There’s only a few weeks left of summer, but here at Cooperman Barnabas Medical Center (CBMC), we have a lot of great things to look forward to in fall. We’re gearing up for two of our biggest events this October: Miracle Walk, an event through which dedicated parents raise money for our neonatal intensive care unit (NICU), and A Reason to Rock, our annual fundraiser for which proceeds go toward The Cancer Center at Cooperman Barnabas Medical Center and Comfort Project 360. And in this issue of Morris/Essex Health & Life , we shed some light on Comfort Project 360, an initiative that enhances the experience for cancer patients undergoing treatment at our Cancer Center. Turn to page 24 to learn more, and to find out how our youngest community members from local high schools take part and give back through volunteering their time with Comfort Project 360 and the Reason to Walk event. On page 26, we meet Bryan Finley, a 57-year-old retired athlete who recently underwent a total knee replacement at CBMC. Thanks to the ConforMIS implant, which is custom-made for each patient, Finley has recovered well and resumed his active lifestyle. In fact, he’ll be returning to the Medical Center this fall to have the same surgery on the opposite knee.

A GoFundMe page helped ESO Artisanal Pasta (92A Elm St., Morristown; esoartisanalpasta.com) open during the pandemic, and now the place is making waves in the culinary world. Team ESO advanced all the way to the semifinals of The Food Network’s “The Great Food Truck Race” this summer and eventually took third place. Its menu includes homemade pasta dishes, fresh seafood and local ingredients. Chatham High School junior Jocelyn Xu spent a week this summer in Washington, representing New Jersey at the AmeriLegion Auxiliary Girls Nation program. Two participants, or “senators,” are chosen from each state after participating in their respective ALA Girls State programs. The senators participate in a mock legislature: They are responsible for submitting bills and resolutions, participating in senate sessions and electing officials such as president and vice president.

If you’ve been hiking around the South Mountain Reservation lately, you’ve probably seen road construction in some of the surrounding residential neighborhoods on your way to the park. Essex County is in the process of replacing four culverts, tunnels that allow water—specifically Rahway River tributaries— to pass beneath roadways. It likely hasn’t caused too much of a headache for drivers, as much of the work and detours are concentrated away from major roads. The work began in July and was scheduled to last about two months. And remember that once it’s all done, all that parkgoers and neighbors will see and hear is the beauty of the babbling water.

PUPPY LOVE Dog: Brando, 2-year-old French bulldog Owners: Jennifer and Jay Alicandri of Montclair Mom and Dad always knew they wanted to add a dog to their growing family; they just waited until their young children were old enough for the responsibility—and until they found the perfect pup. And Brando has been amazing since Day One, including his “gotcha day.” “Brando came bounding in full joy,” Jennifer recalls, “and my husband said, ‘He’s the one!’ He has never been more right.” Almost two years later, Brando hasn’t stopped giving snuggles and cuddles to his family. He’s also a fan of all seasons: This pooch is a sunbather in summer and an avid runner when it snows. Brando even dives into seasonal foods. “He loves clementines, watermelon, cheese and pumpkin bread,” says Jennifer, adding that other favorites are omelets and salmon. Brando’s fondness, however, goes beyond food. “He loves car rides and sitting in the passenger seat,” Jennifer reports. “He’s everyone’s partner running errands, and he loves a run for a pup cup.” But his No. 1 love is family. “He has the absolute most loving personality, and he loves everyone he meets,” she says. Can one act of kindness make a difference in the world? When Caldwell stay-at-home dad Brian Glennon donated one of his kidneys in October 2017, it started a record-setting transplant chain. Today, Glennon continues to talk up organ donation at every opportunity as a volun teer advocate for NJ Sharing Network. At age 50, he also leads a team in the nonprofit’s 5K events, as living proof that giving up one of his kidneys didn’t slow him down.

According to organdonor.gov, 17 people die daily in the U.S. waiting for an organ. For those on the fence about donating, what’s your message? I would first say that living donors are making an immediate impact by getting people off the waiting list. What made you decide to donate to a stranger?

