness. Or use prunes in a salad, a wholegrain muffin or a bowl of cereal. Mix them with spiced red cabbage or a quinoa stew. As an hors d’oeuvre, try prunes stuffed with chicken-liver mousse. Search out online recipes for main courses such as braised pork with prunes or roast pheasant with leeks and prunes. Go international with Belgian rabbit in prune sauce or prune-filled Middle Eastern pilaf. Or make a memorable dessert using prunes in a chocolate cake, or fashioning a prune-and-almond scone or a prune-andchocolate-torte.
Finally, of course, there’s prune juice. Try it in the morning when you need to help things along— or when you simply want a distinctive-tasting breakfast-beverage change-up pitch.

n ½ cup coconut rum
n ¾ cup pineapple juice
n ½ cup blue Curacao
n ½ cup cream of coconut
n 3 to 4 cups ice
n edible glitter, optional n 1 Tbs. coconut cream, for serving
n coconut flakes, for serving
DIRECTIONS
Add ingredients to blender with 3-4 cups of ice as well as glitter, if using. Blend until you have a slushy consistency, adding more ice if needed. Dip rim of glass in coconut cream, then dip rim in coconut flakes. Allow to dry. Pour blended drink into your prepared glass.

Keeping It Greek
From the hummus onward, traditional Hellenic flavors are irresistible at Azure in Morristown.
In New York City, one might expect to find an understated hideaway and top-notch dining in a restaurant situated below sidewalk level. But I was pleasantly surprised, not long ago, to encounter just that in Morristown. Azure the Greek Mediterranean, which last fall took over a Pine Street space that’s accessible via descending stairway, has every bit as much romance and excellence as a Manhattan eatery, and I was excited to score a table there on a busy Saturday.
Upon arrival, my dinner date and I were warmly greeted by our host, and after sharing a laugh, he escorted us to our table in the middle of the intimate dining room. There were several couples and large groups around us, some of whom we assumed—based on the different languages we overheard—hailed from Mediterranean countries. As the late Anthony Bourdain would say, that was a good sign.
For our evening, we limited ourselves to two appetizers. The first was hummus with warm pita. OK, it sounds run-of-the-mill, but Azure’s is anything but basic. The smooth chickpea dip was flavored with so perfect a blend of garlic, lemon juice and olive oil that it felt almost wrong slathering it on our pita—I just wanted to eat it straight by the spoonful. Whether it’s consumed with bread, with veggies or on its own, Azure’s hummus is a must. We also equally enjoyed an order of spanakopita, a pair of generously sized pieces of crispy filo dough stuffed with baby spinach and feta. A sweet roasted pepper salsa topped each piece, an ideal complement to the savory and creamy filo stuffing.
There’s a variety of entrée choices to satisfy every palate and diet. Assorted salads and vegetarian options are available for those who have dietary restrictions or just want a light meal. Seafood, duck, lamb and beef dishes, as well as bowls filled with meat and Greek rice, meanwhile, will delight omnivores. I went light: grilled salmon with a colorful blend of steamed veggies all served on a bed of mandolinesliced lemon potatoes. The salmon filet was seared with perfect grill marks and cooked to the proper temperature. It was flaky throughout, with the seasoned skin side the ideal crispiness.
My friend went for red meat, ordering tender beef souvlaki with Greek rice and veggies. The meat was so flavorful that using the accompanying tahini wasn’t necessary, though a dab or two of the sauce did add a richness when applied to the beef. Our only criticism is that we had hoped the dish would come with two beef skewers instead of one. That said, each piece of meat on the skewer was cut larger than those found on typical skewers elsewhere.
A general rule of thumb when going to a Greek restaurant: Always save room for dessert because baklava is a must. Azure serves its baklava smothered in honey syrup with crushed walnuts and vanilla ice cream. Dessert doesn’t get any better than that—or does it? Our second sweet treat of the night was pistachio-stuffed kataifi, a dessert that I’ll admit I’d never tried. The two pieces of shredded walnut pastry were filled liberally with pistachio, then topped with honey syrup and served with vanilla ice cream over ice. Eating both pieces (a shoutout to my friend for letting me have her portion) was heaven in my mouth.
In restaurant-rich Morristown, there were already several eateries specializing in Mediterranean cuisine before Azure arrived. But each one offers something different. Some present sandwiches and pizza, others focus on kebabs and yogurt dishes. That leaves plenty of space, below the sidewalk, for Azure’s traditional Greek delights.

Don’t miss one of the first outdoor events of the season when the North Jersey Classic Cruisers car show comes to Canal House in Wharton. Cars featured will be of all makes, models and years, plus there will be music, trophies, food and a live DJ. Individuals as well as colleges, libraries, nonprofits and K-12 schools will be in attendance, so it’s a fantastic networking opportunity too! The nonprofit organization held the 10th Annual 1891 Gala at The Grove in Cedar Grove. UNITED WAY OF NORTHERN NEW JERSEY
The Cedar Knolls-based group teamed up with the New York Jets Women’s Organization, nourish.NJ, Soup Sisters New Jersey and Healthy Italia - La Buona Cucina in Madison to cook up some healthy meals for ALICE (Asset Limited, Income Constrained, Employed) families in need. 1 Volunteers finish preparing meals for distribution to United Way clients.

Verona Heating & Cooling of Verona made a surprise donation of 100 pumpkins pies for the holidays. The pies were distributed to clients of the Montclair food pantry.

“I’m an elementary school teacher in Caldwell, as well as a professional photographer, and was at this game at Codey Arena in West Orange last February to take pictures during the Kelly Cup Finals. This photo features Rowan Brennan from the Verona-Glen Ridge ice hockey team as he celebrates his game-clinching goal against Cranford. I loved that he scored and then jumped up against the glass to celebrate with the fans, his classmates. This is one of my all-time favorite sports photos and moments.”