Two years prior to donating, I had a little bit of a life revaluation. I started volunteering at sev eral different organizations I felt strongly about, and one of those was the NJ Sharing Network. I started volunteering at their 5Ks, I joined their cycling club and I met a bunch of living donors and heard their stories. It really impacted me. Can you explain how your donation at Saint Barnabas Medical Center (now Cooperman Barnabas Medical Center) set in motion the largest single-hospital kidney transplant chain in the nation? The doctor had told me that with my blood type being O positive, we might be able to start a kidney chain. If someone needs a kidney and has a willing donor who isn’t compatible, that person can join this exchange program. Then the hospital will find another pair of people who also aren’t compatible for each other. They literally kind of swap. The day you walked into the hospital and ap proached the staff about donating, what was going through your mind? We had to make an appointment with the head of transplant. Once I told him about my willingness to help others and my appreciation for my own life, he understood I was doing it for the right reasons. How big did this chain get before ending? It went up to 64. That’s 32 donors and 32 recipients, so that’s pretty amazing. Thirty-two lives saved. You gave your kidney to a lupus sufferer, Hayley Tsai, which inspired her daughter (who was not a match) to turn around and donate to a stranger. How has the donation improved her life? I met her on The Today Show in 2018. It was wonderful to see how healthy she looked, knowing that my kidney really helped her out. She’s able to travel again and welcomed her first grandchild. For those with fear of surgery, tell us what the experience was like. It is surgery. It’s not for everyone. My expe rience was fantastic. I was never scared. I started walking the day after surgery. I always like to tell people that in six weeks, I was back to my normal self. What kind of impact did this donation have on your children? Doing this showed them there is good in the world and there are people willing to help. Though you have no more kidneys to spare, how do you continue to further the cause with NJ Sharing Network? They do a few 5Ks during the year; their big 5K is in New Providence. I made a team up four years ago, and the name of my team is You Only Need One. I do that for the 4,000 people in New Jersey who are still waiting for organs. As a volunteer, what is the No. 1 question potential donors ask? Potential donors ask me how my life has changed. They want to make sure they’re still going to be healthy, and they’ll still be able to have the same lifestyle that they did. Again, that’s the reason I run in the 5Ks. What do you do when you’re not working with potential donors? My favorite hobbies, outside of hanging out with my family, are mountain biking and gardening. A TEEN EFFORT: SUPPORTING CANCER CARE

Sometimes, small touches can make a big difference. That’s the idea behind Comfort Project 360, an initiative that complements The Cancer Center at Cooperman Barnabas Medical Cancer (CBMC). While oncologists, radiologists and the rest of the clinical staff handle the medical element of cancer care, Comfort Project 360, co-founded in 2014 by Hyla Weiss and Suzanne Unger, creates a caring and supportive environment for the patients and their families. From “welcome kits” full of creams, phone chargers and fuzzy socks to volunteers walking from room to room offering snacks, beverages and crossword puzzles from the “Comfort Cart,” the initiative strives to create an environment that promotes healing for both men and women, and makes the patient experience more comforting. In fact, the infusion center and radiation oncology have been renovated to feel more soothing with large windows, bright lights and photos of nature for a calming effect, for example. “This project is directly about complementing the outstanding medical care that the doctors at CBMC provide,” says Weiss, a two-time breast cancer survivor. “All of our efforts are targeted toward enhancing the patient experience on their cancer journey.”

Through the years, several fundraisers and donations from community members have allowed Comfort Project 360 to thrive. “The community embraced us because unfortunately, everybody knows somebody who’s been affected by cancer,” says Weiss. “It’s been very well-received.” Since the beginning, some of the community’s youngest members have become involved too, both by raising money for the cause and by getting involved with and volunteering at community-wide events. On May 22, Comfort Project 360 held its first in-person fundraiser since COVID, A Reason to Walk. It’s an event founded four years ago by Jodi Bloom and her daughters, who at the time were seeking a volunteer project at Millburn High School. Livingston’s Keri Gorsky, a Comfort Project 360 volunteer, and her 16-year-old daughter, Zoe Gorsky, who helped create the welcome kits, worked with Bloom to assemble a team of teens. The teens come from nearby middle and high schools in Millburn, Livingston, the Caldwells, West Orange and, as a first this year, Newark Academy. They raised money for the cause, recruited friends and joined together at this year’s gathering in Millburn to walk for an important cause to benefit our community. Every year at the walk, participants are given T-shirts to show their support, but this year, they were given the opportunity to personalize them. Each shirt had a black and white version of Comfort Project 360’s logo printed nine times, representing each type of cancer treated at The Cancer Center. “On the back, people wrote who they were walking in honor or memory of,” Gorsky notes. “The highlight of this event is seeing it be successful and attracting young people who care and commit to making a difference,” says Unger. In fact, this year’s Walk was certainly a team effort, and raised nearly $29K from 227 supporters. About 100 community members attended the walk, including students, their parents, their sports coaches and even William Miron, the principal of Millburn High School. So, what’s next for Comfort Project 360? “We’re in the process of developing a comfortable unisex wrap gown/robe combo for The Cancer Center that wraps around the back but opens in the front for easy access,” says Weiss. And of course, there are plans for more in-person fundraisers, including the annual A Reason to Rock event in October. Additionally, the Comfort Project 360 team is constantly working with the medical team at CBMC to enhance the care experience. They also actively engage their volunteer base and are looking for people who want to contribute with their time, talent or monetary gifts. “Even the smallest donation can help the emotional wellbeing for these patients,” says Gorsky. “Their treatment journey is so difficult, and by getting involved or donating even a little bit of money, it’s a way to give back to those that are going through something really painful and difficult.”

MAJOR SURGERY, CUSTOM-MADE

Bryan’s in-patient surgery in March 2022 took longer than average because Dr. Rosa and his team had to remove all the hardware in the knee from prior surgeries. But aside from some temporary stiffness and swelling that he managed with acetaminophen, Bryan’s recovery was quick and painless. In fact, he was walking on his own just hours after the procedure. “Within a week I didn’t even need the walker 50 to 60 percent of the time,” he says, and he was back at the gym and at work three weeks later. Bryan’s physical therapists, friends and family couldn’t believe how quickly he was, quite literally, back on his feet. “People would look at me like I was crazy when I’d say how well I was doing just a few weeks out,” he says. Dr. Rosa adds that technology such as the ConforMIS implant make it possible for younger, active patients such as Bryan to successfully undergo total knee replacements, but of course, having a good medical team makes all the difference too. “About 15 years ago, we set up The Joint Institute at Cooperman Barnabas Medical Center for patients undergoing hip or knee replacements,” says Dr. Rosa of what makes CBMC’s knee replacement program unique. “We offer patient education sessions before the surgery, and we have protocols we follow so everyone is on the same page.” The Joint Institute team also schedules each patient’s post-op physical therapy appointments, and uses what’s called multimodal pain management, which means patients are given certain medications the night before surgery and the morning of in combination to help control pain.

In October 2021, Bryan had that first consultation with Dr. Rosa and knew immediately he was “the one.” “From the minute I walked in his office, Dr. Rosa made me feel that I wasn’t just a number. He looked at me and said, ‘hey, you’re going to do great. I feel good about your chances [of success]’.”

Today, Bryan is more active than he was before the surgery. “I ride a bike, I do the stair climber, I walk three to four miles every night with my wife, I play golf, go to the gym, do squats and lift weights,” he says. Only high-impact activities such as marathon running are off limits for those with a ConforMIS implant, but Bryan notes that thanks to this life-changing surgery, he is “no longer restricted in any way.”

An active, 57-year-old medical salesman got his life back after knee replacement surgery at The Joint Institute at Cooperman Barnabas Medical Center. The keys to his success? A fantastic surgeon, a great attitude—and an innovative knee implant fitted just for him.

The ConforMIS implant is a “custom, patient-specific implant, which means it’s made individually for each patient before their surgery,” says Dr. Rosa, who’s been using this system since its inception about a decade ago. “We turn a patient’s CT scan into a 3D model of their knee,” which takes up to eight weeks from start to finish to design. And unlike an “off-the-shelf” implant, Dr. Rosa adds, the ConforMIS is an exact replica of the patient’s knee and is perfectly balanced throughout the arc of motion, resulting in a better outcome, fewer stressors on the joint and a more comfortable fit.

In fact, Bryan was so happy with his experience at CBMC, he’s returning to Dr. Rosa this fall to undergo the same operation on his opposite knee. “To anybody considering a knee replacement, talk to Dr. Rosa and visit CBMC before you pull the trigger,” he says. “It was as seamless as you could ask for a major reconstructive surgery.”

Ten years ago, an orthopedist told Bryan, now 57, that he was “on the fringe” of needing a TKR, but he was too young—typically, doctors won’t do this operation on anyone under age 65 because they’d likely need a second surgery down the line. But fast forward to about two years ago, when the Lincroft resident began experiencing debilitating pain in his left knee.

Bryan Finley always knew one day he would need a total knee replacement (TKR). As a student-athlete, Bryan suffered his first injury and underwent his first reconstructive surgery at age 13, after which he was diagnosed with “terrible triad,” an injury involving multiple ligaments within the knee. He recovered and continued to wrestle at Manalapan High School and what is now known as The College of New Jersey, but had two surgeries on his left knee and four on his right by the time he retired from the sport.

“Literally, it took me 20 minutes to get going in the morning,” he recalls. “My knee was swollen, and I had sharp pains when I walked. My kids teased me about limping and being bow-legged, but I didn’t notice it because it was my norm for 15 years.” He knew it was time to consider a TKR. While researching options online, he found Richard Rosa, M.D., orthopaedic surgeon and director of the Cooperman Barnabas Medical Center (CBMC) Joint Institute. Dr. Rosa uses the innovative ConforMIS knee replacement system, a custom knee implant which molds to each patient’s body. “I had been in the medical device sales business for 30 years so I knew a lot of medical technology,” Bryan says, “but I had never heard of the implant that Dr. Rosa did until about two weeks before my consultation.”

The 67-year-old then found Killol Patel, M.D., medical director of the Lung Nodule Program, director of interventional pulmonology at Cooperman Barnabas Medical Center (CBMC) and a member of the RWJBarnabas Health Medical Group. Dr. Patel says Charles was a good candidate for the Zephyr Valve Procedure, a minimally invasive approach to increase lung function and make breathing easier. Cooperman Barnabas Medical Center is the only hospital in New Jersey that performs this Zephyr Valve treatment. “In certain patients with severe COPD, they have a sensation of an elephant sitting on their chest and inability to take a deep breath,” says Dr. Patel. “The Zephyr Valve is an implantable device that is placed in the airways using a bronchoscope (a thin tube with a camera) to help deflate the diseased part of the lungs and thus help expand the good lung so they can breathe better.”

After undergoing this minimallyinvasive surgery in January 2022, which took about 45 minutes and was done under general anesthesia, Charles remained in the hospital for five days for observation, and his results were noticeable just a few days later. Then, by two weeks postop, “he could climb three flights of stairs at home,” the doctor says. Candidates for this procedure include patients whose quality of life is limited by reduced lung function due to shortness of breath from severe emphysema or COPD, feel breathless even when taking medication as directed and are nonsmoking or willing to quit smoking. “I will do a workup [at any time], but you must quit smoking for three to six months before undergoing the Zephyr Valve procedure,” Dr. Patel notes. Charles maintains his regular visits with his primary care physician, and will continue to see Dr. Patel and his team every six months for follow-ups.

Since his surgery, Charles has noticed significant improvements in his breathing during his daily routine, including walking upstairs to his apartment, going on two-mile walks and lifting weights, among other activities, and has plans to return to playing doubles tennis. Essentially, his overall quality of life has improved dramatically. “He told me he’s already referred two friends to me to get the workup,” says Dr. Patel. “He feels so much better and is doing great.” Killol Patel, M.D.

DIRECTIONS: Preheat the oven to 375°F. In a small bowl mix together the sea salt, 1 teaspoon pepper and paprika. Sprinkle the mixture on all sides of the chicken and set aside. Melt 4 tablespoons of the butter in a large skillet over medium-high heat. Brown the chicken on all sides, working in batches if needed. Transfer the chicken to a large Dutch oven and set aside. Deglaze the skillet with the vermouth, scraping up any browned bits from the bottom of the pan. Lower the heat and add the remaining 2 tablespoons butter. When the butter starts to foam add the mushrooms and sauté until softened, 3 to 4 minutes. Sprinkle the mushrooms with flour and stir. Add the chicken broth and the sherry in a thin stream while stirring. Simmer and stir for an additional 2 minutes. Season to taste with kosher salt and pepper. Pour the mushroom and sherry sauce over the chicken. Wedge the artichoke hearts between the chicken pieces. Cover and cook until the chicken reaches an internal temperature of 165°F, 50 to 55 minutes. To serve, place the chicken pieces on a large platter and top with the artichoke hearts, mushrooms, juices and flatleaf parsley. This delicious recipe contains a lot of flavor from the vermouth and sherry. For a lower salt alternative, use unsalted chicken stock and skip the additional kosher salt. ”

Spread the carrots in a single layer on a separate baking sheet. Place the puff pastry on the upper rack. Place the carrots on the lower rack. Bake the pastry until it is lightly golden, about 20 minutes. Remove from the oven and allow it to cool slightly. Roast the carrots until the edges are golden brown and the carrots are tender but crisp, 15 to 20 minutes.

While the puff pastry and carrots are in the oven, drop the garlic through the tube of a food processor fitted with the metal blade to mince. Add the ricotta, feta and ¼ cup of the raisins and process until smooth. Season with salt and pepper. Spread the cheese mixture within the borders of the puff pastry. Sprinkle the remaining ¼ cup raisins over the cheese and arrange the carrots in a single layer on top. Return to the oven and bake until the carrots are tender, and the edges of the cheese mixture start to turn golden brown, 15 to 20 minutes. Garnish with the chives, slice into squares, and serve. This flavorful tart is a blend of sweet and savory. Make this recipe gluten-free by substituting the pastry sheet with a glutenfree store brand.”

DIRECTIONS: Preheat the oven to 425°F with one rack on the top third and one on the bottom third. Line a baking sheet with parchment paper and set aside. On a lightly floured surface, roll the puff pastry into a 10-by-14inch rectangle. Using a paring knife, lightly score the border of the pastry to create a ¼-inch margin. Place the pastry on the prepared baking sheet and prick it inside the border with a fork to prevent puffing. In a medium bowl, toss the carrots with the oil, 1 teaspoon salt and 1 teaspoon pepper.

DIRECTIONS: Bring a large pot of water to a boil and salt it to taste. Cook the pasta until it is just short of al dente, about 5 minutes. Turn off the heat. Do not drain the pasta. In a large skillet, heat the oil over medium-high heat. Add the chickpeas, thyme and cayenne pepper. Season with the 1 teaspoon salt and the pepper. Cook until the chickpeas start to turn a deep golden brown, 6 to 8 minutes. Using a slotted spoon, transfer the chickpeas to a bowl and set aside. Reduce the heat to medium and add the wine and lemon juice to deglaze the pan. Add the shallots to the skillet and sauté until they are soft, about 3 minutes. Add the garlic and sauté 1 additional minute. Pour in the cream and cook until slightly thickened, about 2 minutes. Turn the heat to low and add the spinach a handful at a time. Allow each batch to wilt before adding the next. Use a slotted spoon or skimmer to transfer the pasta from the pot of water to the pan of spinach and cream sauce. Add the Parmigiano and 1 cup of the pasta cooking water. Stir the mixture briskly over medium-high heat until the sauce is thick, 2 to 3 minutes. Transfer to a serving platter. Top with the chickpeas. Toss and serve immediately.

POWER UP Nutritionally, fiber-rich sunflower seeds beat the pants off many snack alternatives. They abound in healthy fats and in protein, which helps boost energy levels. (So do their generous quantities of vitamin B1 and selenium.) They contain zinc, which helps the immune system fight off viruses. And thanks to their vi tamin E, flavonoids and plant compounds, the seeds are also fighters of inflam mation, believed these days to be a key factor in many ills, including heart disease and cancer. Indeed, studies have linked high sunflowerseed consumption to a re duced risk of heart disease and high blood pressure. The numbers? A 100gram (3.5-ounce) serving of dried sunflower-seed kernels supplies 234 percent of your daily vitamin E need, 129 percent of your require ment for B1 (thiamine) and 103 percent of your B6 (which helps build brain and nerve cells)—along with nearly 100 percent of your magnesium, man ganese and phosphorus. Compare that to a happily trifling 1 percent of your sodium, which we tend to overconsume. (However, sunflower seeds are often sold with shells coated in salt—so look for the no-salt version if you’re watching your sodium intake. Also, remember that at more than 200 calories per one-fourth cup this isn’t a low-cal food. So don’t chomp down huge quantities.) Researchers at Virginia Polytechnic Institute tested a number of common snack-food nuts and seeds for levels of phytosterols, plant chemicals that can improve heart health and cholesterol levels. The champs, they found, were pistachios and sunflower seeds—those kindred goodies that are so worth the necessary cracking.

A Snack You Crack

BUY/STORE/SERVE If you’re a nut for the raw nature of the seed, go to a source where sunflowers are cultivated or try growing your own. For a dash of practical ity, you can try farmers’ markets, grocers—even a gas station or two may have some packaged seeds. They’re usually sold with the hull still on, but you can buy them hulled. Keep quantity in mind when thinking of qual ity. A moderate amount of seeds will keep at room temperature for a couple of months—longer if you seal them in airtight containers. For larger quantities, opt for tight containment with refrig eration. Anything longer than a year won’t be worth it, so don’t throw your seed parties too far in advance. Use common sense and avoid seeds with a smell or noticeable mold. Most consumers just opt for cracking the hulls open and eating the kernels. No frills, just straight to the source. But as with any ingredient there are different ways to cook or shake it up. Roasting sunflower seeds is an option. Add them (hulled) to a salad or a yogurt for that pleasing crunch. Add some texture to that trail mix or fiber to those muf fins. Check online to use them in recipes for tofu burgers or South American arepas. And don’t for get about the oil extracted from sunflower seeds that can be used in preparing a variety of foods.

DID YOU KNOW? The two top producers of sunflower seeds, which together account for more than half of world consumption, are Russia and Ukraine. Sunflower seeds are harvested from the large head of the mature sunflower plant (Helianthus annuus). And let’s get straight right away that the flat, bean-like, black-and-white-striped thing with the tough outer hull is not the seed itself. (Botanically, that’s called a cypsela.) Instead, the seed (or kernel) is that nutty-tasting little treasure you get when you crack the striped hull open. Like the pistachio, it requires a bit of work to yield its reward. Now here’s the question: Are you the type to gobble as you crack, or do you patiently open a whole pileful and then go for a splurge of pleasure? Either way, your nibbling is part of a long his tory. One of the few crops with North American origins, sunflowers were first domesticated by indigenous tribes thousands of years ago. Seeds can be pressed to yield a highly prized, lightcolored oil high in unsaturated fatty acids. It has been used as a preservative, a textile decoration, a hair dye, a topical remedy for rough skin or slowhealing wounds, a treatment for constipation and high LDL (“bad”) cholesterol—and a cooking oil.

In lieu of gifts, brothers Calvin Shiao, 11, and Carter, 9, celebrated their birthdays this year by requesting and receiving donations for the Montclair-based food pantry. They collected a carload of diapers for the pantry’s clients. 2 Carter and Calvin Shiao JERSEY CARES UBS Intern Day of Service and Jersey Cares of Livingston created a lasting impact for teachers in nearby schools. Volunteers created more than 200 adopt-a-classroom kits, which will be donated to teachers and used to decorate classrooms throughout the school year. 6 UBS interns make adopt-aclassroom kits.

The Interfaith Food Pantry Network in Morris Plains got a helping hand from volunteers at Deloitte & Touche and Barclays. Deloitte staff performed landscape work on the IFPN grounds, while Barclays workers distributed fresh produce to clients at the nonprofit’s Fresh Farmers’ Market. 3 Deloitte & Touche staff take a break from their work. 4 Volunteers from Barclays prepare to work the farmers’ market.
